Hi everyone and welcome to our February issue, free for tradies to take home and enjoy – wherever you are in Australia! How were your summer holidays? We hope you had a blast! It may be “back to reality” for most of us now, but the first half of 2015 has plenty to keep your spirits up, what with the Cricket World Cup, the Future Music Festival and Cirque du Soleil’s TOTEM performance. You can find all the details on these in this issue, including reader giveaways. One upcoming event we are particularly excited about is the Top Gear Festival, which will be returning to Sydney in mid April. I was lucky enough to speak with one of Top Gear’s hosts, Richard Hammond, about the show (pages 10-11), as he will be heading to Australia to attend for the first time. For those of you planning an overseas holiday this year, we have some food for thought on pages 26 and 27, with a review of Amsterdam and Antwerp by one of our cover girls, Aly Eveille. This

WORLDSKILLS OCEANIA 2015 WorldSkills Oceania is an international competition with more than 100 competitors from New Zealand, Australia, India, China, Canada, Malaysia, Korea and the US. The intense practical competition in 30 skills will be held over four days from April 13 to 17 this year in New Zealand, at the Waikato Institute of Technology, Rotokauri Campus, Avalon, Hamilton. The competition will be open to the public on April 14, 15, 16 and 17. The awards ceremony will take place from 7.30pm on April 17. Reece Plumbing winner Matthew Logmans
Reece has announced the winner of its DIY Disasters competition for 2014. The discovery of a contraption made from an element connected to a plank of timber, used to heat the water in the bath of a 98-year-old man, has secured South Australian plumber Matthew Logmans the 2014 DIY Disasters competition title and a $5000 prize. Matthew found his winning entry when his client’s daughter called him in to install a hot water service in her father’s home. Having had no access to

hot water for 20 years, it was taking the elderly man one hour and 45 minutes each day to warm up his bath with his homemade heating device, not to mention the imminent danger of electrocution. “The man had performed this ritual every night, without the use of safety switches,” Matthew said. “If the element had slipped off, the electricity would have gone straight into the water.” This discovery is one of the worst DIY plumbing disasters Matthew has witnessed in his 10-year career but, alarmingly, he comes across varying levels of disastrous DIY jobs at least once a month. “They try to save a dollar, but the safety implications are not worth the money saved,” he said. Coming in at second place with a $1000 prize was a hot water system with electrical connections in direct contact with a leaking tap. On Friday, February 13, 1970, Black Sabbath released their debut selftitled album, which enjoyed enormous commercial success for a debut hard rock release. Precisely 45 years later, the Yarraville Club in Melbourne will host a Black Sabbath celebration to honour this date and the band (made up of Ozzy Osbourne, Tony Iommi, Geezer Butler and Bill Ward). Performing the entire Black Sabbath debut album live on its 45th anniversary – Friday, February 13 – will be a one-off collaboration of Melbourne’s original heavy rock exponents, brought together for the first time to form a local super group, going by the name Wizards. Wizards will also play an encore set of Black Sabbath favourites, and support acts include Child and F--k the Fitzroy Doom Scene. Tell us a bit about yourself... What do you do and where do you work? I’m originally from the Gold Coast but I now live in central Queensland. I’m involved in the mobilisation and provision of remote workforce accommodation in Emerald and the Arcadia Valley. What do you get up to in your spare time? I enjoy spending time with my family, fishing and crabbing and having a good laugh with friends. Why did you enter the XXXX Island competition last year? Who wouldn’t want to win a trip to XXXX Island! I thought it would be an awesome experience. Tell us about your entry. Summer means music festivals in Australia and one of the favourites each year is Future Music Festival. Aly Eveille spoke with event organisers and performing artists about what’s in store for 2015.
T
he earliest music festival in Australia is thought to have been held in 1972. Since then, they have come a long way from single-stage set-ups on dusty bushland. Aussie festivals now resemble that of their international counterparts, with globally celebrated line-ups, astonishing pyrotechnics and unconventional music fans turning up by the thousands. Since 2006, Future Music Festival has been known as one of the elite dance festivals in Australia, hosting names such as Fatboy Slim, Empire of the Sun and The Chemical Brothers. And with 2015 upon us, the event is preparing to rock crowds like never before with headliners The Prodigy, Avicii, Drake, Afrojak, Knife Party, Example, Nero, Die Antwood and more. Event organisers said Future Music embraces every city it travels to and, luckily for Aussie fans, that includes the eastern capital cities of Brisbane and Sydney, the south’s Adelaide and Melbourne, and Perth in the west. Mushroom Group project manager, Samantha Clode, said that in planning 2015 they put the festival’s vision under the microscope, taking a step back to look at how it’s grown and focusing on how to make it even better. “We’ve sharpened our line-up and we’re focusing each stage on more diverse genres, from dance music to underground sounds, and we’re bringing artists who have dominated the biggest festivals in the world,” she said. “Find a hotter festival line-up, we dare you!” Among the international DJs hitting the

decks Down Under are Blasterjaxx – a Dutch DJ duo made up of Thom Jongkind and Idir Makhlaf – who produce electrohouse music. They have played at renowned events such as Ultra Music Festival in Croatia, Miami and South Africa, and Electric Daisy Carnival in Las Vegas. Thom and Idir said they try to do something new at every big show to surprise the audience. While their plans for the Future Music tour are currently under wraps, the guys promised they will give the audience the best time of their life. “We love to play different genres of music to let the crowd hear something other than dance music over and over,” Thom said. “For instance, we play some hip-hop, Red Hot Chili Peppers, and other types of music that can then be combined with dance music. It’s all about trying to give the crowd the best time of their life.” To make it even better, Thom and Idir love Australia. “We could go on and on about Australia, because it’s a great place,” Thom

said. “But we really love it because there’s such a great vibe and the people are really nice. We also know that Aussies can party like there’s no tomorrow and we love the energy that comes with it!” Regarding the years to come, organisers are tight-lipped about plans. “I can’t say for sure, but 2015 marks our first year in Singapore... so hopefully we will continue to expand and feed everyone’s love for dance music,” Samantha said. “Come prepared with comfy clothes, plenty of phone charge, money for food and drinks, sunscreen, and a cheery attitude. What you are looking forward to most about the two-day Top Gear Festival in Australia in mid April?
A
I’m looking forward to finding out what it is that’s had James and Jeremy come back every year saying how much fun it was. Finally I’ve been allowed to come and join them for the first time, so I’m looking forward to seeing it for myself. And it’s the perfect opportunity to pitch our two great nations against each other on the track!
Q
Can you reveal some of the highlights attendees will experience at the festival in Sydney?
A
We – together with the Stig – will take on an all-star Aussie team. So we’ll have Shane Jacobson, Steve Pizzati – who were the local [Top Gear Australia] hosts – and a load of motoring talent. So I suppose it’s the motoring equivalent of The Ashes, which some bright spark has dubbed “the crashes” [laughs]! I’ve heard it described as a “power rugby penalty shootout” – how that works I have no idea! I expect there will be a lot of accidents and apparently V8 cricket as well, which we discovered by accident while filming in India, but we are going to improve on it. And from there we’ll have the usual collection of cars you won’t see anywhere else, stunts and driving. It’s going to be enormous!

You, Jeremy and James were spotted filming in central Australia recently for your 22nd series. Can you share anything about that experience?
A

Well I can’t share too much or I will be punched by the rest of the production team. But, yes, we were in the Northern Territory ... in three cars you wouldn’t expect to be driving around there and what we subsequently did with them you definitely wouldn’t expect those three cars to be doing [laughs]. But it was an amazing trip and we reckon it might be the best filming of the forthcoming series. So, stay tuned!
Q
You have been hosting Top Gear with Jeremy and James since 2002. Has there been a favourite episode that’s stood out for you from the past 12 years?
A
If you were to ask the three of us [which was] our favourite big special, I think it was probably when we went to Botswana and drove across the spine of Africa in three twowheel-drive cars because that was the first sort of big special that we made – the first time we really rollicked about in our own world. It was the first time that we stepped away from being a more traditional cast and became a show that was about using cars. That was tremendous!
Q
And aside from the crash you endured in 2006, which would you say has been one of the hairiest episodes?
A WORD FROM JEREMY AND JAMES...
A
Well being brain damaged is pretty bloody hairy! But beyond that I’d say the first time I got thrown into a car in a tank of water and had to see what happened. I’ve done that so many times since, in mini vans, cars, lakes, in the sea, but it’s always alarming when you are sitting in the car and it fills up with water and you have to wait until it’s finally full before you can get out. Also, for the new series ... I lose a bet on the show and am strapped to the top of a stunt plane. And because I called the pilot an “old man” he goes absolutely berserk and scares the bejesus out of me!

Speaking of daring feats, you interviewed stuntman Evel Knievel not long before he passed away in late 2007. What was he like?
A
He was amazing! I made a complete program about him, so we spent more than a week following him around. He was bonkas – what an incredible life! The guy came from Butte, Montana – middle of nowhere – and created in himself one of the world’s first international brands. And [what he did] was certainly not based on science. He and his manager would arrive at whichever football stadium they were going to be doing their stunt at that day and stick a finger in the air and guess!

There’s a war that’s raged for many decades in Australia – dividing car lovers along the lines of being Holden fans or Ford fans... Would you admit to standing on one side of the fence rather than the other?
A
No, I genuinely wouldn’t ... but I’ve filmed in Australia enough to know that you have to come down on one side or the other or the entire population will hate you [laughs]. I do have an old 1968 Ford Mustang 390 GT, so I probably should come down on the side of Ford.
Q
Is there any new motoring technology you’ve heard about recently that has really made you go “wow!”?
A
Yeah! I think a lot of the variations on the theme of electric cars – hybrids – but they are slowly balancing out the range extending the engine. I think the BMW i8 is a big wow. The

Tesla Model S is an amazing car. We are often asked, “What are we going to do when electric cars come in?” As though that means the end of [Top Gear], but I don’t see why it would. In fact, what it means is that ... there’s a lot more to talk about. Driver-less cars, driver-less trucks, these are all fascinating things.
Jeremy Clarkson said, “For the first time all three of us will be there. So bring a pair of binoculars if you want to see Hammond and a calendar to measure May’s lap times.” James May said, “We love coming to Sydney for the Top Gear Festival, and this year will be better than ever because, for the first time, we're bringing professor Richard Hammond and his enormous intellect! To balance that out, we'll have to stick a big Holden Ute in there somewhere, doing circle work and making smoke, driven by a proper Brocky. Have I got that right?"

Of all the cars and 4WDs launching in 2015, which are you the most excited about?
A

Also, the new Mustang was out in 2014, but we haven’t had it [in Britain] yet, so I’m looking forward to seeing that as well.

Top Gear’s 22nd series launched on January 26... What else do you have planned for the next six to 12 months?
A
I want to spend more time at home ... and see my two young daughters. Top Gear takes an awful lot of time to make. Not so long ago we would just take a hatchback and drive it around the Cotswolds to make a show, but now it has to be driving about in Australia, to three of us there for a week [laughs]. So it’s all become a lot more involved, which leaves very little time for anything else. I’ve got a couple of ideas for other [shows] I’d like to make in 2015, but first we need to see what space Top Gear’s going to occupy. Congratulations on taking out the gold medal for bricklaying at the WorldSkills Australia National Competition in September last year! Tell us about that experience.
A
It was an eye-opener in regards to seeing how far a trade can take you. There are opportunities available to bricklayers that I wasn’t aware of – i.e. competitions and jobs overseas. Halfway through one of the WorldSkills Competition’s main projects, we had to stop and complete a bricklaying speed test. I was looking forward to this, as it was a main event for the spectators.

What’s an average day like for you lately? An average day is 12 hours, with the added responsibility of enhancing my current skills and knowledge.

This month “the tradies’ lawyer”, Peter Murphy, bemoans the loss of a “fair go” for home owners in New South Wales.
T
he Government of NSW has succumbed to the relentless pressure of the Developers’ Lobby: the trendily named “Urban Taskforce.” The fact the sorry parade of politicians and other hangers-on through the well-publicised corruption hearings (all linked to developers) has done nothing to halt the erosion of consumers’ rights is – in my view – an indictment on “people power.” Yes, I am talking about the end of a “fair go” for consumers, who will now have less than two years to make claims for defects in new apartments as the “Home Building Amendment Act” comes into force. The defect liability period for a major piece of construction – such as a new apartment building – is now less than many retailers and manufacturers give for electrical and white goods (as much as 150 per cent less in some cases). Naturally the developers have found a handy scapegoat: blame the lawyers – they are the ones who have caused the problem. When the rain pours down and so-called “waterproof membranes” leak through balconies and 22

bathrooms into new apartments as a result of shoddy workmanship, give a thought for the homeowner who has used his or her life savings on probably the biggest investment they will ever make. But even though the Government (in a cowardly about-turn) has kicked the consumer in the guts and pocketed the favours of those “in the money,” there is something that can be done to redress the balance of power. Tradies, of all the avenues of defence, I consider you to be the one most relevant. The majority of tradies I work with are dedicated and skilful tradespeople and they are the ones who can help stamp out the shoddy and substandard workmanship that results in so much misery for the ordinary homeowner (especially in

and improper preparation of walls – leading to severe cracking). Government has shown that it isn’t interested in the consumer – despite its weak protests to the contrary – but it goes without saying that tradies are also consumers and surely it’s industry and its standards if the Government has thrown its lot in with the other side. My time in the legal industry has shown that many if not most defects – whether structural, major or however classified – have never surfaced to the degree that some positive action can be taken in less than two years. Instead, the time to remediate them, galvanise others into action and do something has variously dragged on to three and five years, as experts come and go and reports are obtained from a variety of consultants for both sides. Tradies, it is a challenge worth accepting to help clean up the construction industry, as – in my view – it cannot be left to the developers alone and the NSW Government has shown that it’s not up to the job. fter working as a carpenter and builder for 30 years, Neil Ewins felt the need for an improvement in the way traditional tool belts and pouches are fitted and worn. “Uncomfortable industrystandard tool belts with their fixed pouches meant I was constantly carrying excessive weight, thus putting unnecessary strain on my back and shoulders,” Neil said. Inspired by this frustration – and one too many trips to the chiropractor – the Sydney-based tradie teamed up with long-time friend and designer, Simon Harris, and together they created a tool pouch system named Flip’N’Grip. The unique, patented system makes it easy to attach, remove and reposition pouches without having to remove your tool belt, meaning you only ever wear the pouches you need. Since then, Neil and Simon have been trying to get the products to market with limited success, due to their brand being unknown. They feel there is a place in the market for Flip’N’Grip, but they need to break down a few “barriers” before they can make their mark. “To date, Bunnings has said they love the products, but the pricing is an issue being that we are ‘unknown’,” Neil said. “We are currently working www.thetradie.com.au
Having learnt a thing or two along the way, Neil shared his top five tips for launching a new product: 1. If you think you have a great, original idea, apply for a “provisional patent” before showing anyone. 2. Try to commercialise your idea within the first 18 months, as the provisional patent is valid for 18 months and is relatively cheap. Once this provisional patent expires, it starts getting really expensive – trust me! 3. Do not buy stock until you have a firm order. This has been my biggest mistake to date! 4. If you are unsure how to commercialise your idea, find a mentor (could be a family member or friend) who will come on board for a small percentage. This will save you time, effort and money in the long run. 5. If you get knocked back, dust yourself off and try another angle. Getting knocked back hasn’t stopped me from trying to realise my dream of having Flip’N’Grip sold worldwide. Enjoy the journey! very year, without fail, many of us say: “Next year I am going to give up smoking” or “I’m going to get fit”. This decision is usually made some time around January 1. Here are some interesting stats from The University of Scranton’s Journal of

Now in February, if you’ve found you have already hit a few speed bumps in terms of committing to your 2015 resolutions to be fitter and healthier, here are some tips to help you succeed. 1. CHOOSE THE RIGHT FRIENDS In 2007, two US social scientists, Nicholas Christakis of Harvard Medical School, and James Fowler of the University of California, published the results of a study titled “The Spread of Obesity in a Large Social Network over 32 years”. This research revealed that people who are friends with people who are obese have an increased chance of becoming obese themselves. 2. INDENTIFY AND SET PROCESS AND OUTCOME GOALS Have you heard of the SMART goal process? SMART goals are: specific, measurable, achievable, relevant and time bound or

trackable goals. Carefully think about them, write them down, do the work and then re-visit your SMART goals to create longterm success. Outcome goals focus strictly on success. However, when it comes to the goal-setting process, I would suggest adding in process goals – such as stagebased and controllable goals – with your outcome goals. 3. TRACK YOUR RESULTS Take a few measurements of your physique (e.g. your waist measurement), do some fitness tests and snap a picture of yourself. I guarantee that if you do this you will work harder knowing that you are going to be retested again in one month. Track your results initially, then at the mid-point and at the end. 4. PICK AN EVENT I have always been more motivated to train if I pick an activity such as a boxing match or a milestone event. Make sure you pick an activity that is something you like and not something you think you should do. When you have a goal day and an activity you enjoy, you will be more likely to achieve it. Check local fun runs, events your gym may run, or sporting club events. Once you have made your choice, work at it, tell your friends, and you’ll soon be jumping out of bed every day to get yourself there.

5. FIND A NEW GYM OR AN APP Start the year with a fresh place to workout or new training buddy from the app store. Avoiding certain people at gyms or hating the noise from these gatherings is a negative energy you don’t need when you have important goals to achieve. Investing in new shoes, a shirt, sweatband or latest app training buddy is a good start. BONUS TIP On a final note, write out your resolutions and pin them up on your bedroom wall, fridge, work desk or outlook calendar. These words are your contract to you. If you can visualise being proactive about your health, avoiding negative people, being a little selfish and loving yourself more in 2015, you have taken the first step. Fear of failure can stop some, but if you never try, you’ll never learn.

HEALTHY BREAKFAST TO KICKSTART YOUR DAY There is logic behind the saying “breakfast like a kid, lunch like a prince and dine like a pauper”. If you start the day with a decent breakfast, your body will be getting the energy it needs early on. CHANGE YOUR EATING HABITS Although the bonuses of eating in a balanced way do not come instantly, if you commit to eating the fresh foods suggested here (and avoid foods that are high in fat and full of sugar) you can expect to notice a marked difference in your energy levels within a couple of weeks. A diet that makes you feel more energetic is based on natural, wholesome, nutritious foods, such as: • Fresh fruits high in natural sugars, such as pears, kiwi fruit, apples and berries.
• Vegetables such as peas, spinach, cabbage and onions. • Oily fish, poultry, and lean red meat, such as beef and veal. • Nuts, brown rice, seeds, pulses, wheatgerm and wholegrains. • Foods that contain water-soluble vitamins B and C and minerals such as magnesium, phosphorus, and zinc. ENERGY-BOOSTING MEAL SUGGESTIONS For breakfast: • Home-made fruit juices, and milk- or yoghurt-based smoothies are energyboosting alternatives to commercially prepared drinks. Choose sweet fruits that have a naturally high sugar content, such as apples, banana or berries, then add some protein powder, some spinach leaves, kale or avocado (if you’re feeling up to it), and a cup of unsweetened almond milk, yoghurt, coconut water or filtered water. Switch on
For lunch: • A sandwich loaded with your favourite healthy fillers, such as organic chicken or turkey, spinach leaves, white cheese (such as cottage, feta, goat, haloumi, mozzarella or ricotta), eggs, tahini and wholegrain mustard. Replace white bread with wholemeal. For dinner: • Stir-fries are quick and easy to prepare. Add vegetables and lean meat to a bed of brown – rather than white – rice. Use organic, wheat-free, low-salt soy sauce as the dressing and sprinkle with sea salt and fresh herbs. • Enjoy some fish – trout, tuna, wild salmon (fresh or canned in springwater) – with vegetables or a salad dressed in naturally fermented vinegars, such as apple cider or balsamic. Drizzle over some cold-pressed oil, such as macadamia, olive, sesame or walnut. For snacks: • One to three pieces of fruit a day. • Fresh raw nuts, such as almonds, cashews, macadamias and walnuts. • Plain, preservative- and sugar-free crackers and crispbreads. • Dairy-, preservative- and sugar-free dips, such as beetroot, hummus, pesto and tahini. n stepping outside Amsterdam Airport Schiphol, you are greeted by Amsterdam’s version of the Hollywood sign, which is a popular photo op’ for tourists. The two-metre-wide by 24-metre-long sign proclaims “I Amsterdam”, a collective catchphrase used by the community and an icon of the city. To get to Dam Square – in the centre of town – avoid costly taxis or the long lines for buses, as a train is the cheapest and fastest method. The Dam is where the 400-year-old Royal Palace sits, gazing over the thousands of people who pass below it, along with a 22-metretall white stone pillar named The National Monument, a maze of tram lines and many daring Dutch locals riding bicycles. It’s hectic, to say the least! Get a table for dinner in the Dam to help you get your bearings. Then you are ready to visit some of the local hangouts and adventure down the laneways off the Dam, which feature amazing shopping and delicious Dutch food. www.thetradie.com.au
Although you’re surrounded by buildings that are centuries old, it’s invigorating to wander through the corridors of the city – among tall cottage-like stone buildings – to shop at some of the biggest retail stores in the world. But, let’s face it, you can shop anywhere! What you can’t do everywhere is find authentic Vlaamse friet – a serving of traditional Dutch French fries in a paper cone with a bucket of mayonnaise on top. Yum! You also can’t wander across a canal and sit down in a local coffee shop to sample legalised marijuana at most other cities in the world! It’s a very strange feeling to walk into a smoke-filled room just off the street and be offered a pre-rolled joint off the “marijuana menu”. You can choose from a happy high, a mellow high, or an intense high. Then there’s a selection of marijuana, given names such as Master Kush, Pineapple Chunk and L.A Confidential. If you choose to cross the experience off the bucket list, make sure you remain inside the cafe. While it’s legal to smoke in designated

Amsterdam. We arrived at the station and were greeted by the grand entrance hall of Antwerpen-Centraal – a great introduction to this ancient city! On making our way to our hotel, one thing became clear: we were in the diamond district. The majority of the world’s diamonds pass through Antwerp each year, more than 80 per cent, in fact. Antwerp is also a surprising stop for fashion-focused travellers and has been known as the “triumphant shopping city” since the 16th century. The pedestrian streets are lined with luxury stores and historic dwellings, and bustling shopping centres are tucked behind every corner.

coffee shops, it’s a controversial issue in other parts of the city and can be offensive to locals. Hotels typically will not tolerate marijuana in their rooms. Another experience on the bucket list for many is Amsterdam’s famous red-light district (or De Wallen, as it’s known to the Dutch). This network of alleyways contains about 300 one-room cabins, which are rented by prostitutes offering their services from behind a glass door. You’ll see many shapes, sizes and ages, and hear some of the ladies talking to or brushing away those who pass their windows. It’s definitely an eye opener! Live sex shows, risqué adult stores and sex museums are just the beginning, and the vast array of people visiting from all around the world is astonishing. But don’t forget that there is a more conservative and very charming side to Amsterdam as well. Hire a bike and brave the city traffic as you make your way down to

If you are familiar with Dutch, French or German, life is a breeze here! Religion is predominant in Antwerp as well, with many Jews donning their black kolpik headwear as they walk the streets. Vondelpark to sunbathe on the pond’s bright green banks. Here you can sit down to a fancy lunch at the famous Vondelpark3 restaurant, which is housed in a historical old pavilion that was recently reopened to the public. The park’s 48 hectares of lush green trees, sculptures and bike paths are worth seeing – there’s a reason 10 million people visit it each year!
When it comes to dining in Antwerp, I suggest visiting Meir: a giant shopping and dining precinct. The streets in Meir come alive at night and the Absinthe Bar at Brasserie Appelmans is known for serving some of the best cocktails in Belgium.
The Anne Frank House is another great place to absorb some of the city’s history. It’s a wellmaintained biographical museum that teaches visitors about the young Jewish wartime diarist, Anne Frank. The house exhibits the exact hiding place where the writer stayed while experiencing the persecution and discrimination of the Holocaust. Make sure you buy tickets to this in advance and select the date and time of your visit, so you can sneak past the kilometre-long queue and go right into the museum!
But we had a mission in mind: to attend the famous music festival Tomorrowland. To get there we ventured 17 kilometres out of Antwerp to the suitably named town of Boom. Tomorrowland is filled with people from all corners of the globe wearing their nation’s flags and chanting war cries. This was a production unlike anything I’d ever seen before. There were characters on stilts, stages in the middle of ponds, bubbles flowing above our heads and pyrotechnics bursting from the stages. Everything was themed with Euroesque creativity. And with more than 400,000 people in attendance over the three-day event, the organisers weren’t doing anything halfheartedly. Yes, another one off the bucket list, and a definite must-do for any music lover.

Directions Combine all the ingredients in a food processor or blender and process until a fine green sauce forms. Adjust the seasoning with salt and pepper and adjust the consistency using extra olive oil. Use immediately or store in an airtight container for up to three days.

Directions Slice the heirloom tomatoes into various natural shapes and season and dress with olive oil, salt and pepper. Add the chopped chives and set aside while the fish is being cooked. To cook the fish, heat a nonstick pan (preferably) on a medium heat and season the skin of the barramundi liberally with salt. Once the pan is hot, add the vegetable oil and place the barramundi skin side down in the pan. Cook until golden brown, then gently turn the fish over to complete the cooking (approx three minutes). Set aside to rest on a paper towel. To serve, decorate the plate with the yoghurt and salsa
