ny regular readers will know that I'm a culture geek: imbibing music, film, books, games, opera, theatre and any other art forms that I can. One form I'd like to proselytise is dance. I grew up as a music lover mainly and think that this is the main art form to consume and discuss for a lot of people, particularly in Brighton. Music might always be central to my cultural life, but after going to hundreds of traditionally set up gigs I wanted to try new things, which is why I've been drawn more to opera and dance in the last few years. With choreographers like Hofesh Shechter or Richard Alston, the soundtrack is a crucial part of the overall show. Shechter's 'barbarians' for example was a loud sensorial assault with electronic music redolent of Arca, whereas Alston's 'Rejoice in the Lamb' featured a glorious cantata by Benjamin Britten. Apologies to regular readers who might get bored of me going on about the variety in the arts to explore but I shall probably keep on about it for a long time hence. The Candoco Dance Company at the Dome this Friday could well be a perfect first dance show to try out if you are as yet unconverted. CDC are the world's leading contemporary dance company of disabled and nondisabled performers and this show is a double bill. One piece explores hidden prejudices and is presented by a visual artist (Hetain Patel) while the other features movements described as “sinuous and expressive”, large chunks of fabric and a prominent score (Sadler's Wells' New Wave Artist Alexander Whitley). The reviews have been good (including our own Enna Andrews who praised their previous show for being compelling and thought provoking), and the tickets are very aﬀordable.

Your head chef Dave has a very inventive and rather unique approach to cooking: do you give him free rein or do you ever have to rein him in? I encourage creative development within all the staﬀ and have worked with and known Dave for a long time now. I feel that he fully understands my vision and he knows how to utilise his skills to achieve this.

The Salt Room Afternoon Tea, which we are super excited about. Dave, Laura and myself have been working to bring our own take to this classic British oﬀering. We have also worked hard at producing an aﬀordable and quick lunch and pre theatre menu along with our Sunday Sharing Roasts which is proving popular.

Owning two successful restaurants must be very demanding but surely with that success comes further ambition, what next? We are a young and ambitious group and have lots of ideas... time will tell and I’m sure you will be one of the first to know very soon.

I had thought that pastry chefs had become a thing of the past but at The Salt Room you have Laura and her skill with desserts has certainly been more than noticed. Laura has proven that pastry chefs are not a thing of the past and has become a huge asset to the business. In fact, the Taste of the Pier dessert has proven to be a bigger success than we ever thought and has been the most photographed and Instagrammed dish that we have had.

You have a new menu this month, where does the inspiration come from? Is it a collaboration between you and your chefs? I wanted to broaden the menu and put some old classics and some firm favourites from previous menus that our customers kept asking for. It is 100% a collaboration between myself and the chefs which is a

Your first venture here was The Coal Shed restaurant, how do the two venues work together? Very well, they are like ying and yang and compliment each other very well, with one focusing on meat and the other on fish. The Salt Room has certainly played a big part in raising the city's reputation as a gastronomic destination. Do you have a good relationship with the city's other fine restaurants? I feel that we do and yes we are very close with a lot of the owners and chefs. We are always exchanging ideas and advice and there is a strong community in Brighton, and I am sure this is part of the reason as to why it has become a gastronomic destination.

You are now launching a new afternoon tea menu, no doubt it will carry your signature quirkiness. What might we expect? t has always amazed me how few fish and seafood restaurants that we have here in this beautiful city by the sea. I was equally amazed by the continued failure of the restaurant site in the eastern corner of the Hilton Brighton Metropole with its great location, terrace and sea views. For years it was something of an accident black spot when it came to dining – then along comes The Salt Room. You will, I hope, have read my interview on the left with Raz, the man behind The Salt Room which is celebrating its second anniversary, but the proof as they say is in the pudding…. Well before we get to that pudding let's get back to beginnings, by which I mean starters, and what starters. I had been invited along to sample a selection of dishes from their new menu, always a treat and this was one hell of a treat! I was joined by my dear friend Ms L, some of you will know her from my TV series Cook It! Yes her, a seasoned food lover and expert home cook.

the fact that on the slab it is pug ugly! But my how good it tastes. Dave had cooked it to perfection and served it with brilliantly tender waterbathed octopus and sea vegetables. I looked on with such envy, but Ms L knows that sharing is caring and I too was able to indulge in her fine plate of food. I had line caught sea bass, again beautifully cooked. It came with a chicken jus, not as crazy as it might sound. The potato puree was about 70% butter I reckoned, the puree of broccoli a real surprise and to crown it all crabglazed roscoﬀ onions filled with white crab meat. Now those onions… bring them on, I want them more and more. Laura is the pastry chef at The Salt Room and has really made her presence felt with her extraordinary Taste of the Pier sharing dessert. We both sat in anticipation, and quite rightly so. First out was her award winning chocolate dessert that included a cob nut "Nutella" style mousse, home made aerated chocolate, macaron, waﬄe ice cream and crumb and delicious dehydrated milk crisps. It was exemplary, rich but not heavy. She went on to stun us with a new apple fritter dessert that included an apple granita, compressed granny smiths, apple jelly… oh yes, the fritters, what a treat. We were modest in our drinking sharing a bottle of house white and we sat back, replete, happy, and ready to relax. Then Dave the head chef and Laura the pastry chef appeared and suggested that we had a break before they served afternoon tea. I gasped in, well fear as much as anything. How could I possibly eat any more. They said that they understood but really wanted me to see their new creation, and

First out was a salt cod croquette served with taramasalata. The salt cod was perfection, not salty at all, thank heavens, so many cooks fail to soak it for long enough. The taramasalata was divine, perfectly balanced flavours if slightly scary in colour, but it did look great alongside the golden croquette. Next an oyster, a jewel of an oyster with a delicate verjus dressing. Dave the chef sources these from a small supplier in Ireland and I declare them to be amongst the finest I have ever eaten – and I have eaten a lot. This was followed by an exemplary dish of raw sea bream. So fresh, clean and light, the accompanying finely sliced fennel and radish and chilli adding to the impact without overwhelming the delicate fish. It was sharp, creamy, crisp, spicy and ultimately quite the best raw fish dish I have ever tasted. Ms L was equally impressed by this dish and that was simply the start. what a creation it is. We declined the oﬀer of G&T tea or Tattinger tea and settled on Earl Grey, and when it arrived we look on in wonder. Afternoon tea is nice but seldom a work of true gastronomy. Not any more! This was spectacular and despite being full I had to try the oyster Rockefeller, crab and salmon scotch egg and the witty steak tartare take on a jam sandwich. Ms L had the truﬄed cheese toasty and made light work of a perfect scone with home made jam and home made clotted cream. I struggled down a wonderful rhubarb and custard macaron and sat back feeling rather ashamed of myself, not for eating too much but for leaving food untasted! The Salt Room is impressive on every level, luxurious, stylish, brilliantly located, immaculate service and of course divine food. tatistically, pretty much everyone has been or knows someone who has been eﬀected by bullying in their life. I say ‘statistically’ – really, I don’t know the stats but the way it seems to me is that anyone who ever went to school would’ve witnessed bullying and that’s most of the people in this country. It also happens in the work place – and the tricky thing with both school and work is that it’s a hierarchical environment and no one wants to think that they can’t cope on their own. Which can lead to situations spiralling as the bullied struggles to manage, and asking for help from management or teachers is frequently seen as the last, rather than the first, resort. One of the worst culprits of stealth bullying is the dreaded ‘banter’, or ‘bants’. It’s a horrible word that declares from the start that if you can’t take the heat, then you simply have no sense of humour. Evil. You can have a source of fun without being a source of fun. I’ve had experience from both sides of the bullying coin – although it wasn’t my plan. I was picked on at school (fine with the heightrelated name calling, not so good on being chased around school being threatened with a deodorant aerosol) – and I picked on at school. Although I didn’t realise it until I was called out on my behaviour. There used to be a group of about half a dozen kids that would hang out at the computer lab during break time. Some were older than me, a couple were younger. The younger ones were a couple of bright computer whizz boys, and I was usually the only girl. I thought I got on well with all of them, until one day one of the younger kids told me that I was bullying him. I was aghast. I felt terrible, and immediately apologised and promised to keep my distance. I checked with his pal – with whom I spoke in exactly the same way – if I was bullying him too, but he said he was perfectly happy with how we were and he couldn’t see the problem. But there was a problem. And things were better after I kept my distance from the first boy. I checked – it wasn’t just my impression – they were better. That was how I stopped being bullied at school – I asked them to stop. They didn’t realise they were doing it either. I’m not saying that everyone’s lovely deep down. Some people are simply vicious. Just believe someone if they tell you you’re a bully, even if you never meant to be.

Victoria Nangle talked to her before the new date was announced. I very much like the idea of The Calman Before The Storm – challenging assumptions about you. You were very clear on Radio 4 not to be drawn out on your stance on the Scottish referendum in the run up to it. Why talk about your politics now? I’m not talking about my politics as such, more about a holistic sense of what I want the world to be like. Negative rhetoric seems to be the norm just now and I’m a woman who wants kindness and

understanding to come to the fore again. The show isn’t a personal manifesto about a particular party or policy. I’m reading your book at the moment. Thank you for it. Why do you think there has been a rise in awareness of mental health and selfcare in more recent times? I think that the internet allows people to post their thoughts and feelings about mental health in an accessible way. I would also like to believe that, in general, society is slightly more open to listening to people’s stories and perhaps having some empathy with them. You mention that you feel you have collected many labels – lesbian, Scottish, female, BBC Radio 4, mental health comedian – some of which clearly

tessellate. Could it be that in trying to pigeonhole you your describers have left you with the broadest description – covering so many things? It’s not unusual to collect a number of labels. It’s a way for people to find you if nothing else! It’s no diﬀerent to people listening to a half hour comedy show on the radio and thinking

What are the most frequent incorrect assumptions you find that you make about other people? I genuinely try not to judge people, but if I meet someone who genuinely thinks Donald Trump is the right man to be President of the United States I would struggle to enjoy their company.

I don’t have a problem with being labelled as one thing or another, but I enjoy playing with expectations that audiences might have. Is there any extra description that you would like to add to your list of labels that has previously been left off? Dancer. I’m a great dancer. I’m not really but I’d like to be. I’m starting a campaign to get me on Strictly next year. Then I can learn to dance. What are the most frequent incorrect assumptions people make about you? People think I’m more confident than I actually am because of the job that I do. I’m actually quite a shy person and people can be surprised after a show if I’m standing at the bar that I’m quite nervous about meeting people. I am confident on stage. Off stage is a bit different.

What are your plans for the next 12 months? Touring until June, writing and recording another solo series for Radio 4, my sitcom will be on the wireless in the spring, hopefully writing another book, pitching TV projects, being on News Quiz and other shows. Lots. If you had the month oﬀ, an unlimited budget for that entire month, and a super power – just for the month – what would you do? (You get to choose the superpower). I’d like the power of teleportation then I’d visit all of the places in the world I’ve never been. What present would you most like to give to your wife and why? We’ve just moved house so I’d like to give her the gift of half a house. Which is what I’ve got her. I hope she likes it. She’d better. Financially we are now tied together until death. What’s your favourite memory/story of Brighton? I spent an evening in a bar with my friend Gavin. It was mostly full of burly men doing karaoke. They were very nice to me. am sure I am not alone in this, but until a weekend ago I had never been to a Butlins, or any kind of holiday camp for that matter. But when the opportunity came up to join a group of friends at an adult only ‘80s music weekender we all thought “why not?”. Why not indeed. It was Bognor Regis, so close, it was inexpensive so a cheap weekend away, and the line up was full of the pop icons of my early adult years: Paul Young, Hazel Dean, Sonia, Katrina and, headlining, Jason Donovan. I admit to having danced my socks off to most of the lineup in an assortment of gay bars and clubs across the south east in my early 20s and beyond, well perhaps not Jason, but in those days he was on the gay scene persona non grata, an unfortunate situation that led to a court case and the eventual demise of a much loved magazine. I had no idea what to expect but I was in for a real treat. Okay, there were things that I thought could be better, the range of food options was pretty limited, not bad, just limited and there was a definite lack of healthy options or ethnic foods for that matter, that is if you discount pizzas and a token chicken tikka massala. I ate a lot of chips to be honest, and as a treat a lot of chips went down very well. The music was fun, some better than others. Jason Donovan had the audience whipped up pretty fast and delivered all his hits, Katrina was okay, but limited by her lack of hits and Hazel Dean was passable, which was disappointing. Paul Young's voice is not what it was but his set was entertaining enough but it was Sonia who won our hearts with a fabulous set of hits delivered with energy and sincerity, and her voice is as good as ever. The real winning factor though was the atmosphere, a true sense of fun, no aggression, affable drunkenness and good manners all around. The staff are immaculate and their smiles seem genuine rather that forced and nothing seems to be too much trouble. The signage and maps are pretty useless though and navigating the huge site was tough. And their app is pretty damned useless and needs work. > Embracing the vivacity of loudness

was born loud. I came into the world noisy and nothing’s changed. But after twenty years of being told to be quiet, being shot sideways glances, and hearing “I just followed your voice” more times in two decades than most people get in an entire lifetime, I’ve had to come to terms with the fact that my voice has more frequent flyer miles than anyone else’s. Albeit entirely unintentionally, I seem to have created a name for myself as being loud. Somewhere between baby and child I missed the ‘quiet down’ memo and instead made a seamless transition from noisy newborn to noisy schoolboy. So when the baton was passed to my school teachers to contend with my voice I was exposed to a whole new range of attempts to dampen me down. I think the present volume and quantity of my voice serves as evidence for their eﬀectiveness.

“ Somewhere between baby and child I missed the ‘quiet down’ memo ” Speaking from experience let me oﬀer some advice to teachers who are struggling with their own classroom loudmouths. Do not pretend as if they are the only ones talking when clearly they were not talking to themselves. At least be equal with your unfair punishment. And stop homing in on them amongst a classroom of talking children just because it’s their voice you happen to hear rising above the chatter. That’s vocal chord discrimination! Just to set the record straight being loud is brilliant. Undeniably the guy who talks on his phone the entire bus journey is obnoxious, but viewing the topic from another perspective there’s an unquestionable vivacity to being loud. There’s an undeniable energy around loud people, an enthusiasm and an unfiltered zest for life, an intensity and a passion that I feel is too often labelled as excessive or overbearing. I can only speak for myself when I say my loudness comes from a place of excitement, but give a loud person half a chance and no doubt they’ll prove their voice comes from somewhere just as positive. Despite the relentless school day scoldings of the past, and the ‘indoor voice’ reminders of the present, I wouldn’t change my loudness for the world. It makes me who I am and I love it. As with any trait you are made to feel self conscious about, take it and make it your own. Fit it into your armour and wear it proudly. I am loud. I’d bet I’m louder than you. I am Loudmouth Louis. f you are of a certain age you might well remember televised versions of the Whitehall Farces, a feast of doorslamming, trouser dropping comedy farces created by Ray Cooney. Ray Cooney is celebrating both his eighty fifth birthday and seventy years in showbiz in 2017 and, working with producer Tom O’Connell, launching a brand new season of Ray’s comedies The first production will be an updated version of his Olivier Award winning Out Of Order, which heads to Brighton next month! Cooney’s credits include Run For Your Wife, Funny Money and Two Into One, Caught in the Net and It Runs in the Family. Out Of Order was first produced regionally in 1980, under the original title Whose Wife is it Anyway, with Cooney playing ‘George Pigden’. The show was subsequently produced in the West End in 1990 starring Donald Sinden, Sandra Dickinson and Michael Williams, with Cooney directing. When Tory Junior Minister Richard Willey tries to spend the evening with Jane, one of the Opposition’s secretaries, in the Westminster Hotel, things don’t exactly go according to plan starting with the discovery of a body trapped in the hotel’s only unreliable sash window. Enlisting the help of his hapless private secretary George Pigden, Willey’s sticky situation goes from bad to worse and with the arrival of Jane’s distraught young

husband and with the addition of an unscrupulous waiter, Mrs Willey and Nurse Foster things really come to a head! Ray Cooney said “Having directed my Olivier Award winning play in London and all over the world, and hearing all that wonderful raucous laughter from audiences, it has become one of my favourite plays. I've updated it to present day and, fortunately, the basic premise of a philandering politician is as likely today as it was when the play was originally written!”. pening the start of his ‘Trelogy’ tour, playing three awardnominated shows on three consecutive evenings in each venue of the tour – with a supporting set from Acaster himself before the billed show – was a treat for Acaster fans and the casual comedygoer alike. Mixing mischief with makebelieve, confidence with underdog, sparring gently with his audience in the warmup – there’s a reason Acaster is so respected amongst his comedy peers. Acaster’s physical comedy is something of an extra pleasant surprise, allowing him to not only draw us in to the alternative and deeply entertaining world he inhabits verbally, but with his entire body at times. A gentle but thoroughly nourishing night of comedy from a skilled entertainer – teasing us at the very end with easter egg promises of treats to come in the forthcoming nights’ shows. Delightful.
