Welcome
It’s beginning to look a lot like Christmas... ... well, it certainly is in the Ocean View offices, where I must admit every available surface is now festooned with glitter, tinsel, golden bells or twinkling lights. Christmas is absolutely a highlight of the year for me, and luckily most of the team feels the same! If you do to, or perhaps you’ve left the shopping - or the hinting to loved ones! - a little late this year, feast your eyes on our recommendations on page 12. Whilst festive family celebrations are the highlight of the calendar for some of us, others thrive on their holidays and with such interesting experiences being opened up for tourists, who can blame them? This issue, you can explore a different safari every day in Kenya, enjoy the cave hotels and underground cities of Cappadocia or admire the view from the top of the Empire State building in New York, just like I was lucky enough to do on a recent trip. As always, we have a full complement of articled to dip into, from exploring the love of yachting, racing around in the new Range Rover or finding out why Southampton’s been crowned the cruise capital of Europe. We have giveaways, competitions and more so you’re in with a chance of a few extra goodies coming your way this Yuletide, courtesy of Ocean View. So keep warm, grab a mince pie and enjoy this issue... we’ll see you in the New Year.

“Who goes to sea for pleasure alone would go to hell to pass the time,” seamen used to say, incredulous at people choosing to spend their holidays where they would only venture grudgingly to earn their daily crust. They were, however, forgetting one important detail: those who love sailing are not exposed to the elements every single day. They can set off when they want, for the destination of their choice and only if the weather conditions suit them (returning if not). They can take the best from the seas that are capable of the worst. They are the only masters on board and do not have to share their vessel with tons of icy fish. They enjoy the special privilege of being able to choose their constraints. In this subtle association between hedonistic aspiration and stoic virtue, difficulties are no bar in the pursuit of the beautiful and interesting. The link between challenge and beauty is apparent in the century-old, still majestic William Fife designs, in the lines of Pen Duick, Moonbeam III or Tuiga, with delicate
“Sailing these beautiful, demanding boats is a much less smooth and harmonious exercise than it appear” hulls that seem to disappear under their immense sails. A magical spectacle for onlookers and guaranteed prestige for the demigods disembarking from such vessels. Sailing these beautiful, demanding boats is a much less smooth and harmonious exercise than it appears. Because of the narrowness of their decks, their angle of heel and the absence of any railing one always runs the risk of falling into the water. However, no pain, no gain; it is precisely this inconvenience that makes these yachts so elegant. To make matters worse, you can get thoroughly soaked as soon as the wind gets beyond Force 3; with an obliging low freeboard, the water continuously runs on deck and the spray comes in low. Even if you remain dry and on board you are not out of trouble yet. You still have to manoeuvre. The sail area is inversely proportional to that of the deck and the rigging is particularly complex. Many pairs of arms are necessary – about 15 on board the Tuiga – but there isn’t enough 8 OCEAN VIEW

Tradition. The pleasure of rediscovering the movements of yesteryear on superb and very demanding yachts
room to deploy them adequately. Added to which a modicum of physical strength is desirable (the boat’s fittings are notoriously undersized) and a good deal of skill and experience is necessary to handle the innumerable ropes in the correct order to avoid disaster. You can make these boats move, but sometimes they have surprising reactions... The list of troubles does not stop there. Ergonomics being the least of the boat designers’ worries, lumbago is an ever-present threat. And don’t expect a luxurious interior; these boats may well cost the same as a small palace, but their habitable volume is that of a mobile home. Charming, of course, and tortuous to negotiate, with the possibility of getting some bruises. The last, but not the least, important peculiarity of these fascinating boats is that they can transform themselves into sieves at the drop of a hat if one does not grant them due and continuous care. This takes a great deal of time and courage – or money. Not all beautiful boats are so devious. In choosing a small one you can limit the damage in part, except when it comes to comfort. Or go for a more modern boat: the progress made by boat builders, coupled with the arrival of lighter and more resistant materials, means that
it is now possible to sail elegant and fast yachts with an ease that would have appeared miraculous to a 19th-century yachtsman, although a certain physical and intellectual agility is still required... Yachting cultivates a taste for complication. True enthusiasts know that the mood swings of a V8 Gray Marine yacht from the 1930s have an entirely different feel to the mechanics of more modern boats which will take you safely to your chosen destination with the reliability of a Swiss train. Taming a rebellious material is part of the sport, and pleasure can often be measured in terms of challenge.

ew York, New York. So good they named it twice, as the saying goes: home of some of the world’s tallest and best known buildings; the Yankees baseball team; the highest amount of the world’s billionaires and my favourite cocktail – the Manhattan, of course. The first thing that struck me – well, second, after being confronted by the New York rudeness I’d been warned of but realizing it was the tourists, not the locals! – was how familiar New York is. A constant stream of films and tv programmes set in the city have made the skyline and even the street level scenery of steaming subway grates and yellow taxis instantly recognisible, even for a first time visitor from thousands of miles away. There is certainly a sense of wonder as all the places you have seen in newspapers and on the screen loom into reality before your eyes… and then you realise you have only a few days to see them all. We were happy to recall the nickname “the city that never sleeps” as our plans involved some very early mornings and some very late nights. Our hotel – just a few blocks from Times Square, right by Broadway’s twinkling lights – was a great base for a sightseeing trip, an absolute bargain! We procured a map from the concierge and immediately set about familairising ourselves with the locale. In a few blocks’ time, we’d found a perfect family-owned Italian restaurant for dinner, which was every bit as good as you’d expect New York Italian food to be! We then hurried down Fifth Avenue, thrilled with our timing as it meant we’d be able to watch the sun set over the skyline from the top of the Empire State building. I’d always thought of the Empire State as just a really big skyscraper. When it was built, it was in a head to head race with the Chrysler building for the title of the tallest skyscraper in the world. I’d always thought the Chrysler building had ended up the prettier result of the fight – even
“We stood staring for hours, taking the odd picture but generally preferring just to soak in the noisy clamour and endless twinkle of New York City” though the Empire State won, and kept the title for nearly forty years. But I found myself silenced as soon as I set foot in the Empire State’s entrance hall. It’s had some restoration work done recently and now sparkles with all the Art Deco glory of its completion in 1931. Since then it’s been surpassed by more than twenty taller buildings but remains one of the most iconic, the most breathtaking – and the views from the top have to be the most impressive. We reached the observation deck on the 86th floor in just minutes due to fortunate timing with the queues and the staggering speed of the lifts and were able to watch the sun set and the lights of the city come into their own. The sheer scale and vibrancy of that view is indescribable, even with photographs, unfortunately. We stood staring for hours, taking the odd picture but generally preferring just to soak in the noisy clamour and endless twinkle of New York city on a standard October Tuesday evening. …And you can have that nighttime panorama at any time of year: the observation deck stays open until 2am! On our second day in the city, we gorged on America’s idea of a full continental breakfast, which included pancakes,

NEW YORK CITY
“We took the scenic route downtown on the bus, listening to the fascinating history of all the neighbourhoods that make up New York” sausage, waffles, eggs, potatoes, more bacon than you knew what to do with and of course the ubiquitous maple syrup. There’d have been pastries, fruit, yoghurt and cold meats too if we’d suddenly developed an extra stomach to deal with it all! We decided a brisk walk towards Times Square would assuage the guilt of eating more in one meal than we usually would in a day, and from there we could begin our sightseeing in earnest. I quickly found myself very comfortable in New York’s busy streets. I had been warned by plenty of friends and guidebooks that crossing roads, taking the subway, carrying a camera – even just being a tourist – were dangerous occupations in New York, but I didn’t find it any more threatening than any other major city. Perhaps it’s because I’m a native Londoner, so sensible precautions (like not carrying expensive items or large sums of cash about and not walking down badly lit, sparsely populated side roads) are ingrained habits, but I certainly didn’t feel any less safe in the bustle of central New York than I do in Picadilly. As for the subway, we decided against it and purchased a ‘hop on, hop off’ bus ticket for one of the tour companies which would last the
duration of our stay. For under $50 (you’ll find the touts who’ll try to sell you tours on every corner are quite negotiable if it means you buy there and then) we had unlimited bus travel around the whole of Manhattan, a regular and reliable service, interesting commentary on all the sights and even a free night tour, which was spectacular but very cold. We took the scenic route downtown on the bus, listening to the fascinating history of all the neighbourhoods that make up New York, and hopped off at Battery Park, where we boarded the ferry to Liberty Island. The view of the famous new York skyline that you get from the boat is probably the best there is, and worth the trip in itself. The Statue of Liberty must be New York’s most famous attraction, and although she’s somehow smaller, dantier than I expected, the sight of this world-recognised icon up close is humbling. Her status as the figurehead of American independence and the welcome of immigrants into New York
is fully detailed by numerous exhibits on the island, and I’d recommend reading up whether you’re visiting or not. It lends very moving context to the view entering the harbour into the city that so many would have seen as the first hope of a new, better life within the United States. Travelling back towards Midtown, grateful of our bus tickets, we stopped at the new World Trade Centre building. Known as the Freedom Tower (1 World Trade Centre is its official name), its 104 stories of dazzling glass make it the tallest building in the Western hemisphere, and it stands in a very stark and harrowing contrast to Ground Zero, which is marked out immediately below with two huge waterfalls and reflecting pools in the space the Twin Towers once occupied – a memorial to those lost on September 11th 2001. For some, this was a destination to learn and mourn the tragedy: for those who live in the neighbourhood, it has become part of the OCEAN VIEW 19

NEW YORK CITY
“The maple trees shone a burning bronze from amidst swathes of green that were just warming and beginning to crinkle” landscape once again, a solemn pause in the flow of everyday life as they go about their business, making their way uptown for work or leisure, just like we were. Central Park in the fall – it doesn’t seem right, somehow, to refer to it as autumn even now I’m back on my home turf – is every bit as beautiful as you’d think. Even though it had been unseasonably warm when we visited, the leaves were beginning to turn and the maple trees shone a burning bronze from amidst swathes of green that were just warming and beginning to crinkle with the first hints of the season. From within the park, birdsong and rippling water come close to drowning out the traffic noise of the city, and you could be miles from the nearest building until you look up… skyscrapers loom high over the walls of trees, seeming simultaneously to be immediately above you and yet nowhere near, as if you’re floating in a leafy bubble of an entirely different planet in the centre of New York’s grey metropolis.
This inner city oasis was so calming, so chocolate-box pretty, that we didn’t even mind when we got disoriented within the verdant haven like children playing blind man’s buff; emerged in the wrong place, totally lost and ended up walking half the circumference of the park to get back to where we started. For reference, Central Park is larger than the entire country of Monaco. We must have walked a good 65 blocks by the time we arrived back at our hotel… we may have even burned off that breakfast! Having crammed so many major sights into our first couple of days, we were able to relax our itinerary a little and add in trips to more shops, museums and restaurants. We made an effort to pop into each building we’d read of in books or seen in the films. I discovered a hitherto unnoticed fondness for the 1920s and 30s architecture that shaped the centre of the city and a friendly waitress recommended in passing conversation
that I visit Grand Central Station even if I didn’t have a train to catch. It seemed an odd choice for a tourist stop but I couldn’t be more glad I took her advice. Celebrating it’s centenary this year, the main concourse and ticket hall is a loft confection of grand clocks, chandeliers and golden brass that invokes images of running across the marble floor to be swept into the arms of a long lost love… in sepia tint, of course. It was enchanting, and I can only imagine this is the sole instance in which I would ever use a word like that about a railway station. On our final evening, we decided to see a show on Broadway and really, by that point I felt like I was in one. New York had, as it is so famous for doing, taken two strangers from a faraway land, embraced them and made them feel at home. By the time our red-eye left from Newark, London bound, I was exhausted with ringing ears, aching feet and a suitcase full of “I ‘heart’ NY” tat for friends and relatives. I left with the feeling that hey, New York will have you back any time. Which is just as well, as I think I’ve developed a taste for strong coffee and pastrami on rye.

Catch of the Day Bring a taste of New York’s Grand Central Oyster Bar into your own home
Red Snapper Veracruzana
There’s something about the acidity and flavour of Veracruzana that makes it the perfect sauce for red snapper. This is one of my favourite dishes. SERVES 4 For the Veracruzana Sauce: 1 tablespoon canola oil 1 large (6- to 8-ounce) onion, thinly sliced ½ green bell pepper, thinly sliced ½ jalapeño pepper, seeded and thinly sliced 1 garlic clove, thinly sliced 1 bay leaf 1 cup canned diced tomatoes, with their juice ½ cup water ¼ cup dry white wine (we use Sauvignon Blanc) ¾ teaspoon fish base or granulated fish bouillon 2 tablespoons capers 2 tablespoons sliced pitted green olives ¼ teaspoon kosher salt ¼ teaspoon coarse grind black pepper For the fish: 5 tablespoons fine-ground cornmeal 2 tablespoons all-purpose flour ½ teaspoon fine sea salt 4 (9- to 10-ounce) red snapper fillets Soybean oil To make the Veracruzana Sauce: Heat the oil in a saucepan over medium heat. Add the onion and bell pepper and cook, stirring a few times, until the vegetables begin to soften, about 5 minutes. Add the jalapeño, garlic, and bay leaf and cook for 5 minutes. Add the tomatoes, water, wine, and fish base. Raise the heat to high and bring to a boil. Lower the heat and simmer for 20 minutes. Remove the bay leaf, add the capers and olives, and simmer until the liquids have reduced but the sauce is still juicy, about 10 minutes more. Stir in the salt and pepper. You can make the sauce an hour or so ahead; keep it covered at the back of the stove. To make the fish: Position an oven rack 6 inches from the broiler and heat the broiler. Brush a baking sheet with oil and slide it under the broiler to heat for 5 minutes. Mix the cornmeal, flour, and salt together in a shallow bowl. Dip the skin side of each fillet into the breading mix and set it, skin side down, on the baking sheet. Brush the tops of the fillets with soybean oil and broil until the fish is beginning to brown, 3 to 4 minutes. Change the oven setting to 500°F and bake until the fish is cooked through and registers 135°F on an instant-read thermometer, about 7 minutes.

ESSENTIAL RECIPES
Oyster Rockefeller This is one of our signature dishes. Chef Scott Conant featured this dish on the Food Network’s The Best Thing I Ever Ate, calling it “old-school cooking at its best.” As he said, every component needs to be perfect. You’ll have some spinach left over. It could be a cook’s treat, or you could prepare another eight oysters.
Put the egg yolks and wine into a large stainless-steel bowl set over a pot of simmering water; the bowl should not touch the water. Whisk vigorously until the yolks are light and tripled in volume. The consistency will be like a pudding, and the yolks will make a ribbon that sits on the surface for 3 seconds when you lift the whisk. Be careful not to scramble the eggs as you whisk; make sure to whisk along the sides of the bowl, and take the bowl off the heat periodically. Set the bowl on the counter—on a damp kitchen towel to keep it steady—and whisk in the butter in a very slow, steady stream. Don’t add the butter too quickly, or the sauce will break. Once all the butter is added, whisk in the lemon juice, Tabasco, and salt.
SERVES 4
Keep the sauce warm but not hot (about 120°F) until needed.
24 Bluepoint oysters on the half shell Creamed Spinach (see recipe) Hollandaise Sauce (see recipe)
Vin Blanc Sauce
Position an oven rack in the top position and heat the broiler. Remove the oysters from their shells. Place the shells on a rimmed baking sheet and spread 1 heaping tablespoon of the creamed spinach into each shell. Set the oysters on top of the spinach. Broil until the edges of the oysters are just starting to ruffle, about 1 minute. Remove the pan from the broiler, top each oyster with about 1 tablespoon hollandaise sauce, and return the pan to the oven. Broil until the sauce browns, 1 to 1½ minutes. Using tongs, divide the oysters among 4 dinner plates and serve immediately.
1 cup dry white wine, preferably Sauvignon Blanc 2 tablespoons minced shallot 1¼ cups water ¼ cup heavy cream 2 teaspoons fish base or granulated fish bouillon 3 tablespoons salted butter 3 tablespoons all-purpose flour
Creamed Spinach SERVES 4 1 pound frozen chopped spinach, defrosted 11/3 cups Vin Blanc Sauce (see recipe) Pinch of ground nutmeg Pinch of kosher salt Pinch of ground white pepper This is one of the key components of our Oysters Rockefeller (see page 48), but creamed spinach has been on our menu as a side dish since Mr. Brody reopened the restaurant. The only change is that we now make it with vin blanc sauce— and what a difference it makes in flavour! Place the spinach in a clean kitchen towel and squeeze out the excess liquid. Transfer the spinach to a large skillet over medium heat and cook, stirring often, until the spinach is warm. Stir in the vin blanc sauce, then season with nutmeg, salt, and pepper and stir again. Keep the spinach warm until you serve it.
MAKES ABOUT 11/3 CUPS
This is an important “mother sauce” here at the Oyster Bar. It’s an integral component of the Oysters Rockefeller (see page 48), Coquille St. Jacques (see page 156), and Creamed Spinach (see page 202), but we adapt it in countless ways for daily specials. Combine the wine and shallot in a medium saucepan and bring to a full boil. Reduce by half. Add the water, cream, and fish base and return to a boil. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, until it smells toasty, about 1 minute. Don’t let the roux brown. Add about half of the boiling liquid and stir well to dissolve the roux. Stir in the rest of the liquid and bring to a simmer. Reduce the heat and simmer gently for 5 minutes. Strain the sauce through a fine strainer and keep warm until serving.
Hollandaise Sauce MAKES ABOUT 2 CUPS 6 large egg yolks 1 tablespoon dry white wine 1½ cups Clarified Butter 2 tablespoons lemon juice 12 dashes Tabasco sauce (or to taste) ¼ teaspoon kosher salt We serve this sauce most often with salmon, but it’s also a great sauce for grouper and red snapper (one of our old classics is broiled grouper with hollandaise sauce and snow peas).

paddle. Beat at low speed until the cream cheese is smooth, about 2 minutes. Increase the speed to medium-low and pour in the sugar gradually. Beat until the mixture is creamy and smooth, scraping the mixture off the paddle and scraping down the sides of the bowl twice, about 4 minutes. Scrape down the paddle and the sides of the bowl and add about onethird of the eggs. Beat at medium-low speed for 30 seconds. Again, scrape down the paddle and the sides of the bowl—be thorough when you scrape, removing all the batter from the paddle, to ensure that the filling will be free of lumps—and add about half of the remaining eggs. Beat at medium-low speed for 30 seconds. Again, scrape down the paddle and the sides of the bowl. Add the remaining eggs and beat at medium-low speed for 30 seconds. Scrape down the paddle and the sides of the bowl and add the vanilla. Beat on medium-low speed for 30 seconds. Don’t overbeat the filling—or beat it at a higher speed—or you will work too much air into the batter. The batter should be creamy and silky smooth.
New York Cheesecake We like to say, “There’s cheesecake. And then there’s our cheesecake.” We make this classic Oyster Bar dessert every day. MAKES 1 10-INCH CAKE For the cookie crust 4 tablespoons unsalted butter, softened 3 tablespoons plus 1 teaspoon sugar 1 cup all-purpose flour 1 large egg, lightly beaten For the filling 3 pounds cream cheese, at room temperature 1½ cups plus 2 tablespoons sugar 8 large eggs, lightly beaten 1 teaspoon vanilla extract To make the cookie crust: Put the butter and sugar in the bowl of a standing mixer fitted with the paddle. Mix at medium-low speed until the mixture lightens in colour and the sugar dissolves, about 2 minutes. Scrape the bowl once or twice. Add the flour and mix on low speed until the mixture looks like coarse cornmeal, about 1 minute. Add the egg and mix on medium-low speed until the dough comes together and forms a ball.
Scrape the batter into the pan; it should fill the pan completely. Place the pan on a rimmed baking sheet and slide it into the oven. Fill the baking sheet with hot water. Bake for 30 minutes, then rotate the baking sheet. Replenish the water that has evaporated from the baking sheet with cold water. Bake another 30 minutes. Rotate the baking sheet again, and add more cold water to the baking sheet. Bake until the cheesecake is very lightly browned (there may be some spots of darker brown) and very slightly risen, another 30 minutes. The cheesecake will jiggle slightly when tapped in the centre. Place the cake on a rack and cool to room temperature. Cover and refrigerate for 6 hours. To unmold the cake, run a knife around the edges of the cake. Then dip the pan into a bowl of hot water (we use a torch in the restaurant). Place a round of parchment and a 10-inch cardboard cake round (or a flat plate) on top of the cake. Invert the cake onto the cardboard round and lift off the pan. Centre a flat cake plate over the cheesecake and work your fingers under to grab the cardboard and invert the cake again. Use a long, thin knife for slicing the cheesecake. Wipe it clean with a damp cloth and dip it in hot water after each slice. The cake will keep, covered in the refrigerator, for 1 week.
Turn the dough out onto a lightly floured surface and form it into a disk. Wrap it in plastic and refrigerate for 30 minutes. Heat the oven to 375°F on convection (or 400°F without convection). Line a baking sheet with parchment paper. Roll the dough into a rough circle that is inch thick. Trim it to a neat 10inch round and transfer to the baking sheet. Prick it lightly all over with a fork. Slide it into the oven and bake until the crust is lightly browned, about 10 minutes. If it begins to puff up during baking, prick it again with a fork. Cool the crust completely. To make the filling : Place an oven rack in the lowest position and heat the oven to 300°F on convection (or 325°F without convection). Butter a 10-by2-inch round cake pan and line the bottom of the pan with parchment. Put the cookie crust into the pan (don’t worry if the crust cracks). Put the cream cheese into the bowl of a standing mixer fitted with the

S
haped by weather and war, wind and hand, Cappadocia is a geographically unique region of Turkey that’s on many a traveller’s ‘bucket list’ for the unique experience it offers. Located just southwest of the major city Kayseri, which has air and rail connections with Istanbul, Ankara and Istanbul, Cappadocia was actually home to some of the area’s earliest settlements. The volcanic eruptions of the mountains Erciyes, Melendiz and Hasan, which provided the rock that makes Cappadocia so unique,
stopped nearly two million years ago. Over the millenia that followed, wind and rain carved out the landscape into the surreal, almost other-worldly scenery we see today. The very first settlers to the area presumably came to see the peaks, pinnacles, cone and pillar formations known as ‘fairy chimneys’ already formed, the first architectural work already done by the elements. The soft rock was easy to carve into tunnels, caves and dwellings, some of which remain unchanged to this day. Discoveries such as the Cappadocian Tablets and the Hittite works of art in Alisar mean the
area was inhabited from at least the 2000s B.C. After 1200s B.C., the Kingdom of Tabal was founded, and following the Late Hittite and Persian eras, the Cappadocian Kingdom was established in 332 B.C. In the first AD years, early Christians used the region to escape from Roman persecution, using the network of underground dwellings as hiding places, and eventually places of worship. The underground architecture of Cappadocia developed until locals were digging not just living quarters and chapels but stables, OCEAN VIEW 29

storehouses, entire monasteries and complexes with up to eight stories into the soft rock, allowing those who lived there to retreat underground when faced with Roman soldiers or the region’s harsh winters. Göreme became a monastic centre in 300—1200 AD, and the monks excavated extensive dwellings which were protected with a defence network of traps. Very clever by design, the defence of the underground monasteries in the region involved thin corridors, which made it impossible for the Roman soldiers to use their well-practiced block formations so that the defenders could pick them off with spears dropped through holes in the ceilings, rolling rocks and false doors. The fact that these monks were able to continue to meet and worship was very important to the development of Christianity, as the works of the The Cappadocian Fathers of the 4th century were integral to much of early Christian philosophy. From the 7th century onwards, the underground chapels began to be decorated with Byzantine frescoed paintings which have endured to the present day. In fact, the Göreme Open Air Museum is the most visited site of the monastic communities in Cappadocia, and has some amazing examples of 9th to 11th century frescoes. The complex contains more than 30 carved-from-rock churches and chapels, so it’s a huge draw for tourists interested in the art and unique ‘architecture’ of the region at the time. As the underground cities of Cappadocia remain so largely untouched by the elements and you can still see – and even stay in them today. There are plenty of cave hotels which cater to tourists and it’s considered something of a must-try if you’re staying in the area. Not only is this an experience unlike any other in the world, but you’ll be surprised how ornate and comfortable underground residencies can be. The other activity to make sure you check off your list in Cappadocia is a hot air balloon ride. Whilst this may seem extravagant, the sight of colourful balloons drifting above the

unusual terrain is very common in the area, and locals and tourists alike will tell you that the best way to see the true breathtaking beauty of the region’s scenery – both man-made and natural – is in the morning sunshine, from the basket of a hot air balloon. And of course, whilst everyone has their personal favourite holiday indulgences, one that seems to pop up on every traveller of Cappadocia’s list is a visit to the Turasan Wine Factory, where grapes collected from local farmers processed into the world-famous Cappadocia wines. Whilst the Cappadocia region is a World Heritage site, there are still threats to its permanence, predominantly from the forces that made the area what it is. Natural erosion is working at levelling some of the human creations, although extensive preservation efforts are underway to ensure the area’s wonders survive for a few more generations yet, so there’s never been a better time to organise your trip to see this strange and beautiful landscape for yourself.

Sardinia:
A Beautiful Place to Be The Mediterranean’s second largest island, Sardinia, continues to lure travellers to its shores. Whether it’s the endless, stunning sandy beaches, fabulous sailing and wind surfing , magnificent mountainous scenery, fascinating history, wonderful cuisine or the glamourous Costa Smerelda with its luxurious hotels, boutiques and restaurants, there is something to offer everyone. If you are planning a touring holiday in Sardinia, it is surprisingly easy to negotiate the entire island by car. You can drive from the northernmost point to the southernmost point in roughly four hours and the journey across the middle of the island from east to west takes even less time – around two and a half hours at the most. For many, being based in one of Sardinia’s beautiful private villas near the coast is one of the best ways to discover the whole island and experience a bit of local culture. MORE ABOUT SOUTHERN SARDINIA While the north of the island offers stunning views, the glamour

of the Costa Smerelda, and proximity to the island of Corsica, the south has plenty to offer. One place you should definitely make time to visit while you are in Sardinia is Cagliari, the island’s capital and home to the island’s main airport. If you stay in a villa in Villasimius or anywhere else in the southern part of the island, it is this airport which is the easiest to travel to and from. It handles millions of passengers on an annual basis and if you are travelling from the UK you can fly from London Heathrow, Manchester, London Gatwick and Edinburgh. It has been proven that people have settled and lived in Cagliari for at least five thousand years. It may be hard to believe when you see the modern buildings there today, but there are signs of ancient settlements here, such as the ‘Domus de Janas’ or the ‘Houses of the Fairies’ which date from prehistoric times and are also sometimes referred to as witches’ houses. They shouldn’t be

too hard to find as more than one thousand have been found so far. From outside they look like large stone structures with a small hole that acts as a doorway. If sandy beaches is what you love on holiday, then Poetto offers eight kilometres of gorgeous sands. Close by you will also find Villasimius and the Costa Rei. MORE ABOUT VILLASIMIUS There are many reasons to choose Villasimius as your base for a Sardinian holiday, particularly as there is a good choice of wonderful holiday villas there. Villasimius is situated a short distance inland in the south eastern corner of Sardinia, but there are many delightful beaches nearby. One of the highlights is Porto Giunco, which boasts beautiful white sands and azure blue waters. Also worth visiting is Timi Ama, a salt water lake which is home to pink flamingos, as well as Simius, Piscadeddus and Cala Caterina among others. As is the case with much of the rest of the island, the history of Villasimius goes back many centuries although today it is first and foremost a holiday destination. There is a lovely selection of shops here and if you spend a day in the town you can round it off with a tasty meal at one of the many available restaurants.
COSTA REI If you are keen to stay in southern Sardinia but you would rather visit Villasimius than use it as your base, perhaps Costa Rei would be more appealing. Costa Rei is located a short distance up the eastern coastline from Villasimius and within easy reach of Cagliari too. The beach at Costa Rei is vast and sandy, providing you with plenty of options to choose a spot to stretch out and relax for the day, perfect for family holidays or couples in search of outstanding beaches on the island. If the idea of lying on the sand all day doesn’t quite fit the bill for you, why not indulge in some of the activities that are on offer? Costa Rei is very popular for divers, and even if you’re not qualified to dive, snorkeling is easy to arrange. Known for its breezy conditions, Costa Rei is popular for windsurfing and sailing. While Costa Rei is known for its beautiful beaches, it is also a great place to explore signs from the ancient past. The Piscina Rei area dates back to Neolithic times and there are various stone menhirs that mark the rising and setting of the sun. Please contact us at Italian Rentals 4u for further tips and advice about Sardinia. We would be happy to help you find your ideal holiday villa in Villasimius or the surrounding areas.

outhampton has been synonymous with cruising for over 150 years and today continues to be the UK cruise port of choice. If you’re a seasoned cruise-taker yourself, you’ll no doubt be familiar with Southampton’s modern and comprehensive port facility. But under the smiles and smooth service is an enormous operation that serves as a major source of employment in the local area and a boost to local business. In recent years Associated British Ports has invested over £41 million in its four dedicated cruise terminals and surrounding infrastructure to encourage growth of the cruise business throughout Southampton. The Port of Southampton currently serves as the UK home port for P&O, Cunard, Royal Caribbean and Celebrity Cruise Lines and also welcomes regular calls from Princess Cruises, MSC, Fred Olsen, Aida, Saga, Silver Seas and Oceania cruises. In 2013 alone, over 1.6 million passengers will pass through the port on 430 cruise ships! Cunard must count Southampton as its home, because when the the Cunard Liner RMS Queen Elizabeth 2 was due to take its final voyage into retirement, it did so from Southampton after a full day of celebration followed by fireworks on 11 November 2008. Cunard also regularly chooses Southampton as the port to launch ships from: for example it was where Queen Victoria was named by HRH The Duchess of Cornwall in December 2007, and Her Majesty the Queen named Queen Elizabeth in the city in October 2011. The Duchess of Cambridge performed the naming ceremony of Royal Princess on 13 June this year. P&O Cruises’ also honoured Southampton as the cruise capital with its 175th anniversary celebrations, during which all seven of the company’s liners Adonia, Arcadia, Aurora, Azura, Oceana, Oriana and Ventur – visited Southampton in a single day: 3 July 2012. 2013’s cruise season has been one of firsts for the Port of Southampton. to the prestigious and highly publicised naming of Royal Princess in June, this year the port has seen the inaugural calls of NCL Breakaway, Marina, Nautica, Azamara Quest, and Aidia’s first inaugural season of using Southampton as a call in cruise port. Living in the UK we may primarily think of being outbound from Southampton, but for visitors its location makes it the ideal gateway to the South East with sites such as Stonehenge, historic Winchester the New Forest, and of course easy, efficient transport links to London. Royal Caribbean deployed two ships for the first season from the port this year: Adventure and Independence of the Seas and of course, the convenient nearby location of Southampton airport makes Southampton accessible from a whole host of destinations, as well as an ideal base for further onward travel... so if you’re looking to jet off somewhere else once your cruise docks, your feet will barely touch the ground. In 2013 the Port of Southampton was awarded Best UK Departure Port in Cruise Critic UK Editors’ Pick. All the terminals and facilities in the port have been designed
“New cruise ships, innovative designs and the concept of the value package have driven demand in this holiday sector” in close collaboration with the cruise lines themselves to reflect the lines’ requirements, enabling them to transfer passengers seamlessly and giving those passengers and enjoyable experience which is an excellent start or finish to their cruise holiday. Doug Morrison ABP Port of Southampton Director said: ‘ The port remains committed to maximising passenger experience. At Southampton we aim to ensure that cruising from the port is a hassle free, stress free experience. Park up, have your luggage taken from you and head to the terminal. The whole passenger experience is designed to be seamless. No long bus transfers to the cruise terminal or long waits at the airport, when you cruise from Southampton your holiday should start as soon as you arrive at the port’
Due to the large number of ships now sailing from the port of Southampton there really is a cruise for everyone, whether that be a mini cruise, trans-Atlantic, Baltic or Med…the choice is virtually endless, and the world is your oyster! Despite the economic recession, cruising across the globe continues to grow in popularity. New cruise ships, innovative designs and the concept of the value package have driven demand in this holiday sector. While the North American market remains the largest cruise market, Europe is now the second largest. Southampton has become the unofficial capital city of European cruising and, to properly appreciate why, perhaps you should take a sail and see for yourself! www.southamptonvts.co.uk

KENYA
Jambo! See for yourself why beautiful Kenya has been named the best safari destination in the world.
What safari fans the world over have long suspected is now official - Kenya is officially the World’s Leading Safari Destination, having scooped the prize and title at the 20th World Travel Awards grand finale in Doha, Qatar. Travel agents and experts worldwide submitted their votes, and the decision was announced on 30th November, just a month after the country’s tourism marketing agency Kenya Tourism Board (KTB) was voted Africa’s leading Tourism Board. These awards are a great and timely recognition of the country’s continued work towards conservation of the environment, at the same time as making it more accessible to tourists to help to stimulate the local economy, in order to take on further nature preservation work. It has been no easy balance to strike, and the role of safaris in the country’s popularity must not be underestimated. KTB Managing Director, Muriithi Ndegwa, said the award an endorsement of Kenya as a home to authentic safari. “Kenya’s pride has been reaffirmed by this award,” said Ndegwa. “While we have been in contention for this and other awards, this is by far the greatest achievement we have received. We are alive to the fact that we must sustain our lead, through additional investments in the sector to ensure that the Kenyan experience for tourists remains unmatched,” said Mr. Ndegwa. Kenya is the original and the quintessential safari destination. Famous for its sweeping plains, abundant wildlife and unique cultures, a Kenya safari is guaranteed to
“Unique attractions such as the annual wildebeest migration are one of the most memorable Kenya safari experiences” create memories that will last a lifetime. The country’s exceptional tropical coastline of warm waters, coral reefs and powdery palm-fringed beaches make a trip there one of relaxation as well as fascination – it’s one of those rare holiday spots that really does have it all. For the wildlife lover, unique attractions such as the annual wildebeest migration are one of the most memorable Kenya safari experiences that have continued to put Kenya on the map as a safari destination, even with neighbouring countries offering experiences which, on paper, may sound similar. None can quite live up to Kenya’s offers unparalleled range of options. The incredible diversity of landscapes, cultures, wildlife and activities mean endless opportunities… you really can experience a different safari every day. Spending time based in one area in Kenya

does not mean familiarity, as the rich variety of local terrain and wildlife means that no two experiences in the wild are ever quite the same. Planning a safari trip that’s perfect just for you is easy. You’ll find the sheer overwhelming choice of places to go, things to do and scenery to see is the most difficult decision you will have to make! Fortunately, it is possible in Kenya to take a safari to a completely different destination every single day. This is a good option for travellers who like variety of experience and environment. In a single trip to Kenya, you can visit tropical forests, beautiful beaches and deserts, climb mountains and explore the wild… you just need to make sure you allocate enough time, and base yourself in the right places. As demonstrated by Kenya’s winning of the Leading Safari Destination award, chosen by travel agents, it is an area with which agents have plenty of experience and they will be able to guide you on a bespoke trip that is exactly right for you. It’s not just the trips themselves you have control over, but where you stay and the mood of your entire trip. Contrary to popular misconception about Africa, you will be absolutely spoiled for choice if you’re looking for five star luxury accommodation. If you want to really rough it and experience life away from the trappings of civilisation – a true experience of the ‘real’ Kenya – that too can be equally easily arranged. If you feel both have their merits, perhaps one of the ‘barefoot luxury’ experiences that have become extremely popular (and so, well catered for) in the last few years is right for you? You could even combine different accommodations within your safari experience, and include the best of all worlds. In Kenya, it is possible to plan a safari that blends adventure and relaxation, luxury and natural simplicity, social experiences and solitude. It really is the safari destination that has it all and, if you plan your trip right, so can you.

otching up ten international motoring industry awards in its first three months of production, the new Range Rover quickly proved that it was not being called The World’s Finest Luxury SUV for no reason. The Range Rover we see now is actually the fourth incarnation of the iconic Range Rover line, that has been developed from the ground up to provide the ultimate luxury SUV, following the innovative spirit of the original design from over 40 years ago. For a start, it was the first SUV in the world
to feature a lightweight all-aluminium body, bringing the whole Range Rover concept to a new level, with even greater luxury and refinement, enhanced performance and handling on all terrains, and significant advances in sustainability. The new Range Rover preserves the essential, unique character of the vehicle – that special blend of luxury, performance and unmatched all-terrain capability. However, its clean sheet design and revolutionary lightweight construction have enabled JaguarLand Rover to transform the experience for
luxury vehicle customers, with a step change in comfort, refinement and handling. They’re now going even further to extend that appeal to the luxury vehicle audience. At just under 5m long, the new Range Rover has a very similar footprint to the outgoing model, but with a smoother and more streamline profile – the most aerodynamic Range Rover ever. The luxurious interior has a modern and pure character, incorporating distinctive Range Rover design cues, but with a fresh and very contemporary treatment. The OCEAN VIEW 53

cabin retains the characteristic strong forms, emphasised by extremely clean and elegant surfaces which are flawlessly executed using the finest leathers and veneers… even more luxury trims are available in the new special editions, but more about those later. With over 118mm more legroom, the rear compartment offers vastly more space and comfort, with the option of the desirable… and that’s just the standard option. But wait, there’s more. They’re now making it even more exclusive, and if you’re anything like us, words like “exclusive” and “limited edition” are as appealing as the purring of the engine to your ears. We couldn’t resist a look at the new model. The first Range Rover long wheelbase in 20 years, this new model will cater for a growing group of drivers looking for the ultimate luxury SUV, and an alternative to the traditional long wheelbase saloon cars in this segment. Even more seat adjustability – on top of the extended legroom – means ultimate comfort for passengers and driver alike. The new Range Rover Autobiography Black edition mades its debut at the Dubai motor show just this month. It represents the pinnacle of desirability to bring even higher

levels of refinement to the world’s finest luxury SUV. The interior has been carefully crafted and tailored to meet customer needs with subtle but distinctive exterior detailing and is appointed and finished with the highest quality leathers and materials. “With the addition of the Range Rover long wheelbase to our portfolio of luxury SUVs, customers can now choose a vehicle that offers superior levels of interior space and comfort to compete in a market dominated by saloon cars up until this point,” says Phil Popham, Group Marketing Director, Jaguar Land Rover. “The Range Rover Autobiography Black is our most luxurious specification yet. It epitomises sophisticated design with immaculate attention to detail. The subtle, elegant and luxurious finishing touches combine with a first class experience for both driver and passengers to deliver new levels of exclusivity to our customers.” Range Rover long wheelbase models will carry a distinctive ‘L’ badge mounted into the exterior accents behind each front wheel arch, and you’ll be able to get your hands on one early next year. www.landrover.com
