The Melting Pot Spot

T

he word Ketupat refers to rice which is wrapped in young coconut leaves that are woven into the shape of a flat square box, then cooked thoroughly to become a rice cake. It is a common food, traditionally eaten with other typical Indonesian dishes.

Ketupat Restaurant on Jalan Dewi Sri is located in a big Javanese joglo house with spacious parking for cars and motorbikes. The main dining area is light and breezy, decorated with paintings, traditional masks, ethnic bags, Javanese glass jars, rock statues and antique pots. There are wooden bar stools covered in colorful soft cushions, as well as day beds and a pool table. Walking towards the back of the restaurant, you will see light blue reflections from the pool which is surrounded by five smaller joglos; ideal for groups, families and couples wanting to eat in a tropical outdoor setting. The menu is rich in choices, with explanations about the origins of different dishes offered. Sulawesi based owner, Rahmat Syam Hedar explains that when he returned from Italy 20 years ago, it was difficult to find a restaurant that served a variety of Indonesian food, so

he set up the first Ketupat Restaurant on Jalan Legian, its success led to the opening of the second restaurant in Dewi Sri five years ago. The favourite appetizer is Sarong, spring rolls with marinated shrimps served with chili sauce, soya sauce and chopped green chilies. Sup Udang Mandi is a soup from Sumatra and tastes like tom yum, with hot prawns, chayote, carrots, mushrooms and a lemongrass fragrance, its bright red appearance is most appealing. The real deal is Wajan Laut which is a creative mix of almost all favorites; nasi goreng, udang garam jawa (salty fried Javanese shrimp), cumi-cumi cincin (calamari rings) and terong balado (spicy eggplant) all served in an old fashioned Javanese wok, with a mix sambal and tangy mango sambal (hot condiments). Every item in Wajan Laut can also be ordered

separately. The most impressive dish for me is the Ayam Goreng Daun Pandan, white chicken breast covered in spices, wrapped in Pandan leaves and fried. Break open the leaves to enjoy the Pandan perfumed chicken that is crispy on the outside and soft and tender on the inside. e Barracouda is not a restaurant, but it’s very existence is important information for all the restaurants in town as it supplies fresh seafood for villas, restaurants, hotels and retail customers. This new seafood market is located in an eye catching and convenient location, just steps away from the corner of Jalan Petitenget and Jalan Batu Belig, so no need to travel all the way to Jimbaran if you are in the mood for a spontaneous seafood BBQ.

I remember noticing the striking blue and white Mediterranean appearance when Le Barracouda opened in December last year, and my first thought was “Wow, another new restaurant.” It turns out I’m not the only one to think this. Many have stopped by and expected to get a full table service with seafood and great wine, but instead discover the classiest seafood market on the island. General Manager Valerie Baptist says, “I meet customers buying our fresh oysters at 10 am and they want to taste them, and in this way we nurture our clients.” Once customers get a taste of the high quality seafood, they never leave empty handed. They also have the option to take a seat and enjoy oysters as a tasty appetizer before heading on

to nearby restaurants, or home to cook up their own seafood feast. The tantalizing array of fresh seafood on display includes Tuna, Barracuda, Red Snapper, Sole Fish, Prawns, Squids, Barramundi, Sardines, Clams, and Oysters, sold in small and large quantities. Hotels can enjoy the delivery service, while retail customers can drop by to pick up fresh, high quality seafood and also ideas for their next BBQ Party, for which the BBQ Packs, Oyster Plate, and Seafood Plate are perfect options. For those who prefer the luxury of having their seafood cooked for them, the soon-to-be-opened Le Barra, set right in front of the shop will provide grilling services and even a seating area ready to welcome hungry seafood lovers. Valerie’s partner is Bruno Pradeu from Biarritz, whose love of the sea has been a constant thread throughout his life. Bruno’s fondness for surfcasting, which is basically fishing from the beach, and an extensive knowledge of seafood, determines the strict quality control of “Le Barracouda.” Fresh sea water is changed every two days for the oysters, the temperature of the cold room is constantly controlled to maximize conditions for maintaining freshness, and only the best possible

Padang Food for A Good Mood

P

adang food is the most popular cuisine of the Minangkabau people of West Sumatra, Indonesia. It is known across Indonesia as Masakan Padang (Padang Food) after the capital city of West Sumatra province. It is very common in Indonesian cities and also popular in neighboring countries, Malaysia and Singapore, famous for its rich coconut milk taste and spicy chili. Among various Indonesian cooking traditions, most Sumatran cuisine, including that of the Minangkabau demonstrates Indian and Middle Eastern influences, as it is cooked in curry sauce with coconut milk and spices. Because most Minangkabau people are Muslim, Minangkabau cuisine follows halal dietary law rigorously. Protein intakes are mostly taken from beef, water buffalo, goat

and lamb meat, and also include poultry and fish. Almost all parts of the animal are used, the flesh, ribs, tongue, tail, liver, tripe, brain, bone marrow, spleen, intestine, cartilage, tendon, and even skin, are made into delicacies. Seafood is also popular in coastal West Sumatran cities, and mostly grilled or fried with spicy chili sauce or curry gravy. Minangkabau food is usually eaten with hot steamed rice and vegetables that have been boiled, or simmered in thin curry as side dishes; jackfruit and cabbage are common choices. Padang food is often served dine-in / hidang style, with all the bowls of food laid out in front of the customer, who only pays for those bowls that they eat from. If customers do not wish to eat with bare hands, they can ask for a spoon and fork instead. The cuisine is usually cooked once per day, and in restaurants customers choose from those dishes which are displayed in the window. People will generally seat themselves and there is no need to order as the waiters will immediately serve the dishes directly to the table, which

will quickly be set with dozens of small dishes filled with highly-flavored foods such as beef rendang, curried fish, stewed greens, chili eggplant, curried beef liver, intestines, or foot tendons, fried beef lung, fried chicken, and of course, hot spicy sambal.

ykonos brings a touch of Greece to Seminyak enveloping it’s customers in warm Mediterranean ambience and aromas. Wonderful wall murals evoke the picturesque charms of the Greek Isles with their whitewashed houses overlooking a vivid blue sea. Like any Greek taverna the atmosphere is informal and family oriented; Greek music, rickety blue chairs, grape vine motifs, rough stone floors and miniature wooden sailing boats all add to the allure, as does a menu filled with authentic Greek favorites.

Mykonos has been gracing ‘Eat Street’ for over ten years, with current owner Arjan Prenen taking the reigns four years ago. He oversaw extensive kitchen renovations, the installation of a water filtration system and expansion of the dining area, while remaining true to the original concept and design of the restaurant. As he explains, “Mykonos gives the opportunity for all ages and all nationalities to have a great night.” The menu has also been expanded to include the ‘Not Greek but we love it’ section featuring Kebab Platter for 2, Mixed Grill, Escargots as well as Souvlaki. I am quite a traditionalist when it comes to Greek cuisine, and Mezze is always one of my favorites. Here it is called Mix Pikila and features an assortment of classic Greek appetizers; scoops of humus, melitzanes (eggplant dip) and tzatziki all have an unmistakable homemade flavor and are heavily laced with garlic. Fresh salty feta is sprinkled with oregano, the kalamata olives are tender and tangy, and the dolmades have the www.letseatmag.com

pure taste of Greece. Pita bread is served on the side for dipping. A traditional golden glistening Moussaka follows, layered with a thick hearty mix of eggplant, potatoes, mix vegetables, cheese and béchamel sauce, a subtle but flavorful dish that I really enjoy. A beef version is also available. Lamb Chops are the most popular dish on the menu, Arjan explains that the secret is in the good quality lamb that has been seriously tenderized, then lightly marinated and grilled to crispiness. They are served with slow roasted potatoes and crunchy boiled vegetables drizzled in olive oil.

We finish with an excellent cinnamon rich Baklava with a crunchy honey and nut filling nestled between layers of crispy filo pastry and topped with ice cream and cherries. A shot of Ouzo is just the thing to wash it down. Finally, there is a plate of Lukumades, delicious little mini donuts with honey and canella, served with a thick syrupy Greek coffee. Cocktails mixed up at the island bar include a delightfully fresh Mango Strawberry Daquiri, Long Island Iced Tea, and Tequila Sunrise, there is also a selection of beer, wine and fresh juices. Larger groups are easily accommodated in the back section, where live sporting events are projected on request. At the helm is well seasoned executive Chef Wayan Samedera whose team prepare the freshest of Balinese seafood in a variety of styles, ranging from Japanese, to Asian and European. apanese food is always a favourite! And at Kokoya it comes with a vibrant red look thanks to beaming lampoons strung across the balcony and parking area. The first Kokoya Restaurant opened in Sanur a year ago, quickly gaining popularity among the Japanese living in the area. The new Kokoya located on Oberoi in Seminyak is yet another exotic highlight for the expats, tourists and locals that frequent the neighbourhood, and boasts an unusual design, best described as Japanese with a Javanese jive. Traditional Javanese Gebyok (ornate wooden partitions) are spread generously all over the restaurant which is located on the second floor. The big balcony area includes a shady gazebo, and overlooks colourful Balinese rooftops. The high roof makes it cool and breezy and there are plenty of different seating options. Choose tatami/zashiki style where you can

take off your shoes and sit on the cushions on the floor, regular seating with tables and chairs, gazebos for couples or small groups, or balcony seating to enjoy the breeze and the view. There is also a Robata corner outside where you can enjoy your choice of grills/robata from the menu.

I really enjoy the Croquette Bento containing Beef Croquette, ground beef and mashed potato coated in bread crumbs and deeply fried with mixed spices, dip it in the sauce and the firm crispy exterior breaks to a smooth soft filling; there is also Californian grown Japanese scented rice, Potato Salad made with small cubes of cucumber and grated carrots, fresh hot Miso Soup, a classic served with seaweed, and a fruit dessert. The lunch bento package comes in other options including Sashimi Bento, Yakiniku Bento, and Teriyaki Bento, which are available from 11am until 3pm.

Other delights from the menu are Salmon Carpaccio, an excellent dish and favourite of the Let’s Eat! team. Thinly sliced tuna sprinkled with black pepper and served with a home made sauce that is sweet, sour, salty and tangy all at the same time. The taste of the raw fish is beautifully complimented by the rich flavorful sauce. For sushi lovers Sushimori is a great choice with its assortment of sushi. The soya based Agedashi Dohu features tofu wrapped in tapioca, served hot from the pan into the bowl and sunk in a rich dark sauce. hen I first moved to Bali I lived in Kuta just around the corner from the Balcony Restaurant. It soon became my favorite hangout place, with its laid back surfer vibe and delicious breakfasts – I loved the Bircher Muesli with grated apple and honey. I felt right at home here and would often stay for hours, reading magazines, watching surf videos on the big screen and chatting with other customers. Things change so rapidly in Kuta and consistency is an illusive quality, but the Balcony was always dependable, whether it was a generous breakfast deal, the best priced Margarita in town, or a casual dinner with friends. I still drop by from time to time, and apart from new additions to the menu, things are much as they always have been, relaxed, welcoming and comfortable. Family-run, The Balcony was opened by Chandra and Rizal ten years ago: Chandra’s family own UN’s

Hotel behind the restaurant and she grew up playing on the streets of Kuta, while her husband, Rizal, is a well know Indonesian surf pro. The couple traveled extensively on the international surfers circuit, so when they decided to open the restaurant they chose their favorite dishes from around the world. Steaks were served the European way with rich mushroom sauce, or homemade herb butter, Quesadillas were Californian style, while hearty Bbq Spare Ribs paid homage to Australia. They also wanted to reflect the laid back traveler vibe of Jalan Benesari, and to give visitors the chance to experience surf community and lifestyle Kuta style. As Chandra explains it, “Kuta is still the heartbeat of Bali.” The surf theme is pervasive, beautifully painted surfboards adorn the walls and ceilings and the big screen delivers a constant stream of surf videos. The menu is as global as the clientele who gather here, and portions are generous enough to satisfy the most ravenous of surfers. ‘Morning of the Earth’ breakfast sets include Uluwatu Peak with a bacon laced Swiss roesti that is so big it could be a meal in itself; but there are also perfectly fried eggs, sausage and a garlic topped grilled tomato. Freshly blended watermelon juice and a mug of steaming coffee complete the set. Burgers, pasta, steak, and a good range of Indonesian dishes are also on offer. The Bitter Sweet Salad is a generous bowl of crispy, bitter rucola, contrasted with soft and sweet grated apple, salty parmesan and ripe cherry tomatoes, all doused in a light balsamic vinaigrette. Chandra suggests we try the Chicken Skewers, a new addition to the menu, one inspired by a recent trip

to India. Chicken breast is marinated in a highly fragrant Madras curry, cooked on giant skewers and stacked with pineapple and onion, the cucumber raita on the side has quite a chili kick. We finish with a citrus burst provided by a wedge of Key Lime Pie, a velvety sweet and sour creation. Mocktails, cocktails, beers and juices are available, and smoothies are always popular, I recommend the BananaRama with bananas, strawberries and copious amounts of vanilla ice cream. If you are looking for something a little more potent try the Margaritas which are flavored with pineapple and honey. uice Ja café has a warm and welcoming allure, vines dangle over the entrance and the front steps are lined with fresh green coconuts and pots of wheatgrass. This homestyle cafe is one of Ubud’s original healthy eateries, and has been serving up nutritious well priced food for the last 12 years. I often drop by when I am in Ubud, sometimes for something as simple as a homemade bagel with humus

or cashew nut butter, a bag of fresh baked cookies, or a juice; and sometimes a relaxed meal with friends. When Suzan Kohlik first opened Juice Ja she limited the menu to fresh extracted juices, and cakes and pies that she baked herself. Over the years it evolved into a full fledged café offerings soups, salads, crepes, burgers, sandwiches and Indonesian dishes.

These days she has her own organic farm to supply fresh produce and also supports a number of cottage industries who provide the nuts, seeds, coconut oil and organic beauty products that are on sale. Suzan tells me that she likes to “Work as much as possible with local farmers, and local products,” and tries to be as ethically correct as possible in regards to staff and the environment. the only dvd exchange I have seen on the island; there is also a plethora of brochures pertaining to Ubud’s thriving holistic scene. We take a seat upstairs, a charming area with a long breakfast counter overlooking the street, and walls draped in magnificent batik prints. A round of health cocktails are definitely in order; I really enjoy the Tumeric Root Lemon and Honey, with the earthy slightly peppery taste of tumeric tempered with citrus and the sweetness of honey. I also try my first ever shot of Wheat Grass Juice proclaimed as ‘natures great healer’ it is sweeter and more pleasant than I expected. There is also a Green Juice, an interesting concoction of apple, cucumber, parsley, lemon, ginger and lettuce. The Tofu Sesame Salad is always an excellent choice, lightly pan fried tofu marinated in soya sauce served with crunchy grated carrot, mixed leaves, a ginger sesame dressing and crunchy toasted baguette. I also try the Mung Bean Burger, another first for me, it is soft and flavorful with just a hint of mustard and comes, as all burgers should, with crunchy fries. or some chefs, a culinary interest is revealed during the pursuit of another career. Others fall into it by chance and get hooked immediately. For Yab Han Wei, cooking has been a passion since the age of ten when he would spend his afternoons helping his mother prepare food in the kitchen of their home in Penang, Malaysia. “My mother taught me how to cook , especially Chinese and Malay cooking style,” he says. Upon his graduation from high school, Yab decided against enrolling in a culinary institute, preferring to learn directly in the field. He started work at Genting Highland Resort in Malaysia as kitchen helper then climbed the career ladder as Commis 1 at a Chinese specialty restaurant, followed by positions in some of the most prominent hotels and resorts in Malaysia including Regency Hotel & Resort Port Dickson, The Westin Langkawi Resort & Spa and Four Points by Sheraton Kuching Serawak. “I

his month Let’s Eat! introduces a great Javanese delicacy Sambal Goreng Tempe Kering which literary translates as “Spiced Crisp Fried Soya bean cake.” It is usually served as a complementary dish for Nasi Tumpeng (a cone-shaped rice dish) or Nasi Kuning (yellow steam rice), together with vegetables and meat. It’s easy to make, so you can’t go wrong and you are guaranteed to love the delicious crunchy texture. You can always adjust the level of spiciness by adding or reducing the amount of chili.

Cut the tempe into small cubes and deep fry until crisp and brown, drain and set aside. Repeat the process with red chilies, onions and garlic, set aside. Heat the brown sugar in a pan until melted, add the galangal, bay leaves, salt and tamarind water. Continue cooking until the sauce thickens. eing a self confessed chocolate lover, I am rather happy to hear that the Chocolate Café Patisserie and Bakery has opened in Jimbaran, especially when I learn that Yehudi (whose Belgian family brought us Mannekepis) is the director of Food and Beverage. Belgium is well known for its supurb chocolate, and Yehudi is well known as a talented chef – so it promises to be an extraordinary experience. The café is set in the style of a modern continental coffee shop, and stretches across the sidewalk of the brand new Jimbaran Corner, a complex housing classy retail outlets, the luscious Bamboo Spa by L’Occitane and the rooftop Kupu Kupu Jimbaran Suites. The chocolate theme pervades the décor with richly textured walls the colour of creamy milk chocolate, and tables stained the darkest cacao. There are comfortable corner sofas and some divine deep red leather arm chairs. The whole place exudes a cosmopolitan elegance but the atmosphere is utterly relaxed and comfortable. I drift towards the glass counter brimming with a tantalizing range of pastries, there are Cream Swans delicately composed of choux pastry, glistening miniature Blueberry Cheesecake, Double Chocolate Mousse with contrasting layers of white and dark, and lovely Fruit Tartlets. Larger cakes are available and can be ordered in four different sizes. There are also baskets of Danish pastries, croissants and big fluffy donuts, and the price tags are surprisingly moderate. Yehudi explains that their aim is to provide fresh high quality offerings at reasonable prices.

The presentation in white ceramics is immaculate; a pot of glistening bittersweet Manjari chocolate melts over a low flame, surrounded by slices of kiwi fruit, pineapple and strawberries, as well as marshmallows, cubes of chocolate brownie and pale golden fruit cake. We follow with a Belgium Waffle an authentic fat golden waffle piled with fresh fruit and lashings of whipped cream. T

he Consul’s next move was to present the Champagne to his nose. He did this with a head similar to the skull of a moving sumo wrestler, oscillating his neck before the fight. Only the Consul oscillated his glass at his nose and the fragrant perfumes carried him to the fruit garden and meadows of Eden. There was lemon, candy, vanilla, coffee and hazelnut aromas. “Ahhhh” came the intriguing voice from the happy Consul, and his lips which looked like the opening for a mellow kiss, kissed the Champagne glass on the rim and it parted his lips just a little bit to give way for the Champagne to flow like golden lava. After this, the master of tasting closed his mouth filled with treasure for he wanted to taste this lava Champagne like a chef who makes a great Champagne emulsion.

The Consul slurped quietly and moved his mouth slowly as he wanted to taste all that the Champagne had to give - supple, creamy, stylish and exhibiting freshness and a beautiful balance of fruit and acidity. The Champagne seduced the Consul right away and like all the other great tasting moments before in his life, he closed up, and did not hear or see anymore because he was with the juice of merriment and so near to god that he thought to be a wine god like Bacchus or Osiris. This Champagne ceremony of the Consul took about two minutes. And when Josef saw the eyes of the Consul, he knew that he had chosen the right Champagne. Highly pleased and inspired, the Consul said to Josef in a very merry voice: “My dear, dear Josef, the Champagne is as good as if god

himself had made the Champagne, as if god himself had poured into my mouth his poetry of life. Ahh, I am so content Josef, thank you for having this Femme de Champagne reserved for us.” “Thank you very much Mr. Consul for your compliments,” said Josef with a great smile and he poured the Champagne for Mrs. and Mr. Consul so that the glasses were nicely filled. Josef wanted to leave the table but just at that moment, Mr. Consul quickly handed him a 100 dollar note to which Josef nodded seriously and thanked the Consul. the end.
