We’re feeling adventurous here at Ocean View. There’s something cosy about evenings indoors in the autumn... keeping warm with a hot drinks and soft blankets as the evenings draw in and we all have the eternal debate as to whether it’s really too soon to be turning the heating on! Personally, I’d rather not miss any of the colourful shows nature has to offer in our own back gardens at this time of year, but winter sunshine breaks do become immensely tempting, and if you’re spending those extra few hours of darkness daydreaming about your holidays, you might like to join us in our exploration of the Indian Ocean’s islands on page 40. If that warms you up a bit, be brave enough to join us as we dip into the exhilarating world of water parks on page 33 and see what some of the world’s best attractions are doing to push the boat out - literally! Did you know that statistically, one in every ten species that we know of on the planet lives in the Amazon rainforest? “When travelling by river, you’re most likely to be able to see the hundreds, sometimes thousands of vibrant Macaws which gather on the clay cliffs of the Amazon river” and Venezuela and of course Brazil, is home to thousands of varieties of plants and some 2,000 birds and mammals… plus around two and a half million species of insect, which are usually slightly less popular with tourists. Although most of the thousands of mammal-species in the rainforest actually belong to the bat and rodent families, the most famous and anticipated sights are the Jaguar and Ocelot, the Capybara and South America’s largest mammal - the Tapir. These intriguing species are well-camouflaged in their natural habitat, but exciting animals are so abundant in the area that every moment is bound to reveal glimpses of fascinating creatures going about their daily lives, relatively uninterrupted by humanity. About 1500 bird species inhabit the Amazon Basin. rock, and colourful birds like Toucans and Hummingbirds are also found here. As the basin centres around the river itself, travel by boat is the only way to see its true colours. You may even spot the Basilisk lizard, a native of the Amazon basin which can walk across water! The unique climate means that tropical frogs can be spotted not only by the waters edge as they would be in more temperate areas but on rocks, in the undergrowth and even up trees! The rainforest’s canopy is home not only to birds but to snakes like the beautifully gemcoloured Emerald Tree Boa. Of course, down below the river’s surface, the Amazon also hosts the world’s largest snake, the Anaconda.

Of course, there aren’t only snakes in the river: by now you might not be surprised to read that the Amazon basin is more populated with fish than any other river basin, including not just the unfairlyportrayed Pirhana but an incredible variety of Neotropical fish, some of which are only found in their tiny specific section of the Amazon. O
n the Klondike Highway outside Skagway, I biked down a mountain past rugged cliffs -- my hands hurt from squeezing the brakes so often. In Juneau, I swung above the treetops on a zip line, strapped into a harness with only a clamp on a wire holding me in the sky. I got in a dog sled and let the dogs lead me across a real glacier. I saw an eagle close enough that I could examine its weapon-like claws. I went fishing and caught a 4 1/2-pound salmon, had it freeze-packed and shipped home so I could share it at a family meal. “…and this is exactly why you need to get off the beaten path and experience the real Alaska. “For a true once-in-a-lifetime experience, you can’t beat the helicopter and dog sled trips offered in Juneau. As if the ride in a helicopter over glaciers and a landing on an actual glacier were not exhilarating enough, you also get to at least pretend you’re in the Iditarod by getting on a real dog sled. You fly over the massive and impressive Juneau ice field and see up close the advancing Taku Glacier. You may also see the cascading Hole-in-the-Wall Glacier, the floating Dead Branch Glacier or the river-like East Twin Glacier before landing on the Norris Glacier, home to a mushing camp. Your guide will take you on a dog sled ride over the snow-covered glacier and describe the 1,000-mile Iditarod Race from Anchorage to Nome. From the helicopter, you may also view bears, moose, mountain goats and other wildlife. “On Douglas Island, you can experience the rainforest canopy by way of a zipline! If you dare to look down, you’ll see the flora and fauna of a rainforest and the remains of an old gold mining operation. The experience felt a lot like I’d imagine flying feels as a bird. You have a little control of your speed, but be aware that once you are above the trees, there is no getting off the track. And just when you think, “Wow, I’ve done it,” you have to rappel down a rope to reach the ground. “Haines will remind you of the kind of small town you see in films and on the television! After a bus ride through the one-horse town (with two stop signs and no traffic lights), you can head to the world famous Chilkat Bald Eagle Preserve. The goal here is spotting as many bald eagles as you can and, if you’re lucky, bears, moose and other wildlife as well -- all in their natural habitat. Traverse the shallow and narrow channels of the glacier-fed Chilkat River in a specially designed, narrow-draft jet boat. Your guide will take you deep into the wilderness. Check the trees for eagles and eagle nests. And look in the river for otters and beaver. At the end of the trip, enjoy a hot beverage around a campfire or in a heated pavilion! “There’s good fishing off Sitka, and with this full-day excursion, you hit the waters in search of king, silver or chum salmon, as well as halibut. You’ll need to buy a 1-day fishing licence from the captain of the small boat for $20 cash, as required by Alaska law. Also, from May-June you need a $10 king salmon stamp. If do you

Sitka is also noteworthy among Alaska towns for its strong Russian heritage, and the Alaska Raptor Rehabilitation Center, where you get to view birds of prey including bald eagles, close up. In Sitka, you’ll also see the tiny one-room St. Michael’s, the first Russian Orthodox cathedral in America; visit the Sitka National Historical Park, where in 1804 the Battle of Alaska was fought between the Russians and native Tlingits (today the park houses a collection of totem poles); drive to Castle Hill, where the postAlaska Purchase flag was first flown by the U.S. in 1867; and enjoy a performance by the local Russian Folk Dance troupe. “In Skagway, the White Pass Scenic Railway is a must-do tour, especially on a clear day. Take a ride on the White Pass & Yukon
Railroad, a narrow gauge railway built into amazingly rugged and beautiful terrain 100 years ago. It’s the same Trail of ‘98 route taken in the late 19th century by a steady stream of gold prospectors looking for Yukon gold … except amazingly, they did it on foot and in temperatures that in winter go down as low as -50 degrees! You travel in the comfort of old-fashioned parlor cars, and the route takes you up the 2,800-foot summit of the White Pass, through tunnels and over sky-high trestles, past remote valleys and such sights as Bridal Veil Falls, Inspiration Point and Dead Horse Gulch -- so named because so many miners lost their horses there. The trip takes three hours roundtrip, but you can also book one-way tours, with a ride back in a bus on the Klondike Highway. “Your understanding of Alaska should include native culture. This Saxman Native Village three miles from Ketchikan is where the Tlingits welcome guests and offer a taste of their culture. You can enter the Beaver Clan House for a song and dance presentation, then head to Saxman Totem Park, home to one of the largest collections of totems in the world, where your guide will help unravel the mysteries and explain the stories of the poles. A Touch of Spice Rick Stein shares his unique and delicious take on indian cuisine
Dry Curry of Cabbage, Carrot and Coconut Thoran is a dry vegetable curry from Kerala made from whatever fresh vegetables are around–snake beans, unripe jack fruit, sag (leafy vegetables), even green tomatoes. Taking a very common and normally in season vegetable in the UK, like cabbage, I’ve worked on this dish to produce my own version, which means I’ve kept faithful to the essential ingredients of mustard seeds, green chillies, ginger and, above all, grated coconut, but I have made the dish as quick as possible to produce. SERVES 4 – 6 3 tbsp coconut oil or vegetable oil 2 tsp black mustard seeds 2 tbsp fresh curry leaves 1 tsp cumin seeds 2 dried Kashmiri chillies, each broken into 3 or 4 pieces 30g/6cm ginger, finely grated into a paste ½ tsp turmeric 1 tsp salt ½ tsp coarsely ground black pepper 250g hispi or pointed spring cabbage (or spring greens), shredded into 5mm pieces 2 carrots, diced 2 fresh green chillies, sliced into thin rounds, with seeds 100g fresh or frozen coconut flesh, blitzed in a food processor or grated To serve Boiled basmati rice and poppadoms Heat the oil in a heavy-based saucepan or karahi set over a medium heat, and when hot, add the mustard seeds followed by the curry leaves, cumin seeds and dried chillies. Stir for about 30 seconds, then add the ginger paste, turmeric, salt and black pepper and fry for 30 seconds. Stir in the cabbage and carrots and cook, covered, over a medium heat for 5–7 minutes or until the vegetables are tender, adding a splash of water if they start to stick to the pan. Stir in the green chillies and coconut, heat through for a minute and serve. Serve with rice and poppadoms.

Prawn Fritters with Chutney and Kachumber from Allen Kitchen, Kolkata I couldn’t work out why these prawn cutlets were so delicious; there seemed to be nothing to them, just a simple batter, a bit of lemon, some onion rings and a bottle of mustard sauce. But the very enthusiastic blogger from Calcutta called Kaniska was keen to point out that this tiny little hole in the wall was one of the most popular foodie spots in the city. They may have put a secret ingredient in the batter, but I expect the success lies in using chickpea flour and frying the battered prawns in pure ghee. I consumed a few plates of them while having a thoroughly enjoyable conversation about the almost infinite possibilities of street food in that city. Later I woke up in the middle of the night in my hotel with my head spinning, thinking the pace of life was so frenetic that I was surely locked into a madhouse, albeit with some of the tastiest food I’ve ever found. This makes a quite soft batter, not a thick, crisp batter like you’d get with fish and chips.

SERVES 4 12 extra large unpeeled raw prawns For the batter 60g plain flour 60g chickpea flour ¼ tsp salt 1 free-range egg 150–225mlwater 70g ghee, for frying To serve Lemon wedges, To prepare the prawns, pull off the head and peel away the shell, leaving the tail intact. Use a small, sharp knife to run down the back of the prawns and pull out the black intestinal tracts, if visible. Then use the knife to cut almost all the way through the prawns and butterfly them open. Flatten them out a little with the palm of your hand. Pat dry with kitchen towel. For the batter, mix the flours and salt together, whisk in the egg and enough of the water to give a smooth batter the consistency of single cream. Heat the ghee in a heavy-based saucepan or karahi over a medium heat. Once hot, dip 2 or 3 prawns in the batter and carefully lower into the ghee. Fry for 2–3 minutes, turning once, until crisp and golden and cooked through. Drain on kitchen paper. Repeat with the remaining prawns. Serve with lemon wedges to squeeze over and chutney and kachumber salad on the side.

Madras Fish Curry of Snapper, Tomato and Tamarind I have written at some length in the main introduction about finding this curry, which I have nominated as my favourite. I’ve used the same fish it was cooked with on that day in Mamallapuram – snapper – but in the UK I recommend using any of the following: monkfish fillet, because you get firm slices of white, meaty fish; filleted bass, preferably a large fish, because although you’ll get softer flesh it has plenty of flavour; or gurnard. I think more than anything else that this dish typifies what I was saying about really fresh fish not being ruined by a spicy curry. I can still remember the slightly oily flavour of the exquisite snapper in that dish because fish oil, when it’s perfectly fresh, is very nice to eat. I always think oily fish goes well with curry anyway, particularly with the flavours of tomatoes, tamarind and curry leaves. SERVES 4 – 6 60ml vegetable oil 1 tbsp yellow mustard seeds 1 large onion, finely chopped 15g/3 cloves garlic, finely crushed 30 fresh curry leaves 2 tsp Kashmiri chilli powder 2 tsp ground coriander 2 tsp turmeric 400g can chopped tomatoes 100ml Tamarind liquid 2 green chillies, each sliced lengthways into 6 pieces, with seeds 1 tsp salt 700g snapper fillets, cut into 5cm chunks Boiled basmati rice Heat the oil in a heavy-based saucepan or karahi over a medium heat. When hot, add the mustard seeds and fry for 30 seconds, then stir in the onion and garlic and fry gently for about 10 minutes until softened and lightly golden. Add the curry leaves, chilli powder, coriander and turmeric and fry for 2 minutes, then stir in the tomatoes, tamarind liquid, green chillies and salt and simmer for about 10 minutes until rich and reduced. Add the fish, cook for a further 5 minutes or until just cooked through, and serve with plain rice.

Wild Wadi Water Park, Dubai One of the world’s most exciting water parks, Wild Wadi is home to some of the most exhilarating water rides around. Whilst some aren’t for the feint hearted, there are relaxing rides and more subtle challenges to suit all tastes and ages. Wild Wadi is themed around the mythical adventures of Juha, friend of Sinbad. In addition to white kniuckle rides and slides, the park has a system of flow rivers and other more relaxing experiences. The jewel in its crown is the gravity-defying Jemeriah Sceirah - the tallest and fastest freefall water slide outside of North America. A must for all thrill seekers and dare devils! Firstly, if you, your brood or your friends aren’t huge fans of walking about, or are tired after spending most of your time in Dubai on foot, you’ll be pleased to read that
there’s very little walking to be done at Wild Wadi, even when getting across the park or up to the start of rides. Eight gravity-defying ‘Master Blasters’ use high-powered water jets, to form an aquatic roller coaster ride around the park, rocketing up to 15m above ground level! The four-seater Family Master Blaster runs in a loop, the Summit Surge provides a quick and exhilirating uphill pool area and the Rushdown Ravine offers a 170m white-knuckle ride back down. Another four-person option is Tantrum Alley, which offers two large sections of water slides and three exciting tornadoes for guests to ride in a clover-loke ring together. Burj Surj: Travelling downhill to the bowls, guests are hurtled into a spiralling spin and then dropped into the slide, ending with a screaming splash in the pool. Wild Wadi also have flow riders. For younger guests who might not be tall enough – or brave enough – for the bigger rides, there are water-based play structures like Juha’s Dhow and Lagoon, which comprises of more than one hundred games including five body slides, a huge dumping bucket of water, a pair of racing slides and water guns. There’ll be no need for the little ones to be jealous of the rest of the group, they’ll be having way too much fun. For a truly impressive experience, the Fossil Rock attraction fills up, pouring out 60,000 litres of water to create a flash flood, set against thunder, lightening and rain. The Flood River also offers an exciting and unexpected thrill as unannounced waves of 100,000 litres of water create sudden river rapids and waves over 2m in height that sweep the length of the river. Wild Wadi opens at 10am every day – we recommend getting there early to make the most of it!

Siam Park, Tenerife Tenerife’s Siamese-themed Siam Park is arguably the most spectaular water park in Europe. Owned by zoo and leisure giants Loro Parque, this tropical adventure land offers plenty of entertainment for all ages, swimmers and non-swimmers alike, however brave they may be feeling on the day! Siam Park’s winding boardwalks, shaded by lush tropical greenery, are the ideal place to spot sea-lions from Loro Parque and the Koi Carp swimming beneath the wooden walkways as the lazy river flows gently by. There’s even a Thai themed floating market and a variety of restaurants. Siam Park’s white-knuckle crowning glory is the Tower of Power - a jaw dropping, adrenaline fuelled super slide that’s sure to be the first ride many head for when they enter the park! Those who lack the thrill-seeking drive won’t be disappointed either, as Siam Park’s Mai Thai River is the longest Lazy River in the world, talking you on a tranquil and serene journey through the centre of the park, past cascading waterfalls and a spectacular aquarium of tropical fish and to a spectacular ending at the park’s world class jacuzzi finale right at the end which adds to the enjoyment and pleasure of such a relaxing ride. Another ‘world’s largest’ at Siam Park is in the wave palace – whilst the average height of waves there is an enjoyably
splashable metre or so, it’s actually capable of producing the biggest artificial waves in the world, at three metres! Wave riders are available here, so surfers can make the most of the waves too! True to Siam Park’s aims of not leaving any members of the family out, the Baby Zone is a special area for parents to take babies and toddlers to, so that the younger ones can enjoy slides and a pool that have been specifically designed for their enjoyment, comfort and safety. For slightly older children, The Lost City is a water world full of adventure, with towers joined by bridges and nets, waterfalls, fountains and gentle slides. These

cross the expanse of the Indian ocean, there are many islands that have barely been discovered by the holiday travel industry, and those that are more well known. However, due to the remote nature of these locations, even those that are the most popular with tourists can provide a secluded retreat which is ideal for nature lovers, honeymooners or those who just want to get away from it all. The isolated nature of the Indian Ocean’s islands means that, despite increased tourism, most of the islands are retaining their own
identities even whilst they flourish with additional investment, providing better facilities for visitors and locals. Zanzibar, for example, has remained resolutely African in terms of its passionate and intense culture, making it an interesting and perhaps challenging place to visit, contrasted with idyllic beaches and private lodges that offer exquisitely serene getaways. Despite closeby airports and popular cruise routes, the Matemwe, Pongwe, Fumba and Kizimkazi areas remain relatively untouched. Chwaka Bay, itself very close to the airports
often overlooked as its scenery is more subtly picturesque than other more dramatic areas, but it does offer an interesting little village which centres around its fish market, as well as the ruins of what were once impressive colonial bungalows. This trend continues at fishing villages along the coast, where beaches ringed by huge Baobab trees remain virtually untouched, save for the occasional local fisherman passing through. Zanzibar is in fact historically important as one of the first places that the Shirazi people from Persia settled along this coast. The coastline here is not like the famous image of Zanzibar as classic palm-backed lagoons – they’re mostly on the east coast. Here, a coral rag cliff lifts the waterfront above the ocean and the beaches are tucked away in secluded little coves, rather than huge swathes of sand. Those interested in marine life and scuba might be interested to note that the core diving area is Matemwe area. Matemwe is a beautiful stretch of coastline, with classic broad white-sand palm-backed beaches fronted by a stunningly fringing reef and lagoon, whilst the offshore atoll of Mnemba is the location for the best diving on Zanzibar. Maldives Well known for its gorgeous natural scenery, The Maldives are popular with nature lovers and marine enthusiasts. Like most natural environments, The Maldives’ surrounding area has been adversely affected by human developments in recent history, but fortunately conservation programmes have now been put into place in order to preserve this paradise. An organisation called Kurumba Maldives has opened up a new activity to allow the public to get involved with the conservation effort: the Coral Gardening workshop. This excursion gives its patorns an introduction into coral biology and reproduction before venturing in to the Kurumba lagoon to look for broken, but still live coral fragments that face demise on the ocean floor. Guest can now join to assist in completing the coral propagation, which is simply attaching coral fragments onto specially designed frames, located on its house reef to boost existing reef habitats. The use of these broken corals which are ready for replantation, means no harm is coming into corals which are in fair shape or not damaged. The coral fragments will be re-attached to man-made coral tables that are manufactured on the island, establishing new living spaces

for fish, coral and other invertebrates while preserving its natural reef. The programme will take time, so participants will be updated every quarter. years before that. Sri Lanka is home to many legends centering around technological and archaeological developments that seem to be far in advance of their time. Sri Lanka’s folklore is a treasure trove to the curious. Stories from surrounding cultures involving the area tell of stupas that reached the sky and functioned as data transmitters, palaces atop rocks adorned with intricate sculpture, water gardens and futuristic landscaping technologies and even star gates! Whilst these legends are, of course, open to debate and interpretation, it’s certainly true that Sri Lankan engineers and artisans, nearly three thousand years ago, created some of the most breath taking structures in the old world. Built with bricks and carved with stones; these creations found in the ancient cities of Sri Lanka continues to amaze the world. Megalithic structures had been built across the globe in the ancient times followed the position of star constellations or the sun at
important points of the year. Despite being built by various nations at different periods of time there are certain similarities between them in structure and purpose, and some excellent examples are present in Sri Lanka. Also present are huge ‘pleasure gardens’ with fascinatingly advanced irrigation systems. The tropical island nation of Sri Lanka has a history dating back to the birth of time. It is a place where the original soul of Buddhism still flourishes and where nature’s beauty remains abundant and unspoilt. Mauritius Mauritius, sparkling in its own right in the turquoise waters of the Indian Ocean, is a country of firsts and lasts. put Mauritius, for the first time, on the world map. Though it has now been extinct for more than 300 years, one of the few remaining skeletons of this giant bird, which was native to the island, continues to stir amazement in visitors at the country’s National History Museum. As for ‘firsts’, Mauritius is a country of freedom. It was at Le Morne, in the south-west of the island, that runaway slaves used to hide during the 18th and early 19th Centuries – protected by the mountain’s isolated, wooded and almost inaccessible cliffs. Over the years, the location has become a symbol of resistance to slavery, and it is now a UNESCO World Heritage site. The Aapravasi Ghat Immigration Depot is another UNESCO World Heritage site. It is the only surviving remnant of an immigration depot typical of those established in the second half of the 19th Century to welcome indentured labourers. Most Mauritians trace the arrival of their forbears from this site, which welcomed over half a million immigrants between 1834 and the 1920s. Mauritius became the seat of the ‘Great Experiment’, where the British attempted to show the world that the labour of free men and women would be more effective than slave labour. Because the experiment proved to be successful, according to the British, it was replicated in other British colonies as well as in French, Dutch and Spanish territories. Over two million people were eventually transported to the colonies from Asia and Africa as a result. Mauritius is also home to Champ de Mars - a very popular horse racetrack: the oldest in the southern hemisphere and the second oldest race club in the world after the English Jockey Club. Furthermore, in 1844, under British rule, Mauritius became the third country in the world to be introduced to golf. Seychelles Considering the Seychelles is an archipelago

comprised of 115 islands, it is good news for visitors that many of the areas strictest sailing regulations have now been lifted, although there are areas of coral to be careful of, so it’s still best to sail with local companies that know the waters well. Sailing trips are the best way to explore many of the islands in the Seychelles, not least because most of them don’t have their own hotels – quite a few aren’t permanently inhabited at all! Because of this, the beaches of the Seychelles are exceptionally beautiful, having been exempt from the influence of man for much of their existence. Even now, they remain uncrowded and offer crystal seas and blue skies almost all year round. However, if you’re off exploring, take note that not all beaches will be suitable for swimming all year round because of seasonal winds. So, if you see signs indicating that a beach is hazardous for swimming, pay heed no matter how tempting and harmless the waters look. f you’re hoping to take in a number of destinations in one holiday, most people’s first instinct is to drive. Driving is usually cost-efficient, it gives you full control over your timings and route, but it’s not ideal for everybody. For a start: you’re on holiday!
