CONTENTS EDITOR’S NOTE

SOCIETY IN THE PAST COUPLE OF WEEKS, WE’VE BEEN POLLING OUR columnists and other contributors about their springtime traditions and favorite signs of the season. In the Muyco-Tobin household, one sure sign is in our garden, where the first iris bloom should materialize any day now… And throughout the St. Louis area, there’s another sure way to tell when things are beginning to heat up, so to speak: The real estate market is picking up, with new home listings on the rise, as well as the number of ‘solds.’ This means it’s a busy time for our local agents, many of whom you know through the pages of LN. In this week’s special real estate section, you’ll learn more about the upturn from an established name in St. Louis realty. We’ll also take you on a ‘real home’ critique (an LN original) and provide you with expert tips on getting your home ‘market-ready.’ Happy spring!

MARKET READY REAL ESTATE The spring real estate market is about to kick into high gear, and we’ll get you ready with tips for showing your home, a real-home critique from real estate agents and more.

Make Summer Fun! Maryville University Summer Science and Robotics Programs

Contr ibu tor s What’s your favorite St. Louis attraction? Diane Anderson “My favorite is Creve Coeur Park. In the spring, summer and fall, my most favorite pastime is to lace up my inline skates and wheel around the magnificent natural lake. The paths are wide enough to accommodate runners, walkers, inline skaters and bikes. I never tire of this awesome park.”

Check out these options and others at www.maryville.edu/robot All camps offered at Maryville University, 650 Maryville University Drive, St. Louis, MO 63141. Email robot@maryville.edu for more information.

Judy Crowell “I can’t possibly pick one…but favorites are: taking my grandchildren to the Magic House and Cardinals games; pushing my 95-year-old mother in her wheelchair through Missouri Botanical Garden, and enjoying breathtaking music at Powell Hall with the people I love.”

“My wife and I really like to hike along the rivers, searching for rocks, crystals and fossils. We were along the stream at Grant’s Trail and found a softball-sized geode. When we cleaned it, we found three small flakes of gold. We may never strike it rich, but the true wealth of life in St. Louis can’t be measured on the gold standard. ” Twitter Retweet

VOICES FOR CHILDREN

Be the Difference

W

HEN SEPARATION THREATENED A tight-knit pair of abused and neglected siblings, a court-appointed special advocate (CASA) stepped in to give them a voice. “Their sibling bond was so strong that the CASA fought for them to stay together, and a family did end up adopting them together,” says Voices for Children CEO Jan Huneke, recalling her first experience leading the life-changing organization. “This had a huge impact on them as children and adults.” To give an even stronger voice to kids, the almost 30-year-old nonprofit, Voices for Children, merged with CASA of St. Louis County in 2011. Since the organizations joined forces, 300 CASAs have annually served more than 830 kids from birth to age 21. CASAs represent kids inside and outside the court system, helping them move from foster care to a safe, stable home, where they have a chance for a brighter future. “A CASA is there to

let a judge know what the child wants and needs, as well as make recommendations for their education and health care services,” Huneke notes. Among kids served by Voices last year, almost 70 percent were physically abused, more than 10 percent suffered sexual abuse and 35 percent experienced physical neglect. In addition, the kids are diagnosed with serious psychological or educational challenges at a rate two to seven times higher than the general child population. With 30 hours of in-depth child advocacy

training, CASAs are ready to address these issues through working with professionals, from attorneys to social workers, doctors and therapists, to ensure each kid is receiving the right services and support. “There are enormous differences when CASAs are on the case representing a child,” Huneke explains. “Children get out of foster care much faster with a volunteer, are much less likely to return to foster care and receive more needed services.” Continued on page 69

IDEAS FROM LOCAL CATERERS

Scrumptious Spring Offerings N

O MATTER THE REASON FOR CELEBRATing, springtime offers a variety of festive, on-trend entertaining options—all of which are completed by their scrumptious menus. We asked area professionals to discuss what dining ideas will make a party stand out this season.

Paul Azkoul, chef/owner, Eclectic Cuisine •A light menu featuring fresh ingredients is best, as it appeals to the health-conscious guest. Serving meals that are made from scratch using fresh, locally grown or farm-raised ingredients should be more of an expectation instead of a trend, and your spring gathering is a great time to make the switch. •To avoid feeling overwhelmed during preparty preparation, stick with familiar ingredients. •If you’re preparing a well-known recipe, add some flair in the presentation. My Gazpacho in Cucumber Cups is a great example, as it pairs a few sips of a tried-and-true favorite into an entertaining experience. Guests will surely enjoy the unique presentation—who doesn’t want to eat the cup in which the food was served?—and you’ll enjoy one less dish to wash. Prosciutto Wrapped Figs (from Eclectic Cuisine) Ingredients 4 figs, cut into sixths 8 slices of prosciutto, sliced vertically into thirds 2 T blue cheese or Gorgonzola cheese Balsamic vinegar syrup 3 basil leaves, sliced thin Directions Wrap a piece of prosciutto around each fig. Crumble cheese on top of the prosciuttowrapped figs. Drizzle balsamic vinegar syrup over each piece. Garnish with basil.

Grilled Chicken with Pasta by The Art of Entertaining

Ann Lemcke, owner, The Art of Entertaining •Pair springtime’s freshest ingredients, like berries and herbs, with your dinner. From there, think about what other flavors pair nicely; a salad with a citrus dressing, a light shrimp appetizer and grilled vegetables complement the seasonal flavors without leaving the guests feeling stuffed. •Use decorated cookies as favors and table décor. Sweets in spring-like shapes, such as flowers, bring joy to the table scene, while giving your guests a piece of the party they can take home. •Keep everything from the menu to the décor “sparse and pretty.” If dining outdoors, try adding a few simple string lights between trees and lightly pepper the tabletop with paper butterflies; the end look is entirely festive without trying too hard. Grilled Chicken with Fresh Berries and Balsamic Glaze served with Angel Hair Pasta (Serves 4, from The Art of Entertaining) Ingredients for chicken 4 chicken breasts 2 T olive oil 2 T soy sauce 2 T lemon juice 1/2 t dry tarragon 1/2 t dry oregano 1/2 c blueberries 1/2 c raspberries 1/4 c balsamic vinegar 1/8 c red wine vinegar 1/8 c + 1 T brown sugar Directions for chicken Marinate chicken breasts with olive oil, soy sauce, lemon juice, tarragon and oregano. Grill chicken until cooked in middle. Mix berries and 1 T brown sugar, then place on grilled chicken. Separately, bring 1/8 cup brown sugar, balsamic vinegar and red wine vinegar to a boil on stove, then reduce heat and simmer 2 to 3 minutes until thickened. Drizzle glaze over chicken and berries. Ingredients for pasta 1 lb. angel hair pasta 1/4 c olive oil 1/4 c chopped fresh basil 1 T seasoning salt 1 c of shredded Asiago cheese Directions for pasta Cook pasta by directions on packaging. Mix olive oil, basil, salt and cheese with cooked pasta. Toss together and serve with chicken.

Shaved Raw Asparagus and Walnut Salad from Butler’s Pantry

Richard Nix, president, Butler’s Pantry •The use of local products is not only increasingly popular, but it is something guests will truly enjoy. This doesn’t mean only looking for Missouri-grown produce, but also serving local beers, wines and cocktails. •Offer one great dessert served warm at the table, as opposed to having a dessert bar. Not only does this allow you to focus on the one amazing treat, but it keeps guests from having to take the sometimes uncomfortable walk from the dinner table to the dessert table. •As opposed to having an entire bar available, stick with two wines and three or four great cocktails. A ‘signature cocktail’ can read as passé, so travel back in time and serve some retro favorites. Vodka gimlets, Old Fashioneds, Tom Collins and Manhattans all are in style again. Shaved Raw Asparagus, Spring Greens, Goat Cheese and Walnut Salad (from Butler’s Pantry) Ingredients 1 lb. large asparagus 6 c mixed spring greens (such as red oak, mache, frisee, butter) 1/2 c toasted black walnuts 1 package Baetje Farms Coeur De La Crème plain goat cheese, crumbled 1 c fresh sprigs of spring herbs (chervil, flat leaf parsley and dill) Zest and juice of one lemon Zest and juice of one lime 1/4 c extra virgin olive oil Salt and white pepper to taste Directions Using a vegetable peeler, shave the asparagus into long thin strips. Combine with the greens, toasted walnuts, crumbled goat cheese and herbs. To prepare the dressing, combine the juice and zest of the lemon and lime and mix with the olive oil. Toss the salad with dressing to coat, season to taste with salt and white pepper and serve immediately.

IDEAS FROM LOCAL PARTY EXPERTS

Planning Your Spring Soiree Spring is coming, a perfect time for a party to celebrate a holiday, special occasion or simply the arrival of warmer weather! These local party planners share ideas and tips for the perfect spring soiree. Elizabeth Cordes, Cosmopolitan Events —Set the tone. With any kind of party—in the spring you think of St. Patrick’s Day, Cardinals Opening Day, graduations, Cinco de Mayo—you want to consider the crowd you’re inviting and the atmosphere you want to create, then build the event with that in mind. —Go green. St. Patrick’s Day can be very in-your-face with lots of green and shamrocks. You can throw a party that is more updated and classic if you just use hints of green here and there, and create a menu that is inspired by Ireland. For example, have beer pairings with dinner or a Guiness-infused dessert. —A new twist on graduation. Focus on the graduate’s likes for party ideas instead of the standard cap-and-gown theme. One graduate was headed to Ole Miss, and we found a wonderful linen with the school colors of red and blue that had a very modern design. It felt young but didn’t scream graduation, and we were able to incorporate that design into several elements of the party. —Refresh with signature cocktails. For spring, any citrus-y, light beverage is great. You could do a Paloma for Cinco de Mayo or whiskey and ginger ale for St. Patrick’s Day. —Blooming décor. You can’t go wrong with flowers in the spring. Look for creative vessels to display them. We just did a rustic look for a party with buds in old medicine jars that spanned the length of the table.

—Extra details. If you’re having a party outside, think of the elements and your guests. For nighttime events, have your lawn sprayed to deter bugs or have a container full of bug spray or insectrepellant bracelets for guests. For daytime events, fill that container with sunscreen. It’s a nice gesture that goes a long way. Sam Orlando Jr., Orlando Gardens —Functional food. Take advantage of the fresh vegetables in season during the spring. Fill glass containers of different sizes and shapes with brightly colored vegetables and display them as a centerpiece on the buffet table. It makes for a pretty presentation, and you can serve them with dips or a warm cheese fondue. —Embrace whimsy. For a seated dinner party, try a garden bouquet salad. We take hollowed out Roma tomatoes, fill them with greens and serve the dressing in individual miniature watering cans. —Free to double-dip. Make individual veggie shots for your guests. Take cylindrical shot glasses, put dip at the bottom and top off with several pieces of carrot, zucchini, asparagus, red pepper, etc. —Grilling season. Take advantage of the spring grilling season with unique items like grilled pickles (slice cucumbers and grill them before pickling) or grilled lemonade (cut lemons in half, sugar and grill them before squeezing for lemonade). —Savory lollipops. We make chicken saltimbocca lollipops skewered on bamboo and served on a bed of real wheatgrass. It’s a springy, fun appetizer to offer your guests. —Picnicking. For a picnic theme. Use Astroturf as a tablecloth on a buffet, with picnic baskets or small barbecue pits as centerpieces. IDEAS FROM LOCAL FLORISTS

N

Spring Flowers

O PA RT Y I S CO M P L ET E without décor, and what better option this spring than the very blooms that represent the season? We talked to three local floral designers to find out which stems scream spring and picked up some ideas to make sure everything at your gathering comes up roses— or perhaps tulips, in this case. Marianne Przetak, owner of Ladue Florist •If the person-of-the-hour at your celebration is a gardener, create a floral-centric gathering featuring a ‘Welcome Springtime!’ theme. Arrangements of tulips and daffodils can be made in or including small birds’ nests with embellishments like wheat grass sprouts, mosses and eggs. •With St. Louis weather always changing, it still might be chilly during your springtime celebration. Pretend you’ve headed south by sticking to a tropical theme. Orchids and birds-of-paradise bring that warm-weather look while adding a serious splash of color. To keep the look focused on all-things tropical, try placing the cut flowers in cylindrical vases wrapped in matching greenery; a rope, ribbon or more foliage can be used to secure the wrapping and complete the look. •The pastels of spring pop nicely against galvanized metal containers and come in a variety of sizes to keep the party cohesive. Try a large, tall arrangement in a galvanized watering can as a buffet piece, with smaller containers of the same material for centerpieces, to engulf guests in that springtime feeling without hindering table conversation. Jane Winter, designer and owner of Wildflowers •Make your party décor unique by ordering unusual flowers. Types of Fritillaria or Hellebore are fragile, but bring an out-of-the-ordinary beauty to any tablescape. Angelique tulips or bearded irises are unique twists on standard springtime arrangements. •When done correctly, a combination of pinks and corals can bring that perfect spring feeling to any get-together. Remember to add a “fresh green color” to arrangements, but not by using standard evergreen filler. Lady’s Mantle—a green flower—is a great option, as it adds that green hue without the filler feeling. Another option? Green succulents add color, while maintaining overall arrangement interest. •Use branches to increase the architectural presence of the plants. Peach, cherry and French pussy willow branches can be used in floral arrangements or alone to add height, dimension and overall presence. •If entertaining at home, invite the florist over BY JULIA CHRISTENSEN

before the event; they can get a feel of the home to create matching floral masterpieces, notice arrangement locations you might have overlooked and find containers you already own that could work for the finished pieces. John Sullivan, design consultant at Ken Miesner’s •Stick with well-known spring blooms in traditional pastel color schemes for spring. “It’s classic because it’s right.” Bulb plants and flowing branches summon the season and should be readily available; try utilizing daffodils, cherry blossoms and blossoming pear. •Continuing with the classics, use a traditional glass vase. Too dull? Add colored marbles to the bottom of the vase. If you’re arranging ahead of time and are concerned with murky-looking water, wrap the inside of the vase with a leaf. •Pussy willow branches make a seasonal and attractive statement, and can keep the memory of your party living on. In an arrangement with water, many stems will start to grow roots; after the party, plant the fresh branches into your garden to let your celebration décor continue to grow.

To reinforce that spring feeling while remaining out-ofthe-ordinary, Ladue Florist recommends incorporating mosses and nests into floral arrangements.

By featuring a fresh green flower instead of a dark green filler, this arrangement by Wildflowers is bright and lively—perfect for springtime parties.

HERE ARE AS MANY WAYS TO MAKE YOUR party décor say ‘spring’ as there are reasons to celebrate. From festive colors to simple elegance, area venues gave us their best shot—and we’re taking notes!

Nothing says spring quite like pink! Hyatt Regency St. Louis at the Arch used bright colors and translucent chairs to set the stage for the Association of Bridal Consultants luncheon. (stlouisarch.hyatt.com)

Black and white floral was the theme of this wedding at The Studio Inn at St. Albans. A pop of color from purple orchids highlighted the sophisticated palette in an intimate tent-protected setting. (studioinnstalbans.com)

On the hilltop behind the Tasting Room at Chaumette Vineyards & Winery is The Barn at Chaumette. Restored in the spring of 2012, the rustic setting is used for everything from birthday celebrations and wedding receptions to company picnics. (chaumette.com)

DIELMANN SOTHEBY’S INTERNATIONAL REALTY

Upping the Ante

A

NDY DIELMANN, OWNER OF DIELMANN Sotheby’s International Realty, has plenty of reasons to smile. “January closings have been the best I’ve seen in the last few years,” he says. With homebuyers finally acting on their pent-up demand for St. Louis’ luxury real estate, Dielmann Sotheby’s has experienced a 13-percent increase in sales for 2012, compared to 2011, for its markets, which are primarily in the central and west corridors of St. Louis city and county. “A lot of listings are selling for full price on the first day,” Dielmann notes. “People understand the great values available.” Instead of waiting for spring to arrive, which is the usual season for home sales, Dielmann is advising homeowners to prepare to list their homes this month. “Don’t wait until April or May, buyers are shopping now.” He adds that there are signs of new construction activity this year. “More applications for construction permits have been granted, tear downs are occurring and new homes are going up.” And, while Dielmann says the interest rates for loans have increased slightly, he expects shoppers to take advantage of the low interest rates while available. In response, Dielmann says his agency will make additional efforts to increase its share

of the luxury market. Dielmann started his career almost 37 years ago, when he was 21 years old, and decided to focus on providing the highest quality homes and real estate service to the St. Louis region. He says the best thing that happened afterwards was that Sotheby’s knocked on his door and asked him to join the international real estate arm, adding, “Owners are invited to join Sotheby’s due to the business’ ethics, homes’ sales price and market share,” he explains, adding, “No one can buy acceptance into Sotheby’s.” Dielmann is the only Missouri real estate firm with the Sotheby’s brand, and it enables the company to present St. Louis properties on national and international markets. The company’s website can provide property descriptions in 18 languages and currency conversions, and can post microsites on numerous business, architecture and news websites worldwide. And this year, Dielmann Sotheby’s will increase its social media presence to provide more robust and dynamic property information that is impossible

to print on paper. Dielmann says few real estate agencies can compete in terms of marketing exposure. He adds that the company’s focus—and its key to success— is to remain loyal to St. Louis homeowners. “A majority of our business is helping people relocate into or out of town, and finding them wonderful single family homes or condominiums.” As for the doldrums of the last few years, Dielmann is confident that the St. Louis luxury real estate market has turned the corner. “St. Louis housing values are just fantastic.”

Spruce up your home’s entrance with a fresh coat of paint on the front door, a beautiful wreath and a new welcome mat, along with well-maintained landscaping. • RIGHT FIT. Give the sense of more space by matching furniture sizes to the scale of each room, moving larger pieces to bigger rooms if needed. • DON’T TAKE IT PERSONAL. Take down any kids’ artwork and family photos so the homebuyers can envision themselves and their own belongings in the space. • BACK IN STYLE. Showcase each room for what it was originally designed to be—for example, change the additional living room, office or kids’ play area back to a traditional dining room. • STAY NEUTRAL. Use a neutral paint color to brighten any dull or dark rooms.

Remove excess furniture to showcase the spaciousness of the room.

WHERE TO START YOUR HOME SEARCH

Where the Heart Is

G

ETTING WHAT YOU WANT ALWAYS starts with knowing where to look. And the real estate market is no different. “Having an extensive conversation with clients to determine their priorities and lifestyles when considering a new home is the primary step in the search process,” says Kathy Crane of Laura McCarthy Real Estate. Here, local real estate agents have given us insights into good places to start your home search, depending on your family’s priorities. SCHOOLS “We are so fortunate with the number of great school choices, whether they are public, private or parochial. Clayton, Ladue and Brentwood schools are desirable because of the quality of education, but also because of the size of the districts, which allows for smaller class size.” —KATHY CRANE, Laura McCarthy Real Estate

“If your child is extremely gifted or has special needs, the Rockwood School District is set up to handle those special requirements like no other, in my opinion. Each of their elementary schools is set up with a specialty, so parents can shop for a home in that area and get the special attention right from the beginning of their child’s academic career.” —MARGIE MEDELBERG, Prudential Alliance Realtors

WALKABILITY I live in Warson Woods, so Kirkwood is a home base for me, and I know the kids from the Catholic grade schools get a half day the first Friday every month, and go to all the restaurants in downtown Kirkwood. There are lots of cafes and restaurants, and there are more and more boutiques. Amigos Cantina has an outdoor area that’s popular in the BY LISA WATSON

summer, and the kids ride bikes to Tropical Moose for sno cones. Kirkwood Park has ice skating, a lake, tennis courts, a great Fourth of July celebration and the Greentree parade.” —MARGIE KUBIK, Gladys Manion Real Estate

“Clayton is one of my favorite walking areas, particularly along Wydown Boulevard from Hanley to the park. It is one of the prettiest boulevards around. Kirkwood, Webster Groves, University City, and the CWE, being more urban, are all wonderful with restaurants, shops, etc., well within walking distance.”

new construction and improvements to downtown Kirkwood, they have managed to maintain the “coming home feel.” Whether it is the seasonal banners on the streetlights, their parades, or the Turkey Trot at Thanksgiving, it is a flashback to a time when you actually had time to get to know your neighbors.” —MEDELBERG

“Webster Groves and Kirkwood have the smalltown feel with town centers that many people love. Many people grow up in these communities and never want to leave.”

—CRANE

—CRANE

CENTRAL LOCATION “If money is no object, Clayton. It is our Michigan Avenue. It is clean, safe, fun and there are so many different things to do within a short walk or bike ride. There’s also great access to the highway, as well as to the airport and downtown. It will cost you more to live there, but the convenience factor is huge.”

ACCESS TO OUTDOORS “The CWE and Clayton are conveniently located next to Forest Park, one of the best parks in the world, with access to many affordable (if not free) family activities that can be used yearround! The best!”

—MEDELBERG

ROOM TO GROW “In Ladue, Frontenac and Chesterfield, you can get a decent lot, larger homes and high-quality public schools. ”

CLOSE TO AMENITIES “Clayton and the West End. You know you are close when you can walk home from dinner.”

—CRANE

—KUBIK

—MEDELBERG

“The CWE, Kirkwood and Clayton. A lot of the restaurants cater to the younger crowd in their 20s. And because they’re coming up with a lot of condominium developments, they’ll have a lot more people there, especially young people.” —KUBIK

TIGHT-KNIT COMMUNITY FEEL “Overwhelmingly Kirkwood. Even with all the

“A little-known secret in West County is Wildhorse Village/The Highlands, a complex of homes off Wildhorse Creek Road ranging from $450,000 to $900,000. They have three subdivision pools, tennis courts, walking trails and a soccer field. It’s the perfect place for families where your children can jump on their bikes on summer mornings and return home for dinner.” —MEDELBERG

Ways to ‘Show’ Your Home

Seal the Deal

G

etting ready to put your house on the market? We surveyed local design and landscape experts for quick and easy ways to make your home look its best, both inside and outside.

Indoors Teddy Karl, The Great Cover-Up —Keep it fresh and clean. Add new, pretty pillows to the couch or bedroom if your current ones are old. New towels and shower curtains in the bathroom also will go a long way. —Maximize size and space. You may have your favorite chair in a favorite spot to watch TV, but you want to make the room look attractive to potential buyers. Forgo everyday living to make the house look as nice as possible. —Initial impression. The first notion someone should have walking into the house is of cleanliness and spaciousness. Don’t over-furnish the foyer, and if your stair runner is dirty, do something about it, even if it means removing it. I’d rather see no runner on a pretty staircase than a pretty staircase with an old, faded runner. —Photogenic. Without sprucing it up first, take two or three photos in every room. Once you print the images, there are so many things you’ll notice, like the ugly cord hanging from a lamp. It’s a lot easier to critique a photograph, and you always can ask a friend to be brutally honest for you. Jane Ganz, Directions in Design —Illuminate. Light and bright is the key. Make sure all of the light fixtures throughout the house, including the bulbs, are very clean. Add additional lights where needed to brighten areas. —Open up. If your draperies cover a lot of the window, pull them back, or consider removing them altogether. It’s sometimes better to have no window treatments than ones that are heavy, dark or outdated. —Sensory appeal. The smell of the home is very important. You can use scented candles throughout the house, but make sure they are all the same scent as to not overpower. —At your feet. Repair or touch up any floors or baseboards that have been scratched up. Outdoors Drew Goding, The Hard Work Yard Work Company —Curb appeal. A 2010 University of Florida study found that similar homes varied in sale price by as much as 20 percent due to curb appeal, primarily the landscaping. It also can be the difference between potential buyers slowing down to By Laura Graesser

glance at a property and actually stopping to look. —Cleaning house. Pay attention to the outside of your home. Power-wash all siding, touch up paint, wash all windows, repair or replace any broken concrete or worn and rotted wood, seal the driveway, and clean out gutters and downspouts. —Keep it modern. Replace shrubs or bushes that date the house. For example, yew hedges across the front of a home were popular in the ’60s and ’70s. —Take out the trash. Remove any brush or debris piles on your property, even along the edges or in wooded areas. Eliminate ‘junk’ that clutters the yard—empty planters, toys, broken trash cans, abandoned sports equipment, etc.—things that you may not pay attention to, but potential buyers will notice.

Brad Meyer, M&P Landscaping —Set the stage. Before showing your home, always get the grass cut and yard blown. Get rid of sticks, pull weeds and prune plants. These small steps will make the place look like a million bucks. —Low-maintenance. If you have empty beds or bare spots in the yard, go with low-maintenance plants like boxwoods and shrub roses. —Eye-catching. The front yard is the most important. Potential buyers don’t want to see a lot of work in front of them, so make it look wellmaintained and clean. —Outdoor living. If you have a patio, spruce it up with flowers, or a table and chairs, so people can picture themselves living there.

David Sherwood, Sherwood’s Forest Nursery —A welcome mat. Put a couple of nice pots outside the front door with a seasonal flowering plant, such as pansies, tulips or even a blooming azalea. It’s a simple addition that adds immediate impact. —Clean and color. Clean up all of your beds, rake leaves and add a new layer of mulch with a spade cut, which will make everything in your landscaping look better. Early March also is a good time to plant attractive perennials in the beds to add color. —Less is more. If you have any trees or plants that are marginal—half-dead or dead—remove them. You don’t have to replace the plants, just lay mulch over the area. —Embrace the seasons. If your yard has bigger needs, plant trees or plants that will add interest. Choose nice ornamental trees like magnolias or Japanese maples for appropriate spots in the landscaping to add seasonal interest and color.

PREPARING FOR SPRING ALLERGIES

W

‘Tis the Season

HEN SPEAKING WITH an allergist, there’s a c h a n c e yo u m ay briefly forget you’re talking with a doctor and imagine you’re chatting with a botanist. These medical specialists can reel off plant names, expected dates of pollination and various plant species’ typical pollen attributes. “One of the things we do in our training program is to literally go on a spring tree and grass walk. I take all the fellows (post-doctoral students) around, and we show them the trees that are pollinating and how full they are,” says Dr. James Wedner, chief of allergy and immunology and director of The Asthma and Allergy Center o f Wa s h i n g t o n U n i v e r s i t y. O n t h e s e wa l k s, h e points out the oak trees’ telltale catkins—pollenheavy flower clusters. “People get a n i d e a o f h ow much pollen there really is in the air,” h e a d d s, n o t i n g that students are surprised at DR. DOUGLAS BERSON, the number and allergist at St. Luke’s size of the trees’ Hospital. pollen-producing structures. Once you’ve seen the millions of catkins in an oak grove, which are among the most common allergens in the Midwest, you begin to appreciate why there’s so much sniffling, sneezing and itchy eye-rubbing going on. But oak is far from the only pollen that causes spring allergy misery. “Tree pollen season typically begins in March with the appearance of juniper, maple and elm pollens,” says Dr. Susan Berdy, an allergist with Mercy St. Louis and a member of the board of directors for the Asthma and Allergy Foundation, St. Louis Chapter. “We’ve already had a few days this year where these pollens have been measured by the St. Louis County Environmental Health Science Laboratory. Other important trees, including oak, birch, ash and mulberry, pollinate

“MOST EXPOSURE OCCURS OUTDOORS, BUT DURING PERIODS OF HIGH POLLEN PRODUCTION THE INDOOR ENVIRONMENT ISN’T NECESSARILY SAFE, EITHER,”

in April and into May.” And then the summer grasses begin to bloom. People who have multiple pollen sensitivities may feel no relief all year, as the pollination cycle continues. And it doesn’t take much to cause the runny nose, sneezing, itchy eyes and aggravated asthma symptoms that develop in a highly allergic person. “Most exposure occurs outdoors, but during periods of high pollen production the indoor environment isn’t necessarily safe, either,” says Dr. Douglas Berson, an allergist on staff at St. Luke’s Hospital. “We open windows or drag pollen in on our clothing or hair, so limiting outdoor exposure can be helpful, but taking care of the indoor environment also can be helpful.” He recommends keeping windows closed, installing HEPA filters on air-conditioning units and running HEPA air purifiers indoors, and washing clothes and hair immediately after being outside.

Home remedies, such as neti pots or saline nasal sprays, can help soothe and reduce symptoms. But controlling symptoms through medication is the mainstay of surviving allergy season for a severely allergic person. “The best thing to try first is a 24-hour acting antihistamine that can be obtained over the counter, such as Claritin, Allegra or Zyrtec,” says Dr. James Temprano of Mercy Clinic Allergy and Immunology. Nasal steroid or antihistamine sprays and eye drops also may be helpful. “When these agents fail, it’s time to see your primarycare physician or allergist for further treatment and possibly testing.” If you live in the Midwest, you’ll be exposed to pollen. But you don’t have to move to Alaska to survive the spring allergy season. A little awareness, some prevention, a dash of home remedy, a dose of allergy medicine and a visit with your doctor if you still feel miserable will see you through the spring with minimal discomfort.

ECZEMA

Managing Outbreaks

W

HEN NICKI MYERS’ SON, REECE, WAS 18 months old, he itched so much he bled from scratching. Reece suffers from eczema, a non-contagious, inflammatory skin condition that may be caused by an array of triggers. “He had a moderate to severe rash on his lower legs and arms that became so inflamed and irritated he would scratch in his sleep,” says Myers. “He’d wake up with open wounds, and it was quite hard to manage.” The Ladue mom recalls slathering her child’s legs with various prescription and over-the-counter creams and ointments, and then wrapping them with gauze and compression bandages to prevent Reece from continuing to scratch. Allergy testing confirmed that Reece was ‘allergic to everything,’ Myers notes. In particular, food allergies seemed to be associated with Reece’s eczema outbreaks. Myers spent months carefully planning and monitoring Reece’s diet to determine what foods seemed to trigger the rash, using a physician-recommended approach known as a ‘rotation diet,’ in which foods are rotated on a

four-day cycle. Reece is 5 now, and his eczema usually is wellcontrolled. Myers continues to monitor his diet, ensuring he stays away from trigger foods and noting any changes in Reece’s skin. “I’ve gathered a lot of information, and I try to apply it,” she says. “I’ve had to develop a plan that’s going to allow him to eat and grow and be nourished, and that involves some give and take. And there’s still a lot of analyzing and thinking involved.” Although Reece’s eczema seems clearly related to food allergies, a specific cause of eczema outbreaks can be elusive, says Dr. Mary George, a dermatologist on staff at SSM DePaul Health Center. “It’s made worse by cold, dry weather, and there is often a genetic predisposition,” she says. “Some cases also can be exacerbated by allergies to products our skin comes in contact with, such as shampoo, skin care products or fragrances. And stress makes many dermatologic conditions worse, including eczema.” Also known as dermatitis, there are various types of eczema, explains Dr. Joseph Muccini, a

dermatologist with the Mid-America Skin Health and Vitality Center. “Dermatitis is basically an inflammation of the skin. Eczema refers to the reaction pattern, but not the cause,” he says. “I tell patients that eczema is a talent. It’s part of a repertoire of potential reactions. It’s a thing the patient’s skin knows how to do.” Atopic eczema (endogenous dermatitis) is Continued on page 69

PETS

PET DENTAL CARE

Tip-Top Teeth

D

OES YOUR PET HAVE A CASE OF BAD breath? If so, don’t blame Fluffy or Fido, area vets say. Good oral hygiene is an important part of your pet’s grooming, and this often-overlooked aspect of their care should start early. “Dental disease is one of the most common diseases besides obesity in animals,” says Dr. Stacey Wallach of Town & Country Veterinary Hospital. “It’s a disease, not just a bad breath problem. The bacteria in the mouth can affect the kidneys and liver, it can weaken the jaw bone and create jaw fractures, or if your pet gets abscesses, it can affect the nasal cavities or cause eye diseases. So much is hidden under the gum line: You could have perfectly healthy looking crowns and have really nasty looking roots.” Getting Started “With puppies and kittens, early on, their puppy teeth will be falling out and the adult ones coming in,” says Dr. Meagan Brophy of Webster Groves Animal Hospital. “Make sure all those baby teeth fall out. When they get spayed or neutered at about 6 months, you can remove any that don’t come out naturally.” Beyond that, it’s a good idea to get your pet acclimated to brushing early on, as well. “When you get a new puppy, you start socializing them, one of the first things and should be socializing with is dental care,” Wallach says. “Start them young so they get used to it as a normal part of their routine.” To get maximum cooperation from your pet, Wallach recommends making it a positive experience—giving t h e m a t te n t i o n and treats before and after brushing. She suggests getting them used to their mouth being handled in general first, and working up to brushing gradually. First steps can include lifting their lips, and rubbing the gums with your finger or a piece of gauze dipped in chicken broth. “Cats usually are more difficult than dogs, some will tolerate brushing, but we lean toward dental treats and oral rinses,” she says.

“START THEM YOUNG SO THEY GET USED TO IT AS A NORMAL PART OF THEIR ROUTINE.”

Making the process as appealing as possible is important, notes Dr. Steven Schwartz with Humane Society of Missouri. He recommends using a special brush designed for your pet’s size. And the taste of the toothpaste “is a huge factor,” he says. Meatflavored options are often a hit. “Rule No. 1 is: Don’t get hurt. If you’re having a difficult time, consult your veterinarian and have them walk you through it.” The goal is to brush every day, the veterinarians say, to remove the bio-film that gradually builds up before it creeps under the gums and rots the teeth at their roots. If daily brushing sounds daunting, Brophy says once a week is a good place to start. “As you get used to it, you can increase the frequency.” However, some form of at-home care is crucial. “Every six to eight weeks at the groomer is not going to do it,” Wallach notes. Beyond the Brush Just like humans brush and floss daily, with semiannual trips to the dentist, pets benefit from a multipronged approach to dental care, as well. A wide range of toys, treats and food is available to help keep your pet’s choppers in fighting shape. The Veterinary Oral Health Council places its seal on products that are proven to benefit oral health, Brophy notes. It also lists helpful products on its website, vohc.org.

The right combination of products is dependent on your pet’s individual needs, but Brophy often recommends Hills Science Diet t/d kibble, which is designed to clean the teeth, for pets that don’t have other specific dietary needs. She also suggests rawhides for dogs that are not too aggressive in chewing them. “Some will go to town and break their teeth or swallow half of the rawhide,” she notes, adding that the rule of thumb for determining if a toy is too hard should be, “it’s something you can push down with your fingers like a tennis ball—you can push it in and it pops right back out.” During their annual wellness exam, pets’ teeth should be examined to determine if there are any problems, or if cleaning is needed, Schwartz notes. Dental cleanings are similar to what is done for humans, but pets generally require heavy sedation or general anesthesia. As long as they are healthy enough for the procedure, a cleaning would include tooth scaling by hand or an electronic scaler to remove plaque and tartar. The teeth also are polished, and sometimes extractions are done for severely damaged teeth, he says. “In between visits, if you notice your dog is not eating or tilts its head by eating, or is pawing at the mouth, those are reasons to take a trip to the doctor. It’s better to look into these things sooner rather than later.”

HEN BRITISH ROYAL Navy officer Captain G e o rge Va n c o u ve r arrived in this slice of Canadian heaven in 1792, he was transfixed by what he saw. So m e 2 0 0 yea rs later, my view from an all-glass-walled bathroom from the 14th floor of Vancouver’s Fairmont Pacific Rim is a bit different, but no less breathtaking. I don’t often become enamored with my hotel room, but I have to admit, one look at our accommodations (really, the bathroom), and I wanted to put a cot in it and stay forever. Luxury, drama, sophistication, whimsy and comfort merely begin with renowned Canadian architect James K.M. Cheng’s Japanese-style marble Jacuzzi soaking tub, placed right smack up to the floor-to-ceiling glass wall. Upon arrival, a crystal-clear koi pond sprinkled by overhead ‘rain’ welcomes you at the front door. Giovane cafe + winebar serves fresh morning pastries and transforms into an Italian wine bar at night. Afternoon tea, a Fairmont tradition, comes via an Art Deco trolley and the Lobby Lounge soothes as you cozy up to the mesmerizing contemporary fireplace to listen to music from the one-of-akind Fazioli piano. ORU is the star restaurant here, where executive chef Darren Brown treated

us to a six-course tasting, starting off with an amuse-bouche of watermelon/strawberryinfused gazpacho and continuing to surprise us with his fusion of flavors in sushi selections, a Kalua pork belly and Haida Gwaii olive-crusted halibut. For some downtime, Willow Stream Spa—encompassing 15,000 square feet of the property’s entire fifth floor—offers more than 50 spa services in the loveliest of surroundings. The view from our fishbowl existence finally lured me outside for a walk along the sea wall bordering Coal Harbour. Towering glass and steel buildings form a backdrop for blocks of flower-filled parks, sunbathers on lush green grass, children splashing in water parks, dockside restaurants and water activity of every kind. Eventually, the sea wall takes you to Stanley Park, the jewel of Vancouver. This thousand-acre wonderland is an oasis for city dwellers featuring Deadman’s Island, the Rose Garden, the locals’ beloved Girl In A Wetsuit bronze statue, the Vancouver Rowing Club clubhouse and the majestic Totem Poles. Horse-drawn carriages are a delightful way to explore. Food choices are endless, and range from kiosks of ‘Japadog,’ a Japanese style hotdog topped with teriyaki sauce, mayo and seaweed to restaurants supervised by some of the finest chefs in North America. Continued from page 59 Le Crocodile, Bishop’s, Seasons in the Park, Cardero’s and LIFT, all along the sea wall; La Terrazza, Simply Thai, Blue Water Café + Raw Bar (a must), all in historic Yaletown; and the funky Chambar, a Belgian restaurant in Gastown for “civilized debauchery.” Don’t miss a visit across the bridge to Granville Island for one of the most spectacular markets you’ve ever seen. Many farmers markets are chaotic and unorganized. Not this one. You’ll find everything to like on this little island—really a peninsula. The Kids Market is unique and adorable. If you don’t have a kid, borrow one and enjoy all there is to see. Foraging your way up and down the aisles at the Public Market is a perfect way to enjoy a reasonable, delicious meal. For a ‘sit-down,’ try Bridges, The Sandbar or the trendy Edible Canada at the Market. And always, always, leave room for a scoop or two of gelato at Bella Gelateria, voted the Florence Gelato Festival Winner of 2012—and worth every lick. You can always work off all those calories by paddle-boarding, kayaking, swimming, boating, sailing, fishing, jet-skiing, wind-surfing, wakeboarding and waterskiing in the waters surrounding the city. There are four Fairmont hotels in Vancouver. All are superb, but I wouldn’t want to stay anywhere else but the Fairmont Pacific Rim, with its amenities so updated that each room has its own iPad for contacting all the hotel services. And, of course, there’s the view and that soaking tub…which I absolutely must leave before I turn into a prune.

The Last Picture Show

unreliable and second-hand gossip from around the world* MATT DAMON

The hunky A-list star sent out wedding invitations last week. The lovely bride is Luciana Barroso, his wife of eight years. It seems after three children and eight years of marriage, the couple decided it was finally time to have a proper wedding and reception. Wait, I’m confused. They have been happily married for eight years. They have a family. They reside comfortably under the radar, and now they’re going to have this big, glitzy party with hundreds of family and friends in attendance? Paparazzi swarming? Tabloids in bidding wars for photos? Well, it’s about time.

CANDY SPELLING The gazillionaire widow of Aaron Spelling is being evicted. Apparently, Candy is renting a pricey condo, while her $47-million penthouse apartment is being built. Landlords claim her lease has expired, and they are forcing Candy to find another place to live for six months while builders put the finishing touches on her manse. There’s really no need to continue. We’ve all heard it before. One minute you’re on top of the world, living the high life in Hollywood, the next you’re out on the street.

JENNIFER ANISTON The actress is fueling diva rumors on the set of her new film, an untitled Elmore Leonard project. Aniston reportedly is surrounded at all times by a wall of security. Furthermore, insiders are saying that she refuses to dine with the cast, opting instead to be chauffeured off-set to a private trailer and eat alone. Well, to be fair, she probably only has enough bird seed and sugar water for one.

MEGAN FOX The former A-lister had to swallow her pride last week and apologize to the king of mediocre action sequels, director Michael Bay, in order to land a role in his upcoming film, a live-action version of Teenage Mutant Ninja Turtles. Fox was fired from the Transformers franchise after she compared Bay to Hitler. Megan paid her penance, and is now on the cast list for the movie. Sign No. 1 your career is tanking: sucking up to Michael Bay for a part in a live-action Teenage Mutant Ninja Turtles remake… *so don’t quote me. BY DEBBIE BALDWIN

S

O, THERE’S A MOVIE COMING OUT this week called The Last Exorcism Part II (the sequel to The Last Exorcism). Now, one would think that a movie called The Last Exorcism would not have a sequel—presumably because that exorcism was the last one (still, a movie called The Secondto-Last Exorcism might not have had the same box office draw). In any event, apparently the ability to do a back bend has become synonymous with demonic possession, and we have another last case. Of course, if Weekend at Bernie’s II taught us anything, it’s that Hollywood can make a sequel out of anything. Now there are great movies with great sequels— The Godfather, Alien, The Terminator, even Toy Story. In some instances you could argue the sequels are better that the original films. There also are terrible movies with terrible sequels. Hey, if you bought a ticket to Deuce Bigalow: European Gigolo or Daddy Day Camp, you’re on your own. The ones I can’t really wrap my brain around, however, are the great movies with terrible sequels. Sure, the obvious explanation is good, old-fashioned greed. You could phone in a sequel to Avatar or The Avengers and gross a billion dollars. But it seems to me that when you have a great movie as a springboard, there would be a level of ease, as well as a modicum of pride, involved. So, I look at some of the greatest movies of all time and their sequels, and I wonder: Where did it all go so terribly wrong? The Sting II Almost a decade after the original (a film easily on my top 10 list), some dim bulb in Hollywood decides a great plot for a sequel would be for Lonnegan to seek revenge (after being duped by Gondorff and Hooker in the original). The main problem here is that the brilliant actor who played Lonnegan, Robert Shaw, had since passed away.

Debbie Baldwin

TANGENTIAL THINKER Well, who better to fill his shoes than the ominous and malevolent Jackie Gleason? Enough said. Jaws II OK. Robert Shaw’s character dies in the first one, so they can’t bring him back for this one, either. Nevertheless, how hard could it be to make a second scary shark-attack movie? At least Dennis Quaid takes his shirt off in the third one… Wall Street: Money Never Sleeps The title alone speaks volumes. Again, the potential here was monumental. Gordon Gekko gets released from prison in the era of ‘Occupy’ protests and financial bailouts, and the best the screenwriters can come up with is an ill-conceived, unintelligent, conspiracy-laced flop. Blues Brothers 2000 Once again, death darkens the door of a sequel. You can’t reboot the Blues Brothers without John Belushi. That’s Movie 101. I want to fire the guy who came up with this idea, rehire him, kick him in the shin and fire him again. I could go on and on: Speed 2: Cruise Control, The Hangover Part II, The Fly II. I guess as long as there is money to be made, there are sequels to be made—some good, some not so much. In the meantime, I’m just going to sit back and watch them try to come up with a plot for Titanic 2: Beneath the Surface.

THEATER REVIEW

21 & Over

Next to Normal

HUNGOVER RATING: 2 out of 10

STORY About 25 minutes into this movie—and that’s generous—you start to wonder if the title refers to the I.Q. necessary to enjoy this movie. It is yet another in a long line of sophomoric, offensive, absurd comingof-age films that make college kids look like alcoholic kamikazes and make audiences feel like suckers. There are coming-of-age comedies. For me, those were Ferris Bueller’s Day Off and Sixteen Candles. Then there are the R-rated comedies, the classics being Caddyshack and Stripes—and even The Hangover. This movie tries to be both and—by a long shot— it is neither.

It’s a typical morning at the Goodman household: Dan is getting ready to leave for work, while Diana rouses their son and daughter for school. It becomes quickly apparent, though, that all is not well when Diana begins to make sandwiches on the kitchen floor. Diana has suffered from bipolar disorder for 16 years. Dan dutifully helps as much as he can, urging Diana to keep taking the medicine she’s been prescribed for her condition. Their children deal with the illness in their own ways, too. Daughter Natalie stresses about her studies and throws herself into her piano-playing, while their son seems self-centered and impervious to his mother’s difficulties. Dan and Diana visit a pair of psychiatrists, one of whom advocates electroconvulsive therapy to bring a sense of normalcy to Diana’s life. That result would be welcome in the Goodman home, or even something “next to normal,” as Natalie states with genuine hope.

HIGHLIGHTS

NOW ON DVD

JILL RITTER PHOTOGRAPHY

AND NOW FOR THE GOOD NEWS… THERE ARE SOME great DVDs that came out this week. These are my suggestions: Argo This Best Picture Oscar winner is an obvious choice. Ben Affleck directs and stars in this funny, suspenseful, intelligent thriller about a group of government agents posing as filmmakers in order to sneak a group of Americans out of Iran during the hostage crisis. Skyfall ‘Best Bond Ever’ may be a stretch, but this 23rd installment in the James Bond franchise more than satisfies. Daniel Craig is brilliant as an aging, damaged Bond, and Javier Bardem did not get enough credit for his chilling portrayal of the vengeful Silva. The Intouchables Just watch it. It’s the story of the friendship that forms between a handicapped millionaire and his caretaker from the other side of the tracks. The Master This film garnered Oscar nominations for both stars: Joaquin Phoenix plays a traumatized World War II veteran looking for direction, and Philip Seymour Hoffman portrays the self-declared guru willing to provide that guidance. Anna Karenina Keira Knightley and Jude Law are spot-on in this exceptional adaptation of Tolstoy’s novel. Flight Denzel Washington gives an Oscar-nominated performance as a pilot who saves hundreds of passengers in an almost impossible landing. Slowly, his hero status begins to fade as more details about the flight and the pilot surface.

A musical about depression and mental illness seems unlikely at first thought. Yet, composer Tom Kitt and author/lyricist Brian Yorkey make it work effectively in their two-act rock musical, which was accorded the Pulitzer Prize for Drama in 2010.

MUSICAL: Next to Normal GROUP: New Line Theatre VENUE: Washington University South Campus Theatre, 6501 Clayton Road DATES: March 8-9, 14-16, 21-23 TICKETS: $10$20; 534-1111 or metrotix.com RATING: A 4.5 on a scale of 1-to-5.

Next to Normal is a cerebral, up-close-and-personal account of mental illness, with a cast of six and a small accompanying orchestra. On the down side, the band all but drowns out the singers far too often. Hopefully that will be rectified in future performances. Kimi Short brings a fine vocal styling to Diana’s ballads, as well as some of the harder-edged tunes, but her acting in the focal role is more sufficient than stirring. Jeffrey Wright adds satisfactory support as Dan, and Zachary Allen Farmer is both amusing in Diana’s fantasy moments and straightforward as Dr. Fine and Dr. Madden offering their professional counsel. There also is some surprisingly strong work by young Mary Beth Black as Natalie and Joseph McAnulty as her classmate, Henry. The real strength in this production, however, is Ryan Foizey as the mischievous Goodman son. Foizey smoothly glides around the stage, nimbly flowing through the central performing area with a beguiling interpretation and a smooth vocal style. BY MARK BRETZ

So, those are my recommendations if you’re planning on staying in this week. Basically, just avoid anything starring Gerard Butler or Kristen Stewart, and you should be fine. BY DEBBIE BALDWIN

LN COOKS

An Interactive Cheese Party Q: Dear Chef, I’d like to do something different for our next get-together. When we invite friends over, we have drinks and do the usual snacks like cheese boards and dried meats. I am tired of the same old thing. Is there something fun out there that will really pick up my next party? A: Do I have something new for you! I am going to try it at home myself with some friends. What do you think about an interactive Mozzarella Party? You and your friends can infuse fresh mozzarella curd with great flavors like the ones below. DIRECTIONS: You can do one or all three flavors. You can do this on your stove in pots, but I recommend using a Crock-Pot for each of the brines. The Crock-Pot will hold a consistent temperature. Step1: Select the brine you want to use. Combine all the ingredients in the Crock-Pot and heat to 175 degrees. Let simmer for about 30 minutes while you cut your curd into 1-inch squares. Taste your brine. You should be able to taste the flavors developing, and the salt content should be that of seawater. Adjust as needed. Reduce to about 140 degrees. Step 2: Set the station with a bowl of cubed curd, the Crock-Pot with the brine in the middle, and a bowl of ice water next to it. This is a three-step process. Step 3: Using the latex gloves, take three pieces of the curd and place them in the brine until they warm and become soft all the way through. This should take a few minutes. You can either reach in and use your hands or use a slotted spoon to pick up the curd and test. Step 4: When the three pieces are soft, pick them up in your hands, stacking them on top of each other and press them together using the palms of your hands. Next, fold the curd in half and press again, repeat the process two more times. Now, begin forming a smooth ball. Tuck the outside edge of the curd under and into the center until you have formed a ball, pinching the bottom together. Make sure you do this quickly so the curd does not have time to cool. When the ball is formed, place into bowl of ice water until it is chilled through. Congratulations! You now have taken the curd and made it into cheese. Remove and place on cutting board until it comes back to room temperature. Step 5: There are two ways to eat mozzarella: Either cut it like most people, and see the rich, creamy soft center. Or, you can eat it the way I like to, BY CHEF JOHN JOHNSON

by pulling it apart and seeing the long strands of the cheese. Watch and follow the natural grain of the cheese. You can set up two or three cheese-making spots and let everyone make and taste the great mozzarella you are making. If you have any questions or need a little help, let me know. I’d love to get together and show you. Email me at John.Johnson@rivercity.com.

Vanilla Port (aka Italian Marble Brine) 8 c tawny port ½ vanilla bean, split 1 clove 1 cinnamon stick 4 T kosher salt This brine will give the cheese a rich, wine-colored skin; and as you fold and press the curd, you will create a marble-like texture to the center of the cheese that reminds me of Italian marble. Ginger Beer Brine 8 c 1904 red ale Ginger root, about 5-inches long, split with skin on Half an orange 4 T kosher salt This brine gives the cheese an orange and tan color. Black Pepper Garlic Brine 8 c water 12 roasted garlic cloves 4 T cracked black pepper 4 T kosher salt Make sure to fold pieces of the cracked pepper and whole roasted garlic cloves into the curd as you fold and form the cheese.

YOU ALSO WILL NEED: 5 lbs. mozzarella curd I use BelGioioso curd. Or, you can check with your local dairy or grocery. Tools: Crock-Pot Cutting board Slotted spoon Latex gloves Bowls

Pan D’Olive

A Taste of the Mediterranean

I

T WAS REALLY GOOD TO SEE ANOTHER restaurant move into the old Mihalis Chophouse digs at 1603 McCausland Ave. late last year. The building sat empty for a good two years, surprising since it had so much going for it inside and out. Luckily, restaurateur Sam Kacar saw the potential in it and decided to use it for his latest venture, Pan D’Olive. The space had plenty of room to dine on multiple levels, including lounge-style soft seating, tables and cozy semi-enclosed booths. The bar area was hopping with happy hour revelers during our visit, but the resulting cacophony was wellbuffered and couldn’t be heard in the main dining room at all. The overall vibe of the restaurant was definitely upscale but not stuffy, and there were plenty of interesting decor details to take in, like the illuminated bar top. The restaurant takes its name from the housemade olive bread used for bread service, which came to the table warm and fresh, with plenty of accompanying olive oil on the side. The Pan D’Olive website describes the overall cuisine as “Mediterranean with a California twist,” with an emphasis on Greek and Turkish flavors. There were many favorites from these regions available, from marinated olives and humus under the Small Plates section to the lamb shanks under Entrees. Our choice to start was the Lamb Kofta Sliders ($5) from the Small Plates list, rare lamb patties on crusty mini-buns served with tangy mint yogurt, cucumber tomato and greens. The order consisted of just two of the juicy, petite burgers, just enough

to whet the appetite for another round of small plates or an entree. The menu also had a selection of flatbreads, bruschettas and salads available, which are definitely on the must-try list for next time. This trip, though, we headed straight into the bigger plates. Mediterranean cuisine also encompasses Italian fare, and there were several classic pasta examples on the menu. The Lobster Ravioli ($17), finally got the nod after much deliberation. The tender, sweet pasta was served with rock shrimp, spinach and tomatoes all in a thick, rich sherry cream sauce. To balance out the relatively heavy pasta, we opted for some fish. The Grilled Salmon ($18) was a perfect example of simple deliciousness. The thick slab of pink salmon had a light peppery crust on the edges, and was served on a bed of spinach and accented with capers and a light lemon sauce. To cap everything off, we went with a flaky honey-drenched order of Baklava ($5), another simple and utterly delicious rustic Mediterranean favorite that we always order when given the chance. While the food and ambiance were definitely high-end, the prices at Pan D’Olive were really reasonable, making it a good spot for everything from a casual light meal to an elaborate anniversary celebration.

CASAs have a powerful role on the frontlines of a child’s life, Huneke continues. “If someone is looking to truly have a significant impact on a child, this is the best opportunity for doing that. You really can change what a child’s life looks like and break the cycle of abuse and poverty for generations to come. It’s a big commitment, but it has a huge impact on a child for a lifetime.” The process not only changes the child’s life, it impacts the adult volunteer. “There have been volunteers who have said it is the most important work they have ever done outside of raising their own kids.” And with 2,000 kids in foster care each year in St. Louis city and county, even more volunteers are needed to fulfill this life-changing role, Huneke says. “We only serve about 40 percent of kids in foster care right now. We need many, many more volunteers—they are our most critical resource.” To further support this vital children’s service, the nonprofit’s Be The Difference Benefit will be held on April 18 at Windows on Washington. The event, which begins with a 6 p.m. cocktail reception and includes a dinner and special program, will shed more light on the struggle of local children and how CASAs improve the course of their lives. The organization also will honor its 2013 Community Superheroes, judges Michael Burton and Jimmie Edwards. The veteran juvenile court system judges will reflect on their time on the bench and share decisions they faced making on behalf of kids. And as the organization’s core fundraiser, the night will help give even more children a voice.

further, offering unlimited planning and design hours. “Before we recommend a vendor to a client, we go through an extensive pre-screening process to ensure the vendor is on time, acts in a professional manner, brings exactly what is ordered, and makes sure the clients are supported and stressfree on the wedding day.” Vendor recommendations vary among clients, she notes. “We take into consideration the budget and design aspects, and put together the best team for them.” And instead of taking kickbacks from recommended vendors, Kate & Company passes along savings to the client, such as a 10 percent discount on flowers. Another unique aspect is the proposal-planning side of the business. The team can put the

Eczema continued from page 54 inherited and often appears in infancy or childhood. Children may outgrow the outbreaks or experience less frequent and much milder outbreaks as adults. Allergic eczema (allergic contact dermatitis) occurs when an individual comes in contact with an allergen that causes the reaction, such as poison ivy. “The goal of treatment isn’t to be cured of eczema, because that is impossible,” Muccini says. “The goal is to be very, very well-controlled so that it doesn’t bother you for long periods of time. It’s about managing the problem.”

soon-to-be groom’s idea in motion, or advise him on a proposal incorporating her favorite things or anything that is unique to them as a couple. “To be involved in this once-in-a-lifetime opportunity is really meaningful to our entire team,” Fogerty says. Since many couples become engaged between November and February, Fogerty says her team networks in the community and on social media to offer their services to future grooms. As a member of a close-knit, entrepreneurial family, Fogerty says Kate & Company combines her lifelong passion for weddings and celebrating the love of families. “I still cry every time I see someone get married. To be part of their special day is something you can’t even put into words. I really think I have the best job in the whole world.”

That management should include keeping the skin well-moisturized with thick lotions and air humidifiers, he says. Bathing in warm (not hot) water and using hypoallergenic soaps and household products also are basic preventive strategies. Over-the-counter and prescription topical corticosteroids and oral antihistamines can help control outbreaks. Atopic eczema often becomes worse during the spring and summer allergy seasons, so take preventive steps now—moisturize, moisturize, moisturize—and see your primary-care physician if the condition affects your quality of life.
