ctober sees us usher in two new seasons, the official arrival of Autumn and that autumnal staple, the start of party season! How would you describe yourself ? Young, committed and dedicated and a huge sports fan with a love for the gym and football. Where is home? And work? I’ve just moved to Llansantffraid and am loving living in the countryside of North Wales. I’m a 55 minute drive from work in the centre of Chester and it’s a very enjoyable and pretty commute.

Anywhere with my family or friends is good with me, and we spend a lot of time with my mother in Hengoed or visiting my girlfriend’s family in Scotland and Dubai. It’s been fun getting to know Dubai, with great food and new restaurants appearing each time we return, seemingly always in competition to be the biggest and best on offer.

Tell us a secret/fun fact? I aimed to become a hotel general manager by the time I was 40, and made it aged 29 – that’s something I’ll be proud of for a long time. Who or what would you place in room 101? Smoking. What’s been your biggest life lesson? Being the one in charge will always be a step up from a previous role, but the responsibility and hard work brings with it huge rewards, especially when you’re leading a brilliant team. www.abodechester.co.uk

What did you want to be when you were younger? I was a football fanatic as a child (some say I still am…) playing for my local team, Oswestry Town, as well as representing Shropshire at county level. If I’d have had the chance to play for Manchester United, I’d have achieved my childhood dream!

What/who inspires you? I started out as a kitchen porter at The Lion Quays Hotel & Spa in Oswestry, and my first manager, Jean-Jacques Poteau, was brilliant. Always full of energy and on the ball – he taught me a lot. What was the last gift you gave someone? We have an ongoing joke here at ABode Chester that my ops manager never uses his diary, instead remembering everything in his head – so I gave him a pack of post it notes on Friday to help! 15

SPECTACULAR Now in its fifth year, the TheraPlate UK Liverpool International Horse Show has become a firm fixture on the region’s sporting calendar. Held at the M&S Bank Arena, December 28 to 31, Craig Hough talks to show president and founder, Nina Barbour

You established the event back in 2015, what brought about the decision to create the show and host in Liverpool? There is a fantastic following for equestrian sport in the region and after running the Equerry Bolesworth International Horse Show at home on the Bolesworth Estate for a number of years we felt it was time to develop an indoor event. I gained inspiration for the indoor event at Liverpool from some of the European Shows, including the Gucci Masters in Paris, as I loved the presentation and layout of the show where spectators could have access to the riders warming up before the show which is one of our USPs at The M&S Bank Arena.

In a nutshell, what can visitors expect for a day out at TheraPlate UK Liverpool International Horse Show? Visitors to the show will experience a world-class display of showjumping with the biggest names in the sport arriving in Liverpool from all over Europe to compete. Each day offers something different and unique – from the fast and furious Ride and Drive Showjumping to 20

the new Eventing Grand Prix Series Final. We’ve also got some exciting new acts for this year: an innovative mix of equestrian and performing arts integrating acrobatics and aerial stunts. There’s also the ‘Electric Storm’ act which comprises of LED trial bike riding and dance routines in an intoxicating mix of lights, pyro and nail-biting stunts. Plus we’ll have live music from The Kings featuring Mitchel Emms who found fame performing on ITV’s The Voice.

What have been your highlights from previous years shows? There are so many highlights each year with the Grand Prix and Puissance always proving hugely popular with spectators. Introducing dressage to the show and attracting names such as Carl Hester and Charlotte Dujardin was a major coup for the event while the entertainment and music that we host alongside just makes for a fantastic day out for all the family. The New Years celebration is my favourite part of the show and acts as a spectacular way to see in midnight!

This year you are introducing brand new benefits to the upgraded/VIP tickets can you talk me through them? For 2019 we have developed new Audience With... sessions as well as exclusive Champagne Receptions. These new visitors can pick what appeals to them the most and make the show that little bit extra special. The Audience With... sessions will

take place in the theatre at the centre of the venue. We’ve a different session planned for each day and the celebrities featured include Mary King, Oliver Townend, Wocket Woy, This Esme and Geoff Billington to name a few. Before every evening show at 5.30pm visitors can also enjoy an exclusive Champagne Reception which includes a Meet & Greet session plus an official course walk in the iconic Main Arena.

The show is fun for the whole family, is there anything special planned for New Year’s Eve? Spectators will be treated to truly World Class Showjumping in the TheraPlate UK Grand Prix, followed by special performances by all of the spectacular acts, the Battles of the Sexes Knockout and the ultimate New Year’s celebration including a stunning indoor firework display as the clock strikes 12. On Your

Feet! Gloria Estefan talks to The Cheshire Magazine about her illustrious career with husband Emilio and their smash hit musical coming to Manchester directly from Broadway this autumn

What have you been most pleased with about how On Your Feet! has been received? Simply that people seem to love it. There’s actually a group of fans called The Feeties, who are teenage girls or in their early 20s who have seen it, like, 100 times. And there are others who have written to say they were entertained or cried or were reminded of different times in their lives through the songs. That’s the point of the show - to connect with people on a very human level, which is what we’ve always tried to do through our music. It’s been phenomenal. It makes grown men cry. [Laughs] Personally, seeing grown men cry is my favourite thing. I also love how it surprises people. They go in expecting one thing and they come out feeling everything we’d hoped, which is a connection and having been on an emotional journey besides just the pure entertainment of the music and what they already know about us. Has any dramatic licence been taken with true-life events? It’s all true, although maybe not always at the moment you see it happening on stage, and some of the songs aren’t in chronological order - they’ve been moved around to suit the story. The only thing that’s not true is Emilio having a six-pack, as he does in the show. [Laughs] It’s in there somewhere but washboard abs he does not have. How involved were you in developing the script with writer Alexander Dinelaris? We spent a year and half talking it through with him, then he said ‘You guys are a nightmare to write for 24

because there’s no conflict’. My reaction was ‘Really? Let me introduce you to my mother!’ I loved and adored her but she was very rough on Emilio for the first 12 years of our marriage. She was the protective Cuban mum thinking ‘Gloria’s going off with a musician, is he marrying her for her or for her voice?’ The book that Alex has done is spectacular. Of course once a director gets involved they shape things, but Alex is a phenomenal writer and we’re lucky that we hired him before he won the Oscar [for Birdman]. As well as scheduling issues, he’d have been way more expensive! Is it strange seeing yourself played by someone else? It was weird at the beginning, I’ve gotta say, but it’s an early version of me so it’s cool. And I’d never say ‘Hey, do it this way’, I just give as much backstory as I can rather than have someone try to clone me. I’m probably the worst judge of who I am because I’m inside myself, not on the outside looking in, and so I don’t know how I come off to other people. Have you learned anything about, say, your habits and quirks from watching it? Not really because they whisk through it so fast they

What’s impressive to me is how much love and devotion anyone who has played me in the show so far has put into it and how much they identify with me. These have mostly been CubanAmerican girls so they’re kind of telling their own story too and that makes me very happy and proud of them.

How has it been bringing the show to the UK? “It’s been fantastic. The cast is amazing. Christie Prades, who was in the original Broadway production, has been loving it because she has a whole different energy to play off. The book is brand new to the English cast and the acting choices they’ve made are spectacular. And Philippa Stefani, who is performing at certain shows in London and is headlining the UK tour, is just wonderful.”

What’s the most fun number in the musical? There’s a couple of really big numbers. Tradición is spectacular and then of course there’s Conga, where you literally see how it grows and grows then explodes in joy and includes the audience in it.

What are you most proud of about your career as it’s depicted in the show? That we stayed true to who we were. What I tell every young artist is ‘They’re gonna try and change you’. One time they even told Emilio ‘Lose the singer!’ because it was the time of bands with male leads. Yes, Fleetwood Mac had two female singers but they also had male singers and yes, there was Madonna and Cyndi Lauper but that was a new thing in music. The record company even told Emilio to get rid of the horns and the percussion section. But we said ‘This is who we are’ and we fought to stay true to that. I’m proud that we were able to manoeuvre our way into the business

And what’s the most poignant song in the show for you? Most definitely the one I co-wrote with my daughter Emily called If I Never Got To Tell You, which in the play is when my mother comes to visit me in hospital after the tour bus accident. My daughter couldn’t be in the show because she hadn’t been born during the timeframe. I tried to wedge her in there somewhere in any possible way and then she ended up being in it in a very natural, beautiful way through the only original

song written specifically for it. It’s a very poignant song because it’s my mum telling me the things she wished she’d told me. She hadn’t spoken to me for two years after I took my sister on the road with me. She’d been punishing me for that. Have you changed any of the songs? I’ve done a lot of layers and added new things to old material. With Mi Tierra I’ve done some English language ad-libs because I don’t want to lose the non-Spanish-speaking audience. I want them to know what’s being sung because it’s advancing the story. I also rewrote some words for a song called Famous because of where it comes in the narrative. 25


You have a huge LGBTQ following. Have you encountered any drag queen Glorias over the years? “Of course! I love them. They’re far more fabulous than I ever could be and far more out-there. The other day in Miami a friend of mine had her bridal shower at a drag brunch. When we walked in the drag queen who was headlining went ‘Oh my God, the patron saint of drag queens has just walked through the door’. That’s one of my favourite introductions ever. We ended up doing the Conga with them and it was a blast.” When did you first get hooked on music? I was just four or five years old. I was actually quite shy but music was my love and it would transport me. The old Cuban standards were always playing in our house and I sang as soon as I could talk. Music was big in our household. My mother performed in school shows and she won a contest to do the Spanish dubbing for Shirley Temple’s films, but her father wanted her to pursue an academic career instead. And my own father had two brothers who sang and played guitar. So I guess music was in the gene pool. Then I started listening to the British Invasion. I remember pulling into a laundromat parking lot with my mother and hearing Ferry Cross The Mersey. My hair stood on end and I didn’t want to get out of the car, I was so enraptured. That song really is like a Bolero in its rhythm. British bands were listening to a lot of Latin music and The Beatles recorded Besame Mucho. All that mixing of sounds had a huge impact on me and I had all this musical vocabulary to draw from. You met and began working with Emilio in 1975. Did you know back then you were on to a winning thing? I’m a bit psychic and early on I remember telling Emilio 26

‘I think we’re gonna be famous and I think we’re gonna be famous all over the world’. I believed so strongly in the music and I didn’t know how it was going to happen but I just knew something was gonna happen. As you say, Conga is one of the high points of On Your Feet! When you released it in 1985 did you realise it’d be such a huge hit? Yes, I did. It was written when we were travelling from Holland to England as part of the Dr Beat promotional tour and when we got home we began performing it in our live shows even before we’d recorded it. People were reacting to it as if it was already a hit so we knew we were onto something. Funny thing is, it didn’t do well in the UK because Black Lace’s Do The Conga came out before our song did. What prompted the decision to go from Miami Sound Machine to Gloria Estefan and Miami Sound Machine, then just Gloria Estefan? That was Emilio’s idea. I didn’t want him to add my name to the band because we were successful and I was happy with my bandmates, nor did I want it to be just ‘Gloria Estefan’. But he was like ‘People are identifying with you, they think you’re beautiful and sexy, they need to know your name’. It sounds like he doesn’t have a big ego… Exactly. That’s why we’ve been able to have a successful marriage and a successful career. He does what’s best for the artist and that’s why people love working with him. With a lot of producers you have to get past their ego but he finds what’s special about them, he finds

amazing music and then he makes it happen for them. He doesn’t need the accolades. How was it being hailed as a 1980s sex symbol? That was tough for me. I never hid the fact I was married and had a kid [son Nayib] and growing up I never felt sexy at all. But I learned to embrace what people felt was sexy and that seemed to stem from allowing people to see who I was and how music made me feel. I think that’s a sexy thing, when someone is confident and you can tell they believe in what they’re doing.

“Personally, seeing grown men cry is my favourite thing. I also love how it surprises people.” The show illustrates just how varied your music has been… That was always the intention. The tricky thing is that the business wants you to continue with more of the same. Our biggest challenge when we put out Conga and it was so massive was that we wanted to release Bad Boy second and the record company went ‘But it sounds completely different’. We went ‘Exactly’ and talked them into it. Then we wanted to release Words Get In The Way and they went ‘But it’s a ballad!’ But we thought ‘If we don’t take this risk now we’re gonna be locked into this dance thing’. After that song become huge it freed us up but yes, every time you create something you can’t let it paralyse you. You have to move forward.”

I knew what my family might have to face with me. I didn’t care about getting back on stage. I just wanted to be independent and walk again. I said ‘OK, if I end up in a chair I’ll figure out a way to deal with it but I am gonna fight my hardest for that not to happen’. Then I started getting all these letters from people. They kept throwing the song Get On Your Feet back in my face and I said to Emilio ‘I never did this for the fame so what if this is the sole reason I became famous? What if I have the opportunity through my perseverance to somehow inspire people?’ I rehabbed like six or seven hours a day, first in the pool because I couldn’t walk, and I had biofeedback - attaching electrodes to the muscles so they wouldn’t die. How did it feel when you first performed on stage again? Oh my god, it was euphoric. It was how I imagine climbing Mount Everest would feel. I had overcome so many obstacles and I’d worked so hard. It was just amazing. Now with your story being retold on stage, have people mentioned to you about how it has inspired them? They have and it’s wonderful. There was a man who ran a company with 20 employees. He told me: ‘My wife took me to your show on a Broadway weekend and I went along reluctantly because it was the fifth show and I was Broadway-ed out. But because of your show I now have a 60-person company because I’d given up on my dreams of making it bigger, then seeing it really inspired me.’ Another person wanted to start a swim programme for special needs students but they’d never gotten around to it, thinking ‘This is never gonna happen’. When putting together On Your Feet! how tough was it for you to revisit the 1990 bus crash that could have ended your career? It’s strange because I remember more the aftermath than the actual crash. I’ve spoken to a lot of people who have also been involved in accidents and they agree there must be some mechanism in our brains or our spirits where you remember before and after but you don’t remember the actual moment of impact. I was awake for it and afterwards, as I lay on the floor, I was in so much pain I was praying I’d faint but I never did. I remember everything except the actual breaking of my back. What got you through the painful process of rehabilitation? I grew up taking care of my wheelchair-bound father so 27

Attention to DETAIL Renowned designer and businessman, Simon Evans, takes time out of his busy schedule creating homes and interiors for clients across the nation and beyond to speak with Louisa Warde about inspiration, passion and the art of successful layering

I

meet Simon at the business’s headquarters in Chelford. He has just come from a client meeting and is visibly alive with ideas and concepts for the project. And he is proud of what the business has achieved since founding it in 2007 as he introduces me to the team and allows me a little insight into what Design by UBER can create for its discerning clients. Projects range from single room refurbishments to complete interior architecture and design across all styles, from rural to contemporary. Each one is unique, there’s no Design by UBER look that is simply applied to the next project. “It’s all about creativity. We seek to really get under the skin of a project and create something entirely unique. We like nothing more than pushing boundaries and asking why not?” enthuses Simon. “My team has been with me for a long time, most of them for a number of years, and when we get together for our de-briefs I am always amazed at what we come up with between us. And the talent and expertise we have is a true testament to the company ethos of surpassing client expectation through our expertise, attention to detail and delivery.”

The team has successfully delivered nearly 400 projects across the country and world. This is mainly residential however crosses to commercial when the recommendation and projects have inspired the team. As I am shown a number of current projects and the team speak animatedly about the details and the challenges I am, as always, impressed with how the dream becomes a reality. and notes are translated to an uber-realistic CAD drawing and photo real visuals that are presented to a client. They demonstrate to me how to successfully layer a room to a theme, without cluttering. I take it all in for future reference but fear I will need to return. The devil is definitely in the detail, as I am taken through a drawing of a dressing room with bespoke cabinetry with inlays and it is explained how the ceiling cornicing lines up with the cabinets and draws the eye. It is a simple theory and these guys talk about it quite nonchalantly. It is their job, after all. But how many of us would even consider it? Then there’s the getting under the skin of the client and their life and applying their nuances and cultural beliefs to a project, not to mention taking into consideration light throughout the day and the way that plays a part in the enjoyment of each space throughout the day, for example. This expertise is available to anyone who wishes to use it too, there’s a flat hourly rate for use of the expertise in the team, whether you are remodelling or refurnishing, which is quite

refreshing. A recognised and award-winning success now, I want to know how Design by UBER came about. Indeed, last week Simon was at the Design et al International Design & Architecture Awards where Design by UBER was nominated for the Designer of the Decade Award. A Cheshire-lad born and raised, Simon was sponsored by Boots through university and began his foray into homes and interiors working for FADS and Homestyle, both Boots brands at the time, straight from graduation. From there he managed a chain of hotels and restaurants for Scottish & Newcastle before running an airline. “I didn’t have what you may call a clear chosen career path! But I wasn’t going to settle for not being completely content with my lot. Yes, the money was good in my roles and there was a certain sense of satisfaction but I wasn’t getting the buzz that makes you consistently want to challenge boundaries each morning. I guess that’s what they say the difference is between a

my passion for interiors and so Design by UBER, as such, began with myself and one designer. “We began with the same principles we have today. It doesn’t matter what comes through the door, commercial, retail, residential, aviation, small or large – if it excites us we want to do it. And we have become known for this and for pushing boundaries. Our suppliers know we are always interested in the latest innovations and applications so our excitement has a mushroom

vocation and a job. “Travel is my passion; being able to experience and see different cultures and trends and absorbing that into what I did was the challenge. Design by UBER is the perfect mix and I absolutely love what we do.” But it wasn’t an overnight sensation. Many of you will remember a small furniture shop in Alderley Edge called Home to Roost. This was Simon’s step into business ownership, which after much success he sold to go into construction. “I have to say, someone mentions Home to Roost to me at least once a month still. So, it must have been a success,” he smiles. Retaining all his contacts as well as adding to them with construction industry names, Simon also worked with The Daily Telegraph columnists creating and fulfilling the reader offers pages. The plush offices I am sitting in today being the industrial warehousing that housed the stock. “I remember being up here, in what is the boardroom now, but back then I was in a forklift, shifting boxes and looking at what was here. I had that moment of realisation that there was more potential in myself and the building. I wanted to use my experience of the industry and

realisation that there was more potential in myself and the building” effect on them as they look for new and inspiring ideas and products.” Speaking of inspiration I am interested to know if Simon has any people which have inspired him along the way. “There are many people who have inspired me in my journey so far and I am inspired on a regular basis by our clients, for all sorts of different reasons. To me, there’s nothing more inspiring than meeting a self-made man or woman who values what they have earned and wants to create something with you. And these people come from all walks of life, with amazing tales to tell. 5 Minutes with Chloe Moss We catch up with the founder of Cheshire based luxury jewellers ChloBo to discuss the evolution of the company and their exciting upcoming plans Tell us what has been going on at ChloBo recently? It has been all systems go here at ChloBo HQ recently. We have a tonne of new and exciting things coming up. As well as working on our most recent photoshoot I have mainly been focusing on our huge re-brand. It has taken 12 months to perfect everything and I am so excited to share it with everyone. Another notable moment of late would be when I recently sat down with the BBC to discuss how I started ChloBo and what I do for the business day-to-day, it was such a cool experience having a film crew come into the office. It really did take me down a path of reflection, it’s amazing to look at how far ChloBo has come.

When we first started out there were just silver and coloured bead pieces, now we have moved into both gold and rose gold plated jewellery. Over the years we have realised just how much people treasure their ChloBo gifts, so that’s why we recently decided to branch out into wedding and children’s jewellery. It is really lovely to know that people are wearing our pieces on their special day or sharing them with their little ones.

Our gorgeous new re-brand will fully embody just how much we have evolved as a brand.

What advice would you give to someone wanting to set up their own business? It may sound cliché but honestly, just follow your dreams! If you keep a positive mental attitude and believe in yourself and your business idea then you can achieve it. Just keep going and don’t let people bring you down.

What has been your career highlight since starting ChloBo? There are so many but I think a massive stand out one was when Cheryl wore our Moss necklace on the X Factor, it created a massive buzz around ChloBo and got us a lot of publicity, things like

The ChloBo Journey that help a lot when you’re building a brand. I remember around that same time, we started advertising on buses, seeing our ChloBo adverts around town was a surreal moment for me. It may seem like a small thing really, but it meant that we were on our way!

Where do you see the brand in another 15 years’ time? In another 15 years’ time, I see ChloBo as a successful, internationally renowned brand. When I look back at how much we have achieved so far, I think the possibilities for the future are totally endless. I started ChloBo from my kitchen table at home and now we employ over 30 people at our head office, so who knows where we will be...?

What is the next big event in the ChloBo calendar? Alongside the new branding, we will soon be launching a brand new website, it will make the shopping journey a lot easier for our customers and more of an interactive experience. Similar to the re-brand, it has taken a long time to get the look and the feel of the website right, but it will most definitely be worth the wait. We also have a number of new lines being added to our core collections this month, so keep an eye out for some stunning fresh pieces!

Bedtime Blues Sleeporange owner Nathan Pearson explains his motivation behind setting up his company and offers tips to ensure your little ones have the perfect nights sleep

W

hen I started Sleeporange, my main aim was to create the very best children’s mattress and I did it because there was a real need for the product. Poor sleep affects families across the country and in children it can lead to poor performance at school, obesity and even mental health problems in later life. Also, when children don’t sleep, parents lose sleep too and this can cause huge problems in families. Before I made the first prototype, I had to identify the biggest cause of sleep problems in children. Firstly, as a parent, I looked at what I wanted from a mattress for my own children, then I talked to expert manufacturers and finally and most importantly sleep experts. Working with James Wilson, TV’s The Sleep Geek it became apparent that children being too hot when they sleep was a real issue, but a problem collaboratively we could solve. The two biggest factors affecting sleep are anxiety and temperature. A mattress can’t help too much with stress but it does help when it comes to temperature regulation. By using all-natural materials

such as alpaca wool and no chemicals in manufacture we created a mattress that regulates children’s temperature to stop overheating during sleep. The Sleeporange mattress range leaches zero nasties into children’s bodies during the night compared to an average of 30 chemicals in a standard mattress, but we didn’t stop there.

What is your favourite style of food? I'd say my style is modern British when developing new menus, but of course, at La Brasserie we have a classic French background. What's your favourite ingredient and why? From so many ingredients it is impossible to pick a favourite, but if I had to choose I would probably opt for garlic. Something so simple but so powerful in flavour has always made me love it. What is your favourite drink? I'm not a big drinker but I do enjoy a glass of dark rum and coke on a rare evening off. What piece of kitchen kit, could you not live without? My Victorinox pastry knife is never far from me, it's easily the most versatile tool in my box. Who inspires you and why? I've always been inspired by the chefs I've worked under, they've always pushed me to be the best I can and drove me to where I am now.

A

utumn has arrived and at Tattu Manchester, new culinary delights have landed and so too have myself and my friend Madeline to try them out. The first thing to make clear is that Tattu is a dining experience as opposed to just a restaurant. A true triumph of design that lives through the décor, drinks, food and music, all of which come together to create a truly beautiful gem in the Manchester restaurant scene. Their friendly and knowledgeable staff deliver the knockout punch of gastronomic love, living the key promise of the Tattu brand to make this an experience that puts ‘U’ at the heart. The main restaurant is stunning. At the centre, a cherry blossom installation with lighting that evolves throughout the night creates a unique serenity that is rare to find. The design pays homage to the progression of body art with the linework and visual techniques felt throughout. The use of natural materials, the nautical rope adorning the ceiling a particular highlight, alongside the deep house create an alluring vibe and feast for the senses before any food enters your mouth.

Our host for the evening, Lee, was kind, warm and knowledgeable. Our first port of call was drinks and, being a school night, we opted for mocktails. A good range on offer with a magical touch; Madeleine’s came to the table in a glass skull billowing with smoke. The nature of the menu design was perfect for sharing and so we dug into our Tuna Yuzu Cerviche, Soft Shell Crab & Asian Style Beef Carpaccio. Simply stunning. The Tuna was layered on avocado, offering a burst of freshness with every bite. The crab was paired with green chilli, both lightly battered, a brilliant touch and incredibly moreish. The highlight for us both here though was the carpaccio. The truffle oil and artichoke chips transformed what can usually be for me, a rather boring dish elsewhere, into a must-have for anyone visiting. For our mains we opted for Ribeye Steak Bulgogi, Balsamic Teriyaki Salmon with Jasmine Rice, Tenderstem Brocolli & Special Fried Sweet Potato on the side. The steak was succulent and the Eryngli mushrooms and sesame oil dressing made each mouthful divine. The broccoli was topped with truffles to

give them a real pop but the hero dish has to be the salmon. As my mum would say, ‘cooked to perfection’ and the black pepper, pickled ginger and cucumber salad alongside made each bite a little burst of joy for the tastebuds. To round off, Revelled Wontons – a cute yet elegant twist that delivered a lucky dip of chilli, coffee and chocolate orange bites as well as the vegan dessert to end all desserts; Asian Pear Sticky Toffee Pudding. A sizeable and tasty take on a classic which brought to the end an amazing dining experience. This is a truly unique dining experience, perfectly nailing sophisticated dining without feeling stuffy. Meet Andrew, Executive Chef at Hawkstone Hall & Gardens on the Shropshire Cheshire border

awkstone Hall & Gardens is one of England’s most beautiful estates, a vision of Georgian elegance dating back to the early 18th Century. The venue has recently been completed renovated with no expense spared, creating a truly luxurious country haven for restaurant bookings, romantic getaways, weddings and wellness retreats in an idyllic setting. The Saloon Restaurant offers a stunning backdrop for dinner, in one of the oldest parts of the original main house. It has a luxurious feel with artworks adorning the walls and rich, plush fabrics throughout. Andrew offers chiefly British dishes with bold flavours, using locally sourced ingredients inspired by the seasons. Andrew explains “Hawkstone Hall & Gardens, has a strong food and drink ethos, where all ideas are heard and creativity welcomed. Since the restaurant opening in June 2019, I’ve had the opportunity to put my mark on the menus and bring British dishes to life and re-invent them.”

Andrew’s passion for his work is evident in the way he talks about it. He explains “I’m very much a hands-on chef. I like to be in the kitchen, tasting and seeing the product. I think it’s so important to have a happy atmosphere and make sure my team are giving their best”. Andrew describes the food offering at Hawkstone Hall & Gardens as “classical cooking, with local ingredients and full of flavour”. Although he has celebrated great success in his career so far, he has so much more to give. Andrew still takes great joy in the everyday parts of his job “Service is still the best part of the day! There is no better feeling than the team working together and showing off our hard work. We don’t just want to meet their expectations, we want to exceed them and for me, the best reward is putting a plate in front of someone and for them to say ‘that’s amazing’. INGREDIENTS Classic Cheesecake Cheesecake: 250g cream cheese 250g mascarpone 250g whipped cream 75g sugar Zest 1 lemon Vanilla pod 200g white chocolate (melted) Frozen strawberry puree (in 1cm silicone semi-dome) Colour Glaze Recipe: 10g gelatine 50g water 90g sugar 90g glucose 90g white chocolate 64g condensed milk Red Food colour Strawberry gel: 250g strawberry purée 1.5g agar agar 100g sugar Malted Chocolate: 200g White chocolate Garnish: Mint Strawberries Required Equipment: Semi dome moulds (silicone) Miniature semi-dome moulds (silicone)

METHOD

Andrew brings a classic cheesecake to life with a pop of colour and surprise inside

For the Strawberry Gel Boil all ingredients together and simmer for 1 minute. Set in the fridge for 1 hour. Once set blend in a blender and place in a piping bag till later. For the Malted White Chocolate Place white chocolate on to non-stick baking tray and place in the oven to roast on 150°C for 30 mins stirring every 5 minutes until golden brown. Chill and break into crumbs till later. For the Cheesecake Mix the cream cheese, mascarpone, lemon zest, sugar and vanilla pod together. Add the melted chocolate, whipped cream and gently fold into mixture. Divide the mixture into even amounts in two separate bowls. Place half of the mixture into the semi-dome moulds and freeze. With the other half of the mixture, place in the semi-dome moulds ¾ full and add the frozen strawberry puree and press into cheesecake mix and smooth before placing back into the freezer. Take the semi-dome mould out the freezer once set and de-mould the cheesecakes.

Then take one plain half and one strawberry puree half and heat up and stick them together quickly to create a sphere and place back in the freezer. For Colour Glaze Soak the gelatine in a bowl of cold water. In a pan, bring the water, sugar and glucose to boil and add the condensed milk then whisk in the soaked gelatine. Place the chocolate in a separate bowl and pour the syrup to melt the chocolate, add red food colouring, whisking until colour has acquired. Take your cheesecake spheres out the freezer, place your cheesecake in the glaze and cover and pick out with a spoon and place on a wire cooling rack. TIP - don’t let the glaze cool down, as we don’t want this to set. To Finish To build, pipe the strawberry gel on to the plate in small dots. Place your cheesecake in the middle of the bowl, and decorate edges with the malted chocolate. Place fresh strawberries around the cheesecake and mint to garnish.

estled in the rolling Staffordshire countryside, I visited the Grade II listed Hoar Cross Hall. Boasting a two-hundred-year heritage, Hoar Cross Hall has a longstanding reputation as one of the UK’s foremost upscale destinations for leisure, spa and corporate retreats. The winding country roads leading up and into the estate created a sense of calm upon entry that set the scene for a stay to kick back, relax and to take time out from my busy life.

The Venue

The grand scale of the estate was clear upon rounding the corner as we parked the car, a stunning architectural masterpiece well worth taking a moment to stop and enjoy. Care and attention throughout the main building has respected its listed status, with wooden panelled walls alongside furnishings that pay respect to its history. This, mixed with more modern artistic installations and fresh paintwork create a true success of classic mixing with the modern. I checked in at the reception where we were greeted with a warm welcome, underpinned by a nothing-is-too-much-trouble attitude, a trait that flowed throughout the staff here at Hoar Cross. After being given my wristband that allowed my access throughout the estate - another nod to the modern upgrades to this British institution – we were ready to begin enjoying all that Hoar Cross Hall had to offer.

Rooms

The sheer size of the room was impressive, a stunning fireplace feature with mirror above created an opulent feel, whilst the view out to the gardens added a sense of relaxation and connection with nature. A comfortable bed and

seating allowed the opportunity to enjoy peace alongside tea, coffee and biscuits. The en-suite was designed in a modern tiled style, with a bath and modern shower offering the perfect opportunity to refresh. Toiletries, provided by upmarket beauty brand Elemis, were on hand to offer a finishing touch of class.

Food and Drink

Before going to Hoar Cross, I had high hopes for the food; their reputation for excellence underlined by the prestigious Salon Culinaire. And it did not disappoint. I started with a three-course lunch at restaurant Henry’s. I had a buffet starter in which I opted for the wellseasoned carrot soup. The selection was impressive and fresh; the chickpeas, salmon and pasta salad meant there was something for everyone. For my main I opted for the Cajun chicken – moist and succulent, it was perfect with accompanying kale, potatoes and cherry tomatoes. Filling up, I pushed through to dessert – a mango and grapefruit cheesecake which was a true highlight of the meal. Light, tasty and highly recommended. Onto the

menu and extensive list to offer something for all. For dessert, the mixed sorbet with meringue and summer berries gave me the pallet cleansing last hit of delight to round off the meal. Rounding of the food was a locally sourced full English buffet breakfast in the morning complete with fresh egg and omelette station – a perfect start to the day.

The Spa

Service again impeccable, I sat down to enjoy the culinary main event. The duo of pork to start was a delight. A bed of prosciutto, on top of which lay watercress and crispy ham hock bites. The dish was made by the addition of the apricot and I truly savoured every bite. The lamb roast main was impressive. Cooked to perfection, with accompanying mash potato and vegetables and finished with gravy, delivering an all-round knockout of a dish. An accompanying wine menu was extensive and offered options for any palette, with pairings throughout the menu to help aid the overall experience, alongside a gin

A finalist for the UK’s 2019 Residential Spa of the Year, this was never likely to disappoint and didn’t - a true highlight of the stay. The extensive facilities on offer meant that there were plenty of opportunities to unwind and relax alongside endless opportunities to hydrate with water coolers throughout. I opted for a bamboo back massage by Amy, who explained this was between a deep tissue and sports massage and so offered a firm but relaxing massage to help ease the (many) knots in my back. I then went through to swim and relax by the hydrotherapy pool, with the option of a secondary pool and Jacuzzi if I wanted more space. Alongside this was a Nordic Heat and Ice Suite that offered a 6 stage process to cleanse the body – a must for anyone visiting. After tiring somewhat, I then headed into The Sanctum, a quiet space that offered soothing music and a place to catch up on some reading before dropping off for a nap. Truly serene.

Conclusion

Hoar Cross Hall delivers on its promise – it is most definitely a place to kick back and relax and serves as the perfect break for those needing to take some time out. The whole experience is one that delivers on rejuvenation; whether this be a day break at the spa, an overnight treat or the celebration of a special occasion. Greener

Why Sicily makes the perfect holiday destination – especially in the verdant haven of Verdura Resort – writes Francesca Lee-Rogers

A

sk your nearest and dearest where they would like to holiday in Europe, and you will likely get similar answers – either soaking up the culture of one of the many capital cities, or decanting to a hot island or coastline to bask in the sun. And yet, an often-overlooked destination of choice is an obvious one to add to the bucket list – Sicily. Separated from the ‘toe’ of the Italian mainland by the Straight of Messina, the Mediterranean’s largest island combines spectacular scenery – the impactful Mount Etna is the largest active volcano in Europe – along with a compelling culture and warm, dry climate. Holidaymakers are spoilt for choice, with a multitude of charming towns and no fewer than seven UNESCO World Heritage Sites, including the historic city of Syracuse; while the coastal areas offer a calming respite from soaring summer temperatures which regularly hit the mid-30s.

The Resort Having landed in Palermo airport, our journey continues with a private transfer to the south west of the island, a short drive from the seaside town of Sciacca. We arrive during the evening so although it is hard to get our bearings, we are given a sense of the sheer scale of the resort when there is still an almost 10-minute drive between the gatehouse and the hotel’s main reception. The following morning makes this abundantly clear as we look out over the 230 hectares of grounds, which are as verdant as the resort’s name suggests.

Accommodation Our home-from home is a bright and airy suite, beautifully furnished with a natural stone colour palette and warm Sicilian colour tones, along with art and ceramics from the region. Our balcony looks out to stunning views over the

Mediterranean – something which every room and suite in the resort feature – while the bathroom is very spacious, and even features a bed on which to lie down after a soothing soak in the generously-sized bathtub. The room caters for our every need and provides the perfect haven to rest and recharge after each day’s adventures. The only thing it does not have is its own private golf buggy; a privilege which is offered to the six private villas, which come complete with private outdoor pool and even an entrance courtyard from which to enjoy a welcome moment of shade. However, rest assured the staff inform us that we can call for a buggy any time. Now that’s what we call service.

Activities Having enjoyed a restoratively blissful nights’ sleep, we set our sights on discovering everything that Verdura resort has to offer. Indeed, there’s plenty to keep the whole family entertained: the Verdùland kids club will keep little ones occupied with activities ranging from cooking classes, arts and crafts, sports and plenty more besides; while there are various sporting academies to help hone those competitive skills, with everything from fencing to swimming, tennis and even a football training experience associated with Serie A giants Juventus. One of Verdura’s main clientele is golfers, and along with a driving range and putting green to help practice, Verdura Resort boasts not only a nine-hole half course, but two high-quality 18-hole championship courses, one which has previously played host to the PGA European Tour, and the other that is currently being refurbished but will open during the 2020 season. With neither mine or my husband’s golf swings anything to write home about, we instead turn our

attentions to the other sports on offer. We rent a double kayak and paddle about the coastline for a fun, if exhausting, hour; however, one of the biggest highlights for us is the cycling. Verdura has an abundance of bikes and a charming policy where guests can simply pick one up and drop off wherever they so please. This lovely and liberating touch becomes one of our favourite pastimes during our stay, and we use the bikes to explore the expansive grounds, or to just make the short hop from our room to other areas of the hotel. It’s a great way to get around.

Relaxation While there is so much to do in the resort, the crisp Sicilian summer heat makes it important to also focus on some serious rest and relaxation. The ideal place to start with this is the Verdura Spa. We spend a large chunk of a day here; and after using the indoor infinity pool, we then go outside to use the four thalassotherapy pools, each of which has varying temperatures, salt densities and water jets. Afterwards, I am treated to one of the signature therapies at the resort, a Sicilian Aroma Relax Massage, which uses oils and infusions made from local aromatic ingredients. The products are by Irene Forte, the daughter of hotel owner Sir Rocco, who has developed her very own sustainable skincare range, with all the products handmade in Italy and many of the active ingredients grown in Verdura’s very own gardens. I later learn that the family’s strong connection to the resort don’t stop there. While exploring some of the wonderful boutiques on offer, including the local ceramics and jewellery of

Aputìa, I discover Mariù – filled with stunning handmade clothing, all of which are designed by Sir Rocco’s wife Aliai Forte and inspired by Sicilian culture. I even have the privilege to watch a talented seamstress at work; garments can be created made-to-measure on request.

Dining It’s common knowledge that Italy has a proud food heritage, and Sicilian cuisine only enhances this reputation. Verdura Resort certainly upholds this, with plenty of local fare on offer, particularly the trattoria-style dishes of Liolà restaurant, including traditional caponata, arancini and wood-fired pizzas; while Zagara serves up dishes featuring favourite local ingredients such as citrus, fennel and pistachio. On our first evening, we head to Amare, the specialist seafood restaurant on the seafront, which has stunning views and is perfect for a romantic evening meal as the sun sets. With the restaurant stocking daily with fresh catches, we decide to start with a plate of mixed sashimi, which is served on an impressive slab of Himalayan rock salt. The seafood is delightfully fresh and is devoured all-too-quickly. For mains, my husband opts for a seafood spaghetti, which is – of course – cooked to

perfection. I meanwhile choose an incredibly tender rosemarymarinated ribeye steak; the meat is simply sublime and melts in the mouth, and is washed down with a perfectly-paired glass of red. Having thoroughly enjoyed our meal, we spend a moment by the outdoor firepit, gazing up at the stars. What a way to end the evening. Our final meal of our stay is also just as memorable. We are lucky that our stay coincides with the first ‘Sicilian Night’ of the season, where guests can gather together to dine al fresco in the Piazzetta Liolà, located by the imposing Torre. The evening resembles something of a village celebration, with a warm greeting by the hotel’s hosts and artisans showcasing their wares and craftsmanship. We arrive early but the tables which pack the plaza are already full to the brim, and it’s easy to understand why. While the sheer amount of food on offer is itself an attraction – there are live cooking stations serving up everything from pizzas and spaghetti to grilled local fennel sausage, fresh fish and steaks – the diners are also entertained throughout the evening by a troupe of performers who sing and dance their way through traditional Sicilian folk dances. The evening is a lively occasion full of merriment, and even a fire juggler, and we finish the evening – and our stay – feeling thoroughly full, entertained, but also very fulfilled. Dubrovnik The Pearl of the

Adriatic

Recognised as a UNESCO World Heritage site in 1979, Rebecca Underwood visits the enchanting medieval city of Dubrovnik discovering that it offers visitors a tantalising opportunity to take a glimpse into a rich and colourful tapestry of culture and history

D

ubrovnik, in the southern region of Croatia and the Dalmatian province, borders the Federation of Bosnia Herzegovina and the Republic of Montenegro and is encircled by the Elaphite archipelago. As a consequence of the break-up of Yugoslavia, Dubrovnik was besieged by Serbian and Montenegrin forces in 1991 and the city endured substantial damage caused by continuous shelling. Restoration and repairs projects, carried out under the direction of UNESCO, were sympathetic to the original styles and successful in preserving the character. To learn more I made my way up Srđ, a low mountain at a height of 1,352 feet, and headed for the Museum of the Croatian War of Independence located within Fort Imperial, which was built in 1810 during the Napoleonic Wars. Exhibits include a wide range of documents, photographs, weapons, explosive devices, maps, military equipment and video recordings including international news reports.

For brave souls keen to experience a new perspective of the city and beyond, the nearby cable car station is popular. Soaring high in the air you are sure to spot Lokrum, the 180 acres of wooded island where, it is said, Richard the Lionheart was shipwrecked and cast ashore in 1192. I prefer to remain on terra firma and after appreciating the view of the Lawrence Fortress, which was built in the 11th century, and known as Dubrovnik’s Gibraltar, I headed back down the Srđ towards the Sponza Palace. Constructed between 1516 and 1522 the palace houses the national archives and one of the many striking features of the property is the ornate atrium, which was once a gathering place for traders. Luža Square, in front of the palace, is the site of the opening ceremony of the Dubrovnik Summer Festival, which began in 1950 and is held from July 10th until the 25th August. More than 70 open-air theatre, opera and dance performances are held on the city’s squares and terraces and in fortresses, churches and palaces. One of the most popular events is the performance of Hamlet at the Lawrence Fortress and of course it sells out fast! Whilst strolling around the meandering streets of the city I constantly admired the imposing walls,

which are 1,940 metres high. During the 14th century, the walls were strengthened by 15 forts and again in the 15th century, to deter the Turks, additional forts were built until the entire town was encased. For an outstanding panoramic view of the city and eager to view the bright Croatian sunlight flooding over the terracotta roofs I made my way to the top terrace of Fort Minčenta, located on the highest point of the city walls. This fort, which was once square, was built in 1319 and in 1464 it was modified to form a circular shape. Fort Minčenta recently featured in the popular HBO series Game of Thrones and it is quite simply mesmerising. Making my way to the Church of St. Blaze, another popular site, I stopped to admire Orlando’s Column, which features the armoured knight bearing a sword and shield. Carved in 1418 by Antun Dubrovcanin, a local master, the statue is a symbol of Dubrovnik’s freedom and the celebration of the raising of the flag takes place here to mark the opening of the Dubrovnik Summer Festival. The Church of St. Blaise is an outstanding example of the Baroque architectural style. St. Blaise, is the patron saint of the city and this dazzling church, was built in 1715 by Mario Gropelli, the Venetian sculptor and architect. The elaborate features on the façade include four magnificent Corinthian columns and a free standing statue of Saint Blaise and the interior of the church is ornately decorated and very detailed to enrapture the viewer. Wandering around the cobbled stoned streets outside I decided to visit the 360 Restaurant, which is a short stroll away on Ul. Svetog Dominika. Recipient of a Michelin


Star, this restaurant features a lovely terrace, which stretches along the medieval walls and the fortress of St John. The dining room, which features a kitchen encased with glass, allows diners to view a bevy of chefs creating two five course tasting and a la carte menus. The cuisine is inspired by local and Mediterranean flavours and ingredients and this is an exceptional dining experience. I opted for the succulent octopus and the flavours of the lime ravioli and fish soup were sublime and accompanied by a glass of the fresh and smooth Malavazia Istriana the flavours were enhanced perfectly. Following my arduous explorations and feeling rather guilty after indulging in too many delicacies throughout my visit I hailed a local taxi and headed for the Sheraton Dubrovnik Riviera Hotel for a leisurely lap or two in the gorgeous outdoor pool followed by a

snooze on a comfortable sun lounger. Later in the evening I wondered around the verdant gardens leading down to the beach and after the hustle and bustle of the city this calm and relaxing retreat was just the ticket. Accommodations include spacious and contemporary furnished one bedroom executive suites measuring 45sqm, which are located on the higher floors of the property. The separate lounge and bedroom both feature spacious balconies; the perfect spot for a pre or post dining tipple, and the floor to ceiling windows ensure that the areas are flooded with natural light. In-house dining options include the Leut Restaurant, which serves a wide range of international and local dishes with an impressive wine menu. The extravagant buffet breakfast is first class and as I devoured a juicy slice of water melon and gazed upon the twinkling waters of the Adriatic I reflected on the words of George Bernard Shaw who visited the city in 1929 …. ‘If you want to see heaven on earth, come to Dubrovnik’.

he first round of finalists for the 2019 Ladbrokes Northwest Football Awards has been announced, as the Awards marks its twelfth year of recognising the best talent from across the beautiful game in the Northwest region. All honours will be announced and presented by the BBC’s Dan Walker at the Ladbrokes Northwest Football Awards, taking place at The Point, Emirates Old Trafford on Monday, 11th November. In the Manager of the Season category, Manchester City’s Pep Guardiola is trying to make it two wins in a row, after leading his team to a second consecutive Premier League title and the first ever domestic treble, but will face tough opposition from Liverpool’s Jurgen Klopp, who finished just behind Guardiola’s City in the Premier League and led his team to the Champions League title, the sixth title win for Liverpool. Also up for the coveted Manager of the Year title are Manchester United’s Casey Stoney, who led Manchester United Women to promotion to the WSL in their first season, Salford City’s Graham Alexander who achieved promotion to League Two for his club in his first

season as manager, Tranmere’s Micky Mellon, who achieved back-to-back promotions after winning the League Two playoff final at Wembley. This year’s Ladbrokes Northwest Football Awards saw a record number of entries, none more so than the fiercely contested community categories, which celebrate the significant and important work that clubs do in their communities. Laura Wolfe, speaking on behalf of the Ladbrokes Northwest Football Awards said, “What a year for football in the Northwest! All four major trophies were won by our region’s clubs and promotions were achieved across other leagues. Khaki might not be a traditional Lamborghini hue, but it’s the colour the Italian company chose for its new hypercar, the Sián. Limited to just 63 examples, the stunning speed machine supplements a traditional Lamborghini V12 petrol engine with electric motors to boost the power to 807 bhp. That means it’ll roar from 0-62mph in less than 2.8 seconds and the top speed stands at more than 217mph. But that performance doesn’t come cheap. DEFENDER OF THE FAITH In reinventing the legendary Defender, Land Rover has tried to create something oh-so-modern while remaining faithful to its roots

F

or a car maker, reincarnating one of its best-loved models is a risky strategy. But taking risks can reap great rewards - just ask whichever BMW executive decided to bring the Mini back from the dead. Perhaps with that in mind, Land Rover has decided to resurrect the Defender. The original car, which effectively became the brand’s calling card, was killed off a few years ago for a multitude of reasons including safety, the environment and economics, but the new model is tasked with solving those issues while remaining faithful to the original. This is it, and although it has retained its forebear’s proportions, there’s no doubt it’s a thoroughly modern vehicle. As with the old car, there’s a choice of

two- and four-door versions, and there’s a van variant for commercial applications. The new Defender has primarily been designed for private customers, though, and Land Rover has tried to smooth out some of the rough edges that characterised the old car. That means there’s a much more luxurious cabin, albeit with mop-clean floors and a central ‘jump seat’ that allows three to travel in the front. The new Defender has also been designed to be more comfortable than before, but just as capable. To that end, there’s the inevitable four-wheel-drive system, as well as a low-range gearbox and gizmos such as hill descent control. Power comes from a range of 2.0-litre petrol and diesel engines, although top-of-the-range X versions get a 3.0-litre petrol with mild-hybrid electric assistance. From £40,290, www.landrover.co.uk

loves THE PRINCESS PRIDE Although it’s best known for its film festival, Cannes is home to one of Europe’s biggest yacht shows - the Cannes Yacht Festival. There, where the great and the good of the waterborne world come together, Princess Yachts has revealed its new F50 flybridge model. Behind the full-length windows, there’s a full-beam stateroom and a configurable forward cabin, plus a smaller, but still luxurious second cabin. SEVEN-SEAT STAR Mercedes-Benz is on a model offensive at present, and following the new A-Class hatchback into battle is the GLB SUV. As those with an eye for the alphabet may have guessed, it slots in between the GLA and GLC in the German company’s range, providing a compact yet practical model to rival the Land Rover Discovery Sport. There’s a subtle boxiness to the looks, while the cabin has the same super-modern design you’ll find in an A-Class. There’s a range of 2.0-litre engines on offer, and even basic versions get satellite navigation, reversing cameras and leather upholstery, as well as seven seats. TAKING STOCK If you’ve spent any time on the M60 in the past few months, you’ve probably seen the huge construction project that’s been underway near Junction 1. But far from being an office block or a retail park, it’s actually the new Mercedes-Benz dealership. Run by LSH Auto, the site is big enough to display about 140 cars across three floors. New cars populate the ground floor, with high-performance AMG models on the upper mezzanine. Used cars, meanwhile, are on the lower floor. More impressive, though, are the facilities, which include a bistro and a dedicated hospitality space. The 10.5-acre site has 30 workshop bays, too, allowing it to carry out servicing as well as sales.

The latest Porsche 911 is the definition of evolution, writes James Fossdyke, but it’s still the yardstick by which all other sports cars are measured

S

tubbornness is one of those strange traits that walks the tightrope between bravery and stupidity. Pick the right moment and sticking to your guns can be a stroke of genius, but get it wrong, and you can be left as red-faced as John Prescott in a 100-metre sprint. Porsche has been flirting with this danger for quite some time, resolutely standing by the formula that’s underpinned its flagship sports car for donkey’s years. First introduced in the early 1960s, the car was essentially a descendant of the original Volkswagen Beetle, albeit a distant and far sportier one. Nevertheless, it retained the Beetle layout that left the engine dangling out behind the rear axle. When the Beetle was conceived, that design was, ironically, quite forward-thinking, but these days it’s seen as a somewhat odd configuration. Modern sports cars - and many of the 911’s rivals - are either front-engined or, better still, mid-engined, providing better balance from front to rear. Porsche, though, has resolutely kept the engine in the back, choosing to work around that architecture, rather than changing it. Yet somehow, against all the odds and the teachings of perceived wisdom, Porsche has ended up with what’s probably the definitive sports car. Now, though, there’s a new version, and this is it. If you’re looking at these pictures and thinking it looks much the same as the old car, then there’s a few good reasons for that. For one, the shape is more or less determined by that rear-engined formula, and second, why change a winning formula? Look closely, though, and Porsche enthusiasts will see new rear lights and some clever new

aerodynamic features, but you and I will see the 911 we know and love. Or at least I love it. They say familiarity breeds contempt, but I think if you just step back and look at it, the 911 is really quite pretty. Perhaps the silver of our test car wasn’t the most exciting shade, but it still looks classy, clean and sophisticated. Inside, there’s more of the same, with a minimalist dashboard that’s almost entirely given over to the massive satellite navigation screen. Pretty much everything is controlled from there, from the radio to the rear spoiler. There’s even a menu to change the exhaust note. And as you’d expect from a Porsche, the build quality is almost outrageous. Everything feels sturdy and highquality, even down to the satisfying clunk when you shut the glove box. However, in a surprising turn up for the books, the cabin does lack ergonomic finish in places. There’s an ungainly cup holder in the centre console that gets in the way of the handbrake, while parts of the digital instrument panel are hidden by the steering wheel. It isn’t all bad though. Children genuinely could use the rear seats and although the car looks small, there’s plenty of room for big adults in the front. And because the engine is at the back, the boot is under what would normally be the bonnet. It isn’t massive, and serial golfers might want to consider looking elsewhere, but it’ll take a pair of weekend holdalls with ease. And if you’re leaving the kids with their grandparents for the weekend, you could always use the rear seats as a sort of leather-bound parcel shelf. In short, the 911 is usable every day if you so wished. The seats are comfortable and you can see

out, which is rare in a car this quick. Oh, didn’t I mention the speed? Well, the 911 might be the ultimate sports car, but the new model brings it dangerously close to supercar territory. I drove the Carrera 4S, which is by no means the fastest member of the 911 family - or at least it won’t be when the range is fully furnished - but its 3.0-litre turbocharged flat-six engine still churns out 444bhp. That means a top speed of 190mph and a 0-62mph time of 3.4 seconds, which is quick enough to give some Ferraris a fright. It’s also really good fun - particularly with that screaming six-cylinder engine and the active exhaust that exists almost exclusively to amplify the sound of burning petrol. And it isn’t just good in a straight line. The 911 is surprisingly well balanced for a car with a massive engine slung out at the back, and all the controls feel analogue and direct and alive. It makes you feel as though you’re responsible for every single correction and input, even though the car’s electronics are looking after you in the background. But what’s most impressive is that this comes not from a car that rides like a tumble dryer on a lava flow, but something serene and civilised. Sure, the low-speed ride can be a bit choppy and there’s a bit of road noise from the tyres, but it’s far more luxurious than most out-and-out supercars. It has everything you need and nothing you don’t. Most importantly, though, the 911 has a character that’s often missing from German cars. Some cars - even the incredibly fast ones - leave you feeling a bit cold, but the Porsche will warm the cockles of your heart. You get attached.

The stunning Grade II listed Standon Hall is undergoing a full refurbishment and the first rooms are complete offering a light, fresh design whilst being true to the building’s heritage

T

he full refurbishment of Standon Hall will be completed in phases, with phase one due to be showcased in the spring of next year. Originally built as a family home in 1910 before being converted into a hospital and then care home, the manor house stood empty for four years, falling into a state of disrepair. The current owners plan to restore the building to its original grand state and offer the Hall and grounds as an exclusive venue. The aim is to do this whilst being true to the culture and history that is retained within the walls whilst also adding a modern take to finishing touches and interior detailing. Grade II restorations come with their own challenges, but it is more the renovations from hospital to care home which to date have challenged the

team, requiring a full replacement of some utilities, including wiring and heating. Phase one includes the main reception rooms, bar, event rooms, grooms parlour, kitchen, snug, playroom for junior guests and bathrooms catering to male, female, disabled and children. Each room will take on its own theme specific to its use and heritage. The function rooms will be light and fresh, allowing the historic features such as stunning original oak flooring which is being carefully restored, to remain prominent whilst also keeping the rooms neutral so that they remain versatile to clients and their events. The ancillary rooms such as bride and groom parlours, will remain masculine and feminine in their interiors, with ladylike florals for the former and countryside scenes of stags and pheasants for the latter. The feminine feel will go a step further in the ladies’ bathroom with plans taking on vibrant pink with a hint of flamingo. And the snug, will offer the perfect spot to feel at home in cosy, comfy surroundings. The gardens will also be a huge part of the renovation as, with the help of a landscape architect, the team is planting beautiful formal and informal gardens, along with romantic meadows. Overall the refurbishment of Standon Hall will combine the old with the new, juxtaposing traditional and contemporary styles and making it a unique venue for clients to enjoy and put their own stamp on.

TOM BANNISTER, LANDSCAPE CONSULTANT AND DESIGNER

How would you describe yourself ? Partner to Kate and father to my two-year-old daughter, Hebe. I am often in awe of fine workmanship; whether this is a beautiful car or, in my instance, landscapes. Details separate the good from the exceptional and it’s this that I’m always on the lookout for. I also enjoy analysing subtle details in sport psychology to try to understand where the difference is between winning and losing. Mentality fascinates me. Having worked in the horticulture industry for almost 17 years, I have been involved with many different aspects of the industry; from complex hard landscaping to intricate planting schemes on award-winning show gardens at RHS Hampton Court and RHS Chelsea. It has always been my goal to put my experience of building gardens into practice when designing gardens. And so, with 15 years of garden building experience behind me, I enrolled at The London College Of Garden Design based in The Royal Botanic Gardens, Kew. In July 2017 I graduated from college, baby Hebe arrived and we moved back home from London to Chester where I run my landscape design studio and Kate, my wife to be, works as a freelance interior designer. Whilst living in London, I spent many hours and months planting gardens for some of the best garden designers available. This opened my eyes to the possibilities that exist for our outside space.

Traditional vs contemporary style? I love to see these two styles work together in harmony. The traditional side of me wants to see history appreciated and preserved whilst the minimalist side of me wants to see clean lines and uncluttered space. Traditional styling with modern techniques is my idea of good design. What would you consider your greatest achievement? From a career point of view being a part of 3 Gold medals at RHS Malvern and Chelsea have to sit high up there because it took so much hard work and effort to manage but meeting Kate and the arrival of Hebe override anything I could ever achieve at work. What would your super power be? Elemental Control. Like Thor, the god of thunder, I would like to be able to control the weather. Who are your greatest influences? At the moment, I’m studying the work of Dieter Rams who is an industrial product designer. He is most famous for his work with the company Braun and his furniture company Vitsœ. He has a rather uncluttered approach to design. Aside from this, Piet Oudolf inspired me as a young horticulturist because he managed to create planting schemes reminiscent of nature but with much more colour. What have been some of your best experiences at work and why? It’s difficult to see past building show gardens at RHS Chelsea for the sheer madness and timescale of the build: Extraordinary hard landscaping details matched by what can only be

P.S. Last book you read? Wilding. It tells the story of the ‘Knepp experiment’, a pioneering rewilding project in West Sussex, using free-roaming grazing animals to create new habitats for wildlife.
