I
t’s terribly British to partake in the smallest of small talk, ‘lovely weather isn’t it?’ and ‘been up to much?’ are two of my personal favourites. But, let’s be honest nobody really cares do they? The main reason for these dreadfully boring conversation starters is – in my opinion at least – to avoid the awkward social silences that creep up on us when we least expect them. This happens to me on a frequent basis, which is kind of alarming actually. Still, there was no awkward silence when I met up with June’s cover star, Jamie Peacock. The man knows how to get things done, no messing about and has done so throughout his entire career – formerly as a professional Rugby League player and now as Hull KR’s Head of Rugby League. Now, before we go any further, I was always under the impression that I was tall and quite honestly I’m pretty damn proud of it. I was always the tallest kid in my class at school; a title that I wore with absolute pride and mostly a smidgen of attitude. However, Mr Peacock who stands at an alarmingly tall 6ft 5” really put me to shame in the height department – solidifying his status as one, an absolute giant and two, a hell of a Rugby League player in his day. I’m not going to beat around the bush here, I take great pleasure in writing this months’ Editor’s Picks as I’ve just got back from an eight night trip around Koh Samui, Thailand – so of course, I’m slightly tanned and extremely well-cultured. Aside from having a minor case of holiday blues I am in high spirits as we approach the height of summer (obviously my favourite time of year) so without further ado let’s dive into June. I did kind of walk you through my entire month in May’s issue, so rather than repeating myself I’m going to look ahead at what I hope to be doing over the next few weeks. My second time at Heaton Park in three years, I just couldn’t resist getting a ticket when I saw Earth, Wind & Fire on the line-up. I know it’s pretty gutting that Maurice White sadly passed away shortly before their festival announcement, but at the end of the day seeing ‘September’ or ‘Boogie Wonderland’ live is something that I had to tick off the bucket-list. For those who have been to Parklife Festival you’ll know it’s exactly like the rest, just without the camping – which when nursing a hangover is a real bonus; no unbearably hot tent to turn your hangover into a wake-up call from hell. Thank the lord. I’m usually close to depression come the end of the domestic football season, as the thought of a weekend without some form of sport begins to dawn on me. But, and this is probably the biggest but ever, it’s the bloody Euro’s – hallelujah. Strangely enough both the Euro’s and Parklife Festival cross over slightly, which means I’ll be watching England’s first game against Russia on a big screen in the middle of Heaton Park thanks to the wonderfully considerate organisers of the event. I just hope England win. As always, there is a buzz around the country as England’s qualification campaign was once again fairly straightforward. But, for once my positivity doesn’t seem to be blind faith (I hope).

JAMAICAN JERK CHICKEN

We don’t think so and that is why we are sharing with you a stunning recipe from the super talented Chefs at Roots, East Yorkshire’s very own Carribean Rum Shack and Kitchen. This authentic mix of distinctive flavours will set your tastebuds alight and can even be enjoyed as a summer BBQ special - Give it a try!
Ingredients (Serves 4-6)
4 x Chicken Breasts // 1/2 small red onion // 2 x Spring Onions sliced // 1 tbsp chopped fresh Thyme // 3 tbsp Brown Sugar // 3 Garlic cloves chopped // 1 tsp ground Allspice // 1 tsp Cinnamon // Juice of 1 Lime & 1 halved // Thumb sized Ginger chopped // Bunch of Corriandor // 2 Tbsp Mango Juice // Salt & Pepper
Instructions (45-50 Minutes) 1. Blend all of the ingredients together and marinade the Chicken breats, slice the chicken to allow it to absorb the flavour 2. Place either on the Barbecue for 30 minutes until cooked through or alternatively place in a roasting tin on 170C/Gas4 for 45 minutes until tender 3. Serve with Corriander and Lime halves and enjoy with an ice-cold Cocktail

T
his is a great dish designed to really highlight the amazing beef available in our region. The fragrancy of the celeriac is enhanced by a touchof smoke. The slowly cooked onions give a richness to balance out the slight bitter notes from the broccoli. At the pub we salt bake the celeriac to enhance and deepen the flavour, feel free to do so, but its very time consuming. We also pair the tender beef fillet with some beef rib braised with thyme to give another taste and texture of our wonderful East Yorkshire beef. Some of the elements are quite time consuming, but can be prepared in advance and finished at the last minute. INGREDIENTS:1 large centre cut beef fillet, or two fillet steaks / 1 celeriac / 4 shitaake mushrooms / 6 pieces of purple sprouting broccoli / 2 medium onions / 1 packet unsalted butter / 2 cloves garlic whole / Smoked oil, made by Yorkshire rapeseed oil and Staal smokehouse, available from good stockist of local foods / High quality Red wine INSTRUCTIONS: 1) Carefully remove the root from the onions, cut in half across the middle, leave the skins intact if possible. In a large flat based oven proof pan, add roughly 100ml water and bring to the boil, remove from the heat and slowly whisk in cubes of chilled butter (about half a packet) causing the water and butter to emulsify.
2) Place the onions flesh side down in the butter emulsion, add a garlic clove and good pinch of salt and black pepper. lace the pan into a preheated oven at 120C for 2 hours until soft. 3) Skin and dice the Celeriac into small even sized pieces. Place these into salted water and boil until the celeriac is soft. Drain the celeriac, add 2 oz butter, and blend using a stick blender or food processor until smooth. 4) Trim about ½ inch from the bottom of each piece. If they are large pieces try cut them into similar sizes, discarding the very bottom of the stalk. Blanch the broccoli for a couple of minutes in salted boiling water. 5) Preheat an oven to 200c. Season the beef with sea salt and cracked black pepper. Heat a large frying pan with some butter, when the butter is foaming add the beef and the garlic clove. Cook the beef on all sides evenly, getting a nice caramelised crust. Place the beef on a tray, and finish the cooking in the oven until your get your desired degree. 6) On a large plate, spoon some puree into the middle, place one piece of broccoli on the puree then thick slices of the beef, place the shitake and onions on, lay the remaining broccoli on top, finish with red wine jus and pea shoots.

So once I’d got my first, I came out and thought what do I do now, started applying for jobs and I started teaching but needed some extra cash so started making all of the preserves and the chutneys.” “My mum has a family recipe that’s four generations old; I’m the fifth one to make it and it goes down the female line in the family.

I did live in Azerbaijan for a time, so whilst I was there I started cooking and preserving with the abundant seasonal produce. Not being able to buy out of season ingredients was a real change in lifestyle for me, I was cooking things that I’d never cooked, and going back in time almost with the pickling and preserving, and it was a fun challenge.” “I came back home and finished a degree

You can’t buy what I make, it’s just not available and it’s still not available even with the burst of ‘free from’ products, you still can’t buy it. So it’s all things that you cook with to make your life easier.” “I want to come in from work and grab
something off the shelf and make a lovely tea. I’m a trained chef and everyone expects me to make this amazing food but it doesn’t just happen instantly. If you’re going to cook from scratch every single minute of the day, it’s going to take a lot longer than the meals that take ten minutes in the oven, so I wanted things that would make my life easier and help speed things up.” “The cooking oils came about which work as marinades and dressings, the cooking paste came about because I can’t buy cooking pastes; they’ve all got some kind of a milk derivative, or a gluten derivative or an egg based something or other.” “I always used to look at these jars of things, even at Farmers’ Markets and I look at them and go ‘great’ because there’s always something that’s faffed with or they were cooked in a condensing boiler and all the nutrients are zapped. The motor car started life as a thing to be celebrated; the ultimate expression of freedom and independence, a barometer of how far we’d come – in technological advancement, as well as miles. You don’t have to be a “petrolhead” to enjoy driving. Yet the majority of people I speak to would no doubt class themselves as commuters rather than motorists, given the choice. Let’s put some figures to this; the Department for Transport estimates that 316.7 billion miles were driven on UK roads last year. Of those miles, almost 250 billion were travelled by cars. 84% of people in the UK travel by car at least once a week, and at last count there were around 35 million cars on the road. A staggering number of people out there driving, and I would argue therefore, a staggering number of wasted miles spent sitting in traffic jams and on the same old boring commuter routes. Frustratingly, the DFT doesn’t see fit to measure what proportion of these figures is made up of people who drive for fun. Apparently, if you’re in government, such notions simply don’t exist. Just look at the rumours coming out of London that new emissions laws would see all but the cleanest of petrol engine cars being allowed into the capital.

However, we don’t live in London, and in fact are lucky to live in a part of the country where we are never more than a few miles from a nighon deserted stretch of picturesque country road, so there’s no excuse not to take the long way home from the office, or head out on an evening to drive into the sunset. What’s more, most of us drive cars which are economical enough for said ‘joy ride’ not to require any meaningful financial planning. Some of us even choose cars which claim to be ‘sporty’, or whose tops drop at the press of a button. Yet we don’t drop the tops or head out on to the tarmac without a practical reason. We don’t have many de-restricted pleasures left, not really. So do me a favour; if you care about motoring, get out on the road just once in a while, because you want to. I’m not talking about burning up the tarmac or driving fast. I’m simply talking about getting out on the road and driving. Because you can.Just on a final note; a quick bit of research tells me that there are currently around 3,000 Toyota Picnics on the road. If you drive one of these, you are of course completely excused from my ramblings, and in fact I’d actually prefer it if you stuck to the traffic-riddled main road home. “There’s no such thing as a standard day for me to be honest. There’s a five-year plan that’s in place and there are objectives that I need to meet”
N
ine Super League titles, four Challenge Cups, four World Club Challenge trophies and five League Leaders titles make Jamie Peacock a Rugby League legend – even without taking individual achievements into consideration. So, add his Man Of Steel award from 2003, as well as his inclusion in eleven Super League Dream Teams and you can see why he was finally inducted into the Order of the British Empire in 2012 for his services to Rugby League. His talent and ability on the pitch was unrivalled and unquestionable, the issue for his peers was, what to do next? It may have initially then surprised you, that for all his athletic qualities and talents, Jamie Peacock decided not to pursue a career coaching as the final whistle sounded on his playing time. Before retiring from professional Rugby League in 2015, Jamie enrolled onto the Sports Business MA at Leeds Beckett University and the rest as they so often say, is history: “Towards the back end of my career I thought about what I wanted to do quite a lot. I didn’t know if I wanted to coach and as soon as I 30 | LOCO | JUNE 2016
had started my Masters in Sports Business at Leeds, I knew that this type of role was for me. I was quite academic at school so I just thought it made sense to use that.” Jamie’s role at Hull KR (for those of you who are unaware) is officially titled ‘Head of Rugby League’ which admittedly could mean a number of things. It may indeed sound as though Jamie has a fair bit to do with the mechanics of the players and their daily training routines – I mean, who better to oversee training after all? Though Jamie was quick to admit that no day is the same. “There’s no such thing as a standard day for me to be honest. There’s a five-year plan that’s in place and there are objectives that I need to meet. I suppose there are three or four that you would say are critical which are, the establishment of a strong culture at the club, making sure we’ve got the right people and the right players in the building and making sure everyone knows exactly where we’re going and most importantly providing the right leadership for the department.” It seems as though Jamie’s transition from his playing days, into a full-time role off the pitch has been as seamless as his Super League skills. The 38-year old is one of many former
professionals to take up a position with a club in the world of Rugby League, however the fact that this was with Hull KR and not Leeds or Bradford will have caught the attention of many. “I think most players struggle with the transition from playing into a normal job, if there is such a thing as a normal job. There were a few reasons for choosing KR, I had a good relationship with Neil Hudgell, the Chairman, and I felt that the club had real potential. Every time I played here I could see how passionate the fans were. Also, with the greatest respect I wanted to get away from Leeds, I’d been there a long time and I personally think that you should always leave on your own terms and I managed to do that. I’m grateful for what Leeds have done for me, but this one is a job with some real purpose.” With Jamie now at the helm at Hull KR alongside the staff and players, one can only assume that things will improve. The accolades collected by Jamie throughout his career are an obvious indication that he knows how to succeed in this arena, which resulted in opportunities to share his knowledge on television. This may have prepared Jamie for a life away from the pitch, perhaps in front of the camera?

“I’d have felt like a little bit of a fraud trying to come into this job purely off the back of what I’d learnt playing the game and through my sporting career, so to have that academic underpinning has helped unbelievably” Still, it seems as though it was more an opportunity to reveal the real Jamie Peacock: “I think people can sometimes just judge you on your actions out on the field. They can see that there’s more depth to you as a person when working in the media, I like the fact that people can see a different side to me. I suppose if you watched the way I played the game you wouldn’t think there’s much depth to me as a person, but then I hope I get it across that there is more to me than just some bloke who used to run around as hard as he could and tackle people as hard as he could.” As I mentioned earlier, Jamie has already expressed just how much he is relishing the challenge with Hull KR. A real sense of determination is more than apparent when sat talking with the 6ft plus giant in his office at the KC Lightstream Stadium – even if his chair does look like it’s struggling to bear the brunt of his weight. “I’m in here for the long haul, I’m going to make this club successful and there’s no overnight success in sport – particularly in a salary-capped sport. You’ve got to work hard and make small incremental changes over time and that’s exactly what we’re doing here. I think the main thing is that I’m enjoying it.” The level of commitment to his role is also something that is extremely admirable, albeit 32 | LOCO | JUNE 2016
at the expense of family life on occasion. After setting off for work at around 6o’clock this morning and not expecting to return back home in West-Yorkshire at say perhaps midnight? Jamie is just happy that weekends and his body are finally freed up, having spent years preparing only for game-day. “It’s difficult but my family are understanding. I think the best thing for me is that when I played I couldn’t move all weekend after the game. My week was all focused around the game but because I don’t play at the weekends, if we’re playing on a Saturday I can do something with the family afterwards, or at least one day over the weekend.” Luckily for Jamie, the timing could not be better in terms of opportunity for growth and progression. If you hadn’t already guessed, I’m about to bang the good old ‘City of Culture’ drum once again – which is something that Hull KR’s Head of Rugby says may take some time to kick-in: “I think this can all only help and you can see what this did to Liverpool before, I think the City of Culture title allowed the place to be talked about in a different light and I think this can only benefit Hull too. There’s quite a large amount of regeneration but things like this take time, I don’t think we’ll see the true impact of the City of Culture
until maybe four or even five years down the line.” Aside from the fact that Jamie Peacock is as knowledgeable as anyone on the planet when it comes to Rugby League, his calm and collected approach to our interview certified Hull KR’s decision to employ Jamie as their Head of Rugby. Not just a man who knows how to take care of business on the field, his willingness to learn and better his business knowledge off the field of play will certainly allow personal growth alongside his new club. Jamie was keen to get across his desire to ‘earn his stripes’ shall we say, before stepping into a business role following his playing career – which again reaffirms the man as a extremely professional, driven and forward thinking guy. The perfect man for the job: “I’d have felt like a little bit of a fraud trying to come into this job purely off the back of what I’d learnt playing the game and through my sporting career, so to have that academic underpinning has helped unbelievably. I think players that are most proactive in this area during the later years of their careers will have a better chance of finding a role after playing. I’m just glad that I took the plunge and did it.”

Whitehills Dental & Skin Clinic is celebrating a first birthday this month, so naturally we caught up with Clinical Director, Amy Hills to talk about the story so far.

Amy Hills has built Whitehills Dental & Skin Clinic from the ground up and after a year in business, the clinic is moving forward at a rate that has surpassed even the expectation of its owner: “I thought the business would do well initially, but we’re so busy now. It’s only been a year – and to say we opened in June of last year is amazing really. I worked down in the Cotswolds, saved for four years and then put everything I had into this business.” The clinic offers a range of treatments ranging from dental bonding, right through to micro-needling treatments – so to say that Amy covers all bases would be an understatement. After serving five years in the Royal Navy, the owner and founder of Whitehills Clinic runs a tight ship (excuse the pun) and is proud to boast the best services and treatments that the area can offer: “When we were sourcing the equipment, we bought the best and spared no expense. I’m training all the girls up in a range of our treatments and they’re learning fast.” With one year under her belt, Amy has decided that the time is right to kick on and move forward with the business. After starting out with little other than a dream at the beginning of this journey, Amy is proof that you can build a successful business with key ingredients that are so often talked about in business.“I’ve always been determined and I’ve always known that I wanted to set up on my own. Even when I was working down in the Cotswolds, I knew I’d set up on my own. The West End is a beacon for the British arts and theatre industry, so who’d of thought that a company based right here in Hull would be the ones running the show.
fter Hull-based online ticket seller TicketTree. com landed the STAR/ SOBOM award for Outstanding Customer Service 2016, it goes to show that you don’t have to be in the thick of it, to win it. TicketTree. com specialise in theatre package breaks in a variety of UK destinations, however many of these shows are performed down in London, with competitors likewise generally setting up camp in and around the capital. I caught up with company directors, Will Langdale and Phil Allen to discuss their most recent success, as well as what life and business can be like away from the bright lights of the West End: Phil: “Because it’s online and telephone based we’re not really affected negatively by this at all. You might find the odd person who’s surprised that we’re not based in the West End but then we benefit from better business operating costs by being where we are and it doesn’t really make much sense to move down for the sake of being there.” Will: “I think by in large and I think this is something that the awards really highlighted, I think people are quite pleased to deal with a company that is in the provinces rather than

in the middle of the West End. I think people can perceive London as being this kind of heartless place, and even though you might go there to benefit from the 40-odd theatres with a thousand seats or more, you want a personal touch dealing with people who understand what it’s like to go from outside of London and into that environment.” “We definitely don’t hide behind an 0800 number or anything, when you call our business you know you’re calling Hull and I’ve yet to hear a customer be disappointed to hear that we’re operating out of Hull. If anything it’s almost a pleasant surprise that we’re not down in London.” Tickettree.com went toe-to-toe with some of the ticketing worlds’ heavyweights and came out on top. The likes of Ticketmaster, Seetickets plus many more were in attendance and amongst the nominees. So how did it all work? Phil: “It was organised by an organisation called the Society of Ticket Agents and Retailers (STAR) as part of the Society Of Box Office Managers (SOBOM) ceremony there. We’ve been members of this kind of self-regulatory body that deals with all aspects of ticket sales for a while now, it can be quite a high-risk area with concerns of people getting ripped off with things. So it’s a
kind of code of conduct that they have to instil confidence in people. So this was an award put together put together by STAR/SOBOM and it was a case of customer nominations and feedback to allow us to win the award, so we had to approach our customers. We get a lot of positive reviews and a lot of feedback so we thought we may as well give it a go.” Will: “We sent out these emails and just thought that it couldn’t hurt, then somebody from STAR got in touch with us asking if we were planning to come down to the awards ceremony, which we obviously thought if they are asking then something is going quite well. We got down there and I think we got a third of the overall nominations out of five companies.” It’s always great when a Hull-based company makes waves in any major city, but to do so in the capital amongst some of the biggest West End ticket offices is pretty impressive. To say that the idea for this company blossomed out of a post-football pint (as most noteworthy brainwaves do) in one of Hull’s local pubs only adds to the success story. LOCO chats with actor Simon Armstrong as he prepares for Educating Rita at Hull Truck Theatre Tell us about your role in Educating Rita... Frank, when we first meet him, is a disillusioned alcoholic barely treading water in a sea of cynicism and self-loathing. Through his various conversations with Rita, he comes to assess his attitude to education and to life as a whole. Rita’s fresh naivety and craving for knowledge reawaken something in Frank. When he moves beyond his initial sentimental attitude to Rita and begins to treat her with real respect, Frank rediscovers a respect for himself that he hasn’t enjoyed for years. It’s such an iconic story. How do you tackle a well-known piece as an actor? I don’t think the fact that a play is very wellknown affects my approach in the slightest. Each production (indeed each performance) of a play is - or should be - a fresh creation. The fact that a play is well-known usually only means that it’s good and that the actors can trust it. I certainly trust this one and look forward to doing it. How do you feel about working with Mark Babych at Hull Truck Theatre? I have never worked with Mark before but some of my friends have and they have enjoyed
the experience. We got on very well when we met at the audition and I think we seem to share a similar approach to the process. I’m sure it will be a lot of fun - and believe me, that is vitally important. Hull Truck has always resonated loudly in the business. It is, of course, a privilege to work with the company. How do you approach working on a two hander as opposed to an ensemble piece? If you’re doing a two-hander then you’ve probably got quite a big part. I think it’s important to prepare a little more thoroughly and hope that you get on well with the rest of the company! As an actor, you want the opportunity to flex your creativity; being exactly half of the cast gives you a pretty good chance to do that. There’s also no down time so you don’t get bored! Are you looking forward to performing in Hull as it prepares to be UK City of Culture 2017? I don’t know Hull very well at all. I have visited on tour a couple of times but only for a week at a time. My wife Helen spent 4 years at the university doing a French and Drama degree, and she is looking forward to coming back for
a visit. I shall certainly be drawing on her store of (somewhat out-dated) local knowledge to help me along. It’s exciting that Hull will be UK City of Culture next year but it doesn’t change anything for me - I think I’d try my best anyway! Frank is an important role model in Rita’s life. Have you had a ‘Frank’ in your own life? I’ve not really had a role model as such. My late mum and my step-father were certainly a huge inspiration. They ran a youth theatre in Taunton together when I was growing up where I cut my teeth as a performer. Stephen Daldry was also a member and quite a few of us went on to try our luck professionally. I’ve always admired people who try to follow their passions. If you’re going to fail, to paraphrase Jim Carey, you may as well fail trying to do the thing you love rather than anything else. I have two boys studying rock music at university - a part of me would feel more comfortable were they learning to be doctors or lawyers, but I love the fact that they are doing what excites them rather than something a little more sensible! 1. Tell us what you love about Hull? I have lived in Hull for 11 years now and it never ceases to amaze me. We have some incredible buildings. I always say that if you are walking down Whitefriargate, you should look up. Hull marina is also a lovely spot to go for a wander when it’s sunny. 2. What excites you the most about the City of Culture year? Putting Hull on the international stage (excuse the pun!) will show it off. It suffers from a lot of negative press. This will be a chance to redress the balance. And there will be some fantastic shows. It’s a once in a lifetime opportunity and I hope the city embraces it.

3. What makes for the perfect event? Something that people actually want to take time out of their lives to attend. It has to attract plenty of people, as that is what creates an atmosphere. It needs to be well-organised, and enjoyed by visitors and participants alike. Good weather is a bonus! 4. Favourite place to eat out - and why? I enjoy a good brasserie, so I tend to split my time between Stanley’s Brasserie on Ferensway and Leonardo’s on Princes Dock Street. They both offer generous portions of delicious home-cooked food at reasonable prices, with excellent service. What’s not to like? 5. Name your top 3 summer holiday destinations... I went to Singapore a couple of years ago. It was a great city, with lots of fantastic public art. Palma in Mallorca has a mightily impressive cathedral. And I am going to Marrakech later this year, which I am really looking forward to; their architecture is astounding.
