How would you describe yourself ? I’d say I am a very driven, passionate person and a perfectionist, most definitely. My friends and family would probably describe me as thoughtful, bubbly, spontaneous and a little bit of a ‘Frank Spencer’ from time to time haha! Where is home and work? I’m originally from Stone, Staffordshire but moved to Manchester five years ago! Immediately, I felt settled here, Manchester has always has felt like home to me. I came here to build a life for myself, I had no family or close friends here at the time of my move so it was quite daunting - but I knew if I wanted a career, I needed to be in a thriving city. What did you want to be when you were younger? Well, when I was really little after travelling to Florida, Disney and having the amazing opportunity to swim with dolphins, I wanted to be a dolphin trainer! Mainly, because I thought I could just swim and dance with them all day. Once I discovered you need a marine biology degree - I realised maybe it wouldn’t be so easy! Name a few of your favourite places to be... The beach with a cocktail in hand and a good book - I’m a sun baby. I really enjoy travelling. I love discovering and exploring new places, especially destinations with rich heritage and culture, and exotic places with lots of physical outdoor adventuring, climbing, kayaking - I love challenges! And of course, the sofa (sad but true) I love being snuggled up with a good film, snacks and family! What / who inspires you? I have so many influential people in my life, of course, my mum being one but a lady who has always

inspired me is my Gran. My Gran has a condition called fibromyalgia, it is a chronic widespread pain which effects every muscle in her body, but if you met her, you would never know - she is such a positive person. My Gran always has a smile, she taught me that laughter really is life’s medicine. What was the last gift you gave someone? VIP tickets to watch Hans Zimmer live in Brussels, Belgium. My partner’s favourite film is Interstellar which Hans Zimmer produced the soundtrack to, so I surprised him.

“I love discovering and exploring new places, especially destinations with rich heritage and culture” Tell us a fun fact? I used to be a gymnast and competed in national competitions. I still can’t help but flip around in empty spaces, so I am currently learning the trapeze - which is so much fun and a great workout! I am also learning a new language - Persian! Who or what would you place in Room 101? Bad manners. People who are selfish and people who are are unkind and judgemental. Life is to short, we should love and support one another! Oh, and men that honk their horns at you, I mean why? It gives me a heart attack every time! What’s been your biggest life lesson? “This Too Shall Pass.” Nothing is forever, everything will pass and that time is the greatest healer. &DIALS What does it mean to be opening the stunning showroom we are in today? As part of the DMR journey, it’s a very special day indeed. We began our story here in St Ann’s Square back in 1979 with the tiniest of showrooms on the corner complete with a workshop and kitchen down below. Since then we have expanded into the showroom next door on St Ann’s Street and when the opportunity came up to expand into St Ann’s Square itself, we jumped at the chance. St Ann’s Square is the very epicentre of Manchester and we wanted to create a showroom unlike any other in the North West. The new showroom is nearly 5,000 square foot and it’s recent completion is the highlight of our 50th year. The whole project has cost over £3 million and, as well as validating our belief in what we do, we also feel we can raise the status of luxury retail in Manchester - the

country’s second city. Lauri Hammond, formerly of Harvey Nichols in London has done an amazing job elevating our displays. The showroom feels light and our pieces are able to breathe. We worked with Manchester-based 5 Plus architects and Ferrious, and their input was always welcome. This is a luxury showroom for DMR and a locally delivered project! How did the business start? It all started when David Robinson became an apprentice goldsmith in Liverpool back in the 1960s. From a tiny workshop he developed his jewellery designing and making ability, and he took up the opportunity to open a small showroom in North John Street in Liverpool, making bespoke pieces and commissions. Some of his early designs went on to win the DeBeers Diamonds International Award. Today, his team of skilled Master Goldsmiths and their

workshops remain at the very heart of our company. The business grew from its Liverpool base into the four showrooms we have today in Manchester, Liverpool One, London’s Canary Wharf and our head office in Altrincham. We did have showrooms in Chester and Southport but sadly we decided to close them with many of the clients in those areas beginning to shop more frequently in the cities of Liverpool or Manchester. In recent years, watches has become a bigger part of our business and today we represent, as Authorised Dealers, some of the world’s best watch brands, including Rolex and Patek Philippe to name just a few.

Can you tell us more about the watch side of the business? We certainly can. It’s an area that has developed rapidly in the last decade or so. Rolex and Patek Philippe are brands which cannot be sold online by Authorised Dealers and we believe in offering a genuinely luxurious retail environment in which to allow our customers to try on different pieces. We even have our own in-store Rolex accredited watchmaker on site to facilitate the servicing of our clients’ watches. We believe that buying a Rolex should be such a special experience and since we are passionate about horology, our teams of “helpful experts” are always happy to share that knowledge. Its wonderful to have such a large selection to introduce to our clients and a gorgeous

Jewellerymaking remains at the heart of our business and we genuinely travel far and wide to look for inspiration - and inspiring stones - to work into captivating, yet wearable designs. showroom in which to present them. The jewellery side of our business is based around the bridal collections of engagement rings and wedding rings for which DMR has become synonymous. Many pieces within our Carat Collection are bespoke commissions which are hand-made in our workshops. Along with our bridal collection we have several exclusively designed diamond jewellery collections which we only retail through our own showrooms and not through any other retailers... Although we do get asked by other retailers! They include the Cloud Nine, Hopscotch, Lunar and Honeycomb collections, the latter being

Where do your customers come from? The simple answer is far and wide. In the region, as well as those who live and work in Manchester, we are just as likely to see someone from The Lakes, as say Alderley Edge. On some days we see lots of couples who are visiting Manchester to see their children at University, or those travelling in to stay overnight, watch a football or rugby match, perhaps to eat at Australasia or Tattu and take in a night at the theatre. Manchester is definitely a booming city and its really getting its swagger back. We have seen some dark days in the city over the last few decades but I guess you can’t keep good people down or hold them back. We have always bounced back and now is Manchester’s time. I was so proud of my team in Manchester in the aftermath of the tragic events at the Arena, two years ago. St Ann’s Square became the focal point of the grief we all felt and we must have made thousands of cups of tea and coffee for foreign film crews, as well as our customers and those who just wanted to pop in and talk. THE NEW SHOWROOM WAS RECENTLY OCCUPIED BY THE ENGLAND LADIES NET BALL TEAM, ALL TWELVE OF THEM, SO THERE WERE A FEW SURPRISED LOOKS ON PEOPLE’S FACES THAT DAY!

What makes DMR, clearly, so unique? Lee Chadwick, Showroom Manager, provides the answer... Well, for starters we are a family business and thoroughly independent. All my colleagues working with DMR get an amazing showroom to present and entertain in, are very well looked after with free private medical healthcare and lots of interesting training but I actually think we are special because our customers are so varied and unique. I, personally, can be presenting to a couple who are getting engaged in Dublin one day, hosting a private client dinner in the showroom the following evening and then a watching an company MD present watches to his team in our Lounge the following day. Having a showroom like this which is so open, spacious and welcoming allows us to spend time with our clients and friends and we can even allow the customer to watch their jewellery being made. I genuinely think we are seeing a trend in which we value those who work with their hands and our clients definitely appreciate that seeing something being made for them, right in the heart of Manchester city centre is provenance indeed. Every week in the showroom we see tears of joy from marriage proposals or for customers who have a cherished piece of jewellery remodelled. At DMR we look after two or often three generations of many families and it’s a pleasure to see a daughter choosing a very fashionable and on trend piece from one DMR collection and her mother choosing something very different, on the same day.

It sounds like many of your customers become friends? “They often do!” says Hannah Williams, the showroom’s Assistant Manager. “I’ve been to countless weddings and several hen-dos as well! It’s a privilege to be involved in so many celebrations, proposals and births! We do see a lot of famous faces in the showroom too but obviously, you’re not going to get me to give you any names! Having our private lounge downstairs does allow us to offer absolute privacy for our customers. Choosing jewellery is very intimate at times and if the bride wants to come along with her dress to try on pieces we can always cater for that. At the other end of the scale the showroom was recently occupied by the England Ladies Net Ball Team, all twelve of them, so there were a few surprised looks on people’s faces that day.

Cobbler with a Conscience Natalie Anglesey visits Sir John Timpson to discuss doing things upside down, revitalising our towns and a love of Manchester City

With John’s usual bluntness, he comes straight to the point about his findings. “First, let me say there’s no such thing as a quick fix. There are simply too many shops selling the same things. Although some people may prefer shopping online, many still love to go shopping. To bring life back to the high street, we need to bring people back into town - so residential housing would help. In the 13th century, people at Altrincham market would be selling their wares ranging from sheep to produce, then finding somewhere to eat, drink and sleep - it’s as basic as that still.” But where, I wondered, was the money coming

first met John Timpson when, as a new recruit at the BBC, I was sent to interview him at his new shoe shop in Manchester. Now he’s Sir John Timpson CBE, and we are catching up with the intervening years in his luxurious Cheshire home, set in beautiful gardens, near Tarporley. Because of his generosity to a number of charities, the multimillionaire has earned himself the description as ‘a cobbler with a conscience’, but John’s quick to point out. “First, I was never a cobbler, but I’m proud of the fact that I worked my way up in the family business. I served my first customer in Altrincham in 1960 when I was only 17, eventually becoming chairman and owner of Timpson, the UK shoe repair chain. In the intervening years, we accrued fashion and dry cleaner businesses with over two thousand shops as well as outlets in the major supermarkets.” You may have seen John on BBC North West Tonight, power-walking down an Altrincham street as he tried to explain to a reporter about his latest role spear-heading a government initiative entitled High Street 2030: Achieving Change. “The aim is to investigate bringing life back to our ailing high streets, and I nearly said no when they first asked me,” John explains. “That was mainly because of the amount of work I knew it would entail - as we had to explore similar areas of need around the country from Aberdeen in the north to the very south. But when I realised that I have more expertise in that area than most, I agreed, and it’s been an interesting investigation.”

from to achieve this new look? “It’s all about policy and process,” John counters. “The government has set aside £675 million to help councils bring back people into the centre of towns. It’s now up to them.” As John leads me into his study, which is full of his business awards, I notice a picture of him outside Buckingham Palace with his CBE for Services to Business awarded by Prince Charles. Did he know who you were, I wondered? “Well he said all the right things, but I think he was just well briefed,” John chuckles. It’s evident that the study is the place where John likes to work. Many would describe him as a workaholic, but he obviously just enjoys a variety of challenges. Apart from his business interests, he’s been writing a weekly column about the various aspects of business management in The Daily Telegraph for almost 13 years, which he still enjoys. There’s also a shelf full of the books he has written about his own unique management style. He remains chairman of his own company but is also a non-executive director of Barclays. John’s keen to impress that he wishes more people would follow his Upside Down Management ethos, which he’s written about in one of his books. “You see most businesses have large middle management which tells people what to do. To me, that’s wrong. If you get the right people at the counter or in the workplace, they will tell you exactly what’s needed - that’s what I mean about Upside Down Management and, believe me, it works. I tell people working in middle management they should be listening to the people who deal with the customer and look after their well-being - it’s as simple as that.” John shows me an almost finished copy of his latest book, Mental Health Issues in Business, which is something he’s been interested in long before the Royal Family became involved. “It’s a problem

in business but also education, and I’ve been working on that for years in local schools as well as talking to OFSTED, the Office For Standards in Education. “I’m particularly interested in caring for children who have been out of the school system for whatever reason, perhaps they have been fostered or adopted, which are areas I do know a bit about.” Although Alex, his late wife, and John had three children of their own, they adopted two, and they also fostered 90, so he has more experience than most. I ventured that, in the past, with all the family around when they were small children, it must have been a noisy household at the end of a busy day. John jokingly replied, “Well, we didn’t foster them all at the same time! Alex was awarded an MBE for Fostering although she warranted so much more. That’s why I founded The Alex Timpson Charity in her name. We saw at first hand children who had never been loved or looked after and who needed that special care. We’ve still a lot to learn and do in those areas.” John was awarded his knighthood for Services to Business and Fostering. “I was awarded that by The Queen although the big awards are always at the end of the day, which meant a very long wait. Fortunately, Julie Walters was also being honoured that day, so she proved very good company!”

Alex was obviously a great inspiration to John as she encouraged him to go for a £42 million management buy-out of the original family business back in 1983. After selling the shoe shop division four years later, John created a separate Timpson Shoe Repair company which became the basis of today’s multi-service chain. They’ve diversified into retail, watch repairs, photoprocessing and barber shops among several other departments which are continually changing. One of John’s earlier books, entitled Dear James: Secrets of Success from a Management Maverick, was written as a guide to his eldest son James. “He was serving customers when he was only 14 in the

national newspapers. All my grandchildren are interested in the family business. Nine of them have already worked for the business in some capacity or another, and they loved it.” Born in 1943, and educated at Oundle and Nottingham University, John is also busy writing a book about the history of the family business initially founded by a cobbler back in 1860. It will contain stories of family feuds, business lost and found, as well as take-overs. It sounds like an interesting read. How does this busy man relax away from the business world? “Our family are massive Manchester City supporters,” John enthuses. ”A recent highlight was when I was able to take my two sons to Wembley when City

Always make sure you’ve money in the bank. And as our business depends on customer satisfaction, make sure you’ve got the right people looking after the customer as we must respond to customer needs. Every day is different and do remember the value of a smile. Summing up, it’s important to look after your workforce on a personal level. If you look after your people they’ll be loyal to you.”

Tell us what brought you to your current position? I was looking to progress from formal dining into a more popular, casual dining scene with the opportunity to cook all dishes from scratch with the finest ingredients when Brasserie Abode approached me. I jumped at the chance and have been happy here ever since. What is your favourite style of food? I love French and British hearty classics - both to cook and to eat, and I'm also known for a mean tapas when cooking for friends. What's your favourite ingredient and why? Truffles - which I've bought straight from Italy. I love to add their fragrant, rich flavour to lots of dishes, from risotto and beef, to simply grating on top of scrambled eggs. What is your favourite drink? After work, it has to be a nice cool beer, and one of my favourite spots to enjoy one is in our Champagne Bar at ABode Chester - great views and great staff! On Sundays, I'm also a fan of a lovely glass of Claret with a roast. Who inspires you and why? I've been lucky enough to work with some great names in my career, but none beat the inspiration from my Nanna, who instilled my love of cooking. Aiden Byrne

The executive chef of Chester Racecourse’s newest offering, Parade with Aiden Byrne, showcases his updated twist on an old-school classic, The Manchester Tart

A

iden Byrne is an English chef, best known as the owner of a number of establishments including The Collingwood, a bar and restaurant in West Kirby and Restaurant MCR in Manchester, which Byrne reopened at the end of 2018. Byrne made history as the youngest person ever to earn a Michelin star at the age of 22 in 2002. Byrne’s most recent collaboration is Parade with Aiden Byrne, a luxurious new trackside venue at Chester Racecourse, the oldest racecourse still in operation in the world and positioned in the ultimate location for any race-goer, alongside the finishing post. Hosting just 60 guests in an intimate setting; design, indulgence, impeccable service and fine-dining are the focus. Parade with Aiden Byrne offers guests an award-winning six course menu that starts with

METHOD: Manchester Tart INGREDIENTS 500 grams of unsalted butter 500 grams of caster sugar 350 millilitres of whole eggs (mixed) 125 grams of soft flour (sifted) 187.5 grams of ground almonds 187.5 grams of desiccated coconut

• Toast the coconut on a try at 160oC for 15 minutes or until golden brown. • Cream the butter and the sugar together in a food mixer, whilst this mixture is still in the food processor gradually adding the egg. • Add the ground almonds and the coconut then add the flour. • Mix until fully incorporated and store in a piping bag. • Place in the refrigerator for a couple of hours to firm up and then pipe into the desired mould and bake at 170oC for 12 minutes. • Allow to cool and dress with raspberry jam and coconut cream.

Location

My partner and I took a 45 minute train ride from London to the Hertfordshire/Essex border for our first visit to Bishop’s Stortford. The historic market town has a real Cheshire feel to it and is brimming with listed buildings, restaurants and shops. On arrival, we jumped into a taxi and took a short ride out into the countryside to Down Hall Hotel and Spa.

The Venue

Upon arrival, we were greeted by the team and given a guided tour by Phil O’Connell, a friendly former police officer who talked passionately about the history of the venue, his love for his job and his (eleven) grandchildren. Phil explained that dating back to 1322, Down Hall has been home to artists, lords and baronets who’ve all influenced the flamboyant Italianate style (think crystal chandeliers, coffered and gilded high ceilings and opulent fabrics). The building is within easy reach of Stansted Airport meaning they have a lot of business travellers staying over. In the pristinely manicured gardens, you can test your skills on the giant chess set, indulge in a game of croquet or visit the ducks on the pond, so perfect for a family stay. Phil also mentioned that during the balmier summer months, Down Hall’s chefs prepare gourmet picnics in beautifully packaged wicker baskets for quintessentially British al fresco dining.

Down Hall Hotel & Spa Hertfordshire Idyllically situated on 110 acres of thriving gardens and woodland, Craig Hough visited the beautiful countryside stately in classic country house-meets contemporary chic. Our room was a classic bedroom, which was spacious and comfortable with a stunning view over the landscaped gardens. The room came with all mod cons including tea and coffee making facilities, ironing board and iron, laptop-sized safe (perfect for business trips) and Wi-Fi.

Food and Drink

The jewel in the crown of Down Hall is their incredible AA Rosette-awarded restaurant, The Dining Room which specialises in Anglo-French food. Our server explained Head Chef Chris Jones only uses ingredients from the kitchen’s own vegetable patch or local supplier. To drink, we took advice from our server and shared a bottle of Raleo, an Argentinian Malbec that was rich, smooth and brimming with dark juicy brambly fruit flavours. For starters we opted for a delicious smoked haddock fishcake served with 74

shimeji mushrooms and spinach, as well as braised venison shoulder with balsamic turnip and beetroot. For my main I opted for the 8oz Aged English rib-eye of beef, cooked medium rare, with rustic hand cut chips, mushroom and grilled plum tomato. My partner opted for the pan-fried cod with salmon boudin, Jerusalem artichoke and seaweed Beurre Blanc. Both meals were out of this world and deceptively filling. For dessert, we both opted for the chocolate fondant with pistachio ice-cream which was swiftly eaten.

The Spa

After a lovely night’s sleep and a hearty breakfast (back at The Dining Room), we went to the brand-new Eden Spa located on the Down Hall grounds. I chose the deep muscle massage, designed to alleviate deep-seated tension and muscular stress. Once done, I relaxed with a coffee before entering the rest of the ultramodern spa. This Spa has everything including a hydrotherapy pool, a mood-lit sauna with full-height timber cladding and tiered seating; a state-of-the-art steam room with an incredible starry night lighting feature and a wellness power shower. For those who are more active, there was a gym with brand new equipment for cardio, weight and strength training with cross trainers, rowing machines, free weights and medicine balls. But we came here to relax, not to work up a sweat.

Conclusion

Whilst staying at Down Hall we noticed a complete mix of guests. It’s perfect for those looking for a leisurely countryside break, for business travellers, weekend escapees (like us), or for travellers in need of a pre-airport stopover. I’d definitely recommend a stay in late spring time as the gardens come in to bloom and the weather is a little warmer so you could enjoy afternoon tea on the terrace. A Greek

Odyssey

Jamie Christon discovers that Corfu is a real gem of an island with its diamond being a brand new adults-only hotel

C

orfu, to me, was synonymous with my childhood. When I grew up in the 1970s, it was seen as a bit of British playground and in the 1980s was a popular island party destination. Since then it seems to have mellowed, and this has allowed its Corfiot, Venetian and more Italian influences to shine and flourish. It glistened into view as my plane circled the island before landing in the north of this gem of a place. Sitting on a sun soaked coastal hillside, the MarBella Nido Suite Hotel and Villas are nestled into the south east corner of this island. Only a year old, this hotel has celebrated joining Small Luxury Hotels of the World (SLH), which prides itself on being a collection of boutique and independently owned hotels, hand-picked and exclusive. With uninterrupted views across the Ionian Sea towards mainland Greece and north towards Albania this beauty of tranquillity, style and grace met with a grin on my face having escaped a cold

and grey English morning. Nido, which is derived from the Italian meaning ‘Nest’, defiantly embraced me as I arrived and immediately engulfed me in its warm and intimate environment. What impressed me from the moment I entered the hotel was not only the stylish, chic and Italian influenced architecture but the modern twist and gorgeous, friendly staff. I had never been here before, but within an instant felt relaxed, at home and ready for some rest. Marbella Nido offers a range of individually designed junior suites, deluxe suites and villas, all of which offer those horizon lookouts across the sea. Perfectly pitched at couples and stressed out singles like me, with each elegant suite having its own private pool or terrace whirlpool, the whole hotel, despite having 70 suites felt quiet, calm and thoroughly at peace with itself. There is a large, trendy sun deck, with infinity pool and bar for those who want to mingle, but a reason for

staying here is ‘Nido’ or to nest. Large spacious rooms, modern, powerful rain-head showers, and that private secluded terrace with pool meant most guests seem to end up enjoying being cocooned in their suite away from the hustle and bustle of modern day life. Don’t worry about the fact the hotel is on a hillside. The hotel comes equipped with 24/7 chauffeured golf carts to pick you up from your room and deposit you safely anywhere in the hotel without you needing to make any effort. If you do enjoy a stretch, each meandering lane towards the top of the hotel is set off with gardens of lavender, blossom and wildflowers that add to the feeling of being deep in a traditional Corfiot village. Then down to the hotel’s beach, separated by the coastal road where you can enjoy the sun, sand and paddle in the glistening sea, this place has an answer for everything. As expected with five-star opulence, the hotel is well equipped with a modern sea view gym and a menu of spa therapies and treatments ranging from aromatherapy massages to a full body scrub using natural Greek ingredients. I sampled late one afternoon the ‘new moon’ spa experience where for 50 minutes, I was consumed with pure essential oils rich in nutrients and vitamins coupled with a Mediterranean facial. Then back to my private terrace to soak up the rest of the afternoon’s sunshine in total peace and quiet. With adults in mind, the hotel dining experience is smart and yet relaxed. Again with expansive seas views, the San Giovanni restaurant and Apaggio Gourmet, à la carte restaurant offered two selective styles of eating both of a very high standard. I was greeted at every meal by the warm, attentive staff and at breakfast was offered a hot and cold buffet style range of

Italian influenced, Greek and British dishes with fresh chef-made omelettes, bread, cheeses. Evening meals were a delight on the eye with a carefully crafted buffet with some to die for desserts along with an exceptional range of Greek wines. Alternatively, across the other side of the restaurant, you could enjoy a la carte menu looking out towards the sea or back into the hotel’s glazed wine cellar. It does not end there. The MarBella Nido sits alongside its sister hotel The Marbella Corfu. Accessible by golf cart or on foot, close but far enough away this larger property offers a broader range of dining opportunities and can be used by Nido guests. It was pleasant to pop over and have a drink on their terrace and enjoy their themed restaurants, but it was equally satisfying to be able to quietly disappear back towards the tranquillity of MarBella Nido and home to my nest. Despite only being on the island for a short time, I managed to head towards Corfu Old Town or Kerkyra to see what the fuss was all about. Corfiots are unhurried people who bask in casual living and are very proud of their ancestry and history. The old town smacks of being a former British colony and alongside the historic fort is a perfectly formed and manicured cricket pitch and bandstand. There was no game being played the day I visited the town, but I imagined long warm sunny afternoons watching the locals play under a shady parasol with

glimpses of the sea in the distance. The cricket pitch is surrounded by Georgian architecture with English and French influence and small high sided Venetian style buildings creating intriguing pedestrian cut-throughs to secluded restaurants and majestic homes lavished with fresh and abundant window troughs of blooming fowlers and plants. The shopping was excellent in and amongst the narrow ancient streets, and after an exhaustive tour around the streets sitting in one of the many street side, alfresco cafes was great for people watching and letting the time pass gracefully. In and amongst the shops, galleries and cafés sit several churches, many open to the public. The red bell tower of Agois Spyridon holds the mummified corpse of the islands patron saint. You can watch the locals pay their respects and enjoy the architecture of these holy buildings. Across the road is the

Old Fort and series of museums, equally enjoyable to meander around and let time drift. The beauty of the Island of Corfu is its size. Every part of the island is easily accessible in a short space of time. The north east was made famous by The Durrells, and further south stands The Achilleion Palace famous in the James Bond film For Your Eyes Only. Prince Philip was born just south of the island’s capital in a villa surrounded by forest, again open to the public. It was, however, back to my nest after an afternoon exploring the delights of the old town and a jaunt down the coastal road, through villages and skirting the many beaches until Marbella Nido came into view again. hile most passengers generally have at least a week to enjoy a modern-day cruise, my stay of just two days was not short of adventure. From the second I embarked on Celebrity Edge unexpected moments - which is, in my opinion, the true definition of luxury travel - were at every turn. Nothing quite prepared me as I walked on board and was greeted with face recognition security - this ship is a floating five-star boutique resort offering the absolute best in luxurious accommodation, food, drink and world-class entertainment. For ease and speed, there’s an App. This enables you to book all reservations from your phone as well as a whole host of other essentials you never knew you needed. It is also cleverly activated as your room key, even guiding you back to your room should you get lost on board (as I did more than once) and controls the lighting and blinds in your suite. They have simply thought of everything. There are 1,467 state rooms onboard the Celebrity Edge with interiors by leading British designer Kelly Hoppen. Neutral in design with sleek lines and little splashes of colour each offers all the home away from home comforts you could want. Little touches like well-stocked fridges, UK, EU and US plugs and USB sockets to charge your devices. What’s more, all of the exterior rooms have been designed to maximise on space with floor-to-ceiling windows or

balconies. There are even rooms designed specifically for single travellers. We are staying in one of the Sky Suites on Deck 9. As we walked to our door we were greeted with a bottle of Champagne by our very own personal butler, Milan. It almost felt like we were staying in the Savoy in London. Something that really stood out was the enormous king size bed that was facing the full-length balcony. Nothing quite beats waking up to see the ocean horizon. Another luxury you have when staying in one of the suites is access to The Retreat. Located at the front of the ship it literally is a private retreat with panoramic views, a full-size pool, cabana-style sun-loungers, a Jacuzzi and complimentary butler service. If you


want to unwind and retreat from the crowds and just sit in the sun this is the ideal location. Entertainment at sea has also seen a revitalisation aboard the Celebrity Edge, largely thanks to recent technological advances that render your stock-standard production shows a thing of the past. The Theatre is a contemporary space designed to blur the line between the audience and the performance, creating a more immersive experience. A Hot Summer Night’s Dream was the show on offer; a tale of love, intoxication and madness. Evoking the mystical, whimsical nature of Shakespeare’s similarly titled play, the production fuses music, dance, and aerial acrobatics with state-of-the-art projection to electrifying effect - it certainly is a visual feast. But entertainment isn’t confined to The Theatre. One of the more unique venues of the Edge is Eden, a multi-level space featuring a lively open-air kitchen and bar, where experiential dishes and drinks are served by performance artists called ‘Edenists’. There’s also the dynamic club, which changes its persona depending on the hour. A gathering place by day for games and creative activities, by night it kicks things up a notch with live music, talk shows, and DJs to take you into the small hours. The Resort Deck provides a variety of areas to take in that fresh, sea air. The Rooftop Garden is a Wonderland playscape, complete with oversized art installations and outdoor cinema. The pool deck has a distinctly more resort-style atmosphere, with its 25-yard lap pool as the centrepiece. Surrounded by private cabanas, with the Pool Bar close at hand, it’s a serene spot to sip your favourite cocktail and gaze over the

open ocean. When it comes to food and drink, there are 29 different restaurants, lounges, cafes and bars. Of all the dining options, five are complimentary and a vast improvement on the huge dining halls you find on other cruise liners with a more intimate restaurant feel. Celebrity Edge has several restaurants that are available on a pay basis. The Magic Carpet, which literally hangs off the side of the ship, relocates to deck 16 at night to offer ‘Dinner on the Edge’. What stood out to me was their unique dining experience, Le Petit Chef, at their French restaurant Le Grand Bistro. Using clever technology created by TableMation Studios, your plate becomes the screen for a 4D animated film showing animated chefs creating your meal. If all that isn’t enough for you and you’re looking for a slice of wellbeing thrown in, you will be blown away by the Edge’s spa and spend hours deciding between its 124 treatments. LIVING LIFE TO THE MAXIMA

The Dutch boat brand has launched a range of day tenders perfect for enjoying a summer’s evening on the water.

T

here’s something therapeutic about bobbing around on a lake or river with your friends or family, glass of bubbly in hand and the world slipping by. And if that’s what you want to do, there’s only one way to travel: by Maxima. This Dutch brand has launched a range of premium leisure tenders all designed for a day out on the water. At present, the 11-vessel range is only designed for inland use - primarily on lakes, rivers and canals - but a larger coastal version is on its way. Maxima’s house style is pretty consistent between its models, so you get something of a ‘Russian doll’ impression when you see them all together. Each and every one comes with clean lines and plenty of space for passengers - even the basic 485 will carry five or six people. The larger versions, though, allow more room for optional goodies. You can have a sunbed in the bows, a cool box for stowing more champagne, and even an on-board toilet. You can also get a post on the stern that allows you to tow a waterskier, although wakeboarders might be a tad disappointed about the hull, which is designed specifically to produce as little wake as possible. Nobody will be disappointed with the performance, however. You can choose from a range of Honda outboard motors, but most of the larger models in the Maxima range mount the engine in a special well between the helm and the stern. That means you get the quietness of an inboard engine with the responsiveness of an outboard. If you’re going to sail your Maxima on lakes and rivers with speed limits, the smaller engines are recommended for their efficiency, but the bigger models can be specified with up to 150 horsepower - enough for a top speed of about 40mph. CHECK M8 BMW’s new 8 Series grand tourer has drawn its fair share of admiring glances since its reveal last summer. Now, though, the range is growing and BMW is building even more attention-grabbing versions of its biggest coupe. The M8 Competition is just such a car, offering more power, more performance and a more angular bodykit than its siblings. Underneath the race-bred design tweaks is a 4.4-litre V8 petrol engine that churns out 617bhp, resulting in a top speed of up to 189mph and 0-62mph in a little over three seconds. PLUG AND PLAY Ferrari is one of the oldest, best-known manufacturers in the world, but like any brand, even the Prancing Horse can’t afford to rest on its laurels. Which is why the company’s bosses have announced the SF90. It’s the Italian brand’s first plug-in hybrid, so the most powerful V8 engine in Ferrari’s history - a 769bhp, 4.0-litre unit lurking behind the driver - needn’t be used at all. Instead, there are three electric motors sending 217bhp to the front wheels, allowing around 15 miles of zero-emission, silent driving. And if the batteries run dry, you can either charge them up from a plug, or simply fire up the petrol engine. When all four motors work together, 0-62mph takes 2.5 seconds and the top speed stands at 211mph. £TBC, www.ferrari.com

Bentley’s smallest, sportiest four-door limo has had something of a makeover. The Flying Spur is now bigger, more stylish and more spacious than ever before, and it’s dripping in technology and luxury. The cabin is dominated by a 12.3-inch touchscreen, but there’s also wireless phone charging and seats that can heat, cool and massage you. If you’re looking for an SUV that stands out from the crowd, writes James Fossdyke, then look no further than the Maserati Levante...

U

nless, of course, you buy a luxury SUV. They’re the black Levi’s of the automotive world; the Swiss army knives of the road. They’ll ferry you across Europe at speed and in comfort, then look right at home outside when you arrive outside the Austrian ambassador’s castle. Better still, they won’t get stuck in the snow when you attempt to leave the following morning. And they do it all so effortlessly. If you’re in the market for one of these multi-faceted metal mountains, though, the news is mixed. On the upside, you’ve got a plethora of brilliant cars to choose from, but the catch is that everyone else has had the same idea. It’s tough to stand out at the school gates when all the other parents have turned up in a variation on the same theme. But you can solve that by simply buying one of these. Yes, it’s a big, posh 4x4 with massive wheel arches and lots of chrome, but it’s also a Maserati. And that makes a huge difference. For one, it looks like a Maserati, so you get these soft, flowing lines that culminate in an angry, angular front end. The vertical slats in the grille make it look like it’s snarling, even when the rip-roaring, Ferrari-derived V6 behind is silent, but it still has the elegance of an Italian luxury saloon. It looks as though it was designed to eat miles, not small children. And the news gets even better inside. Pretty

much everything is wrapped in lovely soft leather, and the bits that aren’t are shrouded in a glossy veneer. My test car mixed Cuoio brown hide with Ebano wood trim and Zegna silk inserts, which has to be one of the best combinations out there. For the most part, It feels good, too. There’s the odd naff bit of plastic, and the knobs that control the infotainment system feel a bit cheap, but that’s only in comparison with the heavy quality you find in most places. The slender door catches feel as precise as the trigger on a wellmaintained shotgun, and the ignition button down by your right knee has a pleasant


resistance that makes you feel like you’re starting up some serious heavy machinery. Although that might be because you’re doing exactly that. I tested the Levante in high-end S guise, complete with the 3.0-litre V6 petrol engine that comes complete with not one but two turbochargers. The result is 424bhp and a noise that usually precedes earthquakes. The whole thing shudders into life with a bark and settles into a bubbly, rich idle, but if you press the button marked ‘Sport’ then the four tailpipes emit a savage, threatening growl. And it’s loud. So loud, in fact, that one of my neighbours came over to complain. But at least it’s quick enough for an expeditious escape. Getting from a 91

standstill to 60 mph takes about five seconds, and flat out you’re doing 164 mph. Yet this still isn’t the fastest model. If speed is what you’re after, then opt for the new Trofeo version, complete with a massive Ferrari V8 engine that produces nigh on 600bhp. At the opposite end of the range, however, is the ‘entry-level’ 3.0-litre diesel engine. It may only have 271bhp, but it can hardly be called a slouch. It will still romp to motorway speeds in about seven seconds, and once you’re in the cruise it’s both quieter and more fuel-efficient than the petrol-powered Levante S. So if you’re wearing your sensible hat, that’s the one to go for. In fact, sensible is something the Maserati does uncannily well. It’s enormous, which doesn’t always make life comfortable on narrow country lanes, but it certainly makes it more enjoyable inside. There’s a big boot and acres of space in the back, not to mention plenty of tech. There’s all the usual stuff like satellite navigation and heated seats, and you can have goodies such as four-zone climate control that allows everyone to set their own temperature, or a

That might put some people off, but to me it’s a win-win situation. You get a bigger boot and nobody has to suffer being crammed into rear seats that aren’t really fit for human habitation. All this common sense doesn’t mean Maserati has gone all grown-up on us though. The company’s engineers say this car still drives like a proper Italian grand tourer, as well as a farmer’s 4x4. And they’ve got a point. The Levante is a big, comfy cruiser with four-wheel drive and the ability to tackle some surprisingly challenging off-roading, but it’s still quite enjoyable on the road, where it will spend most of its time. Naturally, given its 2.1-tonne kerb weight, it’s more rugby player than gymnast, but there’s something charming about its chunky brand of agility. Perhaps it isn’t quite as comfortable as you might like at low speed, and the dimensions can be problematic at times, but that’s true of many big 4x4s. Ignore those minor issues, and you’re left with a fast, luxurious grand tourer that’ll still tow a horsebox or ford a river. And although the Porsche Cayenne and Range Rover Sport can claim similar credentials, they can’t bring those qualities together with quite the same panache. For some intangible, indescribable reason, the Maserati just feels that little bit more special than any of its competitors. For me, that’s the clincher.

We meet Wirral-based Steve Nicholson of The Bigger Plant Company – the business which supplies some of the Northwest’s most adventurous garden projects with their larger-than-life foliage

A

s specialists in mature trees and suppliers of some of the Northwest’s most successful architects, designers, landscapers and developers, The Bigger Plant Company has made quite the name for itself since its inception in 2001. Nevertheless, the road to success has certainly not been a smooth one for Director and Founder Steve Nicholson, and it’s the juggling act he had to master in order to get the company off the ground which makes its triumph all the more impressive. Originally working as a gin distiller with G&J Greenalls, Steve found that he was spending more and more time in his garden, and less and less time distilling. When trying to source trees and shrubs for his garden he noticed that it was virtually impossible to find them in large, mature sizes and that, even when he did, the prices were often astronomical. “I realised that this was our niche,” he tells me. “To supply large-size mature specimen trees and shrubs at a price that is accessible to most. The major spark in the birth of the company came when in 2000, family friends Gordon and June Sutton of Suttons of Wisbech were taking down a very large polytunnel and offered it to us. We then met up with an old family-run business in Italy called Pacini e Baldi Piante, and they really took us under their wing and helped us source the trees and

shrubs to stock our nursery. “Initially, my family pooled what money we had to pay for the building of the polytunnel, ground works, roadways, electrics and irrigation systems, then, with just a tiny amount left in the budget, we placed our first order with Pacini e Baldi. In the spring of 2001, our first wagon arrived and we started trading. At that time I was working shifts at the distillery in Warrington, so I would wake at 4.30am to commute from the Wirral, then when my shift was over I would return to the nursery to help my father tend to the stock and make deliveries. “The week after I would leave the nursery after a morning’s work to do a late shift at the distillery, and this pattern lasted an exhausting two years until the business had a sufficient turnover to support me full

time. So, with my mother taking care of the book work, accounts and admin, my father helping to man the office, tend to the trees and shrubs, and my brother helping at weekends, the company blossomed. A family company in the truest sense of the word.” The ball now firmly rolling, The Bigger Plant Company soon started to become known to landscapers, building developers, garden designers and private customers in the local area, gradually able to plough back the returns to invest in larger stock, and extending the existing nursery little by little to encompass the two acres it covers today. Fifteen years later, Steve looks back with pride, saying that the company’s biggest achievement to date remains surviving those first shaky years until the brand’s reputation was established. He still enjoys every single project with which the company is involved, saying that he still finds it “amazing, even after thousands of installations, to look back to a complete instant mature garden, or even a single solitary tree, and think that it has always been there. The effect is dramatic”. And when it comes to keeping up with the latest outdoor plant trends, Steve is unsurprisingly a mine of information and more than happy to share a bit of insider knowledge. “With contemporary gardens gaining favour and the shift to ‘garden rooms’, we’re really seeing a trend in formality,” he explains. “Clean lines, clipped geometric forms such as buxus, taxus and holly are popular, and trees with a

formal look such as Carpinus Fastigiata look both formal and modern when planted in a row. Pleached trees are also really gaining popularity, thanks to their clean, crisp manicured look, which helps give privacy without causing issues with neighbours. We’re seeing that privacy is a really key issue at the moment, and it seems to be becoming more and more a priority for people when designing their gardens. “Perhaps with the invention of garden rooms, more use of gardens, the rise of barbecue parties and such, people want their little enclave to be more secluded and private than ever. So with this swing, we’re supplying a lot of slow-growing evergreen trees such as Ilex Nellie Stevens, which is an ideal boundary tree for privacy and very low maintenance.” So what’s next for The Bigger Plant Company? Clearly more passionate about the business than ever, Steve has no plans to slow down and is keen to make sure the ethos of the brand stays on track “Our business is family run and in itself is a member of our family, if that makes sense. It’s a niche business and a boutique nursery, and in order to keep to our ethos of making it accessible to as many as possible, we have to remain lean and dynamic. A mistake would be to get too large, which in my opinion would be detrimental to the personal service we provide. Of course, we want the company to prosper, and to improve that which requires improvement, but at the same time, it’s so important that we retain the identity of the company and its ethos. GRADE II RESTORATION Built in 1863, The Stables at Backford Hall were used as council offices before being renovated into residential homes, reflecting the traditions but built for today’s modern living

B

ackford hall had been empty for a few years when renovations began by Jones Homes, amplifying the inherent challenges associated with restoring a listed building. Today, the hall is home to ten contemporary one-, two- and three-bedroom apartments each uniquely incorporating the original architecture and character. Also Grade II listed, The Stables have just been completed, marking the final stage of the restoration of Backford Hall and its grounds. Facing the same opportunities and difficulties but with the same ethos to provide character and contemporary the five properties range from two- to threebedrooms.

Working with the historic features of the buildings, each home has a unique layout, and is named after breeds of horse, as a nod to the buildings’ former use. The Shire is one of the larger homes. Built within the former coach house, the three-bedroom house is accessed off a courtyard garden. It features a glazed entrance, with windows and doors across the main façade replicating the old coach house doors resulting in an overwhelming feeling of light and space. The stunning family kitchen and dining room, leading onto the sun room, forms the focal point of the home with a separate lounge to the left of the entrance hall. A downstairs WC and storage area also lead off the entrance hall. Upstairs are three bedrooms. The master bedroom has an en-suite and there is also a family bathroom. Being Grade II listed, the stable block echoes characteristics of the main hall. Externally, Jones Homes has restored brickwork, reinstating historic brick patterns and removing more recent paintwork from the walls. Windows have been restored or replicated and the original beams have been retained. Altogether, Jones Homes has built or renovated 63 homes at Backford Park as well as creating and implementing a detailed woodland management plan to ensure the surrounding area is protected and maintained for generations to come.

ROSALIND ELLIS, OWNER AND CREATIVE FORCE BEHIND THE INTERIORS SHOP, CHESTER

Tell us a little about yourself… A Lancashire lass who moved to London at 20 years old and spent many happy years working in the prime residential property market. During my last five years I worked for the Grosvenor Estate. My time there taught me how to put the customer at the centre of everything one does and indirectly prompted the move to Chester as I met my partner, and best friend, as he works for Grosvenor in Chester. At first, I worked in Manchester at Savills but the commute proved too much, so I decided to pursue a life-long ambition to open my own interiors showroom and design consultancy. We’ve now been open 14 months and are going from strength to strength! Who are your greatest influences? On a personal level it has to be my mum. Fun-loving, funny, hard-working and always glamorous, she is the centre of mine and my brothers’ worlds (and of course my dad’s!). Beyond that I love women who defy stereotyping, who strive to compete in a man’s world despite any and all prejudice and do it with due grace and confidence, women like Michelle Obama and Emma Watson. What have been some of your best jobs and why? By far my favourite job was working with Grosvenor. Everyone assumes that the Mayfair and Belgravia portfolios are filled with the super-wealthy but there is a surprisingly diverse tenant mix. With the Grosvenor family being long-term custodians of the Estate, it was a refreshing change to manage a portfolio with a 10-, 20- or 30-year view on return on investment as well as focusing on community and sustainability issues. Traditional vs contemporary style? Definitely both! Coming from a family background in antiques, I have always lived with beautiful statement pieces of vintage furniture mixed with more contemporary styles that suit a modern lifestyle. As a family we’ve lived in several countries and I love a home that reflects its occupants’ lives. A home that’s made up of the stories of lives lived is a happy home indeed. 112

What would you consider your greatest achievement? Setting up my own business aged 42 was completely out of my comfort zone having been employed since leaving college aged 17. The main focus is high end, eclectic interiors accessories and homewares with many brands found in the likes of Liberty’s and London’s Chelsea Harbour. We’ve already taken on another interior designer so I’m excited for what the future holds! What would your superpower be? Flying!
