We live in a busy world, and it's often hard to see past the hustle and truly recognize the good all around us. With the negativity in the news, appreciation and gratitude can easily get pushed into the background. But not here—not in the greater Boerne area. The good is just too apparent to ignore.
Look at the Boerne Little League team’s journey to the World Series and the community celebration that followed. Or the heartfelt rally for Paralympic gold medalist Jason Tabansky when he returned home. Consider the crowds that lined the streets for not one but two Homecoming parades and the packed stadiums at each game. These events aren’t just fun—they’re filled with joy and a sense of community. I am so thankful for these moments that happen so often here.
But there’s even more to be grateful for. The Boerne Retailer’s Association Style Show, Rotary Club, Knights of Columbus, 100 Women of the Hill Country, Boerne 100, and countless other service organizations are active in our community, making life better for all of us. We can all be thankful for those who stand up and contribute.
In this month’s issue of Boerne Lifestyle, we are highlighting five organizations that are close to our hearts: the GVTC Foundation, Cibolo Center for Conservation, Hill Country Daily Bread Ministries, Hill Country Pregnancy Care Center, and Magdalena House. You’ll see the leaders of these organizations on our cover and their stories on page 44. While they serve others, each of them shares a deep sense of gratitude for the opportunity to do so.

Unexpected Evening An Elevated,
JOIN THE BOERNE LIFESTYLE TEAM AS WE CELEBRATE FRIENDSGIVING TOGETHER
Thanksgiving is such a cherished time of year. A chance to be with family, to reflect on our blessings, and laugh together over favorite foods. But Millennials decided that before shuffling off to visit family, we want to celebrate with our friends, too. And just like that, Friendsgiving is born.
From humble beginnings, the ritual has taken many forms over the years. It began as a strictly potluck-style affair featuring both typical and non-typical Thanksgiving fare. Today, some friend circles make it a swanky, elaborate soirée. And we definitely fall into the latter group.
Our Friendsgiving is elevated and unexpected, to say the least. So join us for an evening of fine drinks, delicious food, and some of the best friends around.
THE PARTY
To plan this sophisticated evening, we turned to the experts at A Signature Production, Charlene McAngus and Misty Stout. They have an extreme eye for detail when it comes to planning and hosting events, and even the most minor details matter—the placement, the colors, the flow.
After a site visit and a discussion with our host, our publisher, Tara, the team captured her vision for the evening: an elevated event featuring Chinese cuisine with custom drinks and desserts. Then, McAngus and Stout got to work.
The concept? The designers landed on a toile pattern coupled with vibrant colors that would align with the aesthetic but still offer some shock value. Parties by Design provided different styles of tableware so the duo could find the perfect look. The final product featured bright colors and shapes—the bow—and patterns to tie rooms together without being identical.
Working with vendors who truly understand the assignment makes everything better. Stout says, “We often reach out to vendors and say, ‘Ok, I am about to ask you for something insane... don't block my number, please.’" McAngus and Stout told the virtual magicians at Flourish Floral Designs precisely what they wanted, and Flourish nailed it. Stout continues, “We love being able to trust vendors to take our direction and really run with it and give it their flair and execution.”
THE MENU
The food for this unique occasion was not your typical Thanksgiving meal but an Asian-flavored feast that embraces the “comfort food” aspect of the American holiday while highlighting flavors of the Far East.
Private Chef Yaping Zhang brought the best of her family recipes to bear for our evening together. To start, we had an assortment of appetizers, including steamed broccoli with green onion and sesame oil; smashed cucumber in vinegar, sugar, and chili oil; soybean spouts with Thai pepper, fresh garlic, and soy sauce; and—drumroll, please—fried dumplings filled with ground beef, ginger, green onions, and carrots. It was hard to keep from filling up on the first course!
Saving room was worth the effort, though, as the mains did not disappoint. Zhang offered a virtual tasting menu of Chinese delights: haricot verts and pork belly, crispy chicken wings, savory eggplant, okra, fried rice, and—the pièce de résistance— Beijing roast duck. It was impossible to leave hungry.
As the evening continued and sweet teeth set in, we found solace in the gorgeous display by MadMaks Treats. The fluffy macarons, the tower of golden fortune cookies, and cupcakes perfectly adorned with “Thanksgiving” in Mandarin.

THE BAR
Behind the bar, we brought in a master: William Taylor, head bartender at the revamped Zanzenberg Tavern in Center Point. Building on the Far East theme, Taylor regaled us with two drinks: the Gardens Grace Martini and the Sour Blossom.
The “Gardens Grace Martini” was designed to complement the bracing, spicy dishes we enjoyed because it mirrors and enhances fresh, tangy, and slightly spicy flavors. The cocktail features gin, cucumber, and cilantro. Lime juice provides a bright acidity, and a spiced rim adds a subtle warmth that echoes the chili oil’s heat.
The “Sour Blossom” is a sweet and tangy cocktail that blends the rich, fruity flavors of a Japanese plum wine with the depth of bourbon. Fresh lemon juice adds a bright, citrusy acidity, while honey syrup introduces a smooth, natural sweetness. When shaken with ice, the cocktail becomes well-balanced, with a velvety texture that’s enhanced by the optional addition of egg white for a frothy finish.

Thanksgiving is a time to remember what we’re thankful for. But often, that gratitude can be overshadowed by the business and stress of the season. Yajaira Paparaone, MD, of Individual & Family Psychiatry, shares her expert advice on the good that comes from incorporating more mindfulness and gratitude into our lives.

WHAT IS A “MINDFULNESS PRACTICE”?
Over the last decade, the practice of mindfulness meditation has exploded. Mindfulness is our ability to be fully aware of where we are and what we are doing without being overwhelmed. However, we can often become consumed with obsessive thoughts about something that has just happened or worrying about what our future holds.
But the practice of mindfulness involves being fully aware of the present and seeing your reality from a place of non-judgment. I would expand on this to add that mindfulness is also the awareness of simultaneous realities, of how the past colors the present. It is about letting go of the notion of a perfect life and managing your response to an imperfect life.
HOW CAN I INCORPORATE THESE PRACTICES INTO MY ALREADY BUSY LIFE?
Think of presence and intention. Here is an example of leaning into the present: When you brush your teeth, notice where your mind goes. Do you feel the toothbrush in your hand, the gentle vibrations, cool water on your gums? Or are you mentally already at the office, drafting your first email? When that happens, reel yourself back to the present. Do the same thing when you are driving; notice where your mind goes.
Here is an exercise to become aware of intention: Imagine you only have four weeks left to live. Who are you with? What do you do? The goal is to dial in on your intentions. Your concerted efforts will help drown out the unnecessary noise.

THANKSGIVING SEASON. WHY IS GRATEFULNESS IMPORTANT?
Gratefulness brings us happiness, improves our mental and physical health, and helps build stronger relationships. When we acknowledge the goodness in our lives, we recognize that part of that goodness comes outside ourselves and as a result we connect to something larger. It may be other people, nature, or a higher power. We practice gratitude when we notice the good in our lives. This allows us to make sense of our past, be content with the present, and create a vision for tomorrow.

Yajaira Paparone, MD, believes in a relational approach to her psychiatry practice, which entails treating individuals in the full context of their relationships, understanding them as holistic beings intricately connected to their social and familial networks.
A native Texan, Dr. Paparone graduated from the University of Texas Medical Branch at Galveston before honing her psychiatric expertise at SUNY Upstate Medical University in Syracuse, New York. There are many ways to practice gratitude. Write down all of the things you are grateful for in a journal. Say grace before a meal, or just give pause and appreciate the food. Let those around you know how much you appreciate them. Modern life offers endless ways to knock us off balance. A daily return to our values, the gift of life, the gift of peace, the gift of prayer and meditation is the antidote.
THIS TIME OF YEAR CAN BE VERY STRESSFUL. HOW CAN PRACTICING GRATITUDE HELP ME IN THIS SEASON, ESPECIALLY?
Life is busy. The endless demands and technology have increased the speed and shortened our attention spans, and it feels like this effect is on steroids during the last three months of the year. I recommend that we try to slow down and turn devices off when we can. So often we are led by what we should do versus what we want to do. Pay attention to the difference.
When you combine gratitude and mindfulness, you can better recognize all that is good in your life and sit with it. When the stress of the season seems overpowering, it helps to find the positive takeaways in any given situation. Finding the positives will help protect yourself from becoming overwhelmed with the present and what’s to come. Ground yourself in the present, but also allow yourself to feel the discomfort, knowing it will eventually pass. Remind yourself that the capacity to experience painful feelings enrichens our capacity for spontaneity, creativity, and joy. Grounded gratitude is paved in mired grit. When you climb the mountain, it sweetens the view.

I WANT TO GET BETTER AT DEALING
WITH STRESS OR BEING MINDFUL, WHERE CAN I FIND HELP?
Unfortunately for many, gratitude and mindfulness can be blurred by depression, anxiety, or addiction. If you find yourself dreading the day ahead or finding it difficult to be around people, consider seeking out professional help. Most adults and children are first seen by their primary care provider. Medications can be explored, and a referral to a psychiatrist may be initiated. Additionally, there are a wealth of highly skilled therapists in our community. It’s important to find a good fit, so ask questions like “What is your level of training?” “Will I be seen by the main provider or someone else?” “Will the provider communicate with my other relevant health care providers?”
Often, finding someone to talk to—where you feel comfortable and open to being vulnerable—is the first step toward healing in this or any season of life.

Agnes Hubbard
Hill Country Daily Bread Ministries
For 24 years, Agnes Hubbard and her husband, David, have been working to meet the physical, spiritual, and emotional needs of under-resourced families. Hill Country Daily Bread Ministries serves eight counties, providing training, resources, and support for those in crisis in the name of Christ.
Hubbard’s preparation for her work started as a child. Her family spent time in New Zealand and the Cook Islands, where her dad opened the area’s first supermarket. She later earned a degree in production horticulture and ran a large-scale plant operation, but she credits her
time in leadership with Bible Study Fellowship as pivotal to her readiness to lead HCDBM.
Hubbard knows they would not exist without the support of their neighbors. “I know here in the Hill Country, and especially Boerne, we have something special,” she explains. “Every day, I walk in the front door with a sense of gratitude that we get to serve such an incredible community. These things wouldn’t happen without people who generously give their time, talent, and treasure to every part of the ministry. And I thank the Lord for them every day.”

John Freud & Tom Mengler
The Cibolo Center for Conservation
The City of Boerne purchased a parcel west of the Fairgrounds some 36 years ago. The original plans included a City Park with a pool, tennis courts, and other amenities. However, a portion of the plot was deemed “useless.”
Carolyn Evans saw potential, though. With the support of advisors from the city and surrounding area organizations, plans for the Cibolo Nature Center took shape. It provided Boerne and Kendall County with a destination to bring together the area’s diverse residents and with a mission to preserve natural resources and provide environmental and conservation education to the community.
In 2022, Evans asked John Freud to become the board president, believing his 36 years of experience in executive recruiting and identifying CEOs and board members for private and public firms prepared him to find the right person to lead the Cibolo Center for Conservation into its next chapter.
Assembling a search committee and hiring a search firm, they finally recruited Tom Mengler for the role after interviewing many able candidates. Mengler had just retired as President of Saint Mary’s University, a role he served in for twelve years. Freud believed Mengler’s nonprofit
background, leadership and mentorship skills, knowledge of community engagement, and love of courting and nurturing donors were a perfect fit.
Freud maintains a humble gratitude for the community’s support of the Center. “Our recognition is a recognition of Boerne and Kendall County,” he says. “The fact that the Cibolo has grown from a tiny piece of restored land to a conservation and education center for the area—with a budget of more than $4 million and national recognition—is a testament to the support our community gives to us. My sincere thanks go to the local community. Without you, we would not be here.” cibolo.org

Magdalena House
Reverend Denise Barker opened Magdalena House in 2007 to help women break the cycle of poverty and violence by providing comprehensive support and resources to help families thrive. In 2014, Jeanne Tousley joined the Board of Directors to move that vision into the future.
Tousley’s deep gratitude for the community’s support is evident. “From providing bicycles for children when families move onto the property to donating essential household items as they launch back into the community, your kindness transforms lives.” She continues, “Your dedication reminds these families that they are not alone, and we are helping them build brighter futures. Hill Country Pregnancy Care Center
The Hill Country Pregnancy Care Center began in 1987 with a group of interdenominational church members with a desire to ease the stress that can come with unplanned pregnancies. The Center offers various complementary and bilingual services, including pregnancy tests, ultrasounds, screening and treatment, prenatal and parenting education, and childbirth classes.
Executive Director Donna Klingaman understands the vital role of the Boerne community. “I’m especially grateful to this community working together for the good of others and that we are the recipient of such generosity and compassion. Through their support, we can offer quality, life-changing service to our clients to help brighten their future.”

For over 70 years, a part of GVTC Communications’s mission has been serving its community of member-owners and customers. After a change in leadership in 2004, CEO Ritchie T. Sorrells saw how supportive GVTC was in the eleven counties it served. He envisioned connecting employees with opportunities to assist their communities further, a vision that led to the creation of The GVTC Foundation.
As President of The GVTC Foundation, Sonia Aguillon’s leadership draws from a passion for serving others instilled by her parents. “I was fortunate to have been enriched by my parents, Diego and Rosa, who truly believed in giving back to others,” Aguillon explains. “Helping others was something we saw daily, whether it be family, friends, or complete strangers.”

HOW YOU AND YOUR FAMILY CAN BRIGHTEN LIVES THIS GIVING SEASON

For many, the holidays bring an annual rekindling of hope, filling hearts with the desire to give to those in need. But where can you and your family start? We’re glad you asked! Here in Boerne, charitable opportunities abound, so we got some ideas from a local nonprofit expert and the leader of one great place for families to help—The Center.
Located in the Kronkosky Place, The Center serves as a place where the local aging population can come for many activities, services, and opportunities. Its mission is “Enriching the quality of life for older adults,” and it’s a mission that CEO Olivia Burdick takes very seriously.
“Our older adults have given so much to this community and our society in general,” Burdick says. “It’s now our turn to give back to them and show them how important they are. Sometimes, people today are so full steam ahead that we don’t recognize those who came before and built this for all of us to thrive in. That’s our focus here. To make this the best, most special place that really tries to honor and respect our seniors.”
The organization opened in 1983 with a focus on nutrition. The Center provides countless opportunities today thanks to excellent partnership programs and a dependable group of volunteers. Programs focus on educational enrichment, health and wellness, fitness, arts and crafts, and even meeting transportation needs. Plus, social and entertainment engagements help aging older adults build friendships and community.
To be clear, the nutritional component is still a central focus. The Center serves healthy lunches Monday through Friday in the dining room and is also the hub of the Kendall County branch of Meals on Wheels.
“Becoming a Meals on Wheels driver is a great way to volunteer as a family,” Burdick says. Beyond the food, volunteers also provide a wellness check and social interaction for recipients, which is essential for our more isolated neighbors. “Sometimes our drivers are the only people our clients see on a regular basis,” Burdick says. “So to make that personal connection and give a daily check is very valuable.”
The Center sees an influx of volunteer interest during the holidays, and Burdick is eager to accommodate. Thanksgiving and Christmas meals require extra hands in the full-service dining room, and additional help is also needed during November’s “Le Diner En Blanc” Gala, a fundraising event The Center hosts each year.
Organizing collection drives is another great way to get involved. Canned goods, pet food, blankets, socks, toiletries, and more—these resources go a long way toward making the daily lives of our aging community members comfortable.
Monetary donations are always welcome and crucial, but Burdick says it truly is the thought that counts. “The feedback that we get from these gestures is tremendous. [Clients] tell us how special it feels that someone is thinking about them,” she says. “Something as simple as making a card. Or even kids who love to make bracelets or draw pictures; they could just create for a purpose. That could really, truly make an impact on somebody.” Burdick also suggests small gift bags or donations to their lending library and the on-site volunteer-run thrift store, The Closet. The store boasts a large selection of clothing, shoes, accessories, home décor, and more.

“We have a significant aging population,” Burdick emphasizes. “The 60+ population is larger than it’s ever been before. Add in Kendall County’s tremendous growth and economic factors, and we are experiencing a greater demand for our services.” But Burdick says the uptick in clients served—from 1400 to 1900 since 2022—is encouraging because it demonstrates that older adults are taking a proactive approach to aging healthfully. “I love that they want to be engaged, to participate and stay active.”
While The Center’s membership is $25 per year, no one will ever be turned away based on finances. She encourages interested adults and prospective volunteer families to stop by for a tour and get involved today. “So many people come to tour our facilities and say, ‘I had no idea. This is the best-kept secret!’ And I don’t want to be the best-kept secret. I want everybody to know what we offer so people can help a friend or a family member in our community.”

A Path to Healing
This Group Believes Reframing Narratives Will Redeem Lives
Rehabilitation and redemption are at the core of Christian Journey Courses’ approach to helping incarcerated people address both their spiritual and practical needs. Previously known as Christian Job Corps until earlier this year, the nonprofit offers targeted programs to jail inmates and probationers to foster personal growth, resilience, and a renewed sense of purpose.
To hear one graduate tell it, Christian Journey Courses (CJC) began to change her life as soon as she arrived at the Kendall
County Jail. “I remember walking into the tank and seeing one of the girls sitting at the table working on a workbook,” Chelsea shares in a written testimonial. “I inquired as to what she was doing and she told me that she was in the [CJC] program and that I should sign up for the next round of classes. Thank God I did.”
Hers is just one of the stories of lives changed by CJC and its approach based on the understanding that criminal behavior often stems from deeper, underlying issues. Many incarcerated individuals have experienced significant trauma, lacked educational opportunities, or have not been exposed to the life skills necessary to make sound decisions. That’s certainly true of Chelsea’s story. “I was raised in a single-parent household with a father who was addicted and in and out of prison my whole life,” she says. “I was always missing something.”
So, when she came to CJC, she found something different. Instead of focusing solely on punishment, CJC approaches rehabilitation by addressing root causes, helping individuals—both convicted and awaiting trial—understand how their past
experiences contributed to their actions, and providing them with the tools to build a better future.
“I will never forget my first class and meeting Monay and the other women who volunteer their time,” Chelsea recalls. “Walking into that first class was the first step into my life being changed forever.” CJC’s training method is entirely group-focused, emphasizing participation and discussion. Participants engage with the material by reading aloud, responding to video lessons, and actively participating in discussions. This allows for a collaborative learning environment where individuals can learn from each other’s experiences and insights. Chelsea adds, “Week after week, class after class, I was being filled.”
The curriculum is structured to guide participants through self-reflection while building a sense of faith and purpose. Through a combination of Bible study and personal growth exercises, the program provides a holistic path for individuals seeking to transform their lives. Topics include financial literacy, community engagement, dealing with anxiety, and processing trauma. “I was gaining
knowledge that gave me the power and courage to overcome my past,” Chelsea says. “It was because of this program that, within the walls of Kendall County Jail, I was healing.”
Ultimately, Christian Journey Courses believes that when individuals are presented with the opportunity to heal from trauma, acquire essential life skills, and find purpose, they can break free from the patterns that led them into the criminal justice system. Instead of being trapped in a cycle of failure or victimhood, participants learn that they have the power to create change—not
just in their own lives but in the lives of their families and communities as well.
Chelsea completed the CJC program just days before she was released. She went on to earn her high school equivalency diploma and work as a behavioral health associate at an area recovery and rehabilitation program. But on the day she left the jail, she says she already felt a sense of accomplishment, meaning, and hope: “I walked with my head held high, knowing that I was a child of God, that God had a plan for me, and that I have a purpose to fulfill.”

For Chad Hahlen, entering into the homecare industry was personal. “We watched my parents from afar struggle with my dad’s care for the last two years of his life,” he says. “It really took a toll on them and their health.” So Hahlen left behind a multi-decade career in the bank technology space to help ease other families’ burdens as they navigate the challenges he faced.
“You’re going to notice some changes in your parents. Catalog that and have patience.”
Hahlen decided to use his experience to help others, and Hallmark Homecare was the perfect avenue. Together with his wife Tricia, the duo provides referral and placement services to match clients who need care—no matter their age—with professional, trusted providers. With each pairing, patients and families find the right caregiver for them.
As we enter the holiday season, time with family comes naturally. But with each passing year, the changing needs of your older family members can become more apparent. Perhaps an uncle needs extra help getting to dinner, or mom needs care when holding her new grandbaby. Whatever the situation, it can be challenging to acknowledge—or maybe even to notice—these increasing needs. That’s why Hahlen says the holidays can be the perfect time to pay attention to changes. Whether the challenge is finding reliable transportation to family gatherings
or ensuring the cousins are equipped to host, now is your chance to integrate adjustments into family rhythms and help make your loved ones feel as included and welcome as every year before.
WATCH FOR CHANGES
“You’re going to notice some changes in your parents,” says Hahlen, so stay aware. Because change is inevitable as we get older, Hahlen explains that it’s essential to take note of these changes you see in your loved ones as they age. “Catalog that and have patience,” he says. What might these changes look like? You may notice your relative repeating themselves frequently or that they’re slower to recover from bumps and bruises than they used to. These are all things to pay careful attention to and regularly reassess, especially as they approach a busy season that might require more effort than it used to.
If you notice changes in your loved one’s agility, Hahlen says it could be helpful to take a trip to their home and check for mobility hazards that could cause a fall. Also, check for other signs: you may notice a fridge full of old leftovers, an unclean home, or some general hygiene issues. These are changes that could indicate that they need some extra attention during the holidays or even care throughout the year.
REASSESS TRAVEL
“You have to take into account your loved one's ability to travel. That needs to be on the front end,” says Hahlen. As family members get older, their mobility will change in a variety of ways. In addition to physical mobility, we need to assess our loved one’s ability to drive. Hahlen points out that aging parents may start skipping out on holiday festivities because it becomes too much hassle for them to get there. In that case, suggest the idea of hosting the gathering at their home and helping them out in a familiar and easy place for them to get around. Hahlen encourages families to “do as much for them as you possibly can.”
Hahlen relates the story of a client who was able to host Thanksgiving in her home with the help of her caregiver. The caregiver prepared the food and readied everything needed for the meal so that the client could relax with their family. Hahlen said he’s also had caregivers who help clients with their Christmas shopping—in-store and online—to help alleviate stress and encourage patients to stay involved with their families.

MAKE ADJUSTMENTS EARLY
It’s important to assess things early on to make sure everyone gets the care they need when they need it. “Consider care earlier in the process to avoid any falls,” Hahlen says. The challenges that come with aging can seem to come on suddenly, but Hahlen emphasizes that if you pay close, consistent attention to those family members, you can help keep them in their best shape for as long as possible.
Staying alert to changing needs early on can help prevent painful, grueling recoveries from
potentially devastating injuries like falls and broken bones. This can also help you adequately plan your holiday gatherings. Hahlen suggests you ask yourself, “How is my loved one’s current mobility compared to last Thanksgiving? Do they have more difficulty doing daily tasks that could keep them from enjoying themselves?” Asking these questions in advance, even if extra help or care isn’t needed yet, is another way of making sure we care for those we love in the best way we can and keep their lives full and as fulfilling as possible.

Nothing says “welcome” like a home-cooked, family-style meal, and no one prepares those kinds of meals better than the mothers and grandmothers in our lives. Our team called up granny and flipped through our heirloom cookbooks to bring you some of our favorite holiday recipes. So whether you’re sharing a meal with old family or new friends this season, we hope your table is set with warmth, love, and deliciousness!
Lorenza’s Sicilian Lamb
INGREDIENTS
• 3 pounds boneless leg of lamb
• 2 tablespoons fresh rosemary, chopped
• 4-5 garlic cloves
• 1 tablespoon of fresh parsley or thyme (optional)
• 2 teaspoons Dijon mustard (optional)
• 1 tablespoon olive oil
• 2 teaspoon kosher salt (divided)
• 2 teaspoon black pepper, to taste (divided)
• Heavy cooking twine
PREPARATION
1. Preheat oven to 350º. 2. In small food processor, blend all seasoning ingredients (reserve 1/2 of salt and pepper). 3. Rub the inside of lamb with herb blend. 4. Re-roll the roast, and secure at two-inch intervals with heavy cooking string. 5. Sprinkle outside with remaining salt and pepper. 6. Cook in the oven to the desired temperature according to the guidelines below. 7. Let the cooked lamb rest for at least 15 minutes before carving, as cooking will continue while resting.
Roasting Guidelines
• For medium-rare, cook for 20-25 minutes per pound. Internal meat temperature should be 130-135º. • For medium, cook for 25-30 minutes per pound. Internal meat temperature should be 135-140º. Note: Check roast with meat thermometer after the first 20 minutes of cooking as oven's temperatures will vary.
Gran’s Orange Bread
INGREDIENTS
• 3/4 cup granulated sugar
• 1/2 cup pecans, chopped (optional)
• 1 tablespoon orange zest, grated
• 2 11-ounce cans buttermilk biscuits
• 3 ounces cream cheese, cut into 20 cubes
• 1/2 cup butter, melted
• 1 cup powdered sugar, sifted
• 2 tablespoons orange juice
DIRECTIONS
1. Combine sugar, pecans, and orange zest in a small bowl and let sit overnight. 2. Flatten each biscuit and fold over a cube of cream cheese. 3. Dip each stuffed biscuit in melted butter and dredge in sugar/ pecan/zest mixture. 4. Stand each biscuit on edge in a greased bundt pan, spacing evenly. 5. Drizzle with any remaining butter. 6. Bake at 350° for 45 minutes or until golden brown. 7. Immediately invert onto a serving plate. 8. Combine powdered sugar and orange juice to make icing, and spoon over warm bread.
Knode Family Fruit Salad
INGREDIENTS
• 2 apples, diced (not peeled)
• 2 oranges, diced
• 2 bananas, sliced
• 1 small bunch seedless grapes
• 1 can pineapple chunks, drained
• 1 package frozen strawberries, thawed and semi-drained
• 1 pint whipping cream, whipped
• Mini marshmallows (optional)
DIRECTIONS
1. Mix all of the ingredients together.
2. Chill.
3. Serve and enjoy!
Ginny’s Southern Cornbread
INGREDIENTS
• ½ cup butter
• 3 cups celery, diced
• 2 cups sweet onions, diced
• 3 tablespoons Poultry Seasoning or ½ cup of fresh sage, chopped
• 5 Large eggs lightly beaten
• 6-7 cups (48-56 oz.)
• 1 1/2 tablespoon ground pepper
• Cornbread crumbles (2 packages)
• Biscuit crumbles (one package of 8 biscuits made in advance)
Cornbread: Prepare two packages of cornbread according to the instructions. Crumble into small pieces.
Biscuits: Prepare one package of eight biscuits according to the instructions.
Celery and Onions : Sauté celery and onions in butter for five minutes. Add poultry seasoning and sauté for one additional minute. Let cool and refrigerate until ready to use.
DIRECTIONS
1. Lightly grease one deep-dish casserole dish or 9x13 and 8-inch square pans. The recipe feeds 12 to 14 people, but we recommend cooking the entire recipe if you have fewer at your dinner. You will want leftovers! 2. Mix together cornbread crumbles and biscuits in a large bowl. 3. Stir in eggs, then broth and ground pepper. 4. Add the celery/onion mixture and stir well. 5. Test, adding more pepper and broth if desired. The dish should be a little soupy because it’s going to be cooked for almost an hour. 6. Pour the mixture into your greased baking dishes and bake at 400º for 55 minutes until golden brown, and cover in foil if it gets too brown. Also, pats of butter can be added in the last 10 minutes (if desired).

THIS FALL DECOR IS AS SIMPLE AS IT IS TIMELESS AND ELEGANT
We may be in November already, but has the fall even arrived if we haven’t decorated for it? Never fear! I’ve got you covered. I love decorating in ways that are simple but elegant. And if I can make it myself or with the family, even better.
This classic fall garland is a go-to for me. It doesn’t take a lot of time or precision, but it adds just the right amount of warmth and coziness to my home. You can even use it as a starting point and add your own flair to it—whatever makes you feel ready to welcome the crisp autumn air and warm evenings with those you love.
Happy Thanksgiving!
Supplies
• 1 piece of garland, 6-feet or longer
• 3-4 navel oranges, thinly sliced
• 1 bag of small pine cones
• 1 bag of small white pumpkins
• Dehydrator
• Clear wire (jewelry or fishing wire works perfectly), cut into 6” pieces
• Toothpick
• Scissors
• Small glue gun and glue sticks
Thinly slice and dehydrate the oranges.

Slice the oranges very thinly (I like to use a mandolin) so they will dry well. Set your dehydrator to the “fruit” setting and let them dry overnight. Alternatively, you can dehydrate the oranges in your oven. Just set it to 200º and let them cook for 3-5 hours.
Once the oranges are dried, we’re going to string them. Use a toothpick to poke a small hole near the edge of the rind for the clear wire to loop through. Tie each orange onto the garland. Space the oranges however you like along the length of the garland, but leave space between each to alternate with a pine cone and pumpkin.
Hang the garland and enjoy the fall!

STEP 3
Once all the oranges are tied on, use the glue gun to glue the pumpkins evenly spaced between the oranges and follow the same method for the pine cones. Allow the whole thing to dry and the glue to cool. Then, hang over a window or on a mantle to welcome all the fall feels.
