Greetings, As always, I have waited to the last minute to write my column. Today was a very good day, we started it off with an inch of rain in Greenfield, Iowa. We could sure use more but at least we know it can still rain. The Iowa State Fair is well on its way with no major problems, except the really intelligent folks (not) that broke into the home of the buttered cow and left their mark on this long timepiece of art. It’s recreated every year, in some fashion, for thousands of folks to enjoy. It is my hopes that these intruders get their hands slapped, bad. My food story is a yearly tradition from the Iowa State Fair. Seems that the same group of folks invite me every year and always ask me what I want them to fix for supper, and my answer is always the same, if you are good enough to feed me you can pick what you want me to eat. Well, the excellence of the meal and preparation were superb and the hospitality second to none. When I walked in, the first thing I saw was the beef kabobs. The only thing that was less than desirable on the kabob was the mushroom, but I can sort. I could go into depth on my opinion on mushrooms, but we will leave that for another day. Next thing I saw on the cooking shelf was a chunk of salmon that looked to be about a foot and a half long with seasoning and chunks of butter strategically placed over the top. My growling little stomach was longing to dive into that ocean foul like it was the

last supper. I almost forgot, on the way in I happened to catch a glimpse of what appeared to be fried potatoes, the ones like mom use to make, the ones that are actually crispy on the edges with a few onions and green peppers, the ones that are probably not on any diet or health food charts, but are so darn good. Now, on to the bacon wrapped Anaheim green peppers filled with cream cheese and infused with crabmeat. Most of you know that if it has cheese in the name I ain’t eatin it, well, this would be the exception to the rule. I’m not sure what they did, but this thing was to kill for. Last, but certainly not least, the corn, salsa, chips, and all the extras finished the main meal. This is pig heaven, or should I say a hungry heavy guy’s dream come true. This is my opinion of a great meal. Now, to top all this off, for dessert, we had homemade banana ice cream with special mention of Doug and Dylan’s banana brownie cake thingies, deadly frosting, Dylan. Needless to say we had a great time and we were fuller than ticks. Special thanks to Doug, Kari, Dylan, Sidney, Ross, and Sandy! Dixie and I had a great time and we shouldn’t have to eat the rest of this week. Iowa State Fair is over and that means that sale season is officially started. We have lots of sales booked and if we can help in getting your sale up and going give us a call, we will do whatever we can to make it all work. School is about to start and we wish our young people the best in their studies and sports. Be safe and please thank a veteran for your freedom.

A Little Bit About a Whole Lot of Things by Evan Rayl

Trying to follow the possible opening and the restraining orders for two horse packing plants located in New Mexico and Iowa, seems to change so rapidly, it is impossible to follow in a monthly publication such as this, since their operating situation seems to change about every week. The latest, as I am writing this, is a U. S. District Judge has issued a restraining order on August 2nd in a lawsuit filed by the Humane Society of the United States (HSUS) and others, such as actor Robert Redford, former New Mexico Gov. Bill Richardson, current New Mexico Gov. Susana Martinez, and New Mexico Attorney General, Gary King. An August 8th hearing has been scheduled to determine how much money plaintiffs in the case would have to put up in advance to cover economic losses to the companies if they lose the lawsuit. Valley Meat Co. plans to ask for $10 million to be set aside. Valley Meat has been pushing for over a year to open the slaughter plant. Meanwhile, old and unwanted horses have to be shipped thousands of miles and slaughtered in sometimes inhumane conditions in packing houses in Canada and Mexico. At the same time, horse owners are left holding and carrying for thousands of horses with very little value, who would command a good price, if they could be harvested in U. Those who obtained the latest restraining order such as the HSUS, Robert Redford, and others simply don’t understand the plight of thousands of ordinary horse owners. Always bear in mind that your own resolution to succeed is more important than any one thing. Carrie Mess from Wisconsin, better known as “Dairy Carrie” to her online followers, recently caused quite a stir by taking on a large restaurant chain, Panera Bread. She got fired up when she saw “antibiotic free” EZ Chicken sandwiches on the menu and advertising that suggested that farmers who treat their livestock with antibiotics were lazy. As soon as she cooled off, she sent a blog letter to the company president indicating they had lost a customer. Almost immediately her letter got thousands of hits and the President of Panera Bread called her. She told him it wasn’t OK to call farmers lazy and to use fear to sell sandwiches. While the company CEO never did agree with her, the letter she wrote online continued to draw thousands of notes of support. More power to this opinionated dairyman’s wife! As I would not be a slave, so I would not be a master. This expresses my idea of democracy. Recently, a semi-tractor with a double decker trailer on Highway 150 in Texas rolled on its side carrying 67 head of cattle. Troopers and firemen found only 2 cattle dead, but most of the cattle were piled up in the trailer like cordwood, but were soon going to die due to the heat and lack of ventilation. Firemen cut holes in the trailer roof to remove the cattle, who were then driven into a nearby pasture. Shortly, two tractor-trailers arrived to load the cattle and continue on with them to their destination.

Meanwhile, up in Oklahoma, a former District Court Judge was charged with 26 felony charges, including embezzlement and cattle theft. A Cattle Raisers Association Special Ranger lead the investigation into the cattle theft and reported, 11 head of cattle were allegedly stolen from a rancher at the direction of the ex-Judge. According to the Oklahoma Attorney General’s Office, who investigated the suspect on other charges, the former Judge and attorney allegedly embezzled more than $475,000 from clients. In addition, four other defendants were also charged in connection with these crimes. The Special Ranger said this was a very complex case and he expects more indictments to be handed down. Human action can be modified to some extent, but human nature cannot be changed. Our part of Iowa, portions of the southwest, is experiencing drought very similar to last year again this year. Corn kernels are just pimples and the bean stalks are very short. We have not had a bit of rain for 5 weeks as of the middle of August. Last year, a rain the 1st day of September saved our bean crop. Most beans yielded 40-45 bushels per acre and, at last years prices, farmers had operating money. Our pasture is very short and we are feeding hay. Only good thing is the first cutting hay this year was double last year. At least this year we already know how to feed limited hay, some by-products, and lots of silage to get the cattle through the winter. Looking back to 1934-36, both 1934 and 1936 were real bad, but 1935 wasn’t nearly as difficult as the other two, allowing for a little relief back then. My father always talked about filling a 14 by 40 foot silo half full with 55 acres of corn silage in ’34. He thought the silage was more horse weeds than corn, but it got 25 stock cows and the milk cow through the winter. 1935 was my first winter and my mother pointed out they didn’t take me anywhere for much of the winter because the temperature never got above zero anytime for 17 days straight. I don’t think much of a man who is not wiser than he was yesterday. The current cattle cycle is in its eighteenth year and cattle numbers continue to shrink, despite prices working higher. Lots of pundits think the cattle cycle has totally aborted and the cattle industry will never have cycles again. From the time of the Civil War to 1995, when the last cattle cycle bottomed out, cattle cycles occurred like clock-work with numbers first going up to a top and then falling again to a somewhat similar point. For the most part, they lasted from eleven to seventeen years. Since 1995, numbers of beef cows in this country have continued to fall every year, reaching a level, forecasters say is as low as numbers were in 1952. Some pundits think numbers will continue to fall and the cattle industry will never be the same. Much of the volume of beef will be replaced by cheaper pork and chicken. The latest example of movement in this direction, is the re-naming of port cuts to names similar to beef. On the other hand, a step in the other direction is the interest in and the starting of many heifer development projects. Only time will tell how this turns out. If I were two-faced, would I be wearing this one? No doubt, you have already figured out, all of the five quotes this month are those of our 16th President, Abraham Lincoln. n

Direction for the Beef Industry by Evan Rayl

The U. S. beef cow herd has seen numbers continuing to fall for the several years. Twice a year, it is reported that numbers have dropped. Right now the cow population is the same as it was in 1952. Only increases in the carcass weight of cattle marketed have made up somewhat for the reduction in numbers. In order to have enough beef to kill, packers have accepted heavier cattle. There is a limit to how far these increased weights can go, however. Many are thinking we are getting close to the limit at the present time. Lack of profitability in every segment of the beef industry, from the cow-calf producer to the packer is a major cause for the decline. Drought, causing high feed prices has been another major reason for the fall in numbers as it has put a squeeze on both cow-calf producers and feeders. On the packer end, plants have seen a declining demand for beef product for many years. While only one beef packing plant has closed in recent times, none of the other plants is running near capacity. Because beef is the premium product, as compared to pork and chicken, its higher price has reduced desire among consumers. Competition from alcohol plants also has helped lead to higher feed prices. Currently, these plants are using 40 percent of all the corn produced. This would be 100 percent of all the increase in corn production since 1976. Of course, there are some by-products of alcohol production being used as feed for livestock. Many beef producers think alcohol production has been a hindrance to beef production. A major consideration occurred in the last year when the alcohol plants developed a way to take fat out of the by-products, reducing their usefulness to cattlemen. This fat is going to the chicken industry now, where much less feed is needed to put on a pound of gain. More about that later in this opinion. Off setting lower domestic beef demand, there has been an increase in the export market. A major factor in this is the lack of a beef scare in recent years. But we all know that an scare, even a small one, would reduce foreign demand and make the price squeeze even more difficult. If beef didn’t take so many pounds of feed to put on a pound of gain, it would be more competitive in the meat cooler. That why you have seen me pounding your ear continually in my articles in this publication in recent years regarding feed efficiency. If cattle only took two-thirds of the feed they take now, beef would be much more competitive in grocery stores and demand would raise, as compared to pork and chicken. As an example, my bulls on a official 70 day test take about four and a quarter pounds of feed and the best ones take half as much feed to put on a pound of gain as the poorest ones. But my poorest bulls are just above 5 pounds of feed, where in some herds the average bull is between six and seven pounds. I am telling you this, not to promote my bulls, but to show you what can be done. Afterall, you see my promotion for good feed efficiency bulls in my ads in this publication most every month. Just think how much more beef could be produced and how much less we could sell it for and still make a good profit. Beef would be King, instead of the recent report that pork will overtake beef in volume in the next few months. Better promotion on the part of the beef industry would certainly help, too. During the time when the Atkins diet craze was going on, demand for beef increased. A long time promotion of this sort, would be a huge aid to the beef industry. But unfortunately, interest in the Atkins diet has ran its course. Without a doubt, pork and especially chicken have done a better job of promoting their product. They have come up with more quick to fix meat recipes and mixes out of a box or bag to add to meat, as well as lower cost per pound, in order to steal the consumers protien dollars.

But even worse chicken has taken a large part of the desire for beef by youngsters just now starting to decide what they will eat for protein. Sadly, it is looking more and more like beef will only be the meat of choice when one is eating out for special occasions or a special family gathering at home. As we move further in this direction, the lower will be demand for lower quality beef. This suggests, however, if one wants to stay in the beef production business one is going to have to ratchet up the quality of the beef one is producing, if we want to be profitable. Promotion on our part as individual producers and that of paid beef groups needs to improve greatly and to do so promptly. I’m sure some will say the paid groups need more funds to operate, but lets see some positive improvement in the right direction first. n

Successful Heifer Calving by Evan Rayl

Cow herd owners are at the end of another calving season that included a lot of difficult calving weather. A local cattleman told me he thought this year was as bad as the last five put together. When we have terrible weather such as this past season, cattlemen will talk about how good or how bad their “calving ease bulls“ performed. But in reality, the heifers have a lot more to do with it than the bull. Heifers are equally responsible to the bull for the genetics for “calving ease,” plus they are totally responsible (along with the herd owner providing their care) for the environmental portion of the unborn calves development. The bull has nothing to do with the growth of the heifer. Nor does he have anything to do with the weather the heifer endures. Also, the bull has nothing to do with the pelvic size of the heifer. Fact is, the bull has nothing what-so-ever to do with anything on the environmental side of this situation and it is a sizable consideration. I have talked to several knowledgeable cattlemen and they pretty much agree with me that the heifer has to take responsibility for 60 to 70 percent of calving ease direct and birth weight. So, if you want your heifers to calve easy, care for your heifers properly and make sure they have the right “calving ease” genetics, right along with those of the bull. The very popular Missouri Show-Me-Select Heifer Program has strict requirements that are the same for both the sire of the heifer and the sire of her calf. This is a three-legged stool in this case, with the heifer being the source of two of the legs for “calving ease” and the bull one. It is wrong to blame the bull for all your “calving” problems. Sure he can be part of the problem if he isn’t an easy calving bull. But also consider the “calving ease” genetics of the heifer as well as how well she has been prepared to be a mother. Give thought to these factors when selecting your replacement heifers and the sire of their calf. To summarize: Beef Cattle Calving Ease has 3 parts: 1. Calving Ease from the Bull 2. Calving Ease from the Heifer 3. Environmental factors from the Heifer Each contributes approximately the same amount of influence. Prepare and have yourself a “successful calving season” next year. Do not blame the “heifer bull” for all the calving problems you might have. n

In Search Of an Ear Corn Cutter by Evan Rayl

I am looking for an old ear corn cutter. Most of you would not know what this was used for on the farm. I frankly don’t know how popular they were years ago, but my father had one. We used it every single day from November ‘til July to make feed for the cattle that were being fattened for market. It was always a happy day when my father shipped the fat cattle to the Omaha Stock Yards. Then, I no longer had to cut the corn and we got to go to Omaha to see the cattle sell. I considered it to be the biggest day of the year. The whole procedure would start with the truck coming to load the cattle late on Sunday afternoon. Right after the truck left, we would do Monday morning chores that night and go to bed right away, so we could leave home early in the morning to try to see the cattle sell at the Stockyards in Omaha. We would have to allow at least three hours to get there in our old Ford because we would go most the way on old Highway 34 (it was narrow with a curb on each side) and many times it would be foggy to boot, plus we had to go through five county seat towns. My sister and I would sit on wooden boxes in the back seat, so we could see what was happening. As we all know, my folks would have been thrown in jail, if it were present times. My father would worry all the way out to Omaha about getting there in time to see the cattle sell. It was 100 miles from our farm to the Stockyards, so we didn’t make very good time, especially when it was foggy. As I remember it, it was foggy more times than not. As we crossed the Missouri River Bridge (just now being replaced) and came over the hill, the Stockyards came into sight about the time we passed Johnny’s Cafe. I was always impressed with the sea of fat cattle in the yards and the Exchange building was so big, at least 10 stories tall and covered at least an acre. Surrounding the yards were

several packing plants. It was always hard to find a place to park. And when we found parking, it was a rush on the overhead walk ways out to where the commission company was and my father’s cattle were penned. As we almost ran out to where the pen was, my father would worry that the cattle might already be sold. Then, when we got to the pens, if the cattle weren’t already sold, my father would then worry ‘til they were. Back then, I didn’t fully understand why my father worried so much about the cattle selling. Now I do, it really was the biggest day of the year. Just before noon, it was time to eat at the very large cafeteria in the exchange building. In recent years, I had an opportunity to eat in that very same cafeteria. The food didn’t taste near so good plus it seemed like the room had gotten a lot smaller. Next on our trip to the stockyards, we would rush up to 6th floor to listen to the radio market report sent over a wide area at 12:30. Consignors, cattle descriptions, weights, and prices were being read for a half hour by a fellow with a real smooth auctioneer’s voice. It was a big deal if he told about your cattle. Back to my original thought, an ear corn cutter would cut ears of corn in short sections (1-1/2 to 2 inches long) for cattle being fed for market. Cattle could choke if fed whole ears of corn, but the shorter pieces would keep this from happening. It had a shelf to hold a bushel basket of ear corn. One would drop ears of corn vertically into two openings where the ears were fed to the cutters. The pieces would then drop out underneath into another bushel basket. The operator would place the ears into the openings by hand, stand on one foot and work a treadle with the other foot and with the help of a large flywheel to keep the moving parts cutting. This job required a whole lot of balance and dexterity. It was my job after school each day to cut the corn for the next days feeding that my father would carry out to the feed-bunks the next day. I would like to have one to show how much cattle feeding has changed and how I helped my father feed his fat cattle 60-70 years ago. Governor’s Charity Steer Show Records were broken as the 31st annual Governor’s Charity Steer Show raised $185,338, the highest selling auction to date, for the Ronald McDonald Houses of Iowa. The money raised through the auction will benefit the Ronald McDonald Houses of Des Moines, Iowa City, and Sioux City. All of the houses are located near hospitals and provide a “home away from home” for families of seriously ill children. The Iowa Beef Industry Council and the Iowa Cattlemen’s Association sponsor the annual steer show and auction. Governor Terry Branstad hosted the 2013 event held on August 10, 2013 in the Pioneer Livestock Pavilion at the Iowa State Fair. Since its inception in 1983, the Governor’s Charity Steer Show has raised over $2.27 million for the Ronald McDonald Houses of Iowa. The auction, which began when 25 steers paraded into the livestock pavilion, was led by Governor Branstad and other celebrity showpersons competing for the title of “Judge’s Choice.” The official steer show judge for this year’s show was Jason Lekin of Tama, who manages and owns Tama Livestock Auction. The judge selected the steer “Farm Bureau Pride,” shown by Craig Hill, President of Iowa Farm Bureau, for overall grand champion honors. The Iowa Farm Bureau Federation sponsored the steer. Iowa Farm Bureau Federation District #5 purchased the steer at the auction for $7,250. Shanee Tate of Renwick owned the

steer. Additional donations were made to the sale of the steer by Crop Production Services – LuVerne, First Citizens National Bank and the Tate Family for $2,250 “Affordably Smart,” a steer shown by Rob Denson, President of Des Moines Area Community College, DMACC, earned reserve champion honors. The steer was sponsored by DMACC and purchased by James Oil Co for $5,000. Cody Fausch of Cambridge raised the steer. Additional donations made by Friends of Cody Fausch and Friends of DMACC for $4,350. The steer shown by Cy and Cecil Rhoads was selected by the crowd for the title of “People’s Choice.” The steer, “Cyclone,” was sponsored by Family and Friends of Brayton Shill and purchased by Curran Cattle Co for $5,750. Cory Sampson of Nevada raised the steer. An additional donation was made by Family & Friends of Brayton Shill for $500. Darren Heldt, Director of Racing at Prairie Meadows Race Track and Casino earned the Showmanship Award for the second consecutive year. Heldt was selected by Byron Leu, who served as the event’s Showmanship Judge. Leu recently retired from twenty-seven years of service as the southeast Iowa Beef Specialist with Iowa State University Extension and Outreach. Heldt’s steer, “Blazing 777’s,” was sponsored by Prairie Meadows Race Track and Casino. The steer was raised by Emily Washington of Elkhart and purchased by Prairie Meadows Race Track & Casino for $9,750. Emcees for the show were farm broadcaster Bob Quinn, WHO Radio, and Michelle Rook, WNAX Radio. A special guest appearance from Ronald McDonald kept the show lively. The auctioneer for the auction was Phil Schooley from Bloomfield Livestock. Catching bids alongside Schooley were Mike Sorensen and Ross Butler of Livestock Plus, Tom Rooney of The Midwest Marketer, and Jason Lekin of Tama Livestock Auction. n

Wow, it’s been a crazy summer… county fair, golf tournaments, state fairs! I have to say I had one of the best filets ever with a terrific group at Matt Lautner’s National Convention at Riverside Casino. I finally got to meet Heidi and Charles Anderson of Legacy Livestock Imaging. I have admired their work for some time and they have such a neat story about how they met and Heidi taking livestock pictures. I like to mention special finds every once in a while and I’ve got a good one... legacylivestockimaging.com. This website not only has some of the coolest prints I’ve ever seen but they also have phone cases available that you can personalize with your name on one of their incredible photos! Thank you again Matt for a fun tournament! My next big trip was Tucker and I hitting the Illinois State Fair! It was a quick trip but we saw some high quality cattle and got a chance to chat with some great people! Next year we need to make it a couple extra days. So, I have a new favorite at the Iowa State Fair! The shrimp corndog was absolutely incredible!! Definitely had great company both times I enjoyed the “Best New Food 2013” winner. They called it bringing the beach to Iowa available at the Po-Boy Stand. It had three fresh shrimp dipped in corndog batter and fried to golden perfection, then topped with a sweet jalapeno glaze. As always, we ate at the Cattlemen’s Beef Quarters at least once a day! Those hot beef sundaes are still to die for and continue to be Tucker and Taylor’s favorite. My favorite has to be the Bob’s bacon blue burger. I need to say “thank you” to Norm for making my extra blue cheese happen! That was a little piece of heaven! Well, our summer is officially over and I had to laugh as we drove back from the Iowa State Fair. Tucker informed Taylor that she would have to carry her own backpack at school and that he wouldn’t be around all the time to help her. If you know Tucker at all you know his attention span isn’t stellar. So when he proceeded to say that she would need to pay attention because he wasn’t always going to be around, I about died laughing.

He was very thoughtful, though, on the first day, holding her hand as they walked in the school. Yes, I cried, but my little girl did not. Taylor was very excited and couldn’t wait to fill Tuck in after school. A new chapter… Please hold our military close to your heart and in your daily prayers. Travel safe this fall hitting all the sales! Nothing that’s worthwhile is ever easy.
