ovember brings thoughts of Thanksgiving Day and all that entails. Thanksgiving Day at our house is about family and sharing the wonderful aromas from the kitchen that make that particular meal so special. We rely on the recipes that my sister and I grew up with, and the meal never disappoints. The day is also about being thankful for so much–our family and friends, being alive and living in this great country of ours. This issue singles out a particular couple, who exemplify all that is good about giving. Suzanne and James Mellor, who are this year's Outstanding Philanthropists honorees at the 2017 National Philanthropy Day on November 16th, began their philanthropic journey when Jim was CEO/Chairman of General Dynamics in Washington, D.C. in the 1980s and has continued through their move to Laguna Beach in 1997. Their philosophy of not only giving financially but also of their time and expertise has benefited so many, particularly in Laguna Beach–so much so that the City of Laguna Beach proclaimed April 11, 2017 "Mellor Day" in recognition of their significant contributions to the arts. The 10th Annual CANSTRUCTION exhibit made an impressive "giving" statement through the month of September as local architectural, engineering, construction and planning and design teams created phenomenal works of art built entirely of canned food at South Coast Plaza, John Wayne Airport and ARTIC. The cans of food (77,333), representing 49,000 meals, were given to OC Food Bank to distribute to the county's hungry. Chef Josef Lageder offers some creative alternatives to the Thanksgiving classics we all know and love. Check out his recipes for some delicious side dishes for that special day– Quinoa with Baby Spinach, Dried Apricots, Pears and Toasted Pine Nuts as well as Kale and Cabbage Salad with Mangoes and Roasted Pecans. Deirdre Michalski, our Parting Thoughts columnist, showcases some giving programs you might consider supporting at Thanksgiving time, including Orange County Rescue Mission's Turkey Trot, volunteering for Someone Cares Soup Kitchen during Thanksgiving week or for Bracken's Kitchen's food trucks delivering healthy meals to those in need. South County Outreach has opportunities for people to donate turkeys and grocery store gift cards to people in need, and OneOC can connect volunteers with nonprofit organizations any time of the year.

Free Wheelchair Mission Celebrates One Million Lives Changed Through the Gift of Mobility
Free Wheelchair Mission's "Miracle of Mobility Gala" with 700 supporters raised $1.5 million to fund nearly 19,000 free wheelchairs, thus putting in motion the march to providing the second million wheelchairs. Founder/President of the faith-based, humanitarian organization, Don Schoendorfer, pledged to provide the second million in half the time.

n the depths of the Grand Canyon lies a place of beauty that most don’t know about. The Havasupai, known as
the “people of the blue-green water,” who reside there and own the land, have been maintaining this secret and almost mythical place in tact for many, many years, but have permitted visitors to come and experience the magic of the falls and river. The lush oasis of blue-green water is sacred to the Havasupai, and they believe that it not only flows through the land, but through each tribal member. A visit to Havasupai is a visit to their land, their home and their place of origin, and one that is unforgettable. Once you’ve obtained your permit, here’s a sample itinerary to help guide your experience.

Depart Phoenix for the Grand Canyon
The drive to the trail head is approximately five hours. Starting at 5,200 feet, the trail begins with a series of switchbacks until hikers reach a dry stream bed where it all begins to level out. By mile eight of the hike, the canyon begins to widen and the lush vegetation will become more present as you enter the village of Supai, which happens to be the most remote village in the U.S. Continue past the village to base camp. “I fell in love with her the minute we met,” Jim says, and Suzanne adds, “I thought he was the nicest, most handsome man I had ever seen.”

When the Mellors moved to Laguna Beach in 1981, they split their time between Laguna and Washington, D.C. until Jim retired in 1997 from General Dynamics and they made Laguna their permanent home. Although Jim remained the Chairman of General Dynamics and continued to serve on multiple corporate boards, it was much to Orange County’s, and particularly Laguna’s, gain that the couple retired here. He feels strongly that the arts are a powerful tool to stimulate critical thinking and curiosity. Both longtime supporters of Laguna Playhouse, Jim continues to serve on its board of trustees following Suzanne’s six-year tenure. She is a Playhouse Women founding member and has been know to paint sets for Playhouse productions. Honored at the 2017 Playhouse Gala, The Mellor Fund was established to provide free tickets to young playgoers in Orange County. They both serve on the Laguna College of Arts and Design board of trustees. Jim, the immediate past chairman, received an Honorary Doctorate in Fine Arts from LCAD last spring. Jim served on Segerstrom Center for the Arts’ board as well as UCI’s board of trustees. Suzanne served on UCI’s Dean’s Advisory Council for the School of Art and is an emeritus member of Segerstrom Center’s Angels of the Arts. Currently, Suzanne serves on the

Laguna Beach Arts Commission, is a trustee of the Laguna Art Museum and is a lifetime member of the Orange County Museum of Art. Suzanne was one of 14 artists to paint a violin, which was auctioned to benefit the Pacific Symphony’s Youth Program. Outside the arts, the Mellors support the Pacific Marine Mammal Center in Laguna Beach. For their collaborative efforts, the Mellors were honored in 2016 by the Laguna Beach Art Alliance as “Individual Arts Patrons of the Year,” and the City of Laguna Beach proclaimed “Mellor Day” on April 11, 2017 in recognition of their significant contributions to the arts. The accolades and honors go on and on, including, for Jim, the “Order of the Crown” by His Majesty King Baudouin of Belgium in 1987, “Man of the Year” by the Boy Scouts of America in 1997, “Alumnus of the Year” from the University of Michigan and “Industrialist of the Year Award” by the Association of the US

Suzanne’s love of decorative arts led her to supervise the design, construction and remodel of eight different properties, three of which were featured in design books, and she is a member of the Decorative Arts Society of Newport Beach. In closing, this dynamic couple says of giving: “Growing up, I was the able to attend camp, thanks to the Detroit Free Press, and I remember receiving Christmas boxes from the Detroit Police Department and reading glasses from a charity,” Suzanne recalls. “That taught me to be thankful for all the support I received and how important it is to give back.”
“By giving, we also receive with a big multiplier,” Jim says. “We feel privileged to serve.” 24

CHEFS NOBU MATSUHISA AND FRANK GORRICETA ENSURE THAT NOBU’S LATEST CONCEPT MAKES A BIG SPLASH IN NEWPORT BEACH.
I
n my foolish youth, it was an unsaid rule that I never ordered fish. (This, of course, excluded lox and salmon sashimi–I never said
it was a rule that made sense). Most restaurants where I dined back then served fish simply fried or just plain overcooked to the point of no recognition. Dry, flaky and too fishy–that was how I described piscatorial fare. Then, I tasted Nobu’s miso black cod. One bite converted me. It was that easy. Chef Nobu Matsuhisa prepared the fish with a sweet, salty, perfectly umami, miso glaze. That tender piece of cod was my introduction to the chef’s cooking and it forever changed my mind about fish. It also became one of the Nobu’s signature dishes. Fast-forward to 2017, and now, you see some sort of misoglazed fish on almost every menu in southern California. Yet, it was Nobu’s black cod that created this long-lasting trend. It truly was a novel concept in 1987, when Matsuhisa first opened in Beverly

Matsuhisa, who hailed from Saitama, Japan, spent several years cooking in South America. This is where the young chef discovered his affinity for Peruvian flavors. Peru is a country known for its ethnic diversity. It is a melting pot of Asian immigrants that married into the culture and shared rich Japanese and Chinese influences. Robert De Niro and restaurateur Drew Nieporent also took notice when Matsuhisa opened. They invested in the talented chef and soon swanky Nobu concepts sprouted all over the world. Now Nobu has more than 30 locations, in cities such as New York, Malibu, London, Milan, Dubai, Monte Carlo, and the newest locale in Newport Beach. Tucked away in the quaint new Lido Marina Village development, overlooking the pristine yachts parked away neatly in their dock slips, sits Nobu Newport Beach. Upon entering the first floor bar area, guests might opt to stroll out to the open-air back patio. There, sits the Nobu Grand Cordon Bar. “It’s the first in the world,” says executive chef Frank Gorriceta. Each month, a rotating menu of the finest award-winning cocktails from around the world will be served here. While the bar area is relaxingly casual, most patrons opt to ascend up a spiraling staircase to the second floor dining room. There, a large sushi bar creates a stage for Gorriceta’s talented sushi chefs to show off their skills. y now you probably have had the chance to experience and admire the outstanding Canstruction exhibits at ARTIC, South
Coast Plaza and John Wayne Airport. For the 10th consecutive year, Canstruction is dedicated to raising awareness about hunger by making a difference in the lives of one-in-five children who struggle with it every day in our beloved Orange County community. Most of the hungry are part of the working poor who are trying their best to provide food for their families, or seniors on fixed incomes who simply cannot make ends

meet. With sky-high rents, rising medical costs and under-employment, too many are forced to make hard choices between food and paying the rent or buying the medicine they need. This year’s 13 local architectural, construction, engineering, planning and design teams had 12 hours to create these phenomenal structures built entirely out of canned food. From a Smurf mushroom home to a fire-breathing dragon, all teams have worked hard donating their time and creativity to build these impressive visual displays. Once the competition is over, all the canned food is donated to the OC Food Bank. The total amount of cans utilized this year were 77,333, representing the outstanding equivalent of 49,000 meals. Canstruction was originally inspired by a group of New York architects and engineers in 1992. These architects introduced citywide Canstruction competitions with the purpose of uniting the design, engineering and construction industry. The innovative and fun architecture and engineering exhibitions provided art and inspiration to the local community, as well as canned food to local hunger relief organizations. Since its inception, Canstruction has contributed more than 50 million pounds of food for local food banks. Today, the event is held in more than 150 cities worldwide. Throughout the years, the organization has seen an uptick in competitiveness. Participants, such as John Deere in 2012, raised the bar considerably by putting to work a team of 450 John Deere volunteers, including employees, retirees, employee families and friends. Together, they built a 60-ft. wide, 80 ft. long, 16 ft. tall and 170-ton sculpture representing John Deere’s new S-Series Combine corn harvester. 32

fter spending more than forty years in kitchens prepping, cooking and serving Thanksgiving dinner in restaurants, hotels, and at home, I came to the following conclusion: In general, people still enjoy Thanksgiving classics such as
velvety mashed potatoes, stuffing, roasted yams with marshmallows, green bean casserole, and perfectly roasted turkey and gravy. However, besides the classics, it is also exciting to add some creativity, new combinations and side dishes, and food that does not need to be super hot or cold.
SOME NEW COMBINATION IDEAS: + Quinoa Salad with spinach and dried apricots, pears and toasted pine nuts + Kale and Cabbage Salad with mangoes and roasted pecans + Roasted Brussels Sprouts with crispy bacon, apples, blue cheese, pine nuts and balsamic syrup drizzle + Oven Roasted Butternut Squash with cauliflower, broccoli, pomegranate seeds and kale + Cranberry Relish with hint of star anise + Jalapeno Cranberry Cornbread To have a successful Thanksgiving dinner, I generally set all cold food, cranberry relish, rolls and butter on the table first. Next, I place the casserole dishes, as they usually hold heat very well. Last, comes the grand entrance–the roasted turkey, preferably carved at the table by a volunteer or the most talented person in the room…make it fun! n 1977, 29-year-old Antonio Catalan, founder and president of AC Hotels, opened his first hotel of the NH Hotels Group in Spain.
Twenty years later, Antonio sold his stake in the company to an Italian firm for around 70 Million Euros. It was at that time he began to develop the new brand AC Hotels.
