The Power in Being Thankful

Dear Readers,

As the season of giving thanks draws near, we often find ourselves reflecting on the many blessings in our lives. Thanksgiving isn’t just a day to gather around the table; it’s a reminder to embrace the true spirit of gratitude. This holiday focuses on the joy of spending time with loved ones and encourages us to give back in meaningful ways.

While pursuing ambitions, reaching goals, and pushing ourselves forward are all valuable pursuits, it’s equally important to pause, be present, and appreciate those who have been by our side along the way. In a world that often equates success with possessions or titles, true contentment can only be found within—from living in alignment with our purpose and cherishing the relationships that bring us joy.

This season, I’m especially grateful for the incredible people in my life who lift me up daily. My wonderful wife, my kids, grandkids, family members, and friends are my greatest blessings. Their unwavering support and love are what I am most thankful for, and they remind me to slow down and appreciate the journey.

As we all gather with family and friends this Thanksgiving, may we take time to express our gratitude, not just in words but through our actions and presence. Let’s embrace the season by recognizing the people who’ve helped shape our paths and by giving back in ways that truly matter.

I’m excited to introduce myself as your new Editor! With a strong dedication to the Anthem Community and its surroundings, I spent the past decade managing a local retail bank, where I gained invaluable skills. However, despite the rewards of that career, I felt a creative spark was missing. Two years ago, I took a leap of faith and pursued my passion for art.

Since then, I’ve launched a photography business and am in the process of opening my own studio. I specialize in lifestyle photography and enhancing visual brand imagery for small business owners. I’ve thoroughly enjoyed contributing to this publication as a photographer over the past year and am thrilled to continue providing engaging imagery in this new editorial role. I am deeply grateful for your support and look forward to this new chapter.

Living an active lifestyle is essential to me. I love activities like Pickleball and dance, which fill me with gratitude for being part of this community. My goal is to help you reconnect with the reasons you chose to live here. Let’s come together to celebrate the Sonoran Foothills, honoring its achievements and embracing our neighbors!

Deena "Dee" Roming is more than just an Anthem resident; she’s a beacon of resilience and vitality. For the past five years, Dee has been a dynamic presence in the community, channeling her boundless energy into a variety of fitness classes that inspire and uplift those around her. But Dee’s story isn’t just one of fitness—it’s a testament to the power of perseverance and gratitude in the face of a life-altering diagnosis.

Growing up in the San Francisco Bay Area, she immersed herself in a world of sports, musicals, and pageants. Her career highlights include cheerleading for the San Francisco 49ers and the Golden State Warriors, professional dancing with Disney and Carnival Cruise Lines, and running her own dance studio in California for fifteen years. For Dee, movement wasn’t just a part of her life—it was her livelihood. "Movement was key in my life and it’s always been what fills my tank," she says, reflecting on her active lifestyle. However, the vibrant rhythm of Dee’s life hit a dissonant note in 2018. At age 40, she began to experience intense joint pain, headaches, and a host of other symptoms including acid reflux, heart palpitations, rashes, and muscle pain so profound it left her struggling to find words to describe to her doctors. Her once reliable body, which had carried her through years of activity and joy, suddenly seemed to be betraying her.

After numerous visits to doctors and an exhaustive search for answers, Dee was diagnosed with Systemic Lupus Erythematosus (SLE), an autoimmune disease where the body’s immune system attacks its own healthy cells. “When you hear a diagnosis like that, it’s scary, especially when you know nothing about it,” Dee recalls.

Despite the constant pain, she refused to let Lupus dictate her life. Instead of surrendering

to her new reality, she resolved to fight back with the same vigor that had characterized her pre-diagnosis life. She dove into research, determined to regain control of her health. Her approach was holistic: clean eating, adequate sleep, and maintaining physical activity. Dee embraced a lifestyle that included a diet of non-inflammatory foods, improved gut health with supplements and fermented foods, and a relentless commitment to movement.

The journey was anything but easy. Lupus still grips her with flare-ups from time to time, but Dee’s perseverance has paid off. After years of dedication, her most recent bloodwork showed no active lupus in her system. “I will always have Lupus, but Lupus doesn’t have me,” she asserts with a resilient smile.

Today, Dee channels her experiences into helping others. She teaches a variety of fitness classes in the Anthem Community, including Country Line Dancing, Zumba, Muscle Mix, and Water Fitness. Additionally, she teaches ballet, tap, cheer and tumbling to children ages 3-12.

Dee’s message is clear: cherish your body, be thankful for its strengths, and be kind to it. “Our bodies are made for motion,” she says. “I am happier when I move. It releases endorphins that lift my spirits and help me face each day with a positive outlook.”

Fall is synonymous with gathering with friends and family and enjoying time together. Whether it is for Thanksgiving, a football watch party or a simple fall gathering, these easy appetizer dips are the perfect shareable snack to share.

fig & honey brie

The perfect cheesy fall dip that is both savory and sweet. The chopped pecans add a subtle crunch that makes this irresistible.

ingredients:

• 8 ounce brie wheel

• 1/3 cup fig spread or jam

• ¼ cup pecans

• 2 teaspoons honey

• 1 teaspoon fresh rosemary, chopped

• 1 teaspoon fresh parsley

directions: Place brie in a baking dish. Spread the fig spread on top of brie and sprinkle with chopped pecans. Drizzle with honey. Add fresh herbs, and bake at 350 degrees for 20 minutes. Serve with pita chips or crackers.

garlic herb feta dip

This savory dip is quick and easy to assemble and is perfect to serve with fresh veggies or crackers of any kind.

ingredients:

• ½ cup plain Greek yogurt

• 1 whole garlic bulb, roasted

• 1 ¼ cup feta cheese

• 3 teaspoons olive oil

• 1 Tablespoon lemon juice

• ½ teaspoon dill

• 1 teaspoon parsley

• Salt and pepper to taste

directions:

First, cut the head off of the top of the garlic bulb, and drizzle olive oil on top. Wrap in foil, and place it in an oven heated to 425 degrees. Roast for 30 minutes or until soft. Squeeze roasted garlic into a bowl, and set aside. Next, add the yogurt, feta, lemon juice, salt, pepper and water in a blender and lightly blend. Add the roasted garlic and blend until smooth. Transfer to a serving dish and sprinkle with fresh herbs. Serve with crackers or fresh vegetables. Enjoy!

loaded hummus

This crowd-pleaser can be made in advance for easy entertaining.

hummus ingredients:

• 2 cans of garbanzo beans (chickpeas), drained

• Juice from one lemon (or ¼ cup)

• 1/3 cup water

• 1 garlic clove, minced

• ½ teaspoon cumin

• ¼ teaspoon cayenne pepper

• ½ teaspoon salt

• ¼ teaspoon pepper

• 1 tablespoon olive oil

toppings:

• Olives

• Cherry tomatoes

• Chickpeas

• Feta cheese

• Red onion

• Fresh Parsley

directions:

In a blender, add all of the ingredients except the olive oil and the toppings. Blend until smooth. Spread hummus onto a plate or platter and top with chopped toppings. Serve with fresh bell peppers, zucchini, crackers and pita bread.

ingredients:

• 8 ounces softened cream cheese

• 1 can pumpkin puree

• ¾ cup brown sugar

• 1 cup heavy whipping cream

• 1 tablespoon pumpkin pie spice

directions: Place cream cheese in a microwave safe bowl, and soften for 30 seconds. Add brown sugar and blend with a hand mixer until smooth. Add in pumpkin and blend until combined. Mix in heavy whipping cream and mix on high for 2 minutes. Next, stir in pumpkin pie spice. Serve with sliced apples, pretzels, graham crackers or vanilla wafers.

Nothing screams fall quite like the flavor of pumpkin. This lightly sweet dip takes just a few minutes to make and is perfect for any fall get-together.

BUILD A CAMPFIRE READY S'MORES DESSERT BOARD WITH THIS HOW-TO GUIDE

It’s campfire season! You know what that means? S’MORES! These sweet treats are staples during the fall and winter! I have many childhood memories of sitting by the campfire with my family telling stories, gazing at the stars, and roasting marshmallows.

This year, take your s’mores to a whole new level with this S’mores Dessert Board! They are so easy and fun to make! Similar to a Charcuterie Board, a S’mores Dessert Board is beautifully decorated and full of everything you need to make the perfect s’mores! Some of my favorite things to include in a s’mores are either peanut butter or a mint chocolate candy!

WHAT YOU WILL NEED:

Board: A beautiful wood board or metal tray will look great!

Marshmallows: Choose between regular, jumbo, or flavored marshmallows.

Chocolate: There are so many options for chocolate when it comes to s’mores! There’s milk chocolate, peanut butter chocolates, white chocolate, caramel chocolates, and much more!

Graham Crackers: Use graham crackers or a variety of cookies for your s’mores.

Fresh Fruit: Include fresh fruits as toppings for your s’mores.

Skewers: Don’t forget to bring skewers to roast your marshmallows on!
