Exciting Update

In the August issue, we shared the news that we were seeking new ownership for the magazine.

Today, during Lifestyle’s 21st anniversary month, we’re thrilled to announce that Lifestyle will continue serving our wonderful community as it transitions to new ownership! After three incredible years, we’re passing the torch to a new team who will carry on the magazine’s two-decade legacy, and we couldn’t be more excited for what’s ahead.

As we move forward, we’re pleased to welcome Root Creative Marketing—a local creative team passionate about Lifestyle's mission of “Inspiring Life In Our Community.” They’re committed to preserving the magazine’s legacy while bringing fresh energy and vision to the publication.

Street in Downtown Visalia, with their first issue set to release in November! We can’t wait to see their plans unfold and witness the positive impact they’ll have across the South Valley.

Lifestyle: Congratulations on taking over our beloved Lifestyle Magazine! Can you share with readers a little about yourselves?

Stephanie: Thank you! We're thrilled to be here! Growing up in the Central Valley, we both have such a strong connection to this place and its people. It's an honor to take the helm of a magazine that celebrates everything that makes this region so special. Sam's creative background and my experience in PR and marketing give us a wellrounded perspective, and we're both driven by a desire to continue serving our community in a meaningful way. We’re both raising young kids with our spouses and we understand the importance of family and those deep-rooted values that are so important in the Valley.

Lifestyle: What attracted you to Lifestyle, and what made you want to plant roots in Visalia as its new owners?

Stephanie: Lifestyle has been a staple in the community, and we've always been impressed with how it captures the essence of the local culture, businesses, and the people who make it all happen. We had an opportunity to build on its legacy and bring some new energy and ideas to the table. Visalia is such a vibrant hub in the Valley, and we're excited to be a part of its growth and connect with the community in new and exciting ways.

Stephanie: We want to honor the heart and soul of Lifestyle – the things that readers have come to love over the years – while also keeping things fresh and innovative. Our goal is to make sure the magazine stays relevant, engaging, and truly reflect the vibrant spirit of our community. We're looking forward to deepening our connection with readers, introducing new voices and perspectives, and expanding our digital presence to reach an even wider audience. The story of the non-profit FightingOn begins with a deep commitment to women's health, particularly in the realm of breast cancer. Founded by two young survivors, Lacey Mendes and Danielle Avila, alongside Kaylin Coelho—whose mother, Natalie Coelho, lost her battle with breast cancer at a young age—the nonprofit emerged from personal experiences that shaped their mission. They understand the profound impact a cancer diagnosis can have not only on patients but also on their families. The collective journey of these women highlights the fear of not just battling the disease but also the emotional toll it takes on loved ones, especially children

PROGRAMS AND SUPPORT SERVICES

FightingOn operates with a three-pronged approach to support women facing cancer. Their first initiative focuses on advocacy, providing monetary donations to help alleviate the financial burdens that often accompany treatment. They also offer emotional support as fellow survivors, creating a community where women can lean on one another. Danielle Avila recalls, “As the late Emily Garnet said, ‘Breast cancer is the worst club with the best members.’ We aim to be those members who understand and support each other.”

Recognizing that the journey doesn’t end with treatment, FightingOn prioritizes mental health support for survivors navigating life after cancer. They offer resources and sponsor services to help individuals cope with the challenges that follow.

Another vital aspect of their mission is supporting children impacted by breast cancer. Through scholarships and financial trusts, FightingOn aims to provide opportunities for kids who may have lost their mothers or are dealing with the aftermath of their diagnoses.

YEAR-ROUND AWARENESS

While October is recognized as Breast Cancer Awareness Month, FightingOn emphasizes the importance of maintaining awareness throughout the year. “The month can be overwhelming for breast cancer survivors,” Lacey Mendes explains. “While it’s wonderful to see our community rally in support, we are committed to advocating for women and children all year long.” Although major funding may come from October events, their support continues relentlessly beyond the fall.

HELPFUL INSIGHTS FOR THOSE STARTING THEIR JOURNEY

For those recently diagnosed with breast cancer, Danielle Avila shares heartfelt advice: “It’s okay to be scared and to take a moment to grieve. After a diagnosis, life can feel like a whirlwind of planning and appointments. I remember being overwhelmed, especially with my youngest daughter only one year old at the time. I feared she wouldn’t have memories of me. A friend suggested I start recording our day-to-day moments, giving my daughter something to look back on. That idea provided me with the strength to fight my battle.”

COMMUNITY INVOLVEMENT

FightingOn invites the community to join in their mission. Their annual Fill the Ribbon event encourages donations while honoring loved ones who have fought cancer. Participants decorate notes that are displayed on a ribbon showcased around town. Last year, they partnered with 1852 Visalia to launch the event, and this year, the Tulare Soroptimist Association helped kick off the 2024 Fill the Ribbon fundraiser at their Wine & Shop event. The ribbon is currently on display at Vali Coffee in Tulare, where community members can stop by, enjoy a cup of coffee, and contribute to a meaningful cause.

Through dedication, advocacy, and community support, FightingOn continues to make a significant impact, ensuring that the journey through breast cancer is not one that women and their families have to face alone.

After a year-long remodel accompanied by unforeseen challenges, the home has been transformed from the studs up. THE ART OF BREAD PETS

Cultivating Your Own Sourdough Culture

What is it about sourdough bread that beckons novice and seasoned bakers alike to become part of a tradition thousands of years in the baking industry? It’s home cooking at its most basic, requiring just flour, water, and patience to create one of the most satisfying and comforting foods on the planet. The art of the process is enticing too: different ingredients, different shapes (boules, mini-boules, batards and sandwich loaves); different patterns of scoring, and add-ins make every loaf unique.

How do we get started with sourdough? With a sourdough starter, of course! Sourdough starter has its own allure, with bakers bestowing “punny” names-think Brigitte Bardough or Bready Mercury-on their starters and sharing tips and lessons learned from each bake with other bakers. Once created, it can be used and shared endlessly (San Francisco’s Boudin Bakery has been using essentially the same starter since its founding in 1849).

Sourdough starter is a living community, where wild yeast and good bacteria keep each other alive and flourishing. Flour and water are fed to the starter, enabling the yeast and bacteria to create a process of fermentation, making carbon dioxide gas bubbles that produce more yeast, and sugar for the yeast to create the acids that contribute to sourdough’s signature flavor.

The many different species of bacteria and yeast found in every kitchen and in the products used by every baker, as well as their methods of feeding and baking, make every sourdough starter, and thus every loaf, distinctive. And therein lies the beauty of sourdough: although it seems that there are many rules to be strictly followed, in the end it is what works for every baker, in their own kitchen, to suit their own tastes, on their own time.

How do I get started?

You can make your own sourdough starter, or to ask a friend to share some with you, (you’ll know you’re getting an active, healthy starter). Starter can also be purchased from reputable sources, which will ship it with instructions on how to maintain it.

What should I feed my starter?

All-purpose or bread flour and filtered or purified water are best. Rye flour can be substituted for 25% of the flour you’re using to strengthen the starter. Many bakers discourage using tap water because of the presence of chlorine and other chemicals that can affect starter; filling a container with tap water and allowing it to sit for 24 hours will help the chlorine evaporate.

Is my starter healthy? What’s that liquid on top?

A layer of thin, tan-to-gray colored liquid on your starter is called “hooch”, and it means your starter is very hungry. The starter is safe to use; hooch can be poured off before feeding, or stirred back in for a more pronounced sour flavor.

Sourdough Starter

Sourdough starter is incredibly resilient! BUT, if you see: color other than cream or amber (pink, orange, blue, or green); mold; white fuzzy spots or black patches; rippling growth or black liquid on the surface; or notice a bad smell (like acetone or nail polish remover), throw your starter away and start over.

What is “discard” and what should I do with it?

Must I keep my starter on the counter and feed it every day?

If you’re not baking with your starter daily, you can keep it (covered) in the refrigerator and feed it every 7-10 days. It can be fed less often, but may take longer to achieve full strength when you’re ready to use it.

Many sourdough recipes instruct to remove (discard) some starter before feeding; thus, discard is actually unfed starter. It can be tossed; fed to create a new starter; diluted with water and used in the garden for a boost of good bacteria and microbes; or refrigerated for fun recipes like sourdough pancakes!

Print Theory

MAKES APPROXIMATELY 12 (5 ½”) PANCAKES

ingredients

2 cups all-purpose flour

3 tablespoons sugar

1 teaspoon baking soda

2 teaspoons baking powder

2 teaspoons ground cinnamon

1/2 teaspoon sea salt

2 tablespoons unsalted butter, melted and cooled slightly

2 eggs, lightly beaten

1 cup sourdough discard

1 cup half and half or whole milk

1 teaspoon vanilla extract or vanilla bean paste

butter or oil for the pan (optional)

maple syrup

directions

1. In a large bowl, combine the dry ingredients and whisk together.

2. In another large bowl, whisk together the butter, eggs, sourdough starter and half and half/milk.

3. Whisk in the vanilla extract/vanilla bean paste.

4. Add the dry ingredients and mix together until the batter is just combined; some lumps are okay. If the batter is too thick, add half and half/milk a tablespoon at a time.

5. Allow the batter to rest 15 minutes before cooking. It should be thick and bubbly.

6. Heat a non-stick griddle or skillet, then, if desired, melt butter or add oil in the pan before adding batter.

7. Ladle the batter onto the griddle in generous ¼ cup scoops.

8. Cook until bubbles begin to form on top, then flip and cook another 1-2 minutes, until golden on the second side.

9. Serve warm with butter and maple syrup.

1. To make berry or chocolate chip pancakes, ladle the batter onto the griddle and let it set for a minute, then sprinkle a few berries or chips on top. Flip and finish cooking.

2. For an autumn breakfast treat, stir ½ cup pumpkin puree into the batter and use pumpkin pie spice in place of the cinnamon.

The Popular Hotel Johnson— Gone But Not Forgotten

Even though it has been gone for over half a century, Visalia’s Hotel Johnson is still remembered by many. And that’s not surprising! After all, the hotel known as the “Queen of the Valley” played an important part in the town’s history, while hosting many prominent visitors in its 51 year life.

In 1892, a Visalia newspaper polled residents about what they felt the town needed to prosper. One response frequently mentioned was the importance of a nice large hotel, one that was “first class, solidly built, and convenient.” The San Francisco Hotel Gazette picked up on the Visalia survey results and commented, “The Visalia Delta has been interviewing prominent Visalians as to the ‘crying wants’ of that town. One level headed interviewee put first on the list a first class hotel building. This is a sine qua non [Latin for absolutely essential] to municipal progress anywhere.”

difficult to get, so instead most of the building walls were made of concrete, a material that required less steel.

But it took almost 25 years before action would be taken. Local businessman and civic leader, J. Sub Johnson, tore down his old Visalia House lodging building located on the northeast corner of Main and Church streets (where Bank of America is now) to make that dream a reality. He hired Trewitt and Shields, a Hanford contracting firm, to build a new hotel on the site, and construction began in 1916. The original plan was to build it of brick using reinforced steel, but World War I made “I” beams

By the end of 1917, the Hotel Johnson was finished and on November 6th the doors to the opulent structure opened. The 5-story building was imposing with a footprint of 99’ by 116’. Built for a contract price of $110,000, the 125 room hostelry had a restaurant, meeting rooms, steam heat, hot and cold water, elevators, telephones and ice water facilities. It displayed more elegance “than the citizens had ever hoped for.”

For the next several decades it was considered one of the finest hotels in the San Joaquin Valley. It was popular and many famous and important people visited.

In 1919 Stephen T. Mather, Director of the National Park Service, made the hotel the last stop on his Sierra tour. The Hotel Johnson hosted a nice banquet for Mather, his entourage and local Visalia leaders. In 1924 the director returned again to the hotel with other national park dignitaries and enjoyed another banquet.

Also in 1919, Jack Williams, nationally known as the “Human Fly”, tried to highlight the hotel. He announced he was going to climb the outside of the Johnson Hotel blindfolded. It was a benefit event to raise money for the Armenian Relief Fund. He

promised a third of the money raised would go to help the Armenian people. His stunt got the community’s attention, but at the last minute, at the request of the hotel owner, he had to change the building to the Tulare County Courthouse. To the delight of the loud and enthusiastic crowd that watched, the “Fly” successfully made it to the top.

In February 1934, California Governor James “Sunny” Rolph came to the hotel to receive thanks from the locals for his work on the statewide water project. Visalia Mayor George Tschumy welcomed the governor and the 200 or so in attendance for the dinner and program. It was one of his last stops. Just four months later, the 64-year old governor died in office.

But the popular hotel was not always welcoming according to Mary Finch Hoyt, who was part of a prominent Visalia family. In her book East Wing—A Memoir, she recalled when Marian Anderson, a very well-known African American singer, came to Visalia. In 1937, she was invited by the local Civic Music Association to perform at the Visalia Union High School auditorium, but sadly Hoyt wrote, “The Johnson Hotel on Main Street, the only real hotel in town, will not give Miss Anderson a room.” She found quarters with a local family.

Other celebrities were welcomed with open arms. When the Walt Disney Co. came to Tulare County in 1946 for the filming of the movie So Dear to My Heart, Walt Disney himself and his top company production staff stayed at the Hotel Johnson.

Over the years many service clubs and fraternal organizations used the hotel for their weekly meeting luncheons, and locals enjoyed the restaurant for special family meals.

But without proper care and attention, even the most glamorous buildings begin to degrade. By the 1950s, the hotel was still attracting attention, but oftentimes for all the wrong reasons. Maintenance was regularly done, but by the 1960s, the nearly 50 year old structure needed major renovation. In 1963, the hotel closed. The next year it had been updated and again was open for business. But the grand old hotel was about to face another challenge—one from which it would not recover!

On May 3, 1968, it caught fire probably caused by a carelessly discarded cigarette. By the time the fire department arrived, smoke and flames were bellowing out of the windows and the fire department ordered it evacuated. Eventually the fire department had the blaze under control. But the damage was extensive and even though a large section of the hotel remained standing, the damage to the building was beyond repair. The remnants had to be razed and the lot was cleared. Tragically, lives were lost in the fire and so was the landmark building that had meant so much to the community.

For eight years, the large lot stood vacant, a constant reminder that again the community needed a suitable downtown hotel. A solution came on June 14, 1989, when ground was broken at Court and Willow for a large new hotel, and on November 4, 1990, the Radisson Hotel (now the Marriott) opened its doors.

The hotel was burned beyond repair and the remainder of the building was razed in 1968.
