My life ... IAN WADE, MANAGING DIRECTOR OF THE CHRISTLETON RESTAURANT COMPANY

How would you describe yourself ? A hard-working, travel and sport loving family man. Where is home? And work? Christleton is home and I also spend a lot of my working time in the village at the Ring O’ Bells, with a decent chunk in Chester at Urbano32 and Burger Shed. What did you want to be when you were younger? A sports journalist, until I got a part-time job in a pub restaurant and knew I wanted my own place one day. I was bitten by the hospitality bug! Name a few of your favourite places to be... We love to holiday in America, whether it be the hustle and bustle of a city such as New York or LA or the sunshine and theme parks of Florida. For a short-haul trip, Portugal is a family favourite as well. London is our go-to spot for inspiration, and to chill and enjoy some great dog walks we love Cornwall and the Cotswolds. What or who inspires you? My team whose enthusiasm and passion keeps me young! Industry-wise Danny Meyer (Union Square) and Nick Jones (Soho House), who are consistently delivering quality venues. And of course, my family. My wife has just opened a coffee shop called Kooŵ ŵ in

I got a part-time job in a pub restaurant and knew I wanted my own place one day

Christleton. She has overseen the design, build and created a fab team with a great product that is already hugely popular. What was the last gift you gave someone? A necklace to my wife from me and the kids for Mother’s Day. Tell us a secret/fun fact? I’ve always been a fan of trainers, but during lockdown, this turned into an obsession. I’m always on the hunt for the next “grail shoe” for my collection. Who or what would you place in room 101? Rude people in all walks of life, but particularly customers who are not kind to our staff and to hospo staff in general. What would your Mastermind subject be? Either the England cricket team from 1977 to 1987 or Middlesbrough FC in the 80s. What’s been your biggest life lesson? Always try for a good work/life balance. This can be very hard, especially when you work for yourself, but you have to make time for the family. Those special moments have to be experienced. www.ringobellschester.co.uk www.ubano32chester.co.uk www.burgershed41chester.co.uk

The Risin isingg Clara Ruggard discusses her role in Sky Original’s new supernatural crime thriller, The Rising, adapted from the Belgian crime thriller Beau Séjour

N

eve Kelly (Clara Rugaard) is dead. Understandably, she’s scared and confused by this new (non) existence, but moreover, when she realises she has been murdered, she’s furious. Determined to find her killer and get justice, she takes advantage of her new supernatural abilities to go where the police can’t and investigate her own death. In doing so, she uncovers deeply buried secrets and is forced to re-examine everything about her life and the people she cared about. Neve’s return forces everyone around her to change, confess, or start covering their tracks – including her longstanding boyfriend Joseph Wyatt (Solly McLeod), and his enigmatic cousin Alex Wyatt (Nenda Neururer). With a distinctive tone and visual style, The Rising is a story about love, justice and the cost of pursuing the truth in a world that wants to keep it hidden.

In the trailer for The Rising Neve says, “I won’t be somebody’s victim.” Is that the key line for you? Yes, it is. One of the reasons why I think this show is unique and interesting is because it does the beautiful thing of reimagining the ‘dead girl’ story and gives the

victim a voice. It’s all through the victim’s perspective and through Neve’s eyes. The drive and the force is coming from her. ‘That’s not how my story is going to end.’ I think that that’s clever and really cool.

What is missing from Neve’s life before her death? I think that Neve is essentially a big fish in a very small pond, and I think that thought is terrifying. It’s that whole creature of habit thing. This is 26

The CHESHIRE Magazine | Feature

what she’s known. The people that she loves are there, but she wants more. There’s this internal struggle that Neve carries with her throughout the show.

How close is Neve to her mum? And how did that change when her parents split, and Maria got together with Daniel and his kids? They’ve always been a unit. Neve and Maria have always shared something very special. They are like partners-in-crime. They’re this family of artists that come into another family that are a bit less arty and who have got a regime and a schedule. Neve and Maria are a bit all over the place, which is a beautiful dynamic. We had discussions with director Ed Lilly and production designer Sami Khan and the whole art department about how Maria’s and Neve’s art has similarities, but they are not the same. There are those big pieces of amazing artwork throughout the whole show.

How would you describe Neve’s bedroom? It’s the artist-meets-the-motocross-rider. It’s the competitive, sporty tomboy. It’s very artistic in

terms of her clothing and all the art on her walls. She’s constantly trying to express herself and have an outlet, because it’s that internal struggle that she carries with her. She can’t really pinpoint and formulate or put it into words, so she’s got all these other mediums to try to express that through.

What conversations did you have with Grace Snell and Frances Hounsom about Neve’s look, particularly when she first rises? We had so many conversations. I was in LA when I booked the job and I remember being on Zoom with Fran about the hair, which I knew was going to be a big thing. I had long hair and I’d never done anything drastic with it, never really dyed it before. Fran was showing me this mood board and I’m thinking, ‘Ok, we’re doing it.’ Fran is an absolute artist as is Grace. 27

I couldn’t really figure out why and then I was like, ‘Oh, it’s because I’m being ignored. I am literally being ignored by everyone.’ I was really fighting my corner trying to be seen and heard as Neve and I was getting nothing back. It was quite strange having to navigate that. I feel for Neve. It’s tough. (laughs)

How was your motocross training with Katy Bullock?

What was it like stepping into the lake? Ooh, bit nippy. I mean it was fun. It’s fun to complain in the moment because it was freezing and my lips were blue but you come away with such amazing experiences. I would never have done that had I not had to. It was invigorating. I do take cold showers from time to time now after that because of the whole Wim Hof idea. But it was freezing.

What was your thought process on how to play Neve within scenes where no one else can see her? Honestly it was quite wild. We had started shooting and on week two I was feeling really sad. 28

So much fun. It was my first time on a motorbike. As much as I would love to say that I was really good I spent a whole week learning and we took baby steps. We started off on an electric bike and then worked our way up to the big boys. Then Solly McLeod just waltzes in halfway through the week and gets straight on the big bike. This was my first time of me seeing him as well. I was like, ‘Screw you, man.’ (laughs) He’s got a real flair for it. Those bikes are incredibly heavy. I took personal training sessions to try and build up muscle around my shoulders and my arms because I really didn’t have much of that before. If you’re a motocross rider you really do have to have a strong upper body to keep those bikes steady.

Do you come from an athletic and dance background? Did that help at all with the physicality of this role? I did ballet for 10 years. I started when I was three or four years old and then kept going, I eventually had to stop. It was one of those things where I reached an age where I had to pick what I wanted to do and acting just trumped it. Also dance isn’t my greatest strength. The ballet training has hopefully given me some posture.

“One of the reasons why I think this show is unique and interesting is because it does the beautiful thing of reimagining the ‘dead girl’ stor y and gives the victim a voice” You and Nenda Neururer have great onscreen chemistry. Did you just click when you first met? I just love her so much. She’s amazing and she brought such levity on set and made it all very light and fun and she’s just a brilliant actress as well. I remember when we first met finding out she was Austrian and me being Danish and us being in Manchester with our English accents in a British show was quite a wild coincidence. We spent a lot of time talking about that being foreigners. She’s great.

What do you hope audiences take from The Rising? Did you do any research into motocross? Are there a lot of female riders now? There are quite a lot. I got taught the most by Katy. She is such a powerhouse and so cool. There is definitely an element of Neve that is taken from her. Just her go get it attitude.

I remember reading the script and reading Neve, I don’t think I’d ever seen characters that were so complex and raw and tangible in a high concept supernatural crime drama. The contrast was just really interesting. It grounds it so much and I think that is also what makes it so relatable even in a world that is quite out there and hard to imagine. I hope that they will vouch for all these people. The Rising comes to Sky Max 22 April, with all episodes streaming on NOW.

How was the mortuary scene to play? Was that emotionally one of the toughest? Yeah, I remember reading that scene and feeling just hollow after it and really quite shaken up. The whole visual of it and the idea of you coming across your own body and taking your own hand and consoling yourself, it’s just so powerful. It was quite a tough scene to shoot.

Do you have a favourite scene? The mortuary scene was very strange – the two Neves – especially because I had to be the one Neve and then the other. Playing dead, I’ve done it a few times now but it’s not as easy as people would think, especially when there are close-ups of the dead face. If there are lights on you and, on your eyes, even though they are close it’s so hard not to flinch. It was fun to shoot but strange. 29

I’ve been cleansing, editing and refreshing client’s wardrobes for over 17 years now, so this month’s article is dedicated to giving you my top tips on how to flip your wardrobe from winter to spring, get rid of the pieces you didn’t wear and offer some inspiration to inject new life into your wardrobe

#5 - Repeat the same for your spring/ summer wardrobe. If you didn’t wear the pieces last spring or summer, then it’s time for them to go. #6 - Have some fun! Experiment with your existing clothes and create new outfits.

ANDREW GRIMA VINTAGE RING AT OMNĒQUE

#4 - Re-sell the clothes that have tags on them. Clothes that you may have bought because they were a bargain, or you’ll slim into them, or you forgot you’d bought – you won’t miss them, so get rid and recoup some of the money you’ve spent.

We always need to refresh our existing wardrobes as there will always be a new trend or a statement piece that will update a classic black dress. Check out my favourite pieces currently available to spice up your style. And, if this seems a bit overwhelming and you don’t know where to start, get in touch and I can talk you through the service I offer ‘The Closet Edit’. #8 - Put your clothes back in your wardrobe or dressing room with the spring and summer pieces at the front – autumn and winter can go further back; we hopefully won’t want any of it for quite a while.

#3 - Clothes that won’t be worn again, decide whether to give to charity, family and friends or sell. There are some great reselling websites, apps and boutiques now – get in touch if you want me to send you suggestions based on the brands you want to sell.

#7 - Close the bin bags securely so you don’t get the urge to put items back in your wardrobe.

#2 - Separate your winter wardrobe into sections; • Pieces you wore this winter and will definitely wear next winter. • Pieces you wore that are tired and need to go, or you won’t wear next winter. • Pieces you didn’t wear at all this year.

EXPERT DANIELA DOBBIN, MANAGING DIRECTOR AT DD CLINICAL, CHESTER The Importance of SPF Are you Sun Smart? As Summer approaches, and we enjoy the warmer weather most of my new clients say this is probably the first time they consider wearing SPF. However, UV generated from the sun is ever-present and we should be thinking about protecting skin from damaging UV rays all year round not just when the sun is shining, or when we are relaxing on the beach.

Who Should Wear SPF? Everyone! Regardless of skin tone, age, or ethnicity we all need to protect our skin. Just because you cannot see your skin burning, does not mean it's not being damaged. We all need to shield, nurture, and protect our skin from damaging UV rays. UV can also aggravate skin concerns and conditions such as rosacea, pigmentation, acne and dehydration. Did you know that people who use an SPF 15 or higher show 24% less skin ageing than those who don’t use sunscreen daily? There are different types of UV rays such as UVA and UVB which we must protect our skin from. UVA (AGEING) Ultraviolet A penetrates deep into the skin and causes long- term skin damage, ageing and wrinkles. UVB (BURNING) Ultraviolet B causes surface level sunburn and visible redness. Here are some quick reminders to ensure you maintain healthy, youthful skin; • Apply SPF generously to get an even level of protection. Around a teaspoon for the face and a shot glass for the body • Reapply every 2 hours when exposed for long periods and after swimming/ sweating • Seek shade and protect vulnerable areas by adding a hat and sunglasses • Don’t forget to apply SPF to your ears and the back of your neck • Remember that UV rays can penetrate glass therefore consider wearing SPF when sitting in the car or by a window • UV rays reflect off light surfaces such as snow, sand and water intensifying the exposure. It can be quite confusing knowing which type of SPF you should be using and why but as a rule, here at DD Clinical we recommend all clients purchase an SPF 30 or 50. This will ensure that your skin has a good level of protection throughout the day to maintain healthy looking skin. Generally, physical sunscreens are better for more sensitised skin.

NEW FROM CHANEL With its powdery pink, “boudoir” feel, the new Coco Mademoiselle Velvet Body Oil invites you to delight in the pleasure of pampering care. Indulge in its lively, contrasting composition that perfumes the body with a distinctive, lingering scent. This clear body oil, held in a spray bottle, can be applied after bathing or at any time of the day. Its silky, dry oil texture perfumes the skin and gives it a beautiful, satiny sheen. RRP £60, www.chanel.com

New Cheshire Spa Independent family-owned Manor House Hotel in Alsager has launched a new luxury spa that includes a stylish new 15metre serenity swimming pool with a surrounding boardwalk, glass ceiling and luxurious sofas. Poolside, guests can also enjoy relaxing in the new Finnish sauna and steam room. Outdoors in the new courtyard, a Salt Shed experience offers a Himalayan Salt wall, lavender cauldron and ergonomic seating where guests can relax in 40 degree heat with a guided meditation session. www.manorhousealsager.com

Up to 90% of skin cancers are preventable by adopting simple sun safe strategies. To defend your skin from UVA and UVB rays, apply a broad-spectrum sunscreen with a high or very high rating (SPF 30 to SPF 50) daily. By doing this simple step, you will decrease your risk of skin cancer and prevent premature ageing. www.ddclinical.com 47

All You Need Is Sleep My top ten tips for quality sleep to ensure a healthy life

#1 - Minimum of 7 Hours Sleep Did you know that sleep is so important to stay at a healthy body weight? Sleep deprivation tends to result in a bigger appetite and craving food that contains more sugar and fat as well as having a lack of energy and concentration. #2 - Bath Before Bed Soak in a magnesium bath for 20 minutes as part of your night time routine. Various studies show that magnesium is effective in reducing anxiety, which is a main source of Insomnia. By adding some Magnesium Chloride Flakes to your bath, you are utilising a pure, natural mineral remedy to settle you into the perfect slumber. #3 - Do Not Disturb Over the years we have become more and more aware of the disruption caused by technology usage when it comes to sleep. Research has proven it is no longer just the blue light that the screen emits that causes us unrest, but also the overall brightness of the screen. I leave my phone outside my bedroom in do not disturb or airplane mode. In doing so, I sleep soundly knowing that I can deal with anything that arises through the night when I am refreshed in the morning. #4 - Total Darkness You should aim to sleep in complete darkness, or as close to it as possible. Blackout blinds are essential, and I like to sleep in a silk eye mask every night.

#5 - Soft as Silk Silk bedding is very breathable and its light, soft feel comforts the skin. It is known to be very responsive to body temperature, meaning it keeps you cool during the summer and warm during the winter. I recommend the GingerLily silk bedding, it’s amazing quality and is made from 100% Mulberry silk. #6 - Workout Any form of exercise and a good workout during the day is a great way of encouraging good sleep hygiene. Moderate aerobic exercise increases the amount of deep sleep you get which is when the brain and body have a chance to rejuvenate. #7 - Stay Grounded An earthing bedsheet is scientifically proven to improve both your quality and pattern of sleep helping you wake to feel significantly rested, refreshed and energised. The health benefits of using an earthing sheet include reduced inflammation in joints and reduction in aches and pains.

#8 - Naturally Nourishing Some foods are better for you than others when it comes to sleep. Cherries for example contain tryptophan which produces serotonin which is cleverly converted into melatonin, a key hormone for regulating sleep. The worst things you can have just before bed are ice cream, alcohol, chocolate or fried food as these increase blood sugar and make it more difficult to get to sleep and stay asleep. #9 - Time for Tea Herbal teas have long been used for relaxation and sleep, and there is scientific evidence to support herbal teas as a holistic way to reduce fatigue and improve sleep quality. #10 - Sleep on Cloud Nine Invest in a high-quality mattress because we spend, on average, one-third of our lives in bed. Getting a night of quality sleep can depend on the kind of mattress you sleep on. Your mattress should provide comfort, support and proper spinal alignment. I would highly recommend the mattress I have recently invested in from Arighi Bianchi – the Vi Spring Tiara Superb.

Do You Still Date In Your Relationship? Relationship Coach Alex Mellor-Brook, shares his advice on getting your relationship back to its best

W

hen I coach couples, ‘do you still date each other?’ is one of the first questions I ask and you’re probably sitting there reading this with the same expression they have. Why is this such an important question? Divorce rates are on the rise at this time of year and if you’re thinking enough is enough, I want you to stop, take a moment and read a few of these pointers before making any decisions. Divorce is tough, but dating again is tougher. You’ve already found and invested your time and energy in the person you’re currently with who you thought was incredible at some stage in the relationship. So why have things stopped being so great? Here are some great tips to help you get back on track.

#1 - Communication Being able to communicate with each other is extremely important as misunderstandings lead to frustration and arguments. It isn’t just about talking to each other but also listening and making sure your partner has understood. Getting the timing right to communicate is also important because distractions have an impact on being heard and understood. Set aside time so that both partners can talk about

54

feelings or situations, whether that be financial, children or career, and for events that are happening in their lives.

#2 - Affirmations These are so important as they express how you feel about your partner, how important they are to you and also help your partner to feel good about themselves, which in turn, keeps the relationship healthy. It can also highlight that you are paying attention to them and their needs, expressing gratitude for something they have gone out of their way to do for you, complimenting on a new hairstyle, new clothing or jewellery, etc. Perhaps they achieved something at work or conquered a personal goal. Affirmations are something you naturally give each other at the beginning of your relationship, they don’t need to stop simply because you got married.

#3 - Respect They say respect has to be earned. In a relationship, it is something you have to be willing to give freely. We are all individuals and have different opinions, goals and values, so if we don’t respect these differences it may lead to hostility and resentment. Whether that is your partner’s space, time, thoughts, possessions or anything else,

you are expressing the fact you have respect for the person you married and acknowledging that all these points are important not only to them but also to you.

#4 - Physical Contact Physical contact and intimacy are essential for a healthy relationship. From simply holding hands to the act of making love, solidifying the bond between couples. It encourages the body to release chemicals like norepinephrine, dopamine, and serotonin, which help create the feel-good factor and are well known as the ‘love chemicals. Without physical contact, you could lose the close connection you have and drift apart.

#5 - Making an Effort Making an effort is so important. To make a relationship successful, you have to work at it. Not just working on any of the points highlighted in this list, but also thinking about what you may have done when dating early on in your relationship. Little things like breakfast in bed, buying your partner’s favourite treat or flowers, booking time for just the two of you at a nice restaurant or wine bar, a weekend away, attending a live gig, trying something new like a course or event, visiting somewhere that has special memories for your partner or the both of you. Pick something that is relevant to you as individuals but also as a couple.

attending a cookery class or wine tasting event, to working as a team in sport or activities. Visiting new places and having shared new experiences help build the bond between the two of you.

#7 - Honesty Being honest can sometimes be hard, but if communicated in the correct way it can highlight and help resolve differences of opinion or annoyances. How you present honesty is important as being too direct, blunt, insensitive or sarcastic can be perceived as aggressive which is counterproductive. How you receive these truths is also important, so always validate, never dismiss and don’t use this honesty against your partner during any heated argument you may have in the future, as you will lose their respect and trust.

#8 - Never Compare Comparing yourself to other couples or relationships is an impossible situation. Like posts, images and videos on social media, being a perfect snapshot of a perfect life creates an unrealistic perception because you never get to see what actually happens off-camera. A marriage without a little discord could even indicate that someone in the relationship isn’t expressing their true thoughts or feelings and actually letting their underlying emotions fester. Having a disagreement in a marriage can be quite healthy, as we all have different thoughts and opinions, so long as any misunderstanding doesn’t dominate or lead to emotional or physical abuse. www.selectservices.co.uk

#6 - Time Together A relationship is built on trust and trust is built when you do things as a couple. Achieving a task, solving a problem together or even competing as a team. It creates memories which hopefully have good emotions attached with them. From

MEET THE CHEF:

SAMUELE

L EON I Head Chef at Veeno Chester What’s your first food related memory? My first food memory is eating carbonara. I have loved it since when I was a child, my dad used to make it a lot for us. When did you know you wanted to be a chef? When I was very young, back in primary school. I loved to help my father cook ’porcetto’ (little pig) at home, this is still one of my favourite things to cook and eat now. Where were you trained? I was trained in sunny Sardinia in a cookery school. My first experience of cooking in the real world was at a school where I got to make different things every day, so the job was never boring.

What do you love most about your job? I love making customers happy. I also love to create with new dishes for our specials at Veeno when possible, like last week I created a dish which was gnocchi with nduja, mascarpone, lemon and all the herbs which was delicious. Describe your style in three words. Traditional. Rustic. Experimental.

What’s your favourite dish to create? Since experimenting at Veeno I loved making tortellini with truffle mortadella and stracchino. At home, I love to create a pork shank, mashed potatoes and artichoke with truffle. Where do you draw your creative inspiration from? Working in Sardinia, I had a lot of opportunities to create and try new things while I was working in the summer season. I also worked in France so I have different skills that I learned there to add to my own style of cooking. What four ingredients are necessary for your kitchen? I’d say garlic, spices, herbs and truffle. If you could prepare a meal for anyone, who would it be and what would you make? It would be for Gualtiero Marchesi, who is a very traditional Italian chef that I looked up to when I was learning. I would cook my special duck breast, pear and sweet red wine reduction with an artichoke puree. What are you most proud of in your career? I cooked for former Manchester United manager Alex Ferguson at my old restaurant. Once he had finished his meal he came over to thank me personally. Who is your biggest supporter? Eleanora, my girlfriend. She’s amazing! Are there any foods you just don’t like? Coriander is a no-no! www.veenobars.com 59

Best for... Coastal Indian Cuisine

Location There is a new kid on the block in the heart of Wilmslow that goes by the name of Potyo. Pronounced po-tio and known as ‘greedy boy’ in Konkani, the native language of Goa, Potyo is the brainchild of owners Jason and Milena. Having dreamt up the concept when holidaying by the beach sipping cocktails and savouring the local cuisine, Potyo brings the spirit of the relaxed Goan lifestyle from the coastal strip of India to this small town in Cheshire.

Venue Previously occupied by a bespoke tailors, the stunning three story building now transports you to what feels like a relaxing beach club with fresh white washed walls, blue and white furnishings and melodic chill out music playing in the background. You’ll also notice some impressive artwork scenes from the famous Indian cartoonist Mario Miranda adorning the walls.

The Menu The menu primarily focuses on the Malabar or the West Coast of India and offers a variety of small sharing plates and curry bowls. Unable to choose a starter from the sharing plates, I opted for a sharing platter of PFC Glazed Chicken Wings, Prawn 65 and Kori Ghee Chicken, with the first two dishes being the stand outs. The chicken wings were succulent, crispy and finished with a sweet jaggery glaze, I could have easily finished a whole portion, if not two. There are a few myths surrounding the origins of the name Prawn 65 but it’s more commonly accepted as originating from Hotel Buhari, Chennai in 1965. The prawns are fried in mildly spiced rice and gram flour batter and tasted fresh and crisp. Of the coastal curry bowls, I sampled Lamb Xacuti and Mai’s Creamy Butter Chicken which were both mild and aromatic but extremely tender, especially the braised lamb. As a lover of spice however, my two favourite dishes were the Pork Collar Vindaloo and the Boatman Fish Curry. This Boatman recipe of cod with ginger, turmeric and coriander was delicious and originates from the backwaters of Kerala where fishermen cooked their lunch on the boat using the catch of the day. The Vindaloo is not the traditional dish you may be familiar with as the pork is pickled, however you only taste the sharpness of the vinegar in the first

mouthful and the flavour and heat slowly develops to give a real kick. I thought this dish was exceptional and it would be my curry of choice next time I visit. To accompany the curries, I had the coconut rice with mustard seeds which was fragrant and light and the Malabar Porotha layered bread which was perfect for dipping. There is a small dessert menu if you have room. My friend and I shared a Serraduru, a cheesecake like eggless custard on crushed biscuits topped with roasted cashew nuts.

Experience Jason and Milena have done an amazing job in bringing their concept to life. They have created such a wonderful atmosphere, my visit felt more like an experience than just simply a meal. Not forgetting the drinks menu which has a small but good selection of wines and cocktails, I’d highly recommend the Australian Riesling. So, if you’d like to experience Goan coastal dining for yourselves, head over to Potyo. www.potyo.co.uk 61

Lun uncc h at L ucian ciano o Angela Seddon was invited to Gino D’Acampo’s new restaurant in Alderley Edge to trial the spring/summer menu

S

et In the old Piccolino’s restaurant, in ‘pole position’ in the village, is the newly launched Luciano’s, the latest offering from the ubiquitous Gino D’Acampo. Gino himself paid a visit to launch their new spring/summer menu and I got to sample some of the delicious dishes on offer. The restaurant itself looks lovely, with counters full of beautiful looking, fresh and beautifully prepared food, and a busy kitchen. The décor is unchanged from its previous occupants, some may think this is a mistake, but in this throwaway culture and the difficulties the whole of the hospitality industry has had to face, I found it reassuringly sensible. Our host for the afternoon was the man himself, Gino, a very smartly dressed showman, who was incredibly charming with

62

his dazzling bright, white smile. He talked through each of the dishes, and recipes from his family, explaining where his inspiration was from and why each dish was important to him. Being passionate about Italian food myself I was looking forward to trying them. We started with Taleggio and pea arancini; remarkably light. I have had far too many arancini that are akin to a shot put, but this was delightful, full of flavour and the addition of saffron gave it another subtle dimension. Next was the courgette flower fritti. These treasures are notoriously difficult to work with and don’t necessarily make for the prettiest dish, but in skilled hands are gorgeous. Well, the chefs had worked their magic. Filled with beautiful whipped buffalo ricotta, lemon and Sardinian honey, it was a true taste of spring. Not overly sweet with the honey, but fresh, light and very moreish. Then I tried the salmon and avocado tartare, a modern twist on a classic. I’m not the biggest fan of tartare, (often finding them a little too

slimy for my palate), but this one had me challenging my preconceptions. The addition of smoked salmon really helped and made it taste quite luxurious and rich. Following that, we had rocket and ricotta tortellini with sage butter and toasted pine nuts. The pasta was beautifully thin and the filling delicious. The crispy sage leaves and pine nuts added a lovely texture. Then came a rack of lamb, peas and smoked pancetta. Cooked perfectly pink, it was lovely and tender. The pancetta was beautifully crisp adding extra flavour to the peas. Finally came the Nutella pizza fritta, caramelised banana and toasted hazelnuts. Surprisingly light and almost choux like, the caramelised banana was delicious. All in all, some very delicious, authentic Italian food. One thing that really impressed me though, was their thoughtfulness and consideration for a lady on my table who had a dairy allergy. The food she had certainly wasn’t an after-thought or a hastily thrown together salad with no flavour. It was all as delicious as the food we had. She loved it. They also have a decent gluten-free menu. I will always be a fan of good Italian food, that’s no secret. Is this place a return trip? Most definitely. Ciao! www.lucianobyginodacampo.com

GREEN MEETINGS With international business travel returning to some form of normality, more companies are making sure that their conferences, workshops and seminars are planned and held in an environmentally conscious and sustainable manner. Many hotels have managed to become completely climate-neutral in recent years through renewable energy sources, the use of organic, regional and seasonal food and the conscious use of resources. Below are our top picks of European climate neutral conference hotels.

Green City wHotel Vauban The Green City Hotel Vauban is a shining example of aesthetic inspiration and energy efficiency - right in the heart of the green city of Freiburg. What is special about this green city hotel is its integration concept. People with and without disabilities work together on an equal footing and with enthusiasm. The hotel offers a meeting room equipped with the latest technology for up to 60 people with functional quality, responsible philosophy and green design. Complementing the normal conference equipment, the hotel has an induction loop for hearing-impaired guests. www.green-city-hotel-vauban.de

Wartegg Castle The perfect combination of tradition, culture and modern architectural design awaits you at Wartegg Castle, the first Swiss Historic Hotel in Eastern Switzerland. The three seminar rooms of up to 60 m2, as well as the large 110 m2 concert hall, are well suited for larger meetings, conferences, workshops, training or retreats. The impressive castle and spacious grounds provide an inspiring atmosphere. From pencils to toilet paper, all products are Ecolabelled and the electricity is 100% green, partly from the hotel’s own small river power plant. www.wartegg.ch

Hotel Milano Scala Schwarzwald Panorama Meetings in the Schwarzwald Panorama are “green” all around, from energy-saving event technology to conference materials from fair and resource-saving origins through to their recyclable materials. The conference service, which is available across eleven event rooms, includes plastic-free lunch packages for in-between, organic coffee and tea stations and healthy energising snacks. Using the hotel’s CO2 calculator, organisers have the option of calculating the CO2 emissions caused by the arrival and departure of all participants. And then offset them by investing in a climate protection project on a pro-rata basis. www.schwarzwald-panorama.com 68

Housed in a historic Milanese palazzo, Milan’s first carbonneutral hotel, the Milano Scala offers three different meeting rooms for a maximum capacity of 80 guests in the largest room. The hotel has a sophisticated energy-saving system with water heat pumps for heating and air-conditioning, an automated system to regulate relative power consumption and magnetic room cards that stop the air-conditioning from running when the windows are opened. IN THE CITY:

B E RLI RLIN N Palacina Berlin Apartments in Schoeneberg offered the perfect base for a cultural getaway for Craig Hough and his partner

Location Located in eclectic Schöneberg, Palacina Berlin offers serviced luxury apartments for both leisure and business guests. The area has many claims to history, as Albert Einstien lived in the Bavarian district (between 1918 -1933) and both David Bowie and Iggy Pop called Schöneberg home back in the 1970s. Most notably, President John F. Kennedy delivered his famous words “Ich bin ein Berliner” from the balcony of the Schöneberger town hall in 1963. With the underground U-Bahn station Bülowstraße or Nollendorplatz just a five-minute walk away, as a guest of Palacina Berlin you are guaranteed easy access to travel within Berlin. You can immerse yourself in the

70

famous Schöneberg district, with its lovingly restored buildings around the Winterfeldtplatz and stroll through the weekly farmer’s market held there. During our stay, we took a short walk to Kaufhaus des Westens (or KaDeWe). Set on several levels, it’s the second-largest department store in Europe (second only to Harrods) and welcomes up to 50,000 visitors a day. The store attracts upscale shoppers with luxury brand names, small designer labels and beauty and home products. Foodies are drawn to the ‘Gourmet Floor’ that is entirely devoted to food, boasting 110 cooks and 40 bakers and

confectioners supplying more than 30 gourmet counters. Sweet treats for the family were quickly purchased here and proved popular.

Apartment On arrival at the gated property, we punched in the pre-communicated code which led us to a coded letterbox where we found our keys. No long, drawn-out check-in was needed here. The property is made up of three buildings, the Front House (Vornerhaus), the Backhouse (S-Flugen) and the Garden House (Milchfrau). The entire property is fitted with CCTV on the exterior (security is a priority here), and automatic sensor gates for the driveway to offer access to the 12 parking spaces that are available to guests. The luxury furnished apartment captured the style and glamour of old world Berlin and offered a home away from home. In design, they have considered all needs and offer attention to detail, with a personalised welcome letter and a book full of local services, information and nearby attractions to enjoy.

The fully equipped, state of the art kitchen and abundant restaurants and bars in the area means you won’t even notice the lack of any on-site restaurant or bar. The apartment sizes range from studio residences to expansive three-bedroom premium residences and are ideal for those who desire spacious comfort when in Berlin. Each comes with swish comfortable bedrooms, mosaic marble bathrooms, televisions, broadband internet, a dishwasher and a washing machine. The only public area is an outdoor courtyard which offers the perfect setting to enjoy a glass of wine as the sun goes down on the city.

Dining Lovers of fine dining are spoilt for choice as the city boasts the most Michelin starred restaurants in Germany. Winterfeldtplatz is full of stylish bars, cafés and restaurants and during our stay in the city and we tried to sample as many as possible during our time in the city. Highlights include brunch (crispy chicken on cheddar waffle with a mimosa) at Frühstück 3000 and cocktails (Smoked Japanese Fashioned) and Asian fused small plates at 1987 XIGON. The main dining event of the trip was a visit to Orania.Restaurant is located in the creative

heart of the city in Kreuzberg at the Oranienplatz 17, a building that dates from 1913. Formerly home to the legendary Oranienpalast Café, as it was known at the time, the venue played host to outstanding concerts. Reviving this identity, Orania.Berlin (the hotel that houses the restaurant) has a vibrant programme of jazz, classical and electronic music concerts, performed by great artists living in the city, as well as readings and film screenings. Surrounded by warm colours, atmospheric lighting and urban chic design, the restaurant hosts regular guests from Berlin and international food lovers. We had the honour to meet managing director and chef Philipp Vogel who runs the hotel with his wife Jennifer. We sat next to the open kitchen and throughout the meal Phillip would take time to talk food, his love for Berlin and to discuss his impressive career, having run kitchens and restaurants in Shanghai, London and Vienna. We watched as he led his team of

chefs, coaching and encouraging junior members, ensuring a smooth service throughout the evening. The restaurant is famed for its four-course Kreuzberg Duck (‘Xberg Duck’) dish that utilises a special Chinese duck oven, which is what we opted for. The ducks were specifically reared in Ireland and a sense of respect for the animal was apparent throughout the preparation and serving of this meal. We are first served an incredible inteshi dashi broth with fresh bread accompanied by a dim sum filled with the duck meat – a taste sensation. The live theatre aspect of the venue then came to life as our waiter came to our

table to present and carve the skin of the crispy duck which was served with crepe-like wheat pancakes that you roll up yourself, along with cucumber and a fruity hoisin sauce. Added small bowls with ginger, and spring onions were also presented to complement. It was during this course the band in the bar area (adjacent to the restaurant) began to play – bringing a little Saturday night energy to the cosy atmosphere previously set. The third course was the main event - XBerg Duck which was a tender and juicy grilled duck breast served with pak choi. Delicious and filling. We proceeded to enjoy the fourth course which was the meat of the duck leg in fried rice, matched with premium sake and read our fortune cookies as we bid a farewell to Philipp and the team. Make Oriano.Restaurant a priority visit on your next Berlin visit.

Personal Note A vibrant city brimming with life, art, culture and an exciting culinary scene, Berlin offers something for everyone. Palacina Berlin offers not only a place to stay but a home from home. With short term lets available for leisure guests or longer-term deals for those on business, the luxury apartments are the perfect base in the city. www.palacina.de www.oregano.berlin

We had never visited the Costa del Sol area of Spain so as we were looking for a weekend break in the sunshine, we thought given the short flight time and forecast sun, this was the perfect time to see why our friends love the area so much. Hotel Don Pepe Gran Meliá was our hotel of choice as we had recently visited other Melia hotels in Tenerife and were impressed with the level of service and how friendly the team were. By keeping within the Meliá brand we thought we would be in safe hands and it certainly didn’t disappoint. After a brief 40 minute transfer from Malaga airport, we arrived at the

hotel to be greeted and escorted to the Premier Lounge, where you could enjoy incredible views of the ocean. During check-in, we were told that we could access the lounge at any time and enjoy complimentary drinks and nibbles, which we did several times throughout our stay. The terrace was a secret sun trap that we enjoyed with views across the pool area and beach. Our room was very spacious, and modern and had sliding doors opening the width of the room allowing you to step out onto the balcony and fully enjoy the setting. The hotel has everything you could wish for, no matter what time of year you visit. The spa includes a Turkish bath and jacuzzi and offers various treatments, an indoor pool which we enjoyed in the mornings, several bar areas where you could relax with a drink and a large outdoor pool that is very much the hub of the hotel. The location couldn’t have gotten any better, offering direct access to the beachfront that allowed us to walk into Marbella’s old town,

the marina and all the various bars, restaurants and shops on the way. We only stayed for two nights but felt like we had enjoyed a break, the team at the hotel could not do enough for you, the food at Tahini was divine and we simply loved sitting on our balcony looking out onto the sea every day. This was a really special trip for us, and Hotel Don Pepe Gran Meliá ensured it was a memorable one. This may have been our first time to Marbella but certainly won’t be the last.

Personal Note From the greeting we received when we arrived, the extensive facilities, brilliant location and superb food everything was just perfect for a lovely luxury break away. We would highly recommend - Meliá Hotels delivered yet again. www.melia.com

Supercars don’t normally look like this, but BMW is adamant that its new M8 Competition can compete with the likes of Porsche. That’s despite having four seats, a big boot and lots of clever luxury technology – none of which sounds very supercar-ish. However, it does come with a massive 4.4-litre V8 engine producing 625hp, which certainly gives it supercar performance. Getting from a standstill to 62mph takes just 3.2 seconds, so with a choice of coupe, convertible and four-door Gran Coupe body styles, this might just be the most practical, most understated supercar you can buy. www.bmw.co.uk

T

his is Aston Martin’s last V12 Vantage, so it had better be a good one. With a ban on the sale of new petrol cars looming, it seems a shame to be saying goodbye to one of the all-time greats. But like a soap opera villain, the Aston Martin V12 will soon be killed off as new emissions regulations effectively outlaw such big, thirsty petrol engines. This, then, is the last hurrah – the final V12 Vantage. Just 333 examples of this special-edition car will be made, and they’ve all been snapped up already. The 5.2-litre V12 is the car’s centrepiece, producing a mammoth 690bhp and propelling the two-door, two-seat coupe from 0-60mph in just 3.4 seconds before it roars on to a top speed of 200mph. That makes this lightweight grand tourer faster than a Porsche 911 and even an Audi R8 supercar.

Although the power is, fittingly, very impressive, the new V12 Vantage is more than just a four-wheeled power trip. The suspension is stiffer and so too is the car’s body, which has been strengthened to improve handling, while Aston has also fitted enormous carbon-ceramic brakes. But at the same time, the car is also lighter than the standard Vantage, allowing more performance and agility. And just to make sure you notice the sporting intent, Aston Martin has made the whole car wider and fitted an aerodynamic body kit. Aston Martin V12 Vantage, £265,000, www.astonmartin.com 80

Grab the Bull by the Horns In the controversial Urus SUV, Lamborghini has created a supercar you can use every day, as James Fossdyke discovered

78

The CHESHIRE Magazine | Drive

M

onty Python helpfully laid out everything the Romans did for us, but what about the Italians? While their predecessors created all the stuff that goes without saying, the modern Italians have created great food, stunning wine and they do a good line in speed boats, but their cars take the biscotti. The Ferrari name is legendary, the Fiat 500 is one of the most desirable things on the market today, and the Alfa Romeo Giulia is jaw-droppingly beautiful. Then there’s all the old stuff, from the sexy Alfa Spider to the incredible Ferrari 250 and from the glorious Maserati 3200 to the unhinged Pagani Zonda, it’s all spectacular. But one Italian car manufacturer takes spectacular to the next level. Lamborghini started out making tractors, and it did so with enough success to pay for Ferruccio Lamborghini, the company’s founder, to own a handful of Ferraris. But Ferruccio wasn’t especially impressed with his Prancing Horses, and he made his grievances known to the legendary Enzo Ferrari, who wasn’t especially impressed with Ferruccio’s opinions. So, in the spirit of great Italian vendettas, Lamborghini made the Miura – one of the most beautiful and most dramatic supercars of all time. Fast-forward six decades and Mr. Lamborghini is no longer with us, but his name has been immortalised in a line of fantastic supercars. From the Countach to the Murcielago and from the Diablo to the Huracan Performante, it’s a family tree that’s brimming with outrageous designs and even more outrageous performance. But like so many performance car makers, Lamborghini has had to move with the times. In response to the success of the Range Rover, Porsche Cayenne and Bentley Bentayga, Lamborghini has gone all family-friendly, building the car you see before you. Yep, this is Lamborghini’s idea of an SUV. Technically speaking, this isn’t Lamborghini’s first SUV rodeo. Back in the 1980s, the LM002 was created for military purposes, but no army wanted it. Then Lamborghini tried hawking it as a road-going 4x4, but no customers wanted it. If we’re being kind, the LM002 was ahead of its time, but if we aren’t, it was a dog. This modern Lamborghini SUV, however,

ought to be somewhat more successful. Under the skin, it’s based on parent company Audi’s Q8, which means all the practical boxes come ready-ticked. There’s space for four adults to sit in comfort, there’s a big boot for all their luggage, and in shock news for those familiar with old Italian cars, everything works. It will even go off-road, although I suspect the number of customers who will take this car over anything more taxing than a muddy field can be counted on the fingers of one hand. Still, it’s good to know the Urus won’t grind to a halt when the snow comes down. But just because the Urus has a sensible side, don’t go thinking they’ve forgotten to make it a proper Lamborghini. Yes, it sits high above the road and it has an extra set of doors, but it still has that low, pointy snout, big air intakes and the curved silhouette that underpins the design of every Lamborghini since the Countach. The Y-shaped tail light signature remains, too, as does the upright rear end and the massive exhaust pipes. Inside, there’s plenty of Audi influence – the touchscreens in the centre of the dashboard are taken straight from the Q8 – but the details are pure Lamborghini. There’s the fussy, cluttered digital instrument cluster, for example, and the complex gear selector arrangement between the seats. Then there are the two drive mode selectors either side of it, festooned with words that didn’t come up in your GCSE Italian paper. It even has a switch marked ‘Ego’ that allows you to pick the suspension, engine and steering settings. But the best bit is the engine starter button. Sitting in the middle of the centre console, the button itself is hidden under a big red safety cage, designed to prevent the button being pressed accidentally. At least that’s what such switches do in their natural habitat: the cockpit of a fighter jet. It’s a small, childish touch, but it just makes the Urus feel more special than something like an Aston Martin DBX or a Range Rover Sport SVR. Press that button and you will wake the 4.0-litre V8 engine that lives under the bonnet. It isn’t as big or as cylinder-rich as the massive 10- and 12-cylinder engines found in the Huracan and Aventador supercars, but it’s still mighty.

Lamborghini Urus Price: From £143,676 (plus tax) Engine: 4.0-litre V8 petrol Gearbox: Eight-speed automatic 0-62mph: 3.6 seconds Top speed: 190mph Power: 641bhp

With the help of two turbochargers, it produces 641bhp and a fabulous rumble. Hit the accelerator and it snarls angrily, like a wounded animal. Thanks to that engine, the eight-speed automatic gearbox and the four-wheel-drive system, the Urus gets from a standstill to 62mph in just 3.6 seconds, while the top speed is an impressive 190mph. It’s a shame it can’t break the 200mph barrier, but that’s a whole new level of nit-picking. For most Urus drivers, 190mph will be more than sufficient. Particularly when the Urus drives this well. Decipher the Italian, ramp up the settings to maximum attack and the Lamborghini will give some pretty serious sports cars a run for their money. For something this big, this heavy and this tall, the way it corners is sublime, with

84

agility and responsiveness that puts hot hatchbacks to shame. And the acceleration is epic. Pull out to overtake slow-moving traffic and you’re through before you even get a chance to gesticulate manically at the offending driver. Then, of course, there’s the noise… Normally, a car that accelerates, brakes and handles this well would come with a pretty serious trade-off in terms of comfort, but the Urus rides admirably. It is definitely on the firm side and picking the softest suspension setting makes the car feel a bit wobbly and unsettled over broken surfaces, but it’s brilliant on the motorway. Long journeys are no problem at all. It’s only around town and on country roads that the Urus judders over bumps, but it’s far from intolerable, even in the slightly firmer mid-level suspension setting. And therein lies the genius of the Urus. It manages to merge all the grown-up stuff – boot space, satellite navigation, comfy seats – with proper supercar performance. It isn’t the only car to do that, as Aston Martin, Bentley and Porsche will gladly point out, but it does it without sacrificing too much of the drama and aggression that makes a Lamborghini special.

Q&A

with

JENNI GREENWOOD, DIRECTOR OF GREENWOOD INTERIOR DESIGN

Tell us a bit more about you... I’m a travel, fashion, art and animal lover, born in Cheshire in 1990 and spent all most of my teenage years in Chester, where I live now. Whilst completing my fine art degree, I had a part time interior design job. I quickly learned that this is what I was born to do and decided to pursue my studies further with this. I got my first full time job for a high end residential interior design company in Chester where I worked on properties around the area, London and in Antigua. In 2016, I was headhunted by a recruiter to work on a project in Mayfair, London in which I was lead designer for the entirety of the project. At the end of the project, at the start of 2020 the finished building was valued as the most expensive private property in Europe. A documentary was made of the design process by Channel 4, “Britain’s most expensive home”, which you can still watch on 4od now. Who are your greatest influences? One of my greatest influences who I have loved from being a small child is Frida Kahlo, the Mexican artist, known for painting self-portraits. She was avant-garde for her time and her work reflected pain, feminism and is recognised by the LGBT community to this day. Another great influence in my life has always been my parents. They have always shown that hard work, tenacity and determination will always win. They have been successful in their career but also in happiness and well-being. I like to remember this often. What have been some of your best experiences at work? The pinnacle of my career was whilst working on the Mayfair project, which I mentioned earlier. Working alongside such specialists in their field and amazing, driven people was such an inspiration every single day. I learned so much whilst working on this project, one being of how

to lead a time of people successfully which I implement into my own company now. Traditional vs contemporary style? I love to use both in my designs. I love the juxtaposition of how both elements look together. “There are two things that make a room timeless; a sense of history and a piece of the future.” What would you consider your greatest achievement? Personally I’d say having the courage to set up my own business at the start of the pandemic. This wasn’t an easy decision to make but one that has been totally worth it. www.greenwoodinteriordesign.com

P.S. What would your super power be? Super power would be teleportation so I could literally be anywhere in the world with a click of my fingers. Last book you read? Last book I read was Vogue Magazine, to be honest, I very rarely have time to read books. I do listen to podcasts and I’m currently listening to a variety on how we can deal with anxiety. Dream buy? Dream buy would probably be a massive finca (farm in Spanish) in Ibiza.

BU LGA RI HOTEL With refreshed interiors and launch of one year residency by eminent Italian pastry chef and chocolatier Gianluca Fusto, The Bulgari Hotel in London reveals the Bulgari Lounge

T

he lavish hotel in Knightsbridge called upon renowned architectural and interior design firm, Antonio Citterio Patricia Viel (ACPV) - the practice that designed the original hotel interiors - to create a fresh look true to Bulgari’s heritage as the master of coloured gems. The reimagined and newly defined space features a new ‘Dolci’ experience, as the hotel welcomes a one-year residency from eminent Italian pastry chef and chocolatier Gianluca Fusto and also launches Il Cioccolato.

The Bulgari Lounge - Design

The Bulgari Lounge offers elegant all day dining in the comfortable glamour and considered taste of a beautifully appointed modern Italian living room. Inherently Bulgari in style, the new look reveals gem-coloured rugs made of wild silk in emerald, blue diamond and citrine. This fresh injection of colour is offset by cognac-hued leather sofas, armchairs in neutral tones, Calacatta marble coffee tables and a central table in black oak. Particular focus is given to the Bulgari eight-point star which is embroidered in gold on bespoke green silk wall hangings. A custom made raised polished chrome and silver mesh partition transforms the space into its own distinct destination, with smaller seating areas

92

and half-height curtains in a soft bouclé sheer creating a cosy intimacy - the perfect spot to enjoy food and drinks at any time of day. With an Italian eye to every detail, ‘Dolci’ - covering everything sweet on the menu - will be served on delicate porcelain plates and dishes with a floral design by Italian manufacture Ginori 1735. A further aspect of the refresh is the addition of artworks from the Bulgari Archives; vintage adverts from the Dolce Vita era featuring images of celebrated actors and models Virna Lisi, Benedetta Barzini and Marisa Berenson adorned with iconic Bulgari pieces. Patricia Viel, CEO and co-founder of Antonio Citterio Patricia Viel commented: “The Bulgari Lounge is much loved locally as a relaxed and elegant space for gathering in style, depicting the considered taste of modern Italian comfort. We are excited to reveal a colourful new design to take Bulgari Hotel London into its next decade at the heart of Knightsbridge.”

Gianluca Fusto Residency and launch of Il Cioccolato As a highlight of the new menu, The Bulgari Lounge introduces ‘Dolci’ by eminent Italian pastry chef and chocolatier Gianluca Fusto. Described by Sky Arte as the ‘Italian architect

of modern pastry’, Fusto is known for his exceptional contemporary artisanal pastries. Using only the most precious ingredients, his minimalistic design reveals complex textures with bold and unexpected flavour combinations. Beginning a year-long residency at the hotel, Gianluca Fusto’s desserts, ‘Torte’ (cakes) and ‘Mono Porzioni’ for one will be introduced to The Bulgari Lounge menu in addition to the arrival of Il Cioccolato; Bulgari’s signature handcrafted “chocolate gems”. Menu highlights include Torte, such as the ‘Black Caprese’, made with olive oil, black olives, chocolate and almond, and a selection of Mono Porzioni such as the ‘Sicilian’ made with fennel, citrus and almond and the ‘Maya’, made with caramelised sesame seed, Belize chocolate, and two kinds of caramel. Il Cioccolato creations at Bulgari Hotels & Resorts use the finest ingredients and are developed with the same exquisite vision as Bulgari gem designs. The beautifully crafted chocolates capture subtle flavour notes in masterful and unexpected combinations, such as Porcini and Black Pepper. Limited edition boxes and seasonally inspired creations make exceptional gifts for all kinds of occasions, or guests may choose to enjoy a hand-picked assortment alongside a new drinks pairing. www.bulgarihotels.com
