How would you describe yourself ? Fun, fast paced, hardworking and a good friend. I’ve wrote this about ten times... why does it always sound awful? Where is home? I’ve just moved from a little Cheshire village to a new apartment in Deansgate, Manchester City Centre with my partner Max. At 205 metres up the views are incredible, and we worked non-stop to get it finished for Christmas. And work? The great thing about the new place is they have co working space on offer at the development. When I’m not with clients at their base I can simply go downstairs for meetings. I think it’s important to have a different space between your home and work. What did you want to be when you were younger? I always wanted to be an Actor, Vet or Paediatrician. Name a few of your favourite places to be... I love travelling and seeing new places, experience new cultures and meeting new people. Dubai, New York and obviously Liverpool are some of my favourites. However, some of the best places are here in the UK. I adore the Cotswolds, The Lakes and parts of Scotland.

“No matter what life throws at you keep going, learn from it and move on” What or who inspires you? My whole family but especially my Grandparents who were a huge inspiration. I lost my Grandma in 2020 to Covid and the lessons she taught me on manners, kindness, generosity and following your dreams will always stay with me. What was the last gift you gave someone? A Nerf gun for my Nephew which I could have easily kept. I could play with them all day! Tell us a secret/fun fact? I was once on Blue Peter singing Oliver. Since my voice broke the only places I sing now are the car and shower. Who or what would you place in Room 101? Cheap thin tin openers / Amazon packaging! Why do they use the biggest box for the smallest items? Oh, and aggressive drivers. What’s been your biggest life lesson? To be resilient and positive. No matter what life throws at you keep going, learn from it and move on. Discover Nature in the North

Dunham Massey is a

beautiful area of National Trust parkland which is home to a herd of roaming fallow deer. Introduced to Britain over 1,000 years ago, fallow deer have been residents on the estate since it was built-in 1748, and they are free to roam around the parkland for visitors to see. Winter Running Routes Gardener’s Trail, Tintern Abbey Welsh bank of the River Wye, Tintern, Wales

At Tintern Abbey, founded in the early 13th century by Lord of Chepstow, has a few different trails but the Gardener’s course is a favourite. On this six-mile trail, you can cross the Tintern River via the historic stone bridge whilst enjoying the green scenery containing 200-year-old beech trees! Also, halfway through the route, you will discover the Colclough Walled Garden and ruins of the head. gardener’s cottage on the return path to the trailhead.

Regent’s Canal Trail Limehouse Station, through the heart-and-soul of London

The forest road trail of Afron provides breathtaking picturesque views of the river Mawddach including the beautiful waterfalls on the river Gain and Mawddach. It’s a relatively low-level seven-mile route on forest roads however it does include a rougher section of private track with short steepish climbs and a steep forest road descent.

With a distance of 4.6 miles, this route starts in Regent’s Park following on to Regent’s Canal Towpath. The trail traverses by the world’s oldest scientific zoo, London Zoo, where you can catch a glimpse of the resident tigers, zebras and more. You will also find yourself passing through the once industrial (now hip and alternative) Camden Town, where you can pick up a bite to eat at the market before the run back through Regents Park.

Bob Graham Round, Lake District Forty-two fells, starting and finishing at Keswick Moot Hall Hadrians Wall In the city of Carlisle, England Hadrian’s Wall, also known as the Roman Wall, has plenty of gradients to get your blood pumping. The route consists of five miles with impressive views and historical interest, taking you along part of the 73-mile Roman wall. If you’re looking for a little distraction on your route, this is the perfect place to run. 16

The Bob Graham Round is a fell running challenge in the Lake District, famously named after Bob Graham, who in June 1932 broke the Lakeland Fell record by traversing 42 fells under 24 hours! He has collaborated with artists such as FKA Twigs and SL. His style is renowned for blending elements of Afro-beats, grime and drill. 220 Kid A British singer and song writer from Brixton, 220 Kid adopted the name after running 220 miles in bright pink pants for charity after his beloved godfather passed away. Last year he released dance-pop song “Don’t Need Love” featuring Gracey, reached a peak of number 9 for two weeks on the UK Singles Chart. Instagram @220kid

The Snuts Gracey Brighton born Gracey has written songs for Sub Focus, Lorde, Olly Murrs and Kylie Minogue. As mentioned above her breakthrough came with 220 Kid last year in which she followed up with a release called “Empty Love” which featured the singer Ruel. Her first headline tour was postponed last year due to the pandemic, but she is all set to return to live music this year. Instagram @gracey

The Scottish indie-rock band consists of Jack Cochrane (vocals and guitar), Joe McGillveray (guitar), Callum Wilson (guitar) and Jordan ‘Joko’ Mackay (drums) and were formed when the members were in school. In December, the band announced the release of their debut album W.L. on 19 March 2021. The Archers Celebrate 70 On 1 January 2021 episode number 19,343 of The Archers on BBC Radio 4 marked 70 years of the world’s longest running serial drama. Jeremy Howe, Editor of The Archers

A

reflection of life in rural England, The Archers has grown from its original purpose of educating farmers on modern agricultural methods, to reflecting the present-day - all whilst entertaining listeners with the bucolic ebb and flow of the village of Ambridge. Jeremy Howe, editor of The Archers says: “Almost daily and in real time, The Archers has tracked life in the village of Ambridge across 70 years and over 19,000 and more episodes. No work of fiction or drama can truly compare to that. As I look back on this incredible legacy, I am looking forward to the next 70 years of The Archers. What an honour to be the editor at such a moment in the life of an extraordinary programme.” In the past year Ambridge was rocked by an explosion which nearly claimed the life of Lynda Snell at country hotel Grey Gables during renovations. Residents are as yet unaware of the links between this incident and a disturbing case of modern slavery. Elsewhere, in quieter moments, life continued despite the impact of coronavirus, with Emma Grundy leading the charge to take the annual Flower And Produce show online during lockdown. As The Archers 70th anniversary arrived, what first comes to mind for Editor Jeremy

Howe is one particular Archer soon to reach the same significant milestone: “Early in 2021, Tony, the first baby ever born in The Archers, will turn 70. He’s had so many achievements; he’s become a farmer, he and Pat have forged a really strong business and marital relationship, and he’s turned Bridge Farm organic. “Across Tony’s lifetime the audience has heard all this. Following a person’s life across three score years and ten in real time has never happened in fiction storytelling before. There are some of our listeners who will have

absolutely grown up with him, and the many other inhabitants of Ambridge. Tony and his kind are as real to some people as their next door neighbour or their best friend. I find this both remarkable and humbling.” Drama and storytelling have been at the heart of Jeremy’s career throughout, from his days as a theatre director to numerous roles across both TV and radio at Channel 4, Film4, BBC Two, Three and Four and of course Radio 4. Jeremy started as The Archers Editor in August 2018 - relatively recently in the context of Ambridge history - and it is a history Jeremy is keenly aware of: “In the church near to where I live there is a list of vicars going back to the 13th century. In a way the editor of The Archers is like one of those vicars - we’re looking after it for a comparatively short period of time. While you are the editor it is all consuming, but you

need to be aware that one day you’ll be passing it on. “Just like Tony Archer, many of the farmers we talk to when researching The Archers have two main goals: making a living from the land and leaving a thriving business to pass on to their children. I think editing The Archers is not dissimilar to that: you inherit an extraordinary backstory that goes on for 70 years. My job, I think, is to make sure that day by day the show is of the highest standard, and to make sure the soil is rich enough for your successors to carry on.” As the world’s longest running continuing drama, Jeremy is not short of examples which account for its unrivalled longevity. “One of the reasons for the success of The Archers is that the formula is very simple - you can measure, see and grasp it very quickly. Each episode takes place on the day of broadcast so it is, always has been - and I think always will be - the way we live now. “Having worked over every kind of drama that you can imagine in my working life, one of the interesting things about The Archers is that - aside from drama-documentary - no

I think that is a direct link between the programme’s origins as a programme about farming and where it is now, except that now our intensive research is spread across everything.” Jeremy talks fondly of a production team and cast who make significant contributions to this success each in their own ways: “Part of the energy of the show comes from the sheer familial love of everyone who works on it. Do not underestimate how that love and affection has been passed down through the generations. “All you need to do is sit in the green room and hear how people like Katie Redford (Lily Pargetter) or Ben Norris (Ben Archer) are enthralled by stories from fellow cast members like Paddy Greene (Jill Archer) and Charles Collingwood (Brian Aldridge). It’s an exchange because Paddy and Charles are just as interested in the stories of their younger fellow cast members too. What you have powering The Archers is this wonderful sense of continuum, not just of the story or archive but of the people making it.” With an archive of this scale to delve into it is not an easy task to choose highlights, but for Jeremy recent moments that have stood out include Ed and Emma’s troubled start to

2020, and the dramatic revelations from Jim Lloyd’s childhood: “There have been a number of really strong stories in the last year or so. Ed and Emma’s storyline was visceral when they were about to go into Beechwood [the new housing development in Ambridge]. “It cast a spotlight on just how difficult it is to get a foot on the housing ladder when you’re in circumstances like theirs. House ownership is such a goal for so many people and yet it is so expensive. Ed and Emma’s was a compelling story, but one with a happy ending.” “The historic abuse storyline around the character of Jim was a model way of how The Archers can tackle an issue. The archive is your goldmine, but this ‘gold’ often comes in unexpected places. The interesting thing with this story is that Jim didn’t really have an archive, he didn’t have a backstory. From the research, through to the script and the masterful scenes performed by John Rowe (Jim Lloyd), this sensitive story led us all to understand Jim so much better, and it furnished him with a compelling hinterland.”

THE ARCHERS FUN FACTS The opening line in 1951 was from the character Dan Archer, who said, “And a happy New Year to all”.

2020 set new and unprecedented hurdles in the path of all continuing dramas, especially for those that run to such a clockwork-like schedule as The Archers does: “The interesting thing about this job is you’re speculating on the future. You’re speculating on the future in 10 weeks’ time as well as a year, five years’ time or more. There are ever-present waystations, the Flower And Produce show in September, the Christmas show in December. “What’s wonderful about rural life is you’ll always have a harvest, you’ll always have spring lambing and so forth. As David Archer said, the sun will always rise and there will always be cows to milk at Brookfield. But this speculation on the future has become particularly critical in these last nine months. During the pandemic is has been really difficult to predict what we will we be doing and when. How will we be able to live our lives in 10 weeks’ time? Will The Bull be open or shut? What tier is Ambridge in etc?” There are happy times to reflect on too, of course: “The absolute zenith of my time at The Archers so far has been celebrating June Spencer’s 100th birthday. She was in episode one and was in episode 19,343 on the 70th anniversary. This is a phenomenal achievement, and June deserves every bit of praise.” www.bbc.co.uk

The programme is recorded at the BBC’s Birmingham studios in The Mailbox. Prior to that The Archers’ home for many years had been Pebble Mill. There have been over 1,400 named characters in The Archers. Almost five million people listen to the Archers every week. The theme tune Barwick Green is a maypole dance from the suite My Native Heath written in 1924 by Yorkshire composer Arthur Wood. Phil Archer became a household name on 22 September 1955 when Grace, his wife of only five months, died in his arms after trying to save her horses from a stable fire. The BBC switchboard was jammed for 48 hours after the landmark episode, which reached an audience of 20 million. The Archers has featured Royal guest appearances from the late Princess Margaret (1984) and Her Royal Highness the Duchess of Cornwall (2011). Because each episode is set on the day of transmission The Archers keeps up with events in the real world. Whole storylines were devised to track the development of Foot and Mouth in 2001, but the show also uses topical drop-ins recorded at short notice – from marking the deaths of royals like Princess Diana, to remarking on England’s performance in World Cups. #1 Get the diary out and make some time for you

As we look to a healthy new year

It’s not as easy as it sounds, believe me, with hectic work, school and life schedules but it makes such a difference, trust me. We all need some time to ourselves. So, start by scheduling a meeting with yourself. Aim for 30 minutes to an hour and for best results, try to get that locked in your diary, three to five times a week. Sounds a lot, but you’ve got to look after yourself before you can look after everyone else.

#2 Get Appy with your help If you’re not sure how to start, have a look at what Apps are out there. There are lots to choose from which can help you on your journey and can be completely tailored to your goals. I recommend using Nike training or 0 to 5K. However, if you still need that extra nudge, engaging a personal trainer can be key and you don’t have to sign your life away. You can ask them to help you with anything from creating workouts to one-on-one sessions. It is important that you get on with them though, so bear that in mind!

#3 Start slowly You may prefer to just add some little extras to your daily walk and build from there adding in some hills or steps - your muscles need to gradually feel the benefits and gain condition and strength. Important- exercise even when you don’t want to, it’s amazing how much better you feel when you get your endorphins and blood flowing round the body. And it’s even better with your own killer playlist which can really help to get you through. Mine is an upbeat eighties delight, or not, but it does the trick. Here’s a mini workout to get you started: 20 x squats jump, 20 x side lunges, 10 x tricep dips, 20 x bicycles

Myth: Stretching will always preveninjuries? Sometimes stretching cold muscles will actually harm them. Always warm up the muscles at the beginning to get the muscles activated.

Changing the Face of Fitness The Creator and CEO of GSquared Gyms Andy McGlynn talks to The Cheshire Magazine about the launch of his new innovative fitness space set underground within the Royal Exchange Manchester

T

he landscape of health and fitness in Manchester will change this month with the launch of a new health club space within one of Manchester’s stunning Grade II listed buildings. The new gym will include 12,000 sq ft of training space, an indoor running track, 20 metre sled track, a CV garden, climbing wall and studio classes ranging from holistic to high intensity. Below, Andy describes his journey from concept to reality. What led you to create the GSquared Gyms concept? After 18 years working as a Personal Trainer, Clinical Nutritionist and operating in commercial gyms all over the UK, I was frustrated by the standard of gyms and the repeated mistakes that every gym chain seemed to make in a replication of each other. I also noticed that the strength or weakness of a gym was very dependent on the personalities within the management structure and the biases, ideas, experience (or lack of) from middle and senior management figures who were brought into impact change were either deleterious or helpful to the customer experience, and all too often the decisions being made just didn’t enhance the customer experience at all. I do attribute this internal failing to the downfall of many of the large brands we used to know; Fitness First, LA Fitness, DW Fitness, to name a few. I believe it’s such a specific process when it comes to operating a gym that without the in-depth experience of the operating model and specialist knowledge of health, nutrition, exercise and fitness being percolated down to the ground level, a gym is never going to reach its potential, no matter how good the Board of Directors think they are. I’d always felt that gyms could do more, be better

and give a more advanced level of service to their members. I saw it so clearly and was baffled why gym chains held back. To really address the health of the nation, it’s gym chains and fitness facilities that are going to have to lead the way by first of all changing people’s paradigms on what ‘being fit looks like’, and secondly helping people make the link between physical fitness and mental and physical health. So, after this prolonged period of working in the fitness industry, its time now to take the standard of gyms to a level beyond the current replicated model by introducing GSquared into the market. Hailed as one of the most advanced gyms in the world - what can customers expect from Gsquared Gyms that differs from competitor sites within the city? First off, an incredibly inspiring space to be within. The design team have done an incredible job of

I wanted to create a space that didn’t resemble a gym, but more a hotel reception area with the customer service to match. But we didn’t stop there, the member’s journey (or induction as some people know it to be), has been completely overhauled and reinvented. It’s affectionally named YouSquared; 7 stages of advanced yet non-invasive assessments that reveal compelling and beneficial information to the member to really help them with all components of health, fitness, nutrition and lifestyle habits. I believe if we can improve our health, then the physical benefits become a side effect of that. There are facilities within GSquared that are very new, very innovative and a real first for a gym; assault course, infrared saunas, BodPod, and the integration of natural elements within the CV space. The Bod Pod is the gold standard of body fat testing, and GSquared is officially the first gym in the UK to house one. With so much inaccuracy when it comes to assessments within the industry or at the worst, no assessing at all, one of the areas in need of attention at a gym really had to be accurate testing to give the member the best possible experience. To create the innovation that drives GSquared, I basically had to stop taking an interest in what other gyms had to offer. It went as far as just stopping visiting gyms completely to clear my mind of what gyms ‘should’ look like. The amount of replication that goes on between gym brands, in a ‘keeping up with the Jones’s’ type of approach is prevalent. The problem with this replication in the gym industry and the copy-cat approach that gym chains do with

each other results in the only thing being original and different is the brand, logo and choice of colours. Did the success of The Remedy Kitchen (since 2018) sway your decision to locate the health club at The Royal Exchange Manchester and why is this the perfect location? Ironically, it was the other way around. At the start of this concept in 2016, my intention was to have a gym with a high-quality cafe attached to it, and not just an afterthought. Like so many of the gym cafes I’d been into the execution of this concept was just wrong so many times over. As it transpired, the major delays we incurred with space within the Royal Exchange largely due to its Grade 2 listing, so by way of a small pivot we figured we just had to get the cafe open and keep working on the gym. This meant that the Remedy Kitchen had to fend for itself, which I have to say the team have done a great job of making a success of the concept and the brand in its own right. Without having Remedy Kitchen operating from late 2018, I’m not sure I’d still be here to tell the tale of GSquared given the serious protraction of the lead time. Still, all throughout the last three and a half years, I’ve kept the faith that the Royal Exchange, steeped in its iconic history within St Ann’s Square had to be the first location for GSquared. Not to mention we learned a lot when it comes to setting up a gym in a Grade II listed building.

GSquared is without question one of the most advanced gyms in the world due to the specific strengths of how we interact with members, the YouSquared journey, the interior design and 5-star customer service; therefore, a world-leading product should be rolled out as far and as wide as possible. We are currently looking at our investment options to assist us with a rapid roll out across all major cities within the UK and potentially Europe and the States.

Andy’s Top 5 Exercising Tips for Good Mental Health Mental health is very much a hormonal process, and there’s actually a lot you can do which sadly isn’t shared in the public forum and the mainstream

1. First things first, the majority of your neurotransmitters are actually made in the gut. I’ve been saying this for years; healthy gut - healthy mind. I often put free webinars out, so by connecting with us via Instagram or our mailing list, you’ll be notified about our next webinar on gut health and its impact on the brain.

2. As an immediate measure, you should probably With all the new government restrictions and guidelines on how are you planning to make your space safe for customers? What’s interesting about this is that our initial planned health, safety and hygiene standards already came in well above the covid guidelines. For example, the space restrictions for gyms were set by Public Health England and UKActive at 10 members / 1000sq ft of space, yet with our reduced membership, we fall well under this guideline due to the reduced size of the membership of GSquared. Obviously, the limitations of what can be done in the space still apply to us, but another key feature we already had in store was the aim for the cleanest air in the city by utilising a clean airwave system as a separate function to the air conditioning. Do you have any links to Cheshire? I was born and raised in Gorse Hill in Manchester, before moved to Hale in Cheshire during my teens where I went to Knutsford High School. Given my love of astronomy I was a member of the Altrincham & District Astronomical Society, in which I delivered by first ever presentation to a room of old-timer amateur astronomers at the age of 10! A real favourite place to visit for me is Jodrell Bank in Macclesfield and I love going to Tatton Park and have covered a few management training days based at both Cottons Hotel and Tatton Park. www.gsquaredclubs.com

consider a Vitamin D supplement, especially in the winter months. The most absorbable version is Vitamin D3, and you could aim for anything up to 10,000 IU per day, depending on how deficient you are. 3. Next up is to increase your intake of Omega 3. Thousands of years ago, we had far more Omega 3 in our diet, sadly most people are deficient in Omega 3 as well as having a bad ratio of Omega 3: Omega6, thereby causing significant inflammation. There are 2 active ingredients within Omega 3, DHA and EPA. It’s the DHA that feeds the brain, and you can find formula’s that have a predominance to one over the other, or you can do it naturally by increasing your consumption of oily fish, mushrooms, egg yolks, and or good quality red meat.

4. When we are under stress, our Autonomous Nervous System switches into what is called ‘sympathetic state’, prolonged exposure to this state will gnaw away at even the most resilient of individuals, so it’s crucial to do some ‘parasympathetic’ activities to flip the switch, try stretching at night, taking a bath with magnesium salts - the BetterYou brand is good, and if it’s your thing then consider some breathing exercises. On the point of the exercise, you have to apply good feelings to it. If you associate exercise as a chore or something you ‘have’ to do, then it’s likely you’re choosing the wrong exercise for you, and your hormonal makeup. Take the pressure off by not getting drawn into training for ‘x’ minutes, or for ‘x’ distance and be more instinctive.

5. Work on your sleep. Our mental repair comes between the hours of 3am, and 6am, if you have disruption during the night, you may be compromising on your mental health.

I call it the “12 Hour Rule.” Making healthy habits part of your routine is critical. Scheduling time for self-care is a must. It works as follows: If you sleep 8 hours a night that leaves you with 112 waking hours in the week. If you spend 50 of those hours with family and running your household and 50 of those hours on work - conservatively that leaves you with 12 hours to carve out and schedule for yourself. This allows for four 30 minute at home workouts. One 2 hour personal care appointments per week, be it the dentist, hair appointment, doctor, etc. A couple hours for a hobby. A couple of hours for a date

What inspired you to pursue a career in fitness? To be honest, I fell into it. I was chubby as a kid and my mum got me into martial arts when I was 12. During my teen years I gradually lost weight through my training in karate, but an even bigger transformation happened when I began to appreciate that fitness is a means of empowerment. When you feel strong physically you feel strong in all facets of life.So, at 17 I was training for my black belt - and I was delivering pizza to make a living. People began approaching me in the gym asking if I was a trainer. My mum paid for my first training certification - and the rest is history!

night with your significant other. A couple of hours to spend with friends at a brunch or drinks. The bottom line is scheduling those 12 hours for just me time never gets overlooked. That’s how I stay sane and how I manage to balance my self-care despite my busy schedule. Can you share your top workout tips? When it comes to fitness consistency is the most important rule. Even if I told you the most effective fitness techniques and built a workout for you that incorporates them - if you don’t like the workout and won’t show up for it - it’s irrelevant. The key is to find a few physical activities you love and do them. Often! If it’s dancing, yoga, hiking, kayaking,


weight lifting whatever it is - pick a couple so you have some variety and make sure you move your body at least 4 times a week for 20 - 30 minutes. In my fantasy world where I could get you to do exactly what I recommend - to get best results - you would incorporate free weight training, body weight training, HIIT intervals, periodised workouts, mobility training - all done in circuits. This might be overwhelming for someone that hasn’t dedicated their life to fitness and that’s ok. This is where I would say to you - pick a fitness expert you love and let them guide you. Whether it’s a personal trainer or an app - at least spend a few months training with an expert you like and trust so they can take care of the fitness science for you. Make sure that no matter what, you program recovery days into your fitness plan. Harder is not better. Smarter is key. If you think of exercise as the architect, recovery is the construction crew. That’s why I always break my fitness programs into muscle splits based on function and program recovery into every program I create. One of the toughest parts about fitness can be getting motivated. How has this played a role in your own fitness? For me, fitness is my career, so not only do I owe it to myself and my family to be the healthiest version of myself, but it is also my livelihood. That is pretty significant accountability and motivation. But for all people, when it comes to motivation, you need to establish your “why”. It has been said by people far more intelligent than me that if you have a “why” to

live for, you can tolerate the how. Even if I didn’t have to stay in shape for my work, I would because of how being healthy and strong it makes me feel. And I want to be healthy for my family. So I can run and play with my kids. Be there to see them graduate from university. These are all examples of very powerful “whys” for me. With the challenges of the past year, we know it is important to be fit, but it can be hard due to gym closers, social distancing, etc. Can people really get and stay fit with things like apps? Absolutely! My app not only has every video workout I’ve ever created (DVD, infomercial program, etc.) but also an absurd number of workouts that are customised for each individual user. We’re even adding audio workouts in the next month, as well. So, for example, there are programs for walking/ running programs, HIIT, yoga, kickboxing, bodyweight training, prenatal (broken up by trimester) and postnatal, etc. You can even have me customise any workout for you on the spot. You simply input your fitness level, type of workout you want, how long you want to train, what equipment you have available and it’s instantaneous. You can train on any device from your TV, tablet, phone, etc. and there are hundreds of recipes available of all kinds because even your meal plan is custom. Whether you are vegan, gluten free, omnivore or whatever it may be, we have you covered with delicious dishes created by registered dietitians and top chefs to hit the mark every single time. This month we are talking about travel and I shall be discussing taking your pets on holiday using their very own Pet Passport Prior to Brexit, you could use Pets passports to travel around Europe. These were first introduced in July 2004. To obtain a passport for your pet, you had to follow these simple steps; • Firstly all pets need to be identifiable with their own microchip, usually found under the skin between their shoulder blades. • Next they need a rabies vaccination • Finally a pet passport - issued by your Official Veterinarian, (vets need further training to be able to issue pet passports). As an owner you can contact the Animal and Plant Health Agency for the nearest vet who is authorised to issue passports. Now here comes the tricky part... The UK has left the EU, and the transition period ends 31st December 2020. From January 1st 2021 Great Britain will become a third country with respect to the EU Pet Travel

Scheme. The EU has voted to grant the UK Part 2 listed status for the purpose of pet travel. As a consequence, the requirements for travel between the UK and EU will change. I shall endeavour to simplify these changes. • Under Part 2 listed status, EU Pet Passports issues by vets in the UK will no longer be valid. But you will still have to follow the same procedure listed above, as you did for a Pet’s Passport, i.e. rabies vaccination, microchip etc • Instead a pet travelling from the UK to the EU will need an Animal Health Certificate (AHC). • Valid for a single trip for entry into the EU. • These can be issued by your vet no more than 10 days before travelling and be valid for 10 days after the date of issue for entry into the EU. • It will be valid for 4 months for onwards travel within the EU and for re-entry back into the UK.

• On arrival in the EU pet owners travelling with pets will need to enter through a designated Travellers Point of Entry (TPE). You will need your pet’s documentation. • You will need to get a new AHC each time you travel. • If you live in the EU and hold a Pets passport issued by an EU member state, you will be able to use it to travel to the UK after 2020. You will also be able to use it to travel back to the EU as long as your pet has had a rabies antibody blood test taken at least 30 days after the date of the rabies vaccination. So, you see, it is a little more complicated and does take longer, you will need to be organised and will need a fresh AHC for each trip. Ask your vet for any further advise or information, and most importantly enjoy your holiday with your family pets! A

s a born and bred Liverpudlian who left the city over a decade ago, I still find myself in awe of the astounding development it has undertaken each time I return. No industry demonstrates this with greater success than its food and drink sector, which somehow manages to perfectly compliment the undeniable charm of the city and its people. Since Liverpool was officially hailed the capital of culture in 2008 (not that it's rich tapestry of culture was ever in doubt) there have been a vast number of popular chain restaurants that have popped up around the centre of the city however it is in fact the blossoming of the smaller independents in Liverpool that have become the foodie's treasure trove to explore. One such treasure is nestled away in cobbles of exchange flags, an area well renowned for its blend of history and style. In a Grade 2 listed building that overlooks the town hall resides El Gato Negro Tapas (translating to 'The Black Cat') and is immediately visually appealing when entering. The interior of the vast yet intimate space offers the perfect mix of

cosmopolitan inner-city style with a beguiling sense of nature as your eyes adventure through hanging vines and twisting willow trees. This is the second restaurant of its name by the acclaimed Chef Patron/Creative Director Simon Shaw, with two other El Gato Negro restaurants on Park Row, Leeds and King Street in Manchester. With such acclaim for it's origin restaurant, The 'Black Cat' of Liverpool had large paw prints to fill, particularly as the hunt for genuinely brilliant tapas in a social dining setting is never easy; we were not left disappointed. Though during the time of our visit the nation was still within the grips of the global pandemic, the front of house team were quick to put us at ease with a few simple healthy and safety recommendations. As is the format for most tapas restaurants, the dishes are served as they are ready. First up was the ‘Charcuterie Board’ with a beautiful selection of cured meats

and aged Spanish cheeses with small accompaniments such as orange blossom honey and olive torta; it is truly in the details of these dishes that they come alive. Next was the ‘Traditional Tortilla’ which was cooked beautifully to reveal a soft, slightly runny centre and the ‘Jamon Iberico Croquetas’. Each dish was followed one after the other to tell their own individual stories of the land and sea but collectively the one story they all shared was El Gato Negro truly is the best tapas in the north. Ultimately, as with all my experiences of tapas, we over-ordered excitedly and were left questioning if we would we meet the challenge we had so eagerly placed before ourselves however from our first bite of manchego to the fighting over the last crispy fried baby squid, the taste was unparalleled; our challenge had been met with empty plates, full bellies and a rare feeling of culinary satisfaction. www.elgatonegrotapas.com/liverpool 59

The Owner and Founder of La Popote shares his indulgent recipe for Sticky Toffee Pudding with Vanilla Ice Cream

he husband and wife team of Joseph Rawlins and Gaëlle Radigon are at the head of the popular La Popote Restaurant in Cheshire. Overlooking the beautiful Marton Church, the oldest wooden timbered church in Europe, the fine dining establishment is housed in a renovated farm stead, creating a wonderful ambiance for an exemplary fine dining experience. During the first lockdown the couple used the opportunity to completely refurbish the venue and the new look has received rave reviews from customers. Joseph, a Wilmslow native is a graduate from Gordon Ramsay’s renowned Tante Marie cooking school with a Cordon Bleu Diploma. He has worked at the award winning restaurant, the Artichoke in Old Amersham as the Demi Chef de Partie and he has worked in French restaurants for the past 7 years. During this time Joseph was trained by the formidable Guillaume Delage. Guillaume opened Jadis in Paris in 2008 to rave reviews and much of Joseph’s

expertise was honed under Guillaume’s tutelage. Joseph’s most recent position was as Head Chef at the impressive restaurant, Le Sauvage in Paris. Preheat oven to 170c. Pre line a baking tray 30cm/30cm square with a 2inch lip with baking paper. In a saucepan Boil the water and dates. Once it has come up to the boil take off the heat and add the bicarbonate soda and whisk. Melt the butter in a saucepan. Whisk together the sugar and eggs. Add the melted butter with the dates. Fold in the Flour and add to the baking tray. Bake for 35-45minutes until well risen and springy to the touch (place the tip of the knife into the centre and if comes out clean its cooked).

In a saucepan add the cream, butter and sugar and melt and cook out until golden colour and add the salt at the end. To Serve Cut the Sticky toffee into squares and pour over the hot sauce. Place a scoop of vanilla ice cream on top. Serve Immediately.

Leave to cool in the tray once cooked.

New Life in the Sun In our continued series on Barbados we talk to two individuals who have lived and holidayed on the Caribbean Island about their experience

CAROLINE GALLICHAN What was the catalyst for your move to Barbados? My first experience of Barbados was close to 20 years ago, as I was a bit of a free spirit living all over the world and working for holiday companies. I spent two years on the island before living in other countries, including St Lucia and Thailand. In 2010 my employer at the time offered me the opportunity to return to Barbados and I’ve never looked back! I found love (with someone I had originally met on my first stint in Barbados), got married, bought a house and now have 2 dogs, many fish and a cat so I guess I’m not leaving any time soon. How did you settle into your new life and immerse yourself into the culture? For me, to live like a local is not hard- I love nothing more than going to the local rum shop with my husband and doving (Bajan for sharing) a flask of Mount Gay Rum, eating freshly caught fish and macaroni pie whilst people watching. Also, I love attending fetes and fairs - the biggest one in Barbados is Agrofest that normally falls in February and a bit like a county show you would get in the UK. It’s really popular. Of

course, over the years I have done the Crop Over Carnival many times which is always the first Monday in August. Now, I am so immersed in the culture I even grow my own breadfruit in my garden. Breadfruit is used like a potato over here – you can do anything with it, mash it, fry it etc. But the most popular way of cooking it is to throw it in a fire and roast until it’s like charcoal on the outside, then chop it open, take out the core and add whatever filling you like. From butter to stew, to a lentil dal, you can really get creative. What do you love most about living in Barbados? Barbados is the place I choose to live because of its diversity. I live on the south coast, which to me is a bit more down to earth and laid back, but you still have the hussle and bustle of Bridgetown which is an experience in itself. Broad Street is brimming with jewellery shops and department stores and there’s the local high street (Swan Street) which is full of characters selling everything from coconuts to DVD’s. The west coast (also known as the palatium coast) offers high end hotels like Sandy Lane and Fairmont. The north plays home to dramatic cliffs and crashing waves, and then the east is good for surfing and has places like Bathsheba which is normally good for 8 months of the year.


What recommendations could you offer readers in terms of experiences? There is so much to do in Barbados, living like a local I have a few hints. First the National Trust run a hike on a Sunday – either at 6am or in the afternoon. Groups are split into levels (I always opt for the ‘stop and stare’ group as its easiest), and they explore different areas of the island so you will need a car or a friendly taxi driver. If you do rent a car whilst here, I’d recommend visiting the drive-in cinema. Doors open around 6pm every night and you can choose from the latest Hollywood releases. Oistins is probably one of the most written about areas in Barbados for its Friday night lime (party) however one thing that most tourists don’t realise is that most of the food stalls are open 7 days a week. So if you don’t do crowds but want to try the famous cuisine like the locals head down during the week, where it is a lot quieter and I think the food is even better as the cooks have a bit more time to share their love with the food.

On the south coast, there is a new concept called Worthing Square Food Garden. This outdoor food hall offering boasts over 20 unique street food canteens and pop up food trucks, each offering their own unique cuisine and dishes from around the Caribbean. You can enjoy delicious food from Barbados, Jamaica, Guyana, Trinidad and Venezuela. What advice would you offer to anyone sat at home considering swapping the Cheshire countryside for the Caribbean? Do it! We now have the Welcome Stamp and I can say that life here is great and so much more relaxed than the UK. Barbados has some great schools, a very low crime rate and year round sunshine – what’s not to love.

MICHAEL GATES What is it about Barbados that you love the most? There is so much to love but the highlights have to be the weather, the beaches, the people and the nightlife. What makes you keep going back? I’ve visited quite a few places in the Caribbean, but Barbados has just got an amazing vibe. It’s so beautiful and tranquil with a fantastic night life. The best of both worlds. What recommendations could you offer readers in terms of experiences? The island is relatively small, so I’d recommend hiring a car and exploring the stunning beaches and visiting the Flower Caves at the north of the island. There are amazing restaurants like The Cliff and Champers to experience but you must try one of the Roti shops and Oistins Fish Market. St Lawrence Gap is the main nightlife hub with plenty of bars and restaurants to choose from, you can dance the night away. Alternatively, there is the popular Harbour Lights Dinner Show which is good fun. The capital Bridgetown is great for shopping, discover the birthplace of rum at the Mount Gay Distillery and last but not least you have to experience one of the boat trips where you can snorkel over a shipwreck, swim with turtles and have lunch on your own private beach. What advice would you offer to anyone sitting at home considering swapping the Cheshire countryside for the Carribean? Book your flights immediately. What is the most luxurious suite in the hotel? The most luxurious suite is our Conservatory Suite. There is nowhere else in London quite like it. A wood-carved bed is positioned beneath a glass roof, offering breathtaking views of the star-lit sky. If you tire of the view, electric blinds turn your split-level suite into a private paradise complete with marbled bathroom and jacuzzi bath. Downstairs is a comfortable Lounge complete with fireplace making it an unforgettable setting for a romantic getaway. The kind of people who

What can you tell us about the history of the hotel? Hotel 41 became very popular with debutantes and others attending royal functions at Buckingham Palace. During the Second World War it was taken over by General Sikorski’s Free State Polish Army, which used it as its headquarters. The plaque remains to this day on the building.

Could you tell us about your favourite event the hotel has hosted during your time there? My personal favourite is when one of our guests booked exclusive use of 41 as a surprise for his wife’s 41st birthday so she could celebrate 41 @ 41! He also hired her favourite band (who are pretty well known!) for the evening, there were black and white balloons everywhere and all of the guests partied in the Lounge until the early hours of the morning before enjoying a much-needed Full English Breakfast the following morning.

Just off the main shopping streets and a hop, skip and a jump down to the River Dee. There’s so many lovely boutiques, independent restaurants and art galleries in the city – and then there is all the heritage to enjoy – from the Medieval Rows to the Roman walls, amphitheatre, gardens and architecture that spans every period including our hotel’s Georgian heritage.

What is the most luxurious suite in the hotel? Our Douglas Duplex is a showstopper. Built over two floors with a huge airy skylight – it is named after a Cestrian architect – so light and space were all-important within the design. A roll top bath and gorgeous separate sitting area top off the luxury!

What can you tell us about the history of the hotel? Oddfellows was once an Oddfellows Hall – where the Oddfellows society met. The

Oddfellows were dreamers and philosophers originally – those that didn’t fit into a certain box or profession. And that’s inspired our hotel design at every point – every time you come back to Oddfellows there are always new parts of the interiors you’ll notice- we wanted it to feel whimsical and playful.

Could you tell us about your favourite event the hotel has hosted during your time there? We’ve had some crackers! I think the weddings have been amazing. Because the hotel is not your traditional ‘cream’ décor – we tend to have couples with real personality that really want an individual wedding. We’ve had Narnia themed ones where the garden was filled with snow, a steam punk wedding and one with a Star Wars theme!

How would you describe the hotel’s dining experience? We are totally about a relaxed vibe with dining. We have a restaurant, but we will serve food in the secret garden or bar. We noticed the way people dine is changing – it’s becoming so much more informal. So, we have platters, nibbles, afternoon teas, brunches and light 76

food alongside a traditional a ’la carte menu. Sometimes people just want to meet up for cocktails and want informality and no pressure – and we hope that’s what we deliver. Of all the facilities the hotel offers, which is your favourite and why? It has to be our tearooms. Set in the front of the hotel, our tea room holds an enormous circular table - with a tea table set on the ceiling. It’s truly bonkers. We get people coming in just to photograph it. It’s so popular for private dining, baby showers, intimate weddings – and corporates love it too – as it breaks the ice in a board meeting.

What makes a stay at your venue stand out from your competitors? It’s got to be our secret garden. We have one of the largest outdoor areas within the city walls. With heated huts for six, outdoor fires, electric canopies that cover the area in event of rain – it makes it truly open for all seasons. We also have a Potting bar shed and an area we can cut off for VIP events – such as barbeques. We have the amazing florists, Wild in our building and they curate and cultivate our garden so it always looks amazing.

What packages are you offering for 2021? We’ll be looking at our normal Just for January stays where we’re able to offer rooms at a very reasonable rate. We’ll also run apartment packages – for our two and three bedroom apartments down by the river dee. These work so well for baby showers and girls’ weekends away, so we try and put packages together including breakfast hampers or nibbles platters. We’ll wait to see how restrictions lift – and then these will go live as they do. Otherwise our packages will focus on family stays. The hotel is adjacent to the old Roman walls that surround the city and near an abundance of independent shops, including the unique Chester Rows. Chester Cathedral and the beautiful River Dee are only a few minutes’ walk away.

What is the most luxurious suite in the hotel? The Presidential Suite - an exclusive apartment suite located on the third floor, with sweeping views of the black and white timbered architecture of Chester and the Eastgate clock. The entrance hallway contains a private cloakroom and leads through to a personal study area and then on into an open plan sitting room with formal dining area. The luxuriously appointed bedroom offers a king size bed and comfortable seating with an adjacent dressing area leading into an opulent marble bathroom with Japanese style double ended bathtub, double vanities and a spacious walk in shower.

What can you tell us about the history of the hotel? The Chester Grosvenor has been long been established in the heart of Chester. Although the existing building dates back to 1865, there has been an inn on the site since the late sixteenth century, the first recorded being ‘The Talbot’ which later became ‘The Golden Talbot’ and then ‘the Royal Hotel’ in 1791. 78

By the mid-19th century Richard, Second Marquis of Westminster commissioned plans for a larger and grander replacement. The only part of the original building that was kept was the ‘assembly room’ and re-claimed bricks from the older building were used by Aldford builder, Thomas Hughes, to complete the project. The hotel’s grand opening was on 1st January 1866. On the evening of 14th August 1973 a fire broke out near the Belgrave conference room and although the hotel was evacuated safely the fire destroyed the conference room and five bedrooms, with a further twenty being damaged. November 1985 saw the start of the first phase of a three year, £12 million refurbishment programme, whereby not only interiors were refreshed but computerised bars, remote control temperature systems and credit card style door locks were introduced. Today the building is owned by the Grosvenor estate, with the hotel being managed by Bespoke Hotels since 2015.

Could you tell us about your favourite event the hotel has hosted during your time there? We are very fortunate to host a number of high profile events in our calendar. We have the honour of hosting a spectacular event annually for the Champagne Academy which brings together the most prestigious Champagne houses to celebrate with a dinner prepared by Simon Radley and his team. It’s a simply stunning event.

How would you describe the hotel’s dining experience? The stylish La Brasserie is our 2 AA Rosette restaurant, offering modern, fresh dishes using flavours and ingredients from home and abroad. HONG KONG Paul Bayliss MBE is heading back to the vibrant Hong Kong, where he lived for three years Hong Kong people are absolutely fantastic and as a place it was always really easy to access all of what it offers. When I was there, I was continuing to learn my trade as a young Chef and its range of foods was a huge influence for me. The diversity of the region is immense as it goes from densely populated areas on either side of the river to fantastic seclusion in the new territories, the tiny islands and what was then the borderlands. For me it’s just as interesting stepping off the main thoroughfares as these are the places where you learn most about how other cultures really live. Having lived there for so long and lived and enjoyed most of what Hong Kong Offer I’d just like to go back and see how much, if any, these places have changed or developed. The food offering of course is superb and you can literally enjoy cuisine from any region of the far east as all was available. . There’s the amazing delicate Afternoon Teas borne out of the City’s close ties with the British Empire to fantastic authentic restaurants who seemed always to throw up a new taste or way of cooking to me. What would it mean for you to travel there again? It’s top of my list and I’ll be visiting soon. I know to go back for a couple of weeks at least would be amazing. Even then there wouldn’t be enough time to go see and do all of the things I’d like to do there.

What are your travel must-haves? #1 - A ‘must-do’ list. I suppose it’s about what you want to achieve whilst there, so you max out on the time available. #2 - A good book, as the flight is about a 12-hour trip either way #3 - A decent pair of training shoes as you don’t always appreciate just how long you’re walking about for and with the temperature there for most of the year being hot and humid you’ve got to do all you can to look after your feet as they’re doing most of the work whilst you are out and about. www.hotelbrooklyn.co.uk 83

VILAMOURA, PORTUGAL Laura Wolfe is longing to return to her family holiday hotspot It’s been a long 2020, hasn’t it? In terms of travelling, 2020 was supposed to be a year of exciting travel for me, girls’ break to Palma, a short break in Marrakech, a family trip to Israel and our annual holiday to Portugal. Obviously, none of these happened! We ended up having a proper British seaside break in Brighton! We were lucky with the weather and Brighton holds some special memories for me as it’s where my mum was born and where I spent many summers as a child with my grandparents on the seafront in Hove. It was a bit of a trip down memory lane and a chance to show my youngest son some of my family history. What would it mean for you to travel there again? I can’t wait for a family holiday again with my partner and my boys. We tend to go to Portugal for two weeks every summer for the sun, the sea, the

food and the relaxation and a time to properly switch off – we love Vilamoura – we had hired a villa for August 2020 with another family and were so looking forward to it, but it wasn’t to be. My boys have been almost every summer since they were born. I can’t wait to sit overlooking the harbour, glass of rose in hand and feel a bit of normality back in our lives. What are your travel must-haves? #1 - Portable chargers (multiple). Between the four of us with phones and iPads, we are constantly charging #2 - A good book or two. It’s the only time I get to read properly, and I really make the most of it. Last year I read The Couple Next Door by Shari Lapena and Eleanor Oliphant is Completely Fine by Gail Honeyman – both wonderful books and highly recommended. #3 - My running trainers are a must. I always get up early before everyone else is awake and go for a run each morning before breakfast and before it’s too hot! I love that time of day when it’s quiet. ROAD RUNNER Lamborghini’s latest model might look like something from your kids’ Hotwheels collection, but it’s a serious supercar.

I

talian supercar manufacturer Lamborghini is known for many things, but subtlety is not among them. So the introduction of the outrageous new Huracan Super Trofeo Omologata (or STO, for short), is true to form if nothing else. Described as “a street- homologated super sports car”, the newcomer is essentially a stripped-down racing version of the Huracan EVO supercar. As such, it gets heavily modified carbon-fibre bodywork that’s lighter and more aerodynamic than before, and there’s a plethora of new air scoops to feed the enormous 5.2-litre V10 petrol engine. There’s more stopping power on offer, too, thanks to new carbon-ceramic brakes, and the cabin has been pared back to reduce weight. Even the carpet mats are made from carbon-fibre. Lamborghini has also tweaked the engine, which normally produces 602bhp. For the STO, however, the Italian engineers have squeezed out another 29bhp, bringing the total to 631bhp. And unlike the four-wheel-drive Huracan EVO, the STO sends all that power to the rear wheels, reducing the traction on offer, but cutting weight. CELEBRATION 101 There’s cause for joy and sadness in equal measure in Malvern, Worcestershire, as Morgan celebrates the end of production for its 3 Wheeler. The unimaginatively named three-wheel sports car was reincarnated in 2011 and has been hand-built at Morgan’s tiny factory ever since. The new P101 version is available in a choice of colour schemes – including this dazzle camouflage number – but all 33 examples will get black and white exhausts, cool aerodynamic wheels and Hella headlights. If you don’t manage to get hold of one, though, Morgan has promised a new 3 Wheeler is on the way. Morgan P101, from £45,000 plus taxes, www.morgan-motor.com

READY TO RACE? It stands to reason that one of the world’s foremost sports bike manufacturers should build ever faster models, but there comes a point where the lines between road and racing bikes get blurred. So Ducati has taken a step back. It’s called the Panigale V4 SP, and it’s designed to be a kind of halfway house between Ducati’s already monstrous Panigale V4 S and the even more ridiculous V4 R. The SP bit stands for ‘Sport Production’, in case you were wondering. With 211bhp lashing out of that V4 engine and a total weight of just 173kg, it has more than 1,000bhp per tonne. So although Ducati hasn’t really said how fast it will go, we can be pretty sure it won’t be slow. When this bike arrives in March, it will come with a dedicated production number, as well as some race-orientated upgrades. You get the wheels, brakes and chain from the V4 Superleggera, while there’s a Track Pack designed for use on a racetrack. As part of that, you get a kit with which to remove the rear-view mirrors and number plate holder, as well as an open clutch cover and the Ducati Data Analyzer + with GPS module. When a new Golf arrives, the car world normally stirs from its slumber, mumbles something about looking the same as the old one, then returns to the land of nod. But when VW stuffs a 316bhp jalapeno of a petrol engine up the family hatchback’s tailpipe, we sit up and take notice. The Golf R is not a new concept – VW has been building them for years – but the new model gets even more power and even more performance. Aided by four-wheel drive, the sprint to 62mph takes less than five seconds, and flat out you’ll be doing 155mph. Peak Performance Resident petrol-head James Fossdyke test drives the Cheshire made Bentley Continental GT

P

ikes Peak may not mean much to you and me, but hardcore racing enthusiasts know it as one of the most attritional challenges in motorsport. It’s a 12.4-mile climb up a 156-corner mountain road in Colorado, and people have been racing there for 100 years. It’s tough, it’s competitive, and it has a fearsome reputation. Winning there takes power, precision and a massive slug of bravery. I mention this because last year Bentley celebrated its centenary, and the company from Crewe decided to celebrate by breaking the Pikes Peak record for production cars. The engineers found a spare Continental GT in a corner of the factory and, because the Pikes Peak rules say you’re allowed to do such things, they set about modifying it. The cabin was stripped out, a louder exhaust system was fitted, and stickier tyres were shoehorned onto the wheels. The modifications worked, and this very car blew the previous record holder out of the water, beating it by eight seconds. That might not sound like much – particularly over 12 miles – but just imagine you were standing by the side of the road when this car passed you at full chat. Eight seconds later, it would be almost a kilometre away. Anyway, this car is a unicorn; one of a kind. So, I always imagined it would live in a garage of pure

bubble-wrap, mollycoddled and treasured by Bentley’s crack team of mechanics and hidden from sight. But no. It’s completely road-legal, and Bentley invited me to drive it. At this juncture, I should point out I am not a racing driver. I have a racing licence and I’ve done a fair bit of track driving, but Lewis Hamilton need not look over his shoulder. If Jenson Button is to racing what Manchester City is to football, I’m the equivalent of Nantwich Town’s Under-12s. For reasons unknown, however, the woman from Bentley was perfectly happy to strap me into her priceless vehicle and let me loose on the roads of Britain. Just getting in required an impressive act of athleticism, thanks to a roll cage that more or less blocks off the door. I clambered in with all the grace and dexterity of a fully grown boa constrictor cramming itself into a test tube. And things didn’t improve much once I was inside, because all the usual accoutrements of a Bentley interior were either ripped out or deliberately broken to make the car faster. To distract myself from the harness’ vice-like grip on my body, I tried desperately to remember what the Bentley engineer – a reassuringly unflappable man called Keith – had told me. No adjusting the seat, because it doesn’t move. Foot on the brake. Push the red button in the armrest until you hear a clunk, then jab the start button on the dash. I was prepared for savagery, but nothing like the onslaught that arrived. The 6.0-litre W12 didn’t so much burst into life as erupt into unbridled fury. One minute it lay idle and silent, the next it was assaulting every sense with an arsenal of vicious sounds, vibrations and smells. It was a stark reminder that modern cars are very good at

isolating you from the engineering that goes on behind the scenes, but race cars simply don’t bother. Everything is sacrificed in the pursuit of speed. Fortunately, that’s a commodity the Pikes Peak Continental has by the bucketload. I was tentative at first, but the power at my disposal made its presence felt with all the subtlety of a carnival clown. Sadly, the only actual clown on display was buried in the driving seat, desperately peering out to make sure he didn’t clump a priceless alloy wheel on a huge concrete kerb. In my defence, I was handicapped by the low seating position, small windows and the reversing camera, which Bentley had helpfully disabled. It gave me some idea of how it would feel to be a Dalek, imprisoned inside a brightly coloured, oversized post box. And when you’re pinned into a race seat that’s positioned on the wrong side of the car, you can’t even lean forward to get a better view at tight junctions. You just have to edge out and hope you don’t meet a lorry. Find a good B-road, however, the car comes alive. The exhaust pops and bangs as you drive along, the suspension clatters and bits of the bodywork clang as loose stones fly up into them. All the refinement and calmness you expect from a Bentley Continental is gone, and in its place are big, juicy dollops of power and performance. A standard Continental is quick, but the Pikes Peak has a maniacal turn of pace that’s as addictive as caffeine.

That’s partly because of the havoc emanating from that aftermarket exhaust system. It sounds as though the gates of hell and kryptonite are being blended in a giant Nutri-Bullet. If you aren’t wearing ear protection, it’s borderline painful, but the surge of adrenaline that follows the noise is well worth some minor discomfort. Almost as impressive as the soundtrack is the agility, which is nothing short of superb. Despite its crash diet at the factory, the Pikes Peak is still enormously heavy, but it doesn’t feel that way. It changes direction with the alacrity of a cat chasing a ball of wool, and the brakes – normally a slight weak spot in the Conti’s otherwise impenetrable armour – are sharp and responsive. Hit them hard, and you’ll feel the G-forces tugging at your face. It’s a wonderfully visceral thing to drive. Or at least it is for a few hours. As glorious as that performance and noise might be, the Pikes Peak misses the comfort, refinement and class a Bentley normally exudes, and that does wear you down. Bentley will sell you a special-edition version of the Continental that pays homage to this car, but if you’re one of the lucky few receiving one, you’ll be glad to know it’s nowhere near as hardcore. It has the paintwork and the exhaust, but none of the inconvenience. You get 99% of the thrills, without the backache or earache. But while I might not want to take the Pikes Peak car home, that doesn’t mean I’ve wasted the past few moments of your life. Because to me, this is more than just an incredible supercar. Built in Crewe, by engineers who live and work in the county, it’s also a raucous, record-breaking advert for Cheshire. It’s something we can – and should – be very proud of.

with

ROHAN BLACKER, FOUNDER OF POOKY How would you describe yourself ? Founder of Pooky.com, dedicated player of parlour games and wistful for a time when the sweet trolley was a feature of every restaurant. Tell us a bit more about you… I was called to the bar after University, and my career mapped out in a wig in the high court. But my flaw is that I am a painfully slow reader and I simply couldn’t wade through the heavy briefs. Plus, there was a whole world of everything out there, that I wanted to get my teeth stuck into. So, after a deep breath, I quit. Thence followed a succession of businesses, the first tranche in the catering field. “Deliverance” was a forerunner to Deliveroo, except that before we delivered the food, we actually cooked it ourselves! There was the London Soup Company, and a restaurant called The Pen – a gastro pub, before the term was coined. In the early days of the web, my business partner and I, turned our back on catering and headed for the sunny fields of home interiors. We set up sofa.com, which attempted to turn the tired business of sofa retail on its head. Pooky came in 2014. Same principle… great design, great value, great service… all online. I am particularly proud of what we have accomplished at Pooky – we have a large number of renowned interior designers who have become loyal customers. I live close to our warehouse in Cheltenham and nothing gives me more pleasure than spending hours horse-trading with our design team over a brass finish, the nuance of a shape or the translucence of a lampshade! Who are your greatest influences? I didn’t study design but I’ve always loved lighting and have an absolute certainty about its importance in creating atmosphere and ambience. My uncle ran a successful

restaurant in Knightsbridge which I used to work in and whenever I walked through the door I would marvel at how the lighting was the structure around which the whole restaurant buzzed. I am eternally inquisitive studying light and lights and innovative and exciting ways to create them. What have been some of your best jobs/experiences at work and why? My first business, as a passionate but very inexperienced chef/restaurateur, was absolute mayhem for a while but amidst the chaos, we had a brilliant team of enthusiastic, young people and somehow, we were packed every single night. It was exhausting but totally exhilarating. And an additional upside was that’s where I met my wife… one of the great waitresses of all time, capable of managing the whole floor in good humour and elegant style. Traditional vs contemporary style? Finding a way to contemporise the traditional. They are not, and must not be mutually exclusive. Style continues to develop but should not forget its roots. What would you consider your greatest achievement? Managing to “wing it” across a whole raft of businesses, about which I knew basically nothing when we started. Yes, many mistakes made along the way, but some original thinking too. Still here, still floating, still learning… What would your superpower be? The power to grant wishes. www.pooky.com
