RECENTLY attended a press briefing hosted by the Enterprise Illembe Economic Development Agency and the Ilembe Chamber of Commerce, Industry and Tourism, to launch their joint memorandum of understanding. This was all very corporate and ‘businessy’, but it got me thinking about the notion of leaning on others to achieve something great.
In the briefing, they identified their shared concerns for business and development on the North Coast, as well as their vision for the future of the region. North Coast Pilates guru, who travels the world to share her expertise. She is also a mother, a businesswoman, and an overall force to be reckoned with, so we couldn’t have hoped for a better Mother’s Day cover. She’s also an advocate of community, and of having someone to lean on. Her enthusiasm and commitment to physical and mental wellbeing is contagious. She’s proclaimed 2019 the ‘year of the back’ and, as she unpacks this, it becomes clear that her philosophy resonates on all kinds of levels. “If you have a weak back,” she explains, “who’s going to lean on you?” You can’t support anyone else, physically, emotionally or mentally, if your own support structure (whether it be your back, your core, or your emotional state) is not strong. Read more about this on page 11. This edition of L&S comes out on the day we all head to the polls, and wouldn’t it be cool if our politicians adopted a similar outlook? Sometimes, asking for help, shows more strength than it does weakness. We can all benefit from having someone to lean on, whether it be personally, professionally, as a mother or father, or a politician. Speaking of strength and asking for help, as we head into the throws of cold and flu season, on page seven we take a look at your immune system and learn how to fight the winter bugs with our resident dietician, Kim Martin. Dr Rosie Carey talks about the rise of tick bite fever in our area on page eight, and our tech expert, Marc Forrest, lists his top three apps for mothers (or parents) to make your life as a ‘momager’ that much easier. The Bloom School in Salt Rock does incredible work for children with special needs, and their annual Colour Run and Family Fun Day helps raise much-needed funds. A Foodie AFFAIR
There was fire, there was ice, there were ‘oohs’ and ‘aahs’, all making for high drama and culinary theatre. The Life & Style team were the very first invited guests to the 2019 Chef’s Table at Simbithi Country Club, experiencing a four-course paired meal from the veritable hot seat, inside the kitchen.

VER the past few years, chefs have become rock stars. Gone are the days of the cumbersome tall white hats and slogging away behind the scenes. Kitchens are now blank canvases for their creativity, and discerning diners the expectant spectators, which is precisely the set-up at Simbithi Country Club’s chef’s table at Fig Tree restaurant.
off the flavours. The death by chocolate dessert was a flamboyant ode to the humble cocoa bean. The warm and spongy chocolate fondant gave way to the perfect gooey centre, a berry coulis and dried strawberry ‘leather’ provided some tart relief to the sweetness, and a gelato rounded off the plate of absolute decadence. It seems counterintuitive to sip on sweet dessert wine with a sweet dessert, but surprisingly, the Thelema vin de Hel 2015 Muscat’s distinctive pineapple, citrus and honey notes did the trick. It finished off the dish perfectly, as a good pairing ought to do.
Our carefully curated meal balanced punchy flavours with delicate touches, and moments of child-like surprise with moments of pleasure. And since the chef wants you right in the epicentre of their world, your table is set up in the back of the bustling kitchen at Fig Tree restaurant. Our evening began with a chilled glass of the Laborie Blanc de Blanc MCC 2011, as the meal is just as much about the wine as it is about the food. Once we were seated, a touch of theatre came from the addition of activated dry ice, strategically placed inside the wine coolers to draw our attention to the selection of paired wines for the evening. By now we were eagerly anticipating the entrée; a salmon roulade with crème fraîche, slithers of avocado, toasted ciabatta, and the delightful addition of caviar
pearls made from rosé wine. The meal was paired with the delicious 2016 Fairview Chardonnay, a buttery and fragrant complement to the richness of the roulade. What followed caused much conversation, and when the food sparks discussion, you know you’re experiencing something special. ‘Frozen tears’, a tear-drop shaped icicle, housed a scoop of elderflower sorbet, served with a strawberry salsa and a cucumber sphere, which is a fleeting and delicate

yet intense burst of flavour. The dish was a fairy garden of flavour. With our palates suitably refreshed, our next course delivered a rich, Italian Osso Bucco of hearty braised beef, smoked cauliflower puree, pungent truffle dust, a sweet carrot gel, with an onion tarte tatin and a jus that clearly had been reducing for days to deliver that kind of flavour. The meal was rich, but the portion was just right, and the Chamonix Cabernet Franc 2014 accompanying it managed to cut the richness and round

FOUND it enormously liberating to make the call to Multichoice that terminated our hefty monthly arrangement with them. No, this was not in protest at their harsh treatment of Steve Hofmeyr, although I am appalled at the way they have handled this PR challenge. While they have effectively cast Steve Hofmeyr into the abys in an attempt to disassociate themselves from his particular brand of political rhetoric, they are seemingly okay with the racial baiting, rabble rousing, murderous style of polemic frequently used on their platforms by men like Julius Malema and Andile Mngxitama. Surely to avoid the
My decision to cut the cord was based on the premise that there are better entertainment options now available via the internet. So, for the past few months we have saved money and discovered a world of entertainment that is completely independent of the SABC or Multichoice – and I haven’t missed them for a minute. Our television sets are connected wirelessly to the internet through a streaming device called Boxx which is readily available in the greater Ballito region and, as long as the internet connection is fast enough, it’s game on! I watched a particularly interesting conversation with a Neuropsychiatrist caller Peter Fenwick the other night in which he describes in detail how we die. Now, I accept that this might not at
first glance be the most uplifting choice of evening entertainment, but I have always had a bit of a fascination with the subject. Mr Fenwick is in the interesting position of having comprehensively studied both the workings of the brain and the mind and he is of the firm opinion that consciousness is much more than simply a function of the brain. Having analysed the experiences of the dying while they are still able to communicate and those who have almost died but been brought back, he traces many common threads of shared experience. A detailed study of the experiences of those caring for the dying, further supports his findings and the conclusions he comes to are extraordinary. I won’t spoil it for you by revealing all in this brief missive, but I encourage you to watch it for yourself when you get a chance. I say this because, far from the morbid tragedy that you might assume the end of life to be, the evidence would strongly seem to suggest that the best really is yet to come. But, until we get there, there is some living to do and this is not a bad part of the planet to do it in. We have just had friends from Cape Town paying us a visit and it’s a real treat to look at Ballito through their traditionally rather condescending eyes. While the rest of the country seems to be devolving under the continued weight of collective ineptitude in almost every sphere of public life in South Africa, our little principality enjoys steady growth fuelled largely by those who are able to relocate here from other regions. We have an extraordinary lifestyle here and there is much to be grateful for. Gratitude – now, there’s a concept to conjure with. It’s possibly the most liberating life skill of them all. eing a mom in today’s day and age is, well, chaos. How can I tell? I’m just the dad around here, but being married for going on 15 years, with three awesome kids, I know a mom’s life can be challenging.
From school runs to making sure everyone is packed and ready for extra murals and ensuring that everyone is happily fed (not an easy feat with teenagers in the house!) mom’s seem to draw the short straw, all while dad leisurely sips on his coffee in meetings all day. Right? Luckily, there are a couple of apps, which I have slowly introduced over the years (slowly, because we don’t want to create more chaos) which can help moms everywhere make their lives simpler. There are thousands of apps developed specifically for moms, so I thought in honour of Mother’s Day, I’d share my choice of them here: Cozi Cozi is our family go-to app. Everyone has this installed on their devices and if you have any sort of commitment outside of our everyday home life, then you need to ensure you have it in Cozi. The app allows you to plan your weeks by entering events and allowing you to allocate them to family members, as well as set reminders for the more important events. It syncs across devices and you can also access it via the web. The app also allows you to view shared lists and to-
do lists, including the all-important DIY list for dads. It also offers a recipe section with the ingredients list right in the app, making dinner decisions a lot simpler. The app is free to use, although they do have a premium version which offers birthday reminders and a synced contact list. Cozi is honestly a must-have for all families. Visit cozi.com

Life360 Keeping track of your family can be hard. Especially as the kids get older and start having a better social life than their parents. Life360 is a family networking app launched in 2008. It is a location-based service that allows family members to share their location with each other, and easily communicate throughout the day. The app has more than 50-million registered families! The app allows users to share locations, group message, and call for roadside assistance. We’ve been using the app across our extended family and has proven helpful whenever someone needs a quick lift, or even if a nephew needs to be picked up from a friend’s house. The app is free to use and allows you to create multiple ‘circles’ to view only specific people, as well as use the ‘chat’ functionality amongst them. This is a must-have if you have a family that is always busy and as the kids get older, it’s always good to keep tabs on them in a “non-stalker” kind of way! Visit life360.com Sleep Cycle Show me a mom who has had enough sleep? I recall a conversation with my wife soon after our second child had been born (just over 12
years ago) and we worked out how little sleep she was getting to have 2 kids in the house. When the third child arrived, I avoided the conversation completely and am still trying to dodge that one. Sleep is a sore topic: enter Sleep Cycle. This app allows you to monitor how much sleep you’ve had and assists you in helping to wake up at the right time. The app is built with scientific research around it, so it wakes with a subtler sounding alarm while you’re in your lightest sleep. It has some nifty features like ‘Snore Recording’ so you have some proof when hubby claims he still doesn’t snore! Of course, the app isn’t just for mom’s, so I’d highly recommend this app to everyone. It has helped me personally with my sleeping habits and also allows you to track your sleep habits. sleepcycle.com As I mentioned there are loads of apps out there to make mom’s life a lot simpler. ROM the very first chill in the air, we know that we need to support our immune systems to avoid the dreaded cold. It’s been said that the average person will have 200 colds in their lifetime. That amounts to about four to five years of coughing, sneezing, headaches and fevers. But what is it about these months that makes them breeding grounds for colds and flu?
I’m sure you’re wondering whether there are simply more bugs in the air in winter, and you aren’t totally wrong. Although there are many different types of flu viruses, the strains we tend to pick up most often come from the Rhinovirus family. Rhinoviruses prefer colder climates relative to the warmer months. It’s not only the bugs that are more active in winter, our immune system tends to be less active. Studies have also confirmed that
our immune systems are stronger over the summer months, and it has been suggested that the sun plays a role in this. Our immune cells respond to environmental cues like the amount of sunlight, as well as to our circadian rhythm (our body clock). Because there are fewer hours of sunlight during winter, this affects our circadian rhythm, which in turn impacts our immune cells. There are other indirect effects of fewer hours in the sun. With less sunlight exposure to our skin, we end up with less Vitamin D production. Vitamin D is a known modulator of the immune system and a deficiency can negatively impact your health. There are also some studies looking at our genes being turned off and on by varying environmental changes such as winter and summer, but more research is needed before we can draw solid conclusions. Colder weather also leads to changes in our nasal cavity. With a lower humidity in the air, colder temperatures outside make it difficult

for our nasal passages to produce adequate moisture. This can cause our mucus to dry out and thicken, our membranes inside the nose to become more fragile, and the lining of our membrane to crack. These changes can lead to irritation as well as increased invasion by germs. There are a few steps we can take to make sure we stand the best chance against getting sick in winter. We need to tackle it from both sides, combating environmental changes that we have no control over, and then also providing the right nutrients to bolster our immune system from the inside out.

1. COMBAT ENVIRONMENTAL CHANGES We cannot control the fact that the air will be drier, the temperature cooler, and the hours of sunlight fewer. We can however do the following: •Dress appropriately for the cooler weather (this is an obvious one). •Try to get some time in the sun, despite the cooler weather. •Consider a humidifier if you struggle with your nasal passages being irritated by the cold, dry weather. Alternatively, consider using a nasal spray that adds moisture regularly. 2. BOLSTER YOUR IMMUNE SYSTEM If you can’t avoid the bugs being more prevalent, you need to make sure that your immune system can fight them off. Here are the most important steps to take: •Think Food First: Up your intake of phytonutrient-rich foods (think brightly coloured fruits and vegetables like berries, red peppers, and dark green leafy vegetables). Coupled with this, make sure to avoid refined sugars as these can weaken the immune system. Soups, juices and smoothies are great ways to increase your intake of phytonutrient-rich foods. •Hydrate: Make sure to still drink your eight glasses of water per day, especially if your mucous membranes are going to struggle with the drier weather. You want to make sure they get sufficient support. •Take it Easy on the Exercise: Exercise is always important. However, during winter pushing your body beyond its limits may lead to a weakened immune system. Stick to lower intensity workouts or allow for sufficient recovery between workouts. 3. SUPPLEMENT WISELY ♥ Vitamin D is important if you are not able to get time in the sun. Get your levels checked and supplement with a Cholecalciferol (D3) supplement if you are low. ♥ Vitamin C and Zinc are great to support recovery from a cold. They haven’t been proven to prevent you getting a cold, but they will certainly improve your recovery time if you do. ♥ Probiotics can be instrumental in the health of your immune system. Regularly taking a high quality probiotic may help prevent you picking up a cold. ♥ Phytonutrient supplements such as Curcumin, Garlic, Ginger, Mushrooms and Propolis can provide you with doses more concentrated than you may get from your food. Owner Samantha Wilkins bought the business just last year, and since she’s added her magic touch it’s gone from strength to strength. Samantha has brought her expertise from her logistics and operations background in the mining industry, as well as her experience from her travel and hospitality management business in the Alps. Her flair for entrepreneurship was most evident from her bespoke travel business which she based in Austria, after seeing a gap in the market for tailor-made travel. The internet was just booming when, in the late 1990s, Sam started what was one of the very first internet-based holiday companies. This was when she first learnt how to become in-tune with what her market wanted, which is how she seems to know her Beauty Factory customer so well. “It’s about really considering what people want, what they aspire too, and factoring in affordability,” explains Sam, who prides herself on sticking to South African products, and also partnering with women-owned businesses. SHE’S got your BACK If you’re a Ballito local, chances are you’ve heard of Tash B, the pioneering Pilates instructor whose made it her mission to empower everyone with not only a strong, capable body, but a positive mindset too.

OU may have heard Tash B (her surname is Barnard) on our radio station, 88FM, drilling you about your posture. If you spot someone in the traffic suddenly sitting upright, levelling their chin parallel to the floor, chances are they’re listening to 88FM! Tash even gets stopped at the traffic lights these days, with eager commuters yelling out their windows at her that they’re sitting nice and tall! As a young student of dance at Pretoria Technikon where she had aspirations of becoming a professional dancer, graduating with honours in the Ceccheti Ballet and IDTA Modern Dance methods in 2000, Tash first discovered Pilates, and it soon usurped dance as her first love. “A friend actually said to me at the time, ‘this will open doors for you,’ and that couldn’t have been further from the truth!” explains Tash. She qualified as a BASI Pilates instructor after graduating, (BASI stands for Body Arts and Science International, which is both the name of the academy’s holding company and an affirmation of its approach to Pilates), “and the rest is history,” laughs Tash.
From Pretoria, she headed overseas for four years, working from London to Dubai and Salzburg; then an opportunity took her and then-fiancé Andre (now her husband), to Hong Kong where Tash got the chance to teach in world-class facilities, cementing her desire to offer a similar Pilates experience to South Africans. After a period in Johannesburg, circumstance brought her to the beaches of Ballito. Fast forward to the present day, and she now works wth BASI teachers and students, who Tash calls her dream team, and she’s never looked back. “Ballito has been good to us,” smiles Tash, but it seems Tash has also been good to Ballito. It’s where she had her two children, Carter (8) and Asia (11), and where she has established trustbased relationships with not only her clients, but the community at large. Most locals won’t realise what a mine of information she is – she lectures across the globe, from the USA to Asia, and has even developed her own workshop specialising in Pilates for children. TASH’S RULES FOR A BETTER BACK 1. BREATHE Sounds obvious, and perhaps even unrelated, but breathing is your essential reminder that you have a rib cage, with muscles containing lungs, and although its reflexive, conscious breathing helps to reactivate the mechanism, regenerating cells, and forcing you to pause. 2. SUCK IT IN AND SQUARE IT UP Pull your abdominal muscles towards your spine, and square your shoulders of your hips. 3. STAND TALL When we sink into our torso we compress the spine – pretend there’s a

And she couldn’t be more impassioned about individuals having a strong back, and good posture, to quite literally have the strength to grapple with life. “Your physical posture is also the posture of your heart,” she explains. “If you walk into a room hunched over, or you walk into a room standing tall and proud, who are people going to listen too?” The answer is selfevident. Tash’s focus this year is on backs, and she believes that you can’t metaphorically and physically lean

CHIN UP The position of your chin says a lot about your neck – keep it parallel to the floor. 5. WATCH YOUR TECH NECK It’s a thing. Tash explains how in Japan, there are signs imploring people not to walk while on their phones, as it is such a safety hazard. Not only can you easily go crashing into something or someone, your neck is also at risk. Hold your device higher, or better yet, put it down!
on people who don’t have a strong back, and it’s her hope that everyone will heed this advice. It’s even one of Tash’s values for her business; to have a strong back is to be uncompromising in one’s beliefs, to be courageous, and to maintain ones’ “true north.” When she puts it like that, it’s hard not to believe that Tash has your back.

It’s hard to believe this picture-perfect foodie haven is nestled right in the heart of Durban, near Cowie’s Hill. “Summerhill Estate was founded in April 1997 by Christine Richter, starting out as a B&B with five rooms. Now with 16 rooms spread over 13 000 square metres, it is definitely no longer a B&B,” jokes Johanna Richter, daughter-in-law of Christine. “Each room is different, and named after a South African jazz musician, who either played or stayed here,” she explains Johannes, the eldest son, was born in Germany, but grew up in Durban. The Richter family moved from Germany to South Africa in 1991. Despite studying law and business, Johannes knew that food and wine were his true love, and he completed an apprenticeship as a chef in Germany on the French border, in a Michelin-starred restaurant. Then he moved to Berlin, where he met wife Johanna, working in the same Michelin stared restaurants together. They moved back in December 2016, taking over the food and beverage side of Summerhill with the supper club at The Living Room. They bake their own bread (with natural sourdough as leavening agent, and is the Life & Style cover star this edition!), cure their own hams and sausages, rely solely on fresh produce out of which they create purées, pickles, dehydrates, ferments, and vegetables cooked in hot coals. They only buy whole carcasses of livestock ensuring nose-to-tail gastronomy, and on the pastry side, they create their own ice creams, sorbets, madeleines, cakes, meringues, mousses, and parfaits. The Living Room Supper Club is open from Tuesday to Saturday for outside guests.

Cleopatra Mountain Farmhouse If you’re looking for roaring fires, endless mountain vistas, and world-class gourmet meals, then Cleopatra is just the spot. Fred Poynton (grandfather to gastronomic legend and current owner, Richard) bought Cleopatra in the 1940s, as a cool holiday respite from the Zululand summers he spent as a sugar farmer in Empangeni. The original mountain cottage was built around the turn of the century, and is carved out of the local stone, hewn by local stonemasons. Richard Poynton was groomed to become a farmer, but despite studying farming at Cedara Agricultural College, and a stint at Rhodes University in Grahamstown studying agricultural economics, it became apparent that sugar farming was not for Richard. He embarked on his first venture in the hospitality industry with his wife, Mouse, by converting their existing house into Granny Mouse’s Country House. After eight years at Granny Mouse, they worked their way through the UK, doing cookery courses in the UK, Ireland, France and Italy. They realised that this was where their hearts lay, and returned to the family farm in the Drakensberg Mountains and started Cleopatra Mountain Farmhouse. Their famous cookbook won a Gourmand World Cookbook Award and a Silver Award in the International Sappi Awards for Excellence in Printing, and some of their recipes they share freely on their Facebook page. THAT’S NOT A DEFENDER, IS IT?

HE new generation of Land Rover’s Defender 4x4 will be built in Slovakia rather than Britain, the car-maker has recently confirmed.
The new Defender development fleet of two- and four-door vehicles has already undergone more than 744,000 miles of extreme testing and will
complete more than 45,000 individual trials in some of the world’s most inhospitable places before its official unveiling and launch later this year. Land Rover said: ‘By the time the new Defender makes its public debut later this year, it will have passed more than 45,000 individual tests in some of the most extreme environments on earth.
‘Land Rover engineers have taken the test fleet to the 50-degree heat of the desert, the sub 40-degree cold of the Arctic, as well as up to 10,000ft altitude of the Rocky Mountains in Colorado to ensure the new Defender will take everyday life in its stride, for even its most adventurous customers.' The 4X4 has also been tested on
Germany’s Nürburgring, at off-road course at Eastnor Castle near Ledbury in the UK, on rocky trails in Utah, and in the sand dunes of Dubai. Land Rover said: ‘The new 4x4 promises to bring unparalleled breadth of capability and new levels of comfort and driveability to the Defender family.’
