Seit Anfang 2014 bündeln die Marktgemeinde Garmisch-Partenkirchen, das Zugspitzdorf Grainau und die Orte der Tiroler Zugspitz Arena ihre Kräfte unter der Dachmarke „Zugspitz Arena Bayern-Tirol“. Die Kooperation wird von der EU als InterregProjekt gefördert und ist die erste ihrer Art zwischen Deutschland und Österreich.

Im Juni 2014 luden Best of the Alps und GarmischPartenkirchen Tourismus wieder zum AuftaktTurnier in den Golfclub Garmisch-Partenkirchen. Zu sehen: hohes spielerisches Niveau, purzelnde Stammvorgaben und ein dominierender Dominik Grass!

Despite the declining birth rate our number of inhabitants remains stable which is due to the continuous stream of people moving here. Garmisch-Partenkirchen is a year-round destination. We’ve been working in tourism since 1840. The health part was added in the past decades; at first there was the therapeutic focus – we have an excellent hospital that even attracts international clientele. As of late the offer for preventive treatments has increased which is why we’ve established our “Gesundheits-Eck” – our Health Corner. S.M. ⁄ Locals

SPORT & Freizeit dt. ∕ In Garmisch muss man nicht unbedingt Sport machen, um Sport zu erleben: Das ganze Jahr über finden Highlights statt – vom Neujahrsskispringen und dem FIS-Weltcup über das Hornschlitten-Rennen bis hin zum Pond Hockey Cup. Wer dann doch selbst Sport machen möchte, ist in der wunderbaren Bergwelt bestens aufgehoben. Egal, ob auf Skiern, Snowboard oder in Wanderschuhen. engl. ⁄ In Garmisch you don’t necessarily have to practice sports in order to experience sports: all year round highlights take place here – from the New Year’s ski jumping event and the FIS World Cup all the way to the horn sled race and the Pond Hockey Cup. Insidertipps für die Ideallinie dt. ∕ Skifahren im Gebiet Garmisch-Classic und auf der Zugspitze, das bedeutet eine nahezu unendliche Auswahl an Möglichkeiten, je nach Wetter, Schneelage und Saison. Vom Powdern auf der Zugspitze über die sportliche Kandahar, die jeder Skifahrer einmal erlebt haben muss, bis hin zu Skitouren am Hausberg, wird hier immer was geboten! Mein Tipp für die Zugspitze: Wenn es frischen Powder hat, auf jeden Fall schon um 8.00 Uhr die Eibsee-Seilbahn nehmen, oben noch einen Kaffee trinken und warten, bis die Jungs die Hänge freigeben. Dann haben Sie die komplette Auswahl unter dem Sonnenkar, in der Wächtenabfahrt und in KleinKanada! Auch im Garmisch-Classic starten Sie am besten früh mit der Alpspitzbahn auf den Osterfelder Kopf. Von dort aus gibt es einige schöne Varianten, die man bei entsprechender Ausrüstung und Vorbereitung wunderbar fahren kann. Hier startet mit der „Skisafari“ auch die ideale Skirunde im Garmisch-Classic: Abfahrt zum Bernadein, rüber ans Kreuzeck und zwischen Kandahar und Olympia wählen, zum Abschluss rüber zum Hausberg und die Dreh runter. Nur ja den schönsten Aussichtspunkt im Skigebiet, den AlpspiX, nicht vergessen! Nach dem Powdern schmeckt mir immer eine Pizza in meiner Lieblingshütte Drehmöser 9. Und noch was: Immer den Parkplatz Kreuzeck nützen und zum Sundowner einen Espresso in der Kandahar 2 schlürfen!

Auch Nicht-Skifahrer erreichen mit den Bahnen das komplette Angebot von Winterwandern über Rodeln bis hin zu tollen Aussichten. Auf der Zugspitze gibt’s in der Wintersaison 2014/15 sogar drei Rodelbahnen! Ein weiterer Geheimtipp ist sowohl im Winter (Weihnachts- und Faschingsferien) als auch im Sommer der Panoramaberg Wank. Er bietet für jedes Wetter und jeden Geschmack etwas. Unbedingt die Ankündigungen online und auf Facebook beobachten! Zum Ausklang eines schönen Skitages lasse ich es mir gerne gut gehen. Zum Glück steht Garmisch-Partenkirchen ja nicht für Après-Ski, sondern für sportlichen alpinen Lifestyle. Deshalb gibt’s hier mittlerweile sehr lässige Cafés und Restaurants. Auch kulinarisch lässt der Ort also keine Wünsche mehr offen!

Insider tips for the racing line engl. ∕ Skiing in the area of Garmich-Classic and on Zugspitze means you have a nearly unlimited choice of possibilities, depending on weather, snow levels and season. Starting with powder skiing on Zugspitze, continuing with the challenging Kandahar every skier needs to experience at least once and going all the way to ski tours on Hausberg – there’s always something going on here! My tip for Zugspitze: when there’s fresh powder, definitely take the Eibsee-cable car at 8 am, have coffee up there and wait until the guys have cleared the slopes. Then you have free choice between Sonnenkar, on Wächtenabfahrt and KleinKanada! In Garmisch-Classic you’d also do well to start early and take Alpspitzbahn up to Osterfelder Kopf. From there you’ll find numerous beautiful slopes that – if you have the right gear and preparation – are quite wonderful. And it’s here where the “Skisafari” starts, the ideal skiing tour through Garmisch-Classic: the slope down to Bernadein, over to Kreuzeck, then choose between Kandahar and Olympia and finally go across Hausberg and down the Dreh. And be sure you don’t forget AlpspiX, the area’s most beautiful viewpoint! After a powder session I enjoy a pizza in my favourite ski hut, Drehmöser 9. Oh and always use the Kreuzeck car park and have an espresso for a sundowner at Kandahar 2!

Non skiers can, of course, also reach the complete offer with the cableways, starting with winter hiking and tobogganing all the way to incredible views. In the winter season of 2014/2015 there’ll even be three tobogganing tracks on Zuspitze! Another true insider’s tip is the panorama mountain “Wank” – in winter (Christmas and end-of-term holidays in mid-February) and in summer. There’s something to do in every weather and for every taste. Definitely keep track of the announcements online and on Facebook! At the end of a beautiful skiing day I like to indulge in life. Luckily Garmisch-Partenkirchen is not only known for après ski but also for an athletic and alpine lifestyle. Which is why we have casual cafés and restaurants now. And the culinary offer here leaves nothing to be desired either!

Cinema under the stars

“Kino am Wank” promises great cinema in the open air, nature plays a secondary role, for once. No previous knowledge or gear required, professional safety trainers are there to support you and kids aged 5 and older are already allowed to participate. Starting in spring 2015 the most daring visitors can experience another attraction in Garmisch-Partenkirchen: the flying fox off of the Olympia jump promises breathtaking glimpses of what only the elite of ski jumpers gets to see normally. dt. ∕ Freeriden boomt – auch auf der Zugspitze, wo die Bayerische Zugspitzbahn eine wertvolle Infrastruktur für Tiefschneefahrer bereitstellt. Einer, der die anspruchsvollen Abfahrten von Deutschlands höchstem Gipfel bestens kennt, ist Max Pohl vom Empire Freeski-Team. Der Profi über Nervenkitzel und Freiheitsgefühle, Kreativität und Respekt am Berg.

Wer kennt sie nicht, die atemberaubenden Freeride-Filme aus Kanada, Japan und Südamerika? Dass man aber auch im Alpenraum und speziell in der Umgebung von Garmisch-Partenkirchen exzellent freeriden kann, wird jeden Winter neu bewiesen – etwa durch die monatlichen Kurzfilme des Empire Freeski-Teams rund um Max Pohl. Im August 2012 von vier Jungs aus Garmisch und Rosenheim gegründet, steht das Team für gemeinschaftliches Tiefschneefahren ohne Wettkampfgedanken, dafür mit begleitender Medienproduktion. „Wir wollten unsere Erfahrungen und den Spaß, den wir am Berg spüren, in einem Blog dokumentieren. Durch unsere Videos zeigen wir auch, dass man für schöne Lines nicht um die halbe Welt fliegen muss. Wenn sich ein paar Leute unsere Filme auf Vimeo anschauen und dann zum Beispiel sagen: Hey, Wank schaut auch mal gut aus!, haben wir unser Ziel erreicht“, erklärt Max Pohl stellvertretend für die aktuellen Teammitglieder Martin Knoche, Michael Wagner, Florian Häusler, Paul Pontiller und Sebastian Reindl. Trotz relativ geringer finanzieller und zeitlicher Mittel gelingen so immer wieder kleine Meisterstücke, die das „Mindset“ der Truppe auf authentische Art visuell umsetzen.

Mit Sicherheit ein Kick

Immer wieder zieht es die Rider auch auf die Zugspitze, eines der wenigen deutschen Top-Reviere, das mit Schneesicherheit und hochalpinen Lines lockt. „Wenn man kreativ ist und zum Beispiel sein Kletterzeug und Steigeisen mitnimmt oder kurze Abseilstellen nicht scheut, kann man hier oben fast alles machen!“, schwärmt Pohl. „Aber nicht nur für fortgeschrittene Freerider, sondern auch für Einsteiger hat die Bayerische Zugspitzbahn in den letzten Saisonen viel investiert, um das Gebiet attraktiv zu machen und zugleich für alpine Gefahren zu sensibilisieren.“ So finden etwa kostenlose Freeride Tage statt, bei denen man sein Know-How wieder auf Vordermann bringen kann, sowie spezielle

Freeride-Checkpoints, die einen Überblick zu Ausrüstung, Hangneigung und Lawinenkunde sowie aktuelle Lawinenlageberichte liefern. Für erfahrene Rider wie Max Pohl gehören penible Tourenvorbereitung und komplette Sicherheitsausrüstung zum Erlebnis dazu, aber natürlich auch ein gewisser Nervenkitzel: „Jede Line gibt einen neuen Kick und ein undefinierbares Freiheitsgefühl. Das Wichtigste beim Freeriden ist aber, den Respekt vor den Bergen nicht zu verlieren und sich selbst und das Material nicht zu überschätzen.“ Perfekte Unterstützung – auch beim Material – erhält das Empire Freeski-Team übrigens von der Bergund Skischule Vivalpin („Ein super Partner von Beginn an!“) sowie durch Kooperationsverträge u.a. mit der Zugspitze, Völkl, Bergans, Scott, Ortovox und Garmin. Max Pohl of the Empire Freeski-Team knows the challenging slopes of Germany’s highest peak like the back of his hand: the professional freerider about the thrill, freedom, creativity, and respect for the mountain.

Everybody knows them – those freeride movies from Canada, Japan and South America that take your breath away and leave you longing for deep powder snow. The entire Alpine region and particularly the area around Garmisch-Partenkirchen form a freeriding paradise of just the same kind. Every month in winter, Max Pohl and the Empire Freeski-Team produce short films to demonstrate the ultimate Garmisch-Partenkirchen freeriding experience. Founded in August 2012 by four guys from

Garmisch and Rosenheim, the team loves freeriding combined with media production instead of competition. “We wanted to blog about our experiences and the fun we have on the mountain. Our films also show that you don’t have to fly around the globe to find nice freeride lines. If only a few people watched our films on Vimeo and got excited about all the opportunities Wank has to offer, we’d have reached our goal already”, Max Pohl explains on behalf of current team members Moritz Kreuzpointner, Martin Knoche, Michael Wagner, Florian Häusler, Paul Pontiller, Kilian Pach and Sebastian Reindl. Despite their general lack of time and money, the Empire Freeski-Team is always able to capture their specific “mindset” on film to create their small masterpieces.

The freeriders continuously return to Zugspitze, one of only a few top freeriding areas with guaranteed snow and high alpine lines in Germany. “If you are creative and bring, for example, your climbing gear and a crampon or are not afraid of rappelling, there’s almost nothing you can’t do up there!” Pohl adds enthusiastically. “Over the course of the last few seasons, the “Bayerische Zugspitzbahn” mountain railway has spared neither trouble nor expense both for advanced freeriders and beginners to make the ski area more attractive while raising awareness for dangers in alpine terrain.” The freeride days that are free of charge help brush up your know-how and special freeride checkpoints offer maps with gradients, inform about freeriding equipment, and keep you up to date on the latest avalanche reports. Experienced freeriders, such as Max Pohl, know that you need to meticulously plan your freeride tour and make sure you have your emergency gear always at hand. The last piece of the freeriding puzzle is the thrill itself because, “Each line has its very own thrill factor and makes you feel free and alive in a way that’s difficult to explain. The most important thing, however, is not to lose your respect for the mountain and not to overestimate yourself or your equipment.” And by the way, the Empire Freeski-Team receives lots of support – also in terms of gear – from Mountain and Ski School Vivalpin (“A great partner from the start!”) and enjoys cooperation agreements with the Zugspitze, Völkl, Bergans, Scott, Ortovox and Garmin amongst others. Damit entlockt die Aussichtsplattform AlpspiX selbst erfahrenen Bergfexen und Gipfelstürmen andächtige Ahs und Ohs – spätestens am verglasten Ende der rund 25 Meter langen Stege, von wo aus sich uneingeschränkte Weit- und Tiefblicke auf die Zugspitze, Waxensteine, die riesige AlpspitzNordwand und hinunter ins wilde Höllental ergeben. dt. ∕ Wer zum Wintersport auf die Zugspitze fährt, muss nicht automatisch die Bretter anschnallen – inmitten des höchsten Skigebiets Deutschlands findet er auch wunderbare Rodelmöglichkeiten. Neben der bewährten Rodelbahn entlang der Liftanlage am Schneefernerkopf und der Rodelstrecke ins Weiße Tal bietet auch die neue Rodelbahn Wetterwandeck Kufenspaß vom Feinsten. Parallel zur Skiabfahrt Nr. 4 gleitet man hier flotte 300 Höhenmeter hinunter, bevor die Wetterwandeckbahn Rodler samt Schlitten wieder nach oben bringt. Die neue Rodelstrecke Wetterwandeck ist nach einer Abfahrt über die Rodelbahn Sonnenkar und der Weiterfahrt mit der Wetterwandeckbahn zu erreichen. Dank der beiden Sesselbahnen kommen jetzt auch Kufenfans auf 2.600 Meter in den Genuss des gesamten Bergpanoramas.

engl. ∕ All those travelling to Zugspitze for winter sports do not necessarily have to strap the boards to their feet – right in the middle of Germany’s largest skiing area there are wonderful possibilities for tobogganing. Apart from a popular tobogganing track next to the lift on Schneefernerkopf and a tobogganing track down to Weißes Tal, the new tobogganing track Wetterwandeck also offers great fun on two runners. Parallel to ski run no. 4 one slides down a speedy 300 altitude metres here, before Wetterwandeckbahn takes riders and sleds back up. The new tobogganing track can be reached after a run down the Sonnenkar track and then continuing further down towards Wetterwandeckbahn. Thanks to the two chair lifts fans of tobogganing fun now get to enjoy the mountain panorama at 2,600 altitude metres.

Satt und trocken machen die Kleinen sogar beim Einkaufsbummel mit und bekommen in „Bimo’s Kinderladen“ gleich ein neues Outfit verpasst. Renommierte Marken, Trachtenmode, Second-Hand-Schnäppchen – hier macht Stöbern richtig Spaß! Danach sind die Kids bereit für ein Fotoshooting mit Kinderfotografin Sabrina Beerbaum. It all starts with one of the many comfy, family-friendly hotels of the region, where parents with babies are often offered special services. Pram-friendly walking and hiking paths, lots of playgrounds and possibilities for trips (see article “Baby on tour”) lure you out of doors into the fresh air. A bicycle seat is also an ideal place for a toddler to enjoy the beauties of the Werdenfelser region. The DM-store in Garmisch’s centre is a welcome opportunity for a nappy change on the road. Fed and dry the little ones will even participate in a shopping tour where they’ll get a new outfit at “Bimo’s Kinderladen” right away. Fashionable brands, traditional costume, second-hand bargains – taking a look around here is good fun! Afterwards the kids are ready for a photo-shoot with child photographer Sabrina Beerbaum. She’s amazing at putting newborns as well as older babies, toddlers and the entire family in the limelight. And, as a special treat, a trip to the pool is up next. Older kids enjoy the refreshing natural open-air pool “Kainzenbad” while the warm water of Alpspitz-Wellenbad is ideal for smaller babies aged two months or older. Splashing around in the toddler-pool here is a true highlight – also in wintertime – right after the first experiences in the snowy winter wonderland!

Wer kürzlich Nachwuchs bekommen hat, braucht Urlaub dringender denn je. Es muss ja nicht die hochalpine Bergtour sein, aber ein bisschen Sonne, Wiesenduft und Alpenluft lässt Eltern & Kids entspannt durchatmen. Spazieren, wandern, Ausflüge machen, spielen – zum Glück kommt rund um GarmischPartenkirchen die ganze Familie auf ihre Kosten. Während der jüngste Spross bequem im Kinderwagen liegt (für Geländegängigkeit am besten mit Federung, größeren Reifen und Handbremse ausgestattet), entdecken die älteren Geschwister mit Zwergenschritten die Welt. So wird – mit genügend Proviant und Geduld im Gepäck – jeder Weg ein schönes Ziel! Spazier- und Wanderwege: Darf ich mal schieben, Liebling?

• Der Michael-Ende-Kurpark ist zu jeder Jahreszeit und mit jedem Kinderwagentyp ein lohnenswertes Ziel. • Der Spazierweg Skistadion-Hausbergbahn Talstation oder noch weiter bis zur Kreuzeckbahn Talstation lässt sich auch mit Kinderwagen gut meistern. • Ebenso der landschaftlich reizvolle Hammersbacher Fußweg, der kaum Steigungen aufweist, und der Kramerplateauweg, der im Winter mit einer Wildfütterung für große Kinderaugen sorgt (ab ca. 2 Jahren geeignet). • Empfehlenswert ist eine Ausfahrt rund um den Riessersee (erst oben starten!), Fische beobachten inklusive. • Immer einen Besuch wert ist der Berggasthof Gschwandnerbauer zwischen GaPa und Mittenwald. Kinder ab ca. 2 Jahren genießen das Herumtoben am Spielplatz, viele leichte Wanderungen für Kinder wägen (mit normalen und größeren Reifen) starten und enden hier.

• Beliebt ist auch die Kochelberg-Alm, die von der Talstation der Hausbergbahn nach ca. 15 min Gehzeit erreicht wird.

Ab ca. 2 Jahren laufen Kinder selbst hoch, der Weg ist auch für Kinderwägen geeignet. Unbedingt mitnehmen: altes Brot, um die Enten am Weiher zu füttern, sowie trockene Ersatzkleidung und Schuhe. Kein Kind widersteht Wasserspielen!

Familie & Kinder

• Mit der Wankbahn auf den Wank fahren, den Panoramaweg mit Naturkino bestaunen, den Spielplatz beim Wankhaus erkunden: Kinder ab ca. 1,5 Jahren können hier selber laufen, Babys kommen in Kinderwägen mit normalen Reifen mit. • Die Gondelfahrt mit der Eckbauerbahn und die anschließende Wanderung über Graseck zur Partnachklamm ist für Kinder ab ca. 1 Jahr in der Kraxe geeignet. • Ab Kindergartenalter empfohlen: Mit der Osterfelderbahn hochfahren und über den Gipfelerlebnisweg runter zum Kreuzeck laufen. Spielplätze: Unterhaltung ist ein Kinderspiel!

• In den St.-Anton-Anlagen in Partenkirchen befindet sich ein angenehm schattiger Spielplatz für Kinder ab ca. 1,5 Jahren. Zum Spazieren bietet sich der panorama- reiche und kinderwagentaugliche Philosophenweg an. • Sehr schön gestaltet ist der Spielplatz in der Reintalstraße nahe des Rathauses. Toiletten und schattige Plätzchen vorhanden.

• Der Freizeitpark Loisachbad bietet besonders für größere Kids naturnahen Raum zum Herumtoben und Ballspielen. • Auch der Spielplatz bei der Sommerrodelbahn am Skistadion eignet sich eher für größere Kinder, die hier begeistert kraxeln, rutschen und Bungee-Trampolin springen.

Ausflüge in die Umgebung: Maximaler SpaSS für Minis

• Bei der Wanderung rund um den Eibsee garantiert das Wasser Motivation und Abwechslung. • Der Landgasthof Sonnenhof in Klais bietet einen großen Spielplatz mit Hüpfburg. • Auch die Berggaststätte Maxhütte hoch über Wallgau hat einen großen Spielplatz. Kinder ab ca. 2 Jahren bewältigen den 20-minütigen Fußmarsch selbst, Kinderwägen mit größeren Reifen kutschieren problemlos die Kleinsten. • Das Trampolin ist eines der Spielplatz-Highlights auf der Hochthörlehütte bei Ehrwald. • Geheimtipp, auch für kleine Kinder ab ca. 1 Jahr: der regional typische Abenteuerspielplatz Krün!

It doesn’t have to be an alpine mountain tour – a little bit of sunshine, the smell of hay and alpine air immediately have a soothing effect on parents & kids. Walk, hike, take day trips or play – luckily the entire family gets their money’s worth in GarmischPartenkirchen. While the youngest offspring comfortably rests in a pram (preferably an all-terrain model with suspension, large wheels and a hand brake) the older siblings discover the world step by small step. Hiking and walking paths: Can I push for a second, dear?

• Michael-Ende-Kurpark is a rewarding destination at any time of the year and with any kind of pram.

• The walking path Skistadion-Hausbergbahn Talstation or even further on to Kreuzeckbahn Talstation is ideal for prams, too. • The same goes for the Hammersbacher Fußweg, which is situated in a beautiful landscape and hardly climbs, and the Kramerplateauweg where the deer feeding in winter is sure to make the children’s eyes shine (suitable for children aged 2 years or older). • What’s also recommendable is a tour around the lake “Riessersee” (start at the top!), fish-watching included. • The inn “Berggasthof Gschwandnerbauer” between GaPa and Mittenwald is always worth a visit as well. Kids aged 2 years or older enjoy the playground; many easy walks for prams (with normal and bigger wheels) start and end here. • Kochelberg-Alm is also very popular, it’s only a 15-minute walk from the Hausbergbahn valley station. Kids aged 2 years or older like to run up themselves, the path is suitable for prams, too, though. Definitely bring: old bread to feed the ducks at the pond, dry clothing and shoes. No kid can resist playing in the water! • Take the Wankbahn up on Wank, be amazed by the nature cinema on Panoramaweg (“Panoramic Path”) and discover the playground by Wankhaus: kids aged 1.5 years and older can run around here, babies can be brought along in a pram with normal wheels. • A cable-car ride in Eckbauerbahn and the subsequent hike across Graseck to Partnachklamm is suitable for children aged 1 year or older if you carry them on your back. • Recommended for kids aged 3 or older: Go up the mountain with Osterfelderbahn and walk down to Kreuzeck along the “Gipfelerlebnisweg” (“Summit adventure path”).

Playgrounds: Entertainment is guaranteed!

• The St.-Anton area in Partenkirchen has a nice and shady playground for children aged 1.5 years or older. The panoramic and pram-friendly Philosophenweg (“Philosopers’ Path”) is ideal for a walk. • The playground in Reintalstraße near city hall is very attractive. Toilets and shady spots are available. • The leisure park Loisachbad is an ideal place for older kids – here they can frolic around and play in a natural environment. • The playground by the summer toboggan run by the ski stadium is perfect for older children who love to climb, slide or jump on a bungee-trampoline here. Trips to the surroundings: Lots of fun for little kids

• With its beautiful water a hike around Eibsee is entertaining and motivating. • The inn Landgasthof Sonnenhof in Klais has a large playground and a bouncy castle. • The inn Berggaststätte Maxhütte high up above Wallgau also has a large playground. Kids aged 2 years or older can take the 20-minute walk, prams with larger wheels can easily transport the littlest ones up here. • A trampoline is one of the playground-highlights by Hochthörlehütte near Ehrwald. • Insider’s tip, even suitable for kids aged 1 year or older: the typical regional adventure playground Krün!

Seit 1955 ist die Spielbank, ursprünglich errichtet im Festsaal des Grandhotel Alpenhof, nicht mehr aus dem Zentrum von Garmisch-Partenkirchen wegzudenken. Natürlich kann man hier auf vielerlei Arten sein Glück im Spiel suchen, aber die Besucher müssen nicht zwangsweise spielen. Sie können auch einfach zusehen und die Barbereiche so wie das kulinarische Angebot des Restaurants Alpenhof genießen. Mit Events wie Casino Club Nights, Ladies Night, Cabarett-Abenden sowie speziellen Themenabenden wird den Gästen an 360 Tagen im Jahr einiges geboten. Seit 1956 beehrten bereits ca. 5,7 Mio. dt. ∕ Die Marke Maloja steht für funktionelle Outdoor-Bekleidung mit außergewöhnlichen Designs. Darüber hinaus vertritt das 2004 gegründete Unternehmen mit Stammsitz in Rimsting am Chiemsee eine Philosophie, die dem schnelllebigen Zeitgeist wohltuend entsagt. Eine eigenwillige Firmengeschichte. Alles begann im Jahr 2001, als Peter Räuber mit Freunden im Schweizer Örtchen Maloja einen atemberaubend tollen Powder-Tag erlebte. Seitdem stand „Maloja“ bei ihm als Synonym für alles Schöne und Gute. Als Räuber gemeinsam mit Klaus Haas und Dr. Andreas Stern im Jahr 2004 sein eigenes Label zunächst für Bikebekleidung gründete, war es also nur logisch, dieses positive Lebensgefühl im Namen Maloja zu verewigen. Der ursprüngliche Wunsch, nur eine Sommerkollektion zu produzieren und im Winter völlige Freiheit beim Freeriden zu genießen, wurde allerdings rasch von der Realität eingeholt. Händler und Kunden der ersten Stunde zeigten sich nämlich umgehend begeistert von der erfrischend anderen Sportswear aus Bayern. Bald wuchs das Sortiment um Lauf-, Kletter- und Wintersportmode sowie Lifestyle- und Streetwear, im Winter 2013/14 wurde erstmals auch eine Kinderkollektion produziert.

Heute werden die jährlich unter ein spezielles Motto gestellten Kollektionen von ausgewählten Vertriebspartnern in 25 Ländern weltweit verkauft, wobei die alpinen Hochburgen Deutschland, Österreich und die Schweiz weiterhin den Hauptmarkt bilden. Das innovative Label ist aus der Outdoor-Szene nicht mehr wegzudenken, Wachstum um jeden Preis ist bei Maloja jedoch nicht die Devise. Viel lieber kümmert sich Peter Räuber mit ca. 30 Mitarbeitern am Stammsitz in Rimsting um Qualität und Nachhaltigkeit der Produkte. So ist die Marke etwa überzeugter Bluesign-Partner, d. h. mehr als 70 Prozent der verwendeten Materialien entsprechen bereits dem weltweit strengsten Umweltstandard für textile Produkte. Auch soziales Engagement wird bei Maloja großgeschrieben und vom gesamten Team mitgetragen. Der gute Zusammenhalt wurde Mitte Juli 2014 anlässlich des 10-jährigen Firmenjubiläums einmal mehr unter Beweis gestellt, als das gesamte Team knapp 400 Kilometer von Maloja im Engadin zum Firmensitz in Rimsting radelte. And the company’s story is just as unconventional. It all began in 2001 when Peter Räuber spent an unforgettable powder-snow day with his friends at the Swiss mountain village of Maloja. When the label celebrated its 10th anniversary in mid-July 2014, the entire staff demonstrated Maloja’s extraordinary team spirit and took a bike trip of 400 km from Maloja in the Swiss Engadin region back to their Rimsting headquarters. Expert Hamm is always happy to share her personal recommendation for a healthy short-trip to Garmisch-Partenkirchen: “I would start the first day with relaxation in the park. Here you can try out Qigong, Taijiquan or Luna-Yoga for free. After that I’d treat myself to a breakfast with natural ingredients, on beautiful “Mohrenplatz”, for example!” In order to carefully adapt to the altitude, Hamm then recommends a slow hike around lake Riessersee and a trip to the pool. Depending on the weekday one could later listen to a speech at the Health corner. “The second day, when you’ve become accustomed to the place you could participate in a climate-therapy hike with us – a longer tour on Tuesday or an easier mountain-hut hike on Thursday. The Kneipp-pool and barefoot-path in Kurpark would then round off the day perfectly.” And even for the third day Hamm has a highlight for body and soul she’d recommend: walk up the Wank, calmly hike along the summit plateau and have a Kaiserschmarren to top it all off. “Because pleasure sure is part of being healthy!”

dt. ∕ Beim KULTurSOMMER wird ganz GarmischPartenkirchen jedes Jahr im August und September zur Bühne. Unter dem Motto „heiter & himmlisch“ bietet 2014 die sommerliche Veranstaltungsreihe zum zwölften Mal Theater, Musik, Kleinkunst und Ausstellungen auf hohem Niveau und mit hohem Unterhaltungswert.

Den Auftakt setzt immer die beliebte Michael-EndeWoche, in der sich 2014 die italienische Wahlheimat des Autors, Genzano di Roma, mit Kunst und Kulinarik in GaPa präsentiert. Endes poetisches und familientaugliches Werk „Ophelias Schattentheater“ hatte am 21.8. Premiere im Amphitheater des MichaelEnde-Kurparks. Dort zog eine weitere Neuinszenierung das Publikum in ihren Bann: Nestroys Volksstück „Lumpazivagabundus“ in bayerischer Fassung und mit grandioser Bühnenmusik. Ein außergewöhnlich atmosphärischer Spielort wurde auch für die Bühnenfassung von Marlen Haushofers Roman „Die Wand“ gefunden - als Freilicht-Inszenierung bei der Bergstation der Eckbauer-Bahn; sogar mit Bewirtung durch den Berggasthof am Eckbauer. Noch mehr Theater gab‘s im Partenkirchener Traditionsgasthof „Zum Schatten“ mit Felix Mitterers humorvollem Mysterienspiel „Krach im Hause Gott“.

Neu beim KULTurSOMMER 2014 ist das Bergfestival am Wank. In Kooperation mit der Bayerischen Zugspitzbahn und GaPa Tourismus ertönte Ende August ein Open-Air-Konzert am Wank-Gipfel (u. a. mit The Heimatdamisch, Donnerbalkan, Chris Columbus & Band und dem Mathias Kellner Trio) und Anfang September verwandelte sich der „Naturkino“-Panoramaberg in ein bewegendes Freiluftkino. Weitere himmlische Programmpunkte des KULTurSOMMERs: ein Sonderkonzert in der Werdenfels-Aula als Beitrag zum Richard-StraussJahr, die „Bayerischen Dienstage“, Kabarett-Veranstaltungen und Ausstellungen.

engl. ∕ During the annual KULTurSOMMER festival in August and September all of Garmisch-Partenkirchen becomes a stage. In 2014 the motto is ‘heiter & himmlisch’ (‘cheerful & heavenly’) and the summery series of events offers highly entertaining theatre, music, cabaret and exhibitions for the 12th time. It all starts with the popular Michael-Ende week, during which the author’s adopted hometown, Genzano di Roma, is going to present itself with arts and culinary delights to all of GaPa. The premiere of Ende’s poetic and family-friend piece ‘Ophelia’s Shadow Theater’ took place on August 21 at the amphitheatre in Michael-Ende Kurpark. Which is also where a new production inspired the audience: a Bavarian version of Nestroy’s popular piece ‘Lumpazivagabundus’ with excellent live music on stage. Another extraordinary venue was found for the stage adaptation of Marlen Haushofer’s novel ‘The Wall’. The open-air production takes place at the summit station of Eckbauer-Bahn in every weather, the mountain inn Eckbauer will even provide food and drink (premiere Aug 31st). Even more theatre could be seen at the traditional inn ‘Zum Schatten’ in Partenkirchen where Felix Mitterer’s humorous mystery play ‘Krach im Hause Gott’ was performed. Worth seeing and hearing

dt. ∕ Dank ihrer charakteristischen Gerichte werden die Süddeutschen oft als Kalorienkaiser der Nation gesehen. Klar, die bayerische Küche ist deftig. Aber sie bildet zu Recht eine hochgeschätzte Esskultur.

An normalen Tagen frühstückt auch der Bayer meist Semmeln oder Müsli mit Kaffee. Sonnund feiertags darf es aber gerne das berühmte Weißwurstfrühstück sein, nach alter Tradition unbedingt vor dem 12-Uhr-Läuten zu verzehren. Dazu gehören frische, im Wasser erhitzte Weißwürste, süßer Senf, Laugenbrezn und ein Weißbier. Zum Mittagessen gibt’s dann häufig eine Suppe als Vorspeise, beliebt sind etwa Grießnockerl-, Backerbserl-, Leberspätzle- oder Leberknödelsuppe. Auch die urbayerische Brezensuppe kommt heute noch gerne zum Bier oder einer Apfelschorle auf den Tisch. Als Hauptgericht gönnt sich der typische Bayer fleischliches Vergnügen: Schweinsbraten oder Schweinshaxn mit Kartoffelknödel und Blaukraut, Blut- und Leberwurst, gefüllte Kalbsbrust, Innereien, Entenbraten, saisonales Wildfleisch: Es gibt (fast) nichts Tierisches, was in der heimischen Küche nicht verwertet wird! Vegetarier halten sich da lieber an Schwammerl mit Knödel, Kässpätzle und Reiberdatschi (Kartoffelpuffer) sowie an süße Nachspeisen wie Germknödel, Krapfen oder Kaiserschmarrn. Nicht wegzudenken als Snack ist die Leberkassemmel, für die wohl jeder Bayer eine Bezugsquelle seines Vertrauens hegt. Und auch ein Obatzda (angemachter Camembert mit Zwiebeln, Schnittlauch und Kümmel) passt zur Brotzeit immer rein. Ausprobieren und überraschen lassen!

On normal days the Bavarians like to have bread rolls or cereal with coffee for breakfast. On Sundays and holidays though, the famous “Weißwurst-Breakfast” is very popular, traditionally it has to be taken before the clock strikes 12. Part of this breakfast are fresh veal sausages (i.e. the famous “Weißwürste”) heated in water, sweet mustard, pretzels and wheat beer. For lunch there often is soup as a starter, with small semolina dumplings (Grießnockerl), tiny, crunchy pieces of fried dough (Backerbserl), liver noodles or liver dumplings (Leberspätzle, Leberknödel). The typically Bavarian pretzel-soup is often served with a beer or watered apple juice. When it comes to main courses, typical Bavarians enjoy meaty delights: Roast pork (Schweinsbraten) or pork knuckle (Schweinshaxe) with potato dumplings and sauerkraut, black or liver sausage, stuffed breast of veal, innards, roast duck, seasonal game: There is (hardly) a part of the animal that is not used in the local cuisine! For vegetarians there are dishes such as mushrooms with dumplings, cheese-spätzle (a type of home-made noodle) or “Reiberdatschi” (potato fritters) and sweet desserts such as “Germknödel” (huge yeast dumplings filled with prune jam), “Krapfen” (fried yeast doughnuts filled with apricot jam) or “Kaiserschmarren” (imagine thick, torn up pancakes with raisins). Another very popular snack would be “Leberkäsesemmel” (a bread roll with fine meat loaf) where every Bavarian has his favourite source. And “Obatzda” (Camembert mixed with onions, chives and caraway seeds) is always popular during dinner. Try it all and be surprised!

dt. ∕ Tatjana Pokorny ist die Zukunft des Kleinen Theaters in Garmisch-Partenkirchen. 1949 von ihren Großeltern Fritz Rohrbeck und Ludmilla Rohrbeck-Holten gegründet und von ihren Eltern Rainer Pokorny und Regina Rohrbeck engagiert weitergeführt, ist es mit 65 Jahren längst eine Institution. Die erfolgreiche Schauspielerin, Synchronsprecherin und Regisseurin Tatjana Pokorny zieht heute als Juniordirektorin die Fäden und kann sich keine schönere Wirkungsstätte vorstellen.

L.L. ⁄ Frau Pokorny, Sie stammen aus einer leidenschaftlichen Theaterfamilie. Was reizt Sie daran, fiktive Figuren zu verkörpern? T.P. ⁄ Genau das! Ich lebe wahnsinnig gern. Der Tod war für mich schon als Kind ein ganz großes Thema. Ich hatte immer

Angst einzuschlafen, weil ich fürchtete, nicht mehr aufzuwachen. Das Theater ist für mich also eine Möglichkeit, viele verschiedene Leben führen zu können. In diesen zwei Stunden auf der Bühne kann ich das ausleben, was man sich sonst nicht unbedingt trauen würde, ohne Angst vor den Konsequenzen haben zu müssen. Besonders spannend sind natürlich jene Charaktere, die ganz anders sind als man selbst, böse, verrückte Figuren... L.L. ⁄ Wenn man von klein auf Bühnenluft kennt, hat man dann immer

noch Lampenfieber? T.P. ⁄ Um vieles weniger als andere, weil die Bühne mein Zuhause ist. In

manchen Rollen ist man allerdings nervöser als sonst, etwa wenn man ein Stück sehr lange nicht gespielt hat. Ich kenne aber viele hervorragende Kollegen, die unfassbares Lampenfieber haben, und das würde meine Lust an der Sache schon sehr mindern. Ein Kick ist auch bei mir natürlich da, aber eher aus Freude: Ich will raus, ich will spielen! L.L. ⁄ Wie kommt man eigentlich zum Synchronsprechen? T.P. ⁄ In der Schauspielschule gab es mal das Angebot, es auszuprobieren. Ich bin allerdings kolossal gescheitert und dachte mir: „Das mach’ ich nie wieder!“ Dann habe ich in Berlin Theater gespielt mit der jetzigen Stimme von James Bond, Dietmar Wunder. Er machte damals Synchronregie und ließ mich erstmal zuschauen und dann auch mitarbeiten. Zurück in München war dann mein Ehrgeiz geweckt und ich fand es eine spannende Herausforderung. Als ich nach 10 Jahren in München nach Garmisch gezogen bin, ging es plötzlich bergauf mit dem Synchron und heute habe ich richtig Spaß dran. Wenn man den Besten der Besten die Stimme leihen kann, lernt man auch viel für das eigene Schauspiel. L.L. ⁄ Werden Sie manchmal im Gespräch als diese oder jene Filmfigur

erkannt? T.P. ⁄ Am öftesten angesprochen werde ich auf „Stella“ in „How I met

your mother“ und auf Clémence Poésy von „Harry Potter“. Ansonsten spreche ich z. B. immer wieder mal Stacy Keibler, Denise Richards und Anastacia Griffiths. In München ist es aber generell sehr schwer, die feste Stimme von jemandem zu werden, weil die großen Produktionen immer nach Berlin gehen. Ich habe zum Beispiel Mélanie Laurent am Anfang gesprochen. In Berlin wäre ich wohl eine feste Stimme geworden, aber ich möchte nicht dort leben und meine Kinder dort

aufwachsen sehen, wenn es auch anders geht. Hier in GarmischPartenkirchen ist halt das Paradies! L.L. ⁄ Trifft man die Stars dann auch mal persönlich?

T.P. ⁄ In „Säulen der Erde“ habe ich Hayley Atwell gesprochen und bei der Filmpremiere in Berlin durfte ich sie kennenlernen. Ein tolles Erlebnis! Sie war von meiner Arbeit absolut angetan und wir haben ewig miteinander geplaudert. L.L. ⁄ Sie waren auf großen Bühnen im ganzen deutschsprachi-

gen Raum tätig. Warum spielen Sie trotzdem lieber am Kleinen Theater? T.P. ⁄ Erstens mal natürlich, weil es meine Großeltern gegründet haben. Meine Oma war meine absolute Seelenverwandte! Nach ihrem Tod brauchten meine Eltern Hilfe, um den Betrieb aufrecht zu halten. Also spielte ich die laufenden Verträge zu Ende und ging nach Garmisch zurück. Da ich gerne mit Menschen arbeite und viele Ideen habe, finde ich die Regiearbeit mittlerweile fast spannender als das Spielen. Ebenso macht es mir Spaß, mit jungen Talenten zu arbeiten. Indem ich in meinem Heimatort Theater mache, möchte ich dem Ort auch etwas Schönes geben. Ich weiß aber noch nicht, ob es so ganz klappt, denn es gibt immer noch einige Leute in Garmisch-Partenkirchen, die noch nie bei uns waren. Und wir sind seit 65 Jahren hier! Es muss ja nicht jeder Theater mögen, aber ich würde mir wünschen, dass jeder zumindest einmal reingeht und den Ort als „sein“ Theater versteht. Wir sind der einzige Skiort mit eigenem Theater! L.L. ⁄ Möchten Sie später mal Ihrer Mutter als Intendantin nach-

folgen? T.P. ⁄ Ich werde alles dafür tun und meine ganze Zeit und Kreati-

vität diesem Theater zur Verfügung stellen, wenn es gewünscht wird. Aber die Umstände müssen passen und wir müssen den Betrieb auch finanziell erhalten können. Das Wichtigste ist sowieso immer das Publikum.

L.L. ⁄ Was fasziniert Sie an Ihrem Geburtsort Garmisch-Partenkirchen? T.P. ⁄ Der Charakter der Leute! Sie haben einen eigenen Kopf, öffnen sich

schon für neue Sachen, lassen sich aber nicht alles aufdrücken. Das mag ich, auch wenn es manchmal unbequem ist. Die Menschen hier sind sehr herzlich, lustig und immer da, wenn man sie braucht. Man kann mit ihnen sehr gut reden und arbeiten, sie haben das Herz am rechten Fleck und bleiben authentisch. Generell finde ich die Lebensqualität hier sehr hoch: Die einmalige Landschaft, die gute Luft, die Nähe zu Österreich und Italien – das sind für mich lauter positive Einflüsse. L.L. ⁄ Und wo finden Sie am besten Ruhe oder Inspiration? T.P. ⁄ Die Neuneralm gleich bei mir in der Nähe mag ich sehr gerne. Da

gehst du nicht mal eine Viertelstunde hoch und tauchst in eine absolute Bergidylle ein. Das genieße ich sehr! Ich liebe auch die Spazierwege Richtung Eibsee über den Badersee. Der Eibsee hat für mich überhaupt etwas Internationales. L.L. ⁄ Was sollten sich Kunst- und Kulturliebhaber in GaPa keinesfalls

entgehen lassen? T.P. ⁄ Unser Theater! Weil es eine Rarität ist. Ich weiß gar nicht, ob

irgendwo in Europa noch ein Privattheater in dritter Generation geführt wird. Wir sind eine der letzten Bastionen. Ansonsten gibt es natürlich ganz tolle Museen und Natur ist per se ein Kunstwerk! engl. ∕ Tatjana Pokorny is the future of Garmisch-Partenkirchen’s “Kleines Theater” (“Little Theatre”). The theatre was founded by her grandparents Fritz Rohrbeck and Ludmilla Rohrbeck-Holten in 1949; later her parents, Rainer Pokorny and Regina Rohrbeck continued to run the theatre with a lot of commitment and at 65 years it’s long become a true institution. The successful actor, dubbing actor and director Tatjana Pokorny now runs things as junior manager – and she can’t imagine a more beautiful place to work.

L.L. ⁄ Miss Pokorny, you come from a family of avid theatre lovers. What is it that makes embodying fictive characters exciting for you? T.P. ⁄ Precisely that! I enjoy living very much. Already as a child death was a huge topic for me. I was always afraid to go to sleep because I feared I wouldn’t wake up again. Theatre gives me the possibility to lead many different lives. These two hours on stage give me the possibility to be someone else and to act out what I normally wouldn’t dare to do for fear of the consequences. What’s especially exciting, of course, are characters who are completely different from one’s own person, wicked, crazy characters… This

hunger for as many different lives as possible is what drives me, not the applause, really. L.L. ⁄ You’ve known the stage since you were a child, do still get stage

fright? T.P. ⁄ I get a lot less stage fright than others because the stage is my home. Some roles do make you more nervous than others, like when you’re playing a piece you haven’t played in a long time. I know a lot of great colleagues who suffer from incredible stage fright. I think that’d be something that would really make it all a lot less fun. Of course I also feel a kind of buzz, but more because I’m happy: I want to go out there, I want to play! L.L. ⁄ And how did you get into dubbing? T.P. ⁄ Back when I was in acting school there was an offer to try it. I failed quite miserably and I thought to myself: “I’ll never do that again!”. Then I acted in Berlin, together with James Bond’s current voice, Dietmar Wunder. Back then he used to direct dubbing and he let me watch and then try it, too. Back in Munich I became quite ambitious and dubbing became an exciting challenge. When I moved to Garmisch after 10 years in Munich, the dubbing business suddenly picked up speed and today I really like doing it. If you get the chance to lend your voice to the best of the best you can learn a lot for your own acting skills. L.L. ⁄ Do people sometimes recognise you as the one or the other film character? T.P. ⁄ Sometimes. Most of the time people ask me about “Stella” in “How I met your mother” and about Clémence Poésy from “Harry Potter”. Apart from that I sometimes dub Stacy Keibler, Denise Richards and Anastacia Griffiths, for example. However, in Munich it’s generally very difficult to become someone’s permanent voice because the big productions always go to Berlin. I dubbed Mélanie Laurent at the beginning. In Berlin I would probably have become her permanent voice but I don’t want to live there and I don’t want to see my children grow up there either, especially if there are other possibilities. Here in Garmisch we simply are in paradise! L.L. ⁄ Do you sometimes meet the stars you dub in person? T.P. ⁄ In the movie “Pillars of the Earth” I spoke Hayley Atwell and I got to

meet her at the film premiere in Berlin. That was a great experience! She was totally fascinated by my work and we talked for ages.

grandmother was my kindred soul! When she died, it was horrible for the entire family. The theatre had to be kept running though and my parents needed someone from the outside to help them out. So I worked until my contracts ran out and then I came back to Garmisch. But since I like working with people and have many ideas, I meanwhile find directing almost more exciting that acting. I really enjoy working with young talents, too. And by making theatre in my hometown I want to give the place something beautiful. I’m not sure if it’s really working, there still are quite a few people in Garmisch-Partenkirchen who’ve never been here with us. And we’ve been here for 65 years! Of course, not everybody has to like theatre but I’d very much wish for everybody to at least come by once and understand this place as “their” theatre. We are the only ski resort with a theatre! L.L. ⁄ Would you like to follow in your mother’s footsteps as artistic

vity into the theatre, if it’s wanted, of course. But the circumstances have to be right and we have to be able to keep everything up and running financially. And of course it’s the audience that’s always most important. L.L. ⁄ What projects are you currently working on? T.P. ⁄ There’ll be the anniversary piece “Der Bauer als Millionär”

(“The farmer as millionaire”) where I’m going to be on stage with my parents for the first time in a long while. And my two daughters have mini-roles too. It’s my heartfelt wish to have the whole family on stage for the anniversary.

L.L. ⁄ What do you find so fascinating about your birthplace Garmisch? T.P. ⁄ The character of the people! They have their own head; they do open up for new things, but refuse to simply accept everything. That’s something I like; despite the fact that it can sometimes be uncomfortable. The people here are very warm, fun and always

there when you need them. It’s easy to talk to them and work with them. They have their hearts in the right spot and keep their authenticity. I generally think the quality of life is really high: the unique landscape, the great air, the fact that Austria and Italy are so close – all these are positive factors for me.

L.L. ⁄ Now where do you find calm and inspiration? T.P. ⁄ Neuneralm, which is close to where I live, is a place I really like. It takes you less than 15 minutes to walk up there and all of a sudden you’re in the middle of idyllic mountain scenery. I really enjoy this! I love the walking paths towards Eibsee and Badersee. Eibsee has something international, I think. L.L. ⁄ So what should lovers of arts and culture definitely not miss while in GaPa? T.P. ⁄ Our theatre! Because it’s a rarity. I don’t know if there’s any other theatre in Europe that is still family-owned in the third generation. We are one of the last bastions. Aside from that of course there are great museums and the nature itself is a work of art!

dt. ∕ Alles Gute zum 150er: Zu Ehren des weltberühmten Komponisten Richard Strauss, geboren 1864 in München, gestorben 1949 in Garmisch-Partenkirchen, feierte seine Wahlheimat ein besonderes Fest(ival). Im Jahr 2014 steht die Musikwelt im Zeichen des 150. Geburtstages von Richard Strauss, gefeierter wie umstrittener Komponist, Dirigent und Operndirektor. Auch in Garmisch-Partenkirchen, wo die Künstlerpersönlichkeit lange Zeit gelebt hat, wurde das Jubiläum mit dem 26. Richard-Strauss-Festival standesgemäß zelebriert: Von 11. bis 19. Juni 2014 bot es unter dem Motto „Happy Birthday, Mr. Strauss!“ allerlei Geburtstagsattraktionen und gewohnt erstklassige Musikerlebnisse. Bereits die offizielle Eröffnung lockte hochkarätige Gäste zum Konzert des Rundfunk-Sinfonieorchesters Prag mit Juliane Banse und zum Staatsempfang von Ministerpräsident und Schirmherrn Horst Seehofer. Als weitere Höhepunkte wurden „Eine Alpensinfonie“, die selten gespielte Oper „Die Liebe der Danae“ und Gratulationen vom Leipziger Streichquartett und Chor des Bayerischen Rundfunks bejubelt und zum krönenden Abschluss sorgte der Konzertabend „Strauss hautnah“ mit den Bamberger Symphonikern für begeisterte Ovationen. Rund 7.600 Besucher bei 26 Veranstaltungen gaben Richard Strauss die Ehre – und dürfen sich schon auf die spannende Gelegenheit freuen, bei den Festivals 2015-2017 sämtliche Tondichtungen des Komponisten zu hören. Los geht’s von 20. bis 26. Juni 2015 mit Don Juan op. 20., Tod und Verklärung op. 24, Macbeth op. 23 und vielem mehr!

In honour of the world famous composer Richard Strauss, who was born in Munich in 1864 and died in GarmischPartenkirchen in 1949, his adopted home celebrates a special festival. In 2014, the world of music is going to be all about the 150th birthday of Richard Strauss, celebrated and controversial composer, conductor and opera director. In Garmisch-Partenkirchen, where the artistic personality lived for a long time, the anniversary was celebrated with the 26th Richard Strauss Festival: between June 11 and 19, 2014, the festival under the motto “Happy Birthday, Mr. Strauss!” offered all kinds of birthday attractions and first-class musical highlights, as usual. The official opening ceremony already lured top-class guests to the concert of the Radio-Symphony Orchestra Prague with Juliane Banse with the official reception by Prime Minister and patron Horst Seehofer. Further highlights like “An Alpine Symphony”, the rarely performed opera “The love of Danae” and Congratulations by the Leipziger Streichquartett and the Bavarian radio’s choir were received enthusiastically, the crowning glory was the concert evening “Strauss hautnah” (“Strauss up close”) with the Bamberger Symphoniker who received standing ovations. Around 7,600 visitors at 26 events honoured Richard Strauss – and they can look forward to exciting possibilities to hear all of the composer’s symphonic poetry at the festivals in 2015-2017. Und so unterschiedlich auch das Servierte sein mag, so ähnlich ist bei vielen Restaurants die Wertschätzung regionaler Produkte und vertrauenswürdiger (Fleisch-)Lieferanten. La Loupe hat Serap Yilmaz vom veganen Restaurant „Cassio Paya“ und Thomas Feldmann vom bayerischen Traditionsgasthaus „Zur Schranne“ zum Doppelinterview gebeten, um die verschiedenen Lebenshaltungen zu diskutieren! L.L. ⁄ Herr Feldmann, wie geht es einem traditionellen bayerischen Gast-

haus mit all den fleischlosen Trendküchen? T.F. ⁄ Das eine schließt das andere nicht aus. Man kann schön bayerisch

traditionell kochen und zugleich vegetarisch. Wir haben nicht nur Kässpätzle auf der Karte, sondern machen zum Beispiel die Nudeltaschen selbst, etwa mit Pfifferlingen.

L.L. ⁄ Gegenfrage: Wie geht einer Veganerin in Bayern, Frau Yilmaz? S.Y. ⁄ Blendend! Ohne jegliche Anfeindungen von wegen „Weißwürstln

& Co. müssen doch sein!“ Im Gegenteil, wir haben hier Ureinheimische, zum Beispiel ein Pärchen so um die 80 und beide Veganer – das ermutigt mich sehr! Meine Gäste sind vielfältig und bunt, von jungen Mädels bis zur Hundertjährigen, von Bankern bis zu Yogalehrern kommen alle zu mir. L.L. ⁄ Essen Sie selbst auch mal vegan bzw. könnten Sie sich vorstellen, komplett vegan zu leben, Herr Feldmann? T.F. ⁄ Ich habe es zwar schon ausprobiert und finde es geschmacklich sehr gut, bin dann aber doch mehr der Fleischesser. Meine Frau geht in die vegetarische Richtung, aber wir haben zu Hause keine Konflikte damit.

L.L. ⁄ Und Sie, Frau Yilmaz? Essen Sie manchmal Fleisch bzw. haben Sie

keine Angst vor Nährstoffmangel? S.Y. ⁄ Ganz selten esse ich Fisch. Ich habe keine Angst vor Nährstoff-

mangel, aber manchmal hat mein Körper eben das Bedürfnis nach Fisch und ich finde es wichtig, dass es keine Verbote gibt. Dass wäre nicht in der Balance. Der Körper nimmt sich doch, was er braucht. Mit einer bestimmten Bewusstheit ist das alles in Ordnung. L.L. ⁄ Kann man denn ein echter Bayer sein, ohne Weißwürste, Schweinshaxen und Leberkäse zu mögen? T.F. ⁄ Kann man schon, aber schlecht! Nein, im Ernst, man kann gut ohne Weißwürste leben, ich mag sie auch nicht besonders. Ich glaube, man identifiziert Bayern doch eher mit anderen Dingen. Typisch bayerisch ist für mich etwa die Mentalität. Im Gastgarten zusammensitzen und ein Augustiner genießen, das ist herrlich! L.L. ⁄ Haben Sie denn ein Lieblingsgericht in der traditionellen bayerischen Küche, Frau Yilmaz? S.Y. ⁄ Ja, ich liebe Knödel – ohne Speck, aber mit Schwammerl! Mittlerweile kann man die ja sogar vegan zubereiten, also ohne Eier und Milch. Schmeckt superlecker! Auf unserer Karte im Cassio Paya steht zum Beispiel auch ein etwas veränderter „Obatzter“ mit Hummus. Wir sind hier ja schließlich auch ein Mix aus Orient und Bayern!

T.F. ⁄ Wir achten natürlich darauf, dass wir möglichst viele Produkte aus der Region beziehen. Hinter unserem Haus ist die Metzgerei Fink, dort kaufe ich die Wurst ein. Für das Fleisch haben wir gute Metzgereien in Bayern. Das Wild im Herbst kriegen wir auch nur aus unserer Region, beim Gemüse dasselbe. Die Gäste merken das, und auch die Partnerbetriebe, weil unsere Gäste dann oft dort vorbeischauen. Die „Schranne“ ist eine Einheimischen-Wirtschaft und die Vereine erwarten sich bei den Stammtischen schon die Produkte der regionalen Betriebe. L.L. ⁄ Und welche Werte zählen im Restaurant „Cassio Paya“?

„Eine Message S.Y. ⁄ Nachhaltigkeit ist mir sehr wichtig, Stichwort Permakultur und von mir lautet: soziale Landwirtschaft, die zum Glück wieder vermehrt betrieben wird. Essen ist Medizin!“

Ich kaufe so ein, dass ich gar keinen Müll produziere und mit dem eingesparten Geld kann ich meinen Gästen das Essen ein bisschen günstiger anbieten. Es bleibt bei uns nichts übrig, alles wird wieder verwertet. So wird die Natur nicht belastet, den Tieren und den Menschen geht es gut. Denn eine Message von mir lautet: Essen ist Medizin!

L.L. ⁄ Woher beziehen Sie denn die veganen Produkte und worauf achten Sie bei den Lieferanten? S.Y. ⁄ Ich hole alles selber, ich lasse nichts anliefern. Nach dem Prinzip „Keep it simple“ kaufe ich nur hier beim kleinen Bioladen „Bioparadies“ ein und zwar täglich alles frisch. Für Getränke und Trockenwaren vereinbaren wir einen Abholtermin. So einfach ist das!

L.L. ⁄ Und welches Gericht auf Ihrer Karte sollte man unbedingt ausprobieren? S.Y. ⁄ Meinen selbstgemachten Hummus, weil ich ihn mit 14 Zutaten zubereite und er wirklich lecker schmeckt! Das ist mein Love Food. L.L. ⁄ Und welches ist das beliebteste Hauptgericht in der Schranne?

T.F. ⁄ Immer der Schweinebraten! Viele Leute kommen nur deshalb zu uns. Oft bestellen sie zu sechst einen ganzen Schweinebraten auf dem Holzbrett. Das hat sich einfach so herumgesprochen und da zeigt sich die Qualität: Super-Kruste und butterweich sind Pflicht!

L.L. ⁄ „Du bist, was du isst.“ Was also sind für Sie Vegetarier und Veganer? T.F. ⁄ Leute, die auf ihren Körper achten. Wie gesagt, für mich wäre es nichts, aber ich beurteile die anderen deshalb nicht negativ. Grundsätzlich sollte jeder vielleicht ein, zwei vegetarische oder vegane Tage in der Woche einbauen.

L.L. ⁄ Und was sind für Sie Fleischesser? S.Y. ⁄ Wenn ich ein Stück Fleisch aus der Massenindustrie esse, in der

das Tier misshandelt wurde, darf ich mich nicht wundern, dass ich selbst ängstlich und traurig werde. Wenn das Tier aber ein glückliches Leben gehabt hat, finde ich es total in Ordnung, wenn jemand es essen will und kann. Wichtig ist also, woher das Fleisch kommt. Auch aus medizinischer Sicht sind Verbote nicht sinnvoll, Menschen mit der Blutgruppe A zum Beispiel brauchen einfach die Substanz aus Fleisch. L.L. ⁄ Zum Abschluss: Glauben Sie, dass die typisch bayerischen Gerichte je außer Mode kommen werden? T.F. ⁄ Kann ich mir nicht vorstellen. Sie sind ja nicht bloß bei Touristen, sondern auch bei den Einheimischen sehr beliebt. Auch wenn manches mit der Zeit vielleicht modern interpretiert wird, ein Schweinebraten bleibt ein Schweinebraten! L.L. ⁄ Und hat die vegane Küche in Bayern Zukunft? S.Y. ⁄ Oh ja! Denn dort wo der größte Widerstand, gibt es auch die

größte Möglichkeit zu wachsen und sich auszubreiten.

And even though their cuisine could not be any more different, many restaurants share a deep appreciation for regional products and trusted (meat) suppliers. La Loupe asked Serap Yilmaz of vegan restaurant “Cassio Paya” and Thomas Feldmann of Bavarian restaurant “Zur Schranne” for an interview to discuss their approach to life!

L.L. ⁄ Mr. Feldmann, How does a traditional Bavarian inn of such long-standing tradition do these days, surrounded by all the modern vegetarian cuisine? T.F. ⁄ Well, I don’t think they are mutually exclusive. There are many ways to prepare traditionally Bavarian and yet vegetarian dishes. Our menu has a lot more to offer than just Kässpätzle, e.g. our hand-made Nudeltaschen, a pasta specialty stuffed, for example, with chanterelles. L.L. ⁄ Counter question: Ms. Yilmaz, what is it like to be vegan in Bavaria? S.Y. ⁄ Splendid! I have not experienced any hostility like “Come on, you

must have a Weißwurst!” On the contrary, we have vegan residents who lived here all their lives, e.g. a couple of about 80 years – that’s what I call encouraging! My guests are highly diverse and colorful: everybody from teenagers to grandmothers and from bankers to yoga teachers comes here to eat well. L.L. ⁄ Mr. Feldmann, do you sometimes eat vegan or can you imagine living completely vegan? T.F. ⁄ I have already tried vegan cuisine and think it tastes great. Still, I am more of a meat lover than a vegan. My wife always leans to the vegetarian side but we have never had any problems about that.

L.L. ⁄ What about you, Ms. Yilmaz? Do you sometimes eat meat or are you ever afraid you might not get enough nutrients? S.Y. ⁄ On rare occasions I eat fish. I am certainly not worried about my diet but sometimes my body longs for fish and I think it is important not

to suffer just because you avoid certain kinds of food. Otherwise, this would be a sign that you are out of balance. Our body takes whatever it needs and as long as we are aware of that, everything works out just fine.

L.L. ⁄ Can one be a proper Bavarian without liking Weißwurst (veal sausage), Schweinshaxe (pork knuckle) or Leberkäse (fine meat loaf)? T.F. ⁄ Of course you can but it’s not the same! No, seriously, you can easily live without Weißwurst. I am not really a big Weißwurst fan myself. We think of ourselves as Bavarians because of other things: a certain kind of mentality, for example, is what I would call typically Bavarian. What could be better than sitting outside with friends and drinking a chilled Augustiner beer!

L.L. ⁄ Ms. Yilmaz, what is your favorite traditional Bavarian dish? S.Y. ⁄ Oh yes, I love dumplings – but with mushrooms instead of bacon!

Today we can even prepare them for vegans without eggs or milk. So good! Our Cassio Paya menu also includes a somewhat different version of “Obatzter” with hummus. After all, we are a mix of Bavaria and the East! Nowadays food is not just about food intake, it’s also a statement and an attitude. L.L. ⁄ What’s the philosophy behind your inn? T.F. ⁄ Of course we try to work with regional products as much as possible. We have the butcher’s shop Fink right next door, so this is where I am buying all the cold cuts. We are lucky to have fantastic butchers in Bavaria. All our wild game comes from regional sources and the same is true for vegetables. Our guests and partners appreciate our regional approach and it’s nothing special when our guests ask about our suppliers and their quality products. “Zur Schranne” is a local restaurant where our clubs and associations meet regularly and expect to find regional products.

L.L. ⁄ And what’s the philosophy behind “Cassio Paya”? S.Y. ⁄ Sustainability is really important to us and, for example, permaculture and social farming have finally found their way back into our region. I always try not to buy too much produce. And the money I save allows me to offer my food a little cheaper. There are no leftovers at “Cassio Paya” because we use everything. As we don’t harm our environment, both humans and animals can live in peace. My message: food is medicine!

L.L. ⁄ Where do you buy your vegan products and what’s important to you in a supplier? S.Y. ⁄ I go and get everything myself. We do not have any deliveries. I always try to “keep it simple” and buy everything I need fresh from a small organic grocery store called “Bioparadies”. We also have certain pick-up dates for beverages and dry products. It’s really that simple! L.L. ⁄ Is there a special dish your guests should absolutely try? S.Y. ⁄ My home-made hummus because I use 14 ingredients to make it “My home made hummus is my really delicious! That’s my ultimate love food. ultimate love food!” L.L. ⁄ What’s your favourite dish on your menu? T.F. ⁄ Always our roast pork! We have lots of guests who only come for that. Often they come in groups of six and order an entire roast served on a wooden chopping board. Somehow the word spread and that’s also a sign of our great quality: perfect crackling and tender meat are a must! L.L. ⁄ “You are what you eat.” So what are vegetarians and vegans for you? T.F. ⁄ People who care about their health. As I have already said, it’s not really my thing but I would never judge them in a negative way. All of us should eat vegetarian or vegan at least one or two days per week. L.L. ⁄ So then, what are meat-eaters for you? “The greater the opposition, the greater the opportunity to grow and expand.”

S.Y. ⁄ If you eat a piece of mass-produced meat from an abused animal,

you shouldn’t be surprised when you become afraid and sad yourself. If the animal had a good life, however, it is absolutely okay to eat it. So where your meat comes from makes all the difference. Strict rules miss the point also from a medical point of view. People of blood group A, for example, simply need to include meat in their diet. L.L. ⁄ Last question for you: Do you think typical Bavarian dishes will ever go out of fashion? T.F. ⁄ I really don’t think so. After all, they are not only popular among tourists but also among locals. A few dishes will perhaps be reinterpreted in a more modern way but roast pork will always be roast pork!

„The Alpine Ingredients“ führt nachhaltig denkende Menschen in den zwölf Destinationen von Best of the Alps an einen unberührten Spot abseits der Trampelpfade. Dort erwartet die Gäste eine eigens für dieses Treffen designte Küche und eine große Tafel im Freien. Kochkünstler aus der jeweiligen Region zaubern dann mit KollegInnen aus einer der anderen Destinationen ein 5-Gänge-Menü aus regionalen und saisonalen Produkten. Dazu werden erlesene Weine aus Deutschland, Frankreich, Italien, Österreich und der Schweiz kredenzt.

Eigenheiten pflegen

Projektziel ist die engere Vernetzung der Best-of-the-Alps-Destinationen und das Zutagefördern charakteristischer Juwele in jeder Region. Im Mittelpunkt stehen daher interessante Menschen, ihre Geschichten und Produkte. Nach drei Winterstopps feierte „The Alpine Ingredients“ im Juni 2014 im legendären Starthaus der Kandaharabfahrt seine Sommerpremiere. Marianne Holzinger von Reindl’s Partenkirchner Hof und Gastkoch Riccardo Gaspari tischten u. a. ein Specktatar aus eigener Biozucht, geräuchertes Filet vom Staffelsee-Saibling und Werdenfelser Rehrücken auf, zum Aperitif gab’s Cold Brew Coffee von der Kaffeerösterei Wildkaffee. Fazit: Wow! Wiederholung erbeten!

In Garmisch-Partenkirchen the creative event peaked in an unforgettable and enjoyable adventure for all those who were there. “The Alpine Ingredients” leads people with a sense of sustainability to undisturbed spots off the beaten tracks in the twelve Best of the Alps destinations. There the guests are met by an individually designed kitchen and a great table in the open air. Together with colleagues from other regions, culinary artists from the respective regions then create 5-course menus made from regional and seasonal products. Wines from Germany, France, Italy, Austria and Switzerland are served with the meal.

Which is why interesting people, their stories and products are at the focus. After three winter events “The Alpine Ingredients” celebrated its summer premiere in June 2014 in the legendary start house of the Kandahar slope. Marianne Holzinger from Reindl’s Partenkirchner Hof and guest chef Riccardo Gaspari served organically bred bacon tartar, smoked filet of Staffelsee-char and saddle of Werdenfelser venison, to name but a few, and for an aperitif there was Cold Brew Coffee from the coffee roasters “Wildkaffee”. Kaffee-Rösterei in GarmischPartenkirchen! Wildkaffee verwöhnt seine Kunden mit biologisch angebautem Kaffee aus aller Welt, teilweise sogar selbst importiert, sowie Chai, Tee und Trinkschokolade. Und im neuen „Wildkaffee“ in der Sparkasse würde bestimmt auch George Clooney den Unterschied schmecken! L.L. ⁄ Herr Wild, bereits Ihr

Urgroßvater machte sich als fortschrittlicher Kaufmann in Partenkirchen einen Namen. Liegen Mut und Unternehmergeist also in der Familie? L.W. ⁄ Ja, natürlich! Mein Urgroßvater hat mich schon ein bisschen inspiriert. Aber trotzdem muss doch jeder für sich selbst herausfinden, was gut für einen ist. Mir hat es einfach immer schon Spaß gemacht, Geschäfte zu machen und Firmen aufzubauen. L.L. ⁄ Wie sind Sie dann auf die

Idee gekommen, eine Kaffee-Rösterei zu eröffnen? L.W. ⁄ Kaffee war immer schon mein Hobby. Auch bei meiner früheren Arbeit mit gastronomischen Objekten stand der Kaffee für mich stets im Mittelpunkt. So habe ich mich mehr und mehr ins Thema Harti Wild in der Rösterei in Farchant

L.L. ⁄ Wer sind jetzt Ihre Kunden? L.W. ⁄ Wir haben sowohl Groß- als auch Einzelkunden und sehr viele Cafés und Hotels als Abnehmer. Jeder, der einen guten Kaffee braucht, kommt zu uns. Schwerpunkt ist natürlich GarmischPartenkirchen, aber dank unseres Onlineshops sind wir in ganz Deutschland und Österreich vertreten. L.L. ⁄ Unter dem Label „Wild Trade“ verkaufen Sie auch direkt

importierten Kaffee. Welche Vorteile bietet das? L.W. ⁄ Wir können uns die Qualität vor Ort in den Ursprungs-

ländern (Nicaragua, Brasilien, Panama und Burundi) selbst aussuchen und zahlen den Bauern direkt einen fairen Preis. Somit kann jeder gut leben. Wir sind auch sozial sehr engagiert und haben z.B. gerade 100 Krankenbetten nach Nicaragua geschickt. L.L. ⁄ Kürzlich haben Sie das „Wildkaffee“ in der Sparkasse

(Bahnhofstraße 40 – 42) eröffnet. Welches Konzept steckt dahinter? L.W. ⁄ Der Plan war, als Rösterei dem Kunden unser Produkt näherzubringen und ihm die richtige Zubereitung zu zeigen. Bei uns kann man z. B. auch Filterkaffee trinken, was ja jetzt wieder stark im Kommen ist. Das Café hat eine wunderschöne Lage und gibt uns die Möglichkeit, unsere Produkte und Philosophie zu präsentieren. Natürlich bekommen Sie dort auch was zu essen, wobei wir auch bei den Lebensmitteln sehr auf Nachhaltigkeit und Regionalität achten. L.L. ⁄ Ist GaPa also ein guter Boden für Jungunternehmer?

L.W. ⁄ Ja, GaPa hat sich gut entwickelt. Die gewerbliche Situation ist zwar ein bisschen schwierig, aber wir merken die positive Entwicklung im Tourismus. Durch den Wintersport und das Wandern profitieren wir ganzjährig und es kommen vermehrt wieder junge Touristen. Ein großer Vorteil für uns! Als Garmischer ist man ja stolz auf seine Heimat und macht gerne etwas für den eigenen Ort.

L.L. ⁄ Was ist nun der Unterschied zwischen Kaffee aus den beliebten

Kapselmaschinen und frisch gemahlenem Kaffee? L.W. ⁄ Gemahlener Kaffee verliert unheimlich rasch das Aroma, deshalb

muss man ihn wirklich immer ganz frisch zubereiten. Kapselkaffee ist eine Müllsünde und kommt für uns nicht in Frage. Aber heutzutage muss ja immer alles schnell gehen und wer ihn verwenden will, bittesehr. Ich vergleiche ihn gerne mit Mikrowellenkost... Ich persönlich bevorzuge Filterkaffee, ganz klassisch mit Porzellanfilter. Das ist einfach und kostengünstig. Bei den Kapseln hat man ja auch gar keinen Bezug zum Produkt, weil man nichts davon sieht.

L.L. ⁄ Gibt es – so wie beim Wein – auch den passenden Kaffee zu

bestimmten Gerichten? L.W. ⁄ Natürlich! Kaffee hat mehr Aromen als Wein, nämlich bis zu

tausend verschiedene. Es gibt fruchtige Kaffees, die mit Kuchen harmonieren, es gibt welche, die gut zum Frühstück passen usw. Man muss sich einfach durchprobieren und seinen eigenen Geschmack schulen, dann findet man schnell raus, was gut zusammenpasst. Wir bieten keine Sirups und Geschmacksverstärker à la Starbucks an, weil ja der Kaffee an sich schon Geschmacksrichtungen vorgibt. Der allgemeine Trend zum Kaffee als Lifestyle-Produkt kommt aber auch uns zugute. L.L. ⁄ Welche Röstung oder Zubereitungsart empfehlen Sie jemandem,

der die Geschmacksvielfalt der Bohnen kennenlernen möchte? L.W. ⁄ Das wäre wohl Filterkaffee, weil man durch die hellere Röstung

und durch die Zubereitung verschiedene Aromen besser erkennen kann. Also einfach mal die Herkunftsländer durchprobieren! L.L. ⁄ Dieses spezielle Wissen hat längst nicht jeder Café-Mitarbeiter.

Sollte die Ausbildung zum Barista Ihrer Meinung nach zum Standard gehören? L.W. ⁄ Viele unterschätzen das Thema, wenn sie ein Café eröffnen. Wenn man sich wirklich damit beschäftigen möchte, empfehle ich schon eine solche Ausbildung. Wir arbeiten zum Beispiel sehr eng mit dem Kaffeeinstitut in Innsbruck zusammen und lassen unsere MitarbeiterInnen dort zu Baristas ausbilden. Durch richtige Schulung von Anfang an können viele Fehler vermieden werden. Mensch, Maschine und Bohne müssen zusammenpassen, das Ergebnis merkt man in der Tasse!

L.L. ⁄ Verraten

Sie uns etwas über Kaffee, das wir noch nicht wussten? L.W. ⁄ Eine Tatsache habe ich ja schon angesprochen, nämlich dass Kaffee mehr Aromen als Wein hat. Und Kaffee wächst nur am Äquator, also ca. vom 30. Breitengrad südlich bis zum 30. Breitengrad nördlich. Was noch? Rohkaffe ist grünlich. Beim Rösten verdoppelt sich das Volumen der Bohnen, aber das Gewicht nimmt bis zu 20 Prozent ab. So wie beim Popcorn! Kaffee entzieht übrigens auch kein Wasser, sondern nur das Koffein, und das ist in verhältnismäßig geringer Menge enthalten (100% Arabica-Bohnen haben etwa nur 1% Koffein und eine Tasse Kaffee besteht zu 98% aus Wasser).

as a progressive tradesman. Would you say courage and entrepreneurial spirit run in the family? L.W. ⁄ Yes, definitely! My great-grandfather actually inspired me quite a bit. But of course one still needs to find out what is good for them on their own. I’ve simply always enjoyed making business and building up companies.

L.L. ⁄ When did you come up with the idea of opening a coffee-roaster? L.W. ⁄ Coffee has always been a passion of mine. At my old job where I worked with gastronomic businesses, coffee was always at the centre for me. Which is why I started exploring the topic and doing training courses. Unfortunately the apprenticeship to become a coffee roaster did not exist anymore so I did “personal studies” and tried out many things and thus got a deeper knowledge of the topic. L.L. ⁄ Who are your customers now? L.W. ⁄ We have major as well as individual customers and many cafés and hotels are amongst our buyers. Anyone in need of good coffee comes to us. Of course we focus on Garmisch-Partenkirchen but thanks to our online shop we’re present in all of Germany and Austria. L.L. ⁄ Under the label “Wild Trade” you also sell directly imported coffee.

What advantages does this offer? L.W. ⁄ We get to personally choose the quality in the countries of origin

(Nicaragua, Brazil, Panama and Burundi) and we directly pay the farmers a fair price. Which is how everybody gets to live well. We are socially active, too, and just sent 100 hospital beds to Nicaragua. L.L. ⁄ A short while ago you opened the café “Wildkaffee” at Sparkasse

(Bahnhofstrasse 40-42). What’s the concept behind this? The plan for us as a coffee roasting business was to bring our products closer to the customer and to show them the right preparation, too. We also serve filter coffee, for example, something that’s once more gaining in popularity. The café has a wonderful location and gives us the possibility to present our products and philosophy. Of course you can have something to eat here too – we make sure all our food is sourced sustainably and regionally.

L.L. ⁄ Would you say GaPa is a good place for young entrepreneurs? L.W. ⁄ Yes, GaPa has developed quite well. The business situation is a bit difficult but we do notice the positive development in tourism. Through winter sports and hiking we profit all year round and we increasingly see young tourists. A great advantage for us! As someone from Garmisch, I am proud of my roots, of course, and I like doing something for the place. L.L. ⁄ What’s the difference between coffee made using the popular

capsule machines and freshly ground coffee? L.W. ⁄ Ground coffee very quickly loses its flavour, which is why it’s

important to always prepare it freshly. Capsule coffee is an ecological sin and out of the question for us. But of course, today everything has to be fast and if someone likes to use it, go right ahead. I like to compare it to microwave-food though… Personally I prefer filter coffee, the classical way, with a porcelain filter. That’s easy and cost efficient. When it comes to the capsules, the product’s characteristics are lost because you don’t even see any of it.

L.L. ⁄ Are there – just like with wine – coffees that go with certain

dishes? L.W. ⁄ Of course! Coffee has more aromas than wine, up to one thou-

sand different ones. There are fruity coffees that go well with cake, there are others that go well with breakfast and so on. One simply has to try them out and train their taste buds to find out what goes

well together. We do not offer syrups and flavours like Starbucks because the coffee itself dictates the taste. Of course we profit from the general trend to see coffee as a lifestyle product.

L.L. ⁄ Which roasting or which type of preparation would you recommend to

someone who’d like to explore the beans’ taste varieties? L.W. ⁄ Well I’d recommend filter coffee because the lighter roasting and

the type of preparation allows for the aromas to become more prominent. Simply go ahead and try out the different countries of origin! L.L. ⁄ This special knowledge is something you don’t find in the average café-

staff. Would you say Barista-training should be standard? L.W. ⁄ Many people underestimate the topic when they open a café. But when

someone really wants to get into the topic, I’d definitely recommend such a kind of training. We cooperate closely with the coffee institute in Innsbruck and our staff is trained there to become Baristas. The right training from the beginning on makes sure fewer mistakes happen. Person, machine and bean have to go well together, the result can be seen in every cup! L.L. ⁄ Would you share something about coffee we did not know before? L.W. ⁄ I’ve already told you one fact, i.e. the fact that coffee has more aromas than wine. And coffee only grows on the equator, so from the 30th northern parallel to the 30th southern parallel. What else? Raw coffee has a greenish colour. When you roast it, the beans’ volume doubles but the weight decreases by about 20 percent. Just like popcorn! Coffee itself does not draw water, it’s the caffeine that does that and there’s not that much caffeine contained in coffee (100% Arabica-beans contain about 1% of caffeine and a cup is made up to 98% of water).

Das im Mai 2014 eröffnete Café Bar Berge erinnert auf den ersten Blick an eine Szene Bar. The restaurant is known for its excellent cuisine with regional and seasonal delicacies. In accordance with the credo ‘slow food’ the team tries to treat the guests to high-quality regional products. Mohrenplatz Schmankerl im Herzen von Garmisch

Am Mohrenplatz im Herzen von Garmisch-Partenkirchen ist eine gute, bayerische Wirtschaft entstanden. Traditionsbewußt, heimisch, ohne „Schnickschnack“, ohne „Jodlerstil“, aber dafür einfach gut. Über den herrlichen Biergarten mit 200 Sitzplätzen und die Terrasse betreten Gäste von Süden her den Gastraum im Erdgeschoß – mit Gewölben bietet er ca. 100 Personen Platz. Dort setzt man sich an die großen Wirtshaustische und freut sich auf die hervorragende bayerische Küche. Übrigens, wo heute das Wirtshaus steht, war früher ein Schulhaus. Das ausgebaute Holz wurde in Holzvertäfelung, Tische, Bänke, Treppen und Mobiliar eingearbeitet.

A good, Bavarian restaurant has developed on Mohrenplatz, at the heart of Garmisch-Partenkirchen. Traditional, regional, without “frills”, without “yodel-style” but simply delicious. The guests enter the restaurant which seats about 100 people, through the wonderful beer garden with 200 seats and a beautiful terrace. Inside one takes their seat at large wooden tables while looking forward to excellent Bavarian food. By the way, the restaurant used to be a school. Wood from the old school house was inserted into wood paneling, tables, benches, stairs and furniture.

Das Pano feiert 10jähriges Bestehen. Oder besser gesagt: 10jähriges Begeistern. Not only is Garmisch-Partenkirchen’s inn Zur Schranne a historical monument with a long-standing history, it’s also a monument for traditional Bavarian cuisine. For tourists who’d like to experience true Bavarian mentality and cooking, coming here is a must! The Schranne is where the local clubs come for their regular’s meetings and where many locals treat themselves to regional and seasonal delicacies in the rustic ambience of the dining room. Delicacies like the legendary pork roast, stewed ox cheeks and game dishes. Soups, fresh salads and home-made vegetarian dishes round off the menu. To go with the food, we’d recommend cool Augustiner-beer which, if ordered in advance, may even be drawn from a wooden barrel. An ideal location for celebrations and events!
