T

his quick and easy galette with shallots and chorizo serves as an impressive addition to your festive party buffet. Serves: 6 Preparation time: 10 minutes Cooking time: 40 minutes

You’ll need

100g cooking chorizo, sliced 8 shallots, quartered 1 sheet ready rolled puff pastry 2 roast peppers, sliced, from a jar is fine 125g mozzarella, torn into pieces 1 egg, beaten Basil leaves to serve

What to do Heat the oven to 220C/200C fan/Gas 7. Cook the chorizo in a frying pan until crisp on each side. Remove with a slotted spoon and set aside. Reduce the heat and cook the shallots gently while you put together the rest of the tart. Don’t over brown the chorizo and shallots as they will continue to cook in the oven. Unroll the pastry and gently pull out the long sides and trim off the corners so it becomes more circular. Lay it on a nonstick baking tray. Leaving a 3cm border of pastry clear, fork lots of small holes in the centre area of the pastry then scatter with the chorizo, pepper, chunks of mozzarella and finally the shallots. Carefully fold the edges of the pastry up to slightly overlap the edges of the filling. Brush the crust with egg wash and bake in the oven for 30-35 minutes until the pastry is crisp and puffed up and the filling is dry and browned.

T

hese golden, tasty crispy parcels are perfect for parties, plus they can be made and frozen ahead of time and simply cooked on the day. Makes: 20 Prep time: 30 minutes Cooking time 10 – 12 minutes

You’ll need: 250g fresh cranberries 100g caster sugar Juice and grated zest of half an orange Filo pastry (10 x30 x26cm sheets approx 220g packet) 200g goats cheese 8 tbsp olive oil Rocket leaves

What to do Place the cranberries in a saucepan with the sugar and add the orange zest and juice. Bring to a simmer and cook gently for 8-10 minutes until the cranberries have softened. Leave to cool. Pre-heat oven to 200°C / Gas Mark 6. Make the parcels by placing a sheet of filo pastry on the work surface (keep the remaining sheets covered in cling film). Brush the sheet with a little of the olive oil, place another sheet on top, brush evenly with a little more oil. Cut into four squares. Place a 10g chunk of goats cheese in the middle of each square and top with a small teaspoonful of the cranberry sauce, fold the pastry around the filling and scrunch the top so it holds together, brush all over with olive oil and place on a baking

Reserve the remaining cranberry sauce to serve with the parcels. Bake for approximately 10-12 minutes until golden and crisp. Serve warm with an extra spoonful of the cranberrry sauce, garnish with rocket leaves.

Cooks Tip: The goats cheese can be replaced with blue cheese. To freeze, place uncooked parcels on a tray and open freeze before carefully covering in foil. Cook from frozen for a few minutes more www.berryworld.com

I

f you buy a real Christmas tree, how can you make sure it stays looking its best over the festive season? Some 30% of people in the UK do buy the real thing each year, yet many are often left with more needles on the floor than on the tree within a week of putting it up - especially if they haven’t chosen a non-drop variety such as the ever-popular Nordmann fir. But if you give any Yuletide tree the care it needs, it shouldn’t drop too much. If you look after trees properly, most of them should look good throughout the festive season. Cut trees remain the most popular, and it is essential that they should be fresh when purchased. The needles should not be dull and dried up, the branches not brittle. If you gently shake the tree, the outer needles should not fall off. When you’ve bought your tree, keep it outside in a cool, shaded place, preferably standing in water, until it is required indoors. Before bringing it inside, cut about half an inch off the base of the trunk to open up the pores of the tree and then place it securely in a water-holding stand or wedge it in a bucket with pebbles, small stones or screwed-up newspaper and place it away from direct heat. Anyone who places the tree next to a radiator is asking for trouble. Keep the container topped up with water every day, as trees can get through a pint a day. About 8.5 million trees are sold in this country every Christmas, of which half are Nordmann firs. The Fraser fir (Abies fraseri) which is popular in the eastern United States is narrower than other trees and therefore more suitable for smaller rooms. Look for growers who are situated in an isolated place away from urban centres. They are less likely to get a big retail market and you may get a better deal and a better tree from them. Remember that trees sold retail in urban areas may have come from out of town and may have been exposed 24

Ask the retailer whether his trees are delivered either once at the beginning of the season or at different times during the period. Some people may opt for a tree that will last for years. “If you are looking for a tree you can plant in the garden afterwards, go for a container-grown tree. You can plant it out after Christmas and may be able to bring it in again next year. You should put it in a sheltered spot initially and slowly acclimatise it to the open before planting in its final home, making sure the root collar is at ground level and to water it well.

How to keep your Christmas tree healthy

Choose one with a good shape and if you opt for a cut tree, pick one that has at least 30cm of clear trunk at the base. When you get it home, saw the bottom 3cm off the trunk of a cut tree and stand it in a bucket of water, somewhere cool. Clamp it securely into a stand with a water reservoir and top this up regularly. If the water disappears quickly, this is a good sign as it means the tree is absorbing it. Stand trees in a cool part of the room, well away from radiators. A living tree will do best in a cool room, porch or conservatory, especially if you intend to keep it. Stand the pot of the living tree in a deep saucer and keep the saucer topped up with water. Remember that Christmas trees prefer life outdoors - so leave it till the last minute to buy your tree and it should last you through the festive season.

It may be the bane of many gardeners’ lives, but ivy comes into its own at Christmas, adding colour and movement to outside pots and weaving in and out of garlands or wreaths as an addition to festive indoor decorations. If you have mature ivy in your garden, you may enjoy rounded heads of matt black berries in winter, prized by flower arrangers, which can be used along with red berries from other shrubs as a great contrast in indoor decorations. Some ivies are extremely hardy, surviving the worst of the winter weather unscathed, including Hedera helix, which will thrive in all soils and situations, producing glossy green leaves, and H. colchica ‘Sulphur Heart’, which has dark green leaves splashed with yellow and pale green. If you want a hardy variegated ivy, go for H. colchica ‘Dentata Variegata’, which has light green leaves mottled with grey and edged creamy white. Ivy will grow in almost any soil but does best in alkaline conditions, with moisture at the roots, and is not bothered if it’s in sun or shade, although it will always grow from a shady position towards the light.

Good enough to eat Dutch white cabbage Dutch white cabbages are the huge pale-green balls you often see in supermarkets, but they’re a whole lot tastier if you grow them yourself and are best harvested in November for storing indoors.

Winter varieties such as the Dutch white are among the largest and most ornamental of the cabbage family, and also include the red-tinged ‘January King’ and the well-known Savoy. They need plenty of space to grow and a rich soil, and should be sown in May either in small pots or a seedbed. On light soil, add some well-rotted manure or compost weeks to your plot before planting the cabbages, which are greedy feeders. They prefer a slightly alkaline soil so you may need to apply garden lime over winter to gradually raise the pH level. The young cabbages should be ready to plant out in their final position in June, allowing 45cm space per plant. Scatter a generous amount of fertiliser before planting, and water the ground well if the soil is dry. Cover the crop with garden fleece or fine netting to deter pests and water in dry spells.

What to do this month • Cover rows of hardy annuals growing

outdoors with cloches or horticultural fleece if hard frost threatens.

• Continue clearing ground for new beds,

digging and leaving soil rough for the frost to break it down. Add compost or well-rotted manure at the same time and remove roots of perennial weeds.

• Finish the planting of tulips and hyacinths. • Complete autumn planting of climbers and

wall shrubs if the ground is not too wet or frozen.

• Take hardwood cuttings from hardy climbers such as jasmine and honeysuckle.

• Examine stored dahlia tubers and remove any that are shrivelling or rotting.

• Prune apple and pear trees once the leaves have fallen.

• Remove fruited canes of blackberries, hybrid cane fruits or summer raspberries that have not yet been dealt with.

• Overwinter fuchsias without a heated

greenhouse by stripping the plants of foliage, watering well then burying them completely in moist coir or vermiculite, either under or on the staging in a cold greenhouse or shed. They can be left there for the winter.

• Prune summer-flowering heathers, cutting back to the base of dead flowerheads but not into old wood.

• Place cloches over September-sown parsley and chervil to encourage winter shoots and keep them clean.

• Place houseplants near windows during the day.

• Move cacti to a very light position in a cool room for a rest period, keeping them almost dry.

• Plant late lily bulbs, if the weather is still good and the ground workable. If not, dip them in fungicide and pot them up in a neutral or ericaceous compost. Keep them frost-free in a potting shed, greenhouse or garage.

Cut the heads of Dutch white cabbage when they have reached full size and feel solid, remove outer leaves and peel off any damaged leaves to leave a perfect ball.

Go for an 'elfy' run

chools across the Fylde coast are gearing up to get ‘fit and elfie’ by taking part in an Elf Run for Brian House Children’s Hospice this festive season. It’s the second year the Bispham-based hospice has organised an Elf Run, inviting schools to do a sponsored run, walk or dance for the charity. Last year 18 schools took part, raising more than £15,500. This year is already expected to do better, with 21 schools signed up from across Blackpool, Fylde and Wyre. The Elf Run is a flexible event, allowing schools to pick when and where their run takes place. Children and adults taking part get a special elf hat to wear, and raise sponsorship for the area’s only children’s hospice. Community Fundraiser Chloe Rossall said 'We were so pleased that last year’s Elf Run went so well, and that schools were asking us about this year’s event. We are really excited for this year’s Elf Run, and we’re thrilled that 11 of the schools already signed up are brand new to our festive fundraising. We have a real mix of pupils ready to go, from primary and secondary schools to those in further education. We even have Girlguiding groups signed up to take part.'

lackpool Town Centre is to benefit from discounted parking and public transport fares in a joint campaign to encourage people to shop local this Christmas. Throughout December anyone will be able to park for just £1 for any three hour period at the Central, East Topping Street and West Street car parks in the town centre. In addition, Blackpool Transport will offer £1 tickets to use trams and buses after 5:30pm on the three late night shopping Thursdays – December 6th, 13th and 20th – and all day every Sunday during December. The discounted parking offer will start on Saturday 1st December, which is National Small Business Saturday as well as the day of Blackpool’s Christmas Lights Switch-On in St John’s Square. It will run until January 1st. Cllr Mark Smith, Blackpool Council’s Cabinet Member for Business and Economic Development, said 'We are delighted to be able to announce discounted car parking throughout the month of December on three of our main town centre car parks. It means that people will be able to park for three hours for just £1. Caring for your pet

A

pet losing their sight might seem life-changing, both for them and their owners, yet with some adaptation blind pets can often continue to lead normal, happy lives. PDSA vet Olivia Anderson-Nathan says ‘Some diseases cause sudden loss of all sight, whereas with others it’s a gradual deterioration. Conditions such as cataracts and glaucoma can lead to pets losing their sight, but these illnesses usually affect older pets. For young dogs, sight-loss might be the result of an injury. Luckily, our pets have an extremely welldeveloped sense of smell which they use to help compensate for blindness.’ Owners concerned about their pet’s vision should speak to their vet, as some diseases such as glaucoma are also painful, so need to be treated as soon as possible. Some eye conditions are a sign of other diseases, like cataracts and diabetes. The progression of certain conditions could also be slowed with treatment, so early diagnosis is important. Olivia added ‘Your vet will check your pet’s eyes and general health to see whether there is an underlying condition causing vision loss. If a medical condition is diagnosed, they will discuss treatment options and provide guidance and support.’ How pets react to sight-loss varies depending on several factors. If they learn new skills quickly, then they often adjust more easily to reduced or no vision. Older pets may already have a reduced sense of hearing or smell and so may find it harder to adapt, though because their loss of sight is usually more gradual they often learn to compensate well. Olivia added ‘If slight-loss is gradual, pets can find it easier to adjust than if there is a sudden loss. Confident pets may also adapt better than more anxious ones, but the amount of support an owner provides

Coping with Blindness in Pets is also a big factor in helping pets adjust to sight loss.’ There are several steps owners can take to care for a pet suffering from impaired vision. To help them learn their environment and surroundings, keep furniture in the same place and never leave anything at pet level around that they could trip over or walk into. Keeping their bed, food and water bowls in the same place will also help. Access to hazards such as fireplaces, balconies and open staircases should be blocked off to blind pets. When taking them out, tread well-known routes until they get used to things, and don’t let them off-lead unless they’re in a secure area. Olivia said ‘Once they‘ve adapted to the loss of vision, many pets lead normal active

lives. Teaching your dog “up” and “down” commands to help them navigate steps and curbs, giving them confidence out on walks. Many blind dogs can still enjoy time off lead in a safe space as well as walks in new places. Loss of sight in a beloved pet can be upsetting, but with a little care and patience owners can help their pet to adapt, ensuring they continue to have a good quality of life.’ PDSA is the UK’s leading vet charity. Back at the Palladium doing Panto? GW - It’s a wonderful production and people have such a great time when they come along, plus I get to act daft for a few weeks. Seriously though, I love it and the production team were brave bringing large scale pantomime back to the theatre, but it's paid off. Dame? GW - Well you start off as Prince Charming, then the baddie, and after that, you know, the Dame. Which I love as the children love it, and of course there are so many great interactions with them, kids don’t hold back do they. How do you feel about Strictly Come Dancing? GW - I would love to go on that show, seriously can you make it happen Ann? It’s my favourite show as it's showbiz glamour and such fun really, but also you get to learn things from true professionals which is such a bonus. New thriller 'Sweet Lorraine' was written and directed by you GW - It's been so well received and, yes, it's taken some time, but again I feel it’s the right time to do this, and above all else 36

Do you have any plans for a new album? GW - I have done a few and enjoyed success with them so yes, maybe now would be a good time to look at that genre again, but it takes time to do and once you're touring, there isn't a lot of that to spare.

You got your break on talent show 'New Faces' do you recommend that route to success ?

GM - I think go for it and enjoy it, but it was a kinder time in many respects back then. The people who were judging you had talent, but we live in the present, and if this gets you the break then why hold back. Is there any role that you wished you had taken or still wish to do? GW - so many really, but again its timing and what you are doing at that moment, but I always believe the next role is the best, as you learn and grow from those roles don’t you ? Finally let’s talk your MBE – was that a thrill? GW – I was honestly honoured Ann, because you do not expect it, but boy what a moment that was, and I do have to pinch myself at times when I see it written down. Volkswagen up! GTI by Rob Auchterlonie

I

t had to happen. There was an air of inevitability that someone would taken a small city runabout and turn it into something that people would actually want to spend their hard earned cash on just for the hell of it. A car that would bring the smile back to faces, many of whom would remember those halcyon days when the Golf GTI ruled the ‘smiles per mile’ stakes. VW’s up! GTI is such a car, and followers of facts and figures won’t lose sight of the fact the little GTI has dimensions, kerbweight and performance that broadly align with those of the original Golf GTI. But brought bang up to day, obviously. A quick potted history of Volkswagen small cars: the Fox has been culled, a car that never really floated my boat and was guilty of signing the death warrant of the brilliant little Lupo, a town car with character and a sense that it was exceptionally well put together and therefore a safe bet for the other woman in my life (my daughter) to drive around in.

The up! was unveiled as a concept at the Frankfurt Motor Show back in 2007, it was then substantially evolved, ready to make its public debut at the 2011 show in the same city. And there are plenty variants – six in fact, including the e-up! which one would guess goes down a storm in Yorkshire….. The up!’s dimensions are key to its city car status. At 3,600mm in length, 1,910 mm wide and 1,478 mm high, it’s one of the smallest four-seater cars available. But it doesn’t feel like that inside with just about enough space for four adults due to its 2407mm wheelbase, which is one of the longest in the segment, combined with an engine that’s mounted well forward. The steering through the leather clad multi function wheel is light to the touch but with a lack of vagueness so you always know what the wheels are up to. The interior has a chic, classy look to it, with decent quality plastic used throughout. VW quality plastic in fact. Evident are all the usual GTI touches – dash pad in red

2D pixels, unique GTI gearknob with red detailing and classis tartan-effect seat trimming. GTI badging and some red strips give the game away externally, as does the noise the chrome tail pipe spits out. There’s a more aggressive front front bumper, grille and bonnet plus LED running lights. Bearing in mind its modest size of just 999cc and one cylinder short of the full four, the performance is impressive, as is the sound it makes. 115ps, 200Nm, an 8.8 second 0-62 time and a top speed of 122mph from something this small means it easily earns that GTI badge. It’s one of the first VW cars to launch with a close-coupled petrol particulate filter, which reduces particulate emissions by up to 95 per cent.

Ride quality feels firm but not over-firm despite being lowered by 15mm It’s unlikely to be solely used in city traffic so the ability to take on all comers in terms of road surfaces is a distinct advantage. The three door up! GTI is £14,055 and the five door £400 more. It has a luggage capacity of 251 litres, or 959 litres with the rear seats folded. Neat inside, neat outside. It’ll shut up those knockers who claim you can’t have fun in a city car. Because you can. FOR: good things DO come in small packages AGAINST: Addictive!

t's not going to be a silent night on Saturday 22nd December as 17 local acts take to the stage at Bootleg Social for A Very Messy Christmas 11 to help raise funds for the Blackpool Food Bank. For the 11th year (not in a row) 'A Very Messy Christmas' returns with around 17 local acts taking to the stage to completely ruin Christmas for everyone, ensuring your festive season is ruined more than that time the pony shaped present under the tree turned out to be a fold out clothes drying maiden. Each act on the night gets a three song set list, at least one song has to be a cover of a classic Christmas tune, this gives the audience a chance to, not only sample some of the best new original music in the area, but get the chance to sing-a-long to some festive anthems. All profits on the night will be donated be to the Blackpool Food Bank, who help local people who are living below the poverty line. They work together with front-line agencies across Blackpool to provide emergency food parcels for people in need. She originally made them for herself, her family and friends after her husband, Iain, passed away, and offered the idea to Trinity to raise money for the hospice. In just 12 months the elephants raised more than £10,000 and saw orders coming in from across the country. After receiving her award for Contribution to Charity, she said ‘It’s really quite humbling to receive an award like this. There’s a whole team involved with the elephants who must also share the recognition for what we have done, and the money we have made. It’s a wonderful way to raise the profile of the hospice and what it does.” Also victorious on the night was Lytham landlord Craig Daniels, who won the Hero for Blackpool Award after a 365-day cycling and running challenge for Trinity in memory of his dad, Reg. Craig, who runs The County, completed 2,566

Trinity Hospice Heroes miles on two wheels – the equivalent of a whole Tour de France – and 562 miles running – more than 21 marathons over 12 months. He also lost more than three stones in weight. His tireless efforts resulted in a £6,000 donation to Trinity earlier this year. He said ‘I don’t see the award as being just for me; it’s about raising the profile of the hospice and recognising that people have put their hands in their pockets again and again to support me. It just wouldn’t have been possible without them. For me, it’s also about being able to give something back to Trinity.’
