May is the month for celebrating mothers, and one way to do that is to spend quality mother and daughter time at The Princess Academy. Walking into The Princess Academy might feel more like you’ve been transported to a magical kingdom and much less like you’re located in downtown Historic Folsom. Painted stones create a pathway through the building, leading to a white castle, filled with plush white couches and colorful gowns. LAVISH LIVING MAGAZINE | MAY 2014

The Princess Academy caters to young girls and offers services such as doing hair and makeup, painting nails, hosting tea parties, and dressing up in lavish ball gowns. Owner, Amanda Carter-King, opened The Princess Academy in April 2013. Originally a mortgage broker for Nationwide Financial Solutions, she decided to make a career change. “I went to my creative side,” she said. “I decided to put all of my personal passions and life experiences into one business.” Working alongside her daughter, Carter-King explains the business has become a family affair. “It’s difficult balancing being 100 percent present with your own family and being 100 percent open for other families, she said. The Rancho Cordova native chose this location because she loves the atmosphere and feel of downtown Folsom. “I grew up coming to Folsom and I loved the charm of Sutter Street,” she said. The most popular event at the academy, which occurs about 3 to 4 times each week, is the princess party, where groups of 18

8-12 girls get head to toe pampering, with hair and makeup, nails, gowns and shoes, a formal tea party with food and tea, and a parade down Sutter Street. One concept that is imperative to the academy is that Disney gowns are not used for dress up. “We like to let girls know that they are their own princess,” she said. “We don’t want them coming in and asking to dress up as a certain princess because we want them to understand that they are princess enough.” Encouraging and inspiring young girls has become a major theme in the business. Whenever a client leaves, she is left with a small card with the “royal declaration” that reads: “I am amazing, I was created for great things, I am beautiful on the inside and that makes me beautiful on the outside.” The academy also offers two week-long summer princess camps, one in June and one in July. During this week, the academy is closed to the general public while the girls receive etiquette training, pampering and indulge in making crafts. At the end of the week, there is a graduation ceremony, complete with a tea party and graduation certificates. There are also two holiday camps, one a week before Thanksgiving, and another a week before Christmas, allowing parents time to cook, clean, and shop before the holidays. Another business venture, not associated with the academy that Carter-King is pursuing is photography. “It’s my first passion,” she said. The black and white photography studio, projected to be opening soon, will focus primarily on baby bumps and vintage children’s photography. When asked what her favorite thing about this business, she smiled and said, “instilling positive affirmations into others.”

Each month we ask LL’s resident real estate guru, Debi Ambroff, to weigh off on local housing market trends. Here’s what she had to tell us. There are so many reasons why today’s buyers are attracted to living in El Dorado County. Not only is it rich in history, but the location is central with easy access to world-class destinations such as Lake Tahoe, Napa and San Francisco. El Dorado County residents know all about the recreation around Lake Folsom, the American and Consumes Rivers, the local foothill wineries, the amazing restaurants and boutique businesses… But living here has another advantage that many locals may not be aware of: a senior tax benefit. “I often think about what El Dorado County looked like when I first arrived,” says our local real estate guru, Debi Ambroff.

“It was in 1977. My husband and I were young entrepreneurs and eager to launch our careers. Our mentors told us that El Dorado County was the place to be for the next upcoming construction boom. ‘There you can buy a lot for less than $10,000 in Cameron Park,’ they said, ‘or in Ridgeview in El Dorado Hills for $30,000, if you wanted a view’. Young and impressionable, we were eager to check it out. We laughed when we drove up and down Mother Lode Road, thinking to ourselves, ‘Where in the heck is the town? There’s nothing here!’ El Dorado Hills was basically the same. El Dorado Hills Blvd. was the one main artery. If you drove up and down daily you saw the same people, day after day and eventually would wave, as if you really knew them.” Ambroff was raised in the Bay Area and her husband from Southern CA, so they were accustomed to a lot more development. Over time, investigating the county from one end to the other, the couple grew to absolutely love the 24
LAVISH LIVING MAGAZINE | MAY 2014
area, and was convinced this is where they wanted to settle. “We had already purchased our first home right out of college for $14,000, (hard to believe), but the value of that home grew quickly and before we knew it, it would turn into the purchase of several more here locally.” Growth here has been steady, and in the more recent years impressive, well-planned communities with increased amenities have added to its desirability. El Dorado County has become the perfect place to invest, raise a family, and, for baby boomers, to retire. In search for ways to cut expenses, baby Bboomers want to enjoy the same standard of living they have today in their retirement years. With the rising costs of everything, including taxes, this has become a major challenge. Most people are living much longer and are concerned retirement funds may run out. Back in 2010, the Board of Supervisors put
Proposition 90 into effect, which was written for homeowners over age 55, making it possible to move to a different home in a different county in California and not suffer an increase in their property tax base. Proposition 110 is a companion to Proposition 90 with the same provisions, but is designed for those who are severely and permanently disabled with no age limit requirement. Proposition 60 allows anyone who meets the requirements to transfer the base year value from an original residence to a replacement residence within the county. As of September 19, 2013, there are a total of nine counties that have enabled this ordinance: Alameda, El Dorado, Los Angeles, Orange, Riverside, San Diego, San Mateo, Santa Clara and Ventura. “El Dorado County is the only rural county to adopt Prop 90,” says Ambroff. “By allowing the transfer, this makes us one of the more desirable places for retirees to move. It’s really a “win-win”
for everyone in the family: tax savings for the parents, and a better quality of life for the entire family, as often the children and grandchildren follow their move.” There are some requirements for the transfer, cautions Ambroff. The sale of the original principal residence and the acquisition of the replacement principal must both occur within a two-year period and the market value of the replacement principal residence must be equal to or less than: A) 100% of the full cash value of the original property as of the date of the sale, if the replacement dwelling is purchased or newly constructed prior to the date of sale of the original property. B) 105% of the full cash value of the original property as of the date of the sale, if the replacement dwelling is purchased or newly constructed within
the first year following the date of the sale of the original property.

This tax savings will expire in 2015, so Ambroff recommends that if you or someone you know qualifies for this savings, it is important that you spread the word, so this great opportunity will be considered for renewal.
The application for the transfer is filed with the Assessor. For Proposition 90 or 110 transfers from another county, there is a $500 fee paid to the Assessor at the time the application is filed. The county will not accept the application fee unless they feel confident that the base year value will qualify for transfer. For Proposition 60 and 110 applications for transfer within El Dorado County, there is no fee to the Assessor.

The weather is heating up and that means swimming, barbeques, and plenty of sunshine, but be careful how much sun you take in. According to the United States Environmental Protection Agency, skin cancer is the most common cancer diagnosed in the United States and an estimated 2 Californians die of Melanoma, the most dangerous type of skin cancer, each day. With May as the established month of skin cancer awareness, The American Academy of Dermatology is bringing light to this issue by celebrating Melanoma Monday, established in 1995 and occurring on the first Monday in the month of May, and this year being celebrated on May 5th. Melanoma Monday aims to encourage people to examine their skin and seek medical assistance if there appears to be unusual markings or change in mole color or size. By educating the public about Melanoma and encouraging early detection, Melanoma Monday has helped save lives. The American Academy of Dermatology also offers services such as finding a derma-

tologist in the area, and also encouraging education and being vigilant to inspect for any skin abnormalities. Since 1985, Academy member dermatologists have volunteered their time to offer free skin exams to aid in the prevention of skin cancer, and with just $2,000, the AAD is able to provide screenings for 1,000 people. The AAD is also getting Major League Baseball involved in their campaign to educate people about skin cancer through the Play Sun Smart initiative, which kicked off in June 2013. Clubs will help spread the message about skin cancer awareness and early detection through first-pitch and on-field ceremonies of guests who have been affect by skin cancer. The American Academy of Dermatology reminds you to enjoy the summer heat, but be smart and remember to use sun block and stay in the shade when possible.

Q:
WHY DO SOME WOMEN’S BREASTS THAT SAG? A: Breasts have a supported structure within
them called Coopers Ligaments. These ligaments, combined with supportive skin help maintain a perky youthful breast appearance. Breast enlargement with pregnancy and marked weight gain can stretch the skin and supportive ligaments and cause sagging or drooping of the breast. As women age the breast glandular content diminishes and is replaced by fatty tissue, which has less supportive properties to it. So there are many factors that can contribute to a breast becoming ptotic (droopy).
Q:
HOW DO I KNOW IF I WOULD BENEFIT FROM A BREAST LIFT? A: The youthful breast has with the majority of
the breast tissue located above the crease under the breast and the nipple and areola located at the apex of the breast mound. If the nipple and areola and/or breast tissue migrates below this plane with the breast resting on the chest, one usually benefits from a breast lift (mastopexy).
Q:
DOES A BREAST LIFT LEAVE SCARRING? A: There are many types of breast lifts. I offer
five different types of lifts, all depending on the amount of drooping of the breast. A breast lift essentially raises the nipple and areola, removes excess loose skin, and tightens the breast skin envelop. Therefore a lift may require a minor amount of skin removal, or a major remodeling of the breast, depending on the amount of sagging.
Q:
CAN A BREAST BE AUGMENTED AT THE TIME OF A BREAST LIFT? A: Some breast lifts alone result in
a very youthful pleasing appearance. But, as the breast ages and becomes replaced with more fatty than

glandular tissue, with less substance and firmness to the tissue, an augmentation may be considered at the time of a breast lift to maintain the fullness in the upper portion of the breast. In my practice I prefer to perform both procedures at the same operation. Some surgeons prefer to do this in two separate operations.

IF I AM PLANNING ON ANOTHER CHILD, CAN I STILL GET A BREAST LIFT? A: I would recommend waiting until finished with pregnancies before having a breast lift to avoid the possibility of needing the procedure repeated a second time.

The Salon:
Boasting over 3,000 square feet of urban luxury and a wide range of services, the Historic Roseville building that is now home to The Garage Hair & Skin Lounge had an unusual beginning. In 2007, Garage owner Sarah Sherman was looking to branch out and open her own salon, envisioning a particular “style”. After feeling discouraged looking at pre-existing salons, a friend of Sherman’s who was opening a restaurant/bar told her about the new upcoming city plans and changes being done in Historic Roseville. He got Sherman in touch with the owner of a building built in the 1920s that had been used as a drop-off for soldiers during World War II. The back unit (now utilized as stylist rooms) was used as a brothel. Although the space was an empty loft that had been abandoned for the past 30 years, Sherman saw its potential… but there was a lot of work to be done. With exposed walls and no flooring, it looked and felt like an abandoned attic. Sherman took on a complete overhaul, designing the space and layout herself. “My dream was to open something different than the typical flat suburbia style of Roseville business in retail centers. I envisioned a rustic Urbana-type style in this upstairs space I was so blessed to have come across.” 36

Sarah Sherman began her styling career in high school as an ROP student. After two years of working in a salon in Auburn, she moved to Roseville when she 18 years old and began renting at a salon, additionally working as a makeup artist for MAC cosmetics, while building clientele. After six years of doing bridal hair and makeup, Sherman was ready for the next step and took on the risk of opening her own space. After a two-year build-out, The Garage Hair & Skin Lounge was opened on May 1, 2009. With its 5-year anniversary just a few weeks away, Sherman feels blessed and grateful for the “amazing group” of 23 people she employs. Her expertise as a producer and director of fashion and beauty events became evident early in her career as an understudy for famed MGM Studios makeup artist Georgia Stepp. Huston’s proficiency as a makeup artist for stage productions led to involvement in film and celebrity events, including as the personal hairstylist and makeup artist for the “Back Street Boys” and as the red carpet makeup artist for the MTV Awards representing Leeann Rimes. Avallone began her career in the greater San Francisco bay area with a small chain of salons, working and training new stylists in the art of haircutting, styling and color. In the 1990s, she was affiliated with Center Stage Salon, San Jose CA and gained experience and a passion for clothing, hair and fashion shows. Being involved in charitable events and couture fashion shows, along with continuing education, has shaped Denise into a skilled, experienced and knowledgeable hairdresser.

Later, when they heard about the 3,200 square-foot space located at Quarry Ponds, they made the decision to open the Crushed VLVT.

The Salon: Allure owner Missy O’Daniel opened her first salon, Allure Hair Design, when she was only 24. “I had no idea how I was going to run it,” says O’Daniel. “I just knew how I wasn’t going to.” After being in business for just a year and a half, she received Sacramento News & Review’s “Best Hairstylist” award, catapulting her career. O’Daniel then opened another salon, Allure Above, with seven stations and a treatment room. After owning Allure Salon and Spa for 12 years and Allure Above for five years, O’Daniel decided to buy into a building to build her dream salon. In its 16th Street location now for the past 5 years, Allure has had its doors open for a grand total of 17 years. 40

The Owner: Born in Honolulu, Hawaii, Missy O’Daniel grew up in Sacramento. Raised by a single mother who taught her daughter a strong work ethic, O’Daniel went to beauty school while still in high school, attending regular classes in the morning and beauty school in the afternoon. While working part-time at a salon and attending Sac City College, O’Daniel’s boss at the time told her she was really talented and should take some time off from school to see if she could make a career out of being a hairstylist. It’s safe to say it worked out for O’Daniel, who has received numerous awards as “Best Hairstylist” and Allure Salon and Spa has also received numerous “Best Salon and Spa” by several publications for the past 15 years. Allure Salon and Spa has also competed in Hair Wars and won both times we entered. A full-time stylist, O’Daniel runs Allure Salon and Spa, on top of being a mother to two boys, aged 6 and 8, and recently Co-Produced Sacramento Fashion Week.

The Salon: Established in 2010, Republic owner and esthetician Carmen Gammon had to have mastered the art of visualization in order to turn a former Dream Dinners and Insurance office into the lavish 2300 square foot salon that it is today. “I had a vision of how to turn the space into the salon I wanted and even though my husband may not have been able to visualize the finished product, he believed in me enough to jump in with both feet and has supported me every step of the way.” Patrons of the salon, winner of Best Blowout by Sacramento Magazine and voted Top 5 in the KCRA A-List, are able to enjoy a refreshing glass of cucumber water or sip on a glass of chilled wine while taking in the view at one of the outdoor bistro tables. The Owner: Carmen Gammon began her esthetic career in 2000 in Midtown Sacramento at Allure Salon. Gammon still considers Missy O’Daniel, the owner of Allure Salon, a close personal friend and mentor. After building a loyal following, she made the decision to leave Allure in 2003 to open her own space in Midtown. Gammon continues to work 2 days in Midtown, attributing that decision to the more than 10 years of maintaining most of her clients. “I enjoy and value the relationships I have built. I love spending time between Midtown and Folsom because it has allowed me to experience two very different communities and develop an appreciation for both.” Carmen and her husband, and their two Chihuahuas, live in Folsom. Contrary to what some may think, a healthy diet can also taste good! Land Ocean Restaurant in Folsom and Sienna Restaurant in El Dorado Hills, both offer its customers healthy options. Folsom resident and co-owner Karoline Platt is a regular gym member. In order to ensure all her gym friends would come to her establishment, she came up with the idea to offer a low fat option and also a fitness special which changes weekly and is always 450 calories or less. “Our guests truly love the option to order on the healthy side,” Platt said. “When we opened Land Ocean, we weren’t initially offering the Fitness Special, but our guests demanded it.” The dishes have proven to be a signature item on both menus. Both restaurants also offer Gluten free and vegetarian options. Any yes, always very tasty!
FITNESS RETREATS
If all else fails there are many high-end fitness retreats throughout the nation with the sole purpose of providing help for those who need it and require the extra push to get motivated. The National Health and Fitness Institute is one such group that offers nutrition, education and exercise, all while guests feel like they’re on vacation. The program is run by caring professionals who focus on hard work, motivation and want to help people with “Acupuncture points are like stop lights,” she said. “Acupuncture hits specific points on a meridian also known as channels, where energy flows through.” Feher says it works 90 percent of the time and acupuncture is more effective than acupressure which uses fingers to apply pressure at exact pressure points. For those fearful of needles, “Acupuncture doesn’t hurt. You feel a quick little pinch feeling, like plucking eyebrows,” Feher said. Acupuncture is not a miracle so it cannot heal a broken bone but can actually speed up healing time.. Feher says it is so relaxing that 50 percent of her patients fall asleep on her table.

Another obvious but nonetheless equally important in preventative measures for a healthier you is healthy eating. Your diet is the fuel that gets you through the

DISCOVERING A Personal Sense of Style
How many times have you been asked, what is your style? For some, a sense of style is innate. But the vast majority of us have not taken the time or effort to define what our personal style is-- whether that regards clothing style or the style of the interior of their homes. Indeed, most people are clueless unless they have real interest on the subject of style. Which is why we turned to our resident interior design guru, Sherrie Swass of Swass Interior Design, to help us decipher discovering one’s personal sense of style.

Designing interiors comes as naturally to Swass as walking, but as a young woman she wasn’t consciously aware that she was gifted with a natural ability to visualize and design a room that seamlessly flowed together. That realization came as she began to know who she was as a person. “We are all blessed with natural abilities and just have to work a little harder on the ones that we were not blessed with. If style is your quest, work on it.” Style also has nothing to do with how much money one has: it can’t buy class. “I have visited homes where homeowners have extreme wealth yet absolutely no skill in designing a room,” said Swass. “Most of these people were purchasing expensive furnishings but had no idea of how to pull it together. I see this quite often, and the saddest thing is that they do not feel the difference. When a room emanates a personality, you and your guests feel it and are engaged in the home; you don’t feel as if you are living in a hotel. I refer to it as a heartbeat in a room.” After being in the interior design business for several years, Swass came to the realization that people need to explore who they are on the inside before they attempt to design the interior of their homes. “I designed a 2-hour consultation that forces people to address their likes and dislikes. I ask the right questions and get the appropriate answers to help clients discover their personal style. Most people know what they like and don’t like but again have not taken effort or time to really understand what their real style is.” According to Swass, this “design therapy” is necessary in order to get any project off the ground if clients are unable to articulate their style, ultimately saving both time and money. No more running back and forth with returns, which is one of the reasons the Internet is so popular. It’s no coincidence that that many online companies offer free returns.
If you choose to take the project on by yourself, here are some tips from Sherrie to help guide you in the right direction: ONE: What colors do you love? You might consider using the same colors your wear. Check out your closet. Do you see the same colors come up again and again? Is there a spouse or children in the home that have an opinion on color? TWO: Stick with the basics. What kind of fabrics do you love? Are you attracted to heavily textured fabrics or shiny smooth fabrics? Design style is an extension of what you love and who lives in the home. THREE: Do your research. If you are serious about finding your personalized style you must put some effort into your project or hire someone that will do it for you. So how do you do this? Pick up some magazines or peruse the website Houzz.com. This is a perfect solution to defining your style and cutting through agonizing experiences in the whole design process. Many clients show me what they love and I can tell them if it will work in their home. Sometimes it works and sometimes it doesn’t. What it does do is make the client a strong participant in the project, which is what most people want. Few people want surprises at the end of the day. Remember your home needs to be a reflection of who you are and your journey through life. I love to travel so our home reflects artwork and photos of all our travels. It brings back wonderful memories on a daily basis. Don’t bury those memories in boxes in the attic. Once you determine your signature style (we all have one), decide what stays and what goes in the room or rooms.
FIVE: Gather items you love and cherish. Make sure these are part of your future plan. They need to find a perfect home. Most people just shove their collectibles on a shelf somewhere. This concept is all based on how these items make you feel. Try to be very conscious of your decision-making. It will affect your mood everyday. A bad day could turn out to be a good day by just reflecting on a wonderful memory. SIX: Look for common threads. This could be design, shapes, colors and textures in the things you are intuitively attracted to. Maybe you find yourself attracted to a blend of many styles. Again, we all have a signature style. It simply takes a lot of fact finding to discover who you are. If this is just too overwhelming, treat yourself to my 2-hour consultation. I guarantee results.

After decades of visits to Carmel-By-The–Sea we have developed an almost euphoric appreciation for this enchanting fairy-tale like village. We can’t think of any small town destination in the United States that remotely compares to this ultra charming getaway. Storybook architecture, world class art galleries, upscale shopping, exceptional lodging options and superb dining choices flourish. Tourists come from far and wide just to walk on the beautiful white sand beaches.

A little history:
Carmel Mission (officially: Mission San Carlos Borromeo De Carmelo) was founded by Father Junipero Serra in 1771 and served as his residence and headquarters until his death in 1784. As one of California’s most beautifully restored Catholic outposts, it should be a must visit. The town itself was established in the early 1900’s by a Bohemian group of authors and artists as a pastoral retreat and remains a painter’s and writer’s haven today. Thankfully, strict zoning laws have preserved a quaint village atmosphere centered on the arts, upscale tourism and unique shopping.
What to do and see:
Best and easiest way to see Carmel is to walk the downtown, residential areas and its glorious white beaches. Self guided walking tour brochures are available at the Visitor Center open 10 to 5 everyday on San Carlos between 5th and 6th. Don’t miss seeing at least one of the original storybook structures like the cute Hansel House or the Tuck Box (currently a tea room) designed by whimsical architect Hugh Comstock. www.tuckbox.com Dog lovers will not want to miss walks on the local beaches where dogs are allowed to frolic leash free, a rarity in California. During your getaway, try to attend one of Carmel’s elite cultural events such as their annual Bach Festival usually held in July, a concert

• Within one square mile of downtown there are no street addresses for homes, inns, restaurants or shops and all mail must be picked up at the post office. • A lot of residents give their homes special names with appropriate signage in lieu of addresses. • Probably the town’s most famous resident, Clint Eastwood, served as Mayor from 198688 and although he continues to direct and produce award winning films this energy driven gentleman remains active in the area’s business and charitable affairs. • The population of the town remains around 4,000 but over 60% of the homes are second residences.

With over 40 lodging choices of hotels, inns and B & Bs, readers should easily find one that will meet their lodging expectations and budget. Here are a few personal favorites: For years we’ve wanted to stay at the Pine Inn, Carmel’s oldest hotel built in 1889, but had never checked in. When planning our most recent visit we decided that needed to change. And check out this unusual history: Originally named Hotel Carmelo it was built using wood from the demolished Tivoli Opera House in San Francisco and in the early 1900’s it was partially dismantled, rolled on logs down the dirt street about four blocks to be nearer the beach and given the Pine Inn moniker. In recent times it has been extensively refurbished and upgraded featuring Victorian antiques with an emphasis on a dramatic scarlet red color scheme exuding 20th century elegance. Complimentary full American buffet breakfast (M-F), limited parking and wi-fi are included. Quaint standard rooms provide exceptional value, deluxe rooms feature marble bathrooms and Jacuzzi tubs and penthouse suites are crème de la crème luxury. www.pineinn.com. Just across the street from the Pine is their sister property, the very upscale Tally Ho Inn, an engaging boutique style B and B. La Playa Carmel, another historic hotel built in 1905 as a luxurious private mansion for a member of the famous Ghirardelli chocolate family, was converted to a hotel in 1916. With numerous expansions it has maintained a yesteryear ambience and added more colorful gardens through the years. It has long been one of our favorite getaway destinations with an ideal location equidistant between the beach and shopping and their year-round heated pool has always been an allure. A recent ownership change and an infusion of millions of dollars of much needed

When mentioning Carmel, shopping may be the first thing that comes to mind. And for good reason! Carmel and shopping are practically synonymous. Just strolling Ocean Avenue, the town’s main street, will be shopping paradise for you ultra-shoppers but don’t miss all the side streets, semi-hidden courtyards and alleyways for an abundance of additional intriguing stores, boutiques and art galleries. There are over 80 galleries in town but the Carmel Art Association, the area’s oldest at 83 years young, features local artists and remains our personal favorite. www.carmelart.org For home accessories, furnishings and an eclectic selection of contemporary gift items drop into Carmel Bay Company, a landmark since 1972. www.carmelbaycompany.com

We’ve actually seen Clint at the bar a few times watching sporting events and you might spot him as well. But keep in mind it’s not the “Carmel thing” to bother him for an autograph. The kitchen has always captivated Molly Hawks, Executive Chef and Co-Owner of Hawks restaurant in Granite Bay. Growing up in a food-focused house where food brought family together, it’s hard to believe that Hawks was not always on the path of culinary excellence. A one-time pre-med student, Hawks found herself abandoning a career in the medical field to follow in the direction of her longtime passion, the kitchen. She enrolled at the California Culinary Academy, and while studying culinary arts, she held positions at Lapis and Live Fire restaurants, and eventually landed a line cook position at Woodside’s critically acclaimed The Village Pub. Hawks natural talent and sophisticated palette impressed then Executive Chef Mark Sullivan, who swiftly moved her up through

the ranks. She obtained her prestigious CCA degree, and settled quite nicely into the Sous Chef position. From there, she achieved the highly sought-after role of Chef de Cuisine giving her the control over both the business operations and culinary undertakings. Hawks attributes moving from cook to chef as a defining moment in which she solidified her confidence as an up and coming culinary contender. She was able to nurture her style and hone her business acumen. For Michael Fagnoni, Hawks Executive Chef and co-owner, the kitchen is home. Growing up in his grandmother’s kitchen, Fagnoni crafted great Northern Italian feasts alongside side his grandmother. Little did he know that he was laying the groundwork for his future; a future that consisted of an impressive culinary career. He

learned classic culinary skills and the significance of house-made creations- like handcrafted pasta at the apt age of fifteen. Fagnoni went on to graduate from the Culinary Institute of America in New York on the Dean’s List with honors. An externship took him to San Francisco where he settled at renowned Bix Restaurant. From there, he moved to the highly refined Oceana Restaurant in New York City, a bustling environment which taught Fagnoni self-discipline and the ability to perform under pressure. Fagnoni was thriving, turning the heads of culinary leaders, as he trail blazed his way through celebrated kitchens in San Francisco, ultimately making his way back (for a second time) to The Village Pub, where he met his future wife, Molly Hawks. With their thoroughbred education and
extraordinary culinary accomplishments, husband and wife team Fagnoni and Hawks opened Hawks Restaurant, a warm California locale where countryside meets rich, modern elegance, and home-style recipes are served up with a chic twist. The restaurant is comfortably sophisticated with rich and cool tones of chocolate browns and silvery blues. Rich fabrics, lotus flower chandeliers, and a glass wine room offer a contemporary rustic feel with fine dining flairs. WINERY Andis offers classy wines with modern appeal.
Andis Wines is a project that launched less than four years ago to produce premium Sierra Foothills wines. In doing so, it also opened the most architecturally modern winery and tasting room that Amador County has ever seen the likes of. While the 17,000-square-foot building is designed to be functionally efficient, it is visually stunning and absolutely unique in appearance. The first thing visitors take in as they drive into Andis is the striking wall of recycled barrel staves extending the length of the building. Geometric patterns suggest modern winemaking techniques, and clean, crisp lines exhibited by the resulting wines. Glass walls hug the tasting room, and a spacious lawn with tables and large shade sails provide a place to take in the astonishing view of the area. Guests are often seen wiling away the afternoon in the California sunshine with a picnic lunch, and of course, a glass of wine in hand. A metallic aerodynamic structure set on a hilltop, Andis soars through the perpetual breezes. Surrounded by vineyards in the heart of Amador County, Andis presents elegant wines resulting from innovative production concepts. Their goal is to craft delicious wines with balance, character and complexity. All of their 62
fruit is hand sorted and fermented in small lots to promote diversity of style and varietal correctness. Using both traditional and innovative winemaking approaches, Andis Wines have quickly garnered glowing reviews, high nods from Wine Spectator and Wine Enthusiast, and placements in some of the finest restaurants in Northern California and Hawaii. Although this ultra-modern facility was built in 2010, The Andis vineyard surrounding the winery was planted in 1978, and Andis saw its first vintage produced in 2008, just prior to its opening. “Andis” is a combination of the first names of founders and spouses Andrew Friedlander and Janis Akuna. Friedlander, hailing from Hawaii, cofounded and built the largest commercial real estate company in the state. He has always had a penchant for the art of fine wine. So, as the story goes, it took only one memorable night in Amador for Friedlander to take up digs in the Sierra Foothills where he could relish in the unique wines and flavors offered by this Northern California region. Janis Akuna, Vice President with Morgan Stanley Wealth Management, splits her time between Hawaii and California. Akuna oversees the operational and

philanthropic activities for the winery, contributes to the marketing effort, and sits on the tasting/ blending panel. She has been known to claim that the winery business is in her blood, mostly through osmosis. Mark McKenna, Andis’ Winemaker and General Manager, became involved with Andis Wines during its inception. Actively involved in the planning of the winery and design, McKenna considers it a privilege to call wine work. The feel of a wine cellar and the rhythm of the work of wine made his choice to go into this industry an easy one when he was at the ripe age of twenty-one. The folks at Andis will tell you that they believe in wines of grace and place. They love the craft and the discussion that good wine brings… And, discussion- about these matchless wines- there has been an abundance of... Andis has been touted as producing a world
class Sauvignon Blanc. The winery is also proud of, and rightly so, it’s Cabernet Franc, Barbera, and Painted Fields (a blend); as well as the Zinfandel and Syrah, for which this region is renowned. RIPKEN WINERY & VINEYARD Making Wines With Conviction BY HEATHER REAGAN
The 60th winery of Lodi, Ripken Vineyards & Winery is no stranger to the business of wine. Although they crushed their first vintage in 2003, they are third generation growers since 1950. If you ask the Ripken family, they will tell you that they seek the road less traveled to bring you wine that is different, adventurous. While Lodi is the epicenter of Zinfandel grapes and approximately 80 wineries, Ripken Vineyards & Winery presents a portfolio of lesser known varietals. According to Patriarch Rip Ripken, “We don’t make boring wines.” And corner the market on anything but boring just what the Ripken family has done. Coming to Lodi from Germany by way of the Midwest, the Ripken’s crew crops in the Delta until Rip Ripken attended the University of California in Davis. At Davis, Viticulture captured Ripken’s attention, and he submerged himself convincing his father to convert their Lodi property into vineyards so that he could pursue his newfound passion. The vineyards here are rich in heritage.

“My Dad started making wine in this very barn”, shares Susan Ripken, now the Winemaker for their family owned and operated winemaking and grape growing outfit. “It was his little hideout place, and over the years he began growing more unique grapes. He was steadfast in his claim that ‘We make wines of Conviction!’” And with those power-packed few words, Ripken has become a self-proclaimed artisan winery that is distinctively different, eclectic, and idiosyncratic. Their philosophy according to Rip is simple: Know the basics first; then, add style. Ripken produces very small lots of different wines mostly under 100 cases, using classic techniques such as gentle crushing, barrel fermenting white wines, selecting yeasts, hand punchdown, less stirring, and bottle aging. Their mantra is, “These wines were made one bucket, one barrel, one bottle at a time.” Their grape growing focuses on maximizing flavors, reduced but adequate irrigation or nonirrigation, sunlight to the cluster, full ripeness for flavor, moderate size crops, adequate soil fertility and organic matter in soils. All this attention to detail leads to full flavored wines of good mineral content, which are balanced and very pleasing when released. They appeal to wine drinkers that wish to explore the joys of Marsanne, Roussanne, Viognier, Malbec, Petite Sirah, Carmine, Petit Verdot, Alicante Bouschet, Tempranillo, Graciano, Souzao, Touriga National, Grenace, Mourvedre, Montepulciano, Barbera, Dolcetto, or Corvina as blends or varietal wines. “We like to educate

people on different varietals and get them comfortable without the traditional Chardonnay and Cabernet Sauvignon,” Susan Ripken explains, “We offer Malbec instead of Merlot; it’s fun to introduce our winery guests and their palates to other great wines.” The Ripken operation is as family as it gets, and Susan wouldn’t have it any other way. A Jill of all trades, she filters, she bottles, manages the tasting room, works on the books, or in the fields. An outspoken supporter of Lodi Rules, (The Lodi Rules for Sustainable Winegrowing is California’s first 3rd party-certified sustainable winegrowing program.) Ripken, hand in hand with many other Lodi wine grape growers, takes a comprehensive approach to farming that goes beyond just pest management to promote practices that enhance biodiversity, water and air quality, soil health, and employee and community well-being. “I come from a history of farming. I envision what is best for Lodi and the farm in the future, not what is best for me now,” Susan Ripken advocates. Ripken Vineyards and Winery grows their own rootstock and has collected different varietal clones and selections for forty years, and today, they have more than 1,000 acres of grapes. Less than one percent of their vast grape acreage is made into Ripken wine; the rest is sold to bulk winemakers. The Ripken Sargent Road tasting room opened in 2005. With a trademark metallic blue building marker, the tasting room follows suit to their wine- rich and esoteric, complete with furniture crafted from wine barrels. On the patio outside the tasting room a 16 ft. massive redwood table hewn from a tree that fell in the Ripken’s backyard serves as an apparent token of the Ripken family’s strong roots and legacy- a parallel that isn’t an oversight. The Ripken family beckons you to meet them on the road less traveled to share a glass of wine that is anything but ordinary.

Vegetable oil cooking spray • Filling 1 (13-ounce) jar apricot jam or preserves (about 1 1/4 cups) 8 dried apricots, chopped into 1/4-inch pieces (about 1/3 cup) Crust 1 3/4 cups all-purpose flour 1 packed cup light brown sugar 1 teaspoon ground cinnamon 3/4 teaspoon fine sea salt 3/4 teaspoon baking soda 1 3/4 cups old-fashioned oats 1 cup (4 ounces) coarsely chopped walnuts 1 cup (2 sticks) unsalted butter, melted 1 egg, at room temperature, beaten 1 teaspoon pure vanilla extract
DIRECTIONS
For the granola: Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with cooking spray or brush lightly with canola oil. Combine the oats, almonds and walnuts in a large bowl. Combine the honey, canola oil, olive oil, sugar, syrup, vanilla, cinnamon and salt in a medium bowl and whisk until smooth. Add the wet ingredients to the dry and mix well until combined. Turn the mixture out onto an 11- by 7-inch jelly-roll pan, and spread into an even layer. Bake, stirring and re-spreading the mixture into an even layer every 5 minutes, until the granola is light golden brown, about 45 minutes. Immediately turn the granola out onto another jelly-roll pan to cool and stop the cooking process. Stir in the apricots and raisins and then spread the granola evenly in the pan. Set on a wire rack and cool to room temperature. Loosen any dried granola with a spatula and store in an airtight container. For the parfait: Combine the nectar, apricots, sugar and 1/4 cup water in a small saucepan and bring to a boil over high heat. Reduce the heat to low and simmer until the apricots are soft, about 10 minutes. Transfer to a blender and blend until smooth. Transfer to a bowl and cover. Let the mixture chill in the fridge. Fold the apricot puree into the yogurt (don’t combine completely), and layer in parfait glasses with the California granola.

Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Spray a 9 by 13 by 2-inch metal baking dish with vegetable oil cooking spray. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil cooking spray and set aside. Filling: In a small bowl, mix together the jam and the apricots. Set aside. Crust: In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg and vanilla and stir until incorporated. Using a fork or clean fingers, lightly press half of the crust mixture onto the bottom of the prepared pan. Using a spatula, spread the filling over the crust leaving a 1/2-inch border around the edge of the pan. Cover the filling with the remaining crust mixture and gently press to flatten. Bake until light golden, about 30 to 35 minutes. Cool for 1 hour. Cut into bars and store in an airtight container for up to 3 days.

Green, Red and White are much more than colors that make up the Mexican flag. They symbolize a respect for our neighboring nation.
