O
n the way to work this morning I heard that this year marks the 150th birthday of the traffic light. Apparently it arrived outside the Houses Of Parliament in response to a number of pedestrian accidents involving horses and carts. That’ll date it for you. The coloured lights were gasfuelled and ran in the evenings operated by a policeman. Operated, that is, until a gas leak blew up said policeman (he survived, don’t worry) and the bright idea of changing colours to direct the traffic was put in hold for a bit. I’d just like that to sink in – traffic lights were put on hold. An international road aid, a contraption that stops accidents on a global scale and is a part of the modern landscape started with a bang and a massive fail. Just bear that in mind, as we find ourselves in the middle of January and the first wave of good intentions and resolutions may have lost their new shininess. Just because something might not start so well, it doesn’t mean it’s time to give up. It’s all a matter of perspective. Last year I pretty much stopped drinking alcohol – I just didn’t feel like it most of the time. Which is fine and dandy on my bank balance and liver, but towards the end of the year I realised I’d got out of the habit of simply ‘hanging out’ in a large group with my pub visits in decline. My social life had morphed into oneonone outings to see shows or films together, having a friend of two round for dinner, and deeply connecting conversations on the beach with a walk. I’ve forgotten how to ‘hang out’! Well, maybe not forgotten, but definitely gotten a bit rusty. And so my resolution is to reconnect to the chilled and frivolous ‘hang out’. This is my traffic light idea, a return that’s new and improved.

ike many of you I have spent the last couple of weeks putting my body through the gastronomical assault course that is Christmas. The haze of sherry may now have been lifted, but I have been left thinking that the best drinks for this digestively challenging season are Aperitifs and Digestifs. They are somewhat mandatory in my household thanks to my Italian heritage, but I do wonder how much people know about the most important drinks of the day, and how useful they are. To be very basic about it, Aperitifs are the drinks that are imbibed before a meal to make you hungry and digestifs are what is drank after a meal to help ease the pain of a second helping. Though effective aperitifs range from sherry to anise flavoured spirits, I would say that they must always be dry and preferably bitter. Aperitif is a French word derived from the Latin verb aperire, which means “to open” and as disgusting as it sounds, they open your appetite. When I say this, I mean that a drink like this allows you to digest more effectively. This is because in nature most poisons have a dry and bitter flavour, so upon tasting something sufficiently bitter your stomach naturally defends itself by producing more stomach acid. Digestives on the other hand are a little simpler. Mostly they are sweet and can be very alcoholic, this is because sugar or hard spirit tend to slake hunger and notify your body to put the spoon down. This functional approach to drinking is so helpful in fact that it is mentioned in writing as early as 450 AD. If you want a personal selection I would say, for an aperitif I’m quite partial to Campari’s French counterpart Suze. For a digestif I am very partial to Grappa, an Italian brandy made from grape pomace, but be warned it is not for the fainthearted. More than all the practical applications of these libations though, the best thing is that it encourages togetherness, lets you linger a little longer at the table and encourages a lot more laughter.

BRENDAN COLE After a Christmas of Strictly Come Dancing highs and lows, treat your withdrawal with dancer Brendan Cole’s spectacular production All Night Long. Brendan took time out from Christmas Strictly rehearsals to speak with Victoria Nangle about it. Hi Brendan, how are you doing today? Busy. Filming the Christmas Special… it’s going to be a long one.
The choreography is always impressive. How far in advance do you choreograph dances for the show, and how much do you need to change and tailor them to the abilities of the partner you're given? I do them on Monday mornings on the way to rehearsal. They get tweaked throughout the first few days but not too much. Most of the time I get it right.
Are you looking forward to your tour? I cannot wait, although there is a lot to be done before then. We have a ball on tour. Always very sad when it’s over. 21 musicians and dancers on the road for three months. What could be better?
Close relationships between the dancers and celebrities don't seem to help but develop over the run. Do you stay in touch at all after the show has ended though? It must be a wrench. Any surprise longlasting pals? I have developed some great friendships over the years. I would say I’m still good friends with half of them. The others… not so much lol.
It sounds an incredible feat, with so many dancers and musicians, all directed by you. What do you most enjoy getting involved with? Every task is tricky and very involved. The overall satisfaction when you see the whole thing come together is incredible. Ultimately being on stage and performing is the best but it is the icing on a very tricky cake. The show also includes a guitar spot from you. How long have been playing the guitar, and how did that passion develop? I love a challenge and I love live music. I am in awe of my band and the talent that they have. It’s a lovely opportunity to play one song with them. The song is an Ed Sheeran song and who wouldn’t want to feel like Ed Sheeran for a few minutes? What is your favourite dance number in the show? It’s the Waltz. It’s a very powerful piece of theatre with loads of emotion. It’s a Michael Bublé song that tells the story of an affair. It’s sad but beautiful. When Strictly is on the television, is there a first bad habit you always have to address with your celebrity
partners (i.e. core work, hip movement) or do they each surprise you with something new? Every person is different and they all learn in different ways. The hardest thing is the

Choreographing seems so nuanced, sometimes incorporating drama, other times comedy, taking an audience on a roller coaster of emotions and communicating straight to the heart without words. How do you learn to conduct and create such a wide breadth of performance? It’s tricky but like anything, it takes a lifetime to understand how to do something well. I’m still learning. I think this is what makes Strictly so special. People see so many different emotions, all on screen for all to see. It’s brilliant. Which ballroom step should everyone learn to dance in their life? elcome to 2018 and what promises to be yet another year of gastronomic delights. 2017 certainly hit a new high that saw multiple awards and accolades for the city, not only for the finer end of the business but also for the fast and furious where some new kids on the block really made their mark. At the end of the year I was delighted to be invited to dine at a new venture, in a way a popup but a popup with more than a fleeting existence. I have been wary of reviewing popups that will have popped off by the time that the magazine is out, and that I know can be very frustrating. So when I heard of Chard at Rust I was delighted that it was a restaurant that popped up regularly in a very strikingly stylish cafe on the road to Preston Park. Now I know that here in Brighton & Hove we can be rather lazy about travelling to restaurants that are outside the city centre, but really? Get real, this is no distance and it really is worth the effort.

The venue has that trendy post apocalyptic look, so very Hoxton, but actually rather warm and welcoming (and much closer). The first good sign was a huge jug of water, filled with fresh fruits that looked very pretty and negated the need to ask if we wanted ecologically unsound bottled water. We both liked that. Then came a delicious squash purée with incredibly good homemade flat breads, just a teaser for what was to come and a very good teaser too. The addition of parmesan shavings, walnuts and pumpkin crisps made it far better than your average starter, that is for sure.
My date for the night was Ms G de V, a hard and fast vegetarian so she was thrilled and she was equally impressed by her starter of a goat curd with cranberries, hazelnuts and watercress. It was a regal looking dish, bejewelled and generous, a fact that turned out to be a key factor in all of our dishes. My starter of scallops with black pudding and cauliflower purée was equally impressive in both execution and scale. I liked the generosity of a classic that is so often served in parsimonious portions that ultimately disappoint – no matter how well they are cooked. Ms G de V moved on to an amazing gnocchi dish that once again had me looking on with envy. This is well thought out food, pleasingly rustic in its appearance and a joy to eat as was proved by Ms G de V who wolfed down the lot with gusto. I chose from a small selection of specials on the wall and could not resist the temptations of turbot. Turbot is a pricey delight that deserves all of the praise it receives, it truly is the king of the sea and this was a mighty tranche of the beautiful beast. It came with a good celeriac purée and the most divine confit leeks and greens. It was stunning, only let down by not being as tidily trimmed as I would have liked, clearly a chef who hates waste, but that skirt of fine bones really does need to go into a fish stockpot. It’s a tiny quibble though as this was a first class dish that I would certainly order again and again. We should have been too full for pud as all of our dishes were generous in size, but this is a job that has to be done. Ms G de V chose a classic ginger pudding with poached pear and clotted cream. It was very good indeed judging by the speed at which it disappeared. I went for a pavlova in the silly belief that it was the lighter choice. Of course it was far from light, it was a stunning explosion of meringue, fresh fruits and cream that looked as good as it tasted. The wine list is small but well formed and not overpriced and all in all Chard is a very welcome addition to our brilliant restaurant scene. he great canon of Irish drama seems to be without end, from Oscar Wild and George Bernard Shaw to the present day where plays like Stones In Their Pockets takes the West End and Broadway by storm and Jen Butterworth’s The Ferryman becomes the fastest selling ticket ever for London’s Royal Court theatre. There is little doubt that Irish life offers a fascinating view not only of a nation but of the human psyche. Now New Venture Theatre is embracing yet another acclaimed Irish writer. Sebastian Barry is a playwright, novelist and poet and is considered one of Ireland's finest. His literary career began in poetry before he began writing plays and novels. He has twice been shortlisted for the Man Booker Prize for his novels A Long Long Way (2005) and The Secret Scripture (2008), the latter of which won the 2008 Costa Book of the Year and the James Tait Black Memorial Prize. His 2011 novel On Canaan's Side was longlisted
for the Booker. In January 2017, Barry was awarded the Costa Book of the Year prize for Days Without End, hence becoming the first novelist to win the prestigious prize twice.

She does so, however, without the least selfpity but rather with a savage quick humour, sparing noone but the idolised Dada and the motherly Maria, both longdead, whom she conjures from within her morphine troubled mind. “The setting of a cancer ward with its sole occupant facing her final days might suggest an evening of bleakness and depression; far from it. What has already become clear over the course of our first rehearsals is the play’s rich and understated humour. Its emotional range is as wide and as deep as ‘the dark waters of the Irish story’. REVIEW Cinderella and The Beanstalk: Sleeping Trees
O
nce upon a time Cinderella, Prince Charming, a northern Fairy Godmother, The Ugly Sisters, Jack and the Beanstalk, Jack's cow, Rumpelstiltskin and a whole host of other characters performed a play. Three actors majestically performed these numerous roles. The running joke was that they forgot to hire a bigger cast. Tom Gordon was hilarious as he switched between being the Wicked Stepsisters and Prince Charming. The show was ridiculously funny and well acted. There were lots of boos, oohs and he’s behind you’s. Young and old were fully on board dancing, singing silly songs and then initiating a happy ending when the cast of three received a standing ovation. istorically in magazines this is the column where we profess to be able to help you become a new you, yes it’s “New Year, New You!” time. Of course the whole idea is based on that simple lie that by exercising more and eating less you can reinvent yourself. Of course you cannot reinvent yourself. Okay you can make yourself thinner and fitter, that is true, but a new you? A totally new you? Well no of course not, and it is a lie that is at heart almost as evil as those who propose that they can cure people of being gay.
“ To promise a cure for
homosexuality is up there as one of the great global crimes ” 2017 saw some great news in the LGBT+ world, the right to marry for gay men and women in Australia for one, a fact that for many came as a shock. Who amongst us had not realised that the great liberal sun sea and surf capital of the world was so far behind? It also saw horrors too, and none more so than the evil being perpetrated in Chechnya. There men were, and probably still are, being hunted down and put into internment camps and punished for their sexuality and their families being made to make the most
hideous judgements of their children and even forced to execute them. The mind boggles at such depths of evil. Evil and vile as that is, I still think that to promise a cure for homosexuality is up there as one of the great global crimes. Aversion therapies, chemical castration, psychological conditioning are not cures, they are cruel punishments and lies, lies that may well change the way people live their lives, but they are certainly not cured. They are instilled with fears, stripped of their natural emotions either by the use of medication or by mental manipulation. So it’s 2018 and we already see that the battle may in places have been won but the war is not over, the war against homophobia and prejudice is still on and we cannot rest or be complacent. Yes, we can rejoice in our own freedoms and do so with pride and joy, but to really feel a sense of pride we need to fight for those who do not enjoy our freedoms.
