COCKTALES
Dark nights and brushed cotton
Beer in cocktails
I
love it when Autumn and Winter arrive. They seem to turn up like a pair of kids just back from school, a muddle of limbs and entanglements, both clammering for attention and easy to muddle up, but equally distinct and with their own cheeky elements. One of my earliest bits of being selfaware was knowing that although my bedtime didn’t change yearround, I would go to bath and bed with a lot less hassle in the cooler months. Obviously one part of this was that it was just cold – and bed clothes are a lot more appealing when it’s chilly. The second was that going to sleep in the dark made a heck of a lot more sense than going to sleep while the sun was still in the sky. This time of year moves into what the Scandis call ‘hygge’, which is defined as; “A quality of cosiness and comfortable conviviality that engenders a feeling of contentment or well being.” Hot water bottles move into rotation, bed socks turn up, brushed cotton pyjamas become the height of luxury, and real fires show real competition with smart phones for capturing hypnotised gazes. Nesting sets in, and I tell myself that the carbs I eat the rest of the year round are now alright as they keep me warm with the likes of homemade cottage pie and roast dinners. And having pigs in blankets for dinner is alright so long as I have a veg with them too. Hurrah for party food in supermarkets! As much as living by the coast allows me to celebrate the summertime, I love witnessing the sea churn in the storms, the rain coming down in sheets like a chilled monsoon, and shingle pelting onto Kingsway – all allow me to watch the marvellous seasons’ change. And I wouldn’t have it any other way.

I
was sat in a bar the other day sipping on a refreshing watermelon wheat beer when I realised that attitudes towards my malty fermented friend have changed in recent years. My epiphany was simple, for better or worse the conceptual space between beer, spirits and cocktails seems to be closing. If you walked into an establishment ten years ago and ordered a tequila beer, a peanut butter ale or an IPA Pina colada you would probably be met with some trepidation, and that’s putting it politely. While adventurous craft beers with names such as ‘Death by Coconut’ are extremely popular, they’re a topic for a different time. I think the more interesting concept is beer as an actual cocktail ingredient, where that idea came from and the rich history behind it. In a sense beer cocktails rose to popularity in the same way that a lot of other cocktails have. Some incredibly expensive bar somewhere came up with a high concept cocktail that involved beer, this drink garnered a lot of attention and soon after everyone including your local Lola Lo’s has replicated it (and they have). In a lot of ways this kind of life cycle of trends is not dissimilar to the way high fashion trickles down from the catwalk to Primark. Interestingly though, the first recorded example of beer actually being used in a cocktail was from 1695, before the term ‘cocktail’ was even coined. It was mentioned by playwright William Congreve in his restoration comedy Love For Love: "Thus we live at sea; eat biscuit, and drink flip", a “flip” being a mixed drink comprised of beer, rum, and sugar, heated with a redhot iron. The iron caused the drink to froth, and this frothing (or "flipping") engendered the name. Fast forward to the writing of the first influential bar guide (Jerry Thomas’s 1862 How to Mix Drinks) and the recipe is there, but with no beer. This says to me that had Mr Thomas been more of a traditionalist, beer would have never been robbed of its rightful and early status as a cocktail ingredient and we could have enjoyed 100 years of beery boozy beverages.

MORE! Fagin’s Twist is the marvellous show from hip hop dance company Avant Garde Dance Company. Its artistic director Tony Adigun, speaks with Victoria Nangle What particularly attracted you to Dickens' Oliver Twist as a tale to lend itself to contemporary hip hop dance? At first the appeal was the idea of telling a well known story. Then came the need to bring something fresh and innovative to the stage. A new version of a story you thought you knew. There was a constant tug of war between respecting the old but wanting to usher in the new. It is appositely relevant to tell a tale of Dickensian poverty in the current times of change. Can you explain how this is reflected in the performance? Our story concentrates on five of the main characters – Fagin, Oliver, Bill, Nancy and Artful Dodger – and their want for more... be it wealth, love or trust. I think that is what is relevant and is something that is somewhat a constant through changing times. I try to connect with the basic instincts we have as humans in order to connect and evolve. I’m a fan of the underdog and I’m

continuously trying to rally people who aren’t as confident to go for that ‘Disney Dream’ – I think this story carries that same optimism. Your Fagin has been created in a form that sheds a light of benevolence in his behaviour – what was behind your decision to do this? I started with the original story and wasn’t satisfied. In Fagin, I saw a character, a villain who in many ways was misunderstood. People loved him and people hated him, and this was why I chose to base the show around him. Was he bad? Was he good? I think the jury may still be out on that one but he definitely offered so much as a character to explore.
“ Trying to rally people who aren’t as
confident to go for that ‘Disney Dream’ ”
You also, provocatively, cast a woman to play Oliver. This feels inkeeping with British theatre history of 'principal boys' being played by women and Shakespeare's crossdressing. What were your motives? To be honest, it’s not really a conscious political statement. For me the right performer is the right performer no matter what. Sometimes portraying a character is more about taking on their demeanour and their aura. If they have that then they are in! ANDREW KAY The best of chefs
Señor Buddha
S
o the Brighton and Hove Food and Drink Awards are over for another year and the awards ceremony was as usual a busy and friendly event where the rivalry was good hearted and the who food industry joined together in celebrating the city’s status as the UK’s most exciting gastronomic destination. For me the highlight had to be the awards for best chef and young chef of the year, the two categories that I had the privilege of chairing the judging panel. And after that judging I was asked to sum up my thoughts on all of the competitors, so here they are. The chef of the year award was given to – Michael Bremner from 64 Degrees. Michael is, unsurprisingly, a chef cooking at the top of the game, but probably not his top as we are never surprised by the invention that he employs in creating exciting new dishes. And on this occasion it was that combination of classic skill, modern techniques and pure invention that really shone. Highly commended was Steven Edwards from Etch. Steven is a confident and precise chef whose seemingly simple dishes are actually the culmination of talent and experience – and that manifests itself in food that is in fact in its construction complex – but simply delicious. Also highly commended was Duncan Ray from The Little Fish. Duncan’s cooking is based on classic ideas and combinations that he takes to the next level, precise cooking, clean flavours and expert seasoning made his dish a real delight that we kept returning to. Our Young Chef of the year is George Boarer from Etch. Watching George work in the kitchen was fascinating – focused and clean, his process was a fine example of the intelligent care that a modern chef needs to make it in the competitive arena of modern cuisine. We all agreed that this

Coggings & Co was a very fine dish that respected and showed partridge at its best. Highly commended was George Ousley from Isaac At. George created a dish that we loved and tackled the cooking of oysters, a route that could easily go wrong but was actually a triumph. It was a brave and stylish dish that we really admired – and finished. Also highly commended was Jackson Heron from 64 Degrees. Jackson cooked partridge and certainly got it right, but he also showed us that he is a chef who, whilst working at 64 Degrees has learned a great deal but is also developing his own style of dish rather then simply copying his employer. These young chefs are the names to look out for in the coming years and we all felt that they had the makings of becoming culinary stars.

JON RICHARDSON Jon Richardson discusses fatherhood, Twitterstalking and shingles ahead of taking his new show Old Man to Brighton Dome.
T
he standup Jon Richardson is chatting from a rather unusual location. He reveals that, “I’m currently in the Aldi car park in Clevedon.” Who said that the life of a comedian isn’t nonstop glamour? Still, Jon admits that being on a nationwide tour in places such as Clevedon with his new show, Old Man, is a blessed relief from his fullon domestic life. He is a very proud new father – but things have been understandably frantic at home.
Universal Pictures (UK), says that, “I’m determined not to talk about my baby in a way that’s alienating. “But it’s been such a big change in my life that I can’t not talk about it. It’s also nice to have something new to stress about. I can really get my teeth into this stress!” Jon, who is as warm and witty in person as he is on stage, is still appealingly humble about his role as a standup. “I can’t believe I get to do this job! As I get older, I’ve got more and more to talk
“ Our baby is only two months old, so
it’s obviously the perfect time for me to be leaving home for several weeks! ”
Jon laughs that, “Gigs have become very cathartic for me, as things are so hectic at home. Gigs are now the equivalent of going to the pub or the cinema! “Our baby is only two months old, so it’s obviously the perfect time for me to be leaving home for several weeks! It has to be said, I’m not terribly popular at home. But I’m assuming that by the time I get back home, my daughter will be toilettrained, capable of dressing herself and able to drive!” One of Jon’s main worries is that his daughter will grow up resembling him. “What I’m dreading is raising her to be like me. If I hear her saying, ‘I can’t eat that chip because it’s touched those baked beans’, I’ll know she got too much of me in her!” Jon doesn’t want his observations about the impact his new baby daughter has had on his life to put people off. The comic, who has put out two live successful standup DVDs, Funny Magnet in 2012 and Nidiot in 2014, both of which are released through
about and I have more and more confidence. “I love the privilege of looking back on my life every three years, turning it into a comedy show and sharing it with an audience. It’s incredibly cathartic. It’s a way of converting the difficult elements of life into comedy. None of us know what’s going on at the moment, so to be able to laugh at it in unity for two hours is absolutely great.” Since last touring the country, Jon has watched on as the UK voted to leave the EU and witnessed the inexorable rise of Donald Trump to the US Presidency. All of this prompts one key question: Why does it seem that no one else alive can correctly load a dishwasher? As well as this pressing matter, Jon will be ranging over an array of other comic topics, including stress, a constant theme in his dazzling act. “I got shingles on the day of the EU referendum. It’s good to see that my stress has got worse as I’ve got older and that now there is a physical element to it!”
Another amusing element of Old Man is that Jon uses Twitter to interact with his audience. The comic, whose bestselling book It’s Not Me, It’s You, was published by HarperCollins in 2012, recollects that, “Recently, I talked to a man in the audience, and he was shocked because I knew where he had been that morning, what football team he supported, and what his wife’s name was. It’s a good aboutturn. That’s the joy of Twitter.” Jon adds, “That man had messaged me earlier, but people don’t always realise that when you Tweet, you’re building a public record of yourself. It’s nice to have all that free material. It means I can spend more time with my daughter and just take the mickey out of someone in the audience!”
The standup reflects on how much he adores the experience of live comedy. “It’s such a buzz. The instant reaction you get from the audience is such a privilege. "Each show is a very honest portrayal of how I’m feeling that night. It can go off in any direction. The show is different every night, and that makes it much more exciting. Every evening is unique.” But, much as he loves touring, Jon reveals, “I’ll have a break over the summer. People would rather be out in the sun than inside listening to a whingeing moron!” And when the Old Man tour finally comes to an end, Jon discloses what he will do next. “I’ll be back at home, concentrating once again on being a dad and a pernickety husband!” Jon Richardson: Old Man is at Brighton Dome on 12 Dec. REVIEW Blondie
A
ll too often when the iconic bands of the 1970s come out on tour they have an air of “heritage” about them. The sound set in aspic, the edges rounded off and made comfortable, partly for our aging 21st century ears perhaps and often it would seem for the ease of the performers – not with Blondie. Emerging in the 70s from the New York new wave punk scene there was always a raw energy to their sound – and it’s still there, hard edged, pumping rock that, because of their excellent catchy tunes, took them across that barrier from edgy into charttopping pop icons. Debbie Harry is simply brilliant, the voice as good as ever, and the rest of the band have not lost their edge, delivering searing solos throughout. Nor has their new work lost that edge either, tracks from their brilliant new album ‘Pollinator’ pepper rather than dominate a set that delivers many, not all, of their great hits and gets the crowd on their feet from start to finish. This is pop, rock, punk at its very exciting best. The Brighton Centre, 8 November 2017

Ancient and modern
I
want to see the pyramids, the Sphinx, the valley of the kings, I want to relive the reality of the fantastic histories that I learned of as a schoolboy, the excitement of Tutankhamen, a world of stories heard in a classroom or church, second hand… but I don’t think I ever will. It makes me sad but I have to live with a reality that so many of these wishes are in places that I simply cannot bring myself to visit.
“ I simply do not want to fuel a travel
industry in a country where this kind of homophobia is commonplace ”
Only too often on Queer Say we discuss news from abroad, from countries where homosexual oppression is a day to day reality, a reality that only too often leads to suffering and even death. Cruel death meted out by the pious leaders of faiths where they believe that being homosexual goes against their ancient religious teachings. I have ruled them out as destinations for two reasons. The first is for reasons of safety. I simply fear that being in a country where homophobia laws and attitudes are rife is not an option. Recently we have said about police using LGBT+ online networking sites, they are being used as what we might have once called ‘honey pots’, luring people into assignations that are
dangerous, encounters that can lead to arrest and imprisonment. Well that’s not my idea of a holiday no matter how much culture, ancient and modern, there is to absorb. The second reason is this; I simply do not want to fuel a travel industry in a country where this kind of homophobia is commonplace. I am aware that this of course could have an economic impact on a small country and especially a poor country. Not of course caused by me alone – that would merely be a token gesture – but if the LGBT+ population of the world started to boycott these destinations that would have an impact. Of course there would be collateral damage, the economic impact would affect the whole country, the homophobes and those who do not believe in that oppression, and of course resident homosexuals of all genders, trans, bi you name it. But would that boycott be able to change the world? I’m not sure but it has to be worth a try. I’m not just suggesting that this boycott is just from the LGBT world. I urge the entire world to consider cutting these destinations from their bucket lists, it’s a terrible loss culturally but we need to be safe when we travel and we need also to be respectful of course. But we don’t need to buy into homophobia.
