1.How can I avoid chapped lips during this season? Chapped lips are a result of many factors including exposure to excessive sunlight, exposure to dry or cold weather, dehydration, or some medications and supplements. Sometimes, chapped lips also are a consequence of high fevers and certain vitamin deficiencies. Simple lifestyle changes can prevent most instances of chapped lips. Yasmin Mansour Tell us about yourself, how did you start, and why did you choose fashion? I’m Yasmin Ahmed Mansour, 22 years old, I was born in Egypt but spent my childhood in Qatar, then I returned to Egypt when I was 18 years old to study at the university. I’ve loved fashion since I was 12 years old, and I drew sketches for a long time without being enrolled in any fashion school. When I came to Egypt, I knew about Italian Fashion Academy and it was a good place to start learning the thing I love to do, so besides studying Mass Communication at the university, I studied in the Italian Fashion Academy. I chose fashion because this is the thing I’m fond of, and I love to see things from different perspective and design fashion that pleases many. What’s unique about your dresses and its philosophy? My designs are unique because any woman who wears them will find herself different and glamorous like no one else. Fashion to me is making pieces that makes a woman feel unique and show her beauty. What’s the greatest motivation or passion that drives you to do this profession? My motivation is that I love fashion very much and I want to make something new in the fashion field.

I will follow the trend to know the materials needed and will do pieces very glamorous and unique, all in my way. I could do some pieces that suddenly come into my mind and they could be a little bit crazy. For example, I designed before a metal dress which was weird because it was all made of real metal which made it heavy.

HanaTawakol & Myriam Makram New faces in the world of Photography By: Caroline Coussa Hana Tawakol and Myriam Makram are two rising names in the world of photography. They are both friends who attended the same school and university. They loved photography which made them attend Fadi Gwanny’s photography classes as a hobby besides their full time jobs. It was then that they discovered they wanted to take photography to a second level of professionalism and make it their part time job. Coming from very rough areas of work, Hana Production Planning Manager and Myriam Business Administration Manager they found a fun refuge in photography. They do studio photography, family shoots including baby shoots which is their field of work, plus modeling, pre-weddings, and bachelorette party shoots. ne day I logged into my Facebook account as usual and I was going through the news feed page when I found fashion pictures and fashion news that immediately caught my attention as they looked elegant, cool, trendy, so feminine and stylish. And that was how I knew about the amazing Fustany.com. Fustany.com was established on September 1st, 2009, and today it’s the leading online fashion destination in the Middle East and it’s growing in popularity day after day. Fustany.com is an online media covering everything related to fashion on the international, local and Arab levels, in addition to beauty, lifestyle and empowering women in the region. The content is updated daily and it’s available in both English and Arabic. We were lucky to meet Fustany.com’s team on the occasion of its relaunch. Amira Azzouz, 24, is Fustany.com’s Founder and Editor-in-Chief. She studied Telecommunication Engineering at the German University in Cairo. During her fourth year at the university she worked as an editor at an online fashion magazine based in London and during that time she felt that she wanted to build a platform where women can interact, express themselves and become more creative and motivated to live a healthier life. Amira started in turning what she wanted to do into a reality when she founded and launched Fustany.com in September 2009.

Fustany.com has been continuously being developed since its launch in order to enhance the reader’s experience. Last month, Fustany.com was relaunched with new design, better navigation and new sections such as Fustany TV and Today I’m Wearing. Fustany TV gives the readers the chance to watch a lot of interesting people in the fashion industry and not only see the glamorous side of fashion but also know what goes on behind the scenes. Like Fustany. com, Fustany TV will focus more on fashion but will still have different segments. In Today I’m Wearing, everyday there are new pictures that women send of what they’re wearing to be published online. Sometimes they are editors-in-chief, designers, stylists, TV presenters, but any ordinary woman can send her picture. Besides fashion and beauty, Fustany.com has sections for travel, recipes, weddings and health and fitness. By the end of this year, Fustany.com will have introduced its own social network where users will be able to have their own profiles and discuss fashion.

A very important target of Fustany.com is to empower women in the Middle East and encourage them to have a healthy life. For this reason, they make awareness campaigns from time to time. Last year, they started a breast cancer campaign, “Bras for a Cause,” which aimed at raising awareness about breast cancer and bridging the gap between fashion designers and breast cancer survivors. The campaign organized three fashion shows; two of them were last year in Beirut and Dubai, and the third was this year in Riyadh. Designers participating in the fashion shows donated one of their pieces to be sold for the cause. Also this year, they created “Teal On,” ovarian cancer awareness campaign, along with CanSurvive, in which they raised awareness through collaborating 58 |

with different businesses: The Fashion Studio, BLOW Creative Agency, Nola Cupcakes, amuse lifestyle concept store, MO4 Network, Al Sagheer Salons, and Roche. Talking about the challenges that Amira faced when starting Fustany.com, she said, “I started with a very low budget, and I had to work with web developers and get technical experience. It took time to convince international brands with the quality of Fustany.com’s work so that they could trust us and deal with us. Finding the right team was also a challenge. In addition, I had no business plan in the beginning.” Zeina Tawfik, 25, studied Integrated Marketing Communication at Misr International University. She was one of Fustany.com’s regular readers and she got to meet the team when she was one of the winners of “Bras for a Cause.” Shortly after that, she joined the team as Senior Editor and PR Director. When asked about the fashion industry in Egypt now with the large number of emerging fashion designers, she said, “Throughout the past years, fashion in Egypt has started to flourish, yet we still have a long way to confidently say that we do have a fashion industry. There’s a lot of talent out there that goes to waste due to the lack of backup and support systems. At Fustany. com, we aim to shed the light on emerging Middle Eastern talents by promoting them and supporting them to raise their profile. I can hardly count the number of bright talents that have the ability to showcase promising designs. On the other hand, there’s an influx of people who start their lines by copying international brands, they have no idea about mood boards or look books, they don’t know that they have to work ahead of seasons and they think that putting Instagram photos of their products on their Facebook profile makes them a fashion designer!”

Nada Allam, 21, is the Fashion Features Editor; she writes about fashion trends, designers and new collections. She’s a Political Science student at the American University in Cairo and she’s doing double minor in business and creative writing. Nada always had a passion for both writing and fashion. She always wrote about politics and fashion and stories too. She also wrote articles for magazines. Although she loved fashion so much, she didn’t want to design as she loved to write about fashion and trends. So when she knew Fustany.com needed a fashion editor, she was sure that was exactly what she wanted to do and she was happy about it because she never thought it was possible to pursue such a career in fashion in Egypt. Nada believes that one day Egypt could be a fashion destination if talented designers kept pursuing their dream.

Dalia Hosny, 19, studies Mass Communication at Misr International University. She’s been part of Fustany.com’s team for three years, she’s the Features Editor and Fustany TV Director. She’s also responsible for video shooting and editing Fustany.com’s videos. Dalia pointed out, “In the Middle East, there’s no coverage of fashion events and shows, that’s why we introduced Fustany TV.” About fashion designers in Egypt she said, “We had no independent fashion designers before. Now people are more open to the idea of wearing Egyptian designs and it has become easier for young people to start their own fashion brands.”

May Heggy Jewellery The Face Behind The Name By: Farah Asfour

I

’ve known May Heggy for many years, that’s why I’ve been following her collections since she started her jewellery business a couple of years ago. I’ve been always impressed by her exquisite designs, I really loved them and one day I got a pair of very nice earrings from her collection. Believe me when I say that I never wear that pair of earrings without receiving comments on how beautiful it is. We had the advantage of interviewing May Heggy and getting a glimpse of her new collection that will be launched very soon. What did you study at university? I studied Integrated Marketing Communication at the American University in Cairo, I did a minor in psychology and I graduated in 2007. When did you realize you had a passion for jewellery design? I’ve always loved handmade arts since my childhood. I used to buy kids’ jewellery making kits, I loved to make accessories with beads and I also used to make dolls with plastic water bottles.

Do you only depend on your talent when you design jewellery or have you had any professional courses? I believe that both talent and education are impor60 |

tant, and that’s why in 2007, the same year I graduated from university, I travelled to London and took courses at Central Saint Martins, University of the Arts where many famous fashion designers studied including Alexander McQueen, John Galliano and Stella McCartney. I studied jewellery design there and I learned the techniques of professional drawing and illustration. My mentor was very professional; she worked at Cartier so she had tremendous experience in the field. Was it easy after that to practically apply what you studied in jewellery design? I wouldn’t say it was easy especially that in the field of jewellery design, craftsmanship is very important and


you have to find skillful craftsmen who can turn your design into reality with high quality and attention to detail. What was your next step after studying jewellery design in London? I started my own jewellery line in 2008. At that time, there weren’t so many bazaars as is the case now so I used to reserve tables at exhibitions from time to time but I mainly depended on facebook. Things started to change a bit after I had two interviews, one in a magazine and one on TV, which made Mounaya Gallery in Zamalek see my work. They approached me for displaying my work in the gallery and I designed an exclusive collection for them that was inspired by the Bukhara carpets. I have to say that the advice and experience of the people at Mounaya helped me a lot during my start. Then with time I became more known and my work started to be displayed in more stores. Also some of my designs were displayed and sold at Bloomingdale’s Dubai in 2010. Is all your jewellery handmade? And what material do you use in your designs? Yes, all my jewellery is handmade. I use semi-precious stones, sterling silver, gold plated sterling silver and gold plated brass. Where do you find inspiration for your work? And can you tell us about your new collection? All my past collections were inspired by Islamic art. My new collection, which will be launched very soon, is a Pharaonic inspiration collection. It’s a very colorful collection; I want to cheer girls and women up and boost their mood. What are your favorite jewellery brands? And what do you like about them?

My favorite jewellery brand is Van Cleef and Arpels because each of their pieces is a true piece of art. I also adore the Indian inspired Isharya jewellery; it’s a mix or art and culture and amazing craftsmanship. How does your work as a jewellery designer affect you personally? To me, my work is a form of self-development. It helps me discover my passion and grow in many aspects. My work not only reflects me but also affects me. When I design, the commercial factor is not the only thing I think about. When I design, I get a chance to express myself and my artistic talents and that’s why in the meantime, I don’t mass produce. What are your professional ambitions for the future? I wish that one day my jewellery becomes one of the means for promoting our culture and creating interest in it.

“Bedaya” store By Siblings Kiko & Therese Ananian What’s the greatest motivation you had for starting bedaya? One day in university I had a research assignment and i decided to do research about disabilities in Egypt. The greatest shock I got was realizing that approximately 10% of the Egyptian population is disabled. However, we rarely see people with disabilities with their families except the disabled beggars in the streets. This was a great motivation to actually tell people with disabilities that they exist because many of them are hidden by their parents in their houses. Second motivation was having a disabled brother Kiko Ananian, who suffered a lot from the treatments in the different schools he attended, the way people look at him when we used to go out to the movies and also the fact that he finished school and attended Trelors college in England specialized for his disability. Although the country states that 5% of the employees of any company must be disabled, my brother used to work in a place for this reason and received his money while

sitting at home doing nothing. Companies just obey rules not believing in any ability he might have. kiko and i studied art, so we decided to create this small project to encourage all handmade artists around us, disabled or non disabled. Other than me and Kiko, our team consists of Mona Rizkallah, Mariam Wahba, Christiane Azer, and our parents Gerard and Marianne. We work as a team and we cannot work one without the other. We also invite groups of disabled people from associations like “Ard El Hobb” to make some art projects in our studio every now and then. We aim at making some of them work with us in the studio as part timers, and we wish to make our studio a small school of arts one day. what were the obstacles you faced while doing your project? The biggest obstacle we face is the fact that people in Egypt still don’t really know the quality of handmade arts. People prefer to consume mass production than

handmade. The second biggest problem i see in our society that affects us is the fact that people were not taught to see disabled people around, so one day when my brother and i were sitting in the shop, a woman got scared and left the shop when she saw my brother, although she was amazed by our work before she actually saw him. Also our shop is small so not so many people visit it unless we add flashy things on the door. What’s your philosophy and what are you trying to present differently in your field? I am an Art Vision graduate from the American University in Cairo, and what I liked the most is the fact that art shouldn’t always be perfect and realistic, but the most important thing is to have a concept to your art piece, express a feeling through lines and colors and also deliver a certain message to the society. This is our philosophy; the cushions and table cloths we make are not like any you see in other shops. Ours are

imperfect, but they hold so many expressions, stories and effort that the buyer would never imagine. We are trying to make people understand the true essence of handmade arts. What kept you going and not lose hope? What keeps us all going is wanting to make a change in the mentality of our society, even if we don’t make the same amount of money that any of the team members can make working somewhere else. We aim at delivering our art and integrating people with disabilities in our society. Seeing the problem in front of us daily makes us never lose hope to improve. Who inspires you? My brother is always inspired by Nick Vujicic, a man with no limbs, author of “Life Without Limits.” I am inspired by many artists like Mark Chaggal, Pablo Picasso, Henri Matisse, Salvador Dali and Antoni Gaudi.

How did you start and why did you choose interiors? I’ve always had this passion for arts and interior design; drawing was my comfort zone when I was little. I’ve chosen interiors since it’s a form of art, a form of life that not only reflects beauty but also responds to the human needs. To pursue this passion, I got my bachelor’s degree at the Faculty of Fine Arts, interior design department. Then I couldn’t stop here, as I knew there was more to discover and learn, I flew to Italy and got my master’s degree in interior design in Florence where I did my first exhibition of some interior and furniture projects. During my master’s vacation in Egypt, I worked at some offices, and had another exhibition of my paintings. After coming back to Egypt, I started turning my dream into reality and became a freelance interior designer. What’s the greatest motivation and the biggest obstacle? My greatest motivation is to turn a space into an effective setting that is comfortable, meaningful, beautiful and easy to connect with. Making my clients happy and seeing how the place is like in their eyes is inspirational for me. As for the biggest obstacle, as an artist I really don’t believe in obstacles, I believe in freedom and challenge, and each block is unique in its design and can be reformed and renewed. That’s the thing about interior design; it has the power to transform obstacles into a creative piece of art! 64 |

What’s your philosophy and what are you trying to present differently in your field? My philosophy is that creativity has no boundaries; anything can be achieved through sincere work and great imagination. I always want to present new ideas and unique designs that serve the human needs and to actually transform beauty into something visible, something touched and felt. That’s why I always say that “interior design is a form of life.”

here has been a renaissance at Fairmont Heliopolis & Towers. Aqua e Luce has been reborn with a new identity. Though Aqua e Luce’s 24-hours a day operation for buffet breakfast, buffet lunch and dinner is still in place, it is a very different all-day restaurant now. Maybe it seems difficult for the Aqua e Luce to compete with the excellence of Fairmont Heliopolis & Towers’ Raj, Leonardo, Noble House, Lan Tania, Maria’s and 10 other ‘eateries,’ but a determined diner who reaches Aqua e Luce after gliding through the spectacular lobby, feels that the trip was worthwhile. “My task is to bring change and with Aqua e Luce that meant creating a positive identity. We have given the restaurant a style and personality, which I think it lacked before,” said Alistair Carter, the recently arrived Executive Chef. “Now our menu is far more defined, fresh, light and easy on the digestion. The cuisine is not just Mediterranean but ‘French Mediterranean,’ in particular the cuisine of Provencal and Côte d’Azur,” he added. Niçoise cuisine is simple… but perfect, born on the coast by Nice where fruits, vegetables and flowers don’t just grow, but unfurl in the sun, kissed by Mediterranean breezes. The highest quality fruits, vegetables, salad, fish and meat are lightly touched with herbs and olive oil – why mess with what nature has already perfected? This is the essence of the new cuisine at Aqua e Luce. The lunchtime buffet displays the ‘light touch.’ Alistair said, “It’s simple cooking and all about fresh produce with a lightness of touch to the dishes, fresh, healthy and appetizing; easy on the eye and the digestion. But in the evening the à la carte menu holds centre stage. All the dishes are displayed in a classic large format, hardbacked menu and seafood makes a big splash on this à la carte selection. We may be at the other end of the Mediterranean to France, but we are lucky in that we can source some of the same fish. We have a huge variety of fish, including some that can be found nowhere else in Cairo.” Alistair has also added a spit roast rotisserie, the ‘low tech’ version of which first appeared in French kitchens back in the 15th Century, and is another delightful indication of the ‘traditional’ feel to Aqua e Luce. The Chef said, “This is a great way of cooking as it is slow and develops an amazing flavor. We will be cooking whole chicken, beef rib eye and veal loin.” The rotisserie is another innovation which adds to the mouth-watering meat cuisine at the restaurant. Aqua e Luce has come a long way these past months. It may be the last restaurant you reach as you walk through the capacious lobby at Fairmont Heliopolis & Towers, but it is a long way from being the least. Take those few extra steps, you will not be disappointed.

It’s Monday morning, you are at work and you just had a fight over the phone with your boyfriend or simply with a silly coworker who is always trying to pinpoint any work flaws you make!!! Next thing you do is go to the nearest vending machine to buy a chocolate bar or a bag of chips seeking comfort… Afterwards you go home and the first thing you do is head to the freezer for ice cream and start indulging yourself with that whole pint!!! Are you feeding your hunger or your emotions? Emotional eating is when people use food as a way to deal with their feelings instead of satisfying their hunger. We’ve all been there, finishing a whole bag of chips out of boredom or downing cookie after cookie while cramming for a big test. We don’t always eat simply to satisfy hunger. We also turn to food for comfort, stress relief, or as a reward. Unfortunately, emotional eating doesn’t fix emotional problems. It usually makes you feel worse. Afterward, not only does the original emotional issue remain, but you also feel guilty for overeating. Learning to recognize your emotional eating triggers is the first step to breaking free from food cravings and compulsive overeating, and changing the habits that have sabotaged your diets in the past. First, ask yourself these questions to know if you are an emotional eater or may be on the borderline to become one. Do you eat more when you’re feeling stressed? Do you eat when you’re not hungry or when you’re full? Do you eat to feel better (to calm and soothe yourself when you’re sad, mad, bored, anxious, etc)? Do you reward yourself with food? eep in mind that while most emotional eating is linked to unpleasant feelings, it can also be triggered by positive emotions, such as rewarding yourself for achieving a goal or celebrating a holiday or happy event.

The first thing you need to do to conquer emotional eating is “to recognize it.” Once you have done so you can start measuring your hunger point on a scale from 1 to 10. Are you physically hungry or you are just bored? If you feel that your emotional hunger is on the edge to start, try waiting for five minutes to pass this stage, if not try to get busy with anything that you like to do other than eating. For example: call a friend, go for a walk, clean your room, or do some housework. Try to find anything that will keep your mind away from food. If you can’t control the feeling anymore try to think healthy; grab a carrot, some nuts, dried fruits, or you can try drinking lots of water, it does make you feel full for a while. If you failed to do so and you are still craving a dessert, pizza, or mostly fattening foods, try to have a bite or two of those certain foods just to satisfy the feeling while being conscious why you did so. Lastly, remember that emotional eating is something that most people do when they’re bored, happy, or sad. It might be a bag of chips or a steak, but whatever the food choice is, learning how to control it and using moderation are keys.

Maktoob debuted a new cooking web series titled “Cooking with My Mom.” The funny and heartwarming show is with famous chef Eva Rihani whose passion for food has led her to bring her daughter into the kitchen to pass on her cooking secrets. Each 8 minute episode features Eva teaching her 17 year old daughter Emily a new simple, yet delicious recipe in the kitchen of their Dubai home.

Eva is a self-taught chef who has featured in several prominent Arab magazines and on television channels such as MBC1, Sama Dubai, Decision Makers, as well as Al Arabiyya 99 radio. She currently has her own segment on Panorama Café on MBC radio. We were lucky to get a chance to interview her and know her cooking secrets! what did you study at university? I had my A-levels in London, then I studied Civil Engineering at Swansea University in the UK and taught English language as well, but I believe that neither one was too far from the art of cooking. Even when I was working at a school, somehow I used to teach children cooking, from explaining the names of different vegetables and fruits and ways of preparing them to making some snacks in the classroom. What was the first recipe you cooked? How old were you then? I remember the first recipe I cooked when I was 11 years old, I baked cookies for the first time for my mom’s friends and they loved them! from that day I realized that I wanted to become a chef and spend my time preparing delicious recipes. when I was young, I always used to sit with my mom in the kitchen and keep an eye on the ingredients she used in her recipes. 88 |

I admit that my mom’s support was the main reason for the inspiration inside me to grow more and more. What made you love cooking? I do believe that cooking is an art and not just something you study; you don’t have to go to an art school to become a painter especially if you have the talent and passion for it, the same applies to cooking. It is the inspiration and passion that grow inside you, in addition to the support you get form people arround you that makes you more passionate and creative. Can you tell us more about “Cooking with my Mom” show and the idea behind it? The idea of “Cooking With My Mom” occurred to me first as a book I wanted to write. I have two daughters and I wanted to share my cooking secrets with them. However, the project turned from a book into a web


series, which was something I never imagined would happen. As it is known, Yahoo! Maktoob always has wide arms open for new creative ideas. People over there have given me all the support and believed in my talent. “Cooking With My Mom” web series shows the viewers the normal life where I teach my daughter Emily my cooking secrets to cook delicious meals that can be done easily which I have learned from my mom. The show started this Ramadan exclusively on Yahoo! Maktoob and it is aired every Monday. The feedback I have received so far has been amazing. I consider it an amazing experience and I am definitely proud that I had this project with Yahoo! Maktoob. How was “Cooking with my Mom” show perceived by viewers? We are now in the technology age where we have more exposure to iPads, tablets, smartphones and internet. I was actually surprised with the positive feedback that I received from the media, family and friends, and viewers. In general, I have noticed a huge increase in viewership since I started my web series on Yahoo! Maktoob’s website. I used to work on TV shows and radio programmes in MBC, Sama Dubai, Arabia 99 FM and others, but this is my first experience to have a show for me via the internet and it seems to be the future. Modern lifestyles are so busy. Although people want to learn to cook and learn new skills, sitting down and tuning in at a specific time may not be possible. With Yahoo! Maktoob you can find the time that suits you and watch anywhere at any time, just one reason I feel the show has been so popular in addition to the compelling content. Who are your favorite cooks? And why do you like them? There are several professional cooks that have emerged recently. I really love “The Perfect Contessa,” she is a very professional cook and I feel she is really an expert with her recipes. I like as well “Chef Ussama” as I feel he is classy and prestigious in the way he cooks and displays his dishes. The fever of cooking has spread everywhere, nowadays women are more courageous in inventing and creating new recipes. I believe there are no fixed ingredients or recipes, every woman can add her own touch to dishes she prepares. What were the biggest challenges or difficulties you faced? One of the biggest challenges I faced was finding the right people who give support and deliver the right

message. Sometimes you receive offers from channels but they end up as promotions for projects or specific products and this has not happened with Yahoo! Maktoob. After all my experiences, I believe that I have chosen the right people, channels and programmes that added value to my journey. I believe that successful cooking is like the right communication that gets people together and connects them to each other. Which cuisine do you prefer? And why? I am really in love with Arabic food. In my opinion, Arabic cuisine is the most cuisine that has various flavors and spices that are combined together to give you the irresistible flavor that you get at the end. Arabic dishes are known from the past as generous and full of ingredients that are good for our health. I still remember the taste of some traditional dishes that my grandmother and my mom used to cook, I am following their recipes with my daughters but adding my twist to it. I am sure my daughters will do the same with their children and will add their touch to the recipes. What are your upcoming projects with Yahoo! Maktoob? It is witnessed how “Cooking With My Mom” was a success with Yahoo! Maktoob. Surely, we are thinking of new projects with Yahoo! Maktoob in the future as they are always open to new ideas. This cooperation might extend as I will open my restaurant “Eva Kana” here in Dubai soon. We will be doing cooking classes in more enthusiastic ways. We will invite groups of women, teenagers and even children in the mornings and afternoons and share with them tips on food and talk about new ideas and dishes. Working with Yahoo! Maktoob is a first step of many coming successful projects. Your tip to our readers! Believing in your capabilities is the first seed of success, no matter what domain you are in. Others wouldn’t recognize your potential if you don’t recognize it yourself first. Knowing what you lack and how you can improve yourself make you excel. Batter ingredients : • 1 cup (about 100 grams) powdered sugar • ½ cup powdered almonds (50 grams, sliced almonds, pulverized) • 3 tablespoons (25 grams) unsweetened Dutch-process cocoa powder • 2 large egg whites, at room temperature • 5 tablespoons (65 grams) granulated sugar • ½ teaspoon flavored food coloring of your choice (preferable the powder colorings) Chocolate filling: • ½ cup (125 ml) heavy cream • 2 teaspoons light corn syrup • 120g bittersweet or semisweet chocolate, finely chopped • 1 tablespoon (15 grams) butter, cut into small pieces Icing filling: • 150g butter, softened • 75g icing sugar

BEST tip! The macaronage step! Once you dump the dry ingredients into the whites, things happen very quickly. Fold everything together with a few quick strokes, the purpose being to break the meringue. Then slow down until you achieve a pancake batter-like consistency. Keep a close eye on the batter, because the moment you can draw a line through the batter and it falls effortlessly back on itself, you are done. You may wonder why you would bother whipping the whites just to turn around and deflate them, but that is the secret to the ethereal texture of the macaroon.

1 Preheat oven to 180º C. Line two baking sheets with parchment paper and have a pastry bag with a plain tip (about 2 cm) ready. Grind together the powdered sugar with the almond powder and cocoa so there are no lumps; use a blender or food processor since almond meal that you buy isn’t quite fine enough. (add food coloring in this step)

2 In the bowl of a standing electric mixer, beat the egg whites until they begin to rise and hold their shape. While whipping, beat in the granulated sugar until very stiff and firm, about 2 minutes.

4 Pipe the batter on the parchment-lined baking sheets in 3 cm circles (about 1 tablespoon each of batter), evenly spaced 3 cm apart. Rap the baking sheet a few times firmly on the counter top to flatten the macaroons, and then bake them for 15-18 minutes. Let cool completely then remove from baking sheet. To make the chocolate filling: Heat the cream in a small saucepan with the corn syrup. When the cream just begins to boil at the edges, remove from heat and add the chopped chocolate. Let sit one minute, and then stir until smooth. Stir in the pieces of butter. Let cool completely before using. To make the icing filling: In a bowl, beat the butter until light and fluffy, and then beat in the icing sugar. (You can now add flavoring or nuts, and color)

Carefully fold the dry ingredients, in two batches, into the beaten egg whites with a flexible rubber spatula. When the mixture is just smooth and there are no streaks of egg white, stop folding and scrape the batter into the pastry bag (standing the bag in a tall glass helps if you’re alone).

Dealing with A Slow Learning Child A “slow learner” is a term used to describe a student who has the ability to learn necessary academic skills but is slower than average students, he doesn’t have learning deficiency or intellectual disability (known as mental retardation), he just needs more time, repetition and additional help in order to well understand and comprehend new concepts or lessons. A slow learner has an IQ in the range from 70 to 85. Moreover, he can be having a problem with particular subjects and not necessarily with all what he is learning. This article deals with the problem of slow learners whose ages are between 3 to 10 years old.

Do you have a slow learning child

In order to know whether a child or a student is a slow learner, you need to know the characteristics of slow learners. They cannot solve complex problems, work very slowly, and have poor concentration skills. They do not easily master skills that are academic in nature such as the times tables or spelling rules. They are sometimes immature in their relations with others. They lose track of time and cannot transfer what they have learned from one task to another well. They have difficulty in time management and determination of long-term goals. - Illiterate or busy parents are examples of a problematic environment for the child. At the age of three to six years, children start learning from their parents and their personality starts to take its shape. So they need their parents during that time and it’s important that their parents know how to deal with them. - Family size also plays a major role in the development of the child. In a small family a child gets attention of the parents and enough resources will be available to him/ her whereas in a large family things get more difficult. - Untrained teachers and wrong teaching methods affect the rate at which the student learns and understands. An untrained teacher cannot understand the psychology of the child, cannot identify his problems, and cannot know why the child is not learning and how to help him. On the other hand, a qualified teacher will be able to use different methods in class so that every student understands. - A big class is another problem that helps in producing slow learners. There should be only twenty to thirty students per class. Large number of students in class makes it difficult for the teacher to give attention to and communicate with all students. In addition, inappropriate course material increases the number of slow learning students in class.

Here’s some advice that parents should know in order to deal correctly with the slow learning issue. As mentioned earlier the surrounding environment has great influence on the child during the early years of childhood. To decrease chances for having a slow learning child, create a safe environment for your child and reduce the stress at home. Show him your love and care. Studies show that children who have better environment show better confidence in life and in education so try to keep the atmosphere at home calm and positive. Provide a quiet place to work where the child can be easily observed and motivated and provide activities for him/her. Ask questions about assignments while the child is working. Keep homework sessions short. Teach your child how to use a calendar to keep track of assignments. Read to the child. Offer appropriate incentives and do not reward unfinished tasks. Proper nutrition and enough sleep are very important. Present information to your child in a new way and explain the concept in a different way than the textbook. Use the “Three Transfer” form of learning, in which the student must take information and do three things with it besides reading. For example, read it, explain it to someone else, draw a picture of it, and take notes on it. Try to have frequent conversations with your child asking about new things that he has learned. Encouragement and support are crucial. Encourage your child not to give up because of being slow or weak in certain subjects as nobody excels in all areas. Try to find out what your child is interested in and boost his confident in these areas and slowly expand it to other areas.

There are other solutions that should be provided by teachers at school. These include repetition to make a concept clearer to the student, encouraging activities in which the child can experience success, teaching study skills to help a student become more efficient in studying, and teaching the most important concepts and leaving out some of the less important details. Finally, you always have to remember that having a slow learner is not the end of the world so there’s no need to panic as it’s not even considered a learning disability. A slow learning child just needs more help through some techniques provided by parents and teachers.

I seldom watch television but one type of programs that really catch my attention is the “makeovers.” You see I am deeply fascinated by the way a different haircut, new make-up and fitted cloth can change the radiance and self-confidence in a person and I wonder how it must feel to undergo such a transformation in just a few hours. Now I am not talking about the very drastic ones that involve plastic surgery and weeks of recovery because surely they alter you on a deeper level also. My curiosity mainly involves the fairly simple techniques that seem to expose a completely different person than before. Coco Chanel once said, “If a woman is badly dressed, it’s the dress we’ll notice; but if she is impeccably dressed, it’s the woman herself we’ll notice.”

What your wardrobe is telling you. It’s no news that your wardrobe says a lot about you but did you ever pay attention to what your clothes say to you? A recent study at a university in the U.S. examined a concept called “enclothed cognition.” Researchers define it in their report as “the systematic influence that clothes have on the wearer’s psychological processes,” meaning what your clothes are saying to you, not about you. And how they make you feel. Enclothed cognition gives scientific proof to the idea that you should dress not how you feel, but how you want to feel. Which clothes make you feel powerful? Sexy? In control? Wealthy? The clothes you choose are sending a message to those around you, but also to you, yourself. That is the secret behind the “makeovers,” even actors experience the same mechanism when they put on a costume that facilitates a certain expression of character. The Psychology Of Clothes So let’s take a look at how clothes reveal our personalities and what messages they’re sending and how you can use your wardrobe to change how others perceive you and even how you think about yourself. The collector: If you keep every piece of clothing you’ve ever owned you might be clinging to the past through the sentimental value of your pieces. To challenge yourself you should consider getting rid of 2-3 items you own, including anything too big/small, ripped/torn or outdated. The anonymous: If you wear only neutral colors, largely devoid of accessories you might be stuck in a psychological rut, too comfortable to shake it up, or too afraid to draw attention to yourself. To challenge yourself you should consider deviating from your routine in small ways like taking a different route to work or adding few new accessories to your outfit to jog your brain into feeling excited. The baggy: If you dress in clothing too large for your body you might see your body differently than others see it or as a reflection of the way it once was. To challenge yourself you should consider bringing an honest friend shopping to find out what looks great on you, ignoring sizes and getting used to wearing clothes that really fit. The attention seeking: If you have been told you are dressed inappropriately or too sexily you might be looking for the wrong kind of attention. To challenge yourself you should consider the image you want to project in given situations and choose outfit based on cues from those around you. The age confused: If you dress too young or too old for your age you might be trying to express the age you feel inside but are getting caught between your actual and internal age. To challenge yourself you should consider gearing your outfit toward your goals in life rather than a specific age. The business look: If you are always in work clothes you might value yourself primarily through your work and work-related accomplishments. To challenge yourself you should consider recognizing your talents outside of work i.e. a good cook, a loving spouse or parent, a caring friend. The brand obsessed: If you are covered in designer logos you might think you need to broadcast wealth in order to gain recognition and status. To challenge yourself you should consider wearing blank canvas pieces and only accenting with logos to emphasize that people value you more than your labels. The mom look: If you live in your “mom outfit” of jeans and a hoodie you might put the needs of your family before your own. To challenge yourself take more “me time.” Remember when mom isn’t happy, nobody is. The Challenge Of Changing I am sure most of us recognize ourselves in one or more of the above categories and getting reminded can be both embarrassing and painful. Transformation can be quite frightening and leaving our comfort zone takes a lot of motivation and courage. There might as well be some psychological issues that need to be dealt with first to give room to new perceptions. Look at it as a way of detoxing the whole concept of who you are and embrace the opportunity that lies in the different ways of expressing yourself and how you feel or what you want to achieve. Be open to the possibility of seeking professional help from e.g. an actor, a stylist, a spiritual teacher, a coach, a therapist or personal trainer. Anybody with a more holistic mindset that acknowledge the correlation between the inner and the outer self will bring you inspiration as long as you don’t forget that the source of transformation lies within yourself. Look for inspiration. One way to foster and develop a new style is to find out what looks good on other people. Leaf through magazines or watch TV for trends that catch your eye. Alternatively, visit crowded places such as malls or downtown sidewalks. Observe what people are wearing, and take notes of fashions you like. Find a good tailor or seamstress (optional). Clothing sizes are designed to fit the masses, and therefore might not fit you as well as you’d like. If you find a piece you love but the fit is lacking, take it to a tailor or seamstress for alterations. Most everyday-wear fabrics can be altered fairly cheaply, and the price will be worth the confidence boost that comes with wearing clothes that fit well. Change your hairstyle. Your hairstyle is an important part of your personality, and it often adds the most drastic changes to your looks. Try styling your hair a different way in the morning, or see if a new shampoo or product helps it look better. If you’re going to try a radically different cut or color, consult a stylist as to what might look best on you. Find images in magazines or online for inspiration, and take them to your appointment. Don’t forget shoes. A new pair of shoes can add a different flair to your look. Look for something you can wear often and that fits with the general look you’re trying to achieve.

Go shopping. When you’ve decided what you like, start shopping. You don’t have to replenish your wardrobe all in one go. To ease of some of the strain on your budget go shopping off-season. For instance, buy shorts and swimsuits in the fall, or sweaters in the spring. Evaluate your closet. Go through what you already own and decide what you like. Pieces that you keep should have a fit that’s flattering to your body, as well as an overall look that blends with your aesthetic. Throw out or donate anything that fits poorly or that you’re hesitant to wear out of the house. A good rule of thumb is that if you haven’t worn it for 6 months (barring seasonal items such as sweaters for winter or swimsuits for summer), get rid of it.

Ask for help. If you’re having a hard time finding inspiration, or you worry about having bad taste, ask for an outside opinion. Contact a close friend or family member whose sense of style you admire, and ask him or her what might look good on you. Visit a department store or boutique that carries fashions you like and ask a salesperson to help you assemble a stylish look that’s right for you. Don’t be afraid to ask for help. Remember that most people who work at clothing stores love to help people find the right look and will be eager to help you. The Makeover. Push aside personal issues, so how do we put action behind knowledge without participating in a TV program? Here are a few ideas.

Get some makeup tips. If you’re a girl, try new makeup. Visit the makeup section of a department store for a complimentary makeover. Tell the makeup artist what you’re interested in, but be willing to accept his/her input; you could be hiding your best features. Be prepared to purchase at least one thing as a thank-you. Accessorize. Upgrade your regular look by adding a few interesting accessories. This can be as simple as buying clean laces for your shoes, or wearing a muted belt. From the readers Human Nature By: Rana Alaa

In a land far far away, in the rainy state of Oregon, USA to be exact, a group of bananas bring us their own perspective on the peculiar ways of creatures known as human beings. Bananas experience humans as they behave within the cafeteria of their office place and maybe even in every other aspect of their lives. A batch of us came to the office on Tuesdays alongside the Bagels & Donuts. We would sit there among our round shiny counterparts as curled and laid back as a ripe yellow banana can be. We were scattered across the fruit baskets. A group of us on the oranges and some on the apples. We were considered the elite, the crème de la crème. We were always the first to be gobbled up. Fruit man would come in, with Bagel & Donut man, tosses us in our baskets and the early rising employees would casually goggle us behind their nerdy glasses and grab one to lay next to the doughy/sugary good for nothing bagel/donut. By 9:00 am we would be gone, as if we never made an appearance. Then summer came and so did a group of Arab speaking, not so nerdy, interns who seemed fascinated by the concept of free food, free drinks, free bagels…etc. One Tuesday morning, one of them was punctual enough to witness our glorious presence. There were only three of us left. “Oh, Bananas.” She eyed our rarity and grabbed two. The interns then disappeared or didn’t catch us on time. We believe they didn’t know our schedule. Fruit man then decided to bring us on Thursdays too. The interns finally noticed our pattern and texted each other, “Bananas in the cafe on Tuesday and Thursday Mornings.” They would be practically waiting for Fruit man. Our elite lot of yellow sweetness would be gone by 8:45 am. Each of them would take two. One for now. One for later. Some would leave a shiny young luscious banana in their cupboards for days till it wrinkles and wilts into black rot and meets the sad fate of a bin. And we would cry, Michael Jackson style, “Why, Oh, Why? Why two in the 1st place?” We just presumed it is “Human Nature.” Fruit man noticed the rise in demand and decided to meet it with a generous increase in supply. A big batch of us would be delivered every day. We lost our uniqueness. We came in tens of bananas. Oh, lord! We are like boring apples now. The interns had a field day, rotting two bananas a week until they finally noticed the shabby fact that we are now commoners. They would look at us as if we were the old vending machine in the corner that sat there ever since forever. Fruit man would come in at the end of the day and pick up the excess to chill in a fridge to come in again the next morning. We now grew black dots and cried, “Why, oh, Why?” The apples would remind us that it is “Human Nature.” Then came this Arab month called Ramadan where the interns looks to us changed, it was the look of longing as if we were the only oasis in their Arabian desert. Their faces were pale as the inside of a banana yet, they wouldn’t touch us. The month passed and we went back to rotting in cupboards.
