hether it is twirling twelve hoops, dancing with diabolos, or soaring through the air, cuttingedge Canadian circus crew Flip FabriQue brings a truly joyful show to Brighton Dome this month with Catch Me! (Attrape Moi). Fearless and funfilled feats are all in a day’s play for Flip FabriQue, the artistathletes launching themselves into adrenaline filled extreme acrobatics, dramatic turns on a trampoline wall, and inventive parkour – a crowdpleasing spectacle for sure, and a prime example of nouveau cirque. The show’s six young performers are at the top of their game. These are the original members who formed the company five years ago, all circus enthusiasts from an early age. In Catch Me! each is given the chance to show off their skills. They make it look easy, but the amount of work that goes into producing a finished show is phenomenal, equating to around 40 hours practice a week for three months. The six have been friends for 10 years, since they attended the Quebec Circus School together, where the foundations were laid with training that ran into 2530 hours a week. After graduating, they went their separate ways before being brought back together by artistic director Bruno Gagnan who suggested forming a
company of their own. In the meantime, they had individually honed their skills touring with highprofile companies such as Cirque Éloize and Cirque du Soleil. Artistic director Bruno has been a circus performer for 17 years, having started at the age of 12. He has never looked back, touring the world from the age of 18. Acrobatics, clowning and juggling are his specialities. The other members of Flip FabriQue have had similar career trajectories. Catch Me! has been performed more than 400 times in North America and Europe, but this will be the first time the Canadian company has performed in England. This summer Flip FabriQue took the show to Edinburgh International Festival, where it was given five stars by Edinburgh Guide and described as: “One of the most exciting nouveau cirque performances you will ever see… A performance to fill you with wonder and amazement, completely invigorating and totally mesmerising.” Packed full of fun as well as physical feats, this sensational show has plenty for the whole family to enjoy.

verybody in the UK is aware of the current critical problems facing people needing home care, funding is being cut and care staff shortages are a huge problem. have a lovely time when it’s Christmas fair season. Last week it was the New England House Open Studios – which feels like the extended version as it’s over several floors and several days. Like when they have the bigger version of QI or The News Quiz – it’s just the original goodness over more time and space. And before then I had a stall at the Exeter Street Hall oneoff Christmas Fair. The clue is in the name: it’s a Christmas Fair, it’s a Winter Open Studios, so not only are the people coming around looking with an eye not just for what they want, but also for what might suit Auntie Sue down to the ground (isn’t she usually so difficult to buy for?!).

Many years ago a filmmaker called John Armstrong let the camera roll on an Andy Warhol exhibition. He opened by saying – and I may be paraphrasing here – “The lighting’s crap, the camerawork is crap, the sound is crap – but the people are beautiful.” And that’s exactly how I feel about spending time at craft fairs at this time of year. That’s not to say that the wares are ‘crap’, but that the people shine. Those people include the makers, who have brought their creations to market, to share the bespoke and unique qualities of what they have. It’s made with love and care, which passersby pick up on and are drawn to, ultimately inducing them to want to own or gift whatever’s on display. The customers are beautiful too. So many people just stop and chat and share stories and admire the workmanship. They have been tempted out of their warm homes by the idea of getting something for someone else – by generosity. Stamping the crisp cold off of their boots as they rush through the doors, casting an eye around. Elderly people spend an age at each stall, babies are passed around as they grizzle or grab for the bright new shiny and soft things. It’s not about buying, it’s about sharing. So this is why I love Christmas craft fairs. Because they have all of the spirit of the season to be shared with strangers, are where communities gather, and face painting is the norm for anyone under ten – and not unusual in those over. ears ago I decided to tackle that culinary treat of a variety of birds, boned and stuffed one inside the other. It was a labour, I was at it for hours, but the reward at the table that night was worth it, well almost, I think I nodded off before pudding. So when I was offered a preassembled one to try last week, I jumped at the opportunity. It arrived by courier in a large chilled package with ice blocks and it weighed about 1.5 kilos, so there was going to be plenty to go around a large group and plenty of leftovers too as I was soon to find out.
“ As Christmas roasts go it does not get easier than this ” The real joy of a product like this is the ease, not only the fact that you can simply place it in the oven, baste it and rest it. Because it is boned it cooks in no time at all. I followed their timings to the minute and they were perfect. So rather then getting up at the crack of dawn on my fake Christmas day as I remember my mother and grandfather doing, it went in the oven two hours before I wanted to serve it, about 90 minutes cooking and of course 30 minutes resting it. As Christmas roasts go it does not get easier than this. I did of course have a bit of a tinker, I'm that kind of a cook. So to the pan I added a load of topped and tailed, but not skinned, shallots. These added great flavour to my finished gravy and great colour too as the skins both flavour and tint that large, and I mean large, slosh of wine that I added to the pan after the initial 30 minutes roasting time. You do need to protect the birds with a tent of foil but the strips of pancetta keep it fairly moist and the steam from the wine helps with that too. After roasting the meat gets set aside to relax and the pan deglazed with some decent stock. I like a bit of body to my gravy so I used a little slaked cornflour to thicken, not much, and I squeezed the flesh out of the shallots into the jus to big it up. My Five Bird Roast came from James Alexander Fine Foods, the free range turkey sourced from Cocklakes Farm. Pheasant, wild wood pigeon and mallard are sourced from local estates within Cumbria and the free range chicken sourced near Penrith. I heartily recommend this delicious and easily dealt with time saving delight. And as a bonus, the right leftovers for great sandwiches! www.jamesalexanderfoods.co.uk

ticking with the idea of visiting the finalists in the Brighton and Hove Food and drink Festival Awards, restaurant category, it was time to go to Terre á Terre and what a time as their Christmas menu is always a treat. This year is no exception and at £33 a head it has to be seen as exceptional value for food of this quality and skill. I chose a favourite vegetarian friend to join me Mrs G de V. I always enjoy dining with her because she is the least preachy veggie I have ever met and she can get as excited as I can when tasting great food. This was going to be an excitable feast. We started with a couple of cocktails, their take on a champagne cocktail is a bitter sweet confection that fizzes and packs a kick, highly recommended. We also had the savoury seeds and wasabi nuts too, well one has to surely?
“ A bitter sweet confection that fizzes and packs a kick ” Comfortable with the fact that we would happily share everything that we chose we selected the two most appealing dishes of the three offered at each stage. It was not easy as all three sounded superb but experience has told me that the food at T á T is very generous – and very filling. So our journey, very "Strictly", continued thus: first an amazing dish wittily called KFC with the c standing in this case for cauliflower. This was Korean fried cauliflower with sweet and sour sesame, onigiri rice, soused shiso dikon pickled mirin ginger jelly and green leaf salt dried chips finished with chestnut purée. There's no shortening a T á T description so I give you them verbatim. My god it was good, really packed with excitement and surprises, a little heat a little crisp a little cool… The Mince Pie and Chantilly Face was a hot Twineham Grange cheese and mustard seed pastry mince pie filled with mushroom marinade mincemeats served with hot porcini custard, quince LATEST TV | VIRGIN MEDIA 159 | FREEVIEW CHANNEL 7
pepper jelly, sherry and spice pickled walnut and chantilly salt bean curds. I loved the upsidedownpuddingfirstwhimsy of the dish and for once enjoyed a pickled walnut which was a revelation. The pie was great and the porcini custard quite brilliant. On then to our main courses although I was already fearful that I would never make it to dessert. Chimchimney Soufflé and Sooty Tops came as a Brighton Blue double baked soufflé wrapped in pickle powder butter parchment, loaded with charmer cheese cream, garlic oil and thyme baked Jerusalem artichokes. Served with salt toffee apple tattie pave pie, sage and onion, scrumpy beet brew neeps, pink kraut and toasted buckwheat hazel oat cob crunch. Yes I know, what a mouthful and yes WHAT a mouthful, truly spectacularly delicious, even the Jerusalem artichokes of which I am fearful. Mrs G de V made short work of them. After a little debate our final choice was the Chai Fawkes, a brilliant Chestnut Rosti bomb with salt plum and camembert molten middle, rolled in gunpowder beet tea embers, served with heritage and rainbow chard flames, ragout of hoppy sticky cinder salsify and root logs, juniper soused bulbs and boktops. Finished with silken mushroom mallow, black garlic aioli and amber crimson salts. Phew, a real whizz bang of a dish that arrived looking just like a flaming bonfire. We shared everything of course and this time I really loved the salsify and the molten cheese centre to the rosti. Figgy pudding sticky with rumtopf fruits aged with spice spirits and barrel brews was too good to miss, despite the two of us being replete. It was served with a brilliant tangerine and Frangelico ice, smugglers clove custard and poached cranberries and great as it was I still could not do it justice and a little was sadly, no tragically, left behind. Terre á Terre, what can one say, brilliant every time, culinary genius, perfect service, relaxed… get there and make the most of this seasonal treat. righton is blessed with a wide range of theatre venues, from the large scale commercial enterprises that offer us a programme of national and international theatre and entertainment, through the smaller 'fringe' venues who stage local and visiting productions, to the smaller but equally vital amateur venues who in our experience stage productions that can easily be judged against the professional companies that visit. So where does the New Venture Theatre sit amongst all this? It is one of the most adventurous producing houses in town, never fearful of tackling some of the most difficult works of drama from the last century and invariably pulling those productions off to great acclaim. The balance of people involved ranges from aspiring actors to working professionals and this gives them real energy and edge, and the venue has a superb atmosphere that draws audiences back again and again. And true to form they are once again going in deep with Harold Pinter's Homecoming. Challenging, disturbing, tantalisingly enigmatic and savagely funny, Homecoming represents Harold Pinter at the height of his considerable powers. "There are no hard distinctions between what is real and what is unreal, nor between what is true and what is false." Harold Pinter Teddy, a professor of

Manipulation, emotional blackmail, seduction and jealousy follow as the characters engage in their chosen form of psychological warfare, with Ruth as the focus of the family's struggle for supremacy. Pinter examines the family relationships with a ruthless objectivity, devoid of any moral agenda. ent is 20 years old and this revival is a timely reminder of how poignant it was and in part still is. This cast of young performers, mainly without professional experience, deliver the story with remarkable skill and energy, and apart from some technical sound problems this is as good as any professional production of the show that I have ever seen. Mykal Rand, who performed in the original West End production, has directed and also plays the part of Tom Collins. He brings to the whole a professionalism that one might not have expected and also a raw energy that is captivating too. Archie Crane plays Roger with a real sense of tragedy, a broken soul with a golden voice. Edd Berridge delivers geeky survivor Mark with confidence and skill, he is utterly believable in the role. Inti Conde has a stunning voice that adds a sinister edge to his role as the exploiting yuppy Benjamin and Lara Sweeney’s Mimi is brittle and fascinating and she gives the part real depth. Ethan Creek gives the role of Angel a confidence and vulnerability that one might not expect from someone so young. 016 has been a good year for Latest TV. Now in our third year of broadcasting, we've got the hang of this TV lark, and looking forward to making new programmes, and showing ones we've made earlier! This week, we'll be showing the series of Young Start Up Talent, like a Dragon's Den entered into by young entrepreneurs keen to breathe life into their inspired ideas. Founded by Matt Turner Jody Deakins and Lorraine Nugent, we follow the contestants and see what it takes to win the £50K prize and launch their new business. Making programmes is one of the best things about working in TV. You get to be really nosey, go behind the scenes and find Leonard Goldman out things you just wouldn't know otherwise. When filming the 150th anniversary of the West Pier, we uncovered some highs and lows, using drone footage over the wreckage, and finding some deep sea diving footage. Interviewing local poet and author Workman Leonard Goldman telling us about playing on the stockbroker machines on the pier was also a real highlight. Filming the construction of the BAi360 has also been eyeopening. And we have fantastic closeups of Owl Sculpture the engineering: We love to take things fast and slow at Latest TV, and our timelapse and slowmotion footage can make you quite giddy. The video we produced of a charity chainsaw sculpture atop a Facelift vehicle has had thousands of views and multiple shares on social media.

ilm fans should attend next month’s unique event at the Latest Music Bar: The Space. There’s a great lineup, discussing their careers and achievements, director Mike Hodges and producer Tony Garnett. Hodges is best known for the classic films Flash Gordon and Get Carter. Garnett is behind the highly popular Kes and the groundbreaking television drama Cathy Come Home. Wayne Imms told us more: “I conceived The Space back in 2006.
“ It’ll be fascinating to hear about the filmmakers’ work ” It’s been an ongoing challenge, but we’ve had such a consistently superb range of guests in an intimate environment. My highlights include comedians Frank Skinner and Barry Cryer, Glastonbury Festival’s Michael Eavis and editor Terry Rawlings (Alien, Blade Runner), who’s now a good friend.” “Partly due to Brighton Film School being our sponsor, most are filmrelated, including our next two, of course. Many people love 1980’s camp Flash Gordon, directed by Mike Hodges with memorable music by Queen. He’ll discuss making the film and perhaps working with famous bearded actors Brian Blessed and Topol. We’ll hear him on his other classic, Get Carter. Starring Michael Caine, it’s one of the most popular and grittiest British films of all time. While writing this, I’m thinking that I should see it again; it’s been a long time and it’d be fab to watch again.” “Kes is a film that, despite it coming out in 1969, the year I was born, I only saw fairly recently. Released two years before Get Carter, it’s also one of the most popular British films ever. It’ll be interesting to hear from producer Tony Garnett on how it was made.
