ALPENA:

Sunrise Side Seasonal Sustenance Written by: Molly Stepanski – TLD Local Food Coordinator Northeast Michigan history conjures up images of sailors, hunters, ranchers, farmers, and homesteaders—people undaunted by the elements. That vision isn’t too far from the present on the “Sunrise Side.” The region still e o es not ons of ce fish n on ntr moon l e la es, fish n on pristine rivers, buck-poles inscribed with hunters’ accolades, eerie and awe-inspiring shipwrecks, brawny lumberjack competitions, world-class towering lighthouses, and wineries and breweries galore. The region’s proud tradition of family farms and farmers markets has kept growers and neighbors supplied with fresh, seasonal

produce for generations. No doubt, this region has a generous bounty to o er Yet this part of the state has lar el mana ed to sta o the radar and keep its gems to itself. Local food mission:

“Before I even got started with The Fresh Palate, I did cooking classes and worked with the Alpena Farmers Market doing chef demos. I wanted people here to see I could source meals from local farmers. So when I opened the restaurant, people already knew you could build a menu around what’s available in the area and make the area shine because of that. Now farmers come to me. Knowing I’ll do that, they reach out to me.”

Local food mission:

“We strive to source both our beer and food as locally as possible and keep part of our menu rotating depending on what’s available. We use the Michigan Hop Alliance, 45th Parallel Hops, Hophead Farm, Presque Isle Farm, Nowicki’s Meats, and Montmorency cherries from Traverse City.”

“I think we’ve changed the food system in northeast Michigan by making people aware and setting an example. Alpena and this region were locally sourced back in the day; farmers traded and e t st local, and that ot lled a a n the s and s when people went to packaged food. Restaurants need to take responsibility and work to get us back to where we were.”

“I think we made beer more accessible in Alpena by having food available with our beer at the restaurant. People try beer here that they wouldn’t necessarily try other places because with food options, people are more willing to leave their comfort zone. When they know it’s local, they’re even more willing to try new things.”

Favorite dish to make with local ingredients:

The 45’er IPA - it gets its name from being brewed on the 45th parallel. 45’er has hints of pear, grapefruit, tropical fruit lemon and 2.5 pounds of hops per barrel, most of them Michigan sourced.

Interview with co-owner Jeremy Sahr Vineyard in 2002, winery in 2012

Local food mission:

“Our real business plan is to make the best quality product that we can with primarily locally sourced fruit and to make people happy. We looked all around Michigan and moved here from do nstate to lant the ne ard th n th s s ec fic re on s topography; the geological surveys showed a lot of promise for grapes here. And we loved the people here and knew this would be a great place to grow a small business. It does seem like more people are waking up to healthier choices. It makes a d erence to ro and local eo le no the can find that at Thunder Bay.”

Favorite wine to make with local ingredients:

Interview with co-owner Dion Stepanski Spring 2015

Local food mission:

“Our mission is to keep food as close to home as possible and support our health system with that fresh food. We want to set the stage for even more local farms to supply our communities and ro de etter access to health er and more a orf l options for everyone. We want to contribute to creating stronger small businesses in our area, and ultimately a more sustainable local econom e e hel ed enco ra e the dea of ro n for three or even four seasons in northern Michigan with the use of hoophouses. Our connections with local restaurants, schools, and grocers are helping set the foundation for other local foods to penetrate those markets as well.”

Favorite dish to make with local ingredients:

Creamy tomato basil soup (with fresh tomatoes, cream, veggie stock, salt, pepper, basil, and a bit of honey).

Preserving Farmland with FARMER-TO-FARMER

Written by: Sam Plotkin – Farm Programs Manager, Leelanau Conservancy The average age of farm operators in the United States is 58. In the next 20 years, an estimated 70 percent of privately owned agricultural land is expected to change hands in the US. Farmers in the Grand Traverse Region are not immune to this graying trend, as the average age of operators in this area ranges from about 55 in Kalkaska to nearly 60 in Manistee. Moreover, it is expected that around 83,000 acres of farmland in our region will change hands in coming years as well. The future of agriculture and the viability of rural communities in this region depends on the successful transition of agricultural land from current owner operators to the next generation of farmers. Farmer to Farmer (F2F) aims to address this need. F2F is a website serving the Grand Traverse Region that is designed to

16

TLD_2017-NS.indd 16

connect farmland owners who wish to sell or lease farmland with farmland seekers looking to buy or lease farmland. This web-based tool will also link agricultural employers with job seekers. F2F is a free user-driven resource. Farmland owners, seekers, and employers ll create roďŹ les deta l n the r land, themselves and what they are looking for, or the available job opportunity. These roďŹ les com r se a searcha le data ase on the F2F website (eg. Craigslist or Zillow, except with an agricultural focus) available to all users. F2F will launch this spring, and is a collaborative project between the Leelanau Conservancy, Grand Traverse Regional Land Conservancy, MSU Horticultural Research Station, and aste the ocal erence

DEDICATED TO THE QUESTION

Bottle Fountain Draft mixer

Can we change the ways we live and work so as to establish a preserving harmony between the made and the given worlds? Or, to make that question more practical and immediate: Can great power or great wealth be kind to small places? ... Can the life of a farm or working forest be made compatible with its local ecosystem? ~Wendell Berry

Through the Artist’s Eye Written by: Mollie Thomas – Communications & Development Coordinator, Crosshatch You might not immediately think of art when you think of farming. You might not see a garden shovel and think of a paintbrush. You might not see a blank, freshly stretched canvas and be reminded of an em t field, read for lant n t ma e you should. Looking at your farm through an artist’s lens requires something counter-intuitive to the Fortune 500 set: slowing down. Take time to see your farm “through the artist’s eye.” See the beauty in your farm, the colors of the plants, the sway of the leaves in the wind, the sound of the bees buzzing around the o ers, and o ll care more a o t the health of your crops, and in turn, run a more successful farm operation. Anne Morningstar is a full-time professor in the Art Department at North Central Michigan College in etos e , n add t on to r nn n ear ree r an c arm th her h s and, r an ates nne ta es the t me to not ce the finer deta ls of her lants, sto n to hum with every bee. e n more n t ne th o r farm s onl o n to enefit o n the lon r n and ma e o feel l e you’re more in control. It will make you feel more proud of what you’ve done,” Morningstar said. Farmers who don’t think of themselves as artists, probably already care about art in ways they might not even realize. “Every farmer pays close attention to color,” Morningstar said. “Look through any seed catalog; that’s art.”

18

TLD_2017-NS.indd 18

Penny Krebiehl, a self-proclaimed Art Farmer, is the fo nder and d rector of oo erat e, n Traverse City. In her farm, CSA doesn’t stand for Community Supported Agriculture—it stands for Community Supported Articulture. Krebiehl sees a direct connection between being an artist and being a farmer; both are essential acts of creation. “You start out with a few tools and a blank canvas or ece of a er, and o ot th s st sort of cooking in your mind,” she said. “And maybe it starts with a theme and from there a whole world unravels.” This world might be made up of paintbrushes and visions to paint on the canvas, or it might be a world made up of shovels and soils. For Krebiehl, the result is the same: happiness. “That’s when I’m happiest, when I’m right in the middle of this whole world that’s being created all around,” she said. From both farmers, the message for growers is clear: Don’t be afraid to get artsy. The intersection of art and farming may result in a better harvest, more ns red deas on and o the farm, and the o of creative movement.

LEELANAU COUNTY Leelanau County is known for its 100 miles of shoreline, 33

Leelanau County, along with several other counties in northwest

inland lakes, five islands, thousands of acres of farmland, quaint

Michigan, is ideally suited for fruit production—tart cherries in

little towns, and beautiful sunsets. Leelanau, meaning “Delight

particular—due to its climate and soil. The county also sits close to

of Life”, is bordered on three sides by Lake Michigan and is

the 45th parallel, a longitude known for growing prestigious grape

commonly called “The County” by locals. It’s home to

varietals. There are currently 25 wineries on the Leelanau Peninsula

the Sleeping Bear Dunes National Lakeshore, voted “The Most

and the region is becoming a well known wine tasting destination.

Beautiful Place in America” by Good Morning America in 2011.

Think Like a Chef, Cook like a Dietitian, Eat Like a Local Farmer Written by: Diane Conners – Senior Policy Specialist, Groundwork Center Doctors typically learn little about nutrition, much less cooking, in medical school. But combining those topics with medicine is a trend that’s garnering headlines for Harvard Medical School with a conference it holds in California wine country, and Tulane University with another event in food-rich New Orleans. Now Traverse City will launch a local version of this idea in the fall with a Culinary Medicine conference that will be a pilot for future programs. The theme: Think Like a Chef, Cook Like a Dietitian, Eat Like a Local Farmer. In addition to nutrition and culinary skills, physicians and other health professionals will learn about the numerous local farm and food resources they can share with their patients. Dr. James Fox, a cardiologist with Munson Healthcare, attended the California and New Orleans sessions and said that hands-on cooking helped him connect with his patients over favorite foods and recipes. “This type of personal connection helps patients feel more comfortable,” he said. “Having a rapport with them and their families frequently changes the physician-patient dynamic from an

authoritarian ‘let me tell you what to do’ to a artnersh of let s find a a to make your health better.’” Family-practice doctors and pediatric ans a l ated th nson are alread writing prescriptions for their patients to eat fruits and vegetables, providing them with coupons to purchase produce at local farmers markets—an idea showcased at a recent Farms, Food & Health conference in northern Michigan. Last year the program resulted in $10,000 of increased sales for local farmers. With Culinary Medicine education, doctors can also share “aha moments” when they learn how easy and delicious it is to make, for example, a kale salad. Culinary Medicine in Traverse City also capitalizes on the acclaimed Great Lakes Culinary Institute at Northwestern Michigan College, which is a conference co-host with Munson Healthcare, Grand Traverse Regional Foodshed Alliance, and the Groundwork Center for Resilient Communities. m ea er to o er m c l nar e er tise to this project,” said Great Lakes Culinary Institute director Fred Laughlin. Instead of an apple a day, maybe apple-cabbage slaw?

The buzz of activity brings to life the community of bees working together to s sta n l fe he n and o t of the h e all day, while others work away inside to maintain the structure and population, and create stores of honey. Just like life within other communities, individuals with unique skills work together for the success of the whole. ees m les from the r h e to fora e on o ers of all sorts, ret rn n th nectar to support the making of honey. The local range of honey bees means that the honey from each hive creates a unique picture of life in a relatively small area; the nectar those bees collect determ nes the a or and color of the honey they create. The connection between honey and the area the bees are foraging makes honey a unique product in its ability to capture a moment in time through food—both the place and the season represented in the final rod ct ocal hone connects s 40

to a sense of community beyond the businesses we support in purchasing it. It connects us to the orchard blossoms, the s mmer o ers e see h le o t for a walk, and so much more. With Michigan’s expansive orchard economy, bees play an important role in pollinating the fruit trees of the region. rchards filled th a les, cherr es, and more need a huge number of bees to pollinate the trees, helping to support an economy of beekeepers and keeping local honey abundant throughout the area. It’s a beautiful connection between two realms of agriculture that support one another’s success. he ne t t me o find o rself sho n for honey, take a moment to consider the comm n t connect on o ered a local ar hat hone o ers a a or to re re sent a time and place in life nearby, while also pollinating important local crops and supporting a local business.

Local agriculture synergies inspiring growth Written by: Tricia Phelps, TLD Operations Director

In this digital age, there is a real value in systems that require personal connection and collaboration. Within our local food system, chefs look to farmers for quality products and inspiration. While farmers are challenged to think outside the bounds of what commonly grows here to meet the needs and demand of a growing industry. Synergy is built by an interaction of two or more groups that res lts n a com ned e ect e n reater than the s m of the parts. We’re experiencing these incredible synergies between local agriculture and the food & beverage industry in Michigan today. Where each piece and each person drives, challenges and improves the other; with clear indication that working together builds something greater. For Nic Theisen at Loma Farm, the synergy between his farm and local restaurants is essential. “Our success is directly dependent on the success of the Traverse City culinary scene,” said Theisen. “The more creative and successful the eateries, the more creative and successful the farms. We push each other’s art.” With all the moving parts, challenges are to be expected. But the push and pull of a challenge is what makes it such an impactful experience that naturally inspires both personal and professional growth. feel l e l e n a constant state of challen e, re ected he sen, not onl n an e ort to ee , t to lead Theisen goes on to describe the collaboration with local restaurants as a “whirling dervish” where chefs and farmers dance aro nd each other, constantl n enc n and e n n enced

2017 Harvest Haiku Challenge 48

TLD_2017-NS.indd 48

Haiku are preserved moments in time, often relating to an experience in nature. They are meant to be postage-stampsized fragments that force us to use the sparest and most evocative words possible. We should feel transported by each haiku to a place where the author’s emotions from that moment are shared with readers. These 10 poems represent the winners from more than 750 entries submitted during late fall 2016. Most follow the traditional form of 17 syllables on three lines; 5-7-5. Twenty-three other poems were selected for special prizes and honorable mentions. Visit the TLD website to see them all. h s ro ect s a colla orat on of aste the ocal erence, Michigan Writers, and Blackbird Arts. Celebrating 10 Years of Michigan

Farmers Market Success Written by: Dru Montri – Executive Director, MIFMA

The Michigan Farmers Market Association (MIFMA) is celebrating its 10th Birthday in 2017! The organization has grown remarkably over the last decade, advancing farmers markets to create a thriving marketplace for local food and farm products. MIFMA represents over 500 members, including more than 140 farmers markets and 220 farmers and food and agriculture-based businesses that sell at farmers markets. Thanks to MIFMA’s leadership, the past 10 years are marked with many accomplishments for the farmers market and local food community. The organization has helped propel Michigan to become a national leader in accepting Supplemental Nutrition Assistance Program (SNAP) Bridge Cards at farmers markets, creating a path for vulnerable families to access more nutritious foods. This past March, MIFMA continued to professionalize the role of market

Looking to the future, MIFMA will continue to seek ways to engage stakeholders in the development of opportunities to advance farmers markets in Michigan. One way that MIFMA does this is through strategic partnerships with like-minded

Decolonizing Diet Written by: Melissa Orzechowski – TLD Local Food Coordinator

64

TLD_2017-NS.indd 64

Every year, the Center for Native American Studies at Northern Michigan University hosts a First Nation’s Food Taster. This began Dr. Martin Reinhardt’s journey with the Decolonizing Diet Project. “The thought occurred to me: Would our ancestors recognize the foods we currently serve as Indian foods here on campus as foods they were familiar with?” Reinhardt said. “As I thought about that, I, at some point, turned that question around and asked myself: Would I be able to eat the foods that my ancestors ate then, today. How would I go about that?” From these questions, Reinhardt created a research project where 25 diverse participants ate only pre-colonial foods native to the Upper Peninsula for a year. “Squirrel, porcupine, pine bark, we had some usual things that we ate on the DDP.” But they also ate a lot of foods we are familiar with and eat regularly. “One of the things I experimented with early on was mixing ground bison and ground venison together,” Reinhardt said. “I was making meatloaf, and I didn’t have enough venison, and I didn’t have enough bison. So, I mixed them together, and it actually turned out really good. The tastes complemented each other.” Reinhardt also tried some things that

didn’t work out, like pasties and pizza. Without grains typically used today, the crusts are thick and dense. The participants of the Decolonized Diet Project worked with local farmers, ranchers, and retail stores that sell local foods and foods that fit th n the d et They remain in contact with the Marquette Food Co-op to work on increasing access to indigenous foods. Although no one is strictly adhering to the diet now that the project is complete, the project’s impact continues. Reinhardt has helped launch other indigenous food projects and continues to host harvest walks, cooking demonstrations, and he works with gardens in the community. “I think part of the inaccessibility is people just are not familiar with indigenous foods. I think they only know them from Thanksgiving. That’s not real deep knowledge about indigenous foods,” he said. Another challenge with the decolonized diet was the limitation of a narrow native food spectrum in the Upper Peninsula. Participants had to work with what is natively in the U.P. “We had to increase the depth by eating th n s d erent a s t reall ca sed s, I think, to become gourmet. We experimented and maximized our food variety and taste,” he said.

Becoming Biodynamic Certified:

The emeter iodynamic ertification is based on the ideas of udolf Steiner. iodynamic farming views the farm as one organism and promotes healthy interaction between its parts. Many of these practices focus on crop rotation, biological diversity, and soil fertility management. or a farm to be certified iodynamic, the land must be ertified rganic for at least three years while also following iodynamic practices. A farm must pay for an inspection each year in addition to a royalty fee based on sales. Soil samples are collected during these inspections and are completed yearly. Becoming USDA Certified Organic:

First, a farm must follow organic practices, such as crop rotation and maintaining soil fertility, to preserve biodiversity and ecological balance in the region, often for a period of three years. Second, the farm must submit the application and fee to one of the 80 certifying agents. Third, an inspector must come to the farm and survey its operation to determine if it follows all organic regulations. To maintain organic certification, the inspection and review must happen annually. A farm must be certified organic to claim that its products are organic. In the United States, there are more than , certified organic farms. COVEYOU SCENIC FARM MARKET, PETOSKEY, MI Just south of Petoskey lies Coveyou Scenic Farm, which dates back to 1874 and is one of the oldest farms in the region. About 17 years ago, David and Cathy Coveyou began the reinvention of the land. It all started with garden mums, which frequently sold out, which led to two greenhouses, two hoophouses, and the a p e pro tion o o ers egetab es an Christ as trees n they opte or the organi erti ation to ontin e their ission to pro i e better tasting an hea thier pro e or their o nity Transitioning to erti e organi as natural for the Coveyou Scenic Farm, as were the necessary record-keeping and sa e oo han ing pra ti es The ar no has a res o erti e organi pro e in a ition to another a res in o er rops

How to be MAEAP Verified:

The Michigan Agriculture Environmental Assurance Program (MAEAP) began in 1997 to encourage the education of farmers on the protection of natural resources. eing MA A verified involves online education of farms, a farm specific risk assessment, and an on-farm inspection. These processes are unique for farmstead, livestock, cropping, and forest, wetlands, and habitat systems. In Michigan, there are more than , MA A verified farms that practice environmentally sound practices while still managing e cient production.

Good Mood Food Eating for Better Mental Health Written by: Kelly Wilson, RD – TLD Local Food Coordinator

Did you know that we have two brains (one in our head, and one in our gut!)? Or, that these two brains “talk” to each other? Our brains and guts are closely connected to each other via the vagus nerve. This nerve runs from our brain stem to our abdomen and allows for two-way communication between the brain and the gut. The vagus nerve is the primary mode of communication gut bacteria use to send chemical signals (and n ammator mar ers to the ra n he ra n ses the a s ner e to also send chem cal, hormonal, and n ammator s nals to the ner es n the d est e s stem he m acts of th s t ra n comm n cat on m ht e fam l ar to o tter es n your stomach before a big event, uncomfortable feelings during times of stress/anxiety, mood changes, and more. he food e eat has a stron n ence on ho o r t and ra n comm n cate and healthy food choices have been linked to improved moods. Added sugar from processed foods can lead to n ammat on, o er ro th of mood-depressing bacteria, and blood-sugar roller coasters (ever been “hangry”?). Limit added sugars to reduce n ammat on and sta l e o r lood sugar and mood.

Our gut is our second brain. About 90 percent of our serotonin—a feel-good brain chemical—is created here. Intricate ne ronal net or s, n enced t bacteria, send signals to our brains. Healthful Food for All Written by: Meghan McDermott – Food & Farming Program Director, Groundwork Center

What comes to mind when you hear the words “food pantry”? A small room with dusty, past-date cans and bags of food? If so, you wouldn’t be alone. Many well-intentioned organizations and individuals make a yearly ritual of clearing out their home pantries and generously donating the dust-covered, long-forgotten cans of products purchased for meals or recipes that never were. o ta e a moment to ma ne hat a antr filled th d st , random, canned food products high in sodium, sugar, and fat would mean for a family visiting that pantry to put food on their table in a time of crisis. As a FoodCorps service member in northwest Michigan from 2013 to 2015, I often encountered children who saw their local food pantry as “the place where we go to get food.” For years, global research has shown that health and poverty are inextricably linked; that’s no surprise for anyone who has worked with individuals experiencing poverty. Access to fresh, healthful foods in low-income communities can be dismal, and too often, the local food pantry is no exception. A 2012 Gallup re ort fo nd that mer cans n o ert are more l el to s er from diet-related diseases such as diabetes, high blood ress re, heart d sease, and o es t than the r more ell o counterparts. Luckily the notion that all food pantries are small rooms with dusty, past-date cans and bags of food is largely out-dated, not to ment on o ens e to the or an at ons and nd d als that are working every day to ensure that all families in need of assistance are able to provide the best possible food to support their family’s long-term health. One solution to this issue is to reconceptualize the idea of food drives. Instead of using that annual food drive to clean out your pantry, donate newly purchased canned goods (preferably low in sodium, sugar and fat). Or better yet, just donate cash so pantries and meal sites are better equipped to stock their pantries with consistent, calorie-dense, healthful foods.

ne antr or s the one sto locat on to ďŹ nd food antr es or meal sites near you. One Pantry will tell you what food pantries are open today, where the next community meal will be held, and whether there are any restrictions for clients interested in visiting. Food Pantries and Meal Sites all over the state use One Pantry to communicate with their clients, but also to communicate with one another and the vast array of local farmers and food producers in our communities. With this tool, we help food pantries and meal sites gain access to more fresh, healthy local produce. TLD’s NEW Farm to Resource Directory

The rising demand for local food has presented new opportunities and challenges for an industry that has largely been export-based for the past 50 years. When local producers in the region determined that better access to expertise, training, business development and capitalization would help them meet this growing demand, TLD listened. The TLD Farm to Resource Directory aims to connect rod cers th reso rces n se en d erent cate or es Business, Funding, Production, Post-Harvest, Marketing, Education & Networking and Food Safety. earn

GREAT JAM starts here

At American Spoon we handcraft fruit preserves and condiments in small batches, capturing the singular flavors of exceptional fruits in every jar. Since 1982, our crew of skilled cooks has been preparing fruits by hand, cooking them with care in small-batch copper kettles in our Petoskey kitchen. A dedicated group of Michigan farmers grow the fruits we love, varieties bred over generations specifically for their unparalleled taste and unique character. Our small company exists to find, capture, and preserve flavors you won’t find anywhere else.
