Sausage Rolls with a Beer Dip

Who doesn’t love a sausage roll, and they are especially welcome on the buffet table or as a perfect warming snack on chilly evenings. Suitable for freezing. Makes: 24 Preparation time: 30 mins Cooking time: 20-25 mins You’ll need • 450g high meat content sausage meat • 1 small onion, peeled and finely diced • 4 sticks Fenland celery, trimmed and finely diced • 1 tbsp chopped fresh sage • 350g ready-made puff pastry • 1 free-range egg, beaten with 1 tbsp milk (to seal) • 1 free-range egg, beaten (to glaze) • Salt and pepper to taste For the beer dip

make a long sausage shape, then lay it on one half of one of the strips of pastry. Moisten the edges with a little egg and milk mixture then fold the other half of the length of pastry over and seal along the edges.

• 4 tbsp tomato ketchup • 2 tbsp tomato chutney • 1 tbsp Worcester sauce • 1 tsp English mustard • 150ml dark beer What to do Pre-heat oven to 220C/450F/ Gas 7. Grease and line two large baking sheets with greaseproof paper. Mix the sausage meat, onion, Fenland celery and sage together and season with a little salt and pepper. Roll the pastry out on a wellfloured board into a large rectangle. Cut into three strips, lengthways.

Place them all on the baking sheets, brush with beaten egg and bake on two shelves, swapping them over half way through for 15 to 20 minutes until the pastry is puffed up and golden brown. Remove the sausage rolls from the oven and allow to cool slightly before serving warm, or cold.

With floured hands, take a third of the sausage meat mixture and 18

Using a sharp knife, cut about 8 sausage rolls out of one strip, then snip the tops to allow the steam to escape. Repeat with the remaining two pastry strips.

Meanwhile, make the dip by adding all the ingredients to a sauce pan and heating gently until warm. Pour

the dip into a bowl and serve with the warm sausage rolls. Can be frozen before baking. Additional info: Fenland celery is a heritage variety of celery grown in the Cambridgeshire Fens. In 2013, Fenland celery was awarded Protected Geographical Indication (PGI) status and joined the ranks of Parma ham, Champagne and Melton Mowbray Pork Pies. Fenland celery is only grown in small pockets of Cambridgeshire, Suffolk and Norfolk using traditional farming methods. The deep, peaty soils in the Fens work towards giving Fenland celery its nutty-sweet flavour and paler colour. Fenland celery is available from October to December and can be found in Waitrose, Marks & Spencer, Tesco and Ocado. www.fenlandcelery.com

Light hearted fun

T

he world-famous Blackpool Tower has got a brand new illuminated heart in its 125th birthday year.

The giant heart on the front of the structure has been completely rebuilt and re-fitted with new-style light nodes in time for the 2019 Illuminations display which runs for 66 nights until November 3. It is part of a gradual replacement of the lighting on the Tower legs aimed at reducing the number of faults caused by exposure to extreme weather conditions and salt air. For the coming Illuminations season, the west face of the Tower “stick” will be illuminated along with the Tower top and the heart. The replacement of lighting on all faces of The Tower will follow from next year subject to successful testing of the new nodes on the heart over the coming months.

Lucy trips the Lights Fantastic

A

ward-winning actress Lucy Fallon made a short trip from the cobbles of Coronation Street to her home town of Blackpool to switch on the world-famous Blackpool Illuminations. Lucy, 23, pulled the switch in front of almost 20,000 people on the Tower Festival Headland sparking a colourful explosion of light and pyrotechnics along the seafront, and triggering 66 nights of Illuminations. Dozens of her family and friends, including her boyfriend, parents and sisters, were in the audience to watch her take centre stage. She now joins a roll of honour of Switch-On celebrities including the likes of Hollywood film director, Tim Burton, Robbie Williams, Peter Kay and Dame Barbara Windsor. Moments before, Lucy spoke of her pride at being invited to perform at the Switch-On in the town where she learned her craft, studying singing, acting and drama from the age of two, and making

her first public stage appearance as a dancer in pantomime at the historic Blackpool Grand Theatre. Since then, she has had a stellar rise to success, winning numerous awards and plaudits in her role as Bethany Platt in Coronation Street. The Switch-On was the centrepiece of a dazzling four-hour concert, delivered in association with MTV and featuring performances from Busted, Diversity, Becky Hill, Nina Nesbitt, Sigma and R3Wire & Varski. There were also special guest appearances by the Flakefleet Children’s Choir, who wowed the public with their joyous performances on Britain’s Got Talent, and by Sooty, the UK’s most enduring children’s TV character who was “discovered” in Blackpool and who, this year, has his own section in the Blackpool Illuminations display.

The Blackpool Illuminations, so often billed as the greatest free light show on earth, will now run nightly until November 3. Illuminations season will also include a two-week Lightpool Festival between October 11 and 26 when there will be a free programme of entertainment including extraordinary light installations, 3D projections on to the front of the Blackpool Tower, an illuminated tram parade and live performance. Halloween tricky treats Halloween is the perfect time for creatively creepy cooking so pull on those oven gloves and put on a FANGtastic outfit to get into the spirit! and sugar until pale and fluffy. Add the eggs one at a time and beat in. Gently fold in the flour until it’s all combined and the mixture drops from the spoon with a slight tap. Divide the mixture between the cake cases and bake in the oven for 16-18 minutes or until they’re golden and spring back when gently pressed on the top. Leave to cool. When the cakes are cool, make the icing by combining the icing sugar with 2tbsp water to make a paste.

Halloween Cupcakes

Simple to make cakes that make a huge impact. A trick and a treat all rolled into one! Serves: 12 Prep time: 20 minutes Cooking time: 16 minutes You’ll Need: • 120g butter at room temperature • 120g sugar • 2 eggs, at room temperature • 120g self-raising flour • 250g icing sugar • Orange food colouring, a black gel icing tube, liquorice laces, strawberry laces, • 6 blackberries, 6 raspberries, 6 blueberries What to do: Heat the oven to 170C/ 150C fan and line a muffin tin with cake cases. In a mixing bowl beat the butter

Divide the mixture into two bowls and colour one orange. Ice half the cakes in orange and half in white. Use the black icing tube to draw concentric circles onto the orange iced cakes then, drag the point of a cocktail stick or skewer from the centre of the icing out to the edge. Repeat all of the way around, like the spokes of a wheel, to create a web effect. Add a blackberry as the spider in each web and create its legs with pieces of liquorice. Use a raspberry and blueberry together on the white iced cakes to make the head and body of a bug and again create red legs and antenna in the same way. Cooks tip: If you’re short on time buy a pack of fairy cakes and decorate in the same way or ice a big spiders web onto a shop bought Victoria Sponge and cover in berry spiders..

Eyeball Jelly

This dessert may look gruesome, but the eyeballs are all sweet fruity bites. Serves: 4 -6 Prep time: 20 minutes, plus setting time overnight You’ll Need: • 1 tin lychee in syrup • 1 pack BerryWorld blueberries • 1 pack raspberry jelly What to do: Drain the lychees. Gently push 1 or 2 blueberries into each lychee. Divide the blueberry-lychee eyeballs between your serving glasses. Cut the jelly into cubes and place the cubes in a microwaveable jug, add 100ml water and heat for approx. 1 minute (based on a 750 Watt oven).

Stir until completely dissolved and then make the jelly mix up to 570ml (1pt) with cold water. Pour the jelly mixture into the serving glasses over the blueberry-lychee eyeballs and refrigerate to set.

Graveyard Pudding

These ghoulish puddings are scarily good. Makes: 4 Prep Time: 30 mins Cook Time: 5 mins You’ll need: • 300g BerryWorld blackberries • 200g chocolate, dark or milk to suit your taste • 2tbsp sugar, optional • 200ml double cream • 2 eggs, separated • 4 tombstone shaped biscuits (we used Nice biscuits) • 8 chocolate filled Oreos • 1tbsp desiccated coconut • Black gel icing tube • Green food colouring • Flower cake decorations

Method: Reserve 12 blackberries and mash the rest in a bowl with a fork. Set a fine sieve over a bowl, tip in the mashed berries, using the back of a spoon to push them through the sieve. Discard the remains in the sieve and set the puree aside. Break the chocolate into a large bowl. If you use dark chocolate, add sugar at this point, it’s not so necessary if you use milk chocolate. Gently warm the cream until it’s steaming but do not let it boil. Pour the warm cream over the chocolate and sugar and allow to melt, stirring occasionally until you have a smooth, silky liquid. Using a clean bowl and electric whisk, whip the egg whites to stiff peaks. Then whisk the egg yolks into the chocolate mix then the reserved blackberry puree.

To create the graveyard, use the icing tube to spell R.I.P. on each biscuit then put the Oreos in a zip-lock bag and bash with a rolling pin, smashing them so they look like soil. In a bowl mash the coconut with a drip or two of green food colouring to make ‘grass’. Poke a biscuit gravestone into each mousse then surround it with a layer of chocolate soil. Scatter a little coconut grass and finish with a flower decoration. Cook’s tip: If you can’t find chocolate filled Oreos to make your ‘soil’, use standard ones but scrape the white filling off before you crush them. www.berryworld.com

t may seem early to be talking about fireworks, but there are over seven million* firework-phobic dogs and cats in the UK. If your pet reacts badly to the loud noises and flashes, then taking action now to get them fireworks ready could prevent misery and suffering in the next few months. PDSA Vet Olivia Anderson-Nathan said: “Anyone who has had a pet that suffers from fireworks phobia will know how challenging it can be. Pets have very acute hearing and, for them, the loud bangs can be terrifying. They can shake with fear, they might go to the toilet in the house, destroy furniture, and could even injure themselves if they panic or run away.” Olivia advises any owners with fireworkphobic pets to take action as early as possible. Here are her top tips:

• Buy a sound CD or stream them

online, and very gradually introduce your pet to these types of noises. Play them quietly in another room to start with, and make sure you remain calm and act normally. Reward your pet when they remain calm, and if they become anxious then stop immediately and try again later with a lower volume. When they show no reaction, very gradually increase the volume and duration over a period of several weeks.

• Build a hideaway den for your pet

Read up on the process of socialisation, which is when young pets are introduced to a variety of people, objects, sounds and experiences at a critical stage of their development during their first few months of life. How you react is also very important – remaining calm will help to reassure them the noises are nothing to worry about. When done correctly, socialisation can significantly reduce the likelihood of fears developing in later life.

• For severe phobias, we recommend speaking to your vet, who will

be able to discuss various options including referral to an accredited behaviourist.
