Owner Kim Vanacore has always been interested in fitness and worked on her master’s degree in Wellness at California State Univeristy, Sacramento back in her twenties. While there, she managed the Health and Wellness center and also taught fitness classes on and off for 25 years for Spare Time, a developer of private, multi-recreational sports clubs. It was one day in 2010 that a friend convinced Vanacore to go to a yoga class with her. “It’s funny now, because I remember asking her ‘are you sure I can do this?’ And look where I am now,” she said with a laugh. The class was transformational for Vanacore, and created a pivotal
friend encouraged her to open a studio. Knowing that the 2,000 square foot space above the El Dorado Hills Sports Club went unused, Vanacore and her husband assembled a business plan and approached the corporate director of Spare Time, who owns the club. After presenting the plan in May 2011, it took only 7 short months before Radiant Yoga opened on December 15, 2011. The enouraging friend an Vanacore opened the business together, and now Vanacore is the sole owner. What makes Radiant Yoga different from other yoga studios? The FAR infrared heat. While
expelling toxins, heavy metals, and pollutants from the body. Some of the significant health benefits of infrared yoga include strengthening the cardiovascular system, reducing stress and fatigue, easing joint pain and stiffness, and improving the immune system. Embracing the infrared heat, the studio provides a powerful workout with Power Vinyasa Yoga, an energetic form of yoga that incorporates strength, flexibility, balance, cardio, and physical and mental stamina in one lesson. “My favorite thing about Radiant Yoga is the community, we have such a great community,” said Vanacore. “You form bonds and relationships with everyone.” There are 16 different teachers, which Vanacore believes offers several benefits. “I like the variety we offer,” she explained. “Because all the teachers have their own styles, it’s possible for everyone to have different experiences. There truly is something for everyone.”
“My favorite thing about yoga is the state of mind it puts me in. I’m a much calmer, more grounded, and happier person.” moment for her. “I went home and told my husband I felt like I had just been to the gym, church, and my therapist after my first class,” she explained. She also believes it is the amazing teachers who make the studio successful. In addition to doing yoga 6 days a week, Vanacore stays busy with her four daughters. And when she’s not working? “I’m usually driving the kids around for all their activities,” she explained. While the major misconception of Radiant Yoga is that you have to be a sports club member to join, you don’t. In fact, Radiant Yoga has an excellent introductory offer called the “30 Days for $30” where people pay $30 for 30 days of unlimited yoga. There are also basics classes for beginners, as well as beginner’s workshops every few months with the next one being February 7 from 122:30pm.

CHARITY SPOTLIGHT PLACER FOOD BANK
PLACER
Food Bank BY J. NALANI KAHAE
When an organization decides to take on the battle against hunger, being able to see the humanity within the need is the element that creates true change. In a world where relief seems to be a neverending battlefront, Placer Food Bank sees its vision. Serving Placer, El Dorado and Nevada counties, they provide support through their extensive partnership network by both educating and advocating on a domestic level. They are diligent in giving a face to the word “hunger”
despite how invisible the profound need may seem. 45 years ago, Placer Food Bank was founded as the Community Resource Council aimed at providing support for low-income families and individuals in the surrounding Roseville area. From helping people acquire driver’s licenses and social security cards to providing food and clothing, the mission to serve a struggling community’s basic needs has always been the heart of this organization. Fifteen years later,
they adopted the responsibilities as a food bank; and by 2008, they began operating officially as the Placer Food Bank. Two years later, they outgrew their facilities and relocated to better serve the expanding needs of their target community. Placer Food Bank is now proud to distribute over 6 million pounds of food each year. Operating five different programs to serve the Placer, El Dorado and Nevada counties, they have been able to reach almost 90 thousand people. Their BackPack Program is designed to address the 1 in 3 children struggling with hunger. This program provides weekend and holiday food for children who heavily rely on the national school meal programs as their main food source. The CalFresh Outreach program is geared to educate low-income individuals about the food stamp program in California. An Outreach Coordinator works with clients with pre-screenings, eligibility, and applications. Placer Community Gardens is essentially a partnership with a variety of private gardens, commercial farms, orchards, ranches and public gardens. Each garden donates

portions of their harvest to the Placer Food Bank; volunteers are skillmatched to help with the harvesting and distribution needs. What started as a single garden partnership has turned into a program harvesting over 59 thousand pounds of fresh produce in a year. The Healthy Plates, Healthy Families Program provides nutrition and food safety education and training for both their hunger-relief partners and the communities being served. It’s designed to align the goods received with the MyPlate nutrition guidelines. With this education and training, clients and partners can plan nutritional meals with the food being distributed. Finally, the USDA Emergency Food Assistance program is run by the Department of Social Services. The Placer Food Bank helps clients determine eligibility for this program and aides in this process.

TRAVELING DURING YOUR ESCROW?
LO L
Now that the holidays have ended, some people are ready for some sunshine and off to enjoy a tropical destination.... You still can sell your home and travel too, but there are some things that you need to be sure you have covered before you catch that plane. If you are the Seller be sure you sign your Seller Documents in advance. Buyers and Sellers leaving town should have their Power of Attorney or Escrow Officer prepare a Power of Attorney, submit it to the Title Company for review and approval. Buyers must also provide a copy to their Lender. If the Buyer or the Seller chooses not to execute a Power of Attorney, the following information is required to be provided to the Escrow Officer: *The phone number and email

address of the departing party. *The address where they will be staying during their travels. If traveling outside of the country, the Buyer or Seller should know where the nearest American Consulate is, and the hours which they can provide a notary. This information will need to be communicated to the Escrow Officer. Keep in mind, not all Lenders are able to accept Docusign (signing digitally by email). Any documents required to be notarized, must contain a wet signature. The Preliminary Tile Report should be thoroughly reviewed prior to departure. If the Buyer is the traveling party, they must secure a hazard/
fire insurance company, and provide that information to their Escrow Officer prior to leaving. The Buyer should also have their funds available for wire transfer. It should be confirmed that the funds are originating from the same accounts that have already been verified by the Lender. Funds are due 48 hours prior to the recording of the transaction. For more information on how to avoid potentially costly delays during your travels, or if you have specific questions regarding your transaction, please contact your Escrow Officer. Arguably the most popular drink in the world, coffee is famous for the various ways it can be consumed (hot, cold, with additives, or on its own), and of course, the caffeine content. The drink has even inspired a part of culture – the coffeehouse, a gathering place for people to enjoy coffee and socialize with friends. We found 4 incredible local coffeehouses that provide not only exceptional coffee, but fun and inviting atmospheres as well.
If you’re looking for an outside-the-box espresso drink, look no further than Coffee Republic in Folsom. Family-owned for 25 years, Coffee Republic has become a fixture in the community. The coffee house also believes in keeping everything local, all the way down to their coffee beans, which are purchased and roasted at Terra Nova Coffee Roasters in Sacramento. Along with 20 different blends of coffee to choose from, the menu boasts a large variety of espresso specialties.. Owner, Mindy Green, does her own research to come up with the fun espresso concoctions that Coffee Republic offers. “I like to find inspiration everywhere,” she explained. “I like to travel and find dishes and interesting things and bring them back to Coffee Republic.” Some of these interesting drinks include the tiramisu latte and specialty mochas such as the Irish white mocha, winter mint white mocha and the peanut butter mocha. Their newest drink that is popular this season is the apple pie caramel cider, served with a scoop of ice cream. In addition to exceptional drinks, Coffee Republic also creates a fun atmosphere. “It’s always loud in here,” said Green. “The espresso machines are going and the buzz from everyone chatting, it’s such a fun place to be.”

FUN FACTS ABOUT COFFEE Walking into Zia’s, you instantly feel transported to a small Italian café, and when you taste their coffee, you will understand why. Zia’s has 2 traditional Italian espresso blends, Frienze, a Northern Italian espresso that indicates the region of Toscano. The blend is mild, with a great aroma, sweet and smooth. By contrast, their other blend, Capri, is a Southern Italian blend that indicates the region of Campania. It is medium, dark, hearty, rich and velvety. Zia’s gets their fresh roasted beans from the award-winning Mauro Cipolla’s Caffe D’Arte in Seattle, shipped every week, just after roasting. Because they pride themselves on serving up the best cup of espresso possible, all beans are ground to order, hand tamped and extracted. They also have a
wide assortment of milk to accompany your espresso, even unique selections such as the Sonoma grass fed, Jersey cow organic milk. Staying true to the Italian custom, espresso and cappuccino drink are served inhouse only in their traditional sizes – one ounce for an espresso, and 5 ounces for a cappuccino. While their espresso drinks are delicious, their Chai is one-of-akind as it is a spice recipe developed just for Zia’s.

Staying tue to coffee is what Shady Coffee & Tea is all about. "We focus on traditional drinks," said Crystal Clements, store manager. "We focus on the taste of coffee, something that can be enjoyed on its own without being doused in creams and sugars." They offer one blend, their Suite 7 blend, which has been ambraced by the community. Becoming so loved in fact, that it won the 2015 Barista Nation Sprodown - a local competition where local coffee shops submit their best espresso. The blend is described as yielding a carmelly, nutty, almond flavor. Shady offers 5 different coffees (including the Suite 7), each one being from a different region: Brazil, Guatemala, Eithiopia, and El Salvador. And while the beans are from all around the globe, Shady Coffee & Tea roasts their beans locally at Mast Coffee Co. in Rocklin. Some of their popular winter drinks include the peppermint lattes and mochas, where the drinks are made with Andes peppermint bark. The brown sugar latte is also popular this time of year, though it is offered year-round. It consists of a double shot of espresso, brown sugar, and steamed milk. "It's magic," Clements said with a laugh. FOR MORE INFORMATION

Similar to the "farm-to-fork" concept, Temple Coffee provides a "farm-to-cup" sourcing model. Because 90% of the coffee they purchase comes directly from its producers, Eton Tsuno, Director of Coffee for Temple, travels about 6 to 9 months out of the year to places such as Central and South America, Africa, and Indonesia to oversee farming practices and develop relationships with coffee farmers and producers. "We pay based on cup quality, which often ends up being well over fair trade prices," said Cole Cuchna, Creative Director for Temple. "This way, farmers are rewarded for quality, not quantity, and have an incentive to invest in making their coffee better." All of the roasting takes place on the Vintage Probat roaster, located just behind the 2829 S Street location. "Potenitally, we could be serving you a cup that was roasted the day before," explained Cuchna. "All of our coffee is roasted and shipped on the same day for optimal freshness." While the Panama and Kenya coffees tend to be popular year-round, it's the seasonal Geisha coffee varietal that gets all the buzz in the wintertime. Even at $60 for a half pound, the highly-coveted Geisha sells out quickly. "If you've ever had a Geisha, you'd understand why," said Cuchna. FOR MORE INFORMATION

HEALTH BENEFITS OF SKIING/ SNOWBOARDING: • Skiing is a proprioceptive activity, defined as one’s ability to feel the position of different body parts and the effort applied to move them. In short, skiing improves motor skills and balance, which can deteriorate over time with little to no use. •While skiing/snowboarding, the body releases adrenaline and endorphines (the “feel good” hormones), which help fight stress, anxiety, and depression. •Heart health: Regular skiing improves the cardiovascular system, and snowboarding is an excellent form of aerobic exercise, usually burning about 480 calories for someone who weighs 150 pounds.

Kauai, Hawaii The Garden Island
BY DON AND ANN JACKSON
A VERY POPULAR HOLIDAY VACATION DESTINATION A few years ago, we read about a poll of California residents that showed a majority listed Hawaii as their most preferred dream vacation and we had to agree. It’s always been our number one favorite destination and we try to go each year by alternating between the four major islands. Last year we actually went during the December holidays which is one of 48

Hawaii’s busiest tourism seasons. Not that we’d ever consider doing it every year, like some folks do, but admittedly found it a delightful escape from the holiday crush of activities and responsibilities. And if you really need to relax and rejuvenate you definitely need to head to Kauai, possessing the most relaxing pace of the four major islands. Perfect for just laying back and
chilling out. Although the island provides most of the similar water activities, championship golf courses, and outdoor adventures as other islands it definitely provides many less of those options-yet enough to satisfy most thrill seekers and activity junkies. So let’s explore Kauai, well known for its’ lush jungle landscapes, majestic waterfalls, magnificent crescent shaped beaches and the
THE SOUTH SHORE AND GATEWAY TO THE ISLAND’S WESTSIDE HALLMARKS: The Poipu Beach area is one of the two most upscale destinations on Kauai and if you choose to make it your vacation headquarters, we recommend not missing these highlights: drive, hike or bike up and through the gorgeous and colorful Waimea Canyonlong referred to as the Grand Canyon of the Pacific and the island’s premier natural attraction. Choose a clear day so you’ll easily see the colorfully vibrant awe-inspiring vistas from each overlook.Be sure to stroll through old Koloa Town and browse the quaint shops; visit the Spouting Horn where blustery days can yield high shooting blowhole waters; trek through the Russian Fort Elizabeth State Park to learn about Russia’s connection to Hawaii; sign the release of ALL liability and do the epitome of zip-line thrills by taking the Flyin’ Kaua’ian- you’re hooked up inverted to the cable above so you fly horizontal above mother-earth hands free rather than in a seated position holding on to a linked handle to the cable. You'll really feel like you’re flying, but when you dive off the platform at over 400 feet above the ground-that’s over 40 stories-it’s definitely a heart pounding moment some may refuse to take. What a thrill! koloazipline.com.
locale for many movies such as: Jurassic Park, The Descendants, Pirates of the Caribbean, Raiders of the Lost Ark plus scores of others. And remember no matter in which area you end up reserving accommodations the island is small enough that you can get to all the things we’ll be suggesting you might want to see and do. To fully experience the entire isle you’d probably need a 2 week stay. For links to everything we mention in this article and much more info on events, festivals, and activities go to: www.kauaidiscovery.com. More tech savvy folks can just Google their specific areas of interest.
Where to stay and dine: Our recent stay at the Sheraton Kauai Resort, directly on the beach, was especially enjoyable and our dinner at RumFire, their signature restaurant, was beyond exceptional. Accommodations were tastefully decorated and our breakfasts at Lava’s restaurant and the resort’s Luau both provided lavish buffets. sheraton-kauai.com. For the ultimate upscale exquisite condo stay look no further than the Villas at Poipu Kai where island chic decor prevails. villasatpoipukai.com. For a modestly priced condo lodging choice we thoroughly enjoyed our stay at Outrigger’s Kiahuna Plantation Resort and home to the award winning Plantation Gardens restaurant. outrigger.com. Other highly recommended restaurants: Merriman’s Fish House; another gastronomical winner in this group of diverse Hawaii dining gems; and The Beach House; a quintessential five star oceanfront dining experience. And by the way, the western shore area is largely under military control without any resorts and unlike the rest of the garden island’s lush landscape, it has a very dry desert terrain. THE NORTH SHORE This area is the other more upscale location on Kauai and here are our fave picks for things to do: take a guided kayak trip from the Hanalei River though Hanalei Bay and out into the ocean for excellent snorkeling. kayakkauai.com; visit Kilauea Pt. Lighthouse; hike into the Limahuli Preserve, a National Tropical Botanical Garden. ntbg.org; amble around the quaint Hanalei Town; and finally be sure to explore the famous Napali Coast on one of the small boat excursions. Where to stay and dine: On our more recent stay we checked into the very popular Hanalei Colony Resort in Ha’ena featuring well appointed condo accommodations, full kitchens, and a stunning oceanfront setting. This property has a very Hawaiian vibe and is really ‘unplugged’ (no air conditioning, phones or televisions), although complimentary wifi exists for those who want at least a minimal ‘pluggedin-connection’. Be sure to dine at the resort’s on-site Mediterranean Gourmet restaurant offering creative family recipes and occasional entertainment. hcr.com LAVISH LIVING MAGAZINE | JANUARY 2016

If wanting a more luxurious ‘plugged in’ lodging experience on the North Shore, consider Princeville’s very upmarket Westin or St.Regis resorts. Both are cliffside located and home to the world class Makai Golf Club. Romantics and nongolfers should consider the club’s unique Sunset Golf Cart Tour. makaigolf.com THE EAST SHORE: This area, including the towns of Lihu’e, Wailua and Kapa’a, is the most convenient to the island’s airport and lodging prices are usually more modest than on the northern and southern shores. Our personal choices to see and do: don’t miss the awesome overlooks at both Wailua and Opaeka’a waterfalls; tour the historic Kilohana Plantation estate by train or a guided hike for family fun. Kilohana’s estate shops and Koloa Rum Company’s complimentary tasting room are fascinating options. kilohanakauai.com; visit the Hindu Monastery and Temple, one of the globes’s most revered Hindu sites open to the public; sign-on for the boat trip up the scenic Wailua River to see the renowned Fern Grotto, formerly an exclusive site for Hawaii’s royal visitors. smithskauai.com; and stop by to see the Kauai Museum in Lihu’e for interesting insights into the island’s history. 50

WHERE TO STAY AND DINE: Our most recent trip found us staying on the East Shore in Kapa’a Town for the first time and we thoroughly enjoyed Outrigger’s Waipouli Beach Resort & Spa offering residential style condos plus a waterslide, cascading waterfalls, and a meandering pool that children and families love. outrigger.com Another Kapa’a Town lodging recommendation is Aston’s Islander resort, a delightful condo choice and their restaurant, Oasis on the Beach, was a culinary surprise with a very young chef creating imaginative dishes. astonhotels.com . Foodies should definitely opt for a Tasting Kauai food tour. Our tour included highlight visits to the Kealia Farm for homegrown lunch offerings and JO2 Restaurant where a local legendary chef works his culinary magic. tastingkauai.com BOTTOM LINE: keep in mind there is very limited nightlife compared to Oahu or Maui so be prepared to just enjoy laying out on a beautiful beach watching sunsets or catching up on reading. That always sounds like a very nice change for us since our trips usually entail experiencing a ton of activities to write about. Special tips if interested in saving money: Are you renting a car? If yes, be sure to check out discounthawaiicarrental.com. This amazing
company almost always beats the best car rental rate we can find online or through an agency. When buying gas check out the Lihu’i Costco station near the airport-usually fifty cents or more savings per gallon. ourselves in daily. There is nothing more important in that environment than our guests; the individual consumer-investors who ensure that our staff have jobs, our product can be of the highest quality, and that we can keep the lights on so we can expect to see you the next time. It is one of the great joys of my life to be able to participate, as a diner, in the owner operated restaurants that fill our communities. Our businesses are built on the foundation of great guests and the more we give to these great businesses, the more we will get. Below are some heartfelt pieces of advice for dining in an owner-operated establishment. #1) Though we try, restaurant owners know that nothing is ever 100% perfect all of the time and we depend upon our great guests to be the voice of reason and to give us honest feedback about our food, the service and atmosphere. We value constructive criticism just as highly as we value praise.
DINING OUT
WITH NICK BY NICK DEDIER
Let me tell you the most difficult thing I have ever done... I opened a restaurant.
NICK DEDIER
56
While being a restaurant owner seems glamorous in reality it is anything but. I am a small business owner-operator and I fix ice machines, plunge sinks and change out toilet paper… Yes I can tell you the difference between a sexy burgundy and a slammin’ cotes du rhone but I can also tell you how the insides of an automatic soap dispenser work. And while the warm and fuzzies may come from the food, wine, and atmosphere… the real love comes from the work, the dedication, the blood, the sweat, and the tears. Restaurant owners, wine makers, brewers, and truly all hospitality

professionals are tradesmen. We work with our hands, think on our feet, and love with our hearts and it is for this reason that I urge everyone to eat, dine, shop, patronize and just plain visit the ladies and gentlemen who wake up early, go to sleep late and whose lives and livelihoods rely on the patronage of the neighbors in our community. Given that our operations are markedly more different, personal and difficult than your average chain or blossoming corporate restaurant, we expect more from ourselves and the environment that we surround
#2) I say it in nearly every article: smile and be positive. These hours are long and mostly thankless so you would be surprised at just how far a smile can go when you’re supporting the local owner-operated restaurant. #3) Participate. Eat the special, have the server order for you, pair some wines. Morph your time in a restaurant into a dining experience and not just a food consumption period. #4) Tell your friends. The more support and the more people we are able to serve the better we are. It is a symbiotic relationship between us, our guests and our communities. The energy we are able to build together should be electric. #5) It is all about community. Support those who live in your community, are your neighbors and participate as a positive force for the places we live. There are more than two handfuls of great spots in every one of these communities east of Sacramento. Most rival the “flagship” restaurants of Sacramento, we have a lot to be proud of, and the more we support our community the better we will become.

OAK FARM VINEYARDS BY J. NALANI KAHAE
Centered at the heart of Lodi, Oak Farm Vineyards is proud of its beautifully rich history. What began as an 1860’s “Elkhorn Township” ranch farm, the property was home to William and Cornelia DeVries. The DeVries’ love for oak trees has endured the test of time and the property’s dearly loved and wellknown charm remains evident to this day.It comes as no surprise that the vineyard draws guests from all around the nation. Guests venture in its direction to utilize the differing venues for their destination events; people come for weddings, reunions, benefits, corporate retreats and other such private celebrations. Oak Farm Vineyards now belongs to the Panella family and brings to life their vision of a place celebrating “great wine, family and authentic friends.” Dan, Heather, Bob and Dorothy Panella all welcome visitors to see firsthand the ways that make their vineyard special. This place was designed to create memories and for the birth of new traditions. Of course, it wouldn’t be a vineyard without wine. Currently, the vineyard offers several varietals including but certainly not limited to their Chardonnay, Vapor Trail, Grenache, Barbera and their award-winning 2012 Zinfandel. visit. While some may choose the convenience of the regular tasting room, others may opt for one of the two available private rooms. And for those interested in a more all-encompassing experience, joining one of the hour-long Historical Legacy Tours is a wonderful way to combine learning and wine tasting. Tour hosts provide interactive education about both Lodi’s and the estate’s history while walking the grounds and partaking in a full tasting flight. Tour-goers will be offered insight into the winery’s history while visiting the barrel rooms and finally ending the hour with a VIP room tasting. Venue choices are plentiful for those searching for the perfect spot to host a special event. Their Historical Redwood Barn has remained a property trait for over 150 years. It has become a prime location with its rustic warmth and modernized space. The Great Lawn and Oak Tree area is especially popular for its vineyard and lakeside views. Finally, the Rose Garden Patio with Arbor is a stunning treat lined with roses, grape vines, bistro lights, and vineyard views and is also conveniently situated between the Tasting Room and Historic Barn.

WINE PICKS | OAK FARM VINEYARDS
LO C AL FO OT H I L L WI N E S THIS MONTH'S PICK FROM LOCAL SIERRA FOOTHILL WINERIES.
DRYTOWN CELLARS BY J. NALANI KAHAE
As any wine enjoyer can attest to, indulging in a glass or two can certainly add more flavor, if you will, to the routines of our daily lives. Located right off the historic Highway 49, Drytown’s own Drytown Cellars is a proponent of this mentality and boasts some of the very best wines in the region. Although many may venture to this winery specifically for the aforementioned wine, there are entirely different characteristics exclusive to Drytown Cellars that could arguably hold its own in attraction value. Fifteen years ago, Allen and Suzanne Kreutzer purchased the 40-acre winery portion of the Vaira family’s old cattle ranch. Within this acreage, were the Vaira’s farmhouse and barn – both of which still stand in working order today. Drytown Cellars officially opened its doors to the public as a winery a year after its purchase and has since expanded in both construction and vineyard growth. Visitors will undoubtedly be treated to the spirited humor the Kreutzers offer in their stories about their town’s once bustling golden era. Learning of the town’s longstanding “determination to enjoy life while following their dreams,” can prepare visitors for the philosophy Drytown Cellars amplifies.
experience as a winemaker or consulting enologist for several different wineries. Today, both Allen and Suzanne treat their Drytown Cellars with a refreshingly scientific approach. While they do believe in wine as a celebratory enhancement, their focus is intentionally designed for daily consumption. They believe in the science behind their production methods in order to create a high quality bottle of wine for a budget-friendly cost. It has proven to be a successful methodology as they continue to produce several award winning wines each passing year. Their current selection of varietals include these 2015 award-winning wines: Gold, 2014 Sauvignon Blanc, ’13 Barrel Fermented Viognier, ’14 Verdelho, ’14 Riesling, ’14 Rosé of Malbec, ’13 Estate Pinot Noir, ’13 Sangiovese, ’14 Barbera, Vaira Ranch Red, ’13 Primitivo, Red on Red, ’13 Estate Syrah, ’13 Estate Petite Sirah and Port. All of these range in prices from $10-$20. Drytown Cellars is open daily from 11am-5pm.

SEASON DELIGHT KALE
Kale
BY SERENA PIPER
SEASON DELIGHT
Many people would liken eating kale to eating grass. It’s for the rabbits, right? Actually, kale can be pretty tasty if you know the cooking secrets, and because it’s high in nutrients and low in calories, it is one of the most nutrient-dense vegetables of all. In addition to having sky high levels of vitamins A,

K, and C, kale also has very little fat. Of the fat it does have, the main kind is omega-3, which helps lower the risk of Alzheimer’s and dementia. Even better, one cup of kale has 1000% more vitamin C than spinach. If that’s not an incentive to work it into your diet, I don’t know what is!
If kale doesn’t fit into your budget, buy in bulk, which will save you money in the long run. Whether steamed, raw, or blended into a tasty smoothie, adding kale to your diet will not only dramatically increase the nutrient levels in your body, but will liven up your meals with a little crunch!

FINAL THOUGHT
FULFILLING YOUR
NEW YEARS’ RESOLUTIONS BY SERENA PIPER
If you’re like me, when it comes to New Year’s resolutions, you go big, but then go home. You may start out inspired, determined, and fully intend to follow through with the resolutions, but the minute the first week of January is over, it’s out of mind, out of sight. I’ve come to realize there are two different kinds of people in the world: those who actually do follow through on resolutions, and those who think up big goals intended to self-improve, but have no plans whatsoever to try and make them happen. If you’re the latter, you just may omit that last part in conversation with friends. According to a University of Scranton study, although some 40% of Americans make New Year’s resolutions, a measly 8% achieve them. This year, no matter which type of person you are, take it easy on yourself and try a few twists on the New Year’s resolution thing.
66
●
The majority of us don’t take New Year’s resolutions seriously, so why not create a list of resolutions you are totally okay with not actually pursuing? Whether it’s to really use your gym membership five times a week or to eat less junk food, there will be less disappointment in yourself if it’s something you’re okay with not perfecting.
●
To do New Years’ completely different, write a list of your favorite moments of 2015. It can even be a new tradition you start. You’ll build up quite the collection which will be fun to look back on in ten years.
●
If getting together with friends and/or family on New Year’s Eve, another fun tradition to start would be playing a game of “What I Regret The Most” or “My Most Embarrassing Moment” in 2015. Think of it as an updated version of Truth or Dare. You’ll learn a lot about others and yourself too! It might also give you insight as to where to improve upon yourself next year.
LAVISH LIVING MAGAZINE | JANUARY 2016
●
If you’re determined, one secret to making sure you achieve your resolutions is to make them something to do with what you’re passionate about. If exercise isn’t your thing, don’t make going to the gym 4-5 times a week your number one priority. Love live theater? Aim to see at least five productions next year. Moved by art? Sign up for a calligraphy or painting class to hone in on an unknown talent.
●
Make your resolutions to continue doing something you already do that you feel good about, such as donating to your local humane society every month, volunteering at the library, or being an extra hand whenever you see someone in need of help. No act of kindness or compassion is ever misplaced.
