Serves: 4 Preparation time: 5 minutes Cooking time: 15 minutes You’ll need: 30 Chantenay carrots 2 rib eye steaks 3 tbsp masaman red curry paste 3 tbsp vegetable oil 1 tbsp fish sauce 1 tsp light brown sugar 1 tbsp olive oil 2 250g packs ready cooked jasmine rice 1 red chilli, sliced ½ pack basil, chopped I tbsp toasted sesame seeds To serve: Soy sauce and hot sauce (optional)
What to do: • Gently steam the Chantenay carrots until just tender. • Smear the steaks in the masaman paste and set to one side. • Whisk together the vegetable oil, fish sauce and light brown sugar to make a dressing. • Heat a frying pan until really hot, then brush the steaks with the olive oil and cook for 2 minutes each side, remove to a board to rest. • In a big salad bowl mix the rice, chillies and basil, toss through the dressing. • Slice the steaks finely and top the rice with them. • Add the Chantenay carrots and toasted sesame seeds and serve with soy sauce and chilli sauce.

What to do: Par-boil some whole (or halved, if large) Chantenay for 5 minutes, then drain and toss with a little olive oil, finely grated Parmesan cheese and some black pepper. Roast for about 10 minutes in a hot oven until the Parmesan has melted and is beginning to brown.

Shine a Lightpool
Spectacular programme of free entertainment lined up for two-week festival

lackpool’s award-winning Lightpool Festival is returning this October half-term with two weeks of extraordinary free entertainment.
The festival, which will take place between October 11 and 26, will provide an amazing mix of live performance and light-based art installations including a replica planet Earth in The Tower Ball, the world premiere of a large-scale Sun in the Winter Gardens and a display of giant illuminated seesaws. The programme also includes the return of the Carnival of the Lights; an illuminated children’s football tournament; fire and light based shows; 3D projections on to the front of The Tower building; and a town centre art trail. This year’s festival is being staged in a collaboration between VisitBlackpool, LeftCoast, Blackpool Town Centre BID, Northern Rail, Access Fylde Coast, Primary Futures and The Blackpool Tower. Cllr Gillian Campbell, Deputy Leader of Blackpool Council, said 'We are thrilled to be able to announce that the Lightpool Festival is being extended to two weeks over the October half-term. Over the past three years, it has developed in terms of scale and ambition and has proved hugely popular with residents and visitors alike.' She continued 'This year, we are planning to showcase some extraordinary art installations in two of the most iconic venues in the UK – The Blackpool Tower and the Winter Gardens. Blackpool is once again doing what it does best – producing world-class 22
entertainment that is free for everyone to enjoy.' These are the events already lined up, with more to be added in the weeks ahead: GAIA Mon 14 to Sat 26 Oct (Blackpool Tower Ballroom) Gaia is a touring artwork by celebrated UK artist Luke Jerram who brought his ‘Museum of the Moon’ to Blackpool in 2018. Measuring seven metres in diameter, Gaia features extraordinarily detailed NASA imagery of the Earth’s surface. The installation will be located in the Blackpool Tower Ballroom, giving visitors the opportunity to dance around the world! SUN Mon 14 to Sat 26 Oct (Olympia, Winter Gardens) Sun, a new installation by artist Alex Rinsler, is a 7m sphere with NASA projections of the sun's outer surface projected from the inside. The result is a creative and dynamic 360˚ experience. WAVEFIELD Wed 23 to Sat 26 Oct (St John’s Square) A collection of eight giant seesaws to be shipped from Canada for a special interactive display in Blackpool town centre, sponsored by LeftCoast. Although they are ridden like any other seesaw, their motion activates built-in lights and speakers, to create a unique and unforgettable user experience. FIT2GLOW FOOTBALL Heats during Oct, with final on Wed 16 Oct Teams from local schools will once again don neon bibs and glow-in-the-dark accessories for a five-a-side

LATE AT THE LIBRARY Fri 18 Oct (Blackpool Central Library) Lightpool Festival will this year feature a latenight opening for Central Library, when the lights are dimmed and installed lighting illuminates the venue. Inside this magical atmosphere, there will be workshops for children, themed book reading, archive film footage of Blackpool Illuminations, a local art exhibition and close-up magic. LUMIDOGS Workshops: 12 and 13 Oct The much-loved Lumidogs returns, sponsored by Houndshill Shopping Centre, offering dog-owners a chance to make light-up costumes for their beloved pets, culminating in a grand finale to pick the best dressed pooch. The parade presents a unique opportunity to witness Blackpool’s historic collection of illuminated tramcars featuring a battleship, trawler and Great Western train.
PYRONIX Sat 26 Oct (Comedy Carpet) Belgian performance troupe Pyronix invite you to immerse yourself in a fantastic universe where fire is at the heart of an endless struggle. With precise choreography and intense music, this exclusive UK performance of the Ignipotens production will take you be on an astonishing visual journey. Equity Release – What’s it all about? If you’ve previously considered Equity Release, or are looking at your current Equity Release plan, then you may be pleasantly surprised by the number of options now on offer. Put simply, a Lifetime Mortgage (which accounts for almost all equity release plans and enables you to retain 100% ownership of your home), provides tax-free funds for 55+ homeowners, at a generally fixed interest rate, for you to use however you want. Obviously, do remember that irrespective of any sizeable house price growth you may have benefitted from over the years, you (or your estate) are not being given ‘free money’ against the value of your home. You do, however, have the option of ‘freedom’ from any monthly payments, if wanted. The outstanding capital (and also any interest owing) would be redeemed when the final planholder dies, or moves into long-term care, with the amount never being more than the value of the home, if taken out with a lender member of the Equity Release Council.
Advice on the best route You can, though, influence at the outset what you or your beneficiaries may face down the line. There are a multitude of options we could discuss with you, such as: •
Interest Payments - if you opt to make no payments at all, then the rolling-up of the interest can, for example, generally double the amount owed in around 15 years. Should you want to minimise this, you can make full or partial interest payments each month and can revert to roll-up at any time.

As part of the service Linder Myers give free guidance for those wishing to leave a legacy gift for Cancer Research UK. The charity receives no government funding for its research and relies heavily on the generosity of people leaving gifts in their wills. Over a third of its research into the prevention, diagnosis and treatment of cancer is funded through supporters leaving a legacy to the charity. World Fireworks Championship Returns

yrotechnic teams from all over the world will go head-to-head in the annual World Fireworks Championship Blackpool this September. Top-class teams from Estonia, Canada and Ukraine will compete for the coveted title, with displays taking place over four Friday nights starting on September 6. A new winner will be crowned this year, after Firemaster from Canada put on a spectacular display to scoop the prize last year after seeing off competition from Romania and France. The annual fireworks championship is free, and is among the most popular events in Blackpool’s exciting calendar, attracting tens of thousands of visitors to the Promenade each night. Cllr Gillian Campbell, Deputy Leader of Blackpool Council, said: “The World Fireworks Championship Blackpool are back again for another fantastic event. It attracts visitors from all over the country, as well as locals who come along each week, to watch some of the world’s best giving their all in the competition. It’s also a great opportunity to make a weekend of it and visit the world famous Blackpool Illuminations at the same time, as well as all the other shows and attractions.” The displays feature jaw-dropping pyrotechnics – synched to music – from some of the most talented and technically gifted pyrotechnic engineers in the world. This year’s events take place every Friday in September with Pyrocom from Estonia kicking off on September 6, before the Canadian team, Orion
Fireworks, take to the stage on September 13 to try to retain the trophy for Canada before Dance of Fire from Ukraine compete on September 20. The winner will be announced during the exciting finale event on Friday September 27 which features a showcase from the UK’s very own Titanium Fireworks who VisitBlackpool are once again working with to deliver this world-class, pyrotechnical event. Simon Page, Director of Titanium Fireworks said: “Titanium Fireworks are once again absolutely delighted to be organising the World Fireworks Championship Blackpool. We are looking forward to welcoming three new international teams to Blackpool to showcase their skills from the amazing North Pier. We also love closing the competition with our own special show on the last Friday.” All displays and start times are subject to suitable weather conditions and we recommend visitors to the event to allow plenty of time to arrive. There are plenty of restaurants and eating establishments available on the promenade and in the town centre to enjoy before and after each display, so make a night of it. fter sadly having to cancel the festival in August due to the MET Office weather warnings, we are delighted to inform you that the kite festival has been rearranged to the weekend of the 6th, 7th and 8th September. The event which takes place on the award winning beach adjacent to St Annes Pier, will welcome tens of thousands of visitors from all over the country. A record number of kite flyers and teams will also be in attendance, filling the sky with display kites of all shapes and sizes; an incredible spectacle not to be missed! St Annes will once again welcome international guests with the return of the highly acclaimed Alfarsi Kite
New dates set for re-arranged Kite Festival Team based in Kuwait. This year, the team has generously invited and will host Awita Kites from France, along with their own team members who will travel to St Annes from across the globe.
