Gratitude Makes Life Rich
Or, as those in Germany might say, Dankbarkeit macht das Leben reich, gratitude does make life rich and joyful!
In this season of giving thanks, we often reflect on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition, and slaying goals can be healthy, forgetting to place importance on being present, enjoying the ride, and appreciating those around us who have helped us along our journey can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be.
Thanksgiving in our family is all about being in the moment and savoring every tradition together. We start the day by gathering in front of the TV and watching the Macy’s Thanksgiving Day Parade, with the kids excitedly pointing out their favorite floats. As the parade gives way to the National Dog Show, we settle into easy conversation, enjoying the lighthearted fun and playing games together. I cherish having the kids by my side, helping set the table, and putting the final touches on desserts – their enthusiasm is contagious and reminds me to slow down and appreciate these little moments. As the day winds down, we all cozy up to watch *The Family Stone*, a tradition that’s become the perfect way to wrap up the day and kick off the holiday season.
Our November issue is dedicated to stories of gathering, gratefulness, and giving back to our community. We are deeply thankful for the residents and businesses in our community, including you, who support so many wonderful organizations and help make our city the vibrant community it is. We are incredibly thankful for our advertising partners who help bring this magazine to your doorsteps each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you. This holiday season, as we prepare to gather with our loved ones and in the true spirit of thanksgiving, let’s set time aside to consider what makes life meaningful and reflect on those blessings.
Blessings to you and your family,

BIG BROTHERS BIG SISTERS EMPOWERS YOUTH AS IT DID WITH DESIREE ANSLEY, FOSTERING CONFIDENCE, RESILIENCE, AND LASTING RELATIONSHIPS THROUGH MENTORSHIP.
LIFELONG MENTORSHIP BONDS
Big Brothers Big Sisters (BBBS), founded in 1904, has grown into one of the most impactful youth mentorship programs in the U.S. By pairing children, often from single-parent or low-income households, with adult mentors, the program offers guid-
others, values that have stayed with her into adulthood.
The relationship with her Big Sister had a lasting impact on Desiree's personal development. "Growing up in a single-parent household, I often faced challenges that could have made

ance, support, and friendship. These relationships help young people build confidence, set goals, and realize their full potential.
Desiree Ansley, a former Little Sister in BBBS, is a powerful example of how the program can shape lives. Growing up in a single-parent household in a low-income area, Desiree found a mentor in her Big Sister, Kathleen Williams. Reflecting on her childhood, she explains, "What impacted my life most was having a mentor and friend who believed in me. Coming from a single-parent household, it was amazing to have someone who believed I could achieve any goal I set my heart to."
Kathleen not only believed in Desiree but also exposed her to new experiences, such as mission trips, which inspired her to give back. "She taught me what it was like to have a servant's heart and what a difference you can make in your community, even at a young age," Desiree says. These experiences helped foster her empathy and desire to contribute to
me doubt my potential. But having someone who saw potential in me when I couldn’t change everything," Desiree reflects. This mentorship built her confidence, resilience, and ambition, values that continue to influence her life. Today, she strives to be that same source of encouragement for her children and others.
Now an adult and mother of three, Desiree remains connected to BBBS, giving back by sharing her story at events to inspire others. "Sharing my personal story wasn’t easy, but sometimes we need those uncomfortable conversations to bring change," she explains. For her, that change started with Kathleen’s belief in her, and she feels compelled to pay it forward.
Her childhood experience also shaped how she mentors and supports others. "I learned the importance of simply showing up," Desiree says. "As a child, knowing that someone cared enough to invest their time in me made me feel valued." The power of encouragement, patience,

and empathy has also influenced how she raises her own children and how she interacts with her community.
Desiree believes the BBBS program has evolved in positive ways since her childhood. "The program has expanded to reach more kids and mentors, and there’s a growing understanding of how important mentorship is in all aspects of life— not just academics or career paths, but emotional well-being too," she explains.
Her hope for the program is that it continues to foster deep personal connections and confidence in the next generation, helping young people realize they can overcome challenges regardless of their background.
Desiree’s enduring relationship with Kathleen, whom she still calls her Big Sister, serves as a testament to the lifelong bonds that can form through BBBS. "She has shown me what true unconditional agape love is," says Desiree, "and for that, I’m forever grateful."
Desiree’s journey shows that the impact of mentorship can last a lifetime, not only changing the lives of individuals but strengthening entire communities.

Foundation’s Impact GRATEFUL FOR THE GVTC
ENHANCING LIVES THROUGH DONATIONS, SCHOLARSHIPS, AND LOCAL EVENTS. DEEPLY ROOTED IN TEXAS, PROFOUNDLY IMPACTING FUTURE GENERATIONS.
Stretching far and wide is a local organization that has shaped many lives in 11 counties across our region. It is the GVTC Foundation, established in 2006. During our interview with Sonia, a representative of the foundation, we explored the foundation's history, mission, and how it makes a difference through charitable donations, volunteer work, and community events.
“Our mission is to profoundly enhance the quality of life in the communities we serve through charitable donations and volunteer work. Since its inception, we’ve provided over 3,000 families with Thanksgiving meals, awarded over $200,000 in scholarships, and supported 148 nonprofit partners.”
The GVTC Foundation's roots date back to the late 1940s when a group of farmers in Spring Branch formed the Guadalupe Valley Telephone Cooperative to bring telephone service to rural areas. Today, GVTC is a primary provider of telecommunications services in South Central Texas.
As the cooperative grew, the need to give back became more apparent, leading to the creation of the GVTC Foundation. "Our mission is to profoundly enhance the quality of life in the communities we serve through charitable donations and volunteer work," Sonia explains.
One of the foundation's signature initiatives is the Thanksgiving Give Back Project, which provides traditional Thanksgiving meals to families facing hardships. "Since its inception, we've provided over 3,000 families with meals," Sonia shares. The food is collected through local food pantries, youth groups, and donations and is delivered to families the Saturday before Thanksgiving. For many, this meal is their only opportunity to celebrate the holiday.
Another significant fundraising effort is the GVTC Charitable Golf Classic, which raised $270,000 in 2024. The event is unique because GVTC targets its vendors, many from the northeastern U.S., to sponsor the tournament. "We bring money from out of state and invest it back into local organizations," Sonia says.
The Game Day 5K is another event that engages the community. Now in its second year, this local fundraiser features youth competitions; all proceeds go to local nonprofit organizations. "It's a fun event for families and helps raise funds for important causes," Sonia notes.
Education is a crucial focus for the GVTC Foundation. They offer three significant scholarships:
• The Richie T. Sorrells Leadership and Innovation Scholarship ($25,000)
• The Ola Armstrong Scholarship ($15,000)
• The GVTC Foundation CTE Scholarship ($7,500) CONTINUED >
These scholarships are awarded to students who demonstrate leadership and community involvement or want to pursue technical careers. "Every year, we award over $200,000 in scholarships," Sonia says. Through a partnership with the New Braunfels Community Foundation, the scholarship selection process is fair and transparent.
The GVTC Foundation also provides grants to local nonprofits focused on health and human services, education, and emergency services. "We don't see them as recipients; we see them as partners," Sonia emphasizes. The foundation works closely with 148 nonprofit organizations, providing funding and volunteer support.
The foundation is focusing on expanding its impact through planned giving. "We're encouraging families to include the GVTC Foundation in their estate planning," Sonia shares. With GVTC's 100% matching policy for donations, this approach dramatically increases the foundation's ability to support local communities.
The foundation's success is driven by its dedicated employees, with over 85% contributing through payroll deductions. Last year, GVTC employees volunteered over 31,000 hours, emphasizing their commitment to giving back.
For those interested in supporting the GVTC Foundation, donations can be made by texting "GIVE" to 830-256-8855. Every dollar goes directly toward making a meaningful difference in the community.

Discover the state’s top spots for vibrant autumn colors
ARTICLE BY SAMANTHA BOWERS
Garner State Park offers stunning fall foliage experience. Set along the Frio River, this park is home to towering cypress, oak, and maple trees that transform the area into a kaleidoscope of fall colors. The reflection of the autumn leaves on the clear waters of the Frio River creates a breathtaking scene from late October to early November.
McKinney Falls State Park, near Austin, offers a convenient fall getaway with vibrant bald cypress and sycamore trees. Enjoy deep oranges and golds while exploring historic ruins or hiking scenic trails, all just a short drive from the city.
Located in the Texas Hill Country, Lost Maples State Natural Area is one of the most popular spots to witness fall foliage. Known for its abundance of Uvalde bigtooth maples, this park bursts into stunning shades of red, orange, and yellow during peak fall months. The vibrant colors typically reach their peak from late October through mid-November.
Falling For Neutrals
SEASONAL DECOR TIPS FOR KEEPING IT SIMPLE
I love decorating for the holiday season, but it gets tough if trying to keep a home decor airy, light and neutral. My home is full of neutrals, such as linen, khaki, white and gray, so decorating for the holidays can be tricky with the bright and bold themes on display at the stores. Here are tips regarding how to achieve a festive look without going overboard.
ARTICLE BY MEL BOBAN
LESS IS MORE
First, whenever decorating for the holiday season, I clear what's possible to make room for what's coming. I eliminate decor pieces that are displayed year-round to avoid adding clutter to rooms. Giving decor pieces or floral arrangements their own space to shine can pull the room together and make it feel very designed.
STICK TO THE PALETTE
As best as possible, I try to stick to each of the color palettes in my room. When it’s time to bring out pumpkins or holiday Santas, I stick to white and neutral or add in color pops of gold and silver to keep everything flowing. If I start to add too many primary colors, it ends up looking like a mash-up gone astray.
CELEBRATE MEMORIES
The holidays are often bursting with family traditions and memories, and decor can reflect that, too. I have many items handed down over the years that I like admiring, but if they aren’t quite right for my room, there are options to bring the spirit of them to life. Framed holiday family photos in a black and white filter are an excellent way to tie in your history of celebrating in a subtle way.
LOOK TO NATURE
Some of my favorite items to use for holiday decor come from a simple nature walk. Using actual items you find, or just getting inspiration from the outdoors is a great way to bring sights of the season indoors. For fall, elements such as branches, leaves and neutral gourds match with everything. For winter, I love using sticks with berries
or evergreen branches with pine cones to fill vases. Add a battery-operated strand of lights and you’re looking just like a designer home magazine spread.
GO COZY
Swapping out usual throw pillows and throw blankets for plushy, cuddly materials and seasonal prints are another simple way to add holiday spirit without being so literal. Opting for neutral plaids, cable knits, or sherpa materials add that feeling of fall and winter.
CATER TO ALL THE SENSES
Don’t forget about the smell! Stocking up on candles that smell like the season is the last missing piece for a holiday vibe. The total sensory feeling of the holidays is what really brings a home to life, whether it's pumpkin spice burning for Thanksgiving or a fresh pine and cedar for Christmas.
If items aren’t working together, don’t be afraid to get crafty. Painting pumpkins with spray paint or tying some neutral ribbons around existing vases are an easy and affordable way to make them fit a specific aesthetic.

Thanksgiving Centerpieces Farm-Fresh
CREATE STUNNING THANKSGIVING CENTERPIECES WITH CREEKSOUTH FARMS, FEATURING
SEASONAL FLORALS, GREENERY, AND RUSTIC ACCENTS FOR A BEAUTIFULLY FESTIVE AND NATURAL HOLIDAY TABLE.
Chelsea James, the creative force behind Creeksouth Farms, has crafted stunning Thanksgiving centerpiece arrangements that capture the beauty of the fall season. Drawing inspiration from her farm's seasonal offerings, Chelsea used flowers like zinnias, celosia, rudbeckia, echinacea, mums, eucalyptus, and fall foliage to compose her signature arrangements. Each piece consists of roughly two bouquets, handpicked from her farm’s fresh selection, ensuring a vibrant and unique display for every customer.
Chelsea’s eye for design extends beyond traditional arrangements. She styled some of her fall florals in a favorite vintage vase, giving the arrangements a timeless, rustic charm. Additionally, she embraced a festive approach by creating pumpkin-based centerpieces. Chelsea ingeniously transformed pumpkins into beautiful floral displays using floral foam attached with floral tape, adding a whimsical yet elegant touch to any Thanksgiving table.
With each arrangement meticulously designed, Chelsea captures the essence of fall, making her centerpieces the perfect addition to seasonal celebrations. Her creative passion and farm-fresh blooms offer a delightful, natural accent to Thanksgiving decor, bringing a piece of Creeksouth Farms to every table.
You can find your own perfect blooms weekly at the New Braunfels Farmers Market where Chelsea and her husband Jared can help you pick out the perfect arrangement.

The age-old question, “What wine goes with turkey?” is answered.
ARTICLE BY MARY ABEL
It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewü rztraminer. Something that will help with that dry meat that you’re about to choke down.”
But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun.
“People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different.
“If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.”
For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and
I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey.
“With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.”
Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.”
What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.”
If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”
“If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”
What if I’m serving ham this year?
“Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious.”
What about dessert?
“If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”
of wine?
How much should I spend on a bottle
“That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around $20, they should be able to find you something that’ll work really well. There’s no reason to break the bank.”
