My life ... ADELE GREGSON, DIRECTOR OF THE CHRISTMAS COMPANY

How would you describe yourself ? I have a creative eye and a love for the Christmas season. With over a decade of experience in this industry, I’m always motivated by the opportunity to constantly innovate, generating fresh ideas and witnessing the growth of our business. Where is home? And work? I live in the quiet village of Melling, Liverpool, and work across two locations in Liverpool and Lancashire. What would you do to improve the area you live in? Given that Christmas is a significant part of my work, I absolutely love the idea of having a large extravagant Christmas tree in our local area. Ever since I was young, I remember Christmas always being the time of year when everyone came together, and I think having something like this locally would really help build a stronger sense of community. Name a few of your favourite places to be... My favourite place has to be Lake Como – it’s so peaceful, and relaxing. The food is just fantastic. I also have a love for my city and country breaks in the UK. I enjoy visiting the Lake District and, of course, London during the Christmas season! Once we wrap up our decorating season around the 18th of December, I make it a tradition to head to London for a few days to immerse myself in the festive decorations. I become like a Christmas decoration connoisseur, inspecting all the Christmas displays. My favourite places to eat would have to be Moor Hall in Aughton and Cibo in Hale. What or who inspires you? One of my inspirations is Peter Jones; he has proven that hard work and integrity pay off. I consider myself to be very fortunate to have had the opportunity to meet many successful people.

I love cooking Christmas dinner and playing board games afterwards with a Baileys and nibbles

Over the years, I’ve come to realise that hard work, ethics, and integrity are at the core of success. These are the main values we operate within my business. What was the last gift you gave someone? The last gift I gave was a wreath from the “Christmas in a Box” product, and I gave it to my cleaner. Tell us a secret/fun fact? I always used to lie about my age so that I could get a job! I always loved the idea of working and earning my own money. What’s been your biggest life lesson? My biggest life lesson is to never take anything for granted. Time is precious and things can change so quickly. What’s on your Christmas list this year? On my Christmas list this year is a new cherry picker…I never actually thought I’d say this! How do you typically spend your Christmas Day? By Christmas I am usually completely exhausted and haven’t seen my family or friends for a while, so I spend Christmas morning with my brother. I love cooking Christmas dinner and playing board games afterwards with a Baileys and nibbles. Any top tips for surviving the festive period with family? My top tips for surviving Christmas would be: don’t stress! You can always whizz around the Trafford Centre, like I do every year, and get most of what you need. Also, try and buy presents which are already gift wrapped and packaged so it saves you a lot of time. christmascompanyuk.com christmasinaboxuk.com therutlandmagazine.co.uk

Vicki McDavid from Paisley Flower Company creates stunning pre-made or bespoke Christmas wreaths for sale through her website and in the Otter’s Christmas pop-up shop in High Street, Oakham. She also runs a series of DIY wreath workshops and recommends using a moss base to keep the foliage nice and damp, which will keep the wreath looking fresh for longer. “You can forage locally for a mix of evergreen textures, such as pine, holly and conifer,” she explains. “Twigs and branches are great as they make the wreath look bigger and you can add colour by spray painting them to match your colour scheme. Dress the wreath with foraged pine cones or teasels, pheasant feathers and dried oranges and finish it with a nice big velvet ribbon.” Over the past couple of years, there has been a trend for dried wreaths which last a lot longer and Vicki does not see that slowing down, although she has noticed a trend for more traditional wreaths again this year. She added: “People are going for green foliage with red berries again this year and creating really traditional wreaths. You can add things like eucalyptus to add different shades of green and they look - and smell - lovely.” paisleyflower.co.uk

farm and Christmas shop each year and plant 10,000 to 15,000 new trees every year. It is the perfect place to go and pick your Christmas tree as a family, with decorations, hot drinks, reindeer and even tractor rides around the farm available. It is open every day until Christmas Eve and then from December 27th for tree recycling. You can also pick up cut-offs so that you can “deck the halls” or create your very own Christmas wreath. digbyfarm.co.uk

Christmas Eve Treats The true magic of Christmas starts on Christmas Eve and even the big man himself can indulge in a tipple and a biscuit from Rutland as he does his rounds. The Kitsch Hen based at Oakham Enterprise Park near Ashwell make personalised boxes of biscuits that can be left for Father Christmas, including a ‘bottle’ of milk. They prove to be a very popular and alternative treat to mince pies, as we all know Father Christmas gets enough of those. the-kitsch-hen.co.uk But we also know Father Christmas likes a tipple or two and Rutland’s own Multum Gin Parvo have a range of delicious gins made using botanicals from the area and inspired by the county’s quirky history and folklore. Perfect for Christmas is the Sloe Dance, made from the pick of the hedgerows, or why not send him on his way with a Devil’s Nest, made using chilli and locally foraged nettle? It will certainly keep him warm. multumginparvo.com Christmas Eve boxes have become a popular way to get children ready for bed without too much fuss. The excitement of a new book to read and a crisp pair of pyjamas to wear is enticing for anyone. Aster and Daffodil, based in Cottesmore, make made-to-order children’s clothes in an assortment of seasonal prints, including Christmas pyjamas, from newborn to age 12. They also make cotton gift bags, which are a fun and alternative way to wrap parcels with an eco-conscience. asteranddaffodil.co.uk therutlandmagazine.co.uk

Tableware

KATIE CARDEW

Tablescaping is a hot trend at the moment, with people going to great lengths to create the perfect space for an occasion. Katie Cardew, which has shops in Oakham and Stamford, creates beautiful homeware, including table mats, coasters and table runners in a range of festive designs; from mistletoe and winter berries through to bold red and white stripes tied up with a bow. Perfect for creating a statement table. katiecardew.com

And who can forget the most important part of Christmas Eve - hanging stockings. Recently opened Stork of Stamford in St Mary’s Street is creating personalised embroidered stockings this year, so there will be no confusion over whose is whose. storkofstamford.com

Christmas Day Onto the main event! Doing Christmas Day your way is when the magic happens. Whether that is the perfect tablescape, matching outfits or the ultimate feast, there is no greater thrill than seeing other people’s faces light up at all your efforts.

Outfits To look the part, Oakham has some fantastic independent clothing shops to deck you out from head to toe (and pick up a few gifts along the way). Cavell’s in Mill Street stock high-end brands from Barbour to BA&SH and their Christmas Partywear collection ranges from stunning sequin dresses from Cefinn to showstopping blazers from Mos Mosh and accessories to boot. cavells.co.uk

Add height and texture with large candlesticks, foliage and party favours, such as personalised name place biscuits from The Kitsch Hen. the-kitsch-hen.co.uk But why should the grown-ups have all the fun? Tots Tables based in Rutland hire out children’s tables, chairs and partyware to create the ideal space for smaller diners, with Christmas packages available. Owner Katie Brugha said: “Children love the novelty of having their own table to eat at and you can make it really fun with special decorations and tableware. “The bonus is, it makes extra space at the adults’ table, so you can squeeze a couple more people on or can have your own space where you don’t have to worry so much about breakages or spillages.” totstables.co.uk

Food and Drink Saving the best until last, it is time to talk about food and drink. And you really can get everything you need for the big day right here in Rutland. which means they have been raised and processed to the very highest standard by British farmers. You can either buy them direct from the farm or through a stockist, such as Northfield Farm near Cold Overton. Farmer and butcher Jan McCourt said: “Turkey has become the traditional meat at Christmas. We buy our birds from a farm in Norfolk and have been over the moon with them. It is important to us to have a good and trusting relationship with our producers. “I would always go for a free range bronze breed because you get good value per head - it goes a long way. Buying an intensively reared bird, you just don’t get the same taste, quality or experience.” northfieldfarm.com goldenturkeys.co.uk

And then there is the cheese! Otters Fine Foods in High Street, Oakham, always has a counter full of tempting cheeses, sourced from Britain, France and Spain; pasteurised or unpasteurised and made with cow’s, ewe’s, goat’s and even buffalo milk. They have also opened their pop-up Christmas shop again this year, selling everything you need for your cheese course, from stunning cheese boards and knives to condiments and relishes. And it is no surprise which cheese is the most popular at Christmastime. “Colston Bassett Stilton is the most popular at Christmas,” explains owner Leo Sugden. “And then Rutland Red always goes well - it’s an aged Red Leicester and adds a bit of colour to your cheeseboard. Then Brie. We stock it all year but Baron Bigod is from Suffolk and it’s really good. On par with French Brie and then you have a trio of cheeses from England.” ottersfinefoods.co.uk In Stamford, be sure to pop into Rennet and Rind, which opened in the High Street in September, where you can pick up a Christmas edition mystery cheese box for four people from £48. Their mystery cheese boxes can also be bought as a subscription, which is the perfect gift for a cheese lover. rennetandrind.co.uk

Not everyone wants turkey for Christmas lunch, however, and there are some fantastic local alternatives. Farmer Lou is based in Barnsdale and they have a farm shop selling all cuts of beef, pork and lamb raised on their farm, along with their delicious sausages. They are also selling Christmas hampers for £100 which include a rolled turkey joint, beef, lamb, bacon, sausages, sausage meat, pigs in blankets, stuffing, cheese and all the extras to go alongside. farmerlou.co.uk

And let’s not forget the wine. The Uppingham Wine Cellar in High Street East prides itself on being Rutland’s first Vinothek and sources wines from around the world. Not only can they recommend the perfect pairing for your Christmas meal, they can show you how to pour and serve it. And if there is a wine you would like but cannot find, they will source it for you. theuppinghamcellar.co.uk

Vegetables can be picked up from one of the local markets in the few days before Christmas, with B Faulkner and Sons at Oakham on Wednesday and Saturday and Uppingham on a Friday and Robin’s Fruit and Veg Stall at Stamford on a Friday.

Or, you could also go straight to the source. The Rutland Vineyard just outside Ketton sells their own English sparkling and still wines on-site, giving you the perfect excuse to visit the vineyard and indulge in a sample or two, all in the name of research. therutlandvineyard.com

One of the most important parts of the day is bringing out the Christmas pudding and that is

All in all, it’s the recipe for a very merry Christmas! therutlandmagazine.co.uk

Christmas Meet Santa Claus in Lapland and enjoy a snowy winter wonderland How do the Finns celebrate Christmas? Everyone knows Santa Claus comes from Finland, but there’s more to a traditional Finnish Christmas than Saint Nick and presents. During the festive season, Finns like to take things slow and enjoy the company of loved ones – with a side of mulled wine and sauna. White landscapes shrouded in darkness, lit only by stars in the sky and ice lanterns on driveways, set the mood for a cosy festive season. For most, Christmas preparations in Finland start by deciding where to spend it. At home with family is a common choice, but some families rent a cottage or villa in the countryside. Food also plays a central part in Finland’s Christmas celebrations. Pork roast is the main dish in most households and it’s served with a variety of fish, casseroles and salads. The traditional Christmas Eve breakfast is rice pudding. Later, after a couple of Christmas ales, carols are sung with gusto. At the end of the night, a warm Christmas sauna relaxes one’s body and soul.

Traditional Finnish Christmas food The Finnish Christmas food traditions vary around the country, but there are still a few staple dishes intrinsic to this wintery feast. An ovenbaked ham served with mustard is an absolute must for many, but an assortment of fish is also considered an essential part of traditional Finnish Christmas dinner. Vegetarian courses include a classic beetroot salad and various oven-baked root dishes like the popular rutabaga casserole. Sweet pastries such as prune jam tarts, spice cakes, and rice porridge are Finnish Christmas

or try making one out of ice. Let a water bucket partially freeze outside, pour the water out from the middle and place a candle or a led light inside the frozen shell. You’ll be surprised what a difference a simple lantern can make - a dark Arctic night becomes cosier in an instant.

When is Christmas in Finland?

delicacies beloved by people of all ages. One of the most cherished tasks of Christmastime is decorating gingerbread, which is often hung from the branch of a beautiful spruce tree.

For Finns, Christmas Eve is the main event of the holidays and the night Santa brings gifts for children. Santa’s visit is undoubtedly the most anticipated Finnish Christmas tradition amongst the smallest members of the family. Apart from the delightful number of opening presents, the Christmas Eve traditions typically include drinking glögi, having a Christmas dinner, and bathing in a Christmas sauna. Midnight Christmas mass is a tradition for many. Did you know that Santa lives in Finland?

All about Santa With Father Christmas preparing for the season, we spoke with one of his elves to learn more about Santa Claus and a Finnish Christmas

26

Since Santa is a mysterious fellow, you might want to ask him your questions in person. Travel directly to his home in Lapland, northern Finland, where you can see him for yourself any day of the year! Understandably you might feel starstruck meeting someone world-famous, but Santa is a very kind soul and is delighted to meet you just as you are.

But he has flown over the North Pole many times, and he says it’s awfully cold.

Who is Santa Claus?

Where can I meet Santa?

Haven’t had a visit from Santa? You must have been naughty! Only kidding, of course. To Finns, Santa is a jolly fellow and an ambassador of goodwill from Lapland, Finland.

Santa Claus hails from Finland’s mysterious Korvatunturi (“Ear Fell”) in Lapland. But you can meet him in Rovaniemi, the official hometown of Santa, on any day of the year.

Is Santa from the North Pole?

Can I send Santa a letter?

Don’t be silly – he’s from Lapland, Finland!

Santa Claus’s personal post office has received thousands upon thousands of letters from children in 199 countries. But because he’s magical, he reads them all! You can send a letter to Santa using this address: Santa Claus, Santa Claus’s Main Post Office, 96930 Napapiiri, Finland. The The Import mporta a nce of Tim imee T

o set a trend you need to know the classics and how to awaken their charisma with new interpretations and combinations. All the disciplines that express the value of time are confronted with the ability to evolve at every cycle in a refined way: a wine blend that carefully changes yet maintains its identity a painting that lends an original allure to primary colors a new pairing that updates familiar and natural flavours. In this spirit based on a careful study of codes and alert sensitivity to contemporary influences the Brunello Cucinelli Autumn Winter 2023 Collection was designed with a full focus on the importance of time: the time for experience that cultivates knowledge the time for artisanal creation the time in which every garment will have the opportunity to renew itself with combinations that enhance its inherent qualities. Just like a classic that thanks to strong roots can take on new and richer meanings day after day. Every look is characterised by a key garment that is its focal point that expresses the overall style but at the same time is defined by the harmony of combinations. A tailored cashmere coat a special hand-knit sweater or a suit made of a precious fabric can constitute this focus of attention which is then balanced in a contemporary way by overlays trousers and accessories. All the elements are always organized based on a search for balance between references proportions and style. A selection of the finest fabrics characterised by special textures and micro-effects such as Donegal chevron and broken twill weave epitomizes the quest for a new value through classic materials.

Colours take on intense hues inspired by historic wine blends that have stood the test of time transcending trends. Shades of red – barbera maroon and burgundy – are presented in a greyish version to convey in a palpable way the passing of time a long ageing process that enhances the finest and most subtle nuances. The overall harmony is created by precious tones of beige moving from medium camel and sand to light panama and ecru accompanied by fascinating shades of noble deep blue and modern light blue. Urban hues of grey complement the backdrop with the brand’s distinctive colours. The suit confirms its role as a cornerstone of the collection: contemporary comfortable and now more versatile than ever thanks to fabrics that allow wearers to convert the style of a jacket by matching it with different trousers. Outerwear pieces enhance their distinctive features depending on their intended purpose: elegant coats maximize their exclusive sartorial feel while parka and down jackets highlight their dynamic and contemporary flair. The winter knitwear collection was broadened to make it as comprehensive as possible providing the perfect choice for any occasion and representing the evolution of the entire season. From lightweight sweaters perfectly matched with the tailored lines of blazers to cardigans made of precious cozy yarns with an outdoor feel. Noble fibers of cashmere virgin wool and silk are accompanied by the soft shaded effect of alpaca. The fascination of traditional stitches is enhanced by new proportions and combinations as well as by colors in order to create “timeless knitwear” that elevates the coordinates of form matter and colour. New hand-knit creations of extremely high quality complement the offer with an exclusive touch. brunellocucinelli.com

When to see a Sports Specialist Knee Injuries with Mr Arijit Ghosh, Consultant Orthopaedic Surgeon at Nuffield Health Leicester Hospital

T

his issue we sat down with Consultant Mr Arijit Ghosh, a very experienced Orthopaedic Knee specialist in one of our consultation rooms to find out about the most common sporting injuries people sustain, how we can aid recovery at home and when it’s time to seek medical intervention. Knee injuries are very common. In fact, the knee is one of the most commonly injured joints in sports. Significant forces go through the joint with load bearing and twisting making it susceptible to injury. Knee pain itself can be very debilitating, making sporting activities such as running, jumping and bending quite painful and sometimes even walking and weight bearing hard to do.

What are the most common sporting injuries you find? Sprains, tendinitis, ligament injuries and cartilage injuries. Although most can be treated with conservative management (e.g. activity modification, structured physiotherapy regime) some injuries may require surgical intervention such as keyhole surgery or ligament repair/reconstruction. What you can do to aid recovery at home before needing to see a specialist? Most simple knee injuries can be managed at home. The “RICE” protocol is often helpful in treating these. • Rest- avoid strenuous or painful activities. Avoid standing for long periods of time. • Ice - use an ice pack or frozen peas for about 20 mins every 3-4 hours • Compression - potentially wrap a bandage around your knee, but not tight enough to cause pain • Elevation - keeping the knee propped up on some pillows may help

At the same time, pain killers such as paracetamol or ibuprofen gel can help. NSAIDS (Non-steroidal Antiinflammatories) such as ibuprofen tablets can also help but these do have side effects and are not safe for everyone- so please check before taking them. When is it time to seek medical advice? There are a number of reasons to see a specialist. Reasons to seek immediate medical advice are if the knee is badly swollen or out of shape, if you have associated fevers or a high temperature or if you cannot move it or put any weight on it. Otherwise, if the knee pain does not settle with time, it’s time to see a specialist. If the knee injury was particularly forceful, if a ‘pop’ was heard at the time, if there is ‘jamming’ of the knee or if you can hear significant clicking- you should seek specialist medical advice. A feeling of ‘weakness’ or ‘instability’ where you have the sensation the knee will give way is also a concern as is an inability to perform everyday tasks due to knee pain or stiffness. A specialist will talk to you about your injury and symptoms. They will be able to examine your knee to determine whether you have injured any particular structures. Would I need diagnostic testing? Specialists will also have access to diagnostic investigations such as X-rays and MRI’s. X-rays will show bony injuries and evidence of chronic problems such as arthritis. An MRI scan is a very detailed scan which can look at the cartilage, ligaments, joint surfaces and bones in high detail. This will be able to diagnose your knee problem and provide a structured treatment plan to get you back to fitness.

Cruciate Ligament) is a ligament that helps stabilise the knee. An injury to this ligament often results in the sensation of the knee giving way. This injury often requires surgery. A tear of the ‘shock absorber’ or meniscus is also common and may require keyhole surgery. Other common injuries for athletes and runners include sprains and tendinitis which are usually treated with a structured physiotherapy regime. All treatment is aimed at getting you back to fitness so that your knee does not hold you back and allows you to enjoy the activities you want to. Mr Ghosh specialist interest is in sports injuries and ligament injuries and is involved in the treatment of professional sports teams and athletes. If you experience any of the symptoms above and would like to book an appointment with Mr Arijit Ghosh, please visit nuffieldhealth.com or call 0300 131 1416 to speak to our in-house team. Check out the hospital’s social channels @nuffieldhealthleicesterhospital and @nuffieldleicesterhospital for a 30 second video with Mr Ghosh on his 3 top tips to prevent knee injury in the future.

What kind of injury am I prone to if I am an athlete? Athletes are prone to knee ligament injuries. These can be in the form of ligament ruptures. The ACL (Anterior

members who want to shop locally. Cardholders can take advantage of many benefits from 10% off haircuts to free cocktails with your meal when presenting a Stamford Card. Natalie Pretsell, Head of Engagement and Fundraising at Stamford Schools, comments:

“We are delighted to be relaunching the Stamford Card ready for the festive season. We have a host of new partners offering benefits and offers to cardholders, as well as a new-look card for shoppers to enjoy using in and around Stamford. As always, we continue to work with the #ShopStamford initiative and are excited that this will be ready for local shoppers to enjoy this year. Having originally launched the scheme prior to the Covid-19 pandemic, we now have over 140 different offers available with the card and hope new and existing cardholders will take advantage of the benefits, contributing to our local high street economy as well as supporting student bursaries with every purchase made.” The Stamford Card was originally launched in 2020 in collaboration with #ShopStamford, a consortium of independent traders formed locally in November 2018. The group was created to promote and support the town’s independent traders and attract more footfall to the town. Stamford is known nationally for its outstanding high street which, for the size of the town, is remarkable in its quality and variety. Principal of Stamford Schools, Will Phelan, explains more: “The Schools are an integral part of the Stamford economy with the volume of footfall they bring into the town and the level of employment they provide locally. The partnership within the town simply highlights the strength of our local community and our

ability to work as one team for the overall benefit of Stamford as a destination. The Stamford Card is an excellent example of the symbiotic relationship between the Schools and the town, and in particular of the mutual benefits of working together.” He continues: “Stamford is a dynamic, vibrant, modern and exciting school, built on the strengths of five centuries of learning, with a resolute focus on preparing our students for the future. Our students leave Stamford as rounded and grounded young people, ready for life beyond education. At the heart of our Schools is the focus on academic ambition, pastoral excellence, and the opportunity for students to become the very best versions of themselves. “Over the past five centuries, our school has prospered with the provision of bursaries which have enhanced the many outstanding facilities on offer to enrich student experiences. In recent years we have invested in a brand new sport centre at Wothorpe expanding the provision and opportunity for students with a wider range of sports and physical activities on offer across our school sites. The opening of Wothorpe enabled the move to a fully co-educational school and accomplished the transformation of what was previously the High School into our new St Martin’s Sixth Form site. The next step for Stamford is to increase the number of students that can be awarded a transformational bursary. As a school, we recognise our responsibility to look towards the future and this includes the connection with our local town and residents. The Stamford Card enables this opportunity to support local families and our high street economy in equal measure.” For more information about the Stamford Card, and to sign up for benefits and offers, please visit our website stamfordschools.org.uk

he Falcon Hotel is set inside a 16th century coaching inn, which has been restored, with many original features having prominent position. The restaurant spaces have been adapted to the building, not the other way around. The family wanted to make the Falcon a well-loved building as much as building a thriving hotel and restaurant. It’s a privately owned family run business and the Wills family have been local to Uppingham for generations, owning Don Paddy’s and The Vaults on the Market Place too. Don Paddy’s was acquired first and has been running for 20 years. With the experience from this, they, along with James Torbell, Director, took on the Falcon in 2011. The hotel has been completely re-done, taking time to use local suppliers and constructors. They never shut entirely, so the process has been such that the customers could have a real impact on how the hotel would work because it was being done and used in real time. The venue boats three restaurant spaces; The Main Lounge, The Tap Bar and the Front Room. Each has its own character, with two looking over the

historic Uppingham Market Place. The Main Lounge is the hub of the hotel and includes a wood burning fireplace, comfy sofas and then a full back with wooden floors. On a Saturday you’ll find every seat is filled with couples and families and friends meeting up for a catch up over a bar snacks lunch. By night, you’ll find residents and guests enjoying a formal evening meal here in a relaxed and quiet atmosphere. The Tap Bar is an oak panelled traditional bar room with a wood burner, overlooking the Market Place. This bar is filled with character and charm and offers the same menu as the Main Lounge. The Front Restaurant offers a more formal dining setting and is used for residents’ breakfast. The Falcon Hotel offers a real home from home feel, and you’ll always be met with a friendly face. The venues host lots

of special occasion meals, birthdays, anniversaries, and at the same time, welcome their regulars who come in every week for lunch (some from when they opened back in 2011). The hotel also hosts live music nights throughout the year, which are great fun and a real hit with residents and locals alike. Head Chef Ali Duncombe has been with the group for 17 years, with his signature dish being a delicious Beef Wellington. Ali changes his menus seasonally, offering a more festive menu for December. Ali serves us a fantastic Sunday Roast and gets his Sirloin from Aubrey Allen, a butcher who is by appointment of the King. Once visited, The Falcon Hotel becomes a second home that serves coffee and cake in the morning and will be there for you later in the day when you’re ready for wine and a tasty meal. falcon-hotel.co.uk therutlandmagazine.co.uk

MEET THE CHEF:

RICHARD

PAG E

Head Chef and Operations Manager at The Fox, North Luffenham What’s your first memory of your love for cooking? As a child, I always liked to help my mother in the kitchen, especially making the Yorkshire pudding on a Sunday lunch. I also clearly remember she had a Bero flour cookbook and over time, I practically made most of the dishes in it. When did you know you wanted to be a chef? As a child, my ambition was always to be a chef. I would cook at any opportunity and even as a teenager, whilst volunteering at my local St John Ambulance Brigade, I even cooked the annual Christmas dinner for everyone. Where were you trained, and how difficult was your training? I spent two years training at Corby Catering College, and worked in an Italian Restaurant part-time. I then continued my career working for the Hospitality and Catering Training Company and also Derby College in a management lecturing capacity, developing others within the hospitality industry. In 2002 I settled in Rutland, and have since worked in an operational role for three pubs, where I am now Head Chef and Operations Manager at The Fox, North Luffenham.

What do you love most about your job? I am very lucky in my current role to have total autonomy for both the kitchen and front of house teams. Being Head Chef allows me the opportunity to be creative with ingredients and menus. Meeting lots of different people and helping others to develop their own careers. Our philosophy at The Fox may sound very simple but our kitchen and front of house are ‘one team’ working together to ensure that we not only meet but exceed our customer expectations. Describe your style in three words. Organised, traditional, calm. What’s your favourite dish to create? At Christmas, I really enjoy making a Turkey Ballotine, with herby stuffing, streaky bacon and all the traditional accompaniments. The turkey is moist and full of flavour. A real winner for all. Where do you draw your creative inspiration from? Dining out, I love food. I love experimenting with ingredients as well as reading articles that pop up on the internet and keeping a keen eye on what creations celebrity chefs are doing. What four ingredients are necessary in your kitchen? Onions, cream, cheese, potatoes. If you could prepare a meal for anyone, who would it be and what would you make? Has to be my mother and I would make her a nice winter stew and dumplings.

What are you most proud of in your career? Being asked to serve food at a charity event, with Princess Anne present. I also feel very proud of the apprentice chefs we have trained over the years and to see their confidence, abilities and careers flourish. Who is your biggest supporter? My mother! What would you want to have as your last meal? Either lamb rump or roast beef and Yorkshire pudding. I just love them both. Are there any foods you just don’t like? Shellfish and offal. What do you think is the most challenging ingredient to work with? Pastry. Do you do the cooking at home? When I get the chance I enjoy cooking for my partner and friends. What advice would you offer to an aspiring chef? Get creative, follow your desires, be calm and be consistent. thefoxrutland.co.uk therutlandmagazine.co.uk

Winter’s Whimsy: Sculpting Snow Mandalas What could inspire the Christmas spirit more than chestnuts roasting on an open fire? At Valsana hotel, guests can make home-roasted chestnuts in a fire bowl, while sipping on a homemade wintery punch. The hotel also runs a ‘Snow Mandalas experience’. Guided from Prätschli through the snowy forests of Arosa, guests arrive at an open plain - a fresh white snowy canvas where they can let their creativity run wild using their snow boots to practice the art of Snow Mandalas and capture their finished masterpieces from a drone’s perspective. tschuggencollection.ch

o you dream of a white Christmas? While others are planning for a dose of winter sun, would you rather stay cosied up beside the fire? Perhaps you should plan a frosty escape somewhere you can truly embrace the Christmas spirit. If you’re a snow fanatic, a ski break will tick all your boxes for a festive getaway. At Inspiring Travel, we’ve just launched our new collection of European ski holidays ready for the upcoming season. Covering the top resorts across the likes of France, Switzerland, Austria and Italy, along with the USA and Canada, the selection boasts the best experiences for all levels. One of my favourite spots is Le K2 Palace set in the chic French town of Courchevel. Along with its rooms and suites, the resort has introduced spacious new ‘chalet suites’, which you can enjoy along with a host of hotel facilities such as a sumptuous spa and a Michelinstarred restaurant. If skiing isn’t for you, I’d highly recommend a river cruise through Europe’s Christmas markets. River cruises are an entirely different experience from ocean cruises, with boutique-style vessels and a bigger

focus on experiencing culture. Amawaterways offers itineraries along the Rhine, allowing you to explore the magical markets of the Netherlands, Germany and France along with stunning scenery as you relax on board. They do book up early though, so plan your trip at least a few months in advance. When you’ve already seen thew more popular Christmas markets, our experts at Regent know where to find some hidden gems. Tallinn in Estonia hosts markets in its medieval town square – and, you can head off the beaten track to hike around the mysterious bog pools!

Alternatively, Zagreb in Croatia has some award-winning markets, while Helsinki comes alive with over 140 stalls to browse with a steaming cup of glögi in hand. www.inspiringtravel.co.uk www.regent-holidays.co.uk

T usca uscan n Hidea Hideaw w ay Set in splendid isolation in the heart of the Maremma countryside, Kate Kinsella visited L’Andana, a former Medici villa in Tuscany Location Set in the stunning countryside location of Castiglione Della Pescaia, surrounded by Tuscan vineyards and olive groves sits the captivating L’Anadana estate. Surprisingly and conveniently only a short car or bike ride away from the rolling waves and soft sands of the coast where you can dine on fresh seafood pasta dishes and chilled refreshments whilst gazing into the ocean, every so often removing your sunglasses to take in the mirage worthy ocean views.

Rooms The hotel is home to a total of 61 luxury rooms and suites, located across four different buildings. We viewed most categories during

our stay and I can assure you that whichever you book, you won’t be disappointed. I stayed in a Deluxe room at La Villa, the interiors offer a traditional romantic Italian interior with plenty of space and views of the picturesque Tuscan hills. The rolltop bath was appropriately sunk into each night, accompanied by melting aromatic bath salts, followed by the fluffy bathrobe and slippers in preparation for bed.

Facilities & Experiences As a guest at L’Andana, you would probably need to book at least a month out if you wanted to experience

everything this charming property has to offer. There is even a place to park your helicopter if you don’t fancy flying with the masses. My standout experiences are the fabulous spa and soul-soothing treatments, the incredible Michelin star dining experience, horse riding, the guided e-bike tour and the wine tasting, but in all honesty, everything is created and executed with such attention to detail that I feel however you choose to spend your time here, it will never be time wasted.

My Experience What I loved most is how enchanting the estate is, the arrival alone is an experience in itself. It was one of those moments when your mind plays its own cinematic theme tune as if you are starring in an old Italian movie. Cypress and pine trees line up like nature’s butlers to greet you along the most picturesque driveway with the estate as the grand finale. There is also an unexplainable sense of calm that you feel when staying here, any worries you left home with cease to exist and are replaced with a more enjoyable challenge of deciding on what moreish

cocktail or mocktail you will choose, quickly followed by further concern over what mouth-watering dish you will indulge in at dinner. The attentive service team has perfected the art of being present and ready to serve without casting a shadow over you or your menu wherever you go.

My Personal Highlights Two experiences stand out to me when reminiscing over my stay at the L’Andana, both took my stay to the next level. The first was the E-Bike tour, if you fancy connecting with the explorer within, book this experience. The clever invention of the E-Bike really is something to

get involved in, especially if you are brave enough to enter the turbo speed setting, you’re guaranteed to feel that wind in your hair. Dressed in our activewear and helmets secured, we started out on our adventure. Thankfully our doting guide kept an eye on us as we failed to keep our eyes on the road ahead on multiple occasions. There is so much beauty to take in but the true ‘wow’ moment was discovering a field of perfectly grown sunflowers, the brightest shades of yellow, so beautiful that they attracted a stunning kaleidoscope of butterflies, dragonflies and bees. Unless you saw it for yourself, you wouldn’t believe its existence. The next was the unforgettable Michelinstarred restaurant, La Trattoria Enrico Bartolini. It really felt like we were in the presence of something truly unique and exciting. The creativity and pure culinary skill that goes into each of the edible creations, inspired by flavours of the sea and locally sourced ingredients of only the highest quality is something to be admired. Individual dishes of perfection all presented in their own artistic brilliance. What I also appreciated was that the service team and chefs made our night so enjoyable, other Michelin-star restaurants can be likened to the atmosphere of a library but La Trattoria understands the importance of making the diners’ evening one to remember by ensuring fun is also included on the menu. andana.it

swimming pool on a terrace, an oasis with great views. All the rooms are very quiet thanks to their avant-garde insulation structure. In addition, they have a solid sliding door to block the light from the outside and isolate the room even more. The Grand Suite is the largest in the hotel and presents your own private oasis in Barcelona with a 40 m2 suite with roof-top terrace with swimming pool. It really is one of a kind.

Our Experience We loved the relaxed feel around the hotel. Everyone we met whilst staying at Ocean Drive were so friendly. Every morning we were greeted with a welcoming smile from Javea; he always ensured we started the day well with perfectly cooked eggs, surprising us with pancakes or a speciality smoothie of the day. A highlight of the hotel is the OD Sky Bar, which is small but perfectly laid out for an evening of delicious cocktails overlooking the city. The location is perfect to travel around the city and see all the sights; the rooms are spacious and the people are fabulous. For anyone wanting a central hotel to explore Barcelona, this is the perfect choice. od-hotels.com

Reinventing classic cars is nothing new - take the success of

the ‘new’ Mini or Fiat 500 as evidence should you need it - but Alfa Romeo has redeveloped one of the icons of its back catalogue. The 33 Stradale was the road-going version of Alfa’s gorgeous Tipo 33 racer, and now the 1960s supercar has been reimagined for the 21st century. Utterly beautiful from every angle, it’s available with a choice of two different propulsion systems, with the 3.0-litre V6 petrol option producing 612bhp and offering a top speed of more than 200mph. The electric version, meanwhile, produces around 750bhp and will cover up to 280 miles on a charge. Sadly, just 33 examples will ever be built, and all 33 have already been reserved. Keeping you up to date with all the latest motoring and technology news WORDS: JAMES FOSSDYKE

HYPER FORMANCE Lotus continues its electric journey with a new “hyper-GT’ car that aims to mix long-range electric motoring with supercar speed.

O

nce upon a time, Lotus’ motto was to simplify and add lightness. Now, with cars increasingly powered by big, heavy battery packs, that seems to have gone out of the window slightly. The company has even caved into building an electric SUV called the Eletre. And now it’s following that car with another electric vehicle: the Emeya. A kind of four-door fastback that looks like a cross between a Lamborghini Urus and a Kia Stinger, it’s a striking vehicle, but the looks are nothing compared with the performance. Lotus calls it a “hyper-GT car”, insinuating more pace than conventional grand tourers, and the Emeya certainly delivers. The twin electric motors are said to take the car from 0-62mph in under 2.8 seconds, while the top speed will be in excess of 155mph.

80

therutlandmagazine.co.uk

As with so many other electric vehicles, power will come from a bank of lithium-ion cells, which essentially use the same technology as laptop and smartphone batteries, although the Emeya’s total battery size is yet to be confirmed. Lotus has, however, told us that it’ll charge at speeds of up to 350kW, allowing it to charge to 80% in less than 20 minutes at full speed, while 93 miles of official range can be added in as little as five minutes of charging. “This is a Lotus like you have never seen before,” said the company’s vice-president of design, Ben Payne. We’ve built on everything Lotus has achieved so far to create a luxury performance car for the drivers, designed to inspire confidence, exhilarate with raw emotion and pure joy.” Lotus Emeya, £TBC, lotuscars.com

MINI MASTERS

loves

Mini might have launched a new electric Cooper recently, but the company isn’t the only one shoehorning electric motors into small cars. David Brown Automotive, purveyor of numerous ‘restomod’ cars that essentially see modern engineering updates applied to classic vehicles, has supplemented its modified Mini Remastered with this: the Mini eMastered. Based on the original Mini, the car has a handcrafted exterior and a fresh interior, both of which hide largely new running gear including a 96bhp electric motor and an 18.8kWh battery that provides 110 miles of range. It won’t go far, but as it’s designed for urban use, that won’t matter too much to customers, who can charge the battery in just three hours using a domestic ‘wallbox’ charging point. David Brown Mini eMastered, from £125,000, davidbrownautomotive.com

I LIKE THE WAY YOU MOVE The humble people-carrier may be a dying breed - most have been usurped by seven-seat SUVs - but Lexus is trying to play the conservationist and save the genre from extinction. Key to that is the new LM, which apparently stands for “luxury mover”, and offers customers the last word in VIP transport. Or at least that’s the idea. Available in either four- or seven-seat forms, the car is designed to transport passengers in comfort and luxury, with the top-of-the-range four-seat Takumi providing a huge lounge-style living space in the rear, complete with big armchair seats and a 48-inch ultra-widescreen monitor on the bulkhead that separates the passenger compartment from the front seats. Power comes from a petrol hybrid system, and customers can choose whether they have front- or all-wheel drive. Lexus LM, from £89,995, lexus.co.uk

James Fossdyke finds out why Audi’s electric sports car is one of the best on the market

A

s Kermit the Frog once told us, it isn’t easy being green. From cutting down on the sirloin steaks to giving up single-use plastic and from recycling to, well, cycling, none of it is anything like as simple as it should be. And while our cars may not make up all that much of our carbon footprint, making the move from gas-guzzling petrol vehicles to cleaner electric alternatives is not the seamless transition it should be. Not only are electricity prices incredibly high thanks go to someone called Vladimir and the energy companies’ record profits - but car prices are on the up for much the same reasons, and the charging infrastructure is way behind where it needs to be. So much so that I’m writing this missive while queuing for a plug at a motorway service station in the Midlands. It only has three charging points, all of which are occupied. Now the Hyundai in front has finally plugged in, I’m next in line for some charge, but I’ve already been here 20 minutes and I’ve nearly finished my coffee. Send help. Clearly, the government’s plan to have the private sector install public infrastructure isn’t working, and nor is the decision to leave home charging solutions to individuals. Domestic charging points don’t come cheap, and they depend on drivers having the space to charge. Woe betide anyone who lives in a flat or has to park on the street. Strangely, though, the one cohort at which you can’t really point the finger is the car manufacturers. By and large, they have risen to the challenge admirably and built a wide range of electric vehicles (EVs) for us to choose from. Progress isn’t rapid - it takes years to develop new models no matter what fuel they may run on - but the change is happening. Nissan, for example, recently announced it would not develop any new petrol- or diesel-powered models for the European market. Volvo, meanwhile, is slowly switching to an electric future, and Jaguar has confirmed its intention to go all-electric in just a few years’ time. As a result, electric cars are no longer weird or funky. They’re just cars, whether they’re cheap like the MG4 EV, comfortable like the BMW i7 or capable like the Jeep Avenger. They can be sporty,

too, and one of the best examples of that is this: the Audi RS e-tron GT. The name might be a mouthful and the colour of this car is certainly an acquired taste, but the futuristic saloon has giant-killing potential. It looks like Iron Man’s car and it goes like it, too, with a massive 590bhp output from its two electric motors. One drives the front wheels and the other drives the rear wheels, giving it all-wheel drive and therefore extra traction, which helps with acceleration and stability. And it certainly demonstrates plenty of that when you put your foot down, getting from 0-62mph in just 3.3 seconds. To get that sort of acceleration from a petrolpowered Audi, you’d need to buy the R8 supercar, which has a fabulous but somewhat wasteful 5.2-litre V10 engine. But while the RS e-tron GT might have the performance of a two-seat supercar, it has the practicality of a four-door saloon. At least in theory. After all, it is a four-door saloon with a proper boot and a little forward storage area for charging cables and suchlike. Admittedly, the boot isn’t enormous compared with other saloons, but by the standards of supercars it’s positively cavernous. And then there are the rear seats. While it’s true that the sloping roof means adults won’t enjoy life back there for very long and tall adults will need to be decapitated before getting in, there’s more than enough space for kids on the school run - something you won’t get from an R8 - and the copious amount of rear legroom means said kids won’t even be able to kick the back of your seat. Happy days. Better still, the RS e-tron GT’s cabin is so solid that even the most destructive children will struggle to break it. Audi’s interior quality is legendary, and though the buttons on the steering wheel feel a fraction cheap, the dashboard, door trim and handles all feel incredibly robust and substantial. Of course, it’s pretty sporty inside, and that means there’s a lot of black trim that makes it feel a bit dark at times, but the Audi compensates for that with two big screens in the dashboard. The central screen doesn’t do anything too fancy, but what it does it manages with simplicity and ease, which is even more important. The limelight,

then, is hogged by the Virtual Cockpit digital instrument display behind the steering wheel, which manages to offer clarity and customisation, as well as putting all the most useful information in one place. It almost doesn’t matter what your passengers fiddle with on the touchscreen, because pretty much everything you need is right there in front of you. True, the Virtual Cockpit technology is getting on a bit now - it’s been with us for the best part of a decade - but it’s still the gold standard for systems like this. Naturally, in such a high-tech car, technology does more than just power the screens, and there’s a massive battery under the floor offering an official range of around 300 miles between trips to the plug. In the real world, you’ll probably get about 250 miles from it if you’re careful, and maybe 220 miles on the motorway. And as charging is a hot topic at

84

therutlandmagazine.co.uk

the moment - I think the Audi Q4 e-tron might be about to leave, freeing up a plug - the RS e-tron GT’s battery can be filled from 10% to 80% in less than half an hour, assuming you can find a charger fast enough to power it. So far, so good. And things only get better when you drive the RS e-tron GT. Under the skin, it shares an awful lot with sister company Porsche’s Taycan sports saloon, but it’s a little softer in terms of its suspension set-up. That means it sacrifices a little agility - but only a little, and the Porsche has agility in spades, so the e-tron is still great in corners - in exchange for a bit more suppleness. That means motorway miles pass in nearsilent comfort, but the handling on country roads is still very good. As a result, the e-tron GT is a thoroughly useful sports saloon that manages to balance performance and planet-friendliness as well as can be expected. It isn’t perfect, and the Porsche Taycan is still a superior product in some ways, but the Audi is a great all-rounder that will tick a lot of boxes for a lot of customers. It still isn’t easy being green, as my wait at the services has proven, but the RS e-tron GT is about as easy eco- and family-friendly supercar ownership gets.

Q&A

with

KATIE CARDEW, KATIE CARDEW ILLUSTRATIONS How would you describe yourself ? I am an interior designer, specialising in creating rooms and homes with character, colour and soul. I love using a mixture of new and antique items and I believe rooms should be designed to last for years and not just reflect that month’s trend! I grew up in the Stamford area and aside from a couple of years in London after graduation, I’ve never left! Over the last decade, I have bounced around a few homes in Rutland and Northamptonshire but we’ve finally bought our forever home just outside of Uppingham. Career wise, in 2013 I set up Katie Cardew Illustrations, an illustrated homeware and gift company. To date, we have three stores and lots of lovely stockists across the UK and beyond. I still do the illustrations for the products but have stepped back from running the business to focus on interior design. I re-trained last year and graduated this year, and I’m delighted to have lots of lovely clients and homes to work on. Who are your greatest influences? Interior design wise, I love Rita Konig. Her mum, Nina Campbell decorated Hambleton Hall and I love the homeliness they capture in their designs. What have been some of your best jobs/experiences at work? Since launching Homes by Katie Cardew, I have had some magical moments. One was getting accepted onto House

and Garden magazine’s ‘The List’. Another was seeing a children’s bedroom I designed come to life and then photos of that room being shared far and wide on social media. The comments about my work brought a tear to my eye. Traditional vs contemporary style? Traditional with a twist. I use a lot of antique furniture but then might pair an old chest with a brightly coloured bobbin lampshade. What would you consider your greatest achievement? Setting up two businesses in 10 years. In those 10 years, I have also had two children. When I look back at all the things myself and the team have done, it does make me very proud. What would your super power be? Easy – making pancakes. My kids have them every Saturday morning and I must admit, I’ve become quite the pancake connoisseur. homesbykatiecardew.com katiecardew.com

P.S. Last book you read? ‘The Hungry Caterpillar’ with my son, other than that, it was ‘Rules in Chemistry’. Dream buy? Our current home. It’s a 17th-century ironstone house with so much potential. My dad grew up here in the 1960’s so it’s got a lovely family connection. I recognised it on Rightmove from a painting my grandfather’s twin had made of it that hung in my parent’s sitting room and as soon as we looked around, we knew it was the one.
