“Before I even got started with The Fresh Palate, I did cooking classes and worked with the Alpena Farmers Market doing chef demos. I wanted people here to see I could source meals from local farmers. So when I opened the restaurant, people already knew you could build a menu around what’s available in the area and make the area shine because of that. Now farmers come to me. Knowing I’ll do that, they reach out to me.”
Local food mission:
“We strive to source both our beer and food as locally as possible and keep part of our menu rotating depending on what’s available. We use the Michigan Hop Alliance, 45th Parallel Hops, Hophead Farm, Presque Isle Farm, Nowicki’s Meats, and Montmorency cherries from Traverse City.”
“I think we’ve changed the food system in northeast Michigan by making people aware and setting an example. Alpena and this region were locally sourced back in the day; farmers traded and e t st local, and that ot lled a a n the s and s when people went to packaged food. Restaurants need to take responsibility and work to get us back to where we were.”
“I think we made beer more accessible in Alpena by having food available with our beer at the restaurant. People try beer here that they wouldn’t necessarily try other places because with food options, people are more willing to leave their comfort zone. When they know it’s local, they’re even more willing to try new things.”
Favorite dish to make with local ingredients:
The 45’er IPA - it gets its name from being brewed on the 45th parallel. 45’er has hints of pear, grapefruit, tropical fruit lemon and 2.5 pounds of hops per barrel, most of them Michigan sourced.

And we loved the people here and knew this would be a great place to grow a small business. It does seem like more people are waking up to healthier choices. Preserving Farmland with FARMER-TO-FARMER
Written by: Sam Plotkin – Farm Programs Manager, Leelanau Conservancy The average age of farm operators in the United States is 58. In the next 20 years, an estimated 70 percent of privately owned agricultural land is expected to change hands in the US. Farmers in the Grand Traverse Region are not immune to this graying trend, as the average age of operators in this area ranges from about 55 in Kalkaska to nearly 60 in Manistee. Moreover, it is expected that around 83,000 acres of farmland in our region will change hands in coming years as well. The future of agriculture and the viability of rural communities in this region depends on the successful transition of agricultural land from current owner operators to the next generation of farmers. Farmer to Farmer (F2F) aims to address this need. F2F is a website serving the Grand Traverse Region that is designed to

connect farmland owners who wish to sell or lease farmland with farmland seekers looking to buy or lease farmland. This web-based tool will also link agricultural employers with job seekers. F2F is a free user-driven resource. Farmland owners, seekers, and employers ll create roďŹ les deta l n the r land, themselves and what they are looking for, or the available job opportunity. These roďŹ les com r se a searcha le data ase on the F2F website (eg. Craigslist or Zillow, except with an agricultural focus) available to all users. You might not see a garden shovel and think of a paintbrush. You might not see a blank, freshly stretched canvas and be reminded of an em t field, read for lant n t ma e you should. Looking at your farm through an artist’s lens requires something counter-intuitive to the Fortune 500 set: slowing down. Take time to see your farm “through the artist’s eye.” See the beauty in your farm, the colors of the plants, the sway of the leaves in the wind, the sound of the bees buzzing around the o ers, and o ll care more a o t the health of your crops, and in turn, run a more successful farm operation. Farmers who don’t think of themselves as artists, probably already care about art in ways they might not even realize. “Every farmer pays close attention to color,” Morningstar said. “Look through any seed catalog; that’s art.”

Penny Krebiehl, a self-proclaimed Art Farmer, is the fo nder and d rector of oo erat e, n Traverse City. In her farm, CSA doesn’t stand for Community Supported Agriculture—it stands for Community Supported Articulture. Krebiehl sees a direct connection between being an artist and being a farmer; both are essential acts of creation. “You start out with a few tools and a blank canvas or ece of a er, and o ot th s st sort of cooking in your mind,” she said. “And maybe it starts with a theme and from there a whole world unravels.” This world might be made up of paintbrushes and visions to paint on the canvas, or it might be a world made up of shovels and soils. For Krebiehl, the result is the same: happiness. “That’s when I’m happiest, when I’m right in the middle of this whole world that’s being created all around,” she said. From both farmers, the message for growers is clear: Don’t be afraid to get artsy. The intersection of art and farming may result in a better harvest, more ns red deas on and o the farm, and the o of creative movement.

Preheat oven to 350 degrees.
2. Mix cream cheese, eggs, pumpkin, honey, and spices until smooth. 3. Pour in graham cracker crust, or crust of your choice. 4. Bake for 45 minutes or until set. 5. Cool completely. Sprinkle with pumpkin pie spice and drizzle with honey.

Add the apple cider and simmer for 5 minutes, then add all other ingredients except the maple syrup. 5. The following day, remove meat from ra s n l d, heat the l d, and ree with an immersion blender. Add maple syrup. Check sauce consistency and seasoning. Simmer to reduce if needed.

Think Like a Chef, Cook like a Dietitian, Eat Like a Local Farmer Written by: Diane Conners – Senior Policy Specialist, Groundwork Center Doctors typically learn little about nutrition, much less cooking, in medical school. But combining those topics with medicine is a trend that’s garnering headlines for Harvard Medical School with a conference it holds in California wine country, and Tulane University with another event in food-rich New Orleans. Now Traverse City will launch a local version of this idea in the fall with a Culinary Medicine conference that will be a pilot for future programs. The theme: Think Like a Chef, Cook Like a Dietitian, Eat Like a Local Farmer. In addition to nutrition and culinary skills, physicians and other health professionals will learn about the numerous local farm and food resources they can share with their patients. Dr. James Fox, a cardiologist with Munson Healthcare, attended the California and New Orleans sessions and said that hands-on cooking helped him connect with his patients over favorite foods and recipes. “This type of personal connection helps patients feel more comfortable,” he said. “Having a rapport with them and their families frequently changes the physician-patient dynamic from an
authoritarian ‘let me tell you what to do’ to a artnersh of let s find a a to make your health better.’” Family-practice doctors and pediatric ans a l ated th nson are alread writing prescriptions for their patients to eat fruits and vegetables, providing them with coupons to purchase produce at local farmers markets—an idea showcased at a recent Farms, Food & Health conference in northern Michigan. Last year the program resulted in $10,000 of increased sales for local farmers. With Culinary Medicine education, doctors can also share “aha moments” when they learn how easy and delicious it is to make, for example, a kale salad. Add the buttermilk and gently stir until most of the buttermilk is absorbed, then pour the dough out onto a clean surface. Form a rectangle with the dough, and using a bench scraper or spatula, gently fold the rectangle in half. Using your hands, press the dough back into the rectangle and fold it again. Fold the dough about four times, or until it just holds together. Cut the biscuits using a biscuit cutter or a knife, being careful not to twist the cutter, and place on a baking sheet covered with parchment. Brush the top of each biscuit with buttermilk. Bake biscuits at 400 degrees for 12-15 min. Serve warm, with a little butter and plenty of local honey!

In this digital age, there is a real value in systems that require personal connection and collaboration. Within our local food system, chefs look to farmers for quality products and inspiration. While farmers are challenged to think outside the bounds of what commonly grows here to meet the needs and demand of a growing industry. Synergy is built by an interaction of two or more groups that res lts n a com ned e ect e n reater than the s m of the parts. We’re experiencing these incredible synergies between local agriculture and the food & beverage industry in Michigan today. Where each piece and each person drives, challenges and improves the other; with clear indication that working together builds something greater. For Nic Theisen at Loma Farm, the synergy between his farm and local restaurants is essential. “Our success is directly dependent on the success of the Traverse City culinary scene,” said Theisen. “The more creative and successful the eateries, the more creative and successful the farms. We push each other’s art.” With all the moving parts, challenges are to be expected. Haiku are preserved moments in time, often relating to an experience in nature. They are meant to be postage-stampsized fragments that force us to use the sparest and most evocative words possible. We should feel transported by each haiku to a place where the author’s emotions from that moment are shared with readers. These 10 poems represent the winners from more than 750 entries submitted during late fall 2016. Most follow the traditional form of 17 syllables on three lines; 5-7-5. Celebrating 10 Years of Michigan

The Michigan Farmers Market Association (MIFMA) is celebrating its 10th Birthday in 2017! The organization has grown remarkably over the last decade, advancing farmers markets to create a thriving marketplace for local food and farm products. MIFMA represents over 500 members, including more than 140 farmers markets and 220 farmers and food and agriculture-based businesses that sell at farmers markets. Thanks to MIFMA’s leadership, the past 10 years are marked with many accomplishments for the farmers market and local food community. The organization has helped propel Michigan to become a national leader in accepting Supplemental Nutrition Assistance Program (SNAP) Bridge Cards at farmers markets, creating a path for vulnerable families to access more nutritious foods. This past March, MIFMA continued to professionalize the role of market

managers by certifying 36 in Michigan and 17 in Indiana through its Market ana er ert ficate ro ram, h ch as the first of ts nd n the nat on h s cohort has increased the number of cert fied mar et mana ers from to 239 since the program’s inception in 2011. In 2017, MIFMA will also celebrate the six years that it has worked with partners to manage Hoophouses for Health, a program that provides farmers with new hoophouses through zero-interest, fi e ear loan that the a ac n produce to vulnerable families at farmers markets and through farm to school programs. Looking to the future, MIFMA will continue to seek ways to engage stakeholders in the development of opportunities to advance farmers markets in Michigan. One way that MIFMA does this is through strategic partnerships with like-minded

Every year, the Center for Native American Studies at Northern Michigan University hosts a First Nation’s Food Taster. This began Dr. Martin Reinhardt’s journey with the Decolonizing Diet Project. “The thought occurred to me: Would our ancestors recognize the foods we currently serve as Indian foods here on campus as foods they were familiar with?” Reinhardt said. “As I thought about that, I, at some point, turned that question around and asked myself: Would I be able to eat the foods that my ancestors ate then, today. How would I go about that?” From these questions, Reinhardt created a research project where 25 diverse participants ate only pre-colonial foods native to the Upper Peninsula for a year. “Squirrel, porcupine, pine bark, we had some usual things that we ate on the DDP.” But they also ate a lot of foods we are familiar with and eat regularly. “One of the things I experimented with early on was mixing ground bison and ground venison together,” Reinhardt said. “I was making meatloaf, and I didn’t have enough venison, and I didn’t have enough bison. So, I mixed them together, and it actually turned out really good. The tastes complemented each other.” Reinhardt also tried some things that
didn’t work out, like pasties and pizza. Without grains typically used today, the crusts are thick and dense. The participants of the Decolonized Diet Project worked with local farmers, ranchers, and retail stores that sell local foods and foods that fit th n the d et They remain in contact with the Marquette Food Co-op to work on increasing access to indigenous foods. Although no one is strictly adhering to the diet now that the project is complete, the project’s impact continues. Reinhardt has helped launch other indigenous food projects and continues to host harvest walks, cooking demonstrations, and he works with gardens in the community. “I think part of the inaccessibility is people just are not familiar with indigenous foods. I think they only know them from Thanksgiving. That’s not real deep knowledge about indigenous foods,” he said. Another challenge with the decolonized diet was the limitation of a narrow native food spectrum in the Upper Peninsula. Participants had to work with what is natively in the U.P. “We had to increase the depth by eating th n s d erent a s t reall ca sed s, I think, to become gourmet. We experimented and maximized our food variety and taste,” he said.

Becoming USDA Certified Organic:
First, a farm must follow organic practices, such as crop rotation and maintaining soil fertility, to preserve biodiversity and ecological balance in the region, often for a period of three years. Second, the farm must submit the application and fee to one of the 80 certifying agents. Third, an inspector must come to the farm and survey its operation to determine if it follows all organic regulations. To maintain organic certification, the inspection and review must happen annually. A farm must be certified organic to claim that its products are organic. Did you know that we have two brains (one in our head, and one in our gut!)? Or, that these two brains “talk” to each other? Our brains and guts are closely connected to each other via the vagus nerve. This nerve runs from our brain stem to our abdomen and allows for two-way communication between the brain and the gut. What comes to mind when you hear the words “food pantry”? A small room with dusty, past-date cans and bags of food? If so, you wouldn’t be alone. Many well-intentioned organizations and individuals make a yearly ritual of clearing out their home pantries and generously donating the dust-covered, long-forgotten cans of products purchased for meals or recipes that never were. o ta e a moment to ma ne hat a antr filled th d st , random, canned food products high in sodium, sugar, and fat would mean for a family visiting that pantry to put food on their table in a time of crisis. As a FoodCorps service member in northwest Michigan from 2013 to 2015, I often encountered children who saw their local food pantry as “the place where we go to get food.” For years, global research has shown that health and poverty are inextricably linked; that’s no surprise for anyone who has worked with individuals experiencing poverty. Access to fresh, healthful foods in low-income communities can be dismal, and too often, the local food pantry is no exception. A 2012 Gallup re ort fo nd that mer cans n o ert are more l el to s er from diet-related diseases such as diabetes, high blood ress re, heart d sease, and o es t than the r more ell o counterparts. Luckily the notion that all food pantries are small rooms with dusty, past-date cans and bags of food is largely out-dated, not to ment on o ens e to the or an at ons and nd d als that are working every day to ensure that all families in need of assistance are able to provide the best possible food to support their family’s long-term health. One solution to this issue is to reconceptualize the idea of food drives. Instead of using that annual food drive to clean out your pantry, donate newly purchased canned goods (preferably low in sodium, sugar and fat). Or better yet, just donate cash so pantries and meal sites are better equipped to stock their pantries with consistent, calorie-dense, healthful foods.
