Lancasters Halton Festival Is On
Live music, family fun and great food and drink combine once again at this year’s Halton Festival. Now in its second year, the event attracted over 1,000 people in 2013, and organisers are inviting everyone back for another summer celebration on Saturday August 9th. The playing fields at the Centre will be the setting for the free daytime event, featuring up to 20 stalls, kids activities, international food, hand crafted local ale and plenty more besides. The festival also hosts the annual skate competition on one of the best skate parks in the north west. BMX, scooter or skateboard – a £5 entry fee gets you in the running to compete for some great prizes. The outdoor stage will play host to bands and singers from the Lancaster area, including sets from Bears Hiding in Wallpaper, Stripped Back, Charlie Galloway, Blackheart Afterglow, Schooltrip and The Intensely Staring Cats. In the evening, the fun moves inside The Centre with music from Morecambe indie rockers Joe McCorriston and the Blockbuster Blues, York genre hoppers Grinny Grandad, and Manchester’s award winning reggae/rock/ska four piece Jeremiah Ferrari. Entry to the evening show, from 8pm, is £10. Co-organiser Adam Lucas said: ‘The response to last year’s festival was fantastic, so we couldn’t resist doing it again. “Whether you’re kicking back with a beer and a burrito enjoying the live music, browsing the independent stalls which offer arts, crafts, cakes and cards and more besides, or braving the rodeo, you’re bound to find something you like. ‘We’re really pleased with our hand picked music line-up as well, with acts we’ve enjoyed seeing at other gigs and festivals. We want everyone to get into the festival spirit, relax and soak up the atmosphere before the party continues into the evening.’
16
Jeramiah Ferrari fuse reggae, rock, ska, punk, and more to create a sound influenced by the likes of Bob Marley and Sublime, yet unique enough to call their own. The band has been touring heavily across the UK, supporting reggae and ska heavyweights The English Beat, The Blockheads and Neville Staple. Their release last year of The Dubby Rock EP received strong radio support across the UK and reached number 4 in the Itunes Reggae Charts. 2014 will see them playing The Willowman Festival with The Wailers and Craig Charles Funk and Soul Show, and we’ve managed to secure them in Halton as well. BBC 6 Music’s Tom Robinson described then as an ‘extraordinary band’, and their single The Good Girl has had over 30,000 hits on Youtube.” Other highlights at the event will be Greenlands Farm, The Apothecary cocktail bar, bouncy castles, site art, a dance display, Go Burrito, and Enjoy A Ball. Mr Lucas added: ‘We very much welcome volunteers who can help set up and break down the festival and help out on the day, so if you can spare a few hours we’d love to hear from you. We also have spaces left for stalls so if you think you can bring something unique to the festival, email us on Hfest@hotmail. co.uk.’ More information about the festival can be found on Facebook. The daytime event runs from 11am until 6.30pm and entry is free of charge. Tickets for the evening show will be available from June from The Greyhound Pub in Halton, the Coffee Shop at the Centre (during opening hours), and Go Burrito in Lower Church Street, Lancaster.

Sweet Eve Strawberry Meringue Roulade with Mascarpone Serves 8 Preparation time: 20 minutes Cooking time: 16 minutes Ingredients: Vegetable oil for brushing the tin Whites of 6 eggs 300g caster sugar 80g flaked almonds 400g mascarpone cream cheese 1tbsp heaped icing sugar 300g Sweet Eve strawberries Method: Preheat the oven to 200째C and place the oven rack quite near the top. Line a standard Swiss roll baking tin, or a shallow baking tray with baking parchment and brush with vegetable oil. In a big, clean bowl, whisk the egg whites till they are quite stiff. Add the caster sugar slowly. Continue whisking until the meringue mixture is stiff and shiny, forming peaks. Spread the meringue mixture in the Swiss roll tin and sprinkle the flaked almonds on top, evenly. Place in the oven and bake the meringue for 8 minutes. After 8 minutes lower the oven temperature to 160째C and bake the meringue until golden brown, which will take approximately another 8 minutes. When the meringue is golden brown, remove from the oven and turn it almond-side down on a big, clean sheet of baking 20
parchment. Peel off the paper from the base and leave the meringue to cool completely. Whisk the mascarpone cream cheese and the icing sugar till stiff. Spread the mascarpone cream and three quarters of the Sweet Eve strawberries, sliced in halves lengthways, evenly over the cold meringue. Use the
sides of the parchment paper to roll the meringue roulade onto a serving tray or platter. Keep the meringue roulade in the fridge until you are ready to serve it. Decorate the top with the remaining Sweet Eve strawberries and serve. www.sweetevestrawberry.co.uk

You can spread strawberry jam (turning it into a jam sponge) or whipped vanilla cream on the base of one sponge cake as a filling, or both. Preparation time: 20 minutes Baking time: 20 minutes ingredients: 175g butter, soft 175g caster sugar 3 fresh eggs 175g self-raising flour 250ml double cream 1 tsp vanilla bean paste, or vanilla extract 1 tbsp icing sugar and extra for sifting 400g Sweet Eve Strawberries 4 tbsp strawberry jam (optional) Method: Pre-heat the oven to 180째C. Butter and line two 18 cm sandwich tins with baking parchment. Beat the butter and the sugar till pale and fluffy. Add the eggs, one at a time, beating well. Fold in the flour, one spoon at a time. Divide the mixture evenly between the tins and level with a knife. Bake in the oven for 20 minutes until the sponge cakes are well risen, golden brown and firm to the touch. Cool the sponge cakes on a wire rack. Hull the strawberries and
slice them in half. Whip the cream till quite stiff, mix in the icing sugar and the vanilla. When the cakes are cool, spread the jam on one of the sponge cakes (if using) and spread half of the whipped cream on top. Place half of the strawberries on top of the cream. Place the other sponge cake on top and spread with the remaining whipped cream. Arrange the remaining strawberries in a spiral round the cake.
Sweet Eve Strawberry, Prosecco, Campari, Elderflower Cocktail Serves 6 people Preparation time: 10 mins ingredients: 300g Sweet Eve strawberries 6 sugar cubes (optional) 3 shots of elderflower cordial 3 shots of Campari 1 bottle of Prosecco
Method: Take 6 large champagne flutes and chill in the refrigerator. Hull all the strawberries and chop and blend half of them. Strain the strawberry puree into a jug through a sieve, to eliminate the seeds. When you are ready to serve the cocktail place a cube of sugar at the bottom of each glass, (if you prefer your cocktails less sweet then you can leave the sugar out). Pour half a shot of elderflower into each glass, followed by half a shot of Campari and half a shot of strained strawberry puree. Open the Prosecco bottle and top each flute with fizzy wine. Mix with a cocktail stirrer and serve with the remaining Sweet Eve strawberries.
