Hugh’s for veg? The TV chef's been cooking up meat-free meals, to prove to himself, and viewers, that veggie cooking is no dull alternative.

Here are three tasty recipes from Fearnley-Whittingstall's veggie kitchen...   (Serves 2) ingredients 750ml vegetable stock 50g pearled spelt (or pearl barley) A few leaves of cabbage, kale or greens, or a couple of handfuls of spinach, washed 1 medium carrot, peeled and diced 100g frozen peas or petits pois 400g tin cannellini or other white beans, drained and rinsed Sea salt and freshly ground black pepper Extra virgin olive oil, to finish Bring the stock to the boil in a saucepan. Add the spelt (or barley), reduce the heat and simmer until almost tender, (this should take about 15 minutes, or a bit longer for barley). Meanwhile, remove any tough stalks or ribs from the greens or spinach and shred the leaves roughly. Add the carrot, peas and tinned beans to the broth. Once it returns to a simmer, add the greens or spinach and cook for a further two to three minutes, until just tender. Season with salt and pepper to taste, then ladle into bowls.

Slice the top and bottom from the orange. Stand it upright on a board and work your way around it with a sharp knife, cutting off the skin and all the pith. Cut out the segments from between the membranes, working over a bowl to save the juice, letting the segments fall into the bowl. When you've finished, squeeze the juice from the remaining membrane into the bowl too. Put the finely shredded cabbage and grated parsnip into another bowl, add most of the orange juice (not the segments yet) and trickle over the olive oil. Add a little salt and pepper, toss the lot together with your hands, then transfer to serving plates. Scatter the orange segments and date slices over the red cabbage and parsnip, then finish with a scattering of thyme. Serve straight away.



ingredients 400g waxy or new potatoes 400g spinach, stripped of any coarse stems 2tbsp rapeseed or sunflower oil 1 onion, thinly sliced 1 garlic clove, finely chopped 1 red chilli, deseeded and finely chopped 1tsp freshly grated ginger 2tsp garam masala 2-3tbsp double cream or coconut cream (optional) Sea salt and freshly ground black pepper Halve or quarter larger potatoes so that all the pieces are roughly the same size. Put into a saucepan, cover with water, add salt and bring to the boil. Simmer for eight to 12 minutes, until tender. Drain. (You can use leftover cooked potatoes for this dish too.) Wash the spinach thoroughly, then pack it, with just the water that clings to it, into a saucepan. Cover and put over a medium heat until the spinach has wilted in its own liquid - just a few minutes. Drain and leave in a colander until cool enough to handle, then squeeze out as much liquid as you can

hen a car is labelled 'Sport' it's no longer the case that's it's all about performance and the new engines not only boast substantial increases in power and torque but also lower emissions and reduced fuel consumption. Changes to the chassis include Active Damping and a full Brembo brake system that does a great job of bringing the burly Range Rover to a quick stop. Taking all that was good about the mighty Range Rover and, through the work of the designers, presenting a slightly more youthful appearance, it sought to tempt buyers away from rival offerings that were perceived to be more contemporary in looks and image. And highlighting the youthful angle is appropriate considering Land Rover has updated its junior Range Rover. It's also appropriate that the car's visual appearance has changed slightly. Call it a nip and tuck if you like, the Sport's nose has been softened. Gone is the stark radiator grille, in its place a more cohesive nose and bumper arrangement. The Front

and rear lights are now LED - with a smoked-effect finish at the back and subtle daytime running lights. These details all amount to a sleeker, less fussy and more sophisticated 'look', and one that does much to help promote Land Rover's desire to be viewed as a smart, fashionable brand. The changes continue inside, with the focus very much on improving the car's premium ambience. Gone is the dark plastic centre console, in its place a soft touch, colour coordinated central fascia. There's upgraded leather on the seats, soft-touch textiles and the array of electronic equipment including the adoption of a TFT colour screen. Other new toys include five cameras to assist with parking which provide a 360-degree view of the car when reversing. There's also a system that detects oncoming cars and dips the headlights for you. There's a clever multimedia system with screens for back seat passengers and there are heated and cooled seats all round.

MOTORING Indeed, the Sport's cabin is now on a par with that of a conventional executive saloon. It's certainly spacious enough, while the Sport's trump card - lofty driving position - will likely be a deal-clincher for some. Of course, one pretty important reason to get the Sport over any conventional saloon is the car's allweather and all-terrain ability. Predictably diesel dominates here, and while the beefy Supercharged petrol V8 is now faster and more powerful (and cleaner, too) it's the new TDV6 motor that's destined to grab all the headlines. The flagship TDV8 might offer lots of power and torque, but the TDV6 delivers an experience that might be close enough for some. Punchy when it comes to overtaking and powering out of corners yet quiet on the motorway, this new TDV6 puts the 'lesser' diesel Sport back on the map. Of course all this power makes off-roading a breeze. The smooth auto gearbox makes life inching over obstacles easy enough for novices to feel confident, while the various electronic aids help take your mind of the complicated stuff and allows you to concentrate on the muddy track ahead. Land Rover's now familiar Terrain Response system really does make off-roading a doddle. Simply dial up the terrain - mud, snow, sand etc - and transmission, differential and suspension settings are taken care of and adjusted when necessary. Tell councillors what you think

More than 1,500 people took part in last year’s survey, the first conducted since 2008. It was conducted online to minimise costs. It showed:

Residents of Fylde have got another chance to tell councillors what they think about town hall services.

• 93 per cent of people were satisfied with bin collection;

Fylde Council’s first residents’ survey was first launched last year when 81 per cent of people said they thought the council gave value for money and that 88 per cent were “satisfied overall” with Fylde Council.

• 93 per cent were satisfied with parks and open spaces;

Councillor Sue Fazackerley, Fylde Council deputy leader, said: “The results were encouraging last time but we are always seeking improvement.

“We are facing tough financial challenges and trying to safeguard high quality services – and the public can guide us in this. “As councillors we steer the council’s money in the way that people want their Council Tax to be spent. But it is the public’s money and we want them to have their say.”

At the core of growing apples

Orchards are hosting apple festivals and events throughout the country this month, where the public can learn more about the different varieties and glean advice on how to grow their favourites. Among those celebrating the harvest is Brogdale Farm in Kent, home of the National Fruit Collection and host to the UK's largest apple festival on October 19 and 20. Brogdale grows a staggering 2,200 varieties, of which more than 500 will be on display. One of the most important things to consider when buying an apple tree for your garden is its rootstock, says Michael Austen, a guide at Brogdale and experienced apple grower. "The first thing is to consider how much room you have and then check what rootstock the young tree is on. If you have a small space go for the dwarfing rootstocks like M9 or M27, while if you have plenty of room you could go for an M25 rootstock." Most suburban situations provide good pollen due to the close proximity of other gardens and it's not always necessary to have pollinators if the bees and other pollinating insects are generous with their visits. There are some self-fertile varieties but others need a plant partner and you need to take heed of pollination groups. If you don't have a neighbouring apple tree, select two varieties in the same group or the adjoining group. For instance, group 2 and 4 will pollinate group 3 as will any others in group 3. "Buy a young tree, between one and two years old. The rootstock number should be marked on the label and if it isn't, don't buy, because the rootstock controls the size of the tree," says Austen. "Any good nursery will tell you what rootstock the tree is on. "Don't go for a tree older than two years because the older the tree, the more risk there is when you plant it. Young trees tend to grow quicker than older ones." Bare-rooted trees should be planted between the end of November and the beginning of March, but avoid planting during frosty weather or when the ground is waterlogged. Pot-grown trees can in theory be planted at any time of year, but in summer it will need well watering and should be treated as if it's still in its pot. If you buy a tree that's been in a container and find that it's potbound when you remove it for planting, tease the roots open before planting it out, or the tree's growth will be stunted. Apple trees like well-drained, fertile soil in a sunny spot, but don't plant them in pure compost, Austen advises. "Don't dig the hole, put the tree in and fill it back up with compost. Mix some compost with the soil you've dug out.

If you plant the tree in pure compost it will tend to dry out and the compost might be too strong." If you have good soil, ideally mix some John Innes No 2 or 3 into the soil you've dug out and then fill in the hole, as this will help retain moisture. Of course, young apple trees will need staking, but take care how you do it. "All dwarfing trees will need a stake for the whole of their lives. The more vigorous rootstocks will need to be staked for the first five years and after that the rootstocks should be strong enough to hold the tree up. "Put the stake on the windward side of the tree, so that the wind is blowing the tree away from the stake." If all goes well, you should be harvesting your first fruits in the third year after planting, building up to producing a full crop by the fifth or sixth year, says Austen. Easy trees, which tend to be fairly disease resistant and produce good crops, include Red Falstaff, Red Windsor and Greensleeves, he says, as well as Egremont Russet, which is good for organic growing. There are fears for the future of traditional English apple varieties, which are in decline due to a lack of consumer demand for home-grown varieties. Sorbus (Rowan)

This deciduous tree comes into its own in autumn when it bears bunches of bright red berries and its foliage turns rich red or warm yellows. S. aucuparia, the most common variety, is a mediumsized tree which can grow to 15m (50ft) and produces clusters of creamy-white flowers in spring followed by the berries in autumn. Other good varieties include S. commixta, which is a slightly smaller tree with outstanding autumn foliage colour, as the leaves turn shades of vivid red, yellow and purple, and S. sargeniana, a large-leaved, slow-growing variety which takes on brilliant shades of red and orange in autumn, plus scarlet fruits. Sorbus should be planted in the sun or dappled shade in fertile, humus-rich, well-drained soil. They make beautiful specimen trees.



 Keep herbs going through Winter If you're worried about missing the flavours of all those home-grown herbs which you used throughout the summer, there are easy ways to keep stocked through the winter without going to the supermarket.  Sow a flowerpot full of basil seed, keeping it on a warm, sunny windowsill until the seedlings appear. Pick the leaves regularly to add to Italian dishes and sow some more in a few weeks' time to keep the supply up.  If you've grown mint or parsley outdoors in summer, cut off a clump of it, complete with roots, and plant into a container of compost and keep it on a sunny windowsill to keep the plant going. Alternatively sow a pot or half-tray of parsley seeds every three months and the plants will keep growing all year round.  Evergreens such as rosemary and thyme will keep going through the winter months, so just snip a bit off when you need it.

Try to keep the site fully occupied - if there are neglected or vacant plots, encourage friends and neighbours to take them on. That way, a hard-pushed local authority would be less likely to sell it to developers, claiming there is no demand.

If your site is not thriving, take a more active role in selfmanagement, sparking enthusiasm so that everyone pulls together and takes pride in the site. Councils offer various levels of independence, but it is in their interest to hand over some of the management as it saves them time and money.

Residents’ interests must come first on fracking: Town Hall environment chief Extra safeguards are needed to ensure protection of agricultural land in the vicinity of Singleton’s planned shale gas site, according to Fylde councillors. Granting of planning permission for the site on land south of Grange Road, Singleton, is a matter for Lancashire County Council as shale gas is classed as mineral extraction. Fylde Council has been consulted by the County Hall and has informed the county planners that any Environmental Impact Assessment – an essential part of Cuadrilla’s planning application to County Hall – should take into effect the wellhead’s impact on surrounding farmland.

“We are asking if activities on the pad could affect immediately adjoining farmland. It would be appropriate for this to be investigated before any drilling starts. “We don’t know if fracking will get the green light. If it does, we need to assist Whitehall and the county council to ensure a proper system of regulation is in place to protect Fylde residents. “The council’s working group is continuing to look closely at all matters and it will continue to work with residents and people involved in the industry. “I will be seeking a meeting with the county council’s Cabinet member for the Environment to discuss what appetite they have for the future of shale gas exploration and production in Fylde and Lancashire.”

Councillor Tommy Threlfall, Fylde Council’s cabinet member for Environment and Partnerships, said: “Planning permission in relation to shale gas is entirely a matter for Lancashire County Council, but Fylde Council can and will make representations as statutory consultees on behalf of the people of Fylde. “Whether fracking ultimately comes or not is not a matter for Fylde Council but, if it does, it should be regulated properly and give proper protection to the community. “The council also produced an extensive ‘task and finish’ report on shale gas last year and we sent that to MP Mark Menzies. I met Mr Menzies and explained to him the importance of the area’s concerns being heard in Whitehall. Following those discussions the Government has now established the Office of Unconventional Gas and Oil to regulate the industry. “We have been consulted by County Hall on an environmental impact assessment for the proposed Singleton site and we made our views very clear: we accept that the wellhead pad is small but we can’t accept that its small size necessarily means a minimal effect on land use.

Views wanted on ideas for former nightclub site Public views are needed on ideas as to what to do with the former Scruples nightclub site on Lytham Green. Councillors will consider all views before deciding which, if any, proposals to back. The site, next to the yacht club on the “sea front”, has been paved since the nightclub was demolished some years ago. Councillors are seeking views from the public and voluntary groups on the following proposals: 1. A sand and water “play park” for children as proposed by a local park group which has submitted a Stage One application for £415,000 to construct and manage the site to the Coastal Communities Fund (CCF). The scheme proposes inclusion of a cabin providing refreshments, the income from which would pay for increased maintenance of the play facility. If Fylde Council, which owns the land, backs the concept then the group will submit a further Stage Two bid to further pursue the £415,000 from the CCF.

Coastal Communities Fund’s Stage Two deadline on 7 October. A page has been set up on the council’s website for members of the public to express their views. The page invites written responses rather than simply the chance to vote on a preferred option. The page can be seen at: www.fylde.gov.uk/ scruplesconsultation Councillor David Eaves, Fylde Council leader, said: “This is a prime site for improvement – and one of the best sites anywhere in Fylde for an appropriate scheme. “It has been deteriorating in recent years and has looked a bit dilapidated on what is one of the finest spots on the entire Lancashire coast. “The question, of course, is what sort of development there should be there. One perfectly reasonable response is just to say that the site should be kept as the Green itself – a place for quiet and to appreciate the area’s natural beauty.

Other uses, commercial or not – members of the public can proffer their own suggested uses. If the council is to ultimately back the sand and water play proposal, it will have to do so before the
