My favorite part of the local food system is the people. Don’t get me wrong, the economic impact, health implications and environmental reasoning behind buying local food is clear and valuable, but the people and their stories really bind me passionately to this mission. Every farmer, restaurateur, retailer and consumer that TLD works with has a different story to tell. A different process of how they got where they are, a different dream for what the future holds; but after listening to so many of these incredible stories we also know there is a lot of commonality. Each has a passion for what they do and value for their community that, among other things, ties all the stories and these people together. We have a lot we can learn from one another, just by listening with an open-mind and being willing to share. From experienced farmers mentoring new farmers, to the classically trained chefs and home cooks, there is incredible value in passing along learned experience within our field. And let us not forget the importance of sharing stories and knowledge across occupational lines too; farmer to chef for instance, without these connections the food system doesn’t work quite as efficiently as it could. At TLD, our mission is to sell more local food in the communities we serve, and because we strive to know and support all the different pieces and people in the food system we’re able to provide our partners with trusted, viable new connections for sales, collaboration, and resources. This resource, The Guide to Local Food, is another way for us to build and strengthen that network, we hope it’ll inspire you to reach out, connect and learn from one another.

As Michigan’s local food marketing agency, Taste the Local Difference aims to support local food business owners and strengthen Michigan’s economy from the ground up. Through our affordable marketing partnerships, we help local food businesses connect with new markets and flourish. Our services cater to the needs of farms, farmers markets, restaurants, specialty producers, and retail stores. We highlight local products in stores, and online, to make buying local the easy option for consumers. Our variety of point-of-sale materials, transparent marketing strategy, and thoughtful use of networks gives TLD partners the time they need to focus on their business. Taste the Local Difference promotes local food sales by connecting the many members of Michigan’s diverse food economy. Each year, we produce two Guides to Local Food; one for northern

lower Michigan and the Upper Peninsula, and one for southeast Michigan. These annual publications make finding local food easy by providing a county-by-county directory of local food sources. The guides also highlight local food champions in each region and showcase seasonal recipes, making these guides useful and interesting all year long. We strive to connect local food to the entire community. In the past year, some of our projects have included matchmaking CSA farms with employers as part of a company workplace wellness benefit, facilitating grants from the Building Healthy Communities initiative to make fresh produce accessible to all, and launching our Local Food Enthusiast campaign which creates a community for those passionate about local food. The Economic Impact of

The strength of Michigan’s craft brew industry is no secret.

Powerhouses like Bell’s Brewery and Founders may represent Michigan on the national market, but a variety of Michigan craft beers can be found in nearly any liquor and grocery retailer in the state, and small downtowns are being re-energized and redeveloped, anchored by independent, craft beer pubs. The benefits are enormous. Craft pubs are often more family friendly than a traditional bar, allowing for community gatherings. They host innovative community events like potlucks, concerts, and euchre tournaments, or sponsor things like the local roller derby team, farmers markets, and farm field days. Small craft breweries also require raw ingredients, utilities, and labor, making them drivers of economic and community development. Until recently, brewers had no choice but to source the vast majority of their raw ingredients—water, grain, hops, and yeast—from “somewhere else.” But 10-12 years ago, local hops farms began to take root in Michigan. Michigan has grown into a net exporter of hops and is now fourth in the country. The emerging Michigan malt industry, in partnership with Michigan’s strong agricultural sector, is now poised to follow the same path, and a local yeast cultivation shop, Craft Cultures, has opened in the Upper Peninsula, completing the list of necessary ingredients.

Combining these new industries—yeast cultivation, micromalting, and hop production—with Michigan’s great water resource and booming craft beer industry allows the Great Lakes State to offer local and unique Michigan beverages to a loyal, adoring, and extensive crowd. Comparing apples to apples, or in this case, six-packs to six-packs, a locally brewed six-pack that is independently and locally owned, uses local labor, buys local ingredients, and uses a local distributor to convey the product to a locally owned retailer represents approximately 2.5 times the local economic value of a domestic macro-brewed six-pack available at the same retailer. When you spend extra dollars on a craft brew, you’re not just buying a unique tasting beverage and supporting a local brewery, you’re also supporting hops and grain farmers, micromalters, euchre tournaments, and derby teams. You’re assisting in and inspiring small town redevelopment, creating local jobs, and anchoring an industry in place. Next time you are pursuing the craft beer selection at your local liquor store, ask for something uniquely Michigan made. The difference might surprise you! This baked kohlrabi fritter can be served over greens with your favorite vinaigrette or used as a patty for a veggie sandwich. It’s very versatile and tastes great at any temperature.

2 bulbs, about 3 cups, medium grate, kohlrabi. Leaves & outer layers removed.

Remove kohlrabi leaves and peel the bulb. Grate the bulb and the sweet potato. This should render about 5 cups of vegetable matter. Combine these and dry them by pressing through cheesecloth or your desired method to extract extra moisture.

1½ cups grated sweet potato or carrot, whichever you prefer 2 eggs. Use one in the mixture, and one as an egg wash later Salt, cayenne to taste 2 tablespoons flour, to help bind

To get a good result with the cake, you need a good bind with the egg and flour. Beat one egg and add salt and cayenne. Add grated vegetables and toss together. Scoop out ½ cup of the mixture and form into balls. Press lightly to form a patty. Place these on a cookie sheet and chill for a few minutes to help them set.

Beat the second egg in a separate dish. In three dishes, assemble your corn flake crust ingredients: flour, egg, and cornflake, all separate. Roll patties lightly in flour, dip in egg, and finally in the cornflakes. This will give the patty a crisp exterior when baked. Repeat until they are all “breaded” with the cornflakes. Bake at 350 degrees for 20 mins on a greased cookie sheet. You may turn them at the halfway point to crisp each side equally. If you want them super crisp, use olive oil spritzer on each side of patty before baking.

While northeast Michigan abounds with growers willing to share their experience, it lacks structured mentorship, education, and training to prepare a workforce that will match the growing needs of the industry. For this and other food system needs of our region, many of the pieces are already being built; we just need to continue strengthening our networks to connect them and identify what’s still missing.

NORTHEAST MICHIGAN

Farm to Fork Alcona

Farm to Fork Alcona, for example, is a valuable piece to this puzzle. They just held their first annual regional farm conference last year, focusing on agricultural entrepreneurship; and they host regular locavore workshops and dinners throughout the year. In addition, they’re working with the local Future Farmers of America chapter to develop a licensed food processing center for entrepreneurs to kickstart their food businesses in Alcona County. Just beyond the value of education and training lies these types of physical facilities needed to further local food enterprises. One resource that may prove to be a game changer is the Northern Market in Grayling, scheduled to open in 2019 as “a destination, gathering place, and community center.” As a sister location to the Eastern Market in Detroit, and therefore tapping into that region’s distribution potential, the Northern Market promises to bring attention to healthy local foods while providing an affordable space for farmers and entrepreneurs to accelerate a new agri-business model. The venture will also include a collaboration with a USDA meat processing plant to facilitate the processing, packaging, and distribution of local goods throughout the region.

When northeast Michigan growers, restaurants, and businesses alike say the biggest obstacle they face in local purchasing is distribution, you can understand how significant this new development is. After all, how in the world can local growers compete with the food industry giants when they deliver daily, and offer a variety of produce regardless of the season? These are all essential components of the food system in the Northeast, and what’s more exciting is that these elements either currently exist or are already in development. Could this growth be a harbinger of things to come? The resilience and determination of northeast Michiganders never ceases to amaze me. The growers and producers of this part of the state have been bringing their “A” game for generations. And while the region still has plenty of room to grow, the pieces are beginning to fit together. What we know for certain is that if we build the infrastructure to support them here in northeast Michigan, we can help our farmers sow their own futures.

Ziibimijwang Farm in northwest Michigan, just south of the Mackinac Bridge, is committed to restoring and strengthening Mino-Bimaadiziwin—an Anishinaabe philosophy meaning the Way of a Good Life—for the Odawa community through a foundation of indigenous food systems and cultural activities. The 100-acre farm in Carp Lake is owned by the Little Traverse Bay Bands of Odawa Indians (LTBB). While the farm is run as a business, its objective is largely service-based to enable food sovereignty for the community, or a reliable food source independent of the larger food system. LTBB encourages a healthy lifestyle for tribal citizens. Through the farm and other programming, LTBB enhances people’s ability to farm, garden, and engage in subsistence activities for themselves. As part of the tribe’s heritage, there is a special interest in saving seeds and in continuing their story by growing them at the farm.

In addition to several local businesses and schools, the farm’s produce is used in the LTBB’s Elders Lunch Program at the Governmental Center in Harbor Springs, Michigan, where Chef Jo Smith serves 70+ meals to tribal elders several times a week. Ziibimijwang Inc. is guided by a board of directors including Chairperson Joe Van Alstine, Vice-Chair Rebeca Otto, Treasurer Blayne Bott, board member Blair Miller, and acting Secretary Kevin Donner. As part of the Ziibimijwang vision, the board members are working with the USDA to recognize and incorporate “traditional” foods within the USDA’s Food Distribution Program, reinvigorating the trade of maple syrup by tribal entities, furthering the goals of tribal fishers and local fish wholesalers, and facilitating the creation of infrastructure that serves producers and food businesses throughout the region.

SALSA DIRECTIONS

1 pint of fresh Michigan blueberries, halved

4, 8-ounce fillets of fresh Great Lakes walleye

· Mix together ingredients and set aside.

2 tablespoons minced red onion

2 cups panko

2 tablespoons fresh lime juice

8 teaspoons parsley

1 tablespoon minced jalapeño

2 teaspoons lemon zest

1 tablespoon minced ginger

4 teaspoons minced garlic

2 teaspoons local honey

6 tablespoons softened butter

1 tablespoon chopped basil 1 tablespoon chopped cilantro Salt & pepper to taste

WALLEYE DIRECTIONS

· Soften butter and mix in honey. · Combine panko, parsley, lemon zest, garlic, salt and pepper. What kind of food does your food truck have? What is your most popular dish with local ingredients? We make tacos and burritos. Everything on them is made by us, including our hot sauces. We change the menu often, but some of the crowd favorites have been our fried chicken taco with kimchi mayo, miso honey, coconut, chiles, and cilantro, and the lamb cheeseburger taco with Chihuahua cheese, lettuce, onion, pickle, and our secret sauce. What local farms do you source from?

Our customers are mobile and on-the-go. Our dishes are prepared fresh and easy to eat. Our cuisine is all Asian-inspired comfort foods—a perfect pick-me-up for the middle of a busy workday.

All our coffee comes from resident roasters at North Country Candy & Gifts, and we use Pour Boys Honey in some beverages and sauces. In the summer, our produce comes from Presque Isle Farm, Flock Ewe Farm, and the Alpena Farmers Market. We aim to locally source at least 25% of our menu ingredients. While dry goods such as flour and rice will be brought in from elsewhere, we want our produce and meats to be as fresh as possible.

What kind of food does your food truck have? We try to offer something for everyone: soups, salads, sandwiches, and more. Some of our most popular dishes include pepper steak kabobs, scallion pinwheels, and our specialty, Chinese donuts. The Cost of Cheap Food: Labor Shortage in Food & Ag Tricia Phelps, CEO

For far too long now, we’ve celebrated cheap food. Whether in the restaurant or grocery setting, cheap food has its own set of consequences. The local food movement has pushed people to better understand the true value of food; its impact on health, the economy, and environment. However, what is often overlooked is that cheap food means real people aren’t being fairly paid. The Food & Agriculture industry makes up 36% of the 50 lowest paying jobs in Michigan; and yet, without food where would we be? When you combine low pay, difficult working conditions, and minimal training opportunities, it’s no wonder restaurants and farms have identified recruiting qualified staff as one of the top challenges they face.

When it comes to agriculture, many farmers have individually increased hourly wages and incentives as well to improve recruitment and reduce turnover. Kevin Benson, of Michigan’s Talent Investment Agency, explained that these increases are out of necessity even with the tight margins that farmers face. “They need the right people,” he said, “People that are skilled, experienced, and willing to handle the conditions.”

Jonathan Roberts is an Organizer for the Michigan chapter of a labor advocacy group called Restaurant Opportunities Center United (ROC - MI). He confirmed that the connection between this labor shortage and income inequality is strikingly clear.

“People in this industry are threetimes as likely to experience poverty, and twice as likely to receive food assistance,” Roberts explained. According to the ROC, that perpetuated inequality and much of the industry’s culture of harassment stems from the tip credit, which allows restaurant owners to pay their tipped workers a wage as low as $3.52 an hour in Michigan (above the federal minimum of $2.13). Seven states have eliminated the tip credit thus far and the ROC is looking to conduct a ballot initiative here in Michigan to increase the minimum wage overall and gradually eliminate the tipped wage. Some restaurant workers worry that by eliminating the tip credit, their take-home wage will decrease, but Roberts indicated there is data to support the opposite. “Tips don’t decrease, because the quality of services goes up,” he explained. “If you’re paying workers fairly, it increases drive and motivation, and encourages healthy forms of competition.” Whether or not the state officially makes a shift in minimum wage and tip credits, private businesses in the industry are making their own changes to address low wages and employee incentives. Strategies include internally eliminating the tipped wage, instituting back-of-house (BOH) service fees on checks to increase wages, and providing salaries to all staff (FOH and BOH). These potential solutions and many others have been instituted by restaurants across the country.

From the elements and dirt, to standing all day and lifting heaving things, it’s a mindset and physicality that not all Americans are accustomed to, and its led to a rise in H2-A (VISA) workers filling many of these agriculture-related positions. According to the Department of Labor, there are over a million jobs available on U.S. Farms, and its estimated that H2-A guest workers may soon fill 20 percent of them.

The process of bringing in H2-A workers is complicated, with lots of paperwork and additional expenses, but it shows how desperate farm employers are for good workers, and it showcases the value of a positive mindset and work ethic. “The [H2-A] workers are dedicated and come with a very different mindset,” Benson explained. “It’s humbling because they have come through a lot to get here, and they take pride in what they do.” A critical component of the labor shortage challenge is that this industry is not just in need of bodies. Rather, it’s in need of staff that is experienced, committed and trained. There are mechanisms needed to develop this workforce locally, and if we aim to fill the labor shortage they are a critical part of the solution. This means encouraging and investing in vocational training for students. It means experienced farmers and chefs mentoring the next generation. And it means creating opportunities for on-the-job training that correlate with advancement and recognition for expertise in the field. 1 in 2 people work in food or agriculture in their lifetime, so whether it’s us or someone we know, cheap food means real people are undervalued. The labor and skills that are required to produce quality food and treat people fairly is important, so let us not be tricked by the price tag. Rallying against cheap food doesn’t mean spending your entire paycheck on one meal, but rather when a deal seems too good to be true, consider that it might be. If we opt for food without value when we’re shopping or dining, it sends the wrong message to the industry. But when we shop with the true costs in mind — of people, environment, economy and health — we can spend our dollars more wisely to support the type of industry we want to see in our future.

An involved community surrounding the small port town of Hessel, Michigan, brought the Les Cheneaux Culinary School to life in September 2014. A group of individuals hoped to grow their local economy, and a farm-to-table-focused vocational school was the perfect fit for their agriculturally rich region.

Students start the fall by visiting local farms and harvesting their own ingredients. Before entering the kitchen, they begin building relationships with the area’s growers and producers. Once the chef coats are on, they enter the kitchen to practice knife skills on freshly picked produce, and in honor of the fall weather, their studies steer towards fermentation and preservation. As the winter continues, they focus on culinary techniques, but local food is always present. Even during my visit in the dead of winter, local eggs, milk, and maple syrup made its way into the day’s recipe testing.

As I wandered around the kitchen snapping photos, students focused on their tasks while sharing thoughts on the program. They expressed how it covered all aspects of the career, like food costing, marketing, and management skills. The small class of 12 students came from all over the state and beyond, all drawn to the uniqueness of the program, and inspired by the connections to local ingredients.

Executive Chef and Program Director Zac Schroeder said chefs are taking on a new role. “It never used to matter how the pig was raised,” he said, explaining how today’s chefs need to be educated on subjects beyond culinary techniques, like nutrition and sustainability. Ingredients are being studied and analyzed before they even enter the kitchen, taking things like fertilizers and soil health into consideration.

Les Cheneaux Culinary School is a hidden gem that fills an important niche. It not only does a service to its community, but to the entire Upper Peninsula as it continues to expand its restaurant culture, and define its unique cuisine. The growth and success of the regional restaurant industry relates directly to the growth of local agriculture, and vice versa. GRILLED PEACHES 4 Michigan peaches 4 tablespoons local honey 2 tablespoons cinnamon DIRECTIONS · Preheat grill to 400 degrees. · Cut peaches in half and remove pit. · Drizzle with honey and cinnamon. · Grill peaches for 3-4 minutes on each side. Every farmer has a unique story. Dave Skornia, owner of Lakeside Farm in Boyne City, wears many hats in his local food system. Not only is he a farmer, but also a mentor, conservationist, volunteer, and strong supporter of the local food movement. Dave’s story began in 1881 when his great-grandfather immigrated from northern Europe and settled in what is now Bay Township. More than a century later in 1985, Dave began building his farm on a portion of the original farmland.

Dave has been fascinated by anything connected to agriculture for as long as he can remember. “It’s the love for hard work, spending time outdoors, and always trying to improve and learn something new,” Agriculture has a long history of individuals working together to accomplish goals and Dave understands firsthand the effort that goes into building a farm. He took an innovative approach to help farmers get started, similar to the way people helped him. As the number of farmers in our country continues to decline, ensuring a new generation of farmers is critical, but access to land is a huge obstacle. Incubator farms are a fairly new way to address the problem, providing new farmers with affordable access to land and infrastructure. Training and advice are occasionally shared between farmers and landholders to improve farmers’ skills and help them successfully launch their business. Dave considered starting an incubator project on his own family farm after attending the Northern Michigan Small Farms Conference a few years ago. In the summer of 2014, he offered John Dindia and Rachel Cross, owners of Spirit of Walloon Market Garden, the opportunity to farm 2 acres of his land. The unique partnership offered combined resources, shared knowledge, and a

combined use of infrastructure. Dave has enjoyed witnessing the passion and enthusiasm of the young farmers, their continual support for each other, and offering his wisdom along the way. Thanks to Dave’s support, Spirit of Walloon is now a sustainable market garden operation in its fourth year at Lakeside Farm. “Dave is an incredible asset to the farm, both as a mentor and a friend,” said Rachel, now the sole owner of Spirit of Walloon. “His generosity, resources, and knowledge helped Spirit of Walloon get off to a strong start, and his work ethic and good nature are a continual inspiration to everyone who has been a part of our farm.” Meanwhile, John used the inspiration and guidance from Dave to start his own farm in Traverse City, and Dave has started a new project to convert a portion of his improved cropland to a permanent grazing rotation. “There may be a livestock incubator operation in the near future!” he said. Dave’s story is just one creative solution to help beginning farmers grow through shared experiences, knowledge, and land. It highlights the importance of being an active part in the community, and represents the future of growing the farming community.

LEELANAU COUNTY Leelanau County is known for its 100 miles of shoreline, 33 inland

Leelanau County, along with several other counties in northwest

towns, and beautiful sunsets. Leelanau, meaning “Delight of Life”, is

particular—due to its climate and soil. The county also sits close

lakes, five islands, thousands of acres of farmland, quaint little

bordered on three sides by Lake Michigan and is commonly called “The County” by locals. It’s home to the Sleeping Bear Dunes National Lakeshore, voted “The Most Beautiful Place in America” by Good Morning America in 2011.

Michigan, is ideally suited for fruit production—tart cherries in to the 45th parallel, a longitude known for growing prestigious grape varietals. There are currently 25 wineries on the Leelanau Peninsula and the region is becoming a well known wine tasting destination.

BENZIE, MANISTEE WEXFORD & MISSAUKEE COUNTIES Benzie, Manistee, Wexford and Missaukee counties represent the

Amazing things are happening in Michigan agriculture and Veterans are leading the charge to a more local, diversified, and sustainable future. I never imagined that I would have a future in farming or that I would love it so much. I was a Sergeant in the United States Marine Corps and enlisted immediately after September 11th. I served from 2002-2006. Now, my wife, daughters, and I are homesteading outside of Flint, MI. We raise chickens, goats, hogs, and are growing all of our vegetables in a hoop house. We make goats milk soap, collect eggs, and sell our hand grown, organic produce at the Flint and Fenton Farmers Markets. It has been an incredibly fulfilling adventure developing the plan, building the infrastructure, getting licensed, making a thousand mistakes, and jumping in with both feet. I never would have been able to make the progress without Michigan Food and Farming Systems (MIFFS ) and Vets in Ag (VIA) Network. They have both been hubs of advice and referrals that have contributed so much to our farm’s success. MIFFS is a premier agricultural non-profit in Michigan that seeks to facilitate a diversified local food economy by supporting historically underserved farmers. Many of their programs support veteran, women, minority and beginning farmers. They also create networking opportunities for producers and buyers to create mutually beneficial relationships. Founded by Dr. Adam Ingrao, a post 9/11 Army Veteran and Owner of Bee-Wise Farms, the VIA Network is a veteran led group operating within Michigan Food and Farming Systems. The Network offers farmer veterans access to resources, education, mentorship, and advocacy throughout Michigan and the nation. The vet to vet approach provides a community for Michigan’s farmer veterans who work together to ensure the long-term success of one another. Our farm is a testament to the VIA Network. There is no way we could have come as far as we have without Adam’s, and VIA’s, support. Currently, the VIA Network is working to expand its efforts to help veterans become farmers and succeed in their quest to nourish their communities. I am proud to announce, on behalf of MIFFS and the VIA Network, our newest initiative supporting veterans and their success in agriculture. We have partnered with Taste the Local Difference to produce a product guide featuring veterans, their farms, and their products from across the state. We want you to know where Michigan’s veteran farmers are located and how you can support local food systems, local economies, and your local veterans. Lion ’s Mane “ Crab” Cakes

INGREDIENTS

8 ounces lion’s mane mushroom 2 tablespoons extra virgin olive oil 2 cloves garlic 2 tablespoons Greek yogurt (mayonnaise or veganaise can be used as a substitute) 1 teaspoon soy sauce (or liquid amino acids)

1 egg (make this vegan by replacing this with a “flaxseed” egg) Splash of white or red wine vinegar 2-3 tablespoons freshly chopped parsley 1 teaspoon smoked paprika Lemon juice from ¼ lemon

1 cup bread crumbs

3-4 tablespoons coconut oil (or alternative) for cooking the cakes

¼ cup diced onion

Salt and pepper to taste

Quick Aioli ½ cup mayonnaise

½ teaspoon salt

1-2 cloves of garlic, pressed

1 tablespoon fresh lemon juice

2 tablespoons olive oil

DIRECTIONS: Mash garlic and ¼ teaspoon salt in a small bowl until a paste forms. Whisk in mayonnaise, oil, and lemon juice. Season with salt & pepper. Can be made a day in advance.

• Dice or tear lion’s mane mushroom into small pieces. Toss in olive oil and roast in oven, with garlic at 350 degrees for 30-40 minutes. Turn halfway through. The mushroom will shrink substantially as the water cooks out. (Note: to reduce time, you can sauté on the stovetop at medium-high heat until crispy.) • When ready, put mushroom and garlic mixture in food processor and pulse 4-5 times until mix is broken down in smaller chunks. • In a separate bowl, mix together the egg, soy sauce, Greek yogurt/mayo, lemon, chopped parsley, salt, and pepper. Use a whisk to evenly mix the wet ingredients. Add breadcrumbs, onions, and pulsed mushroom mixture. • Use an ice cream scoop or tablespoon (depending on the desired size of the crab cakes) to measure equal portions of crab cakes. Form into cakes with your hands. • Heat coconut oil in non-stick pan on medium heat and fry until lightly browned on both sides. • Finish with a touch of sea salt and quick aioli. Serve on top of a bed of seasonal greens.

Foraged Culture of Michigan

At one time, foraging for your food wasn’t a choice, but a matter for survival. We’ve progressed through the centuries, and although these skills are essential for many cultures, gathering ingredients has become a lost art form to most.

Rick Bricker, of Bricker Farm in Rapid River, MI, is a third-generation farmer who has been foraging since the day he could walk. His parents grew up in the Depression, and he was raised to learn the importance of fending for yourself with little means. In peak season, you’ll find him in the woods up to three times a week gathering leeks, mushrooms, berries, and chaga. One of Rick’s greatest hits at the Gladstone Farmers Market is his wild salad mix, which uses greens that others consider weeds such as chicories, dandelion greens, sheep’s sorrel, and amaranth. These plants provide a unique alternative to a normal salad, are packed with nutrition, and offer producers a unique chance to expand their product offerings without much added effort.

Ryan Leary, of Tonella Farms in Skandia, MI, is in his second year of farming. He came to the Upper Peninsula to bring life to his great-grandparents’ once bustling hobby farm. He forages from time to time, but focuses more on long-term mushroom efforts, producing varieties like shiitake and oyster mushrooms on sugar and red maple logs. One of the struggles for newcomers, according to Ryan, is that there is no guarantee of a return for your efforts. Even if you do have good foraging locations, it doesn’t mean they’ll produce, or that you’ll be in the right place at the right time. Mushroom cultivation, like any agriculture production, may not be foolproof either, but it does allow for more control and consistent yields. Over the past 20 years, despite a dwindling number of hobbyist foragers, there is continued interest from the agricultural, restaurant, and health industries. World-renowned chefs like René Redzepi, of Noma, create menus specifically based on a region’s local

ingredients, and successful companies like Foraged and Found Edibles in the Pacific Northwest provide foraged foods to numbers of restaurants and consumers. Michigan’s own Decolonizing Diet Project offers an exploratory study of the relationship between people and the indigenous foods of the Great Lakes Region. And of course, one of our favorite sweeteners, maple syrup, is a foraged good and major contributor Michigan’s local food economy. Foraged foods offer numerous benefits from nutrition, to economics, and of course, to taste. For people like Rick, the biggest reward is “being in the woods, among nature.” His words of advice: “Get out there and get it!”

One of the simplest ways to think about Community Supported Agriculture (CSA) is as a subscription for a weekly box of gorgeous produce from the family farm down the road. In the broadest sense, CSA is also a forward-thinking model that honors and aligns the needs of farmers, consumers, and their communities with each other rather than with a corporation. Many CSA members say that opening their weekly box feels like opening a gift from the farm, filled with fat peapods, frilly lettuce, and sweet tomatoes. And for parents, there’s no better way to get kids to devour carrots than letting them see the field where they grew. For Rachel Thompson, as a mom of two, the pre-payment aspect of CSA seemed like a barrier until she broke it down to see that for just $25 a week, her family eats the freshest organic produce available while supporting a diversified

local farm. For under a dollar per person per day, Rachel actually pays less for her CSA than she would at the grocery store. Rachel’s husband, John Rietz, is like a “Kitchen MacGyver,” stir-frying oddballs like tatsoi and kohlrabi, and dreaming up ways to make herbs and asparagus spears into a frittata, pasta or soup dinner. John loves it, but not every cook wants the challenge. Luckily, CSAs have evolved for both adventurous and practical eaters. “A CSA is like dating—you have to find the right match,” said four-season CSA farmer Shannon Brines. With more than 400 CSAs in the state—whether it’s for year-round or seasonal produce, meat, eggs or prepared foods, or even a Community Supported Bakery or flowers—there’s a choice for everyone. Upper Peninsula GROWTH IN THE

Making a living growing or producing food in the Upper Peninsula has never been easy, but more people are opening small-scale businesses and farms. Farmers markets are growing, from the Soo to Houghton. In the last three years, the Downtown Marquette Farmers Market has had 19 new farm vendors. The market that a decade ago had just two vendors now has 63 each week. New businesses are opening that are devoted to U.P. food and beverages like the brand new brewery like Barrel + Beam, or the Grand Marais Fisheries, Farm and Mercantile. In the past year alone, the U.P. has seen one new farm-to-table restaurant with another on its way, two new grocery stores with local food as a top priority, and many new specialty producers making U.P. kombucha, artisan bread, roasted coffee, and of course, beer. Small-scale farming and local family food businesses are not new to Michigan’s Upper Peninsula. Many Finns that moved to the area for the mines started their own family farms, and before Europeans, indigenous people across Michigan tended plots of vegetables. But despite a long tradition of farming,

diverse market farms nearly went extinct in the U.P. along with small-scale and family farms across the country. So why the U.P., and why now? Ask each new farmer at the market or each new business owner, and they each have a different reason for trying to face the short season and the dispersed markets in the U.P. Many are true Yoopers who decided it was time to own their own business. Others, like Dana of Mama’s Booch, started brewing kombucha for friends and family until demands were too high to ignore. Others visited the area, and after experiencing the endless north woods, decided the U.P. was the place to settle. LOWER PENINSULA The U.P. FOOD EXCHANGE (UPFE, The Exchange) is the

primary regional food hub for Michigan’s Upper Peninsula, providing coordination and support for local food activities across the U.P. The organization is led by the Marquette Food Co-op and MSU Extension in conjunction with the Western U.P. Health Department. UPFE serves as a resource portal for farmers, businesses, and individuals looking to connect with and actively participate in their local food system. The Exchange coordinates local food transactions through an online marketplace where U.P. farmers, institutions, and businesses can link up. Additionally, UPFE offers a knowledgeable pool of educators, farmer training programs, and hosts an annual U.P. food systems meeting as well as other community education efforts.
