How would you describe yourself ?

I would say I like to keep a positive attitude in life, and am passionate about my work. I also love to socialise and meet new people.

Where is home? work?

Home for me now is Liverpool, but my second home is my clinic in Chester. DD Clinical is set in the heart of Chester and provides advanced non-surgical face, body and skin treatments. I am passionate about making people feel good in their own skin, so love going to work every day. My motto is “confidence is beauty” What did you want to be when you were younger?

When I was younger, I always wanted to be a vet as I adore animals. But then I knew I would cry if I saw an animal hurt, so that was the end of that.

Name a few of your favourite places to be...

I love spending time in Mallorca, we have a place out there on the port, and it’s a beautiful and relaxing place to spend weekends. I also used to live in London, so I love to visit for weekends. There is so much to do in London, and there is a great buzz about the city.

What / who inspires you?

Jane Wurwand, the founder of Dermalogica And Dr Leah Totton, both are passionate about what they do, care about providing the best services and treatments and are incredible business women.

A necklace from my Medical lead Doctor, Simona, accompanied by a handwritten note after DD Clinical launch. It was very touching.

Tell us a secret/fun fact?

I once danced on stage with The Pussycat Dolls not knowing my dress wasn’t quite pulled down as far as it should be to the amusement of a packed MEN arena.

Who or what would you place in room 101?

My partners alarm on his phone. He gets up at 5:30 am every morning but snoozes it every 15 minutes for a good hour before. WHY! What’s been your biggest life lesson?

ention to anyone that you are interviewing Michael Owen and they immediately think of a sparkling career in football and possibly recollection of that goal against Argentina in the 1998 World Cup which brought him to the world’s attention at the tender age of 18. Even this household, unconditionally sky blue, would admit he was one of England’s most gifted players.

Today, however, six years since he retired from the beautiful game I am heading further out into the Cheshire countryside to interview the man in question at his horse racing business, Manor House Stables. As I drive down the impressive entranceway to the property, private racing gallops to the left of me, the scene set in front is of a thriving enterprise and a friendly one. Upon parking up I meet up with our photographer, and we are greeted with affection by the yard dogs, a welcoming firm handshake from trainer Tom Dascombe, a morning black coffee courtesy of Jennie and a lesson in horse racing by two owners who happen to be sharing reception with us just to make sure that we had done our homework.

Set in 170 acres, Manor House Stables was converted from a grain store and cattle barn by Michael and his wife, Louise, before it began life as a training yard with 30 horses in 2007.

Further investment means that today the stables can accommodate up to 90 horses, has an impressive glass fronted owners’ lounge, swimming pool and many more state-of-the-art facilities that makes it top of its game.

The worst thing you can do is interfere with the professionals.

The best thing you can do is employ the best and trust them I know more about his “pretty good career” – his words not mine – but little about his link to horse racing and once settled across the table from him that is the first thing I ask. “I’ve always had links to horse racing really. Since I played at Deeside, I’d be heading home from a Saturday match with dad, and we’d stop off to pop a bet on, and I’d inevitably pop next door to buy something with my pocket money.

“It was the 80s then, so there was very little sport on the telly. Maybe a bit of Ski Sunday but there was horse racing, and I’d be keen to watch how dad’s horses did. So, yes, it’s pretty much always been a part of my life.

“Then, when I played in the England team my interest grew to more than simply popping a bet on. I was chatting to David Platt, who owned horses at the time, and he suggested I look into owning my own horse. And that was that. The bug well and truly bit me. One horse turned

into two and then ten… and so on.

“When it got to 24 horses in training it got a bit expensive, writing big cheques out each month. So, we had the idea of setting up our own business training horses for other owners as well as ourselves. And that was when we bought Manor House Stables.

“I liken it to when you are a young footie fan, and all you want to do is absorb information about your team and key players. You don’t simply want to know which is their favoured foot; you want to know everything about them. It’s not just enough to watch them. That’s how it was, and still is, for me owning horses. I was fortunate to find another passion in my life and have it in the pipeline during my career so that I could pick it up as a business fulltime after football.”

We discuss the management and genuine care of young sportspeople today, with entourages and agents who, quite often, in my humble opinion of minimal knowledge, seem to be out for themselves more than their clients. Indeed, in following his passion for horse racing, Michael touches on this: “At the start of the business, I was running it hand in hand with my career, and I was criticised for it. You can’t win.

If I weren’t doing that, I’d have been criticised for being a dumb footballer!”

And this brings us onto more debate and one of his other business commitments, Michael Owen Management Limited which manages young footballers. Brought to the fore even more so as the day before this interview Michael was working for BT Sport commentating on the Youth FA CUP Final between Man City and Liverpool. “There’s lots of people who will manage your money, but not so many people that really understand what it’s like.” And we settle on agreeing that more should be done and swiftly return to the brief I was given for this interview – horse racing.

I’d be heading home from a Saturday match for Deeside with dad, and we’d stop off to pop a bet on, and I’d watch on the telly to see how they did.

“The May Festival is a sign that summer is here,” he says with a smile and bright eyes. “We will definitely be the most represented stable with 15 horses running. We’ve had some results at the top level too, so we can definitely dine at the top table. We are the local yard for Chester too, so that adds something special. Being a local lad, it’s in our business and hearts.

“What I love most though and is something I hope attracts people to the stables, is the social side. The social scene is a huge part of racehorse ownership, and I love to see our owners having a great time and supporting each other at the courses. I think it is one of communication. Our biggest weakness as an organisation over the past 10 years has been our lack of communication, both internally and with our customers, and the wider world. amie joined Chester Zoo in 2013 and is responsible for business operations at the UKs number one zoo. With turnover at over £42m and 1,000 staff, Jamie leads the team that makes Chester Zoo one of the most visited attractions in the UK.

What led you into your industry?

This is the first role I have had in a zoo, but my career has been generally in retail, food and beverage and commercial management. I guess I enjoy and get a buzz from fast paced commercial management. I was aware of Chester Zoos growth plans and I wanted to be part of a constantly changing organisation.

Who was an early business inspiration for you?

Probably a store manager and mentor I had in my first ever job as a trainee supermarket manager in Cheshire. He ran a very tight ship and had really high standards and was very competitive. His store was “tin and packet perfect”. I liked his style and a lot of it rubbed off on me as my career developed.

What’s the best piece of business advice you’ve ever received?

Reflect on potential decision making before committing to that decision. I’ve always worked in a fast-paced environment and sometimes have been used to making a decision and acting on it very quickly. This is often forced on you but trying to work through the consequences of that decision to everyone involved is often difficult without time. If possible, I will make a decision in my head and mull over it before committing or take advise. The classic example is never sending an email in anger. Write it, leave it overnight and re-read it the next day.

Displaying behaviour which is expected of my role is probably the most significant lesson I’ve learnt. The example I would give is when I managed a large and devastating fire within our Monsoon Forest building in December. I managed a team in our control room, known as gold, at the zoo. The team were responsible for emergency response, crisis management and communications and business continuity. I remained calm, clear and dealt with the strategic issues which then ran into the days after the event. These sets of behaviours hopefully then displayed themselves with the rest of the team and the way we dealt with a major incident.

there have been some hugely pivotal periods, from first opening in 1931, becoming a charity to major new habitats being developed. The scale and size of growth over the last ten years has been hugely influential. The opening of Islands in 2015 led us increasing our visitor number from just over 1 million to nearly 2 million last year. That now means we can plan way out into the future with the knowledge that the organisation is successful and has an amazing reputation and following worldwide.

Which areas of the business will you focus on in 2019?

We have already had a great start to the year and operationally we need to make sure this carries on until Christmas. We are quite weather dependent, but we have campaigns running all year round. Our big focus is over the summer and I would love to tip visitor numbers over 2 million this year.

Grasslands is a scheme which, hopefully start later this year and be in build until 2022. Its hub will be a large open, mixed species savannah and large terraced restaurant. We are also developing plans for overnight accommodation. www.chesterzoo.org

reative Director of Andrew Collinge Hairdressing consisting of eight salons and a training division. Two times British Hairdresser of the year. Together with make-up artist Liz Collinge they have worked as a team at shows around the world, photoshoots and at Royal Weddings.

What led you into your industry?

Both my grandfather and father were hairdressers, so I suppose you could say it was in my blood. My son Charlie is now managing our company, so we are firmly established as a family business.

Next year we will celebrate the 80th anniversary of the first Collinge salon which opened in West Derby, Liverpool in 1940.

My parents set the foundations of the business we are today. In the mid 1950s dad started to build up a team of talented stylists whilst my mother was responsible for the salon designs as the business PEOPLE IN BUSINESS

expanded. However, it was both their belief in the importance of training which led the company to expand into hairdressing training schools and stand-alone graduate salons, which has given the company stability through a source of home grown talent over the years. My sister, Sarah eventually went on the run our training division with myself directing the hairdressing.

What’s the best piece of business advice you’ve ever received?

To protect the brand and never compromise on quality. If it’s a salon design, employ experts and work with the best materials you can afford. It’s the same principle on photoshoots and events. I feel it’s about the quality rather than the quantity of things we do.

What’s the most significant leadership lesson you’ve learnt?

Whether it’s interviewing someone or deciding on a new salon location- go with your first impression and stick with it.

Has there been a truly pivotal moment for your business?

As I mentioned earlier starting a training division gave the company a competitive edge which has stood the test of time.

There was also the moment in 1988 when my wife Liz and I were invited to appear on the new daytime TV show This Morning when it started transmitting from the Albert Dock in Liverpool. The show was an instant success which also gave Liz and I massive exposure as the shows hair and make-up team for the next nine years.

Which areas of your business will you focus on in 2019?

In our business it’s dealing with people that makes the difference between success or failure. We are really nothing without our colleagues and clients, therefore retention is key to everything.

It’s up to ourselves as directors of the company to motivate, inspire and create opportunities.

eet Rachel Jackson who started working as a dental receptionist in 2004, progressed to a qualified dental nurse in 2007, and then developed into a lead dental nurse, practice manager, business manager and now practice owner.

What led you into your industry?

Like many people, I didn’t know what I wanted to do when I left school. I didn’t want to spend time studying for a qualification I may not use, and I was eager to get straight into employment, so I started working as a receptionist in a dental practice aged 17. Early on in my career as a dental nurse, I knew I wanted to progress and take on further responsibilities in a practice. I worked hard to get recognition, always going above and beyond my duties. I approached the owner of the practice I was working in for a promotion, and he declined, stating I was too young. So I moved practice. From then on, unless there was consistent opportunity to develop and progress, I’d move practice and keep learning.

Who was an early business inspiration for you?

My first boss! He had created a squat practice from a corner shop (this means an empty building with no patient list) and grew it quickly, establishing his reputation with delighted patients. I loved the feeling of making people happy – you sleep better at night knowing you’ve changed someone’s life that day either by creating a new smile, helping them overcome a PEOPLE IN BUSINESS

Lead by example. Never be too proud to do anything yourself. I am fortunate that I have done every job I employ people to do and every day I get stuck in wherever required. All of them are special in their own ways, but I’ve learnt more than anything that every day is so different, and you can never predict what’s around the corner. I try to keep mindful that today is the pivotal day because it directly impacts tomorrow, as well keeping the realities of how tough running a business are in sharp focus.

Which areas of your business will you focus on in 2019?

We want to expand the practice with more surgeries, but we won’t rush this.

Yes, when a client I had never met face-toface chose me to do their kitchen in Barbados. It was on the Green Monkey Golf Course in a stunning property and they wanted us because of our reputation. I know that I have been designing kitchens for thirty nine years, but it took a stranger having complete trust without us meeting to make me realise that all my hard work had paid off. The icing on the cake was that after the project was complete, they paid for my husband and me to stay at Sandy Lane in a beautiful suite and met us for dinner. I felt like the celebrity!

Which areas of your business will you focus on in 2019?

This year we are moving to bigger premises, so all the focus in the second half of the year will be on the design and fit out of the interior, the builders are well on with the exterior, roof and windows. This investment into our own, larger property will allow us to increase our team of designers. Peter Burling, Director of Brazen PR once told me “be careful what bridges you burn as you never know when you might need to cross it again”. At the time I was in my 20s and didn’t really listen, now I think it’s a great mantra.

What’s the secret of great leadership?

When someone finds out can they let me know? I think it changes over time managing millennials is totally different - I have staff from 16 to 60, so I guess what I find works is managing them all differently.

Has there been a truly pivotal moment for your business?

I got involved with a design agency that had three staff when I started. By the time I left, we had offices in the UK and USA and more staff than I can remember.

After doing it for ten years, I became very

The Lettings side of the business was really taking off and needed someone to manage and grow it. Once I joined the company I never looked back and thoroughly enjoy working in the property industry.

What led you into your industry?

I was brought up in the Entertainment Industry, so I was always around charities, and I supported quite a few through my own Promotions company at the time. I have always been passionate about children, and I believe every child should have a happy childhood whatever their circumstances or disabilities.

Who was an early inspiration for you?

Within the Third Sector that would be Marsha Rae Ratcliff OBE who became the first female Chief Barker of Variety.

Marsha created the Variety Gold Heart Appeal in 1990 that raised over £20 million in the UK, and over $200 million worldwide. I have met Marsha, and she is the most elegant, wonderful lady.

What’s the best piece of business advice you’ve ever received?

it’s about listening, inspiring, trusting delegating, recognising the talent in others and nurturing that talent, and most importantly leading by example.

Never to put all your eggs in one basket, and if it doesn’t feel right then, it’s not right.

When Gucci announced it would be

Craig Hough speaks to Tony B Armstrong about the opening of the new Phillip Armstrong showroom in Knutsford

Congratulations on the opening, what made you choose Knutsford for your flagship store?

We had been looking for a base in Cheshire for some time as we have done quite a lot of business in the area over the years. When we came across the shop in the area, it just felt right. Knutsford is a shopping hub with a community spirit, central enough for customers from the Midlands and all over the North West to visit. There are excellent parking facilities, so clients can either make a quick visit or spend a leisurely afternoon in the shop and lunch in the local area etc.

Can you talk me through the type of customer your brand attracts?

Our brand attracts a very diverse range of customers; young fashionistas looking for a piece to party in, professional ladies who need “go to” pieces that can be multi-functional, wedding guests looking for that perfect dress and ladies looking for an outfit for the races.

We also have clients looking for bespoke pieces,

which is a service we have offered for many years. What we love most is being able to dress mums and daughters shopping together, helping them both find pieces, and seeing them leave our store with a smile on their faces.

You have had some high-profile clients throughout your career, who have been your favourite to work with?

It was a thrill to see Lady Gaga in a dress of ours- as a true fashion maverick, it was exciting to see how the overall look was put together.

We’ve both always been major J-Lo fans, so to see her in one of our signature skater dresses was such a buzz.

Could you talk me through the process of how a collection is put together? Do you design with a clear narrative or woman in mind or is it purely about the clothes?

A collection usually starts days after the previous one has been released. Sketches and inspiration will be pinned to our mood boards, followed by colour stories and fabric sourcing.

This spring we were inspired by female fashion icons of the late ’60s and ’70s (such as Marianne Faithfull, Jean Shrimpton, Catherine Deneuve and Faye Dunaway). We used their spirit and sense of style to create looks that women need today. It would be impossible not to have certain clients in mind when working on a new collection, so it can also simply be about beautiful clothes and creating looks that we know will work for our customer base.

Following this stage, the samples are produced, and over the next few months, the collection comes together. The pressure builds before the collection is shot and it’s at this time when the creative juice goes into overdrive, and last-minute items can be added. A case in point being the “Tilda” dress from last winter, this was a little black dress with a sequin bib front and tiny crystal buttons. It was a late addition to the collection and by far the best seller.

How do you continuously come up with new and original ideas and keep yourselves motivated to design new collections?

Philip and I carry little sketchbooks around with us, filled with notes and tiny drawings. We are always thinking of ideas and new techniques, trying to push ourselves further each season. Ideas can come from travel, vintage textiles, art, fashion books and galleries; in particular, New York’s MOMA, where we have spent hours admiring a particular Picasso that resides there. When you have a creative spirit, an idea can spring from anywhere.

What is your favourite, stand out piece from the SS19 collection?

It would be impossible to pick one favourite piece from the spring collection; it’s like picking a favourite child! The Solange zebra print playsuit is a really great piece. It could be worn with smart sneakers on holiday or with killer heels and statement earrings for a party. At the other end of the scale, the Safine dress in sunray pleated yellow georgette is another favourite, perfect for summer weddings or a ball.

What feedback have you had so far from customers regarding the SS19 collection?

The collection is proving very popular which is always a great feeling after working on it for so long. What’s particularly exciting is that we have never used prints before and they are doing very well for us. Our separates (blouses, shirts and trousers) are a great hit too. DEEP RELAXATION MJ Greenhalgh takes a visit to the depths of the stunning underground Titanic Spa

T

ranquil yet atmospheric the Maya Blue Wellness Spa can be found in the Titanic Hotel which is situated in what was the industrial Stanley Dock just a five-minute drive from Albert Dock and the city centre of Liverpool.

Located down in the depths of the Titanic Hotel basement any tension ebbs away as soon as you walk into the calm serenity of the reception area, and by the time you’re kitted out in the spa’s sumptuous gowns and slippers any thoughts of the real world float away.

The Spa is instantly calming. They have kept the original features which include stone flags, exposed brickwork and arch support along with the original vaulted arches. The dimly atmospheric lighting allows you to feel incognito and removes any sense of self-consciousness.

The staff gave us a lovely welcome which was very friendly, yet professional and informative. From that moment on you are expertly looked after, with top therapists 58

on-hand offering a wide range of treatments, luxurious facilities and the sense of being utterly pampered.

The centre point of the room is the very modern, very warm hydro pool.

There are water jets and bubbles aplenty, and we were lucky enough to visit on a day where we could almost have had the whole pool to ourselves.

For those who do like to add a bit of exercise into their routine, there’s also a well-equipped gym, which despite our best intentions we didn’t get around to sampling!! If I’m being honest the most energetic we got was lifting our feet in and out of the gorgeous foot spa; I fully recommend arriving for a dip in the pool against one of the plunge jets which are highly massaging; indulge in the

steam rooms and sauna and have a foot spa before your treatments. Once I had got used to the cold jets they are strangely relaxing and have amazing health benefits apparently to stimulate your circulation and my feet were still tingling from the experience that evening.

Everything is designed so you can enjoy the experience with a friend or partner or perfect on your own. The reclining ergo rattan beds are also a heavenly way to take some time-out.

The changing rooms were lovely and bright and non-institutional and the clever locker locking system easy and straightforward even for the most forgetful of guests!

We both chose the ESPA Express Facial and the ESPA Back, Neck and Shoulder Massage and were enjoying lounging by the pool when our therapists came to find us You are given the choice between different essential oils and each treatment is tailored and bespoke - without realizing we both happened to choose oils that were designed to rejuvenate and refresh.

The facial started with a lovely gentle cleansing process followed by an ultraviolet light machine being used which showed your levels of hydration within your skin. If desired, the use of a mirror can allow for some self-analysis. It was interesting to note areas that are dry, such as the bridge of the nose and the central point of the forehead and under the eyes - must apply more care when putting on moisturizer!

The back and shoulder massage was the perfect length of time - relaxing but pummelling and mildly intrusive but in a good way that worked out those knots of stress.

The treatments rooms were spacious and well thought out and the sound of running water and music was soporific, soothing and easy on the ear.

When I had “resurfaced” I was bought a delicious herbal tea to finish off and left for a good ten minutes to fully awaken.

So to sum up, even if you have just 1 hour to escape during your lunch for treatment or want to unwind after work – Maya Blue Wellness at the Titanic Hotel is definitely worth a visit.

As a training surgeon and experienced facial aesthetician, who has enjoyed using REVOLAX dermal fillers for about two years, I was absolutely delighted when I was asked to work with them in promoting a product that I passionately believe in.

For those that don’t know, how would you explain REVOLAX Dermal Filler?

REVOLAX is a hyaluronic acid dermal filler. It’s essentially a gel that is composed of strands of hyaluronic acid that are naturally found in our skin and help to keep it refreshed and young looking, allowing us to restore lost volume to the face or add definition to achieve more aesthetically pleasing results.

REVOLAX is a product that was released to great success in South Korea about 8 years ago. The South Korean aesthetics industry is widely regarded as one of the most respected and pioneering sectors and therefore when REVOLAX became established as one of the leading brands, people around the world sat up and took notice.

Fox Group brought REVOLAX to the UK market three years ago and since then

has taken the industry by storm, replacing well established but relatively out of date filler products as being one of the UK’s leading brands.

How are they different to other fillers?

The unique way in which REVOLAX is produced allows it to stand apart from competitor products. As well as containing a high purity of hyaluronic acid, these molecules are cross-linked in a very specific way that enables the product to be malleable, integrate naturally with the tissues and also be long lasting.

Additionally, once injected into the tissues, REVOLAX is able to maintain the natural-looking lift that we want compared to other products which will lose this lift as the product migrates, leading to disappointed clients. It’s this fantastic combination of qualities as well as affordability which set REVOLAX apart and explain why it’s become so popular.

REVOLAX have three different products within the range; Fine, Deep and Sub-Q, what do each offer?

Each of the three products are designed to have different consistencies which make them perfectly suited for treating different areas of the face and achieving specific results.

REVOLAX Sub-Q is the thickest of the range and is used when we want to add volume and hold, particularly in areas such as the cheeks, jawline, chin, nose and temples.

REVOLAX Deep is a medium consistency product which balances volumising and flexibility, therefore it’s ideal for treating areas such as the lips and lines in the peri-oral region.

REVOLAX Fine is the lightest of the products and is designed to be used in

very delicate areas such as when treating the tear trough (under eye area) or when achieving a very natural lip augmentation in an older client.

When undertaking full face treatments on my clients, it’s using a combination Sub-Q, Deep and Fine which enables me to create a rejuvenated, harmonised and natural looking result that they desire.

What would you say are the benefits of REVOLAX Dermal Fillers?

From an aesthetician’s perspective, REVOLAX is a really high-quality product, behaves exactly how I want it to when injected underneath the surface of the skin and importantly is extremely safe for my clients.

• Keep your dog’s undercoat in check. The warmer temps increase shedding and a loose undercoat is a trap for bacteria and can contribute to overheating.

• Keep your dog’s coat tangle free! Tangles can easily turn into matting, which can cause skin irritation, restrict body movement and is uncomfortable to undo.

• Groom regularly (two to three times a week) as this will not only keep their fur tip top but help spot any hidden problems brought on by the summer season such as grass seeds, ticks and fleas.

• Pay attention to paws. Check in between their toes for ticks, grass or anything else unsavoury they may have picked up. With all the extra summer walks, be sure to keep their nails trimmed and maintained too, to avoid catching and painful tears.

• Keep ears tangle free and clean to prevent infection and expensive trips to the vets.

Whether it’s dangling in their food or water, or from mouthing play with other dogs – ear fur can easily get tangled. Check the ear canal too and if yours’ is an avid swimmer pay extra attention, as those with fold over ears can be prone to infection. seasonal modern British dishes

S

et in the Cheshire countryside, we visited The Yew Tree on a sunny Friday afternoon, not quite brave enough to embrace some outdoor dining but promising to return when it was that fraction warmer. Others were braver, donning their cardigans and sunglasses with friends of the two- and four-legged variety.

We headed indoors and took up a corner in one of the 19th century freehouse’s many rooms. I, of course, was distracted by the interior design and paintings, my other half the array of local ales and beer on tap.

The venue has been taken over by the Chester Race Company since we last visited and it offers a light, contemporary feel and a new spring menu from head chef Ben Ackland, who counts The Ivy and Soho House as credits on his CV. The small plates looked great as did the Bunbury burger, complete with smoky maple bacon and onion rings but that would have sent us into a post-food siesta, and we had jobs to do in the afternoon.

Hence we settled on the Ham Hock Hash with crispy hen’s egg and piccalilli and Cheshire Cat Steamed Menai Mussels with smoked bacon, shallots and cream followed

by Herb Crusted Cod Loin with pancetta, sprouting broccoli and sauté potatoes and Cheshire Pork & Leek Sausage Ring with cheesy mash and caramelised onion gravy.

The ham hock was devoured with gusto crowned by the perfect runny egg. Good chunks of ham were mixed potato and cooked with some caramelisation for a lovely flavour against the sharp chunkiness of the piccalilli. The local Menai mussels didn’t disappoint either, the best bit always the dunking of some crusty white bread

wedges in the left-over cream sauce.

Perfectly flaky the cod was a great dish to eat one handed as our youngest family member decided to disturb the peace and demand cuddles. The meaty cod worked well with the vegetables and lemon and parsley dressing. The sausage ring, while possibly not the most well-presented dish (although I couldn’t give you a better way to present a sausage ring), was rich in flavour and indulgent with the cheesy mash and buttered kale – a heartier option, good for a post-countryside walk perhaps.

I’m afraid our not-so-light lunch ended at these two courses on this occasion as we eyed up other diner’s choices and gazed out into the sunshine. The obligatory Cheshire Farm Ice Cream is on the menu, and my favourite Honeycomb was on there, alongside Sticky Toffee Pudding and Rhubarb Crumble with Proper Custard.

Our final word: The Yew Tree has kept its charm and offers a contemporary dining experience to suit all tastes and appetites.

We look forward to returning and enjoying some sharing plates and the sunshine on the patio next time.

A Celebration

of Beef

A dish of braised ox cheek, ox tail bone marrow, char-grilled fillet, carrot puree, rainbow carrots, confit smoked garlic, nutmeg, spinach & braising liquor reduction.

METHOD Bone marrow can be sourced from your local butcher - steam & scrape out the flesh. Chef uses a great local Cheshire butcher.

INGREDIENTS 300g per person - ox cheek 200g carrots 175g per person - fillet steak 3 white onion 1 banana shallot 10g thyme 300g ox tail 300g bone marrow - including the bones itself 1 garlic bulb 200ml vegetable stock 100ml cream 300ml red wine 300ml beef stock

Braise the ox tail and ox cheeks for 6 hours in beef stock and vegetables of choice, Chef tends to use, carrots, onions, leaks, garlic & thyme, then pick off the meat and mix with bone marrow.

For the fillet, simple pan fry until all sides are golden over 180 degrees for 6 minutes and leave to rest for 5-6 minutes then slice. This is for a medium-rare cook. It is suggested to cook for 2 minutes longer for a medium cook.

To make the carrot puree slice 100g of carrots, 1 garlic clove and half a white onion, add to a pan, sweat off then cover with the vegetable stock and add a dash of cream.

Leave to simmer for 30 minutes on stove then when all the vegetables are soft blitz in a blender adding salt and pepper to taste

Serves: 2 people For the confit garlic add a whole garlic bulb to a pan covered in vegetable oil on a low heat for 30 minutes, keeping an eye on them. Take out of the oil and leave to cool.

Once cooled pop the garlic cloves out.

For the red wine jus take shallot, garlic, bay leaves, sweat off and add the red wine and reduce to a syrup by boiling until nice and thick, then add the braising liquor from the ox tail and the ox cheeks and reduce right down to the right consistency of your preference, Chef likes a thick constancy for a nice covering of gravy. eep in Wainwright country the Lodore Falls Hotel and Spa nestles in the mountains of the upper Lake District with Lake Derwentwater spread before it. The lake mirrors the view, expanding the horizon and giving a wonderful depth. The epic mountain views and stunning light changes at Lodore Falls are there to enjoy all year round.

The Lodore Falls Hotel dates from the 1870’s and is a Victorian period building which was built to be a hotel at that time. It is mounted in front of the Lodore Falls, hiding a secret waterfall worthy of exploring between the hotel and the mountain. I stayed at Lodore Falls Hotel with my parents many years ago, throughout my teens and into my 20’s and we even celebrated one of our last family parties before my dad passed a little time later. Going back was not only nostalgic but quite emotional for me.

Opposite the hotel, across the lake, is the popular tourist town of Keswick. Cobbled streets are lined with beautiful cake shops, tea rooms, traditional fish and chip shops, pub dining, and varied independent retailers. The town offers plenty of parking, lots of dog friendly pubs and is easy to walk around, accessible for all. The Victorian park in Keswick is the terminus for the Derwentwater Launch, a water taxi with various stops around the Lake including one at the Lodore Falls.

I drove down the east side of the lake to get to the Lodore Falls Hotel from Keswick. Rolling around the final corner of Derwentwater, I was greeted by the familiar and beautiful period building that I fondly remembered. A feeling of familiarity and yesteryear came over me. I then saw a striking building adjoining the hotel and

Thoughtfully designed by the architect and built entirely from slate, fronted with wooden beam features, the new build not only complimented but blended beautifully with the original hotel and its surroundings.

Steam could be seen rising from the front of the spa and lots of it! This was, of course, the Outdoor Hydro Zone which I will tell you more about shortly.

The Manager gave me an interesting tour of the Hotel, the new Mizu Pan Asian Restaurant and the adjacent spa. The plan was to lunch at the Mizu Pan Asian, experience the spa in the afternoon, followed by dinner later in the evening at the Lake View Restaurant, which was also where I had my breakfast the next day.

Delighted with the schedule which the hotel had put together I started with lunch.

I believe the Mizu Pan Asian restaurant is unique to the Lake District.

In my view this restaurant, along with the spa has set the Lodore Falls Hotel apart from any other hotel in the Lakes.

The styling of the restaurant is contemporary. Calm space, combining neutral grey tones and green accents, with lots of window views. The food is fresh and so, so tasty. I genuinely struggled to choose, not that there was too much on the menu but the smells coming from the kitchen, where you could see chef at work, were wonderful.

I always think visual impact sets a scene and the spa has certainly does that. Beautifully designed and executed they have accomplished a super plush spa that oozes luxury, from the Thermal Suite to the Outdoor Hydro Zone.

In real terms this means in the suite you can experience, laconium, aroma steam room, herbal sauna, salt steam room, ice fountain, drench showers and heated relaxation

loungers. The outdoor hydro pool, is super warm, which in the colder weather was just amazing. The pool deck jet features were delightful and offered the opportunity to drink Champagne in the pool whilst looking at the sun setting on Derwentwater and over Catbells Mountain.

Did I also mention, this is a no kids’ spa? Now I have children (and I thought long and hard about this) I’ve concluded this is a great feature.

I truly love my kids but being in a completely grown up zone meant I could actually stop, look, take in the breath-taking views and truly relax. Making me a better Mummy when I got home.

Exploring the spa, you will find the Champagne and deli bar, offering refreshments and treatments rooms. I had a luscious Elemis massage which completed my spa experience and gave me a placid persona for the rest of the evening. Post treatment, in the relaxation room, they brought cake, just enough sugar to perk you up again. Great touch.

There is a well-equipped fitness gym and had my visit been longer I would have made good use of it. I was far too enthralled with the thermal suite to even consider it.

Contrasting with Mizu Pan Asian Restaurant is the traditional classic Lake View Restaurant, where I experienced a five-course dinner. I sampled sublime amuse bouche and bijou dishes, that were divine to taste and slowly filled you up. We finished the evening with cheese and grapes, which I never do but felt that, whilst in the Rome of the Lakes, I must. This was a really lovely evening experience after what was already been a truly fantastic day.

Having slept like a baby I had breakfast in the Lake View Restaurant. This time it was morning light and I could see across the water as I contemplated my next trip back to this tranquil hotel and spa. www.lakedistricthotels.net/lodorefalls

STYLE AND SUBSTANCE The sportiest of the big SUVs hunkers down with svelte new Coupe model.

P

orsche’s Cayenne 4x4 has long been the yardstick by which all other large, sporty SUVs are measured - and pretty much all of them come up short. But while it may be the king of the handling hill, it hasn’t always wowed customers on the styling front. Now, though, the German company has created a sleeker Coupe version for the fashion conscious consumer who wants to mix an SUV’s capability and image with the looks and driving dynamics of a saloon car.

To that end, Porsche has lowered the Cayenne’s roofline in creating the Coupe model, making it 20mm lower than the conventional SUV. The rear haunches have also been

widened slightly, to give the car a more muscular stance, and you can even choose from a range of sports packages designed to make the car lighter with carbon-fibre parts and lightweight alloy wheels.

When the Cayenne Coupe launches at the end of this month, you’ll also get a choice of two turbocharged petrol engines. The ‘basic’ 3.0-litre V6 will offer 335bhp, while the more potent 4.0-litre V8-powered ‘Turbo’ will serve up a stonking 542bhp. Prices start at £62,129 for the V6, rising to £104,729 for the Turbo.

SAVING THE PLANET, ONE V8 AT A TIME It comes to something when a 4.0-litre, twin-turbocharged V8 engine is considered small and economical, but then that’s the high-powered, high-luxury world of Bentley for you. The Cheshire-based manufacturer used to sell its mile-munching Continental GT solely with a 6.0-litre W12, but the company will add a lighter, more efficient V8 engine to the line-up at the start of next year. With 542bhp, the new engine will still have plenty of power, but Bentley says it’ll make the huge Continental more agile and responsive, as well as kinder to the environment.

TOP GUN If you want to fly yourself and a couple of friends high above Europe in the comfort of your own aerial Rolls-Royce, then Daher’s TBM range should be one of your first ports of call. But even so, the company is trying to strengthen its credentials with its new TBM 940 executive turboprop.

QUESTION James Fossdyke finds out whether bigger really is better in the world of luxury 4x4s...

S

ize, we’re constantly being told, does not matter. Whether you’re tall or short, fat or thin, light or heavy - they’re all totally irrelevant. But the car industry seems to disagree. Everywhere you look, cars are getting bigger and bulkier and more heavily laden. Of course, that’s partly down to safety regulations and the fact customers demand goodies such as air conditioning and electric seats, but it’s mainly because bigger is simply seen as a byword for better.

A case in point is the new BMW X7. The smaller X5 was already a huge, luxurious machine, but BMW and its customers wanted more. And so the X7 was born. Under the skin, it’s based on the same basic architecture that underpins the 7 Series limousine, but it’s been heavily modified to create what BMW rather self-deprecatingly calls the first SUV in its luxury car division. Apparently, the impressively well-appointed X5 just isn’t posh enough to qualify. And considering that car’s £50,000 price tag, powerful engines and mountains of on-board equipment, that says quite a lot about the X7.

But the thing that says most about the newcomer is its sheer presence. This 2.5-tonne 4x4 measures more than 5.1 metres in length, as well as more than two metres across. And at about 1.8 metres in height, it’s taller than most fully grown men. Add in the car’s bluff front end, enormous double radiator grille and square stance, and you’ve got something really

menacing. Paint it black and it would slot straight into any self-respecting Bond villain’s convoy.

Around town, then, it’s the sort of car that people shy away from, but in the countryside it’s just unwieldy. Narrow bridges and oncoming traffic combine to produce backside-puckering results, and the huge length means tight corners require quite a bit of forward planning.

The trade-off for all that, though, is interior space. The X7 comes with seven seats as standard, and they are genuinely big enough for grown-ups. Even on a medium-length sort of journey - say an hour or so - a six-footer won’t grumble too much. There’s more than enough headroom and legroom is tolerable, if not excessive.

Of course, with those seats erected, the boot space does suffer somewhat, but it’s still capable of swallowing a couple of small holdalls or aeroplane hand luggage. Fold those two rear seats down (using the electric folding mechanism, obviously) and you’ll free up a far more usable 750 litres.

many seats you’re using, nobody will want for luxury. There cabin is awash with USB ports for iPads and phones, and you can opt for a climate control system that allows for up to five different temperature settings around the car. You can have travel cushion-style headrests, too, while some seats get the option of heating and ventilation. Push the boat out and you can swap the central row of three seats with two ‘captainstyle’ chairs with full electric adjustment, giving you the proper business jet experience.

The driver, however, gets more toys than anyone else. There are digital dials instead of conventional instruments, as well as a central touchscreen and a head-up display projected on to the windscreen. There’s even clever driver assistance tech that takes some of the strain away by combining the adaptive cruise control, which maintains a safe distance to the car in front, and lane-keeping assistance to keep you in the lane.

You need to keep your hands on the wheel and look after complicated stuff like lane changes and junctions, but on the motorway, the car will almost drive itself.

Even so, BMW claims to be all about the “joy of driving”, and the X7 maintains some of the

characteristics that make the smaller, sportier models so rewarding. The steering is brilliantly precise and perfectly weighted, so the car flows through bends despite its weight and bulk.

That’s not to say the car hides its size - it still feels huge - but it manages its bulk well. More important, though, is the ride. It isn’t up there with Rolls-Royce levels of silkiness, but nor does it jar over bumps. And the enormous body is well controlled, too, so there won’t be any concerns about body roll-induced motion sickness threatening to spoil the leather.

The best bit, mind you, is found under the bonnet. Just three engines are available, with most models getting the choice of two 3.0-litre units. The basic option is the ‘30d’ diesel with 262bhp, but customers can have a ‘40i’ petrol version that produces 335bhp. Given the diesel’s superior economy, it’s probably the sensible choice of the two, although the 40i’s purring exhaust note is an appealing counter-argument.

Even more appealing, however, is the M50d model. It uses the same 3.0-litre diesel engine as the 30d, but it’s tuned to produce a massive 395bhp. It’s by far the best engine, with effortless performance and decent economy. It even makes a surprisingly nice noise for a diesel.

Looking at that engine range, it might be easy to think the X7 is a performance 4x4, but don’t be fooled. It’s an unapologetically enormous luxury bus. If you want sporty, buy an X5. If it’s space and luxury you want from an SUV, then this is the BMW for you.

How would you describe your design style?

My working style is versatile, every client has different requirements and I love the part where we create together. My personal style I would say is an ‘alternative hygge’, comfortable and calm with a bit of an edge.

I love mixing natural textures and materials in a fairly neutral palette for a calm space with the edge being a controversial quote in neon or oversized art piece. This mostly reflects my personality.

What is the easiest way to transform a space?

Art. Art is such a fabulous thing. It can make a statement or make a subtle change by colour or size. There are so many different varieties, contemporary/ sculptural you really can go to town. What I love about art is you can show your personality through it transforming any space in to a bit of you. Easy peasy.

What inspired you to create your design business?

I love atmosphere, whether it be an intimate dinner or wild club night.

Being able to design spaces to create different atmospheres for peoples enjoyment is such a privilege. Also having a job with so much variety is great. No project is the same, I am constantly learning and doing something different which is brilliant for a creative soul such as myself.

What do you see as being the design trends this year?

Grey is going out. I see warmer and more natural tones appearing with masses of texture and metallic hints for that bit of

luxury. And plants aren’t going away so feel free to fill every nook and cranny with them. They are great for wellbeing as well as improving air quality. Love it!

quite managed to do in the week with a strong coffee followed by a good yoga session. On a good weekend I will be with friends drinking a mezcal on the rocks putting the world to rights.

What’s your favourite colour and why?

White...why? Ibiza. My favourite place in the world. Often our favourite colours are dictated by experiences or places. Nothing beats lounging in a beach club with a backdrop of white decor. Complete chill.

What’s your favourite architectural style?

If I had to chose one it would be Gothic. I am a secret cathedral hunter! I can’t explain the feeling I had the first time I walked in to the Notre Dame de Paris, it took my breathe away. How can you not admire the time invested in building these masterpieces, sometimes hundreds of years? Especially when we currently live in a world where we are so eager to build fast and cheap, often compromising on quality and appearance.

Can you describe your average weekend?

My average weekend will normally consist of catching up with work that I haven’t

If you had just one item in your design toolbox, what would it be?

My computer mouse. Sounds practical but this little thing allows me to work at super speed! I couldn’t live without it, especially when you have a deadline.

If you could banish something from the world of design, what would it be?

Design is so subjective so I wouldn’t banish anything. Can we banish this question?!

An Interior Design Turnkey SOLUTION Award-winning interior design practice, Design by UBER, revelled in the creative challenge of completely transforming this property into the very epitome of stylish family living.

D

esign by UBER are renowned for creating stunning homes which they deliver with creative flair, panache and infinite attention to detail. With this enviable reputation preceding them, they were commissioned to undertake a full renovation and refurbishment of a Georgian style property.

While elegant in style the house was somewhat dated and required a complete overhaul to transform it into a home suited to contemporary family living.

The brief was relatively minimal and simply required the design to allow for a contemporary and informal lifestyle, suited to the needs of a couple and their young children. The Design by UBER team felt that a scheme in a classic contemporary style would complement the aesthetics of the property. While allowing for a subtle sub-text

of underlying elegance, it would also deliver the functional practicality of informal living.

Both the interior and exterior of the property needed extensive modernisation and attention was initially focused on the façade of the house. By replacing the existing mock period windows with contemporary sash windows in anthracite grey, a sleek and contemporary look was delivered, having an immediate effect on the property’s kerb appeal.

Within the property, very little adaptation to the flow through the space was required, however, at the rear of the house, Design by UBER altered a rather dark kitchen extension by replacing the existing patio doors with contemporary bi-folding doors.

This utterly transformed the room, flooding it with natural light and creating a seamless indoor-outdoor area. The newly configured

room allowed for a sociable open plan kitchen, informal dining as well as a family room area. Situated at the back of the property, with views over the garden and adjacent countryside, it is a space that has been designed to be the heart and soul of the home. Originally the kitchen units were secreted away in one corner of the room, the new design integrated the kitchen into the wider space, ensuring that it works as both a functional and sociable area.

The statement cabinetry is in a classic contemporary design with shaker style doors and, in keeping with the family’s desire for informality, it incorporates a feature island and attractively curved booth seating which is perfect for family dining. The island is finished in a rich shade of dark grey which is offset to perfection by the rest of the cabinetry in off white. Industrial style pendant lighting strategically positioned above the island, dining area and within the family room adds a contemporary touch, while comfortable curved armchairs in the family area subtly reference the round table in the dining space. The Design by UBER team dressed the space with accessories in accents of ocre to bring fresh vibrancy to the scheme.

The hallway is always an essential part of any home refurbishment as it offers a first and enduring impression. In this case, the entrance hall sits in a central position on the

ground floor and has been remodelled to create a statement entrance, perfectly in keeping with such an elegant house. The main focal point is a magnificent feature chandelier consisting of a glass globe surrounded by threaded glass which is styled to create the illusion of spun silk.

Another area of particular note is the lounge, which the team designed as a rich and classically luxurious space while also taking care to retain a feeling of comfortable informality. The focal point of the room is a feature low-level box fire which sits on a marble plinth. Soothing neutral tones form the basis of the scheme, with a faux silk carpet and mottled satin curtains both in silvery tones, while depth and sophistication have been added with accents of navy blue which feature throughout the soft furnishings. The space has been dressed with accessories designed to lift and soften it, making it appear instantly “lived in”. Upon the walls are pieces of abstract art which have been thoughtfully selected to complement the pre-existing artwork.

The aim of this design scheme was to create the perfect family home and, as such, the children’s spaces within the house are especially noteworthy. Their playroom, on the ground floor of the house, offers a colourful sensory experience designed to encourage learning through creative play.

The space houses an eclectic mix of colours with doors to the cabinetry painted in a variety of colours which are complemented by feature multi-coloured lighting. The children’s bedrooms on the upper floors are all conceived with very clear identities which, while reflective of each child’s personality

and age, are also designed with longevity in mind. The vision was to design rooms which had the scope to be able to mature alongside the children. So while a bedroom in pink and white tones, bedecked with a healthy dose of sparkles and a feature corona over the bed is surely every little girl’s dream, it has been designed so that the accessories and colour tones can easily and inexpensively be updated over time yet the bespoke cabinetry and window treatments will stand the test of time. Focusing on more primary colours for the little boy’s bedroom, this was designed in bold white, red and blue.

Reflective of the fact that he is slightly older, the room is adorned with wire-framed lamps, bean bags and features a dedicated lego station! A further bedroom has been designed for a teenager and is styled with distressed wood and metal finishes, offering a contemporary, industrial feel. A Velux Cabrio balcony system has been fitted in this room to make maximum use of the balcony space and allow natural light to flood into the room.

The master suite is always a central part of any interior design scheme, and the team at Design by UBER aimed to create a suite in this home which would offer a haven of serenity. They have designed the bedroom in calming neutral tones of silvery grey while a bespoke upholstered headboard in silver velvet has been placed in such a position as to draw the eye without overpowering the space.

There is a sense that every element in the room works in harmony to create an experience of overwhelming tranquillity.

Scatter cushions and occasional chairs in shades of mauve add a delicacy to the look.

Beyond the dressing room, which is styled with simple and elegant shaker style cabinetry, the en suite bathroom features a

steam shower, free-standing bath and double vanity.

On the second floor, secluded from the rest of the house sits a home office which has been designed with an exquisitely feminine touch.

Design by UBER chose wood finishes, and muted tones of pale grey to set the tone, while accents of blush have been used to add a lightness of touch to the space. Desiring an uncluttered look, the team opted for a contemporary desk in a praline grey finish featuring simple, classic lines which sit in pride of place while occasional tables with marble tops add a touch of finesse to the room.

A project such as this represents a significant responsibility to create a home that fulfils and exceeds a clients’ vision. By delivering a sympathetic design scheme underpinned by a contemporary and neutral colour palette, Design by UBER created a home to be lived in. Consideration was given to every last detail, from the furniture selection - carefully curated from both well-known and boutique niche brands to the specially commissioned bespoke feature pieces to the soft furnishings and accessories all of which serve to perfectly complement both the property and the lifestyle of the family who lives there.
