I can’t believe I’m writing this: Welcome to the Living Well Magazine’s Holiday Gift Guide part 1! Fall is in full-swing, and the holidays are just around the corner. With summer in our rear-view, this issue focuses on helping you get ready for whatever holidays you celebrate in the coming months. Like issues past, we are supplying you with a host of gift ideas, recipes, and everything else in between. Before we jump into the guide, which is jammed packed with incredible products that would be excellent choices for your gift giving, we wanted to pause for a moment to reflect on some ways you can contribute your time and energy to make our community a better place. Though you should consider volunteering your time year-round, for many of us, that is not practical. BUTTERNUT SQUASH BRUSCHETTA This is a great way to start your thanksgiving dinner - it can also be a great appetizer for a fall family gathering. Home Grown has recently added it to our Fall | Winter Menu.

Hard Cider Soaked Cranberries– Heat 8 oz of hard cider. Bring up to a boil (you can sub regular cider.) Pour the cider over 8 oz of cranberries. Soak them for an hour. Drain any excess liquid out.

Ingredients: 1 butternut squash 2 oz oil of your choice (for roasting squash) Fresh herbs - rosemary, thyme, and sage - 1/2 tsp of each 1/2 tsp salt 1/2 tsp black pepper

Cheese Recommendation: 8 oz ricotta or queso fresco (Home Grown makes our own farmers cheese which takes over 72 hours)

Roasted Squash– Peel the butternut squash, cut in half, remove seeds and flesh, cut into a large pieces approximately 1/2 in x 1/2 inches. Toss, toast in oil, herbs, salt and pepper spread on sheet pan. Roast at 350 for 20 minutes, flip, rotate on baking sheet, continue to roast 10-15 minutes or until tender, but not mushy.

DIABETES DIET: Create Your Plan For Healthier Eating If you have diabetes or prediabetes, your doctor likely will recommend that you see a dietitian to develop an eating plan to control your blood sugar, manage your weight and control risk factors for heart disease, such as high blood pressure and high blood fats. Here are some things to think about, from meal planning to exchange lists and counting carbohydrates. A diabetes diet is a healthy-eating plan that’s naturally rich in nutrients and low in fat and calories. Key elements are fruits, vegetables and whole grains. In fact, a diabetes diet is the best eating plan for most everyone. When you eat excess calories and fat, your body responds by creating an undesirable rise in blood glucose. If blood glucose isn’t kept in check, it can lead to serious problems, such as a dangerously high blood glucose level (hyperglycemia) and long-term complications, such as nerve, kidney and heart damage. You can help keep your blood glucose level in a safe range by making healthy food choices and tracking your eating habits. Creating a plan There are few different approaches to creating a diabetes diet to help you keep your blood glucose level within a normal range. With a dietitian’s help, you may find one or a combination of the following methods works for you: The Plate Method The American Diabetes Association offers a simple seven-step method of meal planning. In essence, it focuses on eating more vegetables. When preparing your plate, fill one-half of it with nonstarchy vegetables, such as spinach, carrots and tomatoes. Fill one-quarter with a protein, such as tuna or lean pork. Fill the last quarter with a wholegrain item or starchy food. Add a serving of fruit or dairy and a drink of water or unsweetened tea or coffee.

Counting carbohydrates Because carbohydrates break down into glucose, they have the greatest impact on your blood glucose level. To help control your blood sugar, eat about the same amount of carbohydrates each day, at regular intervals, especially if you take diabetes medications or insulin. A dietitian can teach you how to measure food portions and become an educated reader of food labels, paying special attention to serving size and carbohydrate content. If you’re taking insulin, he or she can teach you how to count the amount of carbohydrates in each meal or snack and adjust your insulin dose accordingly. The exchange lists system A dietitian may recommend using food exchange lists to help you plan meals and snacks. The lists are organized by categories, such as carbohydrates, protein sources and fats. One serving in a category is called a “choice.” A food choice has about the same amount of carbohydrates, protein, fat and calories — and the same effect on your blood glucose — as a serving of every other food in that same category. So, for example, you could choose to eat half of a large ear of corn or 1/3 cup of cooked pasta for one starch choice. Glycemic index

Some people who have diabetes use the glycemic index to select foods, especially carbohydrates. This method ranks carbohydrate-containing foods based on their effect on blood glucose levels. Talk with your dietitian about whether this method might work for you.

A Sample Menu: When planning meals, take into account your size and activity level. The following menu is tailored for someone who needs 1,200 to 1,600 calories a day. Breakfast. Whole-wheat bread (1 medium slice) with 2 teaspoons jelly, 1/2 cup shredded wheat cereal with a cup of 1 percent low-fat milk, a piece of fruit, coffee Lunch. Cheese and veggie pita, medium apple with 2 tablespoons almond butter, water Dinner. Salmon, 1 1/2 teaspoons vegetable oil, small baked potato, 1/2 cup carrots, side salad (1 1/2 cups spinach, 1/2 of a tomato, 1/4 cup chopped bell pepper, 2 teaspoons olive oil, 1 1/2 teaspoons red wine vinegar), unsweetened iced tea Snack. 2 1/2 cups popcorn or an orange with 1/2 cup 1 percent low-fat cottage cheese Embracing your healthy-eating plan is the best way to keep your blood glucose level under control and prevent diabetes complications. And if you need to lose weight, you can tailor it to your specific goals. Aside from managing your diabetes, a diabetes diet offers other benefits, too. Because a diabetes diet recommends generous amounts of fruits, vegetables and fiber, following it is likely to reduce your risk of cardiovascular diseases and certain types of cancer. And consuming lowfat dairy products can reduce your risk of low bone mass in the future. If you have diabetes, it’s important that you partner with your doctor and dietitian to create an eating plan that works for you. Use healthy foods, portion control and scheduling to manage your blood glucose level. If you stray from your prescribed diet, you run the risk of fluctuating blood sugar levels and more-serious complications. For most people with type 2 diabetes, weight loss also can make it easier to control blood glucose and offers a host of other health benefits. If you need to lose weight, a diabetes diet provides a well-organized, nutritious way to reach your goal safely. Recommended foods Make your calories count with these nutritious foods:

Fish such as salmon, mackerel, tuna, sardines and bluefish are rich in omega-3 fatty acids, which promote heart health by lowering blood fats called triglycerides. “Good” fats:Foods containing monounsaturated and polyunsaturated fats can help lower your cholesterol levels. These include avocados, almonds, pecans, walnuts, olives, and canola, olive and peanut oils. But don’t overdo it, as all fats are high in calories.

Foods to avoid Diabetes increases your risk of heart disease and stroke by accelerating the development of clogged and hardened arteries. Foods containing the following can work against your goal of a heart-healthy diet. Saturated fats: High-fat dairy products and animal proteins such as beef, hot dogs, sausage and bacon contain saturated fats. Avoid fried fish and fish with high levels of mercury, such as tilefish, swordfish and king mackerel. Trans fats: These types of fats are found in processed snacks, baked goods, shortening and stick margarines. Avoid these items. Cholesterol: Sources of cholesterol include high-fat dairy products and high-fat animal proteins, egg yolks, liver, and other organ meats. Aim for no more than 200 milligrams (mg) of cholesterol a day. Sodium: Aim for less than 2,300 mg of sodium a day. Q:

Please help me to understand why you emphasis nature, water therapy, animal and horse therapy in your PT program. How can this help someone in chronic pain? I have lost my life as I have always known it. I feel desperate and the system has given up on me.

A:

Osteopathy was introduced approximately 125 years ago by Andrew Stiles and was extremely effective. So much so, that when Edgar Casey tapped into the stream of consciousness and was able to prescribe successful treatments for people with very critical illnesses (despite no medical education whatsoever), osteopathy was almost always prescribed. He very often prescribed homeopathy, natural remedies and rarely pharmaceuticals before they were compounded. Casey was doing this wonderful service, in the 1920’s to 40’s when people had turned away from our conventional medical model because it was having little success. The treatment of choice was home homeopathic remedy kits and osteopathy which was working well for most people. When medicine became very profitable in America, the natural cures became harder to access. People’s choices were becoming limited as the insurance industry began to dictate treatment. Access to these simple interventions were not covered, so they fell away. The version we have of osteopathy today, is in most instances, a watered down version that looks more like internal medicine. Manipulation, awareness of the fascia and treatment incorporating Nature are time consuming and not convenient. True osteopathy which is hard to find today is making a come back and always had Nature as part of the prescription. Specialization or seeing a person as their diagnosis or specific injury is the modern way to approach medicine. The steady decline in health in our country may indicate that this approach is not working so well for us. The resurgence of Holistic (Wholistic) medicine is a result of the need to see the person as a whole-being reacting to their environment, rather than a bad knee or back walking

in the door. The old approach seems to have provided permanent cures and complete healing in cases where even the most advanced technology falls short today. I use Nature as a motivator because it works. The patient gets reconnected to their spiritual body and inner guidance. This is accentuated through Nature. The therapy with the horse has a whole life of its own. I create the safe space and the horse and patient have their own agenda. Water, trees, plants, birds, fresh air all lend to healing whether it be oxygen consumption, uplifting spirits or detoxification. The original osteopaths prescribed such nature treatment as trotting on a horse or meditation by a creek. Because of all the EMF influences people are finding if they spend a weekend or a week unplugged and deep in Nature they are rejuvenated. Sometimes that starts with small increments and may even need the guidance of a therapist to know how far to go, where to start and how to progress. Water can be used in many ways. Clean, pure water can move toxins very efficiently out of the body. Treating a patient in water gives me access to a greater ROM and the buoyancy makes unwinding ( a natural self correcting spontaneous movement of the body) more accessible. Trends tend to swing like a pendulum far one way, far the other and than find a happy medium. The old ways are coming back and will integrate with the high technology so that healing can be very individualized and each person can get what they need rather than a protocol tied to a piece of the overall picture. This Doctor’s Secret to Keeping Excess Weight Off – PART II Dr. Scott E. Rosenthal

Last month I discussed how I use high intensity interval training to help stay in shape and at my optimum weight. For those who embraced the research-backed approach, kudos for making a valuable investment in yourself! For those who still have not strapped on a pair of sport shoes, today is a perfect day to start. This article will take it one step further by adding another component to your successful fitness regime. It’s all about the best use of weights to keep weight off. Too often, calorie restriction is overemphasized when it comes to weight loss programs. It is true that many Americans consume too many calories (please read the article OVEREATING? archived at rosenthalchiropractic. com for more information), but your engine size and fuel-burning capacity are also vital factors to consider in the effort to maintain your optimum weight. As your body’s fat storage area equates to a fuel tank, your lean muscle mass relates to your engine size. Larger engines, not bigger tanks, burn more fuel! Your basal metabolic rate (BMR) is the energy used each day at rest— think of the gas used when a car is idling while stopped at a light. As you age, your BMR decreases. A portion of the slowdown is due to the loss of muscle mass. Starting in your mid 20’s, the average person loses about half a pound of muscle per year. By the time you are in your 40′s, you have about 10 pounds less of muscle— a smaller engine! You may have been a Humvee at age 20, but a Prius at 40! Considering that one pound of muscle burns about 6-10 calories per day, the loss of 10 pounds of muscle can cause weight gain over time. With the loss of muscle, at age 40, you would have an extra 60-100 calories each day available for fat storage. Since it takes about 3500 calories to make a pound of fat, you will gain a pound of fat every 35-60 days. This is why, as you age, maintaining your preferred weight can feel like being stuck in reverse. How do you protect your engine from being downsized? The answer requires some resistance—by weightlifting. I understand that for those new to training, this can be a daunting task and uncomfortable at the start. But, once you get past the first few transitional months, the growing pains of a new routine will become a comfortable and enjoyable part of your life! Aside from protecting the muscle you DO have, consider the other benefits of resistance training: 12

Your muscles are largely responsible for your outer appearance and shape. Greater mass of muscle and better tone creates a more attractive physique! Increased strength adds protection to your joints. Loss of muscle mass and lack of use makes you more prone to injury, aches and pains. Muscle is more metabolically active than fat. The additional calories burned each day, by the extra muscle mass, can add up over the year and contribute to weight loss. As a reverse of the example from above, adding an extra 10 pounds of lean muscle mass to your body will burn an additional 60-100 calories each day (by increasing your BMR). This extra amount of muscle can burn enough calories each year to remove 6-10 pounds of body fat. Resistance training utilizes calories (up to 100-200 calories depending on the workout session). As always, check with your doctor of chiropractic or other health care professional prior to starting an exercise routine. If you are new to exercising, please consult the trainer at the gym. My favored routine involves a gentle 10-15 minute dynamic (moving) warm-up. Start with five minutes on a bike, an elliptical machine or a moderately brisk walk. Follow that with performing gentle movements such as forward bends and standing abdominal twists while holding a light weight (a medicine ball works well). Then, perform each resistance exercise that you will later use, but at a VERY low setting for 8-12 reps. A dynamic warm-up prepares your body for the intense workout to follow and helps protect you from being injured. I then like to vary between the use of free weights and cable-based machines to perform supersets (typically I migrate to whichever is available in order to save time). A superset is two exercises completed back to back with no rest in between other than the time it takes to adjust the weight. Perform 8-12 repetitions (reps) using a level of weight that causes you to barely get the last rep completed. The two movements will usually be antagonistic to each other, such as a pushing exercise followed by a pulling one. Once you are complete, follow with a 60-90 second rest prior to doing a second set or moving on to the next two exercises. Use large muscle groups as the foundation and add smaller muscles if you have time and an adequate

energy level (being careful not exhaust yourself).

Just two or three sessions per week will make a huge difference. Remember to take a day off in between workouts to allow your body to recover.

Perform the minimum for a complete workout: Vertical push-pull superset (example: an overhead press then a latissimus (lat) pulldown) Horizontal push-pull superset (example: a bench press then a seated row) Abdominal and a back superset (example: side and front planks then back extensions over a large inflated exercise ball) Lower body such as a leg press (can be performed alone without a superset)

This routine is not designed to make you look like a bodybuilder, but to achieve a more optimum weight and level of fitness. Please do not obsess over the scale! Muscle adds weight to the body and can offset some of the fat loss. Please think of exercising more for health… after all, weighing less or just being skinnier does not always equate to being healthier. Your goal should always be based on fitness and health! If you desire to be healthier and maintain an optimal weight as you age, an exercise routine that includes resistance training can help you achieve success. It is fun, makes you feel great, and you’ll love the way it will make you look! A Prius motor may be better for the Earth, but a Humvee-sized engine is superior for your health and waistline!

It is also recommended that you conclude your workout with a cardiovascular interval session. A full description of this component of the routine (essential for those interested in weight loss) can be found in last month’s article archived at rosenthalchiropractic.com. As an added note: it is fine to reduce the intervals to three rounds instead of six because of the additional work just accomplished from the resistance training. Again, it’s important not to become overly exhausted and cause the unwanted consequences discussed last month. The entire routine (weight training and high intensity intervals) takes about 30-45 minutes, depending on how many sets you decide to perform.

Loving Yourself Forward

“Now is the time.” I’ll never forget the stunningly simple, crystal-clear guidance that came to me - out of the proverbial clear blue sky - in a quiet, spacious moment years ago. I wasn’t specifically expecting it at that time, but I knew it would come.

At that point I began to take my dreams seriously and to start planning for my transition. As I often encourage my clients to do now, I began building a case for why I would succeed, rather than focusing on all the possible ways I could fail. I let myself get more and more excited about the post-corporate phase of my life and could almost taste how sweet it would be.

And when it came, I knew I could trust it.

The only sticking point was when the transition would begin.

I knew I could trust it because the words unfurled like a stately banner in my mind, and as they did a feeling of profound peace enveloped my entire being. I was blessed with the exquisite experience of knowing something – knowing it absolutely - without a shadow of a doubt.

“Later” always seemed to be the best time. I discovered it’s one thing to have a powerful desire to do work I love – along with some money in savings and a general direction to follow – and quite another to act on it.

What a gift that is! As someone who had grappled with self-doubt much of her life, the felt sense of knowing the time was right for a choice I wanted to make - without the usual second-guessing and exhaustive analysis of the pros and cons - was life-altering. And what made it particularly sweet was that it was a gift I had given myself, many months before that moment. Let me explain. Regular readers of this column know that, years ago, I left a successful corporate career to follow my dream of doing work I deeply love. I had known for a long time that I wanted to make the change, yet I didn’t have a clear enough vision of what my new career would look like to feel confident in walking away from stable income. And like so many clients with whom I have worked since that time, I kept waffling. I wanted to make a change, but…gee, isn’t this salary wonderful? I wanted to do work that fed my soul, but…gosh, that meeting today, with my favorite colleagues, was almost fun! I wanted to create my own schedule, but…isn’t it helpful to have a set schedule to bring order and productivity to my life? Back and forth I went, time and again. Yet I began to notice that, even with ongoing effort to convince myself to stay in the corporate world, the longing to do work that expressed the deeper truth of who I am was amazingly stubborn. Not in an obnoxious way, but in a quiet yet very persistent way. It had a powerful, subterranean momentum of its own - sort of like an undertow, if you don’t mind the mixed metaphors. I kept thinking I should stay close to shore, but it was pulling me toward the uncharted waters of creating something totally new in the depths of the unknown. Over time, I came to the realization that I simply had to leave. I had to find out where my soul wanted me to go. After all, what’s the point of having soul’s longings if we’re not meant to follow them? With that realization my perspective began to change. Whereas once I felt it was too risky to walk away from a stable and financially comfortable career, I now felt it was too risky to stay. “Stable” began to feel like “stuck,” and “comfortable” began to feel like “numb.” I wanted to live an awake and inspired life, not a well-planned but predictable one that left me feeling empty. 24

But I also discovered something else. I discovered that not only could I trust the power of my longings to point me in the right direction, I could trust the power of love to guide me to the right time. I knew – I really knew – that I would leave my corporate job. Yet I also knew that if I forced myself to do it right away – if I pushed through my fear – I would compromise the quality of my experience. The fear itself would continually harangue me, thrusting countless variations of “this was the dumbest thing I’ve ever done” thoughts into my mind. And I didn’t want to start the most exciting phase of my life that way. I wanted to feel good about it. So rather than forcing myself to leave as soon as I knew that leaving was right for me to do, I reminded myself soothingly that I would know when the time was right. I would sense it. I would let intuition rather than coercion signal my resignation. And as I continued in my corporate job for a while, I decided to relate to it, internally, as if I was working out my notice period. I showed up and did everything that was mine to do, paying particular attention to setting things up for a smooth future transition to someone else. I acted responsibly but didn’t over-commit or volunteer for things just for the purpose of proving myself to be a good team player or readying myself for the next promotion, or for any reason other than that I wanted to (which, frankly, was rare). I loved knowing that someday I’d no longer be working in the corporate world, and in that knowing I relaxed a little and did my best to appreciate the good that was there. And I kept looking forward to doing work I loved, almost the way I used to look forward to Christmas when I was a little girl. And so, in the absence of self-judgment about not having left my job, already, my inner guidance had plenty of quiet space in which to be heard. I heard it that fateful morning as I was working out in my living room. While pausing between exercises to catch my breath and appreciate the view outside my window, the guidance came: “Now is the time.” I was both humbled and exalted by the purity and perfection of it. I tendered my resignation the next day.

And I left my job knowing I was leaving at the perfect time, peaceful yet excited to begin my new journey of the soul. Those of you who know me well know that, once on my way, this soul’s journey has not been without further doubt or fear. Far from it, actually. Yet during those difficult times of wondering if I’d left too soon (or perhaps shouldn’t have left at all), what helped me most was remembering how true and authentic the decision felt. In my bones I knew I had been divinely guided, and that remembrance anchored me when I was at risk of becoming adrift in a sea of withering self-doubt. Giving myself time to bring my thoughts and feelings about leaving the corporate world into harmony with my longings was, truly, a priceless gift. It was only from such a stable place that true guidance could emerge, and the feeling of being guided is parallel to none. It beats secondguessing every day of the week. I learned quite a lot about loving myself forward in that experience. It’s about being kind rather than forceful. Yet it’s also about being firm in honoring the soul’s longings, rather than letting doubt continually nibble away at them.

It’s being supportive of the “what” – what the soul knows - without being pushy about the “when.” It’s about cultivating and trusting intuition to guide the timing. And it’s about understanding that each experience is unique. Another time, in other circumstances, my guidance might have been to act immediately. And my responsibility would have been to follow the guidance. The key is to develop a loving relationship with myself, which includes committing to understanding the ways my inner guidance speaks to me and asking myself, at each juncture, what “loving support” might look like right now. Zucchini, lemon & Parmesan risotto Serves 4 Prep time: 15 mins Cook time: 35 mins WF GF V (if vegetarian Parmesan and vegetable broth used) 3 tablespoons butter 1 zucchini, finely diced 1 onion, finely diced 1 stick of celery, finely diced 1 clove of garlic, crushed 1½ cups risotto rice ½ cup white wine 4¼ cups hot chicken or vegetable broth zest of ½ unwaxed lemon

Set a wide, deep, heavy saucepan over medium heat. Add 1 tablespoon of the butter and, when melted, add the zucchini. Sauté gently until just golden brown and beginning to soften, then lift out of the pan and set aside. Add another spoonful of butter, the onion, and celery. Sauté again, stirring often, for about 10 minutes, until soft but not browned, then add the garlic and cook for 1 minute.

Add the risotto rice to the pan and stir well, coating the rice in the butter. Cook for a couple of minutes, then add the wine. Continue to stir until all the wine has been absorbed by the rice. Slowly begin to add the hot broth, a ladleful or so at a time, waiting until all the liquid has been absorbed before adding more. You may not need all the broth; risotto should be thick and creamy, not wet and sloppy. After about 20 minutes, taste the risotto. The rice should be nicely al dente—don’t cook it so long that it becomes mushy. Remove from the heat and return the sautéed zucchini to the pan to warm it through. Stir in the last spoonful of butter, the lemon zest, lemon juice, a little salt, plenty of pepper, the parsley, and Parmesan. Taste and add more seasoning, lemon juice, or cheese, if needed. Serve in wide shallow bowls, with a block of Parmesan cheese and a grater on hand.

Pan-fried gnocchi with tomato & basil Serves 3 to 4 Prep time: 8 MINS Cook time: 15 MINS (WF GF check gnocchi ingredients) (df v ve if served without Parmesan) 3 tablespoons olive oil 1 (1 lb) package of fresh gnocchi 1 clove of garlic, peeled and bruised 1 cup good-quality tomato sauce 1 teaspoon sherry vinegar or red wine vinegar 1 tablespoon extra virgin olive oil salt and freshly ground black pepper To serve: freshly shaved Parmesan (vegetarians 
 should choose a vegetarian brand) leaves from 4 sprigs of fresh basil, 
 coarsely torn or chopped We admit it—this barely counts as cooking, but sometimes we all need this kind of meal: fast, family-friendly, and absolutely fuss-free. Boiled potato gnocchi can be a little sludgy and wet, but frying them gives them a golden crunchy shell. One (1 lb) package of gnocchi might not be enough for four hungry adults, so add another 4 oz if you need to. Place a wide skillet over medium– high heat and add the oil. When shimmering, carefully add in the gnocchi and cook, turning often, until golden all over. Remove the gnocchi and set aside; keep them warm.

TIP Instead of tomato sauce, try golden gnocchi with sautéed mushrooms, cream, and thyme, or with bacon, peas, and parsley.

Reduce the heat slightly and add the garlic clove to infuse its flavor into the oil. After a minute or two, add the tomato sauce and vinegar and simmer for a couple of minutes. Taste—most tomato sauce already contains salt, but add more if you need to. Season with black pepper. Remove from the heat and stir in the extra virgin olive oil. Remove the garlic clove. Drizzle the sauce over the warm, crisp gnocchi and serve with freshly shaved Parmesan and basil on top. November 2018
