A year and a little bit ago I blindly reached out on social media to a man I'd never met about a job that I had never done before.  Little did I know how much that job would mean to me and how much it would change me.

By day you can find me in my fifth grade classroom...loving my students and thriving through the challenge of teaching. I am so thankful for a career I love, a job that is so much more than a job! Watching a kiddo learn is an incredible gift, and one that I take seriously every day.

By night, you'll find me at my computer writing and editing for this incredible magazine.  I have loved this journey; it has pushed me and challenged me in ways I never expected. I have learned so much, met some incredibly wonderful people, eaten amazing food, seen incredible venues, slept in beautiful hotels, and fallen back in love with the city I've called home my whole life.

I wanted to be sure to take this opportunity to say thank you!  Thank you to our amazing readers for welcoming me into your homes and businesses over the past year. McGregor Skate

The outdoor skating rink on the bustling McGregor Square Plaza - is the perfect winter activity for guests of all ages! McGregor Skate will be open daily from Friday, Nov. 29th - Sunday, Jan. 5th and then on Friday - Sunday until Jan. 26th. Skates are available on-site for rental, or bring your own. Top Hikes to Explore This November

No snow, no color, No-vember.  It can be easy to only see brown in November, but thankfully, there are so many spots in Colorado where you can find a beautiful “mud season” hike.

Hikes in Chautauqua Park in Boulder

I enjoy hiking at Chautauqua Park because it’s conveniently located right in Boulder, offering a variety of trails. My top pick is the hike up to the alcove behind the First and Second Flatirons. The Royal Arch trail is also a local favorite. If you want a less strenuous option, Shanahan Ridge or the Enchanted Mesa Loop are great alternatives. With so many interconnected trails, you can easily grab a map and explore. Just keep in mind that the sun sets quickly behind the mountains, so be sure to plan your return accordingly.

St. Mary’s Glacier

St. Mary’s Glacier is a popular spot to visit yearround because it is easy to access and beautiful no matter the season.  Though the hike is only 1.7 miles round-trip, don’t be fooled by the short distance—you’re in Colorado’s high country, where weather can shift oh so quickly. Make sure you’re prepared. If you’re planning a weekend visit, aim to arrive early—by 7 AM or sooner—and don’t forget to bring cash for the parking fee.

Rocky Mountain National Park:

This time of year is perfect for visiting RMNP since the crowds have dwindled. Although you may encounter muddy trails and snow, the Wild Basin and Bear Lake areas provide peaceful escapes on sunny weekends. It’s a good idea to contact the RMNP ranger stations or check the Trail Conditions page for up-to-date weather information. In the Wild Basin area, I recommend visiting Calypso Cascades and Ouzel Falls. (Note that the trailhead moves during winter, so factor in the extra distance from the Winter Trailhead.)  In the Bear Lake and Moraine Park areas, consider Fern Falls or the more relaxed hikes to Alberta Falls or Emerald Lake. For a tougher trek, try hiking up to The Loch.

Chief Mountain:

Last winter, I hiked Chief Mountain to catch the sunrise and had the summit entirely to myself. The hike is moderate in difficulty but offers stunning rewards at the top. Once you reach the summit, you’ll be treated to breathtaking 360-degree views, including an impressive sight of Mount Blue Sky to the west. For those looking for a peaceful and scenic November hike, Chief Mountain is a must!

Cheesy Kale Orzo With Herbed Bread Crumbs

GO AHEAD, LET THE SIDE DISH STEAL THE SHOW!

Your guests will be thankful to find this delectable side dish sitting next to their turkey!

INGREDIENTS

• 5 Tbsp. unsalted butter, divided

• 1 c. panko bread crumbs

• 4 cloves garlic, finely chopped, divided

• 2 Tbsp. chopped fresh parsley leaves

• 1/2 tsp. finely grated lemon zest, plus lemon wedges for serving

• Kosher salt

• Freshly ground black pepper

• 1 lb. dried orzo (about 2 1/2 c.)

• 2 c. low-sodium chicken or vegetable broth

• 2 c. whole milk

• 4 c. packed chopped curly or Tuscan kale leaves

• 3/4 c. finely shredded Parmesan, plus more for serving

DIRECTIONS

Step 1: In a large Dutch oven or heavy pot over medium heat, melt 3 tablespoons butter. Add panko and cook, stirring frequently, until toasted, about 4 minutes. Add one-quarter of garlic and cook, stirring, until fragrant, about 30 seconds. Scrape bread crumb mixture into a medium bowl. Stir in parsley and lemon zest; season with salt and pepper. Step 2: Wipe out pot and return to medium heat. Cook orzo and remaining garlic and 2 tablespoons butter, stirring occasionally, until orzo is lightly toasted and garlic is fragrant, about 4 minutes. Add broth, milk, and 1 cup water; season with salt and pepper. Increase heat to medium-high and bring to a boil. Reduce to heat to medium-low and simmer, stirring frequently and adding more water by the tablespoon if liquid is thickening too fast, until liquid is mostly absorbed and orzo is tender, 10 to 12 minutes. Step 3: Add kale and Parmesan and stir until kale is wilted and cheese is combined and melted, about 2 minutes; season with salt and pepper. Step 4: Divide orzo mixture among plates. Top with bread crumbs and more Parmesan. Serve with lemon wedges alongside.

So often we think of November as a month of gratitude. Thankfulness is on everyone’s lips and we culminate the month with our grandest celebration of thanks! I thought that in the spirit of gratitude I would recognize and say thank you to the two people who deserve more than I will ever be able to give.

My parents have been my saving grace, my steady presence, my calm in every storm. They show up in all the big ways that parents do, but mine also show up in all the small ways that mean the most. From meeting the sprinkler guy, to helping to shuttle kids all over town, to late night calls about a sick grandkid who needs to stay home from

school; no matter the circumstances, they are there. My parents are doers and helpers and huggers and their very presence makes me breathe steady and my heart calm!

There’s no way to ever put into words all they have done and all I know they will do…

How can we all show gratitude to those people in our lives who are there no matter what, no matter the time, the day, or the help needed, they show up?

There are so many ways to express gratitude that can change both your life and the lives of others. Simple acts like saying "thank you" or "please” as often as possible as well as writing notes or sending texts,

can convey your appreciation quickly and without much fuss. Keeping a gratitude journal allows you to reflect on what you're thankful for each day. Engaging in volunteer work creates a sense of connection to something greater than yourself while also helping others. Practicing gratitude meditation enables you to contemplate the positive aspects of your life, enhancing your feelings of appreciation. Another creative method is to create a gratitude jar, where you write down things you’re thankful for and revisit them later. Embracing active gratitude means looking for things to appreciate every day, rather than just waiting for those big, special moments. You can also express gratitude through thoughtful gifts, like flowers or a meal, or by simply spending quality time with someone, offering help, or returning a favor.

Let’s take this month to get ourselves in the habit of gratitude!

BATTLING BATTEN AND BESTOWING BLESSINGS TO OTHERS

Every day, every parent wakes up with gratitude in their hearts for healthy children.  For those who don't have that luxury, those parents are grateful for families like the Fries family.  Beth and Jon Fries know what it's like to wake up to children who are battling a life threatening disease every day.  They know all too well the overwhelming stress and the heart break of caregiving.

Meet the RARE Sisters: Cecilia, the oldest of the sisters, is a lively and energetic girl who enjoys being active and spending time outdoors. She has a kind and generous nature. Unfortunately, she is affected by Batten Disease, with her vision already significantly deteriorating and continuing to worsen quickly. Additionally, she faces challenges in school and with her speech. Lilly is the second of the five sisters, known for her sweet and calm demeanor. She enjoys the simple joys in life and has a love for dancing. Like her sister, she is affected by Batten Disease, with her vision beginning to decline. She has also been diagnosed with epilepsy as a result of her Absence Seizures. Nora, Ruthie, and Zelie are the younger sisters, full of energy and spirit. Nora is unaffected by Batten Disease, while Ruthie and Zelie are carriers. Their lives will be deeply influenced by their older sisters' diagnoses, and they will walk side by side with their sisters through their journey with Batten Disease.

On January 3rd, 2018, Cecilia and Lilly Fries were diagnosed with CLN3 Batten Disease, a neurodegenerative disorder. They have lost their vision, experience dementia, suffer from seizures, and are facing cognitive decline along with behavioral challenges. In a few years, both are expected to endure

untreatable seizures, loss of mobility, worsening dementia symptoms, and more. Unfortunately, there are no available treatments or cures for Juvenile Batten disease, and the life expectancy ranges from the late teens to early twenties. Palliative care is the only option currently available.

The Rare Sisters Batten Foundation was inspired by the overwhelming support the Fries family received from their community. Deeply moved by the generosity of people both near and far who were affected by the diagnosis, the Fries family decided to establish a foundation to further support medical research and provide meaningful assistance to other Batten families facing the unimaginable challenges that come with the diagnosis. These challenges are often financially burdensome, yet essential for the care of their affected children. "The Rare Sisters Batten Foundation aims to help further the development of medical research for treatments and cures for CLN3 Batten Disease, and provide monetary assistance to families with children diagnosed with Batten Disease. Financial assistance for families can be given for any needs the family encounters due to Batten Disease; no request is too big or too small.  " Beth and Jon Fries have truly been a blessing in the lives of so many other families.  It is amazing and inspiring to watch a family give to others, seek to help others, fill their lives with service to others, all while battling their own grief, their own struggles, and their own heart break.

Why wait for January 1st to begin prioritizing our health and being grateful and thankful for our healthy bodies? 1. Get sunlight every morning! Light exposure plays a key role in regulating your circadian rhythm, your body’s natural internal clock. Regular brisk walking (walk like you're late) can boost cardiovascular fitness, strengthen bones and muscles, and even help prevent or manage conditions like heart disease, stroke, high blood pressure, cancer, and type 2 diabetes. Not only will walking help improve your physical wellbeing, it will also increase energy levels, elevate mood, cognition, memory, and sleep quality, and reduce stress and tension

The faster, farther, and more often you walk, the more benefits you’ll reap. You might start as a casual walker and gradually increase your pace and distance, eventually walking faster and covering more ground in less time— similar to power walking. This helps boost aerobic activity, improve heart health, and build endurance while burning calories.

3. One of the best ways to keep our body's healthy and strong is to get enough sleep.  According to experts, adults should get 7-9 hours of sleep every night. Sleep is critical for overall health and well-being. Getting enough rest can help in several key areas. Sleep will boost brain function, reduce stress and elevate your mood, help you to maintain a healthy weight, strengthen your immune system, and even boost your creativity. How can you help ensure that you will get the recommended sleep you need? My favorite advice on how to get 8 hours of sleep is to be in bed 9 hours before you need to get up.  This gives you time to settle in, quiet your mind, read a good book, and fall asleep in time to get a full 8 hours!  Whatever you do, no cell phones, screens, or blue light as you try to fall asleep!

Thank the ones you love by showing them a little holiday love

Christmas at Gaylord Rockies is always a big deal, but this year, I got the rare chance to peek behind the curtain and see the magic in the making. With ICE! featuring The Polar Express™ set to open soon, the resort gave me an exclusive look at the nearly finished exhibit—and even in its unfinished state, ICE! is already shaping up to be a must-see holiday experience.

Artisans from the ice carving capital of the world, Harbin, China, have been working around the clock, shaping over two million pounds of ice into intricate scenes from The Polar Express™. I had the pleasure of watching them in action;

operating chainsaws and chisels, transforming blocks of ice into detailed sculptures, and employing carving skills passed down through generations. Several of the artisans expressed pride in bringing the unique craftsmanship of their hometown, Harbin, to Colorado. It’s hard not to be impressed when you realize how many hours they’ve spent perfecting every frozen detail. And all without a single meltdown. (Ice pun intended.)

To be upfront, I wasn’t planning on trying the ice slides. But peer pressure is real, and after some external encouragement I caved. These slides aren’t just for kids—they’re fast, fun, and a bit of an adrenaline rush. Flying down the frozen track was more exhilarating than I expected and is sure to be a hit with guests of all ages.

Just when I thought it couldn’t get any cooler (pun fully intended), I got a sneak peek at Cirque: Frost.

This acrobatic show featuring high-flying stunts and winter-themed theatrics is going to be the hidden gem of the holiday season. Think acrobats defying gravity, contortionists doing things that made me feel sore just watching, and performers resembling snowflakes with their graceful movement. Beyond ICE!, Gaylord Rockies is decked out with festive Christmas décor and holiday activities at Mistletoe Village. Meet Santa, join Mrs. Claus for Storytime, try your hand at the Elf Training Academy, or decorate a gingerbread house. And after all the fun, overnight guests can unwind at Arapahoe Springs Waterpark, where the heated pools, hot tubs and lazy river offer a retreat from the winter chill. Fall is synonymous with gathering with friends and family and enjoying time together. Whether it is for Thanksgiving, a football watch party or a simple fall gathering, these easy appetizer dips are the perfect shareable snack to share.

fig & honey brie

The perfect cheesy fall dip that is both savory and sweet. The chopped pecans add a subtle crunch that makes this irresistible.

ingredients:

• 8 ounce brie wheel

• 1/3 cup fig spread or jam

• ¼ cup pecans

• 2 teaspoons honey

• 1 teaspoon fresh rosemary, chopped

• 1 teaspoon fresh parsley

directions: Place brie in a baking dish. Spread the fig spread on top of brie and sprinkle with chopped pecans. Drizzle with honey. Add fresh herbs, and bake at 350 degrees for 20 minutes. Serve with pita chips or crackers.

garlic herb feta dip

This savory dip is quick and easy to assemble and is perfect to serve with fresh veggies or crackers of any kind.

ingredients:

• ½ cup plain Greek yogurt

• 1 whole garlic bulb, roasted

• 1 ¼ cup feta cheese

• 3 teaspoons olive oil

• 1 Tablespoon lemon juice

• ½ teaspoon dill

• 1 teaspoon parsley

• Salt and pepper to taste

directions:

First, cut the head off of the top of the garlic bulb, and drizzle olive oil on top. Wrap in foil, and place it in an oven heated to 425 degrees. Roast for 30 minutes or until soft. Squeeze roasted garlic into a bowl, and set aside. Next, add the yogurt, feta, lemon juice, salt, pepper and water in a blender and lightly blend. Add the roasted garlic and blend until smooth. Transfer to a serving dish and sprinkle with fresh herbs. Serve with crackers or fresh vegetables. Enjoy!

loaded hummus

This crowd-pleaser can be made in advance for easy entertaining.

hummus ingredients:

• 2 cans of garbanzo beans (chickpeas), drained

• Juice from one lemon (or ¼ cup)

• 1/3 cup water

• 1 garlic clove, minced

• ½ teaspoon cumin

• ¼ teaspoon cayenne pepper

• ½ teaspoon salt

• ¼ teaspoon pepper

• 1 tablespoon olive oil

toppings:

• Olives

• Cherry tomatoes

• Chickpeas

• Feta cheese

• Red onion

• Fresh Parsley

directions:

In a blender, add all of the ingredients except the olive oil and the toppings. Blend until smooth. Spread hummus onto a plate or platter and top with chopped toppings. Serve with fresh bell peppers, zucchini, crackers and pita bread.

ingredients:

• 8 ounces softened cream cheese

• 1 can pumpkin puree

• ¾ cup brown sugar

• 1 cup heavy whipping cream

• 1 tablespoon pumpkin pie spice

directions: Place cream cheese in a microwave safe bowl, and soften for 30 seconds. Add brown sugar and blend with a hand mixer until smooth. Add in pumpkin and blend until combined. Mix in heavy whipping cream and mix on high for 2 minutes. Next, stir in pumpkin pie spice. Serve with sliced apples, pretzels, graham crackers or vanilla wafers.

Nothing screams fall quite like the flavor of pumpkin. This lightly sweet dip takes just a few minutes to make and is perfect for any fall get-together.
