Thankful for You

In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us that have helped us along in our journey, can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be.

Our November issue is dedicated to stories of being grateful for all things beautiful and especially our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. We are especially thankful for our advertising partners who help bring this magazine to your doorsteps each month. Holiday Healthy

Lauren Gillan’s Roasted Mediterranean Cauliflower adds some zest to your seasonal fare.

ingredients:

• 1 medium head cauliflower, stem removed, cut into bite sized florets (about 2lbs, or 4 cups)

• 1/4 tsp sea salt

• 3 tbsp creamy tahini, more to taste

• 1/8 tsp Harissa spice blend

• 1/4 cup shelled pistachios, crushed

• 8 large dates, pitted, diced

• 1 tbsp olive oil

• 3 tbsp fresh mint

• 2 tbsp fresh dill

directions:

Step 1. Preheat the oven to 425 degrees. Line a baking sheet with avocado, or olive oil cooking spray. Lay out the cauliflower florets and sprinkle with sea salt  and then drizzle with olive oil.  Place in the oven and bake for 25-35 minutes.

Step 2. In a large mixing bowl, combine tahini, harissa spices and dates and set to the side.

Step 3. Carefully remove florets from the oven and scoop into your large mixing bowl with tahini and spices. Toss well until all florets are well coated.

Step 4. Plate your dressed florets and sprinkle with crushed pistachios, fresh herbs and serve at room temperature.
