Welcome to Spring/Summer issue of Ocean View! It’s been lovely to be able to write some of this issue whilst enjoying our own ocean view. Our team count ourselves very lucky to live and work by the sea and the warmer weather has put us firmly in the holiday mood! Our current favourite fantasy destination is Italy, and there are some excellent cruise itineraries visiting the area in the next year or two. You can visit for yourself with our destination feature on page 14 but you don’t really need to travel far for a delicious taste of Italy... no further than the kitchen, anyway! Many people around the world cite Italian as their favourite cuisine, and we have a selection of recipes that are sure to give Mediterranean flavours a place in even more hearts and on even more dinner tables. If the sudden onset of spring has given you a taste for the great outdoors, we’ve got new camping ideas for you. Camping may well be an ancient pastime but that hasn’t stopped it being continually reinvented, and even those who have had less than enjoyable camping experiences in the past could be pleasantly surprised by some of the adventures available to them now, so why not get the family together for an adventure under the stars this summer?

A Truly Extraordinary Experience The crystal glasses are gleaming, the silver is polished, marquetry panels varnished and cabins prepared; arrangements are complete for the start of the Venice Simplon-Orient-Express’ (VSOE) 2013 season The Orient Express is synonymous with the Golden Age of rail travel… so much so that many casual travellers do not realise that the train is still running, much less that it has truly steamed into the 21st century with a Facebook page and a Twitter account that you can follow for updates on the latest locations and life aboard an icon of classic travel. Never standing still for a moment, the Orient Express has recently undergone a slight spring facelift and taken on new destinations for 2013. This year sees the train head to Scandinavia on a new and exciting itinerary from Venice to Stockholm via Copenhagen and the restoration of two of the 17 iconic carriages, keeping the romance of train travel alive. New for 2013 are a series of rail adventures to Scandinavia, visiting Stockholm for the first time in the train’s history. Departing fromVenice, the VSOE will travel through Italy, Austria, Switzerland and Germany before heading via Copenhagen to Stockholm, linking three historically rich and diverse cities by an extraordinary rail experience.
The classic overnight journey from London to Venice via Paris, and vice versa, leaves regularly throughout the season and is a highlight of the schedule, as is the annual voyage to Istanbul; stopping along the way overnight in Bucharest and Budapest. This signature voyage, once a favourite of Agatha Christie, departs Paris on 30 August and returns to Venice on 6 September 2013. On 22 May and 23 October, the train will depart from Venice to London via Budapest and Vienna on an insightful four-night journey. Alternatively, the journey from Venice to London via Prague will depart on 1 May, 5 June and 2 October discovering the charming capital of the Czech Republic. The vintage carriages, often referred to as ‘museums on rails’ and filled with Art Deco charm, are kept in pristine condition with the help of expert artisans, as they were during the 1920s. Unknown to so many of the guests who will travel on the train in 2013, over the recent winter months there have been a series of refurbishments to the restaurant cars. The intricate works, carefully planned years in advance, started once the season ended in November 2012 and keep the train looking as fresh as

they did when they first took to the rails, resplendent with the charm of the Golden Age of Travel. The initial steps included removing all furnishings before sandblasting, then painting the exterior in the iconic royal blue shade followed by lashings of shining varnish, so the VSOE will sparkle all through the season. L’Oriental, Dining Car 4095, is incredibly striking with black lacquered panels throughout. Once reglazed, the small designs were painted in bright yellow, red and green tones, so the carriage glistens in the light as the train meanders along each route. The marquetry panels in L’Etoile du Nord, Dining Car 4110, are filled with warm wooden floral designs and every section is rich with intricate details which have been brightened and the wood re-varnished. Each marquetry panel has been varnished 15 times and the total time taken to restore each carriage is over 6000 hours, 100 hours per craftsman. The kitchen in each restaurant car, which is no bigger than the size of a small corridor, was stripped out before custom made fittings were installed ready for new delicious dishes to be created by the Executive Head Chef and his team. The legendary train, which is a destination in itself, offers comfortable and beautifully appointed cabins and impeccable service. The exquisite cuisine and delicious cocktails are inspired by the routes the train travels through over the season; stewards are also on hand to assist with any special requests to ensuring each journey is one of a lifetime.

tarting at the top of Italy is the port of Venice, where you can ride around the famed canals and take in the beauty of the architecture. Once a great shipping power in the Mediterranean, this beautiful city is no stranger to busy markets and offers many shopping opportunities. If you’re saving your euros for the rest of your trip, there is a simple joy in viewing the fantastic art held in this city. Next is Genoa, or Genova as it is natively known. The city is home to the largest aquarium in Europe, which makes a great day out for families. For those with finer tastes, exploring the city to see beautiful renaissance and baroque art can easily eat up an afternoon. Like many places in Italy it is a great place for shopping, but has enough variety in the way of attractions to satisfy the whole family’s tastes. We advise visiting Genoa before or after your cruise in order to sample everything it has to offer. Just below Genoa you will find Portofino, a wonderful fishing
village famous for the dolphins that surround its bays. Colourful houses line the harbour of Portofino, where you can take a boat out to go snorkelling or scuba diving, while lush greenery covers the hills and spreads throughout the national park. If those activities don’t take your fancy, the streets lined with cafés and designer shops might just do it. It’s no surprise that this gorgeous town can get busy in the summer, so keep this in mind when choosing your cruise. Moving down and further inland will take you to the beautiful renaissance city of Florence. The history of the city comes alive through its architecture and art; stunning cathedrals such as the Santa Maria del Fiori, and wonderful museums like the Uffizi Gallery and the Accademia will leave you awestruck, but with little time for anything else. With so much to do in this beautiful city, and the dock for Florence being over an hour’s drive away from the city itself, you may find yourself needing to revisit to do all the things you missed the first time around. Out on the sea is Elba, a pretty island and home to Porto Ferraio, which was once called “the safest port in the world.” The marina area is full of cafés and shops ready to receive sailors and tourists alike, while inland lies part of the Arcipelago Toscano National Park where you can take a cable car from Marciana to the top of Elba’s highest mountain, Mount Capanne. Most large cruise ships will not take you here, which means fewer crowds! If Elba sounds like a must-see spot for you, look out for smaller ships that dock here and bring a pair of good walking shoes for exploring. Not much further down you will find the glorious capital, Rome. Cruise ships will normally dock at Civitavecchia, where there are a number of travelling options to get you to Rome. This beautiful city has so much to offer in its art and history, and many visitors enjoy picking a route on a map and taking in the sights around them as they walk. There is certainly the bustle that you imagine in an Italian city here, with scooters riding past busy markets and people rushing around in fashionable clothes, but there are quiet piazzas dotted around for a much needed coffee stop. The capital is a definite mustsee for all visitors to Italy; the sights are simply magnificent. A short distance from Rome is Naples. This energetic city combines cultures from varying periods of history, having been settled many times, and you can certainly feel it with its 18thcentury palazzos mixed with 1970’s-Soviet-style concrete blocks. It holds a number of beautiful churches and theatres, as well as being home to some of the best pizza in Italy. Many cruises stop here, and it is worth your time to look around and soak up its busy history. Sorrento, just below Naples, is often only used as a gateway to other popular locations like Pompeii and Capri, but this quiet seaside city has much more to offer for the independent explorer. opportunities. Travellers can catch a bus or walk up the cliff side to the main town square, where they can indulge in an afternoon of shopping or dine al fresco on an authentic wood oven pizza. Off the coast of Italy, and opposite Naples and Sorrento, is Sardinia. This wilderness island has a protected forest area which tourists are allowed in, in limited numbers, and a number of stone fortresses left by the numerous inhabitants throughout the centuries. Lovers of watersports would do well to visit Sardinia for its sailing, diving and windsurfing opportunities, while foodies will enjoy the brilliant seafood served here. Travellers looking for beauty in their ports need look no further than Bari. Back on the coast of Italy and looking out over the Adriatic Sea, this gorgeous city is bursting with charm and elegance. Popular designer shops and fine restaurants can be found here, with the medieval Old Town area capturing the romantic essence of Italy. Puglia lies just beyond, with over 50 million olive trees, beautiful wheat fields and Roman ruins. Ensure this port is on your cruise itinerary for a touch of class. When choosing your cruise, keep in mind cities surrounding the ones you port at; for instance, Sorrento, Capri and Naples are all within short distance of each other and can be easily accessed. It is also worth considering which cities you can stay in overnight, as the rich variety of activities these cities offer cannot always be sampled in one day.

A Little Italy
If you’re not off to Italy, you can at least take your taste buds there with our simple but effective Italian recipes and add a few new Mediterranean tricks to your recipe repertoire
Caponata Tomato, bread, mozzarella & basil salad This salad uses a local crisp brown bread known as friselle or pane biscottato, made from wholemeal flour and dried so that it lasts a long time. It is said that fishermen and sailors would take it with them, reviving it for lunch by dipping it into the sea. It is a great store cupboard ingredient even today, making a filling addition to a healthy salad. If you can’t get hold of it, look for Swedish Krisprolls or similar instead. This recipe comes from Nicola Giannullo from Ristorante Rabbit, in Agerola. This caponata is not to be confused with Sicilian caponata, which is cooked and made with aubergines (eggplants). Serves 4 4 friselle or 12 Krisprolls 125 g (4 oz) ball buffalo mozzarella or fior di latte 4 small tomatoes or 8 cherry tomatoes, quartered or halved 15–20 basil leaves 1 teaspoon dried oregano salt and freshly ground black pepper 3 tablespoons extra-virgin olive oil 1 tablespoon white or red wine vinegar
Soak the bread in a bowl of cold water for 10 seconds to soften it. Break into pieces onto a serving dish. Tear the mozzarella into bite-size pieces and scatter over the bread with the tomatoes, basil, oregano and seasoning to taste. Add the oil and vinegar and gently toss the salad with your hands. Variation to further enrich this salad add canned tuna, anchovies and boiled eggs.

La cassuola o zuppa di pesce Seafood soup The spectacular cassuola is named after the copper casserole pan it is usually served in. It is a mixture of what fish is available at the market, including langoustines, squid, mussels and clams. Often it is made with only crustaceans but it works just as well with fish too.

Serves 4 1 kg (2 lb 3 oz) mixed fish and shellfish, such as clams, mussels, crayfish, squid, cuttlefish, gurnard and stone bass 1 shallot or 1⁄2 white onion 2 large garlic cloves 6 anchovy fillets 1 tablespoon capers, drained handful of parsley 1⁄2 red chilli, depending on strength 6 tablespoons extra-virgin olive oil salt and freshly ground black pepper 1 tablespoon tomato purée 100 g (31⁄2 oz) canned or fresh roughly chopped tomatoes, depending on season and flavour 300 ml (10 fl oz/11⁄4 cups) hot water or hot fish stock 4 slices of white crusty bread, toasted

Drop the clams into a bowl from a 15 cm (6 inch) height so that any that are open and dead or full of sand will split open and can be discarded. Clean any barnacles off the mussels and pull off the beards. Discard any that don’t close. Cut any fish into 4 cm ( 1 1⁄2 inch) cubes and the squid or cuttlefish into 1 cm (1⁄2 inch) rings or pieces. Set aside. Using a large knife, finely chop the shallot or onion, 1 garlic clove, the anchovies, capers, parsley and chilli together. Heat the oil in a heavy-based casserole dish and fry the mixture slowly with a good pinch of salt and black pepper for 10 minutes. Add the tomato purée, then stir in the tomatoes. Season the squid and cuttlefish with salt and add to the pan. Pour in the hot water or fish stock and cook for about 15 minutes and add the fish. After 15 minutes, add the shellfish. Cook for a further 5–10 minutes until all the shells have opened, discarding any that haven’t. Taste and adjust the seasoning if necessary. Rub the toasted bread lightly with the remaining garlic and lay 1 slice in each serving bowl. Pour the soup over the top and serve immediately.

Fusilli con gamberetti, cannellini & menta Fusilli with prawns, white beans & mint I ate this dish on our wedding anniversary at the beautiful San Pietro hotel just outside Positano. The waiter presented me with a ring from Giancarlo, my husband, hidden under a silver salver. Continuing a perfect evening, I then ate this delicate and exciting combination of fresh green mint and sweet pink prawns against a backdrop of pale cannellini beans and homemade fusilli.

Serves 4 320 g (111⁄2 oz) dried or fresh fusilli (page 122) 400 g (14 oz) cooked cannellini beans (either from a can or dried, soaked and cooked) 50 ml (2 fl oz/1⁄4 cup) extra-virgin olive oil 1⁄2 red chilli, depending on strength, finely chopped 1 garlic clove, finely chopped salt and freshly ground black pepper 16 raw tiger prawns (shrimp), shelled but with heads and tails on 100 ml (31⁄2 fl oz/1⁄2 cup) white wine 12 mint leaves, roughly chopped knob of butter
Start by cooking the dried pasta in plenty of salted boiling water and make the sauce while it cooks. If you are using fresh pasta, make the sauce first and then cook the pasta. Drain the beans and set aside. Heat the oil in a frying pan and lightly fry the chilli and garlic with a little seasoning, being careful not to let them burn. Add the prawns and fry until pink, then stir in the beans. When the beans start sticking to the bottom of the pan, pour in the wine and allow it to reduce for 3–4 minutes. During this time, cook the fresh pasta. Taste the sauce and season again if necessary. Scatter over the mint leaves over and stir in the butter. Add the drained pasta along with a couple of tablespoons of cooking water and toss through the sauce. Serve in warmed bowls.

Enjoy the Outdoors
Camping once meant pitching a tent in the back garden, or the whole family taking a trip to a cramped caravan park. But since festivals became the new short holidays, alternative camping ideas have increased in availability and stretched outside of the festival fields. Tipis & Yurts These early styles of camping have proved popular with festival goers as an alternative to the confines of four-man (that usually feel more like two-man!) tents. Available for hire, or pre-set up on site, these comfortable mini homes can shelter anything from six to fifteen people, with space in the middle for belongings. Some tipis and yurts are available with a fire in the centre, using a traditional design of the tents to allow ventilation, though these should be used with caution. These styles are perfect for a group looking for a little more comfort and space than a flimsy tent. Campervan Caravans and campervans normally conjure memories of driving slowly along a seafront on a windy day, or being sat in a campsite in the rain, but these old favourites have been brought back into popularity by a love of vintage style. VW campervans and American Airstreams are trendy again, and are great for taking the whole family out with easy access to beds and facilities for older relatives and no setting up required. Glamping Call it what you will – glam camping, luxury camping – but glamping is in and here to stay. Starting at big festivals like Glastonbury, glamping is for those who want to sleep outside, but with all the comforts of home and hotel. Huts, cabins, and highquality tents are available to house your group, with power to use all the electronics you’d use at home, cooking facilities, bathing facilities and comfy beds for all. This is ideal for picky campers and those with spare cash for festival accommodation, but also makes a great holiday in itself with glamping sites springing up across the world. Look for themed holidays like safari, eco/rural, and seaside. Primitive Primitive camping is not for the fainthearted. Those that desire the challenge of the wild will feel at home surrounded by their lightweight cooking pots and shrinkable sleeping bag. The point of primitive camping is to bring little equipment, meaning you can move spots easily, and leave nothing behind. Foraging for food (while bringing some that won’t leave packets or mess) and making use of your surroundings is the key to fun and rewarding primitive camping. This is best for a small group of experienced campers rather than children, but if they’re up for the challenge it can make a great active weekend. Traditional If you’re a beginner to camping, your standard camp site with tent, mini barbeque and wellies is still good fun. Festivals have done a lot for the camping supply business, and you can buy a lot of stylish tents and sleeping bags inexpensively. With the weather warming up, a long weekend camping with friends and family can be an ideal break. Camping and Fishing If camping has a first cousin, this is it. There are about five million anglers and two million campers in Britain and Ireland. Aside from sleeping, fishing is the most peaceful thing I do. I enter a dreamy state of wakefulness, until a tiny creature with baffling strength tugs and bends my rod. Homemade rods, a few pounds worth of hooks and floats and earthworms, and a little knowledge are all that’s needed to feel the thrill of a tight line. Failing to catch dents the desire to return. Freshwater fisheries with their own campsites are the best place to learn because owners have a vested interest in your success – happy campers always come back. Every county in Britain and Ireland has more than one campsite with on-site fishing. Most have tackle shops manned by staff who want to pass on good advice. Training schools for kids cost almost nothing. If you’re in need of angling tips, the four basic rules I apply are: 1. Find a fishery or campsite with a reputation for good, plentiful stock 2. Ask for guidance on baits, tackle and water depth 3. Tackle up with the precision of a surgeon. You can learn in 20 minutes by watching YouTube or reading a book 4. Place groundbait in the exact area you’ve decided to fish There are two angling zones associated with camping: freshwater (coarse) and seawater, and thousands of methods (I’ve yet to perfect any of them). My sea-fishing expeditions are attempts to bring something home to cook on the campfire. Coarse fishing (freshwater lakes, rivers and canals) rarely involves any thoughts of dinner. Encounters inland with beautiful creatures, festooned in fine scales and extra-terrestrial colours almost always involve ‘catch and release’. It’s a perplexing idea to some, but routine practice at private fisheries, controlled by regulations. Salmon and trout are the exceptions. Game fishing – either in sea or freshwater – involves casting man-made flies into the watery void. It’s more art than science. Many game anglers will keep what they catch, but increasingly they are choosing to release, too. If fish don’t bite, experiment. It’s great fun watching everyone else missing with the spam and pellets, while you’re hooking six-pound carp and bream on bread flakes or red foil paper. You’ll be amazed at what a fish will try to eat on any given day. Your chosen location around the water is important, too. When I’m looking for a campsite and fishery, I tend to book a site where the area I intend to fish (known as a swim) is included within the pitch area.
There’s something special about having everything within easy reach, especially a gas hob and fridge. The downside is if your swim is producing no bites, it’s not so easy to move. Some fisheries set the campsite a few hundred yards from the water so anglers can move about, if necessary, between swims. Sea fishing is a completely different discipline. As I can’t afford a ‘fishing boat’, the method I use is line-fishing from a kayak. Kayak fishing is one of the fastestgrowing sports in the UK and Ireland. Its success is based around the ability to reach the very best fishing grounds, inaccessible to other craft. Clubs and associations offer information on where to fish, how to improve the chances of success, and how to stay safe. Campsites on coasts, estuaries, sea lochs and tidal rivers are rarely designed to cater for anglers. It’s more about going it alone or looking for advice from others. There are literally thousands of campsites with exclusive access to ponds, rivers, lakes, canals and beaches that others can’t reach. I’ve fly-fished for trout on the River Eden in north-west England (p.182), watched my daughter hook eight-pound carp at Bosworth Water Trust, in Nunneaton (p.116) and caught cod and mackerel on a handline from a kayak along the west coast of Scotland (p.74). The islands off the Scottish coast and the Welsh shoreline around Snowdonia are, for me, the best sea-fishing, and the south-west coast of Ireland isn’t far behind. The entire British coast can be successfully fished, although inland is my favourite zone for relaxation: casting a line onto a still lake, next to camp, is a fairy-tale world. Five million anglers and two million campers can’t be wrong.

hether you’re seriously considering entering a sailing race soon, or it’s a daydream that still seems a long way off, you’ll enjoy the materials provided by the organisers and partners of the J.P. Morgan Round the Island Race. They have combined their expert knowledge and resources to produce a series of practical ‘How to’ videos with hints, tips and tricks for tackling all manner of Racerelated topics, from how to prepare your boat, through to the right clothing to wear, tracking, rules and safety aspects and even how to apply your hull decals. Launched on April 12th, with new material being uploaded each week and available to watch on the official website, this informative series will run right up to Race Day on 1st June. You can view the videos page at www.roundtheisland.org.uk Top sailors join the party On the start line alongside two other high profile Open 60s, Hugo Boss (Alex Thomson) and Gamesa (Mike Golding) recently announced as competing in this year’s J.P. Morgan Asset Management Round the Island Race on 1st June, is a third Open 60, Artemis Ocean Racing (GBR100), with Simon Clay at the helm. Another respected name in international racing circles and signed up to compete in the Race for the very first time, is French sailor Christine Briand, a 470 World Champion, ISAF Keelboat Champion, and veteran of the Whitbread and Volvo Ocean Race. She is racing Ster Wen (FRA13343), a Jeanneau Sun Magic 44, with her all-French crew that includes 14 and 16 year olds. Murch Myst...& The four Murch brothers, all in their 50s, have competed in the Race at one time or another over the years and possibly even together but as youngsters. They will all do the Race this year on Myst (GBR3144L), a Jeanneau Sun Odyssey 33i. “We have all competed in the Race before and possibly OCEAN VIEW 49

all at the same time on the same boat but some were too young to remember. There are four owners of mixed sailing ability and experience who do most of their sailing with family and friends. Their shared ownership plan provides them each a week at a time, plus the opportunity for a couple of weeks for each owner in the summer. As skipper Dave Hamilton points out, shared ownership is great but you can appreciate that the opportunities for racing are limited. “The RTI Race gives us the opportunity for some serious sailing over a single weekend but the Race doesn’t require competitors to be serious racers. Not that we don’t take it seriously, but the competition is and can be based on the small group in which you start and amongst other boats of the same class or make and model. All this

It’s a C Breeze! Andromeda (K4738), a Sigma 33, is a first time entry from a C. Breeze! He has sailed for 40 years but it is his first time tackling the Round the Island Race with his four friends from work who usually watch the Race whilst cruising. We hope it’s blowing a breeze rather than a hoolie this year.
Gipsy Moth IV goes racing The Race is delighted to welcome back the historic yacht Gipsy Moth IV (142), on which Sir Francis Chichester sailed single-handed around the world in 1966-7; it’s always a treat for competitors to see her sailing amongst the fleet. Now owned by the Gipsy Moth Trust, she is managed by UKSA whose work helps young people change their lives through maritime education and personal development. The aims of The Gipsy Moth Trust are to preserve and maintain Gipsy Moth IV in sailing condition as a key part of British maritime heritage; to enable as many people of all ages as is practicable to see her and sail her. To use her to promote charitable activities and to inspire future generations to achieve their full potential.
Aspiration for students Eight students, mostly in their 20s and studying the Yacht Operations & Outdoor Education Foundation degree course at South Devon College will get the sailing experience of a lifetime as they crew on board the Sigma 38 Aspiration (GBR924R) in this year’s Race. They have varied sailing backgrounds ranging from no experience at all to coastal skipper and some have never raced before whilst others are seasoned round the cans racers. At the very centre of mainland Shetland, Lerwick has served as its capital since 1708… but don’t go there expecting a capital city.
It’s not a destination that’s been built to cater towards tourists, but the locals are said to be exceptionally welcoming and friendly to visitors, and those who take the time to visit are sure to be charmed by the area’s visible history. Although the area itself has been settled for more than 3000 years, the first settlement to be recognisable and known as Lerwick sprung up to house and feed those who worked on the fish trade with the Netherlands in the 1600s. Fort Charlotte was followed by the introduction of stone buildings in Lerwick, many of which echo the Dutch architectural fashions of the time with crow-stepped gables. Later on, Victorian touches crept in, so there are a gothic features and turrets on many of the area’s more important public buildings. Lerwick is still a working fishing port, as well as serving as the cruise port and ferry port, so you’ll see sections of buildings reflecting industrial uses throughout the ages around the area, and its where visitors to Shetland will find it easiest to experience the breadth of the area’s history. Walking through the narrow alleyways and cobbled streets of the centre of Lerwick, it’s easy to conjure images of the bustling fishing trade of the past, its deafening bustle and it’s unavoidable smells. Modern Lerwick is a more relaxed place, but it’s still a working town, a working community that isn’t exclusively tailored for the visitor… and it’s all the better for it. a couple of hotels. There are a couple of large supermarkets a short drive away, which have provided necessary extra jobs and convenience for the hardworking and otherwise quite remote community. These additions mean it’s one of the few places locally where self catering is easy, and the variety of food and accommodation here makes it a great base for exploring mainland Shetland. Road connections are good, and there is a bus service that allows locals and visitors to travel further afield – if they want to! Lerwick’s harbour itself is an excellent location for bird and boat watching, and a base for exploring Clickimin Broch, the Knab and other locations like Bressay just across the water. Most recently, an impressive new museum has opened in Lerwick, dedicated to the history and culture of Shetland. Opened in 2007, the Shetland museum has a number of galleries and sections with a huge variety of exhibits from agriculture to the arts, sure to be of interest to any visitor to the area. Now that so many destinations rely on tourism as their source of income, it’s refreshing to visit a functional town that embraces visitors without pandering in an attempt to make them feel as though they’ve not left home.
