Continental Cooking Patatas Bravas with Shallots, New Potatoes and Chorizo

A delicious combination of flavours and textures, smoky paprika, tender roasted shallots and new potatoes make this an easy, inexpensive crowd pleaser. Serves 4 Preparation time: 15 mins Cooking time: 30 mins

Ingredients 20 shallots, peeled 750g new potatoes, washed and halved 100g chorizo, cut into chunky pieces 1 tbsp olive oil 1 clove garlic, crushed 1-2 tsps smoked paprika 1 tbsp parsley, finely chopped. 1 x 350g tub ready-made tomato and chilli sauce Greek yoghurt, to serve

Method Pre heat oven 200c / 180c fan / Gas 6. Place the shallots, new potatoes and chorizo onto a roasting tray or in an oven-proof dish, sprinkle over the olive oil, garlic and smoked paprika, toss until lightly coated. Cook for approx 30 minutes turning at regular intervals, the shallots and potatoes should be cooked and lightly golden. Sprinkle with the parsley. Heat the tomato and chilli sauce. Serve, the yoghurt and sauce in bowls alongside the roasted shallots, potatoes and chorizo so you can dip in to them.

Tenderstem, potato, ham and cheddar frittata

Method Rinse the potato slices under running water to remove some of the starch. Bring a large pan of lightly salted water up to the boil. Carefully drop on the potato slices, A quick, simple and very child-friendly dish bring back up to the boil and cook for 3-4 minutes until just tender but not falling Serves 4 adults, leftovers are great apart. Drain well. Blanch the Tenderstem cold in packed lunches in boiling water for 3 minutes until just Preparation time: 10 mins tender but with plenty of bite. Drain well. Cooking time: 15 mins Heat the oil in a medium sized, preferably non-stick, frying pan and add the garlic, Ingredients if using. Fry for one minute then tip in 500g potatoes, peeled & cut into the potatoes, stirring to coat well in the 5mm slices oil. Scatter over the Tenderstem, mixing 240g Tenderstem, cut into 3-4cm lightly among the potatoes. Tuck in the pieces pieces of ham. Beat the eggs in a bowl and 3 tbsp olive oil season well with salt and pepper. Carefully 1 clove garlic, crushed (optional) pour into the pan. Allow to set over a 4 slices ham, cut into bite sized medium-low heat for around 8-10 minutes pieces - the frittata should be set about two thirds 8 eggs of the way through. Preheat an overhead 75g mature cheddar cheese, grated grill to hot. Crisped Salmon with Watercress and Soba Noodles Serves 4 Preparation time: 10 mins Cooking time: 5 mins Ingredients 4x 175g boneless, skinless salmon fillets 4 tbsp teriyaki marinade juice of 2 oranges 2 tbsp soy sauce 2 tbsp groundnut oil ground black pepper 250g soba noodles (40% buckwheat) 85g bag watercress Method Marinate the salmon fillets in the teriyaki marinade for 10 minutes, turning them over halfway through. Meanwhile, make up a dressing by mixing the orange juice with the soy sauce and groundnut oil and season with plenty of black pepper. Cook the soba noodles following pack instructions and drain. Mix with the dressing. Heat a frying pan over a moderate heat. Cook the salmon for 5 minutes turning over halfway through. Stir the watercress into the soba noodles, divide between 4 plates and top with salmon.

Strawberry & Blackberry Clafoutis Serves 6 Preparation time: 15 mins Cooking time: 35 mins Ingredients A little butter for greasing 150g Sweet Eve strawberries, halved 150g blackberries 1 tbsp brandy 60g plain flour 1\2 level tsp baking powder 100g caster sugar pinch salt 3 large free range eggs 1\2 tsp vanilla extract 250ml single cream 9 icing sugar for dusting www.sweetevestrawberry.co.uk

Method Preheat the oven to 180c and grease a baking dish. In a bowl mix the strawberries and blackberries with the brandy and allow to sit. Sift the flour into a bowl and stir in the baking powder, sugar and salt. In a separate, dish whisk the eggs, vanilla and cream together then slowly add the mix to the flour, stirring until you have a smooth batter. Place the brandied fruit into the greased dish arranging it so that the rounded sides of the strawberries face upwards and pour the batter over the top. Bake for 35 minutes until puffed up and golden brown. Remove from the oven, dust with the icing sugar and serve.

n the latest in a string of awards, Post Office Travel’s Holiday Feelings Barometer survey found the resort’s golden sands were thought of as the best beach by British tourists, putting Bondi and Malibu in the shade! Meet Blackpool’s Superstar School Pupil Superstar Emily goes 12 years without a single day off school

E

mily Platt, from Bispham in Blackpool, has never missed a day of school in her life, arriving at the school gates every morning without fail.

The youngster, who completed her GCSEs this summer, will leave Blackpool’s Montgomery High School with an unblemished record, racking up a total of 2,280 consecutive school days. It’s a phenomenal achievement for pupil, who had spent her primary years at Westcliff Academy, also in the town. Emily, who walks in to school every morning, is believed to be one of the few pupils across the entire country who can make a claim to this perfect record. The student has a keen passion for graphics and music and is hoping that her GCSE results will help her bag a place at a local sixth form to study them for A Levels. And the stats are on her side. Figures from the Department for Education say that pupils who don’t miss school are almost 5 times more likely to exceed expectations at the end of primary school, and are 4.6 times more likely to get more than five A* to Cs in their GCSEs. For the time being, however, Emily’s love of music means that she’s won an extra special prize for her extraordinary attendance. Along with VIP tickets to the Sandcastle Waterpark and a trip up the town’s new High Ropes course, the star pupil has won a pair of tickets to see her favourite band, The Vamps, play as part of the Blackpool Illuminations Switch-on on 4 September.

And the accolade is a great endorsement for Emily’s mum Jane, who has helped her make it through the school gates every single day. “I’m really so proud of her,” Jane says. “She is very special to us. We think we’ve set a good example by continuing to go in to work every day. It stands her in good stead for the rest of her life and teachers her that when you have a commitment to a job in the future you can’t just have a day off. “Parents evenings are lovely and really emotional as everybody tells us what a lovely girl she is – that she’s well behaved and is a credit to us.” Cllr John Jones, Blackpool Council’s cabinet member for school improvement, was keen to praise Emily as an example of one of the town’s top students: “Emily is a perfect pupil and is a model example to every child and parent in Blackpool, let alone the country. As for Emily, despite over 2,000 continuous days at school she still can’t decide on a favourite teacher. “I like them all – they’ve all been really nice. I can’t pick my favourite one.”

Mortgage advice By Martin Lewis

T

his is a crucial warning for anyone with a mortgage. Mortgage rates are at historic lows, but the window to take advantage looks to be slamming shut. The Bank of England Governor has said he believes UK interest rates will rise from their six-year slumber at 0.5% before the end of this year. If that happens, today’s rates will look cheap as chips. So everyone with an outstanding home loan should be checking now to see if they can do better – and possibly lock in at a dirt-cheap rate ahead of possible rises. The potential savings here are huge here’s a tweet I got from Christopher on the back of warning about this. “Sorted - my monthly repayments fell from £785 to £533.” So let me run you through the 8 things you need to know.

1. Check your current deal.

A mortgage is the biggest expenditure most people have, so I’m always slightly surprised that when asked, not everyone knows their rate and details. Check now that you know… a. The current rate: And monthly repayment and amount outstanding. b. Type: Is it a fix, tracker, discount or SVR (standard variable rate, ie, bog standard bank rate)? c. Deal deadline: If it’s a short-term deal, such as a two-year fix, when does it end? d. Term: How long is it, for example, 25 years, and when it must be fully repaid by. e. Penalties: Are there any penalties if you repay or leave early? f. Your loan-to-value (LTV): The proportion of your home’s current value you are borrowing. As an example, £80,000 on a 18

£100,000 property means an 80% LTV. The lower the LTV, the better deal you can get, so if your home’s increased in value you may gain, even without other changes (both Nationwide.co.uk and Halifax.co.uk have tools showing the rough change in prices in your area). 2. Benchmark your cheapest deal at speed.

Recently we’ve seen two-year fixed deals (for those with low LTVs) plummet to almost one per cent - that’s unthinkably cheap and longer fixes and variable deals are at or near historic lows too. Yet a host of factors affect what your cheapest deal is, the easy route’s using a comparison site. Just plug in your home’s value, the amount you want to borrow and other details and it should list what’s likely to be available to you. Some sites only list deals available to brokers, missing out some lenders, including HSBC, Tesco Bank and First Direct. So it’s worth checking a comparison site that includes direct-only deals. These include my own mse. me/mortgagebestbuys, and totallymoney. com’s mortgage tool.

3. Fees can be £1,000s - factor them in. The smaller your mortgage, the bigger the impact fees have, especially for mortgages under £100,000. This can skew which is cheapest for you. So you should always incorporate the fees – do this by spreading them over the fixed or

Business & Finance tracker period (as after you may shift again to another deal). Eg, £1,000 of fees over two years is £1,000 / 24 = £42 a month. To help, the comparison at www.mse.me/ mortgagebestbuys does this for you, so you can see the real cost of different mortgages side by side.

4. How much can you save?

Now you know your rate and what’s out there, work out the potential savings. I’ve eight tools to home in on the right answer for you at mse. me/mortgagecalc, including help comparing two mortgages and estimating if you should ditch your fix.

5. Can you afford a cheaper mortgage?

15 months ago mortgage affordability checks were introduced to stop people borrowing beyond their means – I believe that’s definitely the right move for those getting new borrowing or extending existing debts. Yet, perversely, most lenders (and from March all lenders) are forced to apply these rules to those trying to switch deal too, leading to some being told “you can’t afford to get a cheaper rate”. This is something I’m lobbying to try and get changed. Yet you need to be aware. Lenders will check you can afford your mortgage if rates hit 6-7%. They also want evidence of income, big bills and expenses, even eating out, so be frugal in the months before applying to make your situation look as good as it can.

6. Should I get a fix or tracker/discount?

With a fixed mortgage, the amount you repay is, er, fixed, so it’s like buying an insurance policy against possible rate rises. Variable deals move with UK interest rates – sometimes at the provider’s whim. Currently you only pay a touch more to fix. Predicting future interest rate moves is difficult –19 though pundits think the general direction’s up, the question’s just how quickly. So instead focus on your finances. The more

crucial the security of knowing exactly what you’ll pay, the more you should edge towards fixing - and fixing longer. If a rock-bottom deal’s your driver, edge to short-term trackers if cheaper.

7. Mortgage brokers can help boost acceptance.

You can, and often should, use a broker to help you find the right deal. They have info unavailable to consumers, eg, lenders’ credit and affordability criteria. A good broker can ease acceptance by matching you to the right deal - and the mortgage interview’s quicker too. But ask the broker how much using them will cost and if they check all deals available to them, not just a panel of lenders. Some phone only brokers like lcplc.co.uk are fee-free, just getting commission from lenders - others charge fees like Which.co.uk (£499), but can cover a wider range of products. If you want face-to-face help, then ask friends for local recommendations or use unbiased.co.uk or vouchedfor.co.uk.

8. Is your credit score good enough?

These days it isn’t just about getting the best mortgage, but the best that’ll accept you. Credit scoring plays a huge part of that, and managing your credit worthiness months in advance is part of the task. I’ve 36 tips in my www.mse.me/creditrating guide, but some key ones include a) Ensure your’re on the electoral role, via gov. uk/register-to-vote b) Never withdraw cash on credit cards. c) Never miss a repayment on anything – even late payments hurt d) Check your credit files at Equifax.co.uk, Experian.co.uk and Callcredit for errors – you have a statutory right to do this for £2 e) Avoid payday loans like the plague (both for your credit score and your financial health). f) Avoid other applications, such as credit cards and contract mobiles, just before applying.

Welcome to Blackpool That will be the message from the town’s new Resort Ambassadors as they show visitors the way around Blackpool’s new £2.4m LightPool project.

T

he team, appointed thanks to a £2m grant towards LightPool from the Coastal Communities Fund, will help direct people to the stunning new exhibits that are coming to the town centre including the amazing new digital mapping display, a series of exciting outdoor shows and a stunning set of exhibitions. However, they will also play an important role outside Illuminations season, welcoming people to town, engaging with and offering help and advice to people, providing travel and tourism tips and acting as positive role models to young people. The team are led by co-ordinators Louie Butcher and Ian Jackson and will be recognisable by their smart white shirts, dark blue gilets or jackets and pink neck ties. Louie, said: “It’s a hugely exciting project that all the Resort Ambassadors are delighted to be a part of. “We’re a bunch of people from a variety of different backgrounds but with one thing in common – we all love Blackpool!.” And Ian added: “We want to be the friendly, welcoming faces that people see when they come to Blackpool. “The LightPool illuminations project is incredibly exciting and we’re looking forward to getting started.” Thanks to the £2m cash injection from the Coastal Communities Fund and a further investment of around £420,000 from Blackpool Council and LeftCoast, 2015 will be the start of a huge change in how the world famous Blackpool Illuminations display looks through the new Lightpool project. Lightpool will revolutionise the Illuminations using 21 content, with the most exciting and new creative noticeable change being the introduction of projection mapping technology.

As well as the incredible display along the six mile stretch of Promenade, a stunning projection show will adorn The Blackpool Tower buildings. The specially created 3D film will offer something totally different and truly spectacular. A preview of what Blackpool’s new projection contractors, WarPro and The Projection Studio, may be able to do on the front of Blackpool Tower is available at https://www.youtube.com/ watch?v=iUE5A0eHtAs. On top of that, there will also be a whole host of interactive and exciting events that will accompany the display with LeftCoast, the Grundy Art Gallery and others playing a key role. Cllr Gillian Campbell, Deputy Leader of Blackpool Council, said: “We’ve got a huge range of new features for this year, as well as returning favourites and community sections and, of course, our new Lightpool project. “Blackpool Illuminations 2015 is going to be a fantastic year and, with the introduction of the Lightpool project, heralding a new era.” The full display, put together by creative curator, Laurence Llewelyn Bowen and Blackpool Council’s in-house illuminations team runs from September 4 until November 8.
