Magazines Editor As I write, the region is basking in a heatwave and the hugely successful Lytham Festival has come to a close. The 10-night extravaganza featured world renowned singers and musicians, which attracted thousands of people to the region – a real boost to local businesses! You can read all about the festival in this issue of Live Preston & Fylde magazine, which features fabulous summer fashion, al fresco dining and adventurous days out for all the family. Speaking of adventure, we meet Olivia Perry a young and dynamic project manager with BAE Systems. She recently won the Spirit of Tempest award for her contribution to the Tempest programme, which is tasked with designing and delivering a UK-led, next-generation Future Combat Aircraft System. Olivia won a flight in a Spitfire as part of the award – an experience she describes as amazing! Keeping with the theme of adventure, we chat to skier Dave Ryding who, at the age of 35, won the World Cup Slalom in Kitzbühel. He describes the elation of winning the event for the first time – against all odds in a snowstorm. Another talent on the world stage, actor and singer Jason Donovan also features in this issue of Live Preston & Fylde. He tells readers about reprising his role as Pharaoh in Joseph and the Technicolor Dreamcoat, which is coming from the West End to Blackpool this month. He talks about his younger years as an actor on Neighbours and more recently, his magical moments in musical theatre. We put the spotlight on Penwortham, an area that is forging a reputation as the perfect place in which to live and work. It has also become a desired destination for visitors with its delightful independent shops, boutiques, bars and street cafes. FLYING HIGH Working as part of Team Tempest, BAE Systems project manager Olivia Perry, took to the skies in a Spitfire after being presented with the first Spirit of Tempest award, writes Gail Bailey

T

empest, the programme to design and deliver a UK-led, next-generation Future Combat Aircraft System, using advanced technology and innovation, has recognised Olivia Perry, who works at BAE Warton, for her outstanding contribution to the project. “I was absolutely thrilled to win the Spirit of Tempest overall award,” says Liv. “It was a huge honour to be chosen, especially as the programme involves over 2000 talented people. It was the most amazing experience to fly in a Spitfire and is a moment in my career that I will never forget.” Liv was unsure which direction to take after completing A levels in Business, Law and English at Runshaw College but her father, who is also in the aerospace industry, encouraged her to apply for the BAE Systems Advanced Apprenticeship Scheme when the opportunity arose. The apprenticeship offers its trainees the best of both worlds – to gain their degree whilst working in worldwide business: “When BAE were holding an event to give people the opportunity to join the scheme I attended and feel incredibly lucky to have been offered a place, and the chance to experience working in a global business in the defence sector,” Liv explains. That was nine years ago, and Liv has been on an incredible career journey since then. The apprenticeship scheme at BAE allows those who are part of it to experience

different aspects of the business by rotating across the whole organisation at different points of the programme: “This is an ideal way to find out where your key strengths lie and gives a wide overview of the whole company. “I realised fairly early on that I particularly enjoyed, and had an aptitude for, conception and generating ideas – this then gave me the opportunity to spend some time working as a project manager in the Air Strategy team.”

WORKING WITH THE MOD FROM THE BEGINNING AND IDENTIFYING THE CRITICAL ELEMENTS OF WHAT THE RAF NEEDED IN THE FUTURE TO ACHIEVE SUCCESS WAS INCREDIBLE This provided Liv with a strong foundation to be part of the Tempest programme when it was launched: “The Tempest Project was unveiled in 2018 at the Farnborough International Air Show and I was fortunate to be seconded onto the programme working within the Ministry of Defence Team,” Liv says. Team Tempest is a collaboration of UK industry partners made up of BAE Systems, Rolls Royce, Leonardo and MBDA, working with the RAF’s Rapid Capabilities Office and the Ministry of

Defence, to design and develop the technologies needed for the next generation of future combat air. The programme seeks to exploit the UK’s unique industrial base to create a next generation combat air enterprise. It is delivering some of the most advanced technical capabilities, and by pairing the brightest minds it will allow them to be updated and upgraded over many years, so they remain at the cutting-edge. The Tempest aircraft will deploy this new, game-changing technology and is set to join the RAF fleet from 2035 as UK Typhoons start to go out of service from 2040. “At the beginning of the programme we worked together to conceptualise the Tempest values which we would live and work by, to ensure we had a ‘one team’ ethos embedded throughout. “Being united in these core values of empowerment, trust, excellence, strategic focus and timeliness guaranteed we were motivated to ensure the success of the project – we all shared and were committed to the same goal,” explains Liv. “Working with the MOD from the beginning and identifying the critical elements of what the RAF needed in the future to achieve success was incredible to be part of.” To then be nominated by her colleagues

in the MOD for the Spirit of Tempest award, and to go on to win, has been an amazing honour for Liv: “Project management can feel less involved in the tangible part of a programme, but working so closely with such a diverse range of people with such advanced technological skills has been fascinating. I have had the opportunity to learn so much about all the different elements that go into the aircraft, and it has really brought it to life for me.” The overall winner was the person who was positive in the team and focussed on bringing the partners together, and a key element of Liv’s role in the Concept Team was to deliver the critical evidence needed which helped to keep all the partners united, and aligned on the goal. Her prize of a flight in a Spitfire T Mk IX aircraft, operated by the Aircraft Restoration Company at the historic Duxford Aerodrome is one she will never forget. “Taking to the skies in the Spitfire was surreal and feels difficult to explain,” Liv says. “On the day it had been raining heavily but just half an hour before we were set to take off the sun came out – it was as if it had been planned. The roar of the engine and the smell of the oil was incredible. I will never have that experience again and it is something I will remember always!” n

s a designer, Elise Lennon-Porter was truly in her element when she came to designing her own kitchen. Aware of the vast choice of styles and all the latest kitchen design techniques to maximise space, Elise who has been a kitchen designer for 15 years, put the same enthusiasm and passion into her kitchen as she does into all her designs. “It was a great experience as I could see the design journey from a client’s point of view,” says Elise, who works from Kitchen Flair’s showroom in Lostock Hall.

THE CLIENT CHOSE SHAKER STYLE CABINETS WITH A DECORATIVE CORNICE WHICH MADE IT LOOK VERY GRAND AND GLASS MIRRORED SPLASHBACKS, WHICH REFLECTED THE BEAUTIFUL VIEWS – IT WAS STUNNING!

MEE T THE DESIGNER Elise Lennon-Porter is a designer for a long-established, familyowned kitchen company that continues to push the boundaries while maintaining its Italian heritage

“We always ask clients to come into the showroom as they can get lots of inspiration here. We have many kitchens on display, of varying sizes and different styles. Clients get a real feel as to what would look good in their own home,” says Elise, who will then visit clients to assess the space and discuss their new kitchen. The next stage is preparing CAD drawings to present to the client: “The first draft might not be ‘the one’ – it often evolves as it can be changed to suit whatever the client wants. Customers like it when we think outside the box to create something unique that’s really going to wow them. “That’s the reaction I’m looking for – I love it when their eyes light up!” One such kitchen designed by Elise was for clients living in a large farmhouse: “I was very much led by the client on this one – three walls were knocked down to create a huge space. The client wanted a massive island that looked like a table. She chose Shaker style cabinets with a

decorative cornice which made it look very grand, dark Dekton worktops and glass mirrored splashbacks, which reflected the beautiful views from the bi-fold doors – it was stunning!” While the majority of Elise’s clients don’t have a huge space to work with, she applies the same innovative design skills to create kitchens that look amazing and are ultimately practical: “One of my first kitchens was for a couple, who had a small kitchen that had awkward spaces. There was a washing machine that was difficult to access, so I had to devised a way to incorporate it – we thought it might not be achievable but we did it and they were delighted!” For her own kitchen Elise chose Shaker style cabinets in dark graphite with white worktops: “I have also included some copper accents too. “When I sit in my new kitchen, I look at it and I think, ‘wow’ and I realise that’s how clients feel when they have a kitchen designed by Kitchen Flair.” Always keeping ahead of the industry, Elise adds: “Shaker style cabinets are here to stay – they aren’t going anywhere but we have seen a shift in colourways. While dark blues are still incredibly popular, there has been a gradual introduction of deep forest and heritage greens. “With regards to flooring, luxury vinyl tiles (LVT) are becoming increasingly popular as they are so practical and with

regards to worktops, marble effect remains a firm favourite.”

Having designed kitchens for many clients within the Ribble Valley and across Lancashire, Kitchen Flair also works throughout the UK and Europe, as Kristina explains: “We work all over the country and have even installed kitchens in France and Sweden. Because we manufacture in-house, clients can have as little or as much as they want, we support the whole process, so clients get a truly unique kitchen to suit their lifestyle.” n

BE WATER AWARE

A

little thought before you go on holiday and some tender loving care when you return will be enough to make sure that you can go away without worrying about all of your hard gardening work going to waste. While you are away and your garden is left unattended, many of your plants may suffer due to lack of water. Make sure, before you go, you either arrange to have your containers and baskets watered or set up a system that can supply water on a regular basis to your tubs and pots. Whatever the weather, it’s a good idea to get into the habit of saving water in your garden. You’ll be able to keep your plants alive in times of drought and if you have a water meter, it will save you money, too.

TOP TIPS:

Water when the time is right It’s best to water your garden in the cool of the evening or first thing in the morning if possible. Watering in the heat of the day is wasteful due to evaporation. When the sun is at its hottest around midday a significant amount of water will be lost to the air, before it can soak into the soil where it can be absorbed by the roots of your plants. Use the right amount of water Light sandy soils need watering more often than heavy soils. Clay-based soils can be watered less frequently but need

August is usually the month when a lot of us go on holiday and leave our gardens to fend for themselves more water. The Royal Horticultural Society’s rule of thumb is that for plants to keep growing, up to 24 litres per sq metre every seven to 10 days is sufficient. That’s about two-and-a-half 10 litre watering cans worth per sq metre.

Install a water butt Installing at least one water butt to collect rainwater is a good start to a well-watered garden and perfect if you want to be eco friendly. It is easy to do, and if you have the room, attach them to drainpipes on the house, garage, shed and greenhouse near where your plants are growing. Use grey water You can use ‘grey’ water left over from washing the dishes and hand-washing. As long as it isn’t too contaminated with food scraps and grease, and doesn’t contain bleach, it is safe to use on plants.

Mulch your flower beds Putting down a three to 10cm-deep layer of mulch through your borders and between crops on the veg plot is one of the top garden water saving tips. It helps the soil retain moisture, keeping roots moist and limiting the amount of evaporation. If you are growing your own fruit and veg and have trained fruit trees like espalier or cordon apples you need to prune them now. It will limit their growth and train them into shape – and they can be pruned again in the winter to remove any damaged or crowded branches and stimulate fresh growth. Some of the best varieties for training and for smaller gardens are – Cox’s Orange Pippin, an early ripener and widely regarded as one of the tastiest of all, Braeburn, ripens mid-season and is the UK’s favourite eating apple and Golden Delicious, which can be used as an eating apple and for cooking. n

TOTAL TRANSFORMATION An interior designer has helped transform two very different houses – the drawing room of a traditional home on the outskirts of the Ribble Valley and a contemporary new-build in Clitheroe

W

hen product specialist Cheryl Fitton down-sized from a 14-room barn conversion in Chaigley to a three-bedroom contemporary new-build, she turned to interior designer Maureen Bentley of Whalley-based Theofano to help transform her new home. “Maureen had helped with the interior of my previous home, so I trust her completely. We could only bring a few things to the new house as it is considerably smaller, so Maureen helped choose wallpaper, she sourced beautiful lighting and had cushions, soft furnishings and sofas made especially.”

MAUREEN HAS A REAL EYE FOR COLOUR. SHE IS REALLY PERSONABLE AND EASY TO GET ON WITH, THAT’S WHY I KEEP GOING BACK TO HER Cheryl opted for blues, greys and neutrals that suited the modern sophisticated look that she wanted to achieve: “Maureen has a real eye for colour. She is really personable and easy to get on with, that’s why I keep going back to her,” says Cheryl, who intends to move south with her husband in a few years’ time to be with family.

“I have told Maureen she will have to come with me! I really can’t recommend her enough.” In a contrasting project, Maureen was asked to totally refurbish a large drawing room for retired dentist Nigel BramleyHaworth, who recalls: “I really hadn’t a clue what I wanted in the drawing room. It is a traditional L-shaped room, but it had a marble and mahogany fireplace which effectively divided it into two. “When Maureen came to the house, she suggested we remove it completely, so we did, and it has completely changed the dynamics of the room.”

Maureen also advised Nigel on wallpaper and soft furnishings as well as painting a traditional oak bureau and bookcase, which is now a lovely focal feature. “The bureau incorporates a bookcase with glass doors and is painted in a soft grey-green – it’s a very gentle shade. Maureen was also very specific about how to organise the bookcase – she insisted that the books and items on display should reflect my interests,” says Nigel, who enjoys opera, poetry, cruises and travel: “I have travelled the world and one of my most memorable trips was to Japan.” Choosing colourways for the room, Maureen and Nigel chose a wallpaper

featuring stunning oriental flowers which blends beautifully with shades of dark green and off-white. “I have many treasured items from my travels that are now displayed on the shelves of the bookcase that looks amazing. I can’t praise Maureen enough – she has redefined the whole room.” Speaking about the projects, Maureen adds: “Both Cheryl and Nigel were open minded and listened to advice – the ideal clients! We changed Cheryl’s solid doors to glass allowing light to bounce around the space. “Nigel was happy to go along with our ideas. We suggested changes to the original space which then enabled him to make it his own with the addition of artwork and books. The room is a reflection of his diverse interests and delightful personality.” n

So many of us wait for motivation, before we take action. What we need to do is to take a small step first (start the task we are avoiding) which will cause a release of dopamine and then more motivation will follow. have been fascinated with motivation for many years now. It is so dynamic and can appear to come and go at will. When we need it most it often deserts us. There is external motivation such as salary, and internal motivation such as the need to fit in or enjoy your job, so we can see that it is a blend of many things. It is not straight forward and not traditionally easy to measure, as you cannot see it! Why is it important at all? Because more motivation improves quality of life, enhances self-efficacy, and paves the way inexorably to enhanced performance, greater productivity and more fulfilment.

We have all felt motivated and we have all felt demotivated and understanding what causes either state is intriguing. Up until recently when a ‘Motivational Mapping’ tool was created, there was no way to measure motivation, which led to it being ignored when factoring in the key components of a ‘high performing’ team or individual. What we do know is that if we could bottle ‘motivation’ we would all be millionaires. Maslow, with his ‘hierarchy of needs’, highlighted the importance of the balance of physical and more spiritual needs that both need to be met in order for us to live a fulfilled life. This is important to us all but critical to organisations, who not only need individuals to be motivated, but whole teams need to be too in order for them to achieve success. The Motivational Mapping tool gives you a report that when explained, gives clarity and action. It is changing the way businesses manage their staff, recruit, develop their people and improving the bottom lines of businesses in over 14 countries. It is also an amazing tool for individuals who are feeling ‘stuck’ in life.

• Remind yourself of the WHY. There is often a bigger picture to ‘why’ you need to do something. What you are avoiding may only be a small cog in the bigger wheel. Focus on the wheel! • Break the task down and make a start. The moment you take your first step up the mountain, the mountain gets smaller. The knowledge that you have started will create that release of dopamine, that makes continuing the task easier. • Be accountable – tell others what you are doing and when, which will help keep you on task. • Setting yourself goals and rewards helps make mundane tasks more rewarding. All these things will make you feel more satisfied, like you are achieving and that will in turn, make you feel more motivated. n

We all have them: weird spots, tags or marks that seem to appear on our skin overnight. But what are they, should we be worried and what can we do about them?

A

s we age, the smooth skin of childhood gives way to all sorts of mysterious lumps and bumps. Most are cosmetic in nature, rather than an indication of a more serious health issue but they can still cause concern because of how they look or feel. Consult a popular search engine for a skin blemish diagnosis, and the dizzying array of possibilities can lead to worry. To shine a light on the issue, Doctor Miguel Montero has compiled a list of common, non-cancerous skin blemishes and how to spot them. Skin Tags are small flesh-coloured or brown growths. Common and harmless, they can grow up to 5cm wide and are found on the neck, armpits, groin, eyelids or under breasts and buttocks.

oberts&Co was opened in 2012 by Managing Director Emma Roberts, who after establishing a career in financial planning, took the opportunity to create an estate agency with two co-directors, that would use her transferrable skills, local knowledge and passion for property as the main tools for success. Her vision was to invest in a team that knows the areas where their two offices are based, Penwortham and Lostock Hall, like the back of their hands. Emma said: “I am hugely proud of the business we have built over the last decade and I am grateful to every person who has chosen to buy, sell, rent or let with us. THE BEST OF BRITISH FOOD Two established Penwortham businesses have joined forces to open a new restaurant focusing on British cuisine, adding to the town’s growing restaurant scene, writes Emma Brereton

t the heart of a bustling town, Vinro nestles perfectly amongst other reputable businesses in Penwortham, who have given a warm welcome to the new venture that allows for more choice to those looking for somewhere to enjoy an evening meal, light lunch or Sunday roast. “We have created a restaurant that’s classic with a modern twist, sophisticated and stylish yet comfortable,” says Debbie Colles, owner at The Tap and Vine and coowner at Vinro. “Guests will not be rushed.We want diners to make an evening of it when they visit. It may be small in size but the focus is on high quality and locally sourced ingredients.” Serving dishes that would impress meant choosing the right chef to deliver a delicious and exciting menu, was imperative to the restaurant’s success. ALPACA ADVENTURE

I

f you’re seeking some back-to-nature escapism, then you’re in the right location! All you need is a llama or an alpaca, a lovely country trail and you have a memorable experience. Alpacas have stolen the hearts of animal lovers across the country, but it would seem that across Preston and Fylde, we are spoilt for choice! If you visit any of the local agricultural shows, you will often see herds of alpacas eager to meet visitors. But if you miss them at a show, there are plenty of experiences out there that will give you the chance to not only meet these lovely animals, but trek with them and enjoy their company. There are meandering walks, meet and greets, therapy sessions and longer treks with

For a great summertime adventure take time out to visit one of the many alpaca farms in the region, where you can meet and trek with one of these very sociable animals these wide-eyed, shaggy camelids – that’s llamas and alpacas to you and me. Also belonging to the camelid family are camels (obviously) along with vicuñas and guancos – wild South American camelids, which live in the high alpine areas of the Andes. Having been used by humans for transportation and fleece production for thousands of years llamas and alpacas are primarily found in Peru and Bolivia. The alpaca is thought to be a cross

between llamas and vicuñas some 6000 years ago. They have had a turbulent history and were treasured by the ancient Inca civilisation with their fleeces reserved for the Incan royals. Together with their close relative, the llama, alpacas provided clothing, food, fuel and companionship as domesticated animals high in the altiplano of South America. However, over the last 20 years or so, these animals have adapted well to life on

British soil, as they are hardy animals whose forebearers spent thousands of years grazing on pastures in harsh weather conditions. The most-distinguishing physical differences between alpacas and llamas are their size, their coats and their face shapes. Also, they differ in disposition, which affects the way humans have used them over the years. The most-noticeable difference between the two animals is their size. Alpacas are smaller than llamas and their faces are also very different – alpacas have small, blunt faces with short ears, while llamas have more-elongated faces with banana-sized ears. Another example is Lowlands Farm, which began around a decade ago with three female alpacas Islay, Ingot and Karet and this little-herd has grown over the years to almost 40. Visitors enjoy the interaction with the alpacas, the walking experiences and farm activities. Set in 50 acres of flat grassland between Blackpool and Lytham and five minutes off the M55 at junction 4, the alpaca farm runs alongside a livery yard where the horses and alpacas graze contentedly alongside one another. Included is a meet and greet with a little talk on alpacas and then the chance to take one of them around a beautiful nature walk, with a high chance of seeing hares and buzzards and much more wildlife! There is also a pit stop in Another difference is their coats. Alpacas have shaggy hair that is used for fleece production. Their hair colour can vary widely, from whites and light yellows to browns and blacks. Llamas’ hair is coarser and their wool is considered inferior, but breeders are working to create a llama breed with finer, softer hair.

So, back to the increasingly popular alpacas here in Preston and Fylde. The experiences available range from wedding alpacas to alpaca walks, visiting alpaca farms to meeting little ‘crias’ – adorable, long-legged baby alpacas! One example, based in Lancashire in the rural part of the Fylde coast between Preston and Blackpool, is Singleton Alpacas.

As is the case for many people, owners of alpacas are immediately addicted by their gentle and calming nature, so it wasn’t long before the Singleton’s herd multiplied. The birthing season is from May to September and the herd is usually kept to around 20. Walking with alpacas is great fun – it is an enjoyable and informative experience. Most of the alpacas are halter trained and visitors get to meet them all including mums and babies – they all have their own personality and are very inquisitive! Visitors get the opportunity to ask questions, feed them and walk with them.

s the carefully preened bodies of Love Island contestants returned to our screens in June and people jetted off in droves on their summer holidays, there’s been a significant rise in those seeking out cosmetic ‘tweakments’ to achieve their desired summer looks at seemingly a fraction of the cost and time. Previously, in order to aesthetically enhance your appearance, you would need surgery, requiring a great deal of time to make the decision to go ahead with such a procedure. These days, there are non-surgical options achieved using dermal fillers which can be reversable, require less down time and are often at a lower cost than surgical options. As a result, many see these as a quick fix to tweak their appearance before events such as holidays and weddings.

What to consider before booking a ‘tweakment’: Firstly, it’s vital to remember that not all of those claiming to be aesthetics experts are actually experts. Due to current UK laws, a lot of these types of treatments can be carried out by anyone as there is very limited regulation in the beauty industry. Though it is important to note that as of October 2021, it is illegal to administer botulinum toxin injections and dermal fillers purely for cosmetic reasons, to under 18s. I would advise, if you are over 18 and looking for a practitioner to perform treatments such as lip fillers and wrinkle smoothers, you should: • Choose a medical practitioner with appropriate training, insurance and accreditations • Use a dedicated practice • Research the person carrying out the procedure • Assess the standards of hygiene and risk of cross contamination – for example, is the procedure taking place in the

back of a hair salon or in a clean and clinical room? • Check reviews • Always seek a consultation • Be wary of cheap prices and too good to be true deals • Ensure the practitioner completes a routine follow up and provides an emergency phone number If these steps are followed, the majority of these cosmetic treatments will go smoothly (no pun intended). DAYS OUT IN THE RIBBLE VALLEY From artisan markets to a beautiful open garden weekend, there are some fantastic days out to be had in the rural countryside of the Ribble Valley

ust a stone’s throw away from Preston and Fylde, the countryside of the Ribble Valley is stunning – and no more so than in the pretty village of Mitton where there is the wonderful All Hallows medieval church. Next door to the church is Great Mitton Hall, a private Tudor house that each year opens up the lovely gardens to the public in order to raise money for charity. Last year owner and organiser Jean Kay raised £4,200 for three of her chosen charities Combat Stress, the Walking Wounded and The Brooke. This year on 6th and 7th August, from 1pm – 5pm on Saturday and Sunday, Jean will once again open up the gardens at Great Mitton Hall for the same charities. Visitors can meander through the pebble paths where wild roses tumble over ancient stone walls with the sweet scent of lavender in the air. Garden sculptures and carefully manicured topiary can be seen while at the centre of the garden is a large pond with Koi carp. Tea and cakes are served throughout the afternoon and there will also be book, bric-a-brac and plant stalls too. t’s just over six months since our good friend Nigel Haworth re-opened his beloved Three Fishes and I thought it long overdue to catch up with him to see how it was all going and if he’s on track. There was so much hype and expectation for this re-opening with Nigel returning to The Three Fishes 18 years after a hugely successful first incarnation in 2004. Annoyingly, a delay due to Covid and the Government restrictions meant a quiet opening became inevitable. Since then, things have gone from strength to strength. Nigel was keen to show me around the incredible one-acre garden, which has fulfilled a lifelong dream of creating and sustaining his farm to fork philosophy with a collection of selected heritage seeds grown specifically for the ultimate taste. Also, in the 30 metre polytunnel, there was an abundance of vegetables, salads and micro herbs it was literally overflowing with produce.

ON TO SOMETHING GOOD…

NIGEL HAS FULFILLED A LIFELONG DREAM OF CREATING AND SUSTAINING HIS FARM TO FORK PHILOSOPHY WITH A COLLECTION OF SELECTED HERITAGE SEEDS GROWN SPECIFICALLY FOR THE ULTIMATE TASTE Nigel wanted me to be clear that the perma-culture, no-dig approach, protects and enhances biodiversity, which is so important in the world now and for the future. The gardens were designed by Bunny Guinness, and we also feature her as our lead editorial in this issue. Nigel is producing the finest vegetables and salads, harvested and picked to order each day. He explained that not everything can be grown on site – the sourcing of complementary products is hugely important and the selection of partners, for example in meat, game and fish, has taken time as each must share the same ethos and passion for an organic sustainable future. So, what does all this mean when it comes to the dishes Nigel continues to develop in what is now an ever-increasing set of choices for diners at The Three Fishes?

The garden was originally designed and planted in geometric quadrants representing the Union Jack and this has been replicated using exotic and indigenous plants. However, this Jubilee year it has been the creation of a ‘woodland garden’, which will eventually extend to 10 acres, that is

Behind the scenes at the hall, there is a 21-strong team including volunteers, who have worked to make Browsholme and its grounds a successful enterprise for the community, visitors and wedding couples to appreciate and enjoy. Maybe head to Holmes Mill for breakfast or alternatively head out through Chatburn towards Sawley. When you reach Sawley, next to the river is the Spread Eagle – a pub popular with cyclists. From Sawley head out on the country lanes towards Bolton-by Bowland. On the way you can stop off at the awardwinning Holden Clough Nurseries then on to Bolton-by-Bowland where there is the Coach and Horses – perfect for lunch! Push on and go over the tops to Gisburn Forest Trail Park and café – there’s lots to do and see here. Head back to the pretty village of Slaidburn where the historic Hark to Bounty can be found along with an ice-cream shop. Then head towards Dunsop Bridge, where Ribble Valley e-Bikes hire centre can be found and, if needed, extra battery charge. There is an option then to head back towards Chipping past the Wild Boar Park or loop back towards Bashall Eaves where there is the Red Pump to take a well-earned breather or alternatively, you can carry on and head out towards Waddington where you will find the Waddington Arms, the Lower Buck and Higher Buck. From Waddington the route is flat for a leisurely ride back into Clitheroe. n

W

hen worldwide events organiser Emily Hill came to organise her own wedding, there was just one venue that ticked all the right boxes. “I was born and brought up in this area and the venue that had everything on my wish-list was Samlesbury Hall,” recalls Emily, who lives in Manchester with her new husband Darren. “We wanted to be able to get married at a venue that had character, that could offer superb food for the reception, somewhere that is easily accessible for guests coming from afar and that could offer accommodation.”

As Samlesbury Hall is famed for putting delicious local Lancashire produce on the menu, is close to the motorway network and has delightful luxury shepherd’s huts within the grounds, for modern, luxury glamping, Emily and Darren knew they had found their perfect venue. “Darren’s family are from Wigan and Haydock and we had lots of friends coming from Manchester so the location was great in terms of accessibility – but the historic hall is also tucked out of the way in a lovely rural location so it was perfect!” adds Emily, who has been an international organiser of corporate events and exhibitions for 14 years, having worked in the US, Middle East, across Europe and all over the UK. Her career means she has a total understanding of the strategies and skills required to create a successful event, so she was delighted to meet Samlesbury Hall’s dedicated wedding organisers: “They were great as they were really open to

ideas that were a little bit different.” With everything finalised, the evening before the wedding Emily and her bridesmaids stayed at the hall’s lovely, refurbished Gatehouse – a two-bedroom cottage within the grounds.

THE MORNING AFTER THE WEDDING A LARGE GROUP GATHERED AT THE WONDERFUL HERITAGE CAFÉ, WHERE CELEBRATIONS CONTINUED AND HIGHLIGHTS OF THE WEDDING WERE SHARED “It was lovely, we celebrated with champagne and in the morning, we had breakfast delivered to the cottage,” recalls Emily, who had enlisted the help of a dog chaperone so that the couple’s beloved Sproodle Eddie could join them on the day.


weddings When the time came, Emily and her bridesmaids made their way to the historic Whittaker Room, the hall’s original chapel which is just a stone’s throw away from the Gatehouse, where the romantic ceremony took place.This was followed by a reception in the Great Hall in the main building, where the huge central chandelier was decorated with lots of flowers and the room set out exactly how Emily and Darren had envisaged: “The team did everything they said they would. We had a band in the evening and they even set up a ‘green room’ for them with food. Flowers that were in the Whittaker Room for the ceremony were moved into the coffee lounge in the evening – the team

IT WAS OUR PLEASURE TO TAKE CARE OF EMILY AND DARREN ON THEIR VERY SPECIAL DAY really exceeded expectations.” The wedding reception menu focused very much on artisan-led, Lancashire produce and in the evening guests enjoyed delicious pizzas from the hall’s traditional Italian pizza oven. During the day Emily and Darren’s photographer took them out into the grounds to get some super shots of the newlyweds with the impressive hall and rose gardens as a photogenic backdrop. Guests at the wedding who stayed overnight, took 20 of Samlesbury Hall’s delightful luxury shepherd’s huts within the grounds and the morning after, a large group gathered at the wonderful Heritage Café, where celebrations continued, the remnants of the wedding cake savoured and highlights of the wedding were shared. “It really was a fantastic experience. We so enjoyed our day!” concludes Emily. Rebecca Rigler, Samlesbury Hall’s Wedding Manager, adds: “It was our pleasure to take care of Emily and Darren on their very special day. VOLUNTEER SCHOOLREADERS NEEDED With one in four children leaving primary school unable to read to the required standard, enthusiastic volunteers in Preston are needed to help them improve

N

ational children’s literacy charity, Schoolreaders, is urgently looking for enthusiastic volunteers to step forward to help primary school children in Preston, who need help to catch up on their reading. Schoolreaders, which matches volunteers to schools to listen to children read, has hundreds of active volunteers in primary schools nationwide but more are required, particularly to help those most disadvantaged following the disruption caused by the Covid pandemic. Currently one in four children leave primary school every year unable to read to the required standard and, whilst the government has pledged to reduce this figure by 2030, many children need additional classroom reading support right away. Schoolreaders’ volunteers are asked to listen to children read a minimum of once

a week in term time and to commit to an academic year. By applying now, new volunteers will be matched as quickly as possible to a partner school and be ready to start next term (September 2022) once they have completed a mandatory DBS check and virtual safeguarding training. Jane Whitbread, founder of Schoolreaders, comments: “Reading, particularly for the youngest children, has been set back

enormously by the pandemic and if we don’t rally round now, we risk thousands of children falling behind. “Children who leave primary school unable to read well can’t access their secondary schooling fully, which is likely to negatively affect their life chances. Poor reading skills hinders such simple things as reading instructions, understanding a medicine label or accessing information over the internet which so many of us take for granted.

READING, PARTICULARLY FOR THE YOUNGEST CHILDREN, HAS BEEN SET BACK ENORMOUSLY BY THE PANDEMIC “Additionally, children benefit enormously from positive role models in the classroom. There is just no substitute for reading aloud to a trusted adult, discussing words or a story and building a rapport. Being one of our volunteers is a very positive thing to do and a way individuals can do their bit to help children in their communities, providing a crucial supplement to classroom teaching. Literacy opens doors, helps learning and brings new opportunities.” n

VETERINARY SCHOOL

Construction apprentices at Preston College have had 10,000 bricks donated to them from Persimmon Homes to support their training and assessments. The donated bricks are enough to build a large three-bedroom house and it will help students and apprentices to develop their construction skills. The industry is looking to attract the next generation of construction workers to build much-needed housing.

The hills surrounding Westholme School well and truly came alive with The Sound of Music last month when the school’s talented students showcased their theatrical and musical abilities in their version of the renowned and muchloved production. It was Westholme’s first production open to the public since the pandemic and over the course of four nights they dazzled families, friends and paying members of the public in their very own 500-seater professional theatre. It truly was a musical extravaganza to remember!

UCLan is to create a four-storey veterinary medicine school on its Preston campus, making it the only facility of its kind in Lancashire. Subject to securing future planning permission, the building will be home to the 11th Veterinary School in the UK and will be a base for students and staff on foundation, undergraduate and postgraduate courses. It will be constructed on what is currently UCLan’s Greenbank Car Park, off Victoria Street, based at the Preston campus.

Students at Rossall School are celebrating after achieving another superb set of results in the International Baccalaureate Diploma Programme. The IB diploma programme, recognised and respected internationally, is underpinned by an intellectually rigorous curriculum, comprising six subjects. Despite the expectation that, globally, results would be depressed due to this being the first set of public examinations since the pandemic, Rossall has resolutely maintained its position, almost equalling last year’s record-breaking average of 35 points. School Captains Sam Ayoma and Marie Melsheimer both secured points equivalent to A*A*A* at A-level or above.

Stonyhurst recently hosted its biggest event in 30 years to celebrate the 100th season of rugby at the school. Celebrations kicked off with over 150 old boys taking to the pitch to play in the Centenary of Rugby Decades Tournament. The tournament was followed by dinner with over 470 attendees including rugby internationals and former pupils Barry O’Driscoll, John O’Driscoll, Kevin Barrett and Joe Ansbro. During the Rugby Centenary year, Stonyhurst has redeveloped its rugby facilities, focusing on Smithfield, home to the 1st XV pitch, where a distinctive new pavilion has been built – the Gibraltar Pavilion – named in recognition of the cornerstone funding provided by the Stonyhurst Gibraltar community and supported by the Captains’ Campaign led by the historic 1st XV captains.

A new £5.9m scheme to boost adult numeracy skills in Lancashire will move forward this autumn. The government’s flagship Multiply programme will be delivered through the UK Shared Prosperity Fund, replacing the European Structural and Investment Fund programme. The programme is targeted at adults aged 19 plus, who do not have a GSCE at Grade 4 (or equivalent). It aims to help people improve their ability to understand and use maths in daily life, from improving household finances to helping children with homework and improving employability and job prospects.

THE SCHOOL DOESN’T STIPULATE THAT PUPILS MUST TAKE A LANGUAGE OR HUMANITIES AT GCSE, THEY GIVE A FREE CHOICE The school is proud to have developed a new collaboration with the prestigious National Youth Orchestra. During a weekend in early June, Westholme hosted the National Youth Orchestra which ran training and taster sessions over the course of the two days. Westholme musicians were unbelievably excited to be involved with the esteemed national organisation. However, the programme didn’t just include Westholme musicians but the school opened its doors to talented musicians from other schools in the region along with many county musical schools. A huge amount of creative flair was brought to the forefront during the two days with many students inspired to take their talents further.

To reinforce their commitment to Performing Arts, Westholme has appointed Mrs Amy Holland, a graduate from the Royal Northern College of Music who joins the school in September to commandeer the helm of the already outstanding music, dance and drama departments. Her role will be overseeing four to 18 year olds and taking full responsibility for the success of Performing Arts across the whole school – from Prep to the INSPIRED Sixth Form. Dr Robson explains: “Amy is joining us as Director of Performing Arts at such a momentous time as the new Prep opens and we head into the school’s centenary celebrations. Her creative talents along with her insatiable drive and ambition will ensure we remain at the forefront of Performing Arts in the North West.” Another initiative the school has committed to is enhancing the number of Performing Arts Scholarships that are available for those

Alex Huckerby is a well-known name in the world of hospitality, entertainment and event management. Here he tells Jan Woolley about how his business has evolved

Y

oung entrepreneur Alex Huckerby launched himself into the world of hospitality, promotions and events straight from university and has never looked back. The owner, of Marvin’s bars in Poultonle-Fylde, Lytham and soon-to-open Blackpool, Alex was educated at Arnold School, now AKA, on the Fylde coast, but admits he was never a true academic: “I didn’t enjoy certain lessons. The headmaster at the time was an unbelievable man – you could feel his presence before you saw him. He was six feet tall and wore a long gown and he understood that I wasn’t particularly academic – instead of attending certain lessons he got me to show parents around the school on a regular basis.” After sixth form Alex attended Manchester Business School for four years and was subsequently offered an internship, which he turned down.

AFTER WE LEFT UNIVERSITY AND WENT OUT INTO THE REAL WORLD, WE ASKED OURSELVES WHY WOULD WE WANT TO WORK FOR SOMEONE ELSE? Having already teamed up with his good friend DJ Danny Howard, the world of events management, hospitality, nightclubs and bars beckoned and in 2009, the pair set up Randy Ron a promotions company that became renowned for throwing some of the biggest and most exclusive events. “After we left university and went out into the real world, we asked ourselves why would we want to work for someone else?” recalls Alex.

“We started off doing Bank Holiday events at The Residence in Poulton on Sunday nights with Danny as DJ – they were really exclusive nights, really soughtafter – we were flying.” By 2010 they were applying their organisational, promotional and logistics skills to Randy Ron-branded events throughout the North West. “Our philosophy was to bring a city atmosphere to every event wherever it was,” says Alex, who has made many contacts within the industry and has an instinctive talent when it comes to promoting and driving the right demographic to specific events. “We organised Thursday night DJ events at a nightclub in Manchester which became really popular among the United and City footballers – it became like a Who’s Who of Manchester.” Under the Randy Ron branding the pair began a summer season in Magaluf as Alex recalls: “Danny had just entered a DJ competition to get a slot with Radio 1 – he won it and it catapulted us to another level.” In 2014 Alex and Danny went on to co-found Blackpool Rocks – a huge event first held at the Winter Gardens: “There was 7,000 people there. We had Pete Tong and Trevor Nelson it was the biggest event Blackpool had ever seen!” Blackpool Rocks, an electronic techno music dance festival, continued to attract some of the biggest names in the industry including Fatboy Slim, Annie Mac and Craig David. In 2017 Alex opened a nightclub in Poulton but adds: “It was a vanity project and we soon decided that going down that route was not for us – I didn’t want to be

up until three our four in the morning,” explains Alex, who went on to create his first soul and Motown-themed Marvin’s bar in 2018 in Poulton with business partners Adrian Reed and Graham Barr. By 2019 a second Marvin’s bar opened in Lytham over two floors – then the pandemic struck: “Everything went up into the air. I was totally lost to be honest. I couldn’t earn any money, we had decisions to make – we decided to sit tight and see what happened. “We furloughed staff and I got a job installing boilers under the Government grant scheme – I can’t remember how many I installed!” adds Alex, whose wife Lauren launched a pizza-making kit businesses during lockdown: “No-one could go out so she created these kits for people to make their own. She is half Italian and used a family recipe and sold at least 1,000!” says Alex, who is due to open a third Marvin’s bar in August in Blackpool.

TODAY ALEX IS BUSIER THAN EVER WITH MARKETING, CONSULTING AND ORGANISING CORPORATE EVENTS Today Alex is busier than ever with marketing, consulting and organising corporate events. He and Lytham Festival organisers Cuffe & Taylor were recently involved in organising the festival’s after-parties, showcasing artists that complemented the headline acts. Being close to the festival site, the Lowther Pavilion was the perfect venue for the parties, which enabled festivalgoers to continue their night with the likes of indie band Snow Patrol and the Soul Sensations. “Eight hundred people over six nights – it was great to see the festival back,” says Alex, who is forging ahead with plans to open more Marvin’s bars: “I am aiming to have 10 of them. The bars are aimed at the 40 plus market, they all have identical interiors, they have a private karaoke room that can be booked by the hour, we have live DJs and it’s purely soul and Motown music – it’s a feelgood genre. It’s not showy, it’s not flash – it just a great atmosphere!” n

PROPERTIES WITH A SEPTIC TANK Buying a property with a septic tank? Here’s what you need to consider, explains Sally Calvert, a residential conveyancing expert from Napthens, who shares some practical tips for homeowners with a septic tank

W

hen buying a property, it is essential to establish if it is connected to the mains sewer. If searches reveal the house is not connected, it is likely your sewerage will go to a septic tank. A septic tank is in effect an underground tank where solids sink to the bottom and liquid flows out and soaks through the ground – usually through a soakaway or infiltration system. In 2020 the General Binding Rules (GBR) came into force. The GBR specify conditions septic tanks must meet in order to be used without an environmental permit. Key points: • Discharge must not cause pollution of surface water or groundwater • You cannot use a septic tank to discharge to surface water ie river or stream • The system must comply with the relevant British standard in force at the time of installation and be operated according to manufacturer’s specifications. Maintenance must be undertaken by a competent person and waste sludge safely disposed of by an authorised person.

If you are buying a property with a septic tank which discharges directly to surface water, we suggest you negotiate with the seller who will have responsibility for the replacement or upgrade of the existing treatment system. Once you take ownership you will be responsible for complying with the GBR – so either make sure the current owner fixes any problems as a condition of sale, or possibly negotiate a price accounting for any system upgrade required when you take over. Also, consider whether it will be necessary to obtain planning and building regulations approval for the works. Failure to comply with the GBR could result in a fine of up to £100,000 so it is vital to ensure you are meeting these regulatory requirements. If your property has a septic tank, here are some tips to help you keep on top of potential issues before they arise: • Speak to the Environment Agency before installing a new system to check if a permit is required

• Carefully read your permit – this lists the requirements you must meet • You must appoint a registered waste carrier to empty your septic tank annually • Inspect the area where your septic tank releases sewage monthly • Look for signs the system may not be working correctly eg unusual smells or water that is not usually there • If your sewage flows into water keep an eye out for tell-tale signs eg sludge or scum on the water • When selling the property inform the buyer in writing if there is a septic tank including details of location, condition and maintenance requirements • Keep a record of everything you have done to your tank including any issues and any documents to offer as evidence of your proactive maintenance approach. n

e live in a demanding and often unforgiving world. A lot of what we do, say, wear, watch, eat, visit (you get the drift) is analysed and critiqued to the nth degree. A world – dominated by social platforms – in which it takes a nanosecond for something to go viral (popular in old money) or slip into the abyss never to be seen or heard of again. So, just imagine the anticipation among the Bowker sales team when a new BMW model is announced. And the model under scrutiny here, the new 2 Series Coupé, is every bit deserving of the world-famous badge. Since its launch in March, industry reaction has been better than good and it’s easy to see why.

The 220i (four cylinder) option I took for a spin is a very desirable motor indeed – a coupé that will appeal to traditionalists and modernists alike. A treat for the senses in that it looks smart and sounds wonderful, it’s compact yet plenty roomy enough and nippy. No, not nippy, quick (0-62mph in 7.2 seconds with the very powerful, six-cylinder M240i xDrive managing it in 4.3 seconds).

IT’S GOT PUNCH AND FINESSE IN EQUAL MEASURES, PROVIDING AN EXHILARATING EXPERIENCE SUPPORTED BY SOUND PRACTICALITY But don’t worry that trips to the filling station will become more frequent as a consequence. The fuel economy is pretty impressive too with petrol engines delivering up to 44.1 mpg and diesel up to 60.1 mpg. Especially economical given the high level of performance on offer. Despite a rather athletic appearance – one

specialist reviewer christened it ‘a little tearaway’ – it would be incorrect to call the BMW 2 Series Coupé an out-and-out sports car, but it is in every sense a sporting car. It’s got punch and finesse in equal measures, providing an exhilarating experience supported by sound practicality. So, back to this fast-moving world where we demand so much and are quick to judge, is the BMW 2 Series Coupé a hit and should you buy one? Yes, is the answer to both. It was interesting to hear the view of Domagoj Dukec, the Head of BMW Design: “For me, the BMW 2 Series Coupé is the embodiment of classic BMW driving pleasure: compact, BMW typical proportions and a wide stance on the street at first glance. Driving the new BMW 2 Series Coupé is a lot of fun.” A simple assessment. bucket list. Have you got one? Basically it’s all about the experiences you would most like to achieve during your lifetime. Just draw up your choices and pick ‘em off one by one. You certainly don’t have to be Jack Nicholson or Morgan Freeman – stars of the famous 2007 film of the same name – to indulge.Your bucket list is about you and what you fancy. Like owning a Porsche. Yes, there are other high-end cars out there, but there is just something extra special about the Porsche portfolio. Take the new Macan S, as I did just the other day. Not take as in stealing, take as in out for a test drive. And what a joyous moment that was! Having ‘tested’ many a Porsche over the recent past, you’d think the novelty might wear thin. Absolutely not.

First of all, this model is a real looker – shimmering in pride of place on the outside forecourt in a stunning Miami Blue with panoramic glass roof, privacy glass, side window trims in High Gloss Black and sportdesign side skirts. Not to mention the all-important Porsche logo in Matt Black, sports tailpipes and 20-inch Macan S wheels in Vesuvius Grey. The striking main body colour is perfectly at ease with the stark black – this is a car for which the phrase ‘head-turner’ was coined.

Oh, and a BOSE surround sound system, tinted LED taillights, automatically dimming interior/exterior mirrors, reversing camera, power steering plus. Heard enough yet? And as for the drive – well, everything you might expect in terms of power and performance and so easy in terms of gear change, steering and gadget understanding. All-wheel drive, with a three-litre petrol engine and an output of 380hp this is one meaty motor, achieving 0-62mph in six seconds and a top speed of 144 mph.

The GTS variant is even more impressive in terms of poke and speed, delivering a relentless performance including 0-62mph in 4.3 seconds, a top speed of 169 mph and a maximum torque of 550Nm One car magazine called the Macan the Porsche of the People, an SUV with the soul and engineering of a sports car. You might expect it to be fast and familyfriendly and it is. More of a surprise is that it is very nearly race-ready in its responses.

THE PORSCHE MACAN S IS TRULY A THING OF GENUINE BEAUTY Want to go off-road? No problem at all – and the same applies whether you are going on the school run or loading up and heading for the Med on a summer road trip. If you have a bucket list and already own a Macan, then you will be fully aware of the many plusses. But the varied and subtle changes to this latest model make it even more desirable. The infotainment centre is super sophisticated with key elements including 10.9-inch touchscreen, wireless Apple CarPlay and Android Auto integration, 14-speaker sound, wi-fi hotspot, SiriusXM

satellite radio and built-in navigation. And, as with the gears, steering etcetera, the infotainment offering is very easy on the eye, brain and hands. There is also much more camera-driven safety kit as standard. The Porsche Macan S is truly a thing of genuine beauty. This is the car all of its rivals aspire to be. n

DREAMS MADE BETTER Before Dave Ryding, no British skier had ever won a World Cup event in the entire 55 years of professional ski racing. Not only did he change that, he ended a close-to-a-century drought and put his name next to another remarkable individual, writes David Fearnhead

A

ugust 1940, and in the skies over Winchester the Battle of Britain is into its second month. One British pilot’s active war service is about to come to an early end. Blinded by fragments of his cannon-riddled canopy, he is forced to bail out. Squadron Leader Gordon ‘Mouse’ Cleaver survived. He required 18 operations, during which his surgeon found that the Perspex splinters which had lodged in his eyes, caused no inflammation. This discovery led directly to the invention of the first intraocular lens, which by 2020 had saved the sight of 32 million people. Cleaver has another important note in history. For 91 years he was the only British skier to have won at Kitzbühel. For the uninitiated, Kitzbühel is what Wimbledon is to tennis, or the Old Course at St Andrews to golf. Its famed Hahnenkamm mountain is where legends are born. Enter Dave Ryding. He’s not your average slalom skier. He’s originally from Bretherton, Lancashire – a place not noted for its alpine peaks. However, his is no Eddie the Eagle story. Despite humble beginnings on Pendle’s dry ski slope, Ryding had already established himself as a legitimate competitive skier. “I think it shows if you are willing to sacrifice and put in the time, you can achieve a great deal. That’s the same for anything, not just skiing,” says the 35-year-old British skier. “I looked back at where I was ranked when I was 16, just for people born 1986 in Britain I was ranked 18/20. Never mind where I would have been ranked against Austria or France. I just loved skiing, so I persisted with it.” His progression was one of incremental gains. Gradually getting to a position where he could go up against the best in the sport.

Maybe even win a World Cup event one day. But there seemed too much stacked against him in January this year as he prepared for the World Cup Slalom. He was sick – suspected Covid, which turned out to be just regular flu, or ‘man-flu’ as he belittles it. He was also 35. Nobody wins a World Cup Slalom at 35 – and certainly not as a maiden winner.

I ALWAYS USED TO SAY TO THE YOUNG SKIERS, IT’S POSSIBLE, YOU CAN WIN A WORLD CUP. I DON’T NEED TO SAY THAT ANYMORE. I’VE DONE IT Kitzbühel is a hard enough challenge on the best of days, but the weather was also against him. A snowstorm had blown in, and organisers brought the slalom forward to Saturday in order to give the downhill racers the clear weather on the Sunday. Normally, he’d hate skiing in a storm, but for some reason that day was different. There was a calmness about him. “It’s still right there,” he says of the memory. “It’s more the emotion after the race. When you take the lead the time turns green in the finish area. That green light triggers a lot of emotion because you know you are winning even though I had five more to go after me. I just let out so much emotion because I knew I could at least finish sixth which is a good result.” As his competitors followed, all failed

to beat his time. Then it came down to one. Five years ago, the roles had been reversed. It was he who was at the top, in the start gate, the last man out to try and beat the legendary Austrian Marcel Hirscher’s leading time: “Now I was in Marcel’s shoes. The man at the bottom waiting for this 22-year-old Italian chap to have his go. I remember thinking it’s much better being the guy at the bottom.” The Italian failed to beat his time, and with it a new name was added to the history books. “I always used to say to the young skiers, it’s possible, you can win a World Cup. I don’t need to say that anymore. I’ve done it, and they’ve seen it with their own eyes. Nothing is more powerful than that.” With wife, Mandy, who was a former ski-racer, he’s recently had a new baby, Nina. The couple run the acclaimed Boskin’s Cafe in Tarleton and despite juggling duties as a new father and business owner, he’s not done with the skiing yet. “It’s taken me so long to get to the top I want to stay there. I’ve done six years ranked in the top 15, which surprises even me. I don’t think I’m quite done yet. More podiums and staying at the business end with the young guys is what I’m aiming at. Whether I can still be at the level I’m at for the next Olympics I don’t know. Nobody has ever done it before, but then nobody had ever won a World Cup event at 35 before.” n

The journey for Mark and the team at Brindle Distillery has been a rollercoaster since they began five years ago, both on a personal basis and of course because of the pandemic: “My wonderful wife has survived cancer whilst we have been building Cuckoo and Covid meant that times were incredibly difficult for lots of businesses,” explains Mark. “We are extremely grateful to customers who have supported us on our journey, especially ordering online during the pandemic. Collaborating with other local businesses was incredibly important and still is. During the lockdown we worked with a local baker, a local food vendor and with Lancashire Crisps and Rivington Brewery, with whom we created ‘Best of the Best’ gifts during this difficult period.” A strong local focus is important to

Amy Roberts of Roberts & Co commented: “When approached by Cuckoo to work together on a coffee vodka we didn’t hesitate. Our Colombian Supremo Single Estate was by far the most popular choice to pair with the spirit. The coffee is grown in the Andes mountains that run through the department of Huila, Colombia. The area’s mineral-rich soil and microclimate contribute to a celebrated taste that’s typically juicy, fruity and complex, with a rich, full body.” Everybody enjoys an Espresso Martini cocktail and using a vodka already infused with a rich, smooth coffee is the real point of difference for an Espresso Martini served in the Cuckoo’s Nest bar.

ith unbeatable credentials, Ye Horns’ chef patron Sean Wrest is super confident that his seasonal ethos and fresh take on classic dishes is a winning formula. The pub, which has undergone a stunning restoration, launched last month with a 5-5-5 menu featuring beautiful seasonal dishes. To much acclaim, the menu is now being opened up to showcase the talent of Sean and his young dynamic team, who show real passion when developing new dishes. “Right from the start we had a vision of creating delicious classic dishes and putting our own quirky take on them – making it original and fun,” says Sean, who honed his skills with the likes of Heston Blumenthal and Tommy Banks. “The atmosphere is very relaxed. We create comforting food, that is simply delicious,” adds Sean, who with his team recently created their own take on a Lancashire butter pie. “We made Dauphinoise potatoes added caramelised onion, cheese and encased it in pastry, it is a totally revised way of making it, but it looks and tastes fantastic.” With seasonal ingredients at its heart,

The outdoor menu will undoubtedly feature one of Ye Horns’ most popular choices – tempura cod, which is an ultimately light dish served with triple cut chips and pea puree. Sean has also developed his own take on classic fried chicken, another dish which has been elevated by diligent seasoning and cooking: “I have created a salt and pepper flour, which gives the chicken a unique flavour and we serve it with a brown butter Hollandaise, made fluffy and light with an espuma.” While the dishes at Ye Horns are as visionary as they are delicious, in no way is the pub stuffy or elitist. It has been elegantly renovated, of that there is no doubt, but the ambience is friendly and the menu fun. “While we want to make it a very special dining experience, we also want Ye Horns to be accessible and the menu unique to us, it will be constantly evolving,” concludes Sean. n

Lancashire chef Lisa GoodwinAllen, executive chef of Michelinstar restaurant Northcote and director of the Game Bird and American Bar at The Stafford London, was awarded the Chef Award at the Cateys. The Chef Award, considered the highest honour at the Catey Awards, known as ‘the hospitality Oscars’, is seen as an indicator of the top chef in the country in any one year and is chosen by a panel of industry judges. The prestigious awards are the biggest of their kind in hospitality and celebrate the best and strongest performing individuals in the industry. On being awarded the Chef Award, Lisa was praised for her work ethic and exquisite cooking, described by the judges as having significantly impacted the hospitality industry over the past year. She was described as an incredibly hard-working individual who embraces, showcases and develops young talent – an inspirational role model and shining light.

Sandgrown Spirits the makers of Lytham Gin has been named as a finalist in the Micro Business of the Year category in this year’s Be Inspired Business Awards (BIBA). Organised by the North and Western Lancashire Chamber of Commerce, the BIBAs have been putting businesses through their paces since the competition opened in January. Babs Murphy, chief executive of the Chamber, said: “The number and quality of entries this year has been stunning. Competition has been fierce in every category.” The BIBAs are a celebration of some of the most exciting companies and entrepreneurs based in Lancashire, showcasing their success stories and highlighting Lancashire’s position as a world-class business community.

Lancashire’s diverse culinary brilliance has been recognised at a prestigious awards ceremony. The Zen Restaurant in Lytham St Annes was named the Best Oriental Establishment, while Preston’s Ginger Bistro, tucked away in the city’s Fulwood suburb won the top prize in the Café & Bistro of the Year category at the Food Awards England 2022. Meanwhile, popular fish and chips eatery Yorkshire Fisheries in Blackpool was named the Best Fish ‘n’ Chips Establishment in the North. The Zen also scooped the Best Oriental Establishment North prize at the event, which recognises the success of venues, their high standards and quality of food and service. A spokesperson for Food Awards England said: “These awards aim to thank those that work hard within the food industry and contribute to making England a great gastronomic place to visit.”

National street food sensation Mowgli opened its doors in the Miller Arcade Preston recently. Online booking was made available ahead of the launch of this popular chain in what was the former French Connection boutique. The opening sparked an excited social media response with diners eager to visit Mowgli, which has more than 20 restaurants throughout the UK including London, Manchester and Edinburgh. The chain was founded in 2014, by Nisha Katona who dreamt of creating an eatery serving the kind of food Indians eat at home and on their streets. Katona gave up a 20-year career as a barrister to open Mowgli Liverpool and opened Manchester Mowgli less than a year later. In 2018 Mowgli was awarded a placement in The Sunday Times Fast Track 100 list, and she was recognised with an MBE in the 2019 New Year Honours list for services to the food industry.

food&drink with vanilla, cinnamon, clove, ginger and natural honey, made on the farm by their very own Lancashire honeybees – and look out for Supremo Columbian coffee infused vodka – a real treat for Espresso Martini lovers! Inspired by the past but dedicated to the future, all the raw materials that go into making the spirits come directly from the farm or are sourced locally. A natural spring even delivers fresh spring water to the distillery, for both producing the spirits and for cooling Maggie – the still. “Making the most of the natural resources we have on the farm is a good start,” Mark further adds. “But we’ve also made other commitments, putting all waste materials to good use. We heat our still with renewable energy biomass boilers and recycle our bottles, or re-use them by turning them into candle jars. SUPERSTAR SUPERNOVA Brindle Distillery are celebrating triple success, with their Cuckoo Supernova Gin winning Double Gold at the San Francisco Spirits Awards. Gail Bailey speaks to Director and Master Distiller, Mark Long to find out more

“O

ur dedication to our craft and commitment to only using natural ingredients in our spirits has allowed us to create a delicious gin with strong, natural flavour. It’s something we’re very proud of and we are delighted our hard work has been recognised at the highest level,” explains Mark Long of Brindle Distillery. With a judging panel made up of the most respected and experienced connoisseurs in the industry, the Double Gold Award at the San Francisco Spirits Awards is the highest accolade in the flavoured gin category, and Mark and his team were thrilled to receive it: “Other recent awards for Supernova have included the Gin Guide Award Best Flavoured Gin – a world-wide accolade, and a further top-level achievement of Master Gin, awarded by the Spirits Business Awards in 2021. All three awards in the same year it was launched,” adds Mark. Supernova’s explosive fresh grapefruit

flavour is attained without the use of artificial flavouring or sugars, unlike many other flavoured gins, and this is something of which Mark is especially proud: “Our flavoured gins are not what people are generally used to,” he explains. “We work hard to produce a crafted gin with completely natural, sustainably sourced ingredients, that allows the fresh flavours to come through.” The team apply the same hard-working attitude to making spirits as they do to farming, which as a family, they have been doing since 1930: “From early starts, growing crops in our fields to the satisfaction we get writing batch numbers on our bottles – we’re able to oversee the entire process. DANCE FEVER The 96th Blackpool Dance Festival was held in the Empress Ballroom at the magnificent Winter Gardens, where thousands of competitors from more than 40 countries took part

T

he Blackpool Dance Festival, which was first staged back in 1920, recently welcomed dancers from all over the globe to dance together. The festival is the longest running dance festival in the world and is by far the largest of the five Blackpool dance festivals. Managing Director of the Winter Gardens, Michael Williams, said: “This year has been incredible with thousands of competitors from over 40 countries. The standard has been superb and our 96th Festival has been an amazing celebration of the love of dance. “The excitement amongst the dancers, judges and the team, was at fever pitch throughout the 13 days after a three-year break.” The economic benefit to Blackpool is estimated to be around £6m including local hotels, guest houses, restaurants and bars as dancers, their supporters and spectators flocked to the resort. Prior to the event a whole host of preparations got underway including the

cleaning of the grand ballroom’s chandeliers and the polishing of the dance floor, in readiness for the launch of the competition. The week of preparations running up to the contest included: • Overnight cleaning and re-lamping of the huge chandeliers in the ballroom • The stage was manoeuvred into place and the rostra installed and painted • The competition dance floor laid • The seating was positioned and meticulously numbered and lettered • The production lighting and sound equipment was installed • Once the stage was set the Empress Orchestra arrived for their first sound check • The dressing rooms were built • The backstage areas for officials were prepared • DSI TV arrived to install their cameras to facilitate the live streaming of the event around the world • Final checks were undertaken prior to the doors finally being reopened Commenting about the pre-event preparations, Michael Williams, added: “The excitement amongst the dancers, judges and the team was palpable. The Winter Gardens has always been about putting on a magnificent festival where dancers can do what they love best – dance. This year has been no exception.” n


J

oseph and the Amazing Technicolor Dreamcoat arrives in Lancashire from the London Palladium this month. The star of the show playing Joseph back in the 1990s, Jason Donovan, went on to take the role as Pharoah, a role he is now playing for the third time. Is Joseph as much fun to perform in as it is to watch? “Absolutely. It’s such an uplifting show and it feels relevant to the world we’re living in right now to a certain degree, since it’s about overcoming adversity and having self-belief. It’s part of this country’s DNA in a way and this tour is the West End production put into local theatres so it’s a version of the show many people won’t have seen before.” This is your third go-round as Pharaoh. What keeps pulling you back in? “There’s so much history with Joseph for me and I was originally asked about recreating the role of Joseph himself. That didn’t come to fruition for a number of reasons and trying to recreate what I’d done in 1991 all these years later with me in my 50s was a bit of a non-starter. But I was keen to be part of it and when the opportunity to play Pharaoh came along I took it without thinking too much about it. It sort of works, you know? The song comes in Act Two and it’s a bit of a show-stealer. Because of my association with the show, I think it only increases the value of that moment and makes it more powerful.” Joseph has been going strong over here since the early 70s.Why do you think audiences still love it? “It’s a very simple show with a clear message. It was Andrew Lloyd Webber and Tim Rice’s first real outing as writers and it’s quite unique because that sort of greatness is often born out of raw talent. When I first heard Any Dream Will Do I thought it was a cheesy lullaby but everyone told me if I recorded it, it would be a massive hit. I didn’t believe them but to this day I can go out and sing it at one of those retro festivals like Rewind and Let’s Rock and the place goes nuts. And it’s not kids who are going nuts, it’s the adults!” Jac Yarrow plays Joseph now. Having originally played the role yourself, how do you rate him as a performer? “He’s a very well-polished performer. He’s incredibly talented and he’s a great singer, and he’s got a lot of energy. It’s hard to compare the two and it’s hard to compare

the two of us as performers, but he’s a great guy and I think the innocence and the spirit of Joseph is not only in the character but also in the person playing him.” You’ve done lots of musical theatre since the 90s.What have been your favourites? “The musical that was a magical moment for me was Priscilla Queen of the Desert. It was such an incredible production and they spent so much money on the bus, the set and the costumes. The Rocky Horror Show was another good one. There have been some dodgy ones too, but we won’t talk about those!” Looking back on your early pop career, what were your highlights from that time? “It was a dream come true for me to have a number one single in this country, the year’s biggest selling album and to be meeting people I’d looked up to. I think you create your own luck in life but I was in a TV series that was massively successful so luck is one thing, but timing is also really important. With the success of Neighbours I was looking towards other things and at the time I was watching what Kylie was doing because I was always fascinated by pop music. I saw what she was doing and I said ‘I’d like a bit of that’. Then Stock Aitken Waterman came along and off it went. I think once people hear a song that’s sort of the soundtrack to them growing up – like Too Many Broken Hearts, Especially for You and Any Dream Will Do, which are my three biggest hits – it becomes part of their lives. Those songs to this day are keeping me alive and ultimately, I think that’s why singers want pop hits because they never leave you.” When were you last on tour and what are you most looking forward to about getting back out there with Joseph? “I did my own Even More Good Reasons tour before Christmas and I had a few more dates to finish. But Joseph is my first time touring in a theatrical sense in a long time and I think it’s great the show is getting out there because it’s such a fantastic production. I miss being at home but the good thing about this particular show is that I’m not going to be stressed out too much because I don’t have lots to do in it. I’m enjoying it because I’m not exhausted by it. GOOD READ Lauren Molyneux curls up with a good book to review a latest best seller

Here We Are Graham Swift Sent to the countryside as an evacuee from central London, Ronnie Deane finds himself at Evergreene – a house with simple charm and homely magic. Well placed with a couple who seem to think of him as their own, he forges strong relationships with the husband and wife, who quickly step into the figures of loving mother and guiding father that, up until now, Ronnie has desperately lacked. But amongst the freshly-made ginger beer and delicious home-cooked food, a different kind of magic is afoot, and it isn’t long before Ronnie finds himself training underneath his surrogate father as an apprentice to his sorcery. Come summer 1959, the war is over, and Ronnie – with the help of his glamorous assistant, Evie White, and his brilliant compere, Jack Robinson – is taking Brighton’s entertainment scene by storm, achieving top billing and drawing bigger and bigger crowds every night. But as the summer progresses, so too does the drama off-stage, and the complications in the relationship between the three friends are destined to leave their mark on the futures of each of them. Here We Are is a novel which exhibits a duality to its simplicity, as a result achieving extraordinary effects on its reader. Expressing the emotion of each of its characters and recounting events, both large and small, with the same forthright approach, Swift’s storytelling brings the pages of this short novel alive, enabling the characters within to linger in the consciousness long after it’s been read. It’s a novel that, much like the topic at its core, is both entertaining and nostalgic, harkening back to a supposedly simple time whilst invoking and exploring all the drama of the stage. At its simplest, it’s a story about magic – the magic of comedy and laughter, the magic of friendship, the magic felt in youth, with a whole life ahead, and the magic felt in old age, upon reflection of a lifetime of memories. It’s about the magic of love, language, storytelling, passion, and hope. Likewise, it’s a story about identities, exploring the impact of family and upbringing and the individual histories that make us who we are and questioning the true contributing factors – the essence of character. Just as the stage illusions the novel refers to offer a simple notion on the surface and are motivated by a core of surprising depth, so too are the narrative’s characters, plotline, structure and expressions. Here We Are is a relatively short story, but its scope and arguable complexity reaches far beyond its 200 pages. Beautifully written in a distinct, almost clipped, style, Here We Are is a great read at any time of the year and a treasure for any bookshelf.
