Two Greedy Italians Eat Italy by Antonio Carluccio & Gennaro Contaldo is published by Quadrille.

(Pasta with a Chilli, Bacon and Tomato Sauce) (Serves 4) ingredients 400g bucatini 80g pecorino, freshly grated For the sauce: 130g pancetta, cut into small cubes 1 small onion, finely chopped 3-4 tbsp extra virgin olive oil 1 hot dried red chilli, finely chopped 2 tbsp dry white wine 500g San Marzano tomatoes, cut into quarters For the sauce, put the pancetta and onion in a pan with the oil and chilli, and fry gently for about 4-5 minutes. Add the white wine and tomatoes and cook for a further 15-20 minutes, stirring occasionally. Meanwhile, bring a large saucepan of lightly salted water to the boil, and cook the pasta until al dente. Strain the bucatini and mix with the sauce. Serve sprinkled generously with the freshly grated pecorino.

(King Prawns and Crab with Garlic and Chilli) (Serves 4) ingredients 175ml extra virgin olive oil 12 fresh raw king prawns, shells on 6 garlic cloves, sliced lengthways 1 large red chilli, finely chopped Fresh crab meat from 2 large crabs, in chunks Salt A handful of flat-leaf parsley 250ml white wine 1 lemon, cut into wedges

Heat the oil in a large frying pan, add the king prawns and cook for 2 minutes, turning once. Add the garlic, chilli and crab meat, season with salt, then reduce the heat and cook for a couple of minutes with the lid on. Add the parsley, increase the heat and add the wine and reserved juices from the crab meat if you have any. Bubble until evaporated, then serve immediately with lemon wedges and lots of good country bread to mop up the juices.

T

his is the tough arena that Aston Martin has to compete in, with Italian and German rivals in plentiful supply. You should already be familiar with the DB9, Aston's four-seater sporting GT with looks to die for and performance to match. Then some £60,000 above it is the DBS, based on the DB9 but with carbonfibre, more power, drama and a place at the supercar table - not forgetting a place in a secret agent's garage. The Aston Martin Virage bridges the gap. It clearly sits in the DB9/DBS family, sharing the basic template and underpinnings of those two cars. But the Virage distinguishes itself as an evolutionary machine with some fine details. Building on the lessons learnt and improvements seen in the Rapide four-door coupe, the Virage wears the piercing bi-Xenon headlights with LEDs and a slick grille inspired by the One-77 hypercar. Right around the base of the car there are aerodynamic aids that also give the car added presence and flag up its sporting intent. Subtle they may be but the effect is instant and significant: this is still one of the prettiest

cars money can buy, but you can tell it wants to be driven and not just gawped at. Under the sensuous curves the Virage takes plenty of the top-notch tech you get in the DBS, such as the rear track and final drive ratio. Unlike the DBS though the Virage only comes with the six-speed paddleshift automatic gearbox, and although the purists might raise an eyebrow the reality is that most buyers plump for this option. It's easy to see why: everyday driving is a breeze when the seamless transmission is making decisions for you, and when traffic stacks up and no car can be entertaining you'll be thankful for it. Then there's the 6.0-litre V12 under the bonnet. Anyone with an automotive soul will love that engine configuration, bringing with it not only mammoth power and torque but also the promise of an engine note that is sure to excite. All it takes is a push of the cut-glass key into the dashboard, and the brief whirr is followed by a menacing snarl. Punch the button to select Drive and the Virage will sail serenely away on the ample low-rev shove.

MOTORING Within a few miles the Virage reveals yet more of the refinements that have moved the game forward for Aston Martin. The DB9 is unquestionably a refined car, but the Virage is even more easy-going. Noise levels are a little more hushed, and particularly when cruising there is only a faint rush of wind and road noise to remind you of what's carrying you along. Nothing less than a firm suspension set-up would do for an Aston, but the Virage informs you of bumps in the road rather than following every inch of them: it keeps the worst from you but you're never in doubt about the surface of the road. And driven in this manner the Virage would please many discerning buyers and demand very little from them in the process. Subtle tweaks in the cabin have improved the switchgear (more cut glass) the upgraded sat-nav system is much easier to use and the quality of the craftsmanship is as high as ever. But this is only half the story, and the Virage demands to be driven hard to reveal its more athletic side. The transmission gives you the choice of Sport mode for higher rev shifts or manual control activated by paddles behind the steering wheel. The Sport button also opens up the exhaust for the full aural experience and switches to a sharper throttle setting. Instant urge is available regardless of engine revs and as it climbs towards the red line, the wail from the exhaust and the eye-widening speed meet in a crescendo punctuated only by the flick into the next gear. The Virage will push hard well into three figures and the top speed of 186mph never feels far away.

“The Virage is one of the prettiest cars money can buy, but you can tell it wants to be driven and not just gawped at.� Hauling the speed down for a bend is effortless thanks to the standard carbon ceramic brakes, and the consistent steering response inspires huge confidence as you peel into the curve. Considering the relatively substantial mass it stays assured and thoroughly planted - the revised adaptive damping system keeps it tied to the road and allows you to fully exploit the power and performance. Cynics will point and question the advantages over a regular DB9, but anyone lucky enough to drive DB9, Virage and DBS will appreciate just how much this moves the game on. It's the best Aston to date and as an example of thoughtful evolution, it promises so much more to come from this iconic British brand.

Your starter for 10 – would you like to save money? Sometimes cutting your bills isn’t about knowing the right answers, it’s about asking the right questions. So let me run through my money test… Answer each of the following questions - it could add £100s or £1000s to your pockets.

Has your home got more or the same number of bedrooms than people? If so, and you’re in England and Wales, check whether you can make big savings switching to a water meter (free to do, but not in Scotland). This is because water bills depend roughly on your home’s value, while a meter’s all about usage. This may be some serious cash. As DenwantsJFT96 tweeted me: “Switched a few years back and now pay £45 a month less (that’s £540 a year– ML). Plus it makes me more conscious of what I use. Fixed dripping tab.” There’s a calculator to see if you can save at Ccwater.org.uk.

Do you go abroad at least once a year? If so, there are a number of key things to consider: 1) If you go on holiday in Europe, check your European Health Insurance Card (EHIC) is in date—3 million expire this year. Always use the official website www.ehic.org.uk. Don’t Google - many sites charge when it should be free. 2) Get permanently perfect exchange rates worldwide. Most credit and debit cards add a hidden 3% load, so spending £100 worth of euros costs £103. Yet a few specialist credit cards are load-free, giving unbeatable rates. Though make sure you always pay them off in full every month to avoid interest. I keep mine in my overseas wallet (yep, I have one) and only use it for spending abroad. If you’re not online, supermarkets tend to give decent coverage. Is your mortgage rate higher than your savings rates? With dismal savings rates, overpaying your mortgage wins for many. First, check if your mortgage rate’s higher than your after-tax savings rate. If your mortgage rate is higher than your after-tax savings rate, it pays. Two big caveats: check there are no overpayment penalties. Plus always keep a few months emergency cash aside. The impact of overpaying can be enormous - just paying an extra £100 a month on a £100,000 mortgage at 4.5% saves £18,000 interest over a 25-year term. Are you paying interest on your credit cards? If so, see if you can do a balance transfer. This is when you get new card(s) that repay the debts on the other cards for you, so yow owe it instead at a usually far lower rate. You’ll need a decent score to do it. The longest 0% deal is Barclaycard 26mths with a 3.5% fee (Barclaycard.co.uk/personal/credit-cards). If you can repay quicker, the Halifax card (Halifax.co.uk/creditcards) at 15mths 0% with a 1% fee. All these cards are representative—meaning some won’t get the headline rate. Full options at www.mse.me/balancetransfers. The golden rules: A) Clear or shift again before the 0% ends or you’ll pay the full APR, which can be nearly 20%. B) Pay at least the monthly minimum or you risk losing special rates. More than 1,500 people took part in last year’s survey, the first conducted since 2008. It was conducted online to minimise costs. It showed:

Residents of Fylde have got another chance to tell councillors what they think about town hall services.

• 93 per cent of people were satisfied with bin collection;

Fylde Council’s first residents’ survey was first launched last year when 81 per cent of people said they thought the council gave value for money and that 88 per cent were “satisfied overall” with Fylde Council.

• 93 per cent were satisfied with parks and open spaces;

Councillor Sue Fazackerley, Fylde Council deputy leader, said: “The results were encouraging last time but we are always seeking improvement.

“We are facing tough financial challenges and trying to safeguard high quality services – and the public can guide us in this. “As councillors we steer the council’s money in the way that people want their Council Tax to be spent. But it is the public’s money and we want them to have their say.”

Tackling the pitfalls of posted plants

If you're among the unlucky people who order their plants by post and have received dead or dying plants, battered bulbs and dried-out specimens, help is at hand. Which? Gardening, the Consumers' Association magazine, held a 'Better Plants By Post' campaign to make people aware of their rights and encourage retailers to improve their services. This followed a survey it carried out among customers who have bought plants online or by mail order/phone. Some 36% of respondents had experienced a problem when buying plants in this way, with the most common complaint being the quality of plants or bulbs provided, packages left on the doorstep while customers were away and damaged packaging. Others received dead or dying plants, specimens that were too small or which quickly succumbed to disease and some which were rotten on arrival. Only half of those who complained received replacements, while a fifth received a refund. The survey also asked customers to rate the service they had received from 26 retailers. David Austin Roses, Bloms Bulbs, Crocus and Sarah Raven came out top for customer satisfaction, while Garden Bargains, Spalding Bulbs and Bakker were at the bottom. If you receive a plant you think is dead, the Sale of Goods Act 1979 says that you are entitled to a refund as long as you have notified the retailer of the problem within 'a reasonable time'. What is reasonable depends on the circumstances, but is typically three to four weeks, or less, from when the goods are received.

Contact the seller as soon as you know there's a problem. Similarly, if a plant you receive is diseased, you can ask for your money back within a reasonable time, or a replacement. In the first six months, the onus is on the seller to prove the plants weren't supplied diseased rather than you having to prove that they were. It makes no difference if the plants were damaged before they were sent or in transit, it's the seller's responsibility, so you can ask for your money back within a reasonable time, or a replacement. Don't let the seller put the onus on you to take it up with the courier they used. If you're worried you haven't received the plant you ordered, but won't know until it flowers or fruits, you can ask for a refund (you could argue you have more than the usual 'reasonable time' as you couldn't know the problem until it flowers) or a replacement, sent at the seller's expense. Raise your concern with the seller as soon as you suspect they've sent you the wrong plant. If you ordered a plant but by the time it was delivered the window for planting it or potting it up had passed and a specific date had

been given for delivery, you could argue that time was of the essence in the contract and that by failing to deliver by that date, the seller breached the contract. You should get a refund. If no specific delivery date was given, the seller should have delivered within a reasonable time. The reasonable time would depend on the circumstances and the window for planting the plant you ordered. Retailers are asked to adopt 10 key criteria - some legal obligations, others just good practice - to improve their service. These include giving an accurate description of the plant (including its size) and flagging up any particular growing requirements, adopting strict quality control measures before the plants are sent out and ensuring packaging is secure enough to completely protect the plant in transit. Hydrangea Once considered ‘old fashioned’, the Hydrangea is making a comeback in UK gardens, with delicate mopheads of flowers in an array of colours which would suit most backdrops. One of the curious traits about the mop-head varieties is their ability to change colour in different pH soils which means they go more mauve in acid to neutral soils and pink in alkaline conditions. Those which are white or green remain these colours regardless of the soil pH.

Top Tip… To retain the colour of the blue flowers, try to use water from a butt rather than mains water as this can affect the colour.



Don't let the heathers grow into the conifers as the foliage of both will turn brown. Place mixed beds of these plants in an open situation in full sun with well-drained soil which is moisture-retentive and acidic. Mix flat-growing conifers with heather throughout the bed to provide winter foliage colour and dot more upright conifers through the planting to add shape and texture.

Picked in a bunch, these make a huge impact display indoors.



Leeks

In recent years, leeks have enjoyed a rise in popularity, but the pre-packaged baby varieties you get in supermarkets are not a patch on those you can grow yourself in a sunny site on soil which won't become waterlogged in winter. It's true, leeks occupy the ground for a long time, but the big plus is that they can be harvested from autumn to late winter. They can be sown in seed trays indoors from mid to late winter, the seedlings pricked out and placed in modular trays and then hardened off in a cold frame for planting out in mid-spring. Alternatively, sow the seeds outdoors in spring for autumn crops, raking the soil to a fine tilth and sowing thinly in drills 15cm apart and 1cm deep. When the baby leeks are pencil thick, move them to their final position, ideally in free-draining ground which has been given plenty of well-rotted organic matter the previous autumn or winter. Water thoroughly the day before and make wide, deep holes - 15cm deep and 5cm across - dropping a single seedling in each. Don't backfill with soil, but fill each hole with water to settle the soil around the roots. For longer stems, earth up around the stems during the growing season, weed regularly and water thoroughly during long dry spells about every 10 days. Baby leeks for salads can be pulled from early summer, but more people wait for the stems to thicken so they can harvest bigger plants from late summer for soups and casseroles. Production of Fylde Council’s videos does not cost anything: a camera and microphone are set up at each meeting and the resulting footage is lodged with YouTube the next day.

Take steps to keep your dog safe Fylde Council’s dog chief is reminding people to adhere to the law by ensuring that their dogs wear a collar and tag when on the public highway. Fylde Council’s Sarah Wilson is also urging pet owners to have their animals microchipped in a bid to reduce the number of strays on the streets.

A Fylde Council dog warden witnessed both weekend incidents after earlier complaints from a member of the public. Sarah Wilson, Fylde Council’s principal waste development officer, said: “Some offenders think they will get away with it if they exercise their pets at the evening or weekend. “They think our wardens only work nine to five. They are mistaken as we now work early mornings, evenings and weekends when most offending takes place. “We now have many members of staff who are authorised to hand out tickets to offenders.

National figures show that 118,932 dogs became strays in 2012. Sadly, only 53 per cent were reunited with their owners or given a new home.

“Wardens, however, can’t be everywhere so we’re asking members of the public to be our eyes and ears. If people tell us of offending we will go out and investigate. We need to know the times, locations and descriptions and we will take it from there.”

Sarah, Fylde Council’s principal waste development officer with responsibility for the borough’s dog wardens, said: “Warmer weather means that people are letting their dogs out more often just now and it would be tragic if some went missing.

The Great Escape (So many years ago but this will show how it was) Untouched for almost seven decades, the tunnel used in the Great Escape has finally been unearthed. The 111-yard passage nicknamed ‘Harry’ by Allied prisoners was sealed by the Germans after the audacious break-out from the POW camp Stalag Luft III in western Poland . Despite huge interest in the subject, encouraged by the film starring Steve McQueen, the tunnel remained undisturbed over the decades because it was behind the Iron Curtain and the Soviet authorities had no interest in its significance. But at last British archaeologists have excavated it, and discovered its remarkable secrets. Many of the bed boards which had been joined together to stop it collapsing were still in position. And the ventilation shaft, ingeniously crafted from used powdered milk containers known as Klim Tins, remained in working order. Scattered throughout the tunnel, which is 30ft below ground, were bits of old metal buckets, hammers and crowbars which were used to hollow out the route. A total of 600 prisoners worked on three tunnels at the same time. They were nicknamed Tom, Dick and Harry and were just 2 ft square for most of their length. It was on the night of March 24 and 25, 1944, that 76 Allied airmen escaped through Harry.

Watching the excavation was Gordie King, 91, an RAF radio operator, who was 140th in line to use Harry and therefore missed out.‘This brings back such bittersweet memories,’ he said as he wiped away tears. ‘I’m amazed by what they’ve found.’

• Tower to Windmill Walk The Blackpool, Fylde and Wyre Branch of the M.S. Society. Our intention is to raise awareness of the difficulties encountered by those living with Multiple Sclerosis, and of the effects it has on families and friends. We provide advice, support and information, and also raise funds for the Society’s Branch. These funds are used to help local people in the form of grants for respite holidays, home and car adaptations, or for mobility aids such as wheelchairs and electric scooters. This year sees the return of our Tower to Windmill Wheel and Walk, which has been postponed since 2010 due to the promenade improvements. The event raises awareness and much needed funds as locals are sponsored to travel from The Beach Cafe meeting place on St. Annes promenade, to either Blackpool Tower, or to to Lytham Windmill either by walking, cycling, or by using wheelchairs or electric scooters. Returning to The Beach Cafe, those taking part will be provided with a light meal upon completion of the route.

As the M.S. Society celebrates its 60th Anniversary, and as the Blackpool, Wyre & Fylde Branch enters its 50th year, we want to ensure that this year’s Wheel and Walk is bigger and better than ever. Sporting chance for the young Foam footballs are being handed out across Fylde to stop young soccer players damaging property. The full-sized balls are being distributed by Fylde Community Safety Partnership, Lancashire County Council youth workers, police officers and Blackpool Football Club staff wherever footballs are kicked around in built-up areas. Bryan Ward, Fylde Community Safety Partnership manager, said: “It happens every summer – children come out and start kicking footballs about. “They kick the balls around and, in their excitement, they can end up breaking windows, damaging cars and annoying residents as they kick their balls against house walls. “The ‘softballs’ are as much fun as the real thing although they can’t cause any damage.” Financial support for the scheme has come from Partnership members, Lancashire County Council Young People’s Service, and also Blackpool Football Club whose logos are printed on the balls. Ashley Hackett, Blackpool FC’s Head of Community, said: “No-one would want to stop children using normal balls on football fields – this scheme is aimed at using balls in built-up areas. “We want to see hundreds, if not thousands, of youngsters playing football in the hot weather. These ‘softballs’ will let them do so without annoying everyone else.” 56
