Many of you have contacted me and asked me when I would finally reveal myself in the dress that I wore to our son’s wedding. I promise to share, just as soon as pictures become available. However, I normally take a terrible picture and I am now retracting my promise and will only share a picture of me in the dress if there is one that isn’t too bad. On that note, the photographer already released what he thought were the top sixty images from the wedding and needless to say I did not appear in any of those, which makes me just a little concerned…lol! Our entire family is suffering from “wedding being over syndrome”. Because for literally two years so much time and energy went into the excitement of planning of the wedding,and now we are all feeling a bit let down now that it’s over. It was truly a magical event from beginning to end. The band they chose 45 Riots, is a New York City based band playing everything from Jay Z to Frank Sinatra. They were so outstanding that I keep trying to come up with an event warranting hiring 45 Riots again. You can actually check the band out on their website: www.45riots.com. All right, I really am moving on. I hope that everyone had a wonderful Thanksgiving and I’m guessing that many of you have started your holiday shopping using LWM Gift Guides. In the true spirit of the holiday season, please don’t forget the people and animals relying on donations of food and dollar donations in order to survive during the holidays. Whatever you are able to give is better than choosing to do nothing, because the smallest act of kindness can go a long way in helping make a positive impact. With that in mind this month, the SPCA of Delaware is asking for a donation of just ten dollars to help a pet at the shelter have a better holiday. To find out more about this campaign see the SPCA ad in this month’s issue. If you are feeling really generous, I can assure you that you won’t have any trouble within the state in which you live finding organizations in need of your help not just during the holidays but all year long. Enjoy the holidays, guiltlessly indulge a little, but remember the New Year will quickly follow, and with the New Year, those dreaded resolutions. Which by the way are ridiculous because if you continue to make the same resolution year after year than some things is not right? Either you need a new resolution or you once and for all need to figure out how to succeed in accomplishing the one that you keep. In this issue of LWM you will find more, great gift ideas centering on holiday celebrations and festivities, holiday foods, last minute gifts, stocking stuffers and exceptional wines, beers and spirits. FYI FDA Approves Fast-Growing Genetically Engineered Salmon

As Adults we all have a few phobias that we can’t get a grasp on. But we are not alone.Below are some common and uncommon phobias. A great conversation starter when you are at a party. Based on sound science and a comprehensive review, the U.S. Food and Drug Administration is taking several important steps regarding food from genetically engineered (GE) animals, including the first approval for a genetically engineered animal intended for food. The FDA has approved AquaBounty Technologies’ application for AquAdvantage Salmon, an Atlantic salmon that reaches market size more quickly than non-GE farm-raised Atlantic salmon. The FDA regulates GE animals under the new animal drug provisions of the Federal Food, Drug, and Cosmetic Act, because the recombinant DNA (rDNA) construct introduced into the animal meets the definition of a drug. In this case, the rDNA construct introduces a trait that makes the AquAdvantage Salmon grow faster. “The FDA has thoroughly analyzed and evaluated the data and information submitted by AquaBounty Technologies regarding AquAdvantage Salmon and determined that they have met the regulatory requirements for approval, including that food from the fish is safe to eat,” said Bernadette Dunham, D.V.M., Ph.D., director of the FDA’s Center for Veterinary Medicine. A Statement from CSPI The Center for Science in the Public Interest a nonprofit health advocacy group based in Washington, DC, that focuses on nutrition and food safety policies. Today’s decision is an important test of the regulatory framework governing the food and environmental safety of genetically engineered animals and crops. We agree with the Food and Drug Administration’s assessment that the AquAdvantage salmon is safe to eat and is nutritionally equivalent to non-genetically engineered salmon. , its impact on American consumers will be negligible. It will take months for AquaBounty to produce and export GE salmon for consumers to purchase. When they are at full capacity, the volume of imported GE salmon will be merely a “drop in the bucket” of salmon purchased on a yearly basis.

New Age Cutting Edge Solar Technology

Many people still consider environmentalists’ favorite black panels as the cutting edge of renewable energy. However, the burgeoning solar industry has spent the last four decades refining these original photovoltaic panels, giving way to an entirely new generation of solar technology. Most of us could hardly recognize some of the new solar collectors. Researchers at Michigan State University specifically responded to the aesthetic critics of solar panels by creating transparent solar cells. Well, not totally transparent--they actually have thin strips of traditional solar panels to convert the infrared light being reflected by the entire panel. This technology could effectively turn any sheet of glass into a solar energy producer, from the windows of your office building to the screen of your cell phone. This could spell the end for space-intensive solar plants. Currently the cells cannot convert light into electricity at efficient enough levels to be productive, but researchers hope to achieve efficiency closer to that of existing photovoltaic panels in coming years. Though less effective than older technology, the sheer scale of utility of the new model makes it a much more substantial potential energy source. Beyond the collection of solar energy, storage continues to be a problem. Modern batteries are typically inefficient and expensive, making solar energy only useful during daylight hours. Researchers at Ohio State University are working to solve this problem and recently debuted a photovoltaic panel with a built-in battery. If the new design is successful, fusing the battery and panel into one could be a game-changer. The design has already shown to make batteries 20 percent more efficient and 25 percent less expensive.

their patent-pending design—which combines a solar cell and a battery into a single device—now achieves a 20 percent energy savings over traditional lithium-iodine batteries. The 20 percent comes from sunlight, which is captured by a unique solar panel on top of the battery, explained Yiying Wu, professor of chemistry and biochemistry at Ohio State. Another area of solar innovation has been ingenuity of application. Thinking outside the box has helped establish potential ways to industrialize the production of solar energy without consuming an excessive amount of acreage in the process. The Dutch have already pioneered solar roadways, in which highways are lined with solar panels. This saves clearing more land and makes use of land that is otherwise entirely unproductive. Another effort to limit land use involves constructing solar plants in the 70 percent of the planet that is covered by water. Experiments have already begun in France, England, India and California. And while seemingly far-fetched, generating solar power from space is another area being examined. Satellites could capture significantly more sunlight than earthbound panels, as they could be positioned to collect solar radiation all the time. We are only at the beginning of the age of alternative renewable energy, and the next few years and decades will be an exciting time to follow the growth of solar power from a fringe sector to a dominant player in the global energy mix.

RECYCLING : Is it worth the cost and expense? Americans generate about 254 million tons of trash and recycle and compost about 87 million tons of this material, which adds up to a 34.3 percent national recycling rate.(Delaware approx 40%) Recycling and composting prevented the release of approximately 186 million metric tons of carbon dioxide in 2013, according to the U.S. Environmental Protection Agency, comparable to taking over 39 million cars off the road for a year. Aluminum cans are currently recycled more than any other beverage container in the U.S, which is good for business and the environment, says the Aluminum Association, because making a can from recycled aluminum saves not only aluminum but 92 percent of the energy required to make a new can. A 2015 analysis by the Aluminum Association and the Can Manufacturers Institute determined that if all of the aluminum cans in the U.S. were recycled, we could power four million homes and save $800 million per year. Aluminum cans are also the most valuable to recycling companies, with a value of $1,491 per ton compared to $385 per ton for PET plastic. “Cans are recycled at the highest rates, and drive recycling programs across the country because of the high value of aluminum compared to other packaging materials,” said Heidi Brock, President and CEO of the Aluminum Association. In recent years, however, recycling companies are struggling with higher processing costs, due in part to newer, larger recycling bins that don’t require user sorting and thus become increasingly contaminated with garbage. When the District of Columbia replaced residents’ 32-gallon bins with ones that were 50 percent larger last year, the extensive amount of non-recyclable material put into the bins drove up the city’s processing cost for recyclables and cut profits from selling recyclables by more than 50 percent. “Our biggest concern and our biggest challenge today is municipal solid waste and contamination in our inbound stream,” James

Delvin, CEO of ReCommunity Recycling, which operates 31 facilities in 14 states, told Green is Good Radio. “It’s an economic issue if you think about we go through all this effort to process this material, and roughly 15 to 20 percent of what we process ends up going back to the landfill. It’s incredibly inefficient to do that.” In a 2014 survey by the National Waste and Recycling Association, nearly one in 10 Americans admitted to throwing their waste in recycling bins when trash cans were full; one in five said they will place an item in a recycling container even if they are not completely sure it is recyclable. “People refer to this as ‘wishful recycling,’ that’s just when in doubt, put this in the bin because there’s an outside chance they might be able to recycle it,” Delvin notes. “So you see Styrofoam. You see PVC. You see batteries and those types of things….” This mixing of waste with recyclables, he says, makes it very difficult to extract the true recyclable commodities that are there that have value. Improved education regarding the proper materials to recycle is needed to allow recycling plants to remain economically feasible. The pros and cons of recycling are heavily debated, but there’s never an argument over the environmental benefits of limiting disposable packaging and utilizing more durable reusable goods, like shopping bags, coffee thermoses and water bottles, to name a few, in daily life.

Celebrate Connections By Karen Verna Carlson

C

Allow Lots of Time

onnections—family intimacy, neighborly goodwill, romantic love—are the common theme of this season’s holidays whatever the form or foundations of your observances. A genuine connection enriches both giver and receiver. These long, cold, dark nights dance along with warmth and light from personal connections. That being the main point of parties and gifts, I often find myself losing sight of it. Where does my focus go? Scattered, Buried, Drained, Misplaced It gets scattered by an overly full schedule—too many commitments or a bottleneck of activities without enough interim time to savor and celebrate every connection that’s important to me. My focus on personal connection gets buried under a worrying frame of mind about selecting just the right gift, the best gift, the guaranteed-to-knock-your-socks-off gift. Or it gets drained in traffic jams and lengthy queues because I’ve put myself in a time bind. Or my focus becomes misplaced to making a fashion statement. Or it gets interrupted by treacherous road conditions. Or my focus on connecting genuinely with the people I care about gets weighed down with financial considerations. Or it’s dissipated by an unwieldy long card or gift list. 12

I keep personal connection my highest priority by using what I call a blessing strategy. For me to bless a person or event is to muster a whole lot of special good will. I channel or radiate those warm feelings toward them as I’m preparing food or gifts, writing cards or getting dressed for their party. Even waiting in line at the register with a gift, I appropriately exude holiday pleasantries, connecting to others who are seeking connections with their family, friends and neighbors. Time is a key ingredient here. Generous amounts of it allotted for every task as well as the transitions in between. Tune In Ample time gives me the opportunity to quiet myself and tune in to a personal connection with someone using my conscious awareness. I reflect on which of my needs are fulfilled by that relationship. That is the essence of our connections. They fulfill one or more of our needs. Quiet time is time spent in grateful communion with that person’s qualities that satisfy my needs. Turn off your cell phone for the whole morning, afternoon or evening in favor of focusing on personal connections, and I guarantee a quantum leap of joyful holiday experiences. Add Some Flair The concept of blessing each personal connection has for me a certain artistry, a magical flair. Tilting the postage stamp, dabbing a little glitter, doodling some hearts and stars on the envelope inspires smiling thoughts that connect me to the recipient while I’m creating it. Colored pencils/pens help convey specialness. Those personal touches elicit a glow from the reader, and I think from my mailman Dan when he takes them from my box. Maybe the delivering mail person also experiences a tender moment. Time represents thoughtfulness. Use Natural Elements Your food contribution to a party as well as wrappings for gifts offer further opportunities to experience and express special connection. Snip a small sprig of evergreen from your backyard or fireplace mantel. Dab with a sparkle of gold or silver glitter glue and add to food platter or gift bow. Anything natural— twigs, stones, snippets from houseplants, textural fabrics—can add sparkle to personal connections. Gold and silver glitter glue are so convenient! They make the best enhancements for every expression of personal connection. “Everybody can love in the place where they are. We can all add our share of love without leaving the room,” wrote the late Helen Nearing, who with her husband Scott lived long and well as Thoreau inspired back-to-the-landers. Promote Attention Respect and even reverence are inherent in my expression of blessing. This is not about religion. The Japanese philosophy “wabi-sabi” celebrates mundane things for the spirit of their makers such as your child’s lumpy pottery, a handknit scarf, a bouquet of homegrown flowers. Robyn Griggs Lawrence described wabi-sabi in Mother Earth News, February/ March 2011, as “a philosophy that promotes attention, generosity, respect and reverence.” Aren’t these the elements of genuine interpersonal connection we aspire to foster during these holidays?

What abides are the memories of being loved. These precious recollections are the ones that we tuck away in the treasure box of our minds. We hang on to the times when we were made to feel special. Give Caring Warmth “Consider your own memories. Which are the sweetest? Chances are they have little to do with things unless those things were genuine symbols of true caring. It’s much more likely that they had to do with a special nickname, a shared secret, a time when a person was truly there for you. Our favorite Christmas memories are rarely about the things we received, but the warmth of caring behind the giving. The Great Beanie Baby Bubble: Mass Delusion and the Dark Side of Cute Written by Zac Bissonnette

If you had met Ty Warner in school, you might have voted him Least Likely to Have Any Friends and Least Like to Succeed. At a reunion, you would have discovered you were half right: not many people liked the man, but he was a billionaire. Ty Warner was the creator of Beanie Babies. The mass hysteria and the fortunes made and lost behind the Beanie Babies is a combination of unique strategies and dumb luck. Sadly, this fever-pitched need for a tiny stuffed animal is also a dark story of turmoil, chaos and greed. What made people willing to pay thousands for a $5 bean bag? Why was there such a collective and fervent belief that these toys would accrue in value? Background: Like many adults who suffered through a challenging and horrible childhood, Ty Warner found early success in an arena where he could capture the love and security that he lacked in his youth – the world of plush. Ty was a very successful salesman of stuffed animals. His real success, however, came with an obsession to create his own plush; something small, cute and unique. Ty’s first venture into entrepreneurship was Kashmir, a Himalayan cat, first in the line of under-stuffed toys. It was soft, a bit floppy, and could be posed; rare in the world of plush where animals were stuffed until they were hard. Kashmir became a cat of different colors and different names, all bearing a heart-shaped Ty tag. Obsessed with design, always seeking the right expressions, colors, shapes, and forever developing something new, Ty finally created Beanie Babies. They arrived with cute names, personalities, poems and birthdays. Beanies were further nourished by Ty’s own approach to product development. He changed his products frequently, bringing in 14

new Beanies and “retiring” older ones, thus making the search and demand more fervent. If someone called or went to a website, it was one of the Beanies who spoke or appeared on the screen, thus making them real. Finally, Ty never sold to large warehouse toy stores. He sold to select souvenir shops, mom-and-pop stores, and small gift shops, making the hunt just a little more intriguing. The Fever: Ironically, in the beginning, there wasn’t a hunt at all; Beanies were still viewed as a child’s toy or something cute for the girlfriend. Sales everywhere were somewhat lackluster. It wasn’t until two suburban housewives from Chicago decided that Beanie Babies were the next Big Thing that sales and opinions changed. Two gals bearing the new title of “soccer moms” and with time on their hands saw Beanie Babies in a local shop, became enamored, and started collecting them with their daughters. They spread the word, lassoing in neighbors, children, and friends, making long-distance calls to those who hadn’t heard about these toys. The ripple effect began. In the mid 1990s, a woman who was a compulsive collector by nature began paying attention to the term, “retired” and changes that were being made in the Beanies. She roped a girlfriend into the collecting craze. A gift shop began making a list of current and retired Beanies, making people more aware that these might someday be “collectibles.” Beanies went to trade shows, and the plastic protectors for the heart-shaped tags were added, and then the Plexiglas boxes to keep them clean became the rage. And finally, these small, cute, cuddly toys were whisked out of the hands of children as adults began a greed-fueled lust for an object they thought was going to make their fortune down the road and become “valuable some day.”

As the author notes: “All speculative manias rely on selfproclaimed and media-anointed soothsayers for amplification, and Beanie Babies were no different.” Add to the mix the people who began self-publishing their “value guides,” listing Beanies and their monetary worth that reinforced the notion that Beanie Babies were a source for speculation. It was powerful fiction. People who got in and got out of the Beanie Baby craze made their money; those in sales, gift shops and trade shows made their money. By June of 1998, the royal blue and rare Peanut the Elephant was selling for $5,200, and Ty’s sales came in at $ 1,348,418,778. Read that as one billion. By 1999, however, the mood was starting to change. The Fall: Ty retired, in one fell swoop, 26 Beanie Babies. For those who had once been driven by panic and the need to have them all, this was just too much of a leap and effort. Furthermore, E-Bay had become a marketing force and allowed people greater ease in collecting. The market was more transparent now, and all those published values had lost their impact. Finally, Beanies were everywhere; the market was saturated and people realized that their dream of Beanies as a long-term investment was beginning to unravel. The Deception: If you believe that Ty Warner was the only one in America to fuel a collectible frenzy then recall the story of Joseph Segal, who in the 1960s had this business premise: “Manufacture something of little intrinsic value, and then through hype, marketing, and sometimes outright misrepresentation, persuade people to believe that the trinket is actually a precious heirloom.” Joseph Segal began the National Commemorative Society, later renamed The Franklin Mint; it was never associated with anything or anyone important in spite of its prestigious name. It was merely a business.

Please note the number of bids and how many sellers would prefer that you “buy now.” Maybe you check out your Beanies too. One final note: Ty Warner, a college dropout, has avoided jail for tax evasion and at 71, is worth over 2 billion dollars. He’s still making money with plush that is manufactured in foreign countries. He is very generous to numerous charities. The Truth: Why would I write this book summary and tell this tale in December? Because all the thrills of holiday shopping are upon us, and we just might believe there is something else out there that will be the next Big Thing. I ask you to pause. Enjoy your collections and collecting, but buy something because you love it, because it speaks to you, or because you think it will bring joy to someone else. Enjoy the fun, the hunt, and the beauty. Let it tickle your fancy, delight your eye, and bring a song to your heart. But be aware that if you are buying something that is massed produced that has the word “collectible” or “collectable” stamped on it, maybe it isn’t. If you’ve kept it in the box, believing it will accrue in value, maybe it won’t. Love your Beanies. Love the plates, coins, trucks, dolls, the miniature shoes and plastic heroes; just don’t believe they’ll make your future or your fortune. And if it’s a toy, maybe take it out of the box…and play.

“I want my life to have purpose. I want to make a contribution.” The Tyranny of the One Big Thing

This profoundly simple declaration of desire – which I’ve heard countless times, from countless numbers of people - is at the core of what it means to be human. We are called to live uniquely authentic and generous individual lives in creative contribution to the Whole. We feel most alive when we are at home in our own skin, expressing and sharing our talents in ways that feed our soul and elevate others.

Yet this fundamental aspect of our nature can be easily distorted when we interpret it through the lens of “importance,” which we’ve come to define in our culture as having widespread and measurable results in the external reality we observe through our five senses. We equate purposeful with “big.” We equate purposeful with “public.” We equate purposeful with “single” – as in doing one, big, highly recognizable “thing” that helps large numbers of people. People that can be counted, of course, so we can prove that the impact has been a large one.

I call this “the tyranny of the one big thing,” and I’ve witnessed its diminishing effects on immensely gifted, sincere and openhearted people who see themselves as falling short of this noble goal, even as they’re living generous and meaningful lives. They’re certain they’re falling short of their true potential. Let me share a secret with you: we’re all falling short of our potential - even the people we think are living hugely purposeful and successful lives - because our potential continues to expand as we grow and evolve. Potential is limitless. We’ll never live up to our potential; the bar is continually being raised. And that’s a good thing. Because while we can’t live up to our potential, we can live into it. Our ever-expanding potential is what 16

pulls or calls us forward. That’s why the desire to grow and serve is often referred to as a calling. Yet here again, the word “calling” conveys singularity, as if there is just one aspect of our potential - one talent or vision or accomplishment – that defines our meaningful contribution. We conclude that Mozart and Martha Graham and Mahatma Gandhi had callings but, unless we can identify a similarly sweeping, singular talent or passion within us, we don’t. And so we’re left feeling somehow “less than” and resigned to an ordinary life. We feel unimportant. We feel there is something wrong with us. We’ve become tyrannized by the notion of the “one big thing.” Thankfully, there’s a new paradigm in town, and I’m happy to report that it’s far more generous, valid and expansive than the “one big thing” paradigm that has left many of us feeling disempowered. I call it the paradigm of Presence, because it recognizes that our most impactful, uplifting and sustainable contributions don’t flow directly from our actions. They flow from our state of being. When we are grounded, centered and peaceful…when we are inspired and enthusiastic…when we are contemplative and kind…when we are filled with joy…when we are open-hearted and open-minded…when we are lost in reverie or lost in play or happily pursuing a hobby we love…our very presence – our state of being, our vibration – is coherent and clear and naturally harmonious with others. It is innately uplifting. It elevates the field of human consciousness, which positively affects everyone in the field.

Talk about making a widespread contribution. Our very Presence, when our minds and hearts are aligned and at peace, uplifts humanity. This doesn’t mean we abandon our visions for ending world hunger or saving the rainforests or starting our own company, if those visions arise from that place of inner alignment. It means we’re not “less than” if we don’t have that kind of singular vision or passion. It means that perhaps we’re contributing in ways that can’t be measured, but can be deeply felt. It means that we’re living our calling in any moment that we make conscious, loving choices from our highest self.

some of the cells. Sometimes your veterinarian may want to biopsy the lesion. In both cases an experienced veterinary pathologist will assess the sample and give their impression and recommendations. As most of us know the treatment for cancer in our society is chemotherapy and /or radiation. Unfortunately, this treatment not only kills the cancer cells, but it kills the normal cells as well. Additionally, many of the protocols utilized today are the same as they were 28 years ago when I was in Veterinary school. In my opinion, alternative treatment modalities should be researched. There are many ways to treat and manage cancer that do not involve chemotherapy and radiation. Most of these modalities have little to no adverse side effects. There is no vomiting, nausea, anemia or decreased white blood cells, (which are needed to fight disease). There is no hair loss, fatigue or weakness. My major treatment of cancers involves the use of ascorbate, otherwise known as Vitamin C. This treatment allows the organs and tissues to be saturated with vitamin C when it is given intravenously into a vein. Taking vitamin C by mouth will never get it to therapeutic levels. Obviously, this requires a half day hospitalization and experienced, qualified professionals. The mechanism works because Vitamin C (ascorbate) has a chemical structure very similar to sugar. Sugars (carbohydrates) feed cancers, therefore, the ascorbate is readily taken up by the cancer cells and organs. Through an enzymatic process it is converted to hydrogen peroxide and kills the abnormal cells leaving the healthy ones alone. I have been doing this treatment for 15 years and find that most cancers are kept in check through intravenous Vitamin C and various Chinese and western herbs specific for that cancer. The most important thing here is that your pet will still have a good quality of life without the side effects of some other treatments. It has been shown in the laboratory that Vitamin C is toxic to cancer cells. My protocol involves numerous treatments followed by a maintenance treatment every 8 weeks. There are numerous cases in human medicine that have responded positively with intravenous Vitamin C. The most important fact to remember about

this article is that the treatment has to be given into a vein, not into the mouth. This is a very important distinction. Oral Vitamin C will not get the job done. In my opinion, the reason we do not have more information about these holistic modalities is because a vitamin cannot be patented. If a drug company cannot patent its drugs they make no money and that is the bottom line. They will not support something like intravenous ascorbate because they will not make money if we know how to manage cancers and put them into remission. If we can send a spaceship to the outer reaches of our solar system, why can we not “cure” cancer. I feel it’s because an entire industry will fade away. No money will be made by the drug companies because the chemo drugs will have no purpose and jobs will be lost. Any business associated with that form of treatment will be affected. Instead, I recommend that the public ask for, no, insist that other treatments be investigated that do NOT HARM to the patient (be they human or animal). How about we try preventative medicine and try to keep our patients healthy instead of making them feel sick with treatments that have been used the past 30 years. Take a look at any drug advertized on the television. You might be watching a family having fun in the park, while at the same time hearing side effects that could include stroke, kidney failure, vomiting, diarrhea, and yes, even death. You won’t find me taking any drug that could potentially kill me, no matter what the benefit of that medication is. Remember, investigate your options, look for alternative treatments. Find a holistic veterinarian that can help your pet, not make it feel sicker from side effects.

Treating Colds with Acupuncture By Dr. Kelly Brown

Cold and flu season has arrived. Sore throat, coughing, runny nose, and many other symptoms are becoming apparent throughout the region. Those who get frequent colds are trying to prepare for the season with medications, vitamin C, and various other methods to prevent illness. Invariably, the folks who regularly get colds, will be sick at some point this season. Defense with Chinese Medicine In Chinese medicine, there are many different types of Qi (chee), or energy of the body, that promote proper function and wellness. One type is called Wei Qi, or defensive Qi. This is mainly a protective layer at the skin surface that blocks and fights illness. At the beginning of sickness, sweating, chills, and fever are aspects of the Wei Qi’s protection. When this shield is lacking, cold and illness invades. Acupuncture can help boost the defenses and prevent sickness, or limit the length of an already existing infection. The kidneys, in Chinese medicine, store all of the Qi in the body. This includes what is innate (inborn) and what is formed after birth. The spleen/pancreas and lungs form the Qi after being born, with air breathed as well as food and drink that is consumed. If the spleen or lungs are not functioning at full capacity, Qi is not plentiful and the Wei will be unable to fulfill its role of protecting the body. These organs are generally strong at birth and, with age, their power decreases and they require assistance. A person who has frequent illness, is said to have a deficiency in one of these organs. Acupuncture is able to promote strength of all organs and will help keep the body protected. Protection Begins in the Lungs The lungs are the uppermost organ in Chinese medicine and are often the first affected during a cold. They also control the exterior of the body and provide it with defensive Qi. The lung controls respiration and the beginning of this tract is at the nose. It is easy to see the nose and lungs both being affected when someone is suffering from the common cold. Acupuncture treatment at the beginning of a cold will help to reduce the length of the cold, improve breathing, and minimize the symptoms of a cold. Points located on the face, chest, arms, and legs will help to promote 22

defensive Qi and prevent worsening of the illness. Fluid Movement and Health The lungs bring in air and promote proper water flow throughout the body. The spleen is in the middle of this water movement. If the spleen is weak because of poor food and drink intake, for instance, fluid metabolism slows. When this occurs, phlegm can begin to form. The spleen forms phlegm and the lung is the container where it is stored. Coughing up mucus is an illustration of improper liquid movement or a weak spleen/pancreas. If the lungs are holding phlegm, it is easier for sickness to move in because the defensive Qi is weak. Acupuncture promotes proper water movement and strengthening the system to protect against colds. Inherent Protection from Illness The kidneys are also important with fluid metabolism with sending waste to the bladder. Proper kidney function promotes correct water flow. The kidneys are the source of original and stored Qi, and therefore are important in maintaining defensive Qi. The three of these organs need to perform well to defend the body. Acupuncture is effective at supporting these organs, helping Qi formation, and decreasing illness. Acupuncture for Wellness There are many factors to account for in Chinese medicine to promote wellness. From the editors: Once Brian and I hit fifty years old (almost simultaneously), our bodies seemed to immediately correspond with our age. Age has also become a contributing factor to the onset of what would soon become many sleepless nights, a result of multiple aches and pains that seemed to appear almost overnight. Recently, we received a mysterious box sitting on the front stoop of our home. The box was tall but relatively narrow, stamped with the Brooklyn Bedding logo on the outside of the box. Because of the size of the box, it was hard to determine what could possibly reside within the box. We both agreed that it was impossible that it could actually be a mattress. Whatever was in the box felt pretty heavy once we decided to bring it inside still pondering for a long time as to what it could be? Once it was inside, we decided that we shouldn’t open it until we were ready to actually deal with the contents of the box and allowed it to sit unscathed overnight. The next day we decided that we could not wait a moment longer and together tore open the top of the box only to find that the box did actually contain a mattress. At that very moment, we had independently decided that it had to be a twin size mattress and almost immediately said it at the same time, because it seemed to us impossible to have fit a king size mattress, (the size we needed) into a box this size. Much to our surprise it was a brand new king size mattress from Brooklyn Bedding to review for the holiday issue of LWM. We quickly disassembled the bed and removed our old mattress in the event that it had anything to do with our sleepless nights. Many thanks to Brooklyn Bedding for our brand new mattress!! Many of our aches and pains were quickly remedied making for a much better night sleep. Unfortunately, our Great Danes, Calvin, and Millie love the way the new mattress feels and rather than sleeping on the sofa in our bedroom, (put there with them in mind). Neither one of them is willing to move during the night, just snoring away deep in REM sleep sideways, upside down and in any other position that works for them. So now our sleepless nights continue; but not because of the comfort level of the mattress, rather because the mattress is too comfortable and no one wants to move‌LoL. STAY ON TOP OF YOUR GAME!

After a Killer workout chances are walking up a flight of stairs or even lifting your arms are unbearable tasks. Instead of just giving up realizing that it is normal to feel sore for the next few days and having a better understanding of where and why your muscle are sore will increase your chances of continuing and achieving the results you want. This soreness is referred to as delayed onset muscle soreness or DOMS. During your workout your muscles experience microtears; these micro tears cause an inflammatory response that activates the immune system to rush in and repair the damage, this causes swelling and fluid buildup in and around the muscles and this is what sends the message of pain to the brain.

DOMS should not derail your training; it is a positive sign that you have challenged your muscles in a way they aren’t accustomed to. So the good news is the recovery process that occurs within a muscle during this initial soreness helps to protect it from future soreness – so the more you workout the less it will hurt! Your muscles will become stronger and better to handle the force of killer workouts. BEFORE YOUR WORKOUT Fuel up with inflammation fighting foods. Eating foods that are high in antioxidants and essential fatty acids are not only good for a healthy heart but also has been shown in reducing inflammation. Protein protects the muscles from being broken down and can be used once your routine is complete to help start the repair process.

DURING YOUR WORKOUT

Slowly increase intensity. Easing into your workout will help protect against soreness. Lifting to much to soon can cause soreness from over training, which happens when your muscles don’t have adequate time to recover between workouts. Follow the 10% rule to stay on track (increase your weight or intensity 10% each week once you no longer feel challenged at your current level) Prepare for circuits. The ideal post workout regimen to reduce soreness and aid in recovery contains a ratio of 4 parts protein to 1 part carbohydrates. Proteins are important in helping repair muscle damage, decreasing soreness. On the other hand “GOOD” carbohydrates help the body better absorb protein. Lyme disease has ruined my life. I keep getting it over and over even though I have stopped hiking, my favorite thing to do, Not only am I getting out of shape and miserable, how many times can I take these harsh antibiotics, I am up to 6 times in 7 years?

A:

Lyme is frustrating, it is a fairly new ailment and the treatments are still developing. Interesting to observe so many patients and actually having had this disease myself, I have noticed and used a regime that seems to stop the cycle of antibiotics relief and within a year reoccurrence. It seems that many of the “new” episodes are not reinfections, they are actually episodes of Fascitis. The fascia becomes inflamed in systemic infections and gets bound. Since we are constituted of fascia and everything else is supported, connected by this tissue, when it is inflamed and bound we feel symptoms everywhere and is frequently mistaken as a reinfection because it feels like that and in fact there is a “recipe” or protocol I have found to be effective. First, take the doxycycline for a month as your doctor prescribes. This is the standard of practice and could be all your doctor may be allowed to offer besides other antibiotics. The patients I have noticed do not have to repeat the antibiotics, immediately follow up with herbs Chinese or Ayurvedic or both and Homeopathy. There is yet another phase that cannot be taken lightly. You will need myofascial release and you will know when and how much by your response to the fascial treatments. If your relief lasts 3 days get treated twice a week at first. Patient seem to respond quickly like this is just what you have craved. I have found a little goes a long way. Quickly to once a week every two weeks once a month and as you wish after a few months. The final phase ay be the hardest for most. NO sugar, gluten or dairy for quite some time as spirochetes thrive on diets rich in these foods. You must attend to the imbalance in the gut and use probiotics until the gut is healthy again.And maybe the most important step: Please

Are You Wasting Your Money On Broccoli? Eat your broccoli! We’ve heard this mantra since we were little sprouts ourselves, and perhaps chant it to our own children. “Eat the little trees,” we say, because broccoli is supposed to be one of the healthiest foods on Earth. It’s a green vegetable that’s full of fiber. But, are you wasting your hard-earned green buying it? Broccoli got its start in ancient Rome, and was developed from wild cabbage. From there, it made its way to the near east and the rest is history. In the U.S., we produce about 300,000 metric tons of the perky little plant. China grows an estimated 9.5 million metric tons—nearly 50 percent of the world’s production. So what do the Chinese know that we don’t? Or are they also wasting their money and throwing yuán down the cèsuŏ? As well as being fabulously high in health-promoting vitamin C, broccoli contains what most Americans fail to get enough of: FIBER! It even has more protein in a 100-calorie portion than steak. But what makes broccoli the real vegetable rock star that it is? Besides benefits to your brain, eyesight and stomach, protection from free radicals and aiding in detoxification, broccoli contains an ingredient that helps prevent and treat cancer. This all sounds great, but depending on how you prepare it, you may be throwing the anti-cancer benefits of broccoli away along with your cash! Sulforaphane is the active ingredient of broccoli which has been shown in research to affect and prevent cancer. This is the good news. 40

The bad news is that there is NO sulforaphane in broccoli. WHAT?? Broccoli has two separate substances: the enzyme myrosinase and the compound glucoraphanin. When these two ingredients are mixed together, sulforaphane is produced along with an antibiotic called raphanin. There is one big problem: myrosinase is destroyed by heating. This means that when you cook your favorite broccoli dish with all your good health-promoting intentions, you destroy the myrosinase resulting in no sulforaphane production and the loss of its anti-cancer benefits. Don’t worry, you can still have your broccoli and eat it too! There are several choices for creating a sulforaphane-rich meal. First, you can eat the broccoli raw. If this is not appetizing, chop or blend your broccoli and let it sit for about 40 minutes prior to cooking. This allows the sulforaphane-producing action of the precursors to do their work. What happens if you forgot to chop your broccoli, and dinner has to be made? How about just adding some myrosinase to the dish once finished? This works well if you work for a chemical company and can order a bottle of myrosinase to keep on the shelf. If you don’t, please don’t run down to the local super market and ask, “Which aisle is the myrosinase in?” Despite the perplexed look you’re likely to receive from the cashier, myrosinase exists in every super market across America. You just have to ask for the right product: mustard seed powder! The spice is loaded with the enzyme. Once the broccoli dish is ready to be eaten, sprinkle about ½ teaspoon of mustard powder on it.

Broccoli sprouts have the highest levels of sulforaphane (which peak when the sprouts are only two days old). Broccoli supplements do exist and offer some benefits, but were dramatically outperformed by the sprouts. The pills also cost significantly more. If you can stand the sight, smell and taste of broccoli and don’t want to fork out the bucks for supplements, other choices exist. Sulforaphane can also be obtained from other cruciferous vegetables such as Brussel sprouts, kale, collards and cauliflower.

The Struggle is

REAL

It has been a few weeks that the kids have been back at school and we, all 7 of us, are adjusting as best as we can. Of course the least favorite part of this adjustment is the earlier bedtimes that are then combined with the earlier wake up times. It would appear that all of my children inherited my dislike of the early morning hours and share in expressing those feelings most days. Such expression consists of the head buried under the covers accompanied by several grunts, moans, and a 15 minute get-outof-bed-even-though-I’d-rather-put-needles-through-my-eyeprocess. Painful. Very painful, and yet quite remarkable that at some point in time each one of them does get out of bed and make it down to the breakfast table with at least 4.28 minutes to spare before we are headed out the door. This, my friends, is what I call the Monday Morning Mad Maniac Rush. Only it happens on Tuesday mornings too. Oh, and Wednesday, and….well, you get the point. This past week there was a morning when it was even more difficult then usual. I was operating on about 3 hours sleep, struggling with a nasty head cold and feeling more exhausted then usual. When the alarm went off at 6:00am, I snoozed as many times as possible, which most certainly doesn’t help with the morning rush. 6:32am. Yikes! I am finally up. Ok, so here is the thing. Let me just come clean, be honest and share this with you. I am just not that Mom. You know, the Mom that gets up bright and early to meditate, take a brisk 3.5 mile run, enjoy a cup of herbal tea and then proceed to greet the smiling little ones with fresh made muffins and omelets. Truth be told, my reality is a bit more like this…”oh my gosh, guys, let’s go! Could you please get dressed, yes, you…pjs off and clothes on. All your clothes. No, you can’t wear the same underwear again…what? You did yesterday? Well that’s further reason why the answer is no and you must change your underwear. NOW.” Followed by a short 6 second pause… ”let’s go, guys, downstairs, table, breakfast, eat, now.” Have I mentioned that I am also not that great at forming complete sentences at this time of the morning? And this day as I blurted out these directives, I tripped down the last couple of steps while carrying the 3+ day old cup of tea that my husband left in our bathroom, which splattered all over the wall and in my hair. Few expletives muttered. Children remain oblivious. Awesome. Perceived success.

This is no longer the case, my friends, if you catch what I am dropping. No more. This struggle is real. I am seriously still in shock at how hard this mothering/parenting thing is, not to mention how hard this life thing can be too – but let me save that for another blog. Seriously, no joking here. These 5 little beings require A LOT. And they have no regards for what time of day it is, how many hours you have slept or the current caffeine level that is keeping you vertical as you attempt to form cohesive thoughts. Or do they? Back to just another mad manic morning rush…as we are going out the front door, my morning gets even better. As if that was possible. Yet again, I trip. Down the concrete steps, catching myself on the palm of right hand, spilling my cup o’caffeine down my shirt and scattering the contents of my purse on the front driveway. Expletives fly, children gasp and the tears stream down my cheeks. And then…this happens. My youngest son catches my lip gloss that is rolling into the street. My middle guy runs over to me to ask if I am hurt and then picks up my purse and starts filling it up. My oldest boy gathers the odds and ends, including my mug which is mostly empty and directs the younger ones to the car. My eldest, my first daughter, sits down on the step next to me and softly says…” It’s ok, Mom. We’ve got this, let’s go.” Wow; I am continually in awe that love, well, love always shows up. So, we are in the car now. On our way to school and in approximately 18.3 minutes, this struggle will be over; for today. We will remember, as best as we can, that the love will remain far longer than today, because the struggle may be real but our love will also be stronger. And that, my friends, is the truth on every manic morning and beyond. So regardless of a repetition the following day, or days or weeks or…well, whatever…regardless of the struggle; there is the best part too and that is the love. The love is real, and that’s all I need to know for today. Cause tomorrow, well, it will be real again too.

Serendipity’s Frozen Hot Chocolate Recipe

This is the original Serendipity frozen hot chocolate recipe. *(with one change.) 6 oz. chopped semisweet chocolate 3 cups whole milk, divided 1 Tbsp. plus 1 tsp. your favorite powdered hot chocolate mix 3 Tbsp. sugar 6 cups ice cubes top with whipped cream *Place chopped chocolate and 1/4 cup of the milk in a microwave-safe container. Heat on 50% power for one minute. Stir. (If necessary, continue heating in 30-second increments until chocolate is melted.) (Authentically, the melting process is done stove top) Add hot chocolate mix and sugar. Stir. Slowly pour in 1/2 cup of the milk. Stir, and let cool to room temperature. Pour cooled chocolate mixture into blender. Add remaining milk and ice cubes. Puree until smooth. Top with whipped cream and serve immediately. Makes 2 giant frozen hot chocolates.

Brian’s Potato Pancakes (Latkes)

10 large potatoes, peeled 2 large onions 1 carrot 6 eggs 2/3 cup flour or Matzoh Meal* 1/2tsp Baking powder salt & pepper to taste 1/2 cup oil for frying salt & pepper Grate the potatoes, onions and carrot in a food processor or in a blender .Strain through a colander, pressing out the excess water. Add eggs, flour*, salt and pepper to taste. Mix well. Use a 10” skillet Heat the oil in a skillet on medium heat. oil a 1/2 cup measuring cup. fill with batter and carefully drop batter into pan. you should be able to place 4 to 6 into the pan at a time. Cooking time is approximately three minutes per side, or until brown on each side. remove from pan and place on a plate lined with paper towels to remove excess oil. Repeat until batter is gone. Optional: Serve with applesauce, sour cream or jelly. Serves 6 to 8 people

Neiman Marcus Chocolate Chip Cookies

1/2 cup (1 stick) butter, softened 1 cup light brown sugar 3 tablespoons granulated sugar 1 large egg 2 teaspoons vanilla extract 1-3/4 cups all purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1-1/2 teaspoons instant espresso coffee powder 1-1/2 cups semi-sweet chocolate chips Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds) Beat in the egg and the vanilla extract for another 30 seconds. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie. Yields: 2 dozen cookies

Amaretto Cheesecake with Madeleine Crust 2/3 cup Sugar Bowl Bakery* Madeleine pieces, plus 6 whole cookies for garnish ¼ cup whole raw almonds 3 Tbsp. brown sugar 5 Tbsp. butter, melted 8 oz. cream cheese, softened ½ cup granulated sugar ½ tsp. almond extract ¼ tsp. salt 2 large eggs 3 tsp. amaretto liqueur (optional) Bittersweet chocolate, for garnish 1. Preheat oven to 375° F. 2. Place 2/3 cup Madeleine pieces, almonds, brown sugar and butter in a food processor and grind until fine. Pour crumb mixture into an 8” springform pan and press firmly onto the bottom and sides. 3. Place cream cheese and granulated sugar in a mixing bowl and beat until smooth. Beat in almond extract and salt. 4. Blend in eggs one at a time, on low speed. Stir in amaretto. 5. Pour batter into the crust. 6. Bake for 35-40 minutes, or until the filling is just set. Let cool to room temperature and then refrigerate until chilled. Makes 12 servings. Garnish: Take 6 Madeleine cookies and cut diagonally in half. Melt bittersweet chocolate. Dip the bottom of each cookie into melted chocolate, place on a tray lined with foil or waxed paper, and refrigerate until the chocolate hardens. Place a cookie, chocolate side down, on each piece of cheesecake. *Brands may vary by region; substitute a similar product.

Place up to 5 brownies, with the hole facing up, on a plate; heat on high in the microwave for approximately 10 seconds. 6. Remove to clean plates and split the brownies in half, allowing the chocolate to flow. Garnish with fresh fruit and confectioner’s sugar. Petite Palmier Napoleon ¾ cup heavy cream 3 Tbsp. sugar 3 ½ oz. (about 1 ½ cup) mascarpone cheese 1 Tbsp. vanilla extract 3 Sugar Bowl Bakery* Petite Palmiers 2 oz. bittersweet chocolate Sliced strawberries Mixed berries (optional) 1. In a medium bowl, whip cream and sugar until medium peaks form. Add mascarpone and vanilla and whip until firm. 2. Toast Petite Palmiers for 1 minute, or until crispy. 3. Melt chocolate in a bowl set over a pan of simmering water. 4. Drizzle the melted chocolate on a white plate. Lay 1 palmier on the chocolate; spread with half of mascarpone cream. Add a layer of sliced strawberries. Repeat for a second layer and top with palmier. Drizzle with melted chocolate. Garnish with strawberries and mixed berries (if desired).
