FROM OUR EDITOR

IT’S ALL

As we all know, this month marks a big milestone for our country, and I’m sure many of you are celebrating with fireworks, food and family. I know I am! But I’m also recognizing this anniversary year in a more subtle way. My maternal grandfather, Wilfred Auger, was a doctor and a collector of early Canadiana. I remember visiting his house as a child, being fascinated by the trinkets and objets – and the best part was that nothing was off-limits. I held and examined each piece for hours. Upon his death, many of the items were donated to the Royal Ontario Museum. I’ve never seen them on display, but I think it’s high time I did. I’ll be taking my stepdaughters with me through the galleries to look at not only those emblems of our personal history, but also the works of other Canadian artists and artisans so we can further appreciate our collective heritage. That kind of consideration for what connects us to our country is something this issue is all about. It’s not just eating poutine and wearing red and white on July 1 – it’s placing value on the deeper ties to Canada as well. That’s why we asked all the homeowners we’ve featured here to highlight the most Canadian aspect of their homes. We’d love to hear what makes your home Canadian. Write to us at letters@styleathome.com and let us know. However you celebrate Canada Day, we hope you do it in style!

Erin McLaughlin erin@styleathome.com

Behind Scenes THE

One of my favourite ways to spend the day is going on a photo shoot with our talented home and style director, Ann Marie Favot. We’ve been friends as long as we’ve been co-workers, and it’s always way too much fun to be on set with her. Here, we’re at the home of designer Margie Doyle White (see “Easy Breezy,” page 64), standing in while über-talented photographer Donna Griffith tests the light for the homeowner’s portrait – and, of course, snapping a selfie while we’re at it.

STYLEATHOME.COM JULY 2017

INGREDIENTS MAKES 15 CREAM PUFFS

½ ½ ½ 4 1 4 1 ½ ¼ ½ 2

cup 2% milk cup water cup unsalted butter tbsp granulated sugar, divided cup all-purpose flour large eggs cup 35% whipping cream cup + 2 tbsp icing sugar, divided cup crème fraîche or sour cream tsp pure vanilla extract cups sliced hulled fresh strawberries

DIRECTIONS Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper. In a medium saucepan, gently heat the milk, water, butter and 2 tablespoons of the sugar to just under a boil. Remove the pan from the heat and add the flour all at once. Mix vigorously with a wooden spoon until the mixture is blended. Return the pan to the heat and stir until the dough forms a shiny ball and pulls away from the sides of the pan, about 1 minute. Let cool for 5 minutes. Add the eggs one at a time, beating well with the wooden spoon after each addition. The dough will separate but will come back together as you stir. Using a pastry bag fitted with a large star tip, pipe 15 walnut-sized mounds about 2" apart onto the baking sheet. Bake until puffed and golden, 25 to 27 minutes. Transfer the cream puffs to wire racks to cool completely. In a clean bowl, whip the cream with an electric hand mixer until soft peaks form. Whip in 2 tablespoons of the icing sugar, the crème fraîche and vanilla until blended; chill until ready to use. Stir the strawberries with the remaining 2 tablespoons of sugar in a bowl. Let macerate for 15 minutes, until the fruit is slightly softened and a little bit juicy. Pour 2 tablespoons of the strawberry juice into a small bowl and mix with the ½ cup of icing sugar to make pink icing. Slice the cream puffs in half horizontally with a serrated knife. Fill the bottoms with sliced strawberries and top with some of the whipped cream. Replace the tops and drizzle with the pink strawberry icing to serve.

11-19 POINTS JUST VISITING Thanks for stopping by! Were the people friendly? How was the food? You may be disgusted by poutine and Caesars, but we hope you at least stocked up on maple syrup. Though you’re plenty nice, we can tell you’re not from here from all the polished wood, rich materials and heavily flourished finishes you’ve been pinning on Pinterest. Is there any rough-hewn wood on that page? A buffalo check blanket? Why not celebrate this country with some true Canadian kitsch and stay awhile?

STYLEATHOME.COM JULY 2017

Ah, you fair-weathered patriot! You may love this country in the summer but, come winter, you’re itching to escape to warmer climes. It’s written all over your decor, what with your tropical plants, exotic woods, bold patterns and objets from far and away. We can’t say we blame you – the grey skies and chilly temps tend to turn us into shrinking violets too, but believe us: Luxe winter decor, such as cashmere throws, faux fur toss cushions and artwork of the most serene snow-covered landscapes, makes cold days seem far more lovely.

Cross-country skiing to work. Spotting a bear near your campsite garbage can and calmly waiting for it to walk away.

Perhaps that bear is scrounging for some leftover Timbits.

Citizens swear it, but the Bank of Canada denies it! Do you think the $100 bill smells a little sweet?

29-37 POINTS SCANDI-NADIAN On the surface, you’re a true Canadian with a penchant for apologizing and a devotion to the outdoors. You’ve probably already packed for your next camping trip and, as far as you’re concerned, a brisk day out in the snow is nothing short of beautiful. You like things relaxed and rustic – which is oh-so Canadian – but your reverence for clean architectural lines, Mid-Century Modern-style furnishings, quirky handcrafted accessories and that Scandi je ne sais quoi makes your decor style more at home in Norway or Sweden. So the next time you’re searching for unexpected accents, source your antiques and accents locally for a patriotic punch.

Bob & Doug McKenzie.

A $100 bill that smells like maple syrup.

34-44 POINTS TOTAL HOSER Can one get more Canadian than you? We can just see your barnboard floors and decorative birch branches proudly on display. And…is that an HBC multistripe mug in your hand? You probably need it just as much after a day of hiking as you do following time spent ice fishing and cross-country skiing. While we high-five your devotion to the True North, think outside the cabin and incorporate some international flair into your decor – try a tribal pattern or tropical plant. To speak in Tim Hortons terms: We double-double dare you.

A family home’s fresh and airy upgrade comes together with luxe details, lots of layers and an elegant neutral palette. TEXT IRIS BENAROIA | PHOTOGRAPHY ERIC FORSYTH

TELEVISION SHOW reveals rarely disappoint – there’s that thrill of watching a major transformation unfold, topped only by witnessing the homeowners’ reactions. And though the redesign of this 4,000square-foot four-bedroom home in midtown Toronto wasn’t televised, its unveiling was just as exciting. When this couple bought the openconcept house for their family, which includes a teenage daughter and tween son, it was already in great condition thanks to a recent reno. Warm hardwood floors trailed beautifully throughout the main floor, and the crisp white kitchen (not shown) felt modern and new. “But the homeowners wanted to infuse a personal touch,” says interior designer Tara Fingold, who had revamped the couple’s previous abode to great success. “They wanted a cozy and practical family-friendly design that still felt elegant,” she says. So Tara set about layering glamorous yet livable elements for a fresh and airy feel. From the comfy kitchen banquette to the cushy tufted coffee table to the sofa everyone wants to curl up on, laid-back sophistication reigns – because, let’s face it, it’s no fun when a family house is so stiff that you feel awkward putting your feet up. “Layering fabrics, finishes, textures and furnishings creates easy warmth,” says Tara, noting that tailored details and tufting add plush polish. Elegance extends upstairs to the master bedroom and dressing room, where a dreamy grey, blue and white palette and reflective surfaces envelop the spaces. Lucite details and a covetable closet amp up the glam. “Our goal was to make it feel like a hotel suite,” says Tara.

READY FOR ITS

DECORATING

“They were THRILLED, overwhelmed, happy and GRATEFUL.”

LEFT The unfussy and über-durable vinyl-upholstered banquette in the kitchen’s eat-in area epitomizes the lessis-more rule, while the ethereal Lucite chandelier lets light flood in. “We incorporated a rounded custom banquette that’s not built in, so it offers flexibility,” says Tara. “The homeowners can move it around to squeeze in more seats when they entertain.” The backs of the dining chairs sport a subtle lilac pattern for soft colour and interest. BANQUETTE FABRIC, Kravet Canada; PENDANT LIGHT, Universal Lamp.

Reflective sparkly accents, such as this textured silver lamp base set on a curvy high-gloss side table, impart pared-back glamour to the house.

Today, the whole house is fresh, clean-lined and inviting. “We decorated from a total blank slate, with the homeowners’ complete trust,” says the designer. “And kitting out the space from top to bottom all at once enabled us to deliver a cohesive look – and a lovely surprise for the homeowners, who were living elsewhere during the makeover.” Tara brought in all the furniture and accessories over time, but the day before the family moved in, the designer and her team styled the whole space, right down to hanging family photos and setting out trays. And that’s how she achieved the big TV-worthy reveal. “They were thrilled, overwhelmed, happy and grateful,” says Tara, noting that the homeowners even shed tears of happiness. And that’s about the time the television audience would tear up along with them.

LEFT & RIGHT Tara carried the carpeting from the bedroom into the dressing room to unite the spaces. The brand new dream closet is one of the designer’s signatures. Ombré fabric panels “add an element of grandeur and break up the cabinetry,” she says. Behind them is storage for dresses, while handbags, shoes and more clothes fit in the drawers. The hardware is Lucite and chrome for a luxurious finished look. CHANDELIER, SCONCE, Universal Lamp; CLOSET HARDWARE, ADH Fine Hardware.

Enveloped in soft blue hues, the light-filled master bedroom is a restful retreat – there’s even a spot to sit and enjoy a book. Plush textiles cozy up the space thanks to the addition of a white velvet headboard, blue linen drapes and cushy carpeting. “We stuck with whites and blues, so it’s very fresh, romantic and pretty,” says Tara. “And it’s a large room, so it could handle the patterned floor cover.” SIDE TABLES, Elte; BEDDING, TOSS CUSHIONS, LUMBAR CUSHION (on bed), Au Lit Fine Linens; CARPETING, Dominion Rug & Home; PENDANT LIGHT, Universal Lamp.

Though small in size, this elegant and eclectic basement bathroom is big on style.

STYLEATHOME.COM JULY 2017

In her tiny bathroom, designer and homeowner Sarah Marie Lackey used every inch of space. The floating wall-mounted vanity adds airiness, while the frameless mirror bounces light around and expands the room.

LEFT & FAR LEFT Since she was on a budget, Sarah used inexpensive accents and meaningful objets as accessories: The artwork is actually framed magazine clippings, the time-worn teal and gold tin once held cookies Sarah’s grandmother baked for her as a child (today, it holds nail polish) and old Scrabble pieces labelling the room continue a theme found throughout the whole house. BELOW Vintage-looking yet totally trendy encaustic floor tiles suit the home’s retro vibe, as do the pendant lights, which boast a Mid-Century Modern appeal.

At

only four feet by six feet, designer Sarah Marie Lackey’s main bathroom was a smidge bigger than a closet – and upsizing it was impossible thanks to the arrangement of certain pipes. Sarah and her husband, Brady Horvath (an electrical contractor), had purchased this 2,200-square-foot split-level home in Squamish, B.C., in the fall of 2015. Nestled beside a river and boasting views of the sublime Stawamus Chief mountain, the house’s location had everything the couple could want; after buying, they decided to live in the home’s 640-square-foot basement and rent out the rest to save money. After overhauling the main floors, Sarah turned her attention to the “raw, nasty cavernous basement” and started transforming it into a cute couple’s pad. When the time came to focus on the bathroom, Sarah set about stylishly maxing out a space that had zero charm. “There were 1970s laminate floors and an awkward corner shower that jutted out

An unsightly corner shower unit was swapped for a subway-tiled shower with a small four-foot-long tub (as opposed to the standard five feet). “[My husband] Brady drove to Bellingham, Wash., to buy it because we couldn’t find anything that size locally,” says Sarah. A fringed cotton shower curtain offers boho appeal. RIGHT Mementoes adorn the window ledge: The Listerine relic was found at an antiques shop, the tissue box cover was Sarah’s grandmother’s and the ouzo bottle was scooped up in Greece on a special European backpacking trip the couple took before they were married.

six inches into the room,” says Sarah. Plus, the space’s only sink was insufferably tiny. “Brady’s one request for the reno was that he get his own sink,” she says with a laugh. But Sarah also wanted style, which she delivered via sophisticated yet glam brasshued pendant lights, classic and trendy tile treatments and unique personal keepsakes. “I wanted to keep it simple but interesting,” says the designer of the week-long gut job that included adding a fresh floating vanity with two sinks and replacing the strange shower unit with a tiny four-footlong bathtub (“a stubby tub,” as the couple call it) with a subway tile shower. Grey grout picks up on the dynamic vintage-look grey and black encaustic floor tiles, which catch the eye as soon as you enter, and match the rest of the ’70s house. “I wanted to establish a retro feel while keeping the space contemporary, clean and crisp,” says Sarah. Mission accomplished. For such a small place, it’s certainly big on style. RED HOT SUMMER This is the month we look to for easy stress-free days in the sun and sultry nights under the stars. Our decorating aligns as we adorn our rooms with simple white pieces and crisp bright accents to beat the heat.

Summertime's billowing white clouds and crisp blue skies are an apt analogy for Margie Doyle White's home. Rooms bask in sunshiny brightness, breezy hues pack a fresh punch, and the getaway feel of easy living permeates every nook and cranny. “My style is really beachy and casual,” says the homeowner, who’s also a designer. “And I’m nuts about entertaining.” Translation: This is a chic yet laid-back place where friends hang out drinking cosmos, helping themselves to charcuterie at the kitchen island and chatting the night away. But, as with all big makeovers, what came before these social scenes was anything but inviting. Margie bought the house two years ago, falling for its leafy location on a quiet cul-de-sac and clocking the potential hidden behind its dated look. “When I first viewed this place, its rooms were primer-painted drywall boxes with floors that were a wreck and

pattern plays GO TONAL “If you’re going to mix colours, there is only one rule: Make sure they share the same warm or cool undertone. Avoid matching cool shades with warm ones at all costs – it creates a mucky effect that’s anything but fresh and light.”

RESPECT SCALE “When mixing patterns, look at the scale of each one. You can mix any patterns so long as they share the same scale, whether all tiny prints or all big.”

USE LIBERALLY “Think beyond toss cushions! Even though I love them and every room should have them, it’s important to incorporate patterns in other ways, such as with Roman shades and drapery. That way you have a beautiful layered effect throughout the room and the house.”

The dining room is open to the kitchen so it had to be casual. “I designed comfy seating that guests could sit on for hours because I love a good dinner party,” says Margie. an ’80s kitchen with orangey oak cabinets,” she says. “There was zero personality.” For a hostess with the mostest who loves the cheery chaos of a full house, this just wouldn’t do. Sharing the 2,200-square-foot abode with two daughters (though one is away at school), her partner, Michael, and their cockapoo, Monty, Margie envisioned the finished space through the prism of her fantasy beach house, yet she designed it while rooted in reality. “You should never fight the feel of a house or its surroundings. I may dream about living by the ocean, but this isn’t the Hamptons. It’s a traditional home in the middle of Toronto, so I had to honour that before I could inject any seaside-chic vibes.” She masterminded an eight-month down-to-the-studs overhaul, which included knocking out the wall between the kitchen and dining room to create an open space conducive to socializing, installing French oak herringbone flooring throughout the main level and introducing a hint of tradition with custom millwork. She even snuck in an extra front hall closet on one side of the archway leading to the living room. “This formal white envelope conveys that this is a city home but still allows me to infuse some beachy fun,” says Margie.

Bright white walls are the fresh backdrop for layer upon layer of powerhouse patterns and hints of sandy taupes and watery blues. “Together these colours create an airy effect that reminds me of being outdoors,” Margie says. Wherever possible, she balanced traditional elegance with toes-in-the-sand simplicity by countering something luxurious, such as the Italian marble in the fireplace surround, with something humble like seagrass and jute rugs. It’s a dynamic tension found throughout the house: The dining room’s contemporary light fixture is perfectly in sync with its antique farm table; the utilitarian mud room boasts silk grasscloth wallpaper; and slipcovered furnishings seamlessly coexist alongside a spare-no-expense marble-lined bathroom. To Margie, it’s a design that marries urban living with coastal charm. “Sometimes I feel more like I’m living in a summer cloud than in the middle of a fast-paced city,” she says. “And sometimes, even the beach.” FOR SOURCES, SEE OUR WORKBOOK

How one decorator transformed a struggling heritage house into a glorious tribute to Canada’s early settlers.

WITH HISTORY STYLEATHOME.COM JULY 2017

| 73

The L-shaped kitchen was gutted, leaving only its original wooden ceiling. Decorator and homeowner Cynthia Weber had custom cabinetry fabricated by a local Mennonite craftsman, while her husband, Kent, an avid woodworker, created the serving board and cake stand. Eye-catching elements like the oversized pendant light, built-in wine storage and nailhead-trim stools add European country charm. OPPOSITE, TOP The door leading to the basement is new, as are the baseboards, which were milled to match the pre-existing accents. LEFT Stencilled-on details, such as the home’s completion date, make the kitchen one of a kind. The apron sink, butcher block countertop and Shaker-style cabinetry deliver a farmhouse-fabulous vibe. BELOW Situated on seven lush acres, this house was an extraordinary accomplishment that took two years to construct, starting in 1876, using horse-drawn wagons. The verdant surroundings, however, have been fixtures much longer.

Nine years after Confederation, a determined Scotsman named James McFarlane set out to build a house near southwestern Ontario’s Maitland River. It’s been almost 140 years since he and his hired crew finished painstakingly hauling limestone and granite from the river to the building site via horse and cart, but the walls still stand, the halls still echo and the windows still give way to some of the loveliest views in Huron County. “Quite simply, this house is Canada,” says decorator and homeowner Cynthia Weber. “I often imagine the gargantuan task it must have been to build this place, one stone at a time. What a testament to the work ethic and pioneer spirit that built this great country we are so privileged to call home.” When Cynthia and her husband, Kent, purchased the 2,800-square-foot house (dubbed BannockBurn 1878), however, it had morphed into a less-than-lovely rendition of itself. The floors were a mishmash of heights and finishes, and “the kitchen had peach tile, sorbetcoloured walls and a bank of lower cabinets that completely obstructed the views from two large windows,” says the decorator. STYLEATHOME.COM JULY 2017

| 75

SLUG TOCOME

But thanks to Cynthia, all that has changed. The kitchen, now one of BannockBurn’s most striking rooms, was completely gutted, its floors ripped up and replaced with Canadian white oak. Throughout the house, the walls and millwork were painted white – but not just any white. “For the dining room walls I had a custom shade of white created, matched to a piece of the home’s original moulding,” she says, noting that there’s tremendous nuance in working with white, so she carefully considers each application. “A white paint will look different in matte, which is great for walls, than it will in semigloss, which is better suited to trim.”

The floor plan meanders, one room giving way to the next. Here, the kitchen spills into the dining room. Pale floors, which run throughout the main floor, unite the rooms and add contrast to the dark cabinetry, while the wooden accents warm up the space.

STYLEATHOME.COM JULY 2017

Cynthia may not have dragged stones from the river for this project, but she didn’t cut corners in establishing authenticity, either. “For the locally sourced custom cabinetry,” explains Cynthia, “I’d first fax the general store, which would then contact the cabinetmaker, a Mennonite craftsman. He’d then travel to a phone booth and call me to make an appointment, for which I’d drive my drawings out to him.” The process took patience, but the results speak for themselves: a black and white trophy kitchen, all corbels and curves, wood and stone, that pays artistic homage to rural life and boasts a laid-back urban sensibility.

What appears timeless is really Cynthia’s genius at work: The fireplace is completely faux. The moulding, tile work and mirror were added for heft and grandeur, and the screen is actually a vintage footboard. The exterior carriage

lanterns flanking the fireplace add another traditional country element to the room. Linen-coloured ARMCHAIR FABRIC, Kravet Canada; ARMCHAIRS, Gresham House Furniture; OTTOMAN, Kent Weber; ROMAN SHADE & LUMBAR CUSHION FABRIC, JF Fabrics; RUG, eCarpet Gallery.

The same stunning style spills into the rest of the rooms. Hand-turned woodwork and locally sourced antiques are placed in just the right spots, their warmth and patina providing the perfect backdrop to curl up to read, sip wine or simply gaze out the windows at the nearby pasture. Original artwork by internationally acclaimed Canadian Peter Etril Snyder (who also happens to be Cynthia’s dear uncle) keeps the storied design rooted in family history, too. Though the stunning property requires constant attention, these heritage-loving homeowners have now set about restoring an old orchard as well. Additionally, they regularly host outdoor summer gatherings, tend large vegetable gardens, grow herbs and care for two miniature horses, five chickens, a rooster and two dogs. All the while Kent refinishes and creates custom furniture, and Cynthia runs her decorating business from the house’s top floor. Needless to say, life here can get hectic. “But even on the busiest days,” says Cynthia, “Kent and I find time to walk the horses and dogs through the pasture while the sun sets over the valley.” Which is exactly how we envision all of BannockBurn 1878’s decades of occupants spending their evenings. Yes, its murky yellow walls had to go, but other than that, the homeowners had very few requests. “One of the words they kept going back to was ‘fresh’, so I ran with it,” says Jacquelyn. “And beyond that, they essentially gave me carte blanche to do as I saw fit.” So Jacquelyn began a reboot with minimal, mostly kitchencentric renovations. A breakfast bar that was never used (other than as a place where junk mail went to die) was removed and, with it, two sinks that had been installed in an awkward Lshape in a corner. “I replaced

those with one enamelled cast iron beauty,” says Jacquelyn. The Oriental White marble-tiled backsplash and Caesarstone countertops completed the major installations, and then Jacquelyn focused on the fun: furnishings and paint colours. Yellow walls were overhauled with crisp white, and the wishywashy caramel-coloured kitchen cabinets were sprayed a pale blue-grey shade chosen with the owners’ sectional in mind. “It was the only item of furniture they wished to keep, and its beautiful minty seafoam green shade served as the jumpingoff point for the watery palette throughout the main floor,” says the designer. It’s a palette not restricted to only paint. “Wallpaper is making a serious comeback,” says Jacquelyn, “and with good reason. It’s an incredible way to add wow factor.” She applied it to only small areas, like the wall going up the stairs and a landing, so it makes an impact without breaking the bank. Against this graphic backdrop, Jacquelyn layered in furnishings which, together, have a curated, collected-over-time feel even though, except for the sectional, they’re all new. “I like using classic pieces in a modern way,” she explains. “I call it tradition with a twist.

LEFT Jacquelyn relied on a rug to delineate the dining area. “It’s smack dab between the kitchen and living room, so it is a bit of a thoroughfare. The organic shape of a hide rug anchors the space and is a bit of a departure from the more expected rectangular rug, which would have felt too serious here.” DINING TABLE, RUG, Black Rooster Decor; DINING CHAIRS, Calligaris; CHANDELIER, Arteriors Home.

The homeowners agree. “I had resounding yeses from them at every meeting, and they are thrilled with the results,” says Jacquelyn. “They were dream clients who trusted me from the get-go to bring their home back to life...and I think I did.”

CHILI LIME BUTTERED CORN ON THE COB

tip The secret to grilling fresh-picked corn on the barbecue is a slow cook on low heat, keeping the cobs moist and the kernels juicy with a little smoky flavour. It helps to cook the corn in the husk to protect the delicate kernels.

cobs sweet corn, in the husks cup unsalted butter, softened tbsp chopped fresh cilantro tbsp chopped green onion tsp minced fresh red chili or jalapeño pepper 1 tsp lime zest ¼ tsp smoked paprika 1 lime, quartered Maldon sea salt to taste Heat the barbecue to medium. If there are many tight layers on the cobs, peel the first dark green outer husks from the corn, leaving just a few protective inner layers. Gently peel back the inner layers just far enough to remove the silk without detaching the husks from the cob. Then place the corn in a large bowl of water to soak for 10 minutes. (The water will help prevent the husks from burning and will help keep the corn moist so the kernels steam inside the husks.) Shaking off the excess water, pull the husks around the corn to enclose the kernels. Place the cobs directly on the grill – but not on the hottest part – and close the lid. Turn the cobs every 5 minutes for about 20 minutes, until lightly charred. The kernels should be tender-crisp but not mushy, with just a few grill marks. While the corn is cooking, mix the butter, cilantro, green onion, chili pepper, lime zest and paprika in a small bowl to make a soft butter. When the corn is cooked, peel back the husks, removing any silk, and slather with the chili lime butter. To serve, squeeze the lime wedges over the corn and sprinkle with the sea salt.

lb Campari-style tomatoes, chopped cup torn fresh basil leaves, divided 8-inch flatbreads cup fresh corn kernels (cut from 2 cobs) cup chopped baby spinach oz bocconcini cheese, torn into 12 pieces cup freshly grated Parmesan

In a skillet, heat the olive oil over medium heat. Add the garlic and stir until fragrant but not browned, about 1 minute. Lower the heat to medium-low and add the chopped tomatoes; cook for about 25 minutes, until the tomatoes break apart and become saucy. Remove from the heat, add half of the basil and season to taste with salt and pepper; set aside. Preheat the oven to 450ºF. Place a

baking sheet on the bottom rack to catch any spills. Place the flatbreads directly onto the centre rack and bake for about 3 minutes, turning once halfway through cooking time. Remove the flatbreads from the oven and top each with ¼ cup of the tomato sauce, corn and spinach. Add 3 pieces of bocconcini and 2 tablespoons of Parmesan to each. Using a large spatula, return the flatbreads to the centre oven rack. Bake for 8 to 10 minutes, until the cheese is melted and bubbly, and the crusts are crisp and nicely browned. Pull out the oven rack and slide the pizzas onto individual cutting boards. Sprinkle each pizza with the remaining basil and cut into slices to serve. STYLEATHOME.COM JULY 2017

Reduce the heat to medium and gently simmer for 20 to 25 minutes, stirring occasionally, until most of the liquid has absorbed and the vegetables are tender. Remove from the heat and let cool. Transfer to a dish and serve immediately on beef, salmon or tuna burgers with Boston lettuce and mayonnaise on a soft brioche bun. Lay the strips on a large plate. Chop the blossoms into fine strips and sprinkle them and the onion slices over the zucchini ribbons.
