Summer Strawberries Strawberry & British Asparagus Mini Quiches A twist on a classic quiche, these tiny individual tarts are ideal for picnics. Serves: 6 Preparation time: 10 minutes Cooking time: 35 minutes Ingredients: 1 tbsp flour for dusting 250g ready roll puff pastry 1 whisked whole large egg, for glazing 75g asparagus tips 150g strawberries, washed and halved 4 tbsp creme fraiche 2 large eggs, plus 1 extra yolk 10 crushed pink peppercorns 50g Parmigiano cheese, grated Salt & pepper
Method: Preheat your oven to 200c and line a baking tray with baking paper. On a floured surface, roll out the puff pastry and cut into 6 equal portions, pressing each into a shallow tart tray. Prick the pastry all over inside the border, brush with whisked egg mixture and bake for 12-15 minutes then remove and push down the bases inside the borders and set aside. In a bowl, mix the creme fraiche, eggs and yolk and the parmesan together, lightly season, then empty the filling onto the chilled pastry cases.
Strawberry, Parma Ham and Parmesan Crostini This is a wonderfully quick and aromatic way to introduce strawberries into a savoury snack. The Parmesan works really well with the strawberries and balsamic with the savoury sourdough being the perfect base. Serves: 4 as a snack or 2 as a light lunch. Preparation time: 5 minutes Cooking time: 5 minutes Ingredients: 200g of quartered strawberries 8 slices of sourdough bread 8 slices of thinly cut parma ham 100g of parmesan cheese shavings

1 tbsp of aged balsamic vinegar 1 tbsp of extra virgin olive oil A small handful of basil leaves Black pepper to season Method: Firstly, hull and quarter the strawberries and set aside. Toast the sourdough bread and then place on a serving platter. Arrange the parma ham on top of each slice of bread, top with some strawberries and then sprinkle with the parmesan shavings. Finally, drizzle with the balsamic vinegar and olive oil and sprinkle with the basil leaves and some freshly cracked black pepper.

Summer Strawberries Strawberry Rose Petal and Pistachio Pavlova Serves: 8 Preparation time: 25 minutes Cooking time: 1 hour, plus cooling Ingredients: 6 large egg whites 250g caster sugar 1 tsp rose water extract 1 tsp white wine vinegar 1 tsp corn flour 100g crushed pistachios 475ml double cream 1 tbsp icing sugar 450g Sweet Eve strawberries cut in half (keep 3-4 whole strawberries aside to garnish) handful of pale pink rose petals Method: Line a baking sheet and pre heat the oven to 180c.
Whisk the egg whites in a large bowl until stiff peaks form, then slowly add the sugar, rose water, vinegar, corn flour and whisk again until the mix becomes very thick and shiny. Gently fold in half of the pistachios then carefully spoon the mixture onto the lined baking sheet, forming a circle and working the mixture outwards to form an edge and leaving a slight dip in the centre. Drop the oven temperature to 150c and bake for 1 hour, then turn off the oven, leaving the meringue in there to cool. If you have time, make the meringue the night before, and leave it in the cooling
oven overnight. The parchment should pull away easily now and you can place the meringue on a plate. Whip the cream adding in the icing sugar and spread generously over the cooled meringue. Scatter the strawberries over the top, arrange the whole strawberries in the centre, sprinkle with the rest of the pistachios and and finally scatter with the rose petals and serve.
Strawberry, Prosecco, Campari and elderflower cocktail The flavours of summer – strawberry and elderflower - add sweetness and colour to fizzy, dry Prosecco and the slight bitterness of Campari. Serve this cocktail in chilled champagne flutes, with fresh strawberries to decorate. Serves: 6 people Preparation time: 10 minutes Ingredients: 300g strawberries
6 sugar cubes (optional) 3 shots of elderflower cordial 3 shots of Campari 1 bottle of Prosecco Method: Take 6 large champagne flutes and chill in the refrigerator. Hull all the strawberries and chop and blend half of them. Strain the strawberry puree into a jug through a sieve, to eliminate the seeds. When you are ready to
serve the cocktail place a cube of sugar at the bottom of each glass, (if you prefer your cocktails less sweet then you can leave the sugar out). Pour half a shot of elderflower into each glass, followed by half a shot of Campari and half a shot of strained strawberry puree. Open the Prosecco bottle and top each flute with fizzy wine. Mix with a cocktail stirrer and serve with the remaining strawberries.

atients at Trinity Hospice were treated to a different kind of visitor as two alpacas popped in to say hello.
Coco, 10, and Bella, 8, formed part of a presentation to the hospice’s Schools Link Networking Group, but also spent time visiting patients on the In-patient Unit, enjoyed a walk around its counselling service at the Linden Centre and met children in Brian House Children’s Hospice. They were led by owner Judy Ainley of Ivy Dene Farm in St Michaels On Wyre, who owns The Alpaca Experience and gave a talk to local school staff about the difference they can make to anyone who is struggling. She said 'Alpacas benefit many, many people because they are such therapeutic, endearing and sensitive animals. People can come along with the stresses of their daily working lives and will notice the relaxing qualities of these wonderful animals in just 10 minutes. Alpacas are so intuitive that they will recognise when a person has health problems and they will sit with them.'

A group of more than 30 staff from local schools were able to feed Coco and Bella before their walk through the Bispham-based hospice as part of the Schools Link networking event. Schools Link is run by the Linden Centre, and supports staff in local education to recognise when a student is struggling and offer counselling to those who need it. Donna Taylor, learning mentor at Great Eccleston Copp School, said 'Schools Link is absolutely invaluable; it’s a lifeline for our school and for our pupils who need counselling support. It’s made such a difference to our pupils, and we’ve been able to refer some to the Linden Centre for further support as well as staff who have needed it. The counsellors at the hospice are always there for us when we need it – it’s an amazing service.' Lesley Robson, Chaplaincy Counsellor at St Mary’s Catholic Academy, said it was a pleasant surprise to see the alpacas at the networking event. 'They are just amazing animals, and I can see how they could make a difference to the pupils at our school,' she said. 'The Schools Link networking events are such a great opportunity to share experiences with other organisations and are so informative.'
The Schools Link Networking Group meets at Trinity Hospice twice a year. Schools Link Co-ordinator Karen Brandwood said 'Our networking events are hugely important to the work we do as they help the staff in our schools access training they might not otherwise be able to access, as well as get to know each other and the excellent work going on in different organisations to support pupils as well as school staff who need counselling support. We’ve had talks in the past about Pets as Therapy, where animals are used as a therapy tool in schools and health settings. When we heard about Judy and her alpacas, we just thought we’d bring something else into the mix. 'It was wonderful to welcome Judy, Coco and Bella into Trinity, and to see how well they were received not only by our group but by our patients and staff as well. We hope we will see more of them in the future.'

any owners do not realise that rabbits, whether indoor and outdoor are at risk of some fatal diseases and should receive regular vaccinations. According to the latest PDSA Animal Wellbeing (PAW) Report*, nearly half a million rabbits (49%) in the UK have not received their primary vaccination course when young, and 58% of UK rabbits have not had regular booster vaccinations. PDSA vet Olivia Anderson-Nathan said: “We would always recommend vaccinating your rabbits. This is because many diseases can be spread not only from other animals, but through insects and even your own clothes. Vaccinations help them fight off serious diseases that could be fatal without this protection. During Rabbit Awareness Week this year, we’re urging rabbit owners to speak to their vets about vaccinating.” Young rabbits can usually have their first vaccinations from five weeks old. After this, they will need regular booster vaccinations throughout their lives to keep their immunity up. Speak to your vet about when your rabbits will need theirs.
Rabbits at Risk Nearly half a million unvaccinated
Vaccinations protect your rabbit from Myxomatosis, and Rabbit Haemorrhagic disease 1 (RHD-1) and 2 (RHD-2).
Vaccines are the most effective way to prevent this tragic disease. If you have rabbits that have never been vaccinated, take them to the vets to get it done as soon as possible. There is no current treatment or cure, so most cases of RHD-1 or 2 are fatal. Owners need to act now to ensure their rabbits are protected.”
Myxomatosis and RHD-1 have been active in the UK for a long time. RHD-2 is a newer strain of Rabbit Haemorrhagic Disease (RHD) which originally was seen more in Europe, but it has now become common here too. It’s important to get your rabbits protected against both types of RHD virus, as well as Myxomatosis. Ask your vet which vaccines your rabbit needs to be fully protected.
Rabbit owner Catherine Harding knows the importance of vaccinations, and recently took her four-year-old Netherland Dwarf, Jaffa, to Stoke PDSA for his boosters. She said: “I’ve always kept up to date with my rabbit’s vaccinations. For me it’s a simple choice – pay for protection or risk losing my beloved Jaffa to these truly horrible diseases. We started coming to PDSA after we attended a Rabbit Awareness Week event least year, we love visiting and the staff are absolutely brilliant.”
