A marriageof true minds? The idea of a Greater Brighton looks like gaining ground even as some ask whether Brighton and Hove should be split asunder. Frank le Duc reports
B
usinessmen and women from across the area will be debating whether Brighton and Hove should divorce at a meeting on Tuesday 26 February. Some believe that Hove has been swallowed up by its bigger neighbour, especially since the merger of the old local authorities into what is now Brighton & Hove City Council. The complaints echo those made by some people in Portslade after it officially became part of Hove in the 1970s. Others want Brighton to go it alone. Brighton is the brand, they say, and Hove is an adjunct. Few people from outside Sussex talk about Brighton and Hove except in the most formal sense. They talk about Brighton even when they mean somewhere near by. And plenty of locals, when asked where they are from, repeat the old refrain: “Brighton. Well, Hove actually.” And a few even add: “Portslade unfortunately.” A similar debate on a bigger stage is taking place north of the border – no, not in Mid Sussex, but in Scotland. The question of independence revolves around many of the same issues. Are we better off together or apart? The practical choices are
starker for the Scots. They include which currency to use – the pound or the euro? And how to defend the country, although much of the British Army often seems to be Scottish.
Julia Chanteray, president of Brighton and Hove Chamber of Commerce, the organiser of Tuesday’s debate, said: “It might seem whimsical to talk now about a split between Brighton and Hove but it isn’t that long since you could say the same of England and Scotland. Yet look what’s happening there. The Chamber’s ‘Big Debate’ about our city is being held in the light of the Scottish debate about national independence.” In Brighton and Hove the question is being debated just as the government has expressed interest in striking a deal with a Greater
Brighton. This bigger entity would include Lewes and Newhaven, Shoreham, Lancing and Worthing. In the eyes of ministers it has critical mass – a population of 500,000 rather than 273,000. It also has two ports and an airport as well as being close to Gatwick. And, as a city region, it offers the prospect of jobs and business growth at a time when the economy seems to have stalled for an uncomfortably long time. Brighton as a shorthand description of our coastal conurbation is better able to compete with cities such as Bristol, Birmingham and – looking abroad – the likes of Barcelona. Andrew Nichols, from the Hove Business Association, is one of the debate’s panellists. He said: “With the current financial constraints all local authorities are having to work with, splitting Brighton and Hove

struggling with government cuts to council tax benefit, housing benefit, and wider welfare reform changes, all of which will have seen approximately £2.6m taken from local residents’ pockets by April 2013 – and future cuts beyond that. We’re also proposing to put nearly £1m extra funding into preventing homelessness and helping those who find themselves on the streets. Projects to help save money in the longer term will continue. These include including plans to reduce the number of buildings we occupy, and schemes to cut energy bills. As with last year, all branch libraries and children's centres will
stay open, no changes will be made to the threshold at which vulnerable people get social care, and support for carers is protected. Through much hard work, we’ve made sure that the vast majority of our proposals have little or no impact on the service many residents use and rely on. A proposed below inflation 1.96 per cent increase in council tax will protect vital services as we prepare for years more funding cuts by government. Despite our city having been hit with the worst cuts per head across the region, we believe we’ve proposed the best deal possible to protect essential services for everyone in the city. We very much hope our plans are approved by the council later this month.

Brighton-focused, Hove has continued to develop its own offer and brand and I think we should grasp the opportunities to further enhance and appreciate the benefits that Hove has to offer for both businesses and residents.” His comments reflect the pragmatism in the closing scenes of the popular Ealing comedy Passport To Pimlico – and the locally flavoured production premiered at the Brighton Festival last year, Hanover – The Musical. Ideas of independence are tempered by the mutual benefits of co-operation. Differences are set aside and everyone pulls together. And that’s the lead that local politicians – from different parties – are trying to give with the idea of a Greater Brighton. Jason Kitcat, the leader of Brighton and Hove City Council, wants the Greater Brighton proposal to play on the strengths of the wider area. These include Brighton’s position as a significant player in the digital and creative industries. And perhaps not surprisingly, given his background in the Green Party, he is keen to promote the growing opportunities presented by environmentally friendly technologies – the city as an “eco-tech hub”. The Greater Brighton area is earning recognition on this front, not just in government circles. It is partly why the area is included in the government’s “City Deal” programme. Civic and business leaders have less than six months to make their case to ministers and civil servants for more power to make decisions locally. These include some big spending decisions. Councillor Kitcat said: “This is a major step forward, giving us the opportunity to make a big difference to the city and the region. We are rightly very ambitious and I am
delighted the city region’s importance to the national economy has been recognised. This status complements the super connected city work which is already under way after our bid for ultrafast broadband last year. We will continue to work hard with our partners to secure a deal which will strengthen our economy and nurture local business.” One official said that the idea of a divorce for Brighton and Hove just as the Greater Brighton proposal promised so many benefits was to go “from the sublime to the ridiculous”. He said that the two towns had more in common than they had differences setting them apart. And the same was true of the council’s neighbours – Lewes District Council, Adur District Council and Worthing Borough Council. The Greater Brighton brand would give many more people the chance to compete in a fast-changing world. He cited American Express with new offices in Brighton bringing more jobs to the area. And he said that the “functioning economic area” would never neatly match council boundaries. So when the power company Eon chose Newhaven as the home of maintenance crews for its proposed wind farm in Newhaven, rivalries were set aside. The relaxed view was that in reality the people working there were as likely to live in somewhere like Brighton or Hove or spend their money here. The economic pull seems to be in the direction of Brighton becoming the umbrella name for not just Hove but for the wider area. Sentiment and a sense of place and history may tug in the other direction. Some businessmen and women in Hove may believe that independence and niche marketing would help their cause. Chamber of Commerce president Julia Chanteray said:

Change the name to Synergy City – the working together of two parts to produce a result greater than their individual effects.”

It could, of course, all come unstuck in the upcoming games against Leicester and Forest, but this column is going to defy the logic of previous failed predictions and predict Albion to make the play-offs. Having completed the BBC website promotion calculator, I had Albion finishing sixth along with Crystal Palace, Leicester and Watford, with Hull and Cardiff going up automatically. Therefore, the March match against Our Friends in the North may not be the last we see of Glenn Murray and co this season. If Albion make the play-offs and they do manage to get past a powerful Watford or Leicester side in a semi-final, then a potential final against Crystal Palace at Wembley (should they progress) potentially awaits. It’s got disaster written all over it, a potentially doomladen or glorious occasion with an 8am kick off time due to police advice with Murray or (dread the thought) Dobbie scoring the winner in extratime. In the case of Dobbie, he is barred from playing against Albion as part of the loan deal, but this might not be binding in a play-off final. Whenever it takes place (if it takes place) a play-off final at Wembley between Brighton and the Old Enemy playing for the riches and the status of Premier League football, would make the battles of the ‘70s look like a gentle game of deck quarts on a summer cruise. What might be the lesser of two evils would be if they met in a semi-final (home and away matches!) then all police leave will definitely be cancelled and The Amex would rock! Factor in the obvious history, the match on the 17 March becomes even more important as it could lead to the victor in that game going into a play-off match with a very powerful psychological advantage. For that reason alone, if it wasn’t a ‘must win’ before, it is now. The rest of the football fraternity may not have a clue as to why Brighton vs Palace is such a fiercely contested derby, but if the two clubs meet in the playoffs, they soon will. As if the game in March needed any more hype!

Mark Brailsford on Cardiff, Palace & the play-offs ollowing Albion’s fantastic win in Cardiff, are we about to witness something special in the run up to the season’s end? Even if The Seagulls do not reach the play-offs, there have been some very special moments to savour this season. However, it’s the next few games that may define whether Albion will still be in the hunt for promotion. That momentous and hard-earned win in Cardiff after being battered yet unbowed, was the exact reversal of a lot of Albion’s games so far this season. Up next: Huddersfield Town After their 6-1 hammering by a resurgent Nottingham Forest, whom Albion face at the end of March, Huddersfield, under new manager Mark Robbins, look ripe for a stuffing. But this ignores the galvanising effect of Billy Davies at Forest. way as Will Young did? “Oh, not at all! I couldn’t do musical theatre – I just haven’t got the operatics or West End voice to do musicals. I love acting and I love performing, but you have to have such an operatic-style voice. I haven’t really got that, unfortunately.” I hear you're not returning to The Xtra Factor. Why is that? “Well... If that's what other people are saying! All I’ve said is that it’s unlikely that I’ll be doing it this year. I’m not saying 100 per cent ‘no’, just unfortunately due to work commitments and my music – music is obviously my first priority over TV – and this is why I’m doing so well at the moment. ‘Troublemaker’ is getting played across the world, all my music is getting played in different territories, so I have to be able to be here to do it. I have to work. I have to go to Germany, I have to go to Australia, I have to go to America to make it work! Over the last few years, I’ve done The Xtra Factor and I’ve had music out, but it’s been hard to keep both jobs. What I say for me is that Simon [Cowell]’s got a very good way of persuading people to do things. If anyone was going to get me to do it, then Simon will! I think he knows what I’m trying to do, in terms of how far my music is going, and he’s proud of what I’m doing as well. So I think that’s what it is at the moment.”
“If you could outwit anyone and be invisible then that would be amazing!” If you could learn any skill, natural or supernatural, like Neo in The Matrix goes like concrete, what skill would you like to learn? “The art of invisibility.”

Have you had any tips from your One Direction mates with regards to palying in America? They’ve had phenomenal success... “Well, for me I’m not at that level in terms of the States. They were doing 25,000-20,000 seater arenas on their tour here and I only did three shows to 2,000-3,000 people so, you know, it’s a completely different level in terms of where we’re going. Obviously the guys here [in America] are a phenomenon. You’re probably never going to see that again. The guys are the biggest thing in the world right now and it’s just incredible what they have achieved.”

Obviously I enjoyed doing The X Factor tour and of course it was great for me. I think when it comes to winning the show, it’s all down to a bit of luck – it’s being in the right place at the right time. That’s all I can put it down to really. Leona Lewis was a massive success; Little Mix have been a big success since they’ve come off the show and have released some really good songs. James Arthur, of course, will be the next one to come out and be a success as well. It’s being an artist that’s going to blend into the market and have success. I think I was lucky enough to be at a point where there wasn’t really a male artist doing what I was doing – and there hasn’t been really since! But Robbie [Williams], of course, is king of that. It’s just the having room in the market. If you win the show or don’t win the show, It’s all about music as well, about writing great songs. That’s the key!”

(Laughs) That’s a skill, is it? “Yeah! I mean, if you could outwit anyone and be invisible then that would be amazing!” What would you do with it? “Well, I would just disappear when I want. And you know, no paps around, no papers, no working. No one would know where I was.” So do you feel over exposed? “I think any artist does. You’re in the public eye – it’s always work, work, work! When you’re out and about, just shopping or something, it’s hard to do it sometimes... you have to run away from paps. It’s just one of those things. I’m joking really. If I could learn a skill, I’d probably want to learn a language. If I was honest.” That sounds like a very useful skill set, both of them! “Yeah.” What are you going to do for the rest of the year? “I’m looking forward to just working hard really. We’ve got loads of touring when I get back, and I’ve got more singles coming out for this album, travelling the world... and doing different things!” Thank you very much Olly. I
wanted so much to be blown away by the new Stephen Poliakoff TV production Dancing On The Edge. His previous works have always made me renew my faith in TV drama. Shooting The Past with Timothy Spall and Lindsay Duncan was perhaps the most gripping thing I have ever watched on the box with an extraordinary script and stunning cast – I was hooked from start to finish. Dancing On The Edge undoubtedly has fabulous elements, none less than the extraordinary production values. With such amazing sets and locations, such beautiful costumes and fine photography and once again a great cast I should be dancing on the edge of my seat. But after three episodes I was not. Far from it. It’s not that I hate it either, it has some appeal, but it’s not far from the appeal of Downton Abbey and any other of the huge number of what I brand “heritage” dramas that usually occupy that 9pm slot on a Sunday evening when the roast beef kicks in and The Antiques Roadshow has sent you into a bewildered daze. Here at Atelier L’atest we are currently in full steam ahead mode for our upcoming TV station launch. Latest TV has for some time been creating quality programmes in a way that is quite frankly remarkable. So remarkable that it is shaking things up.
“Channel 8, the button that will bring Brighton and Hove to your TV screen” Detractors of the move towards creating the UK’s first local TV channels are obsessed that those of us in the privileged position of being granted the first licences will not be able to produce quality viewing. These views in the main seem to be coming from the cosy, and dare I say costly, world of the major existing channels. In
that world budgets are astronomical because historically the parts that go to make the whole have always been highly priced. There is little doubt that if we were to follow that model we would be hard pressed to generate any kind of programming at all. We simply will not have the funding to operate in that way or to offer the huge fees that they seem to be happy to pay. On that basis we may be unlikely to lure Jonathan Ross away from ITV or Graham Norton from the BBC. We will not be letting that stand in our way. Clearly the way forward for a local TV station is to abandon the profligate model set by the big guns and to reinvent, to find new and far more economical ways of working with young talent eager to gain experience and established talent tired of the tyranny of the old school and ready to share with a new generation their skills and vision. In the early 1970s, after years of synthesiser “progressive” rock, punk came along and with a few guitars and drums shook up the music world with a raw energy that left the prog rockers out in the cold. I’m not suggesting that we will be making punk TV but we will certainly be striving to make great TV that will shake the establishment and make licence fee payers wonder where all their money has been going. In the next few months you will see Latest TV really stepping up a few gears. I am already in full telly mode and very excited about that. The boss, Bill Smith, has had a clear vision about television for some time and now it is all coming to fruition. Watch this space because very soon you will be wanting to watch Channel 8, the button that will bring Brighton and Hove to your TV screen.

The Stag Company’s administration manager Sam Jackson, 24, from Hollingdean, recently made her TV debut on one of MTV’s biggest shows: Geordie Shore. Scheduled to appear in two exciting episodes of the reality TV show, Sam was personally selected by MTV bosses to appear as a Stag Do expert and was flown to Amsterdam for the filming. During the filming, Sam was required to mentor the Geordie Shore cast and judge them on their ability to manage and organise stag do activities. These stag parties took place in two of Europe’s top party destinations: Amsterdam and Prague. “It was an amazing experience having the opportunity to work with MTV and appear on Geordie Shore,” says Sam. who has been working with The Stag Company for the last five years. “I am a big fan of the show and loved working with the crew and cast.” The episodes aired on MTV last week.

anksy is to my mind one of the UK’s greatest living artists. I don’t care whether he’s seen as a street artist or a serious artist, whether he paints on walls, paper or canvas – it’s the work that counts, and he has, surely again, come up trumps. According to theneedleblog (to whom I am indebted for pretty much all this story) Banksy painted on the “Banksy’s picture is every wall of BBC Television Centre in Central London, bit as important as the the poignant image of a young boy dropping his greatest Alan Yentob Jim’ll Fix It medal into a documentary” drain. Allegedly the BBC sent the workmen in to scrub it away. As theneedleblog says: “All great art speaks and stimulates thought. From Giotto via Manet’s ‘Olympia’ and beyond, Picasso’s ‘Guernica’ to the present day, art has been provocative.” My point is this: Banksy’s picture is every bit as important as the greatest Alan Yentob documentary and indeed theneedleblog is a lot more vociferous on the subject. Protest/decadent art is what the Nazis banned; protest music wasn’t particularly liked by the LBJ government in ’60s America. We mustn’t go down that route. I realise it's more to do with the BBC being ashamed of itself than trying to stifle art but I’ve got a simple message: bring back the Banksy!
he next chapter in my journey through online dating is about gender inequality. For once women have the advantage. All you have to do as a woman is sign up and you’ll be asked out. It’s just like going to a bar; in general women don’t have to get up the courage to approach someone if they’re on the prowl because that’s ‘the man’s job’. And in my experience men don’t actually like to be approached first in reality. I guess it’s the hunter/gatherer instinct... When I first started internet dating I thought it was just like being in a bar, and in many ways it is. I've always thought it must take quite a bit of courage to approach a woman in a public place, so I was polite and courteous to those I didn’t want to engage with. It quickly became a full-time job; I was writing charming, personal, yet firm ‘rejection slips’ whilst juggling lengthy conversations with potential suitors and going on the actual dates. I was getting a bit tired by the whole thing. At one point I actually had to triage dates, with a high (or low) point of three in one day – 1pm, 3pm and 5pm. It got a bit awkward when date one insisted on walking me the hundred yards down the road to the next pub to meet my ‘friend’ aka date two. I know, it sounds disgraceful, but I like to think of it as efficient. I couldn’t get off the wheel because what if the one I ignored was the “It sounds disgraceful, but I one?! Pain, misery and despair! Or, I’d never like to think of it as effcient” have known... Anyway, I was knackered, my work was suffering and all my friends thought I was being an idiot, which, to be fair, I was. That was until I got a new housemate... a young male who stayed in his room all day with the curtains drawn watching Japanese porn and surfing the internet. (Lovely chap BTW.) On one of the rare occasions he actually emerged from his room and engaged in conversation he revealed to me that he was online dating too. As far as I was aware he’d not actually been on a date since we’d been co-habiting. But why? I was flooded with dinner invitations. Was this a gender thing? On asking a few leading questions I quickly established why... His strategy was this: Identify about 20 girls per night that he wanted to sleep with – judged on their profile picture alone; Copy and paste the same (lame) message to each and every girl. At this point his brilliant plan split into two channels of action depending on the response. If the response was favourable (i.e. if there was a response) he would tease them, in an awkward, borderline aggressive and rather opaque style. This generally resulted in an abrupt reaction/rejection at which point he would begin to ‘troll’ them. If he got no response at all... he would ‘troll’ them. Now, obviously he was a member of www.dateadope.com and I’m certain that he’s not typical of male online behaviour, but it did get me thinking about economics... Men make the first move, women have to wade through the responses. Therefore a man would need to make at least ten times as many advances as a woman to get one result. So the copy and paste method made perfect sense. They were treating it as an exercise in probability. I tested the theory by getting a friend over who was on the same site as me and logging in together to see how many messages we’d got from the same guys. Turned out we’d not only had the same messages from, and even the same conversations with, the same men but had actually been on a couple of (the same) dates with several of them! I admonished myself for being naive, logged into my account instantly and deleted every message that made no personal reference to me, which instantly halved my workload. I then encouraged my housemate to pen a personal message to six ladies that took his fancy, only after he’d read their profiles. He had a 50 per cent reply rate and actually got a date! As for me... well, I got a night off that week with a bottle of wine and a copy of How To Lose A Guy In Ten Days.

W
hen Julia Felton rocked into a Winning Women meeting at Stanmer House she was wearing a long leather coat and boots, cowboy style. She stood out from the crowd with “let’s-do-this” attitude. I overheard her talking about horses and business management and wondered what on earth linked the two. I found out that Julia was the author of Unbridled Success – How The Secret Lives Of Horses Can Impact Your Leadership, Teamwork And Communication Skills. When we started chatting, Julia said: “I spent 20 years working in “Horses mirror the London leaving home before 7am and essential qualities coming back after 9pm doing a one hour, 45 minute commute each way. I of leadership: trust, used my business suit as an armour and did not have much of a life. Today authenticity, honesty, I’m covered with horse s***.” When Julia was made redundant intuition...” from her position within a business unit hotel research in London she stopped being two different people and pursued her passion working with horses. She qualified as a Licensed HorseDream practitioner, NLP-coach, riding instructor and became aware that Horse Assisted Coaching existed. Julia is passionate about: “Grab The Reins, Lead Your Life, Lead Your Business.” She wants to help overwhelmed and frustrated business owners. “People should look for new innovative ways and think like Albert Einstein who once said: ‘We cannot solve our problems with the same thinking we used when we created them’.” What is Horse Assisted Coaching? According to Julia it’s a form of experimental learning where clients come and do a range of exercises with the horses in order to get feedback on their teamwork, leadership and communication styles. Rather than taking business people into a classrooms they learn things at the limbic (habitual) level by doing new things. Julia says that horses mirror the essential qualities of leadership: trust, authenticity, honesty, intuition, listening, a willingness of spirit and perseverance. They have no agenda with us and they read body language. They simply reflect our strength of character. Through becoming more self-aware we can then move forward to develop our own particular style of leadership. How do horses help us to become more self-aware? Julia says that by getting continual feedback on how you are showing up in the world you become more self-aware. Horses are honest. If you are not in line with what you ask a horse to do, he is not going to respond. Why should you be more authentic? Julia’s reply is inspiring: “The more authentic you are the more attractive you are to other people. Being true to yourself allows you to radiate a magnetic energy. When everything that you do is on the same frequency, you come across as a real person. For example if you are really desperate to get a client you come across desperate and lose what I call – The Secret Energy of Business™.” Do you know any people who have really inspired you in Brighton? The stand-up comedian considers catching up with old ‘friends’
I
recently received a text from an unknown number saying: “Hello mate, haven’t heard from you in ages, hope you’re well.” This presented me with a conundrum. I didn’t want to be rude and not reply, but I had no idea who this person was. The more intelligent of you will be thinking: “Did you think of the radical strategy of asking who it was that sent you the text?” Of course I did, I’m not an idiot. But often, because people are essentially walking egos, this can sometimes lead to offence. I once replied to a similar text with: “Really sorry, new phone. Who is this?”, and after about a day I received a text saying “ It’s Mark, you p****, I can’t believe you haven’t got my number blah blah.” Now what Mark has done there is sent me a signal that I should immediately sever contact with him. Why on earth anyone would actively seek to spend time with someone as high maintenance as that is beyond me. I very nearly texted his wife to say: “Get your stuff together and leave. Mark is needier than a Labrador puppy.” “I very nearly texted Anyway, the point is that I had received this text and didn’t know his wife to say: ‘Get how to respond. I decided to reply in quite a non-committal way: “Thanks. your stuff together How is everything with you?” and leave’” That was pretty much all I could say without blowing my cover. However, this proved to be an effective strategy as I soon received a reply: “Good mate, thanks, was just thinking about the Croydon office lot.” This narrowed things down. I worked with this person straight out of university. The problem, however, was that at this job, there were far more time thieves than interesting people, and so I became wary of encouraging further communication with someone who might end up wanting to hang out, when it would be far preferable for me to repeatedly smash myself in the face with an iron while watching ITV’s Splash. I had to be careful. So I said: “ I don’t really think about them at all.” Here, I had played a blinder. If this person was one of them, then he would be offended and probably not reply, which would be a win. The reply came “Ha, yes I know, what a bunch of morons.” Result! Here was somebody I could definitely get on with. I immediately said: “Listen, I have no idea who you are as my phone is new and I have lost a lot of numbers. Sorry!” This may have seemed risky, but the truth was, if this person decided not to reply, it was hardly the end of the world. I barely enjoy conversations with my friends, so losing the opportunity to have one with somebody I used to know is hardly a big deal. Nevertheless a reply came: “It’s Dan, mate, no worries, that happens to me too. We should meet up.” This threw up more issues. I don’t want to meet up. The truth is, who really ever wants to meet up with anyone they haven’t seen for a while? The conversations are always horrendous. But I like Dan, he’s a good bloke, a good egg, a nice guy, a top lad, a ledge, whatever you want to call it. So perhaps I should meet up with him. My wife is always telling me that I am becoming increasingly anti social. I reply to the text: “Yes mate, that would be great, let’s sort a time out.” This should be fun, I guess. He replies: “We’ll get some of the lads from Croydon out, only the good ones though.” I reply: “Yes, great, just let me know when and where, and if you want me to contact anyone.” To which he replied: “Oh, contact whoever you think mate. I trust your judgement. As long as you don’t ask Romesh.”

HOT TO GO Andrew Kay talks to Alun and Dawn Sperring, the dynamic couple behind Brighton’s hugely successful Chilli Pickle restaurant and new take-away service Chilli Pickle Canteen

lun and Dawn Sperring arrived in Brighton a few years ago with a clear vision. They wanted to create a very special kind of restaurant, a restaurant that celebrated regional Indian cuisine, and, in particular, street food. They were way ahead of the game with the interest in street food, a foodie fashion that in the last year has really taken off, especially in London, but they were doing it in Brighton’s Lanes way before that, and it’s a theme they continue to use. The original Chilli Pickle restaurant was small, the kitchen smaller still, but it didn’t stop Alun from creating dishes that soon had the town buzzing. When word got out about his oxtail Madras and an amazing crab claw dish, food lovers were beating a path to their door. Out front Dawn was in charge and, as with their passion for regional dishes, she two was championing great beers, continental, Asian and, of course, British. There was also a passion for loose leaf tea, a passion I share, and the varieties were and still are delightful. Their popularity was soon evident with a full h e c ov e n t the cover r diary of bookings, and the dining room and n kitchen were simply no longer big enough to cope. The only thing to do was to expand but in that location it was impossible so new premises had to be found. When news leaked that they were to take over the vast restaurant space at Myhotel the reaction was mixed. Zilli had failed, and Table fared no better despite being popular with some, they simply could not fill the space and make it work. Chilli Pickle was already popular but could it make that giant leap from 48 covers in one sitting to 120? The answer is yes; they now have a massively popular restaurant where they regularly serve 1,500 diners every week and often many more. Alun loves his kitchen, inherited from the Zilli regime, it is massive and brilliantly equipped. Of course he has added specialist equipment as hard to create. So how can they cope on top of the bustling restaurant to offer a new take-away service? The answer lies below ground where they have a huge prep kitchen. By day it is busy with chefs grinding spices, creating batter for the superb dosa pancakes and making ready for the onslaught in the upstairs kitchen for lunch and dinner. But by night the space was quiet. Not for long. Alun and Dawn had been besieged by requests for take-away, but were not happy to provide a service until they were confident that the food would match in quality the food in the restaurant. They now use the downstairs kitchen to service the take-away menu leaving the upstairs kitchen to deal with diners, a brilliant solution and one that makes the most of their space. Having tried it I can vouch for that take-away quality too. I loved the thalis we had (what better way to get a real taste of dishes than a set of fifteen carefully chosen to work together?). And compared to alternatives there is little difference in price from other take-away menus, especially when you see the range of dishes that arrive for the one price. Chilli Pickle may have the look of a massively successful chain with its stunning interiors, but all was achieved by the family pulling together, pooling resources and skills. Dawn’s father did the woodwork and he still helps out on a weekly basis with childcare for their young son Stanley, already a keen fan of his father’s cooking. Despite global recession, the Chilli Pickle is a huge success story with a string of awards, a deeply loyal client base and visitors who are prepared to travel miles to find out more about the hottest restaurant on the curry scene – and beyond. So what’s next for Brighton’s hot business success? Are they seeking those much coveted stars? Alun and Dawn are keen to say that whilst recognition from guides such as Michelin and the AA is special, the most important thing for them is to keep new and old customers coming back and to continue to exceed their expectations “The key to this has always been being consistent in our standards, staying fresh and innovative,” says Alun. “We have never gone out specifically to achieve awards and accolades. That said, winning ‘Best Casual Dining’ at The British Curry Awards last year and being named one of the top 100 restaurants in the UK at The National Restaurant Awards two years in a row were very proud moments.” And how is it working together? “We wanted to create a business where we could be together. We had spent years in Dubai and only saw each other in passing and once a week if we were lucky. Here we have our own areas to look after, Alun in the kitchens and I am out front. It works well, we have a real understanding of what we are trying to achieve. Above all this is about being professional, and that works.” As a regular diner I can vouch for that, great food and great service in lovely surroundings and at a range of prices that make it accessible. Chilli Pickle Canteen is equally attractive, delicious food in your own home. It does beg the question – what will they do next? As long as they maintain such an excellent standard of service here I see no reason to worry, just to wish them the best of luck. I’m a 45 year old woman unaware of any health problems. CL. Assuming that your hair loss is all over and not in patches (such as would be caused by Alopecia), the first thing to rule out would be a low functioning thyroid as this can lead to thinning of the hair on the scalp and the outer section of the eyebrow. Your doctor can run a Thyroid test, so can your nutritional practitioner. If no thyroid problems show up, the next intervention is looking for any nutritional deficiencies. A wellbalanced diet which is plentiful in vitamins and minerals is essential for abundant hair. There are 4.8 million women in the UK who are said to suffer from a condition called CTE, Chronic Telogen Effluvium, which causes constant and persistent hair shedding. Usually between the ages of 18-50 years old, 95 per cent of all hair loss in women can
in our body. When this falls below a certain point hair shedding is the consequence. The reduction in eating red meat is thought to be one of the reasons for these deficiencies, the other is heavy menstrual loss. Having a healthy and varied diet is the start to dealing with this condition, as is taking the right levels of these nutrients in the correct supplement form. Once you have corrected the issue, continuing with a diet high in good quality proteins and vegetables will help prevent it reoccurring: foods such as lentils, beans, organic naturally fermented soy, spinach, tuna, lean beef, dark meat turkey etc. Don’t drink black tea at meal times as tannins in it bind to the minerals and impair absorption of iron. Eat vitamin C rich foods with iron rich foods for better absorption of the iron, e.g broccoli and peppers with the tuna or red meat. an of the moment Jake Bugg has had an incredible year. The 18 year old from Nottingham only released his debut single ‘Trouble Town’ a year ago and since then he’s topped the album charts, bothered the charts with a string of catchy singles, toured with Noel Gallagher and been hailed as everything from the new Bob Dylan to the future of British guitar music. No surprise then that this Brighton Dome gig was a fast, furious sellout, although the sensible ticket price was a welcome nod to younger fans. To put the record straight, Jake Bugg is not the new anyone. The solo guitar style, and his worldly songwriting skills make comparisons with Dylan inevitable, though the insanely catchy lyricism owes as much to Arctic Monkeys. Bugg may be retro, but he is relentlessly modern. Not apparently shaken or stirred by his sudden success, Bugg held the stage admirably, a relatively banter-free zone but all the better for that. Opening with the infectious ‘Fire’, Bugg kept up an intense pace throughout, thrilling a very mixed audience. At times backed by bass and drums, for most of the set Bugg holds the stage alone, with guitar. Spine-tingling highlights included a beautifully raw solo acoustic rendition of ‘Someone Told Me’. The set concluded with a masterclass of infectious singles: ‘Two Fingers’, ‘Taste It’ and ‘Lightning Bolt’. A brilliant talent. Fiona McTernan

This heartening production drew crowds of excited children into the theatre, even during half-term. The severe plot and adult themes may be challenging for under tens and the sentiment perhaps too sweet for some adults, but when played as well as this it all balances out beautifully. Endearing puppetry covered the swift scene changes and Sam the dog almost upstaged the action. The magnificent Oliver Ford Davies excelled as the crusty old man, all the while generously encouraging the very best from his young co-stars, Ewan Harris (William) and William Price (Zach), just as you’d expect from Mister Tom himself. The Acerbic Aussie Air stewardess obscenely slags off all manner of flight attendants and airlines. At times the in-jokes came so thick and fast that it felt like stumbling into an industry after dinner act, with an unhealthy dose of xenophobia. While the first half was an excellent stand-up routine, the second was an overlong, lacklustre, rambling interaction with the audience. Ironically, the best bits were the pre-recorded video slots, confirming that her superior material is best prepared and she should steer clear of the improv. STAGE: ANIMAL MAGIC Wallace & Gromit hit the road and head for Brighton Dome’s Concert Hall with Musical Marvels – an orchestral & animation extravaganza for all the family
W
allace & Gromit came to fame with the Aardman classic A Grand Day Out back in 1989, a whole 24 years ago, and their appeal is as strong today as it was back then. Wallace the wiley inventor is forever getting into a pickle and dragging his companion Gromit the dog along with him. The Aardman method is animated modelling clay but for most of us the characters, voiced by Peter Sallis and Ben Whitehead, are as human as can be. Wallis, resident of Wigan and cheese enthusiast, is like a jolly uncle who is just a little odd. What’s not to like? And a great part of the W&G fun comes form the delightful orchestral scores that echo those Northern roots with brass band themes and illustrate the plots with classic film score devices. Now, following a hugely popular BBC

Prom at the Royal Albert Hall last summer, Wallace & Gromit hit the road with Musical Marvels, a new family show with performances taking place at the Brighton Dome Concert Hall on Saturday 30 March. It’s a fun show with the audience invited behind the scenes as Wallace prepares to perform his Proms commission ‘My Concerto In Eee Lad’. Specially filmed Wallace & Gromit animated scenes reveal the duo’s backstage exploits as the Aurora Orchestra keep the audience entertained with classical favourites. Following the interval there will be a special screening of the multi-award winning Wallace & Gromit film A Matter of Loaf And Death with the soundtrack performed live. MUSIC: MARIKA HACKMAN New singer songwriter talks to Jeff Hemmings
F
ormer Brighton resident Marika Hackman is just about to release a mini-album, That Iron Taste, a work that channels the spirit of the late ’60s, the psychedelic whimsy of Nico for instance, into an altogether darker sound. My stuff is folk at the core, almost medieval folk in a sense, but a bit more dark and moody and abstract,” says the 20 year old who has just finished a tour with Ethan Folks and about to embark on her first headline tour. “My writing process is pretty boring. I sit in my room and play my guitar for hours, and something will click perfectly and that’s the beginning of a song. Then I play it over and over again to get the measure of it before recording a demo on GarageBand where I experiment with harmonies and arrangement, before working with a producer." A fan of old school rock and pop such as Fleetwood Mac, Led Zeppelin and Steely Dam, she's also been immersing herself in the sounds of Alt-J as well as current folk hero Johnny Flynn. “I had a double A-side last year called ‘You Come Down/Mountain Spines’, which was produced by Johnny Flynn. Both those tracks will be on the mini-album. He was interested in doing this; he produces a lot of his own stuff with his bassist, Adam.” An untrained musician, she has nevertheless managed to develop a style all her own: “I’ve been writing songs for a long time; I used to play piano and write songs on that when I was 7 or 8. I started teaching myself guitar when I was about 12, and I knew that if I taught myself I would make the effort, rather than somebody telling me, and then I wouldn't make the effort!” She has, rather inventively, described her sound as: “Folk at the inner core, Kurt Cobain for the outer core, whimsical dark madness for the mantle, and Marika Hackman for the crust”. Hackman, whose dad is Finnish, is well acquainted with Brighton. “I lived here for a year when I did an art foundation, and am planning on moving back... but I’m now living in Devon where my parents live. It’s way cheaper like that, especially when you are on tour all the time. But I love Brighton, it’s an awesome place to live." Things have been developing fast for the singer songwriter, her years of grafting away on her own, learning to play and sing and writing songs, starting to pay off. “We had big concerts at school which is where I first started to perform. But when I left school I kinda waited... it sounds a bit weird... EVENTS: SICK! FESTIVAL Welcome to the first ever SICK! Festival this spring
S
ICK!, the latest international arts festival to come to Brighton, looks at new ways of talking about and dealing with the experience of sickness of all kinds: physical, mental, ethical and spiritual. It uses different art-forms to delve into how our bodies and minds can act against us and against society’s expectation of what is normal. Highlights from the two-week programme include the UK premiere of Dutch performance ‘Eleonora’ in which Jochem Stavenuiter’s mother suffered a stroke and, as a consequence, lost her memory. This insightful performance is about forgetting who you are, and the hope that one day Eleonora will be cured after weekly visits to an Alzheimer’s clinic. In performance and dance piece ‘Parkin’son’, a father and son confront each other on stage, telling the story of their relationship through their two very different bodies: a 62-year-old therapist with no dance experience and a 31-year-old choreographer. In ‘Mental’, artist activist the vacuum cleaner presents an autobiographical performance told through psychiatric records, police intelligence files and corporate injunctions collected through the Data Protection Act, which declare his mental-being. Other events in SICK! Festival include advanced film screenings of Amour, Our Children and Asmma, and the debate ‘Who Says I’m Sick?’ which looks at the way that illness can be seen as a social, rather than physical or medical, condition. The festival is aimed at anyone who has ever been sick, cared for someone who is sick or struggled to find the right words to talk about these difficult issues... surely that is all of us! It may be, in the strictest sense, about facing up to coming out, but Perkins’ protagonist lies about other things too, from her profession to her age. This is set up to be about a woman, just turned 40 facing up to a lot more than simply telling her parents she likes girls. And with that substantial meal on the menu, peppered with a few more plot turns and revelations, it promises to be appealing and entertaining nourishment for the television soul.
