nother month passes by and we’re into March already. In this issue, we again focus around ambition, progression and most importantly local talent. Luckily for us we haven’t had to dig deep to find talent scattered here, there and everywhere. We have yet to even scratch the surface in all honesty, but there’s plenty of time left to cover every story isn’t there. So, onto the content and we start with our latest cover star… Calum Scott who will forever be a name etched into local celebrity gossip thanks to a rollercoaster 2015 for the singer-songwriter. I had the pleasure of meeting Calum for a coffee on a not-so dull Hull afternoon and found out what life is like following Britain’s Got Talent. As you may have imagined, the 27-year old is hard at work in the studio and has a number of key worldwide dates coming up in 2016. Staying on the topic of music, we teamed up with FRACTAL who delivered another stellar night at Hull’s ever-present venue, The Adelphi Club. Ben UFO, one of the UK’s hottest DJ’s and co-founder of Hessle Audio, took to the turntables – and we were lucky enough to make the cut, so naturally we take you through the night in pictures.

H

aving never before tried one of these classic French treats and being a true British sceptic, I was slightly puzzled by the look of Tony’s creations, as they lay there all greens, purples and pinks. After a lengthy discussion over a coffee, the Loco team and I try Tony’s creations and are blown away by the taste of these intriguing treats – they are the real bloody deal let me tell you. Their creator oozes passion beyond belief and is keen to tell us all about how his culinary journey has led him to the BBC Good Food Show 2016. Nevertheless, before we get into Tony’s exciting schedule, I would like to take a step back and find out just how this creative mind found patisserie.

showing off if I’m honest to my family and friends. “I then approached 1884 with some macarons that I’d made and I wanted to see what other people thought – I told him to be brutal, I just wanted to see where we could go with it.” Tony slowly took the plunge and dedicated more of his time to his kitchen, swapping his suit and hardhat for an apron and a pair of oven gloves. “My wife thought I was nuts, luckily 1884 was an incredible platform to jump from. The best restaurant in Hull, all be it my opinion, wanted my macarons.“Just to say that I supplied 1884 was enough for people to take notice. So I built up a small list of clients who I still supply today like 1884, The Westwood and The Star at Sancton.”

The man behind the macaron… “It’s actually a really long story but my background is thus” Tony started whilst taking a slurp of my poorly made coffee (our coffee machine is on the blink). “From a very early age my dad and my brother were builders, so spending hours and hours on building sites at weekends as a young boy I swore that I would never go into the building trade, having done all of that all of my life, so I went to art college.”

After attending Hull Art College Tony found himself working on projects such as The Viking Centre in York and The Deep – however the digitalisation of the industry forced the Hull-born designer to take a break from the game. Admitting to be an “old-fashioned drawing board” kind of guy, Tony decided to take off his design hat and return to an all too familiar setting. “I blew the dust off of my tools and went back into the building trade that I had spent years as a kid doing, and that was alright and I enjoyed that.” Despite initially enjoying the change, it was clear that Tony’s heart lay firmly in a world of creation – luckily a chance request from a family member sparked his passion for all things patisserie: “My wife’s sister wanted afternoon tea doing, like proper afternoon tea so I just went to town in the kitchen and created all sorts of stuff. It was really about 16

The Good Food Show… So, now that we know a little bit more about how Tony traded the tools and his drawing board for the heat of his own kitchen, we can continue. The BBC Good Food Show, to those who are perhaps unfamiliar with this event, is not your average foodie gathering. Celebrity chefs such as Michel Roux Jr, Tom Kerridge, Paul Hollywood and even The Hairy Bikers will be in Harrogate in April, all on call to taste a wide range of products. Tony will be taking his macarons to exhibition thanks to a nomination from another artisan producer from our region: “I was actually nominated by Justin Staal who has Staal Smokehouse – his product is just fantastic. Somebody put something on social media about a bursary and he said ‘well we won it last year, we nominate the Macaron Man’ which was a lovely thing to do. “If you got through the preliminaries then you got to the next stage, which I managed to do and the Show contacted me and said that I was through to the next round which was the tasting stage, so they asked if we could send our product to them.” Tony explains. Despite a slow response from the Show, the competition had wet Tony’s appetite enough to land a handful of awards at the East Yorkshire Local Food Network Awards. It wasn’t until after this EYLFN award that Tony heard back from the Good Food Show judges, and of course,

his product won. “I said to myself that I’d reapply next year but it was the day after winning at the East Yorkshire Awards that I heard back from the Good Food Show so I was still riding the high of winning at the East Yorkshire show.” Tony added.

The Product… Aside from the BBC Good Food Show, and Tony’s amazing patisserie skills, I wanted to ask the man himself if he had any preference as to which macaron he would happily devour. “My favourite flavour is actually mulled berries, because it takes the longest to make in terms of what I do. I take a bottle of Shiraz and seasonal red fruits and I will poach that all down in a pan, then I’ll add mulled spices to that. I’ll slowly reduce it down and let that mull for maybe an hour, marrying those flavours together.“So when you put that in your mouth it’s got the red wine depth, it’s got those Christmas spices and it’s just my favourite to make and to eat.” With an eye for detail and the skills to deliver almost any product I also wanted to find out what the future holds for Patrick’s Patisserie. “I set this thing up originally as Patrick’s Macarons & Patisserie because I liked the idea of French patisserie, I mean it’s just pure theatre.“But we’ve touched on the wedding industry, I mean in my first year I did a few towers and a birthday celebration at 1884 and another wedding tower for someone that I knew very well. It’s mainly weddings now, we’ve had a massive amount of bookings.“I’d love to work with restaurants and create a savoury macaron, so customers can order a starter perhaps some sort of pate and it looks like their desert. That would be fantastic.” Aside from the future, there was one thing that I just had to ask Tony. There seems to be a kind of age-old debate between whether we call these French fancies, a macaron or a macaroon. Obviously I was keen to ask Tony, being the expert after all, exactly why this is the case. “If I had a pound for everybody that had walked past my stall and told me that my product was in fact not a macaron but a macaroon, I would be a millionaire. “A macaroon, if you go to your grandmother’s old cookery books, is something that is made with desiccated coconut instead of using finely ground almond flour, so it’s a heavier product.“A macaron is made with ground almond and egg whites, it’s a light product and they are two very different textures and tastes.” Well, that’s settled then. Good luck Tony, we at Loco will certainly be routing for you at the BBC Good Food Show, Harrogate, in April.

Step 1 - The Sweet Chilli Sauce

• 4 x Red Chillies • 100g Granulated Sugar • 2 Garlic Cloves • 1 (cm squared) Ginger • 50ml White Wine Vinegar • 25ml Water Simmer for 15 minutes, then blitz in food processor and allow to cool whilst preparing the rest of the dish.

Step 2 - Fishcakes Prep • 1Red Chilli • 1Large Shallot • 2cm Ginger (peeled) • 1 tbsp Fish Sauce • 1 tbsp Soy Sauce • 1 tbsp Sesame Oil • Pinch of Salt • Pinch of Sugar • 1/2 stick of lemongrass Place in food processor and whizz. Add 300g of skinless fish (e.g. Pollock or Cod). Pulse until well mixed.

Step 3 - Fishcakes Patties In a bowl add finely chopped coriander and spring onion followed by the fish cake mix. Shape into small balls and flatten into discs (approx 5cm across). Shallow fry in ground nut oil until brown. Serve with toasted sesame seeds and salad leaves.

Calum Scott meets up

with LOCO Editor Tom Horner to talk about his new life in the limelight, the release of new material & performing at private parties in the world of Hollywood

Artistic Progression Calum Scott is one of Hull’s finest talents who was subsequently elevated into his current career as a recording artist through one of the country’s largest television shows. Naturally, his pursual of progression is confidently in motion creating a sharp shift in lifestyle, artistic direction & projected horizons.

I

t’s a Friday afternoon in sunny Hull and I’m waiting to meet up with singer, songwriter Calum Scott. Now, not that Calum needs an introduction, but the former Britain’s Got Talent finalist is set to embark on a career full of promise, and more importantly a UK tour with YouTube sensation Boyce Avenue. However, before we delve into the finer details of Calum’s busy schedule, let me set the scene a little. So, I’m in a Costa Coffee near Hull’s ever-stylish Marina, it’s Friday so I’m happy (as always) and Calum walks in, sunglasses in hand, with a beaming smile. A firm handshake follows, you know pleasantries, the usual – though strangely it feels as though I’ve known Calum for years despite having never met him before – some people do have that affect after all I guess? We then sit down with a coffee each and get chatting about London, his time in the studio, his plans for the next few months, all things music as you may expect. “I’m pretty much down in London a minimum of once a week. I’m very rarely up here (Hull) for a full week now” explains Calum – and then it clicks. I soon realise that this isn’t just another interview to Calum, we’ve been chatting as friends for a good ten-minutes now and he’s taken time out of his heavy schedule to let me get to know the real Mr Scott. Following Calum’s TV success the 27year old has been hard at work with the help of writers and artists down in the capital, producing and writing original material ready for his plethora of upcoming gigs. “Whilst I’m in London, I’m down there effectively to write music. So my manager first of all has been a godsend. “He’s hooked me up with people throughout the industry, or with interest that’s been guided through my social media or my website. There’s writers that I’ve brought in and others that my manager has brought in so I’m working with a great mixture of people,” explained Calum. Now, it’s clear from the off that Calum is a social animal, I mean conversation has flowed naturally and not simply with the same rehearsed answers that he could (quite easily) feed me. We talk about artists and writers that he is currently working with and honestly the list is pretty impressive, given the fact that Calum is still fairly new to the industry. “I’m writing with a guy called Ian Lovett, who helped develop Jess Glynne and toured with Michael Jackson. I’ve also been

writing with a guy called Matt Marston who’s worked with Ella Eyre. The standard of writers that I’m working with is pretty high. “Writing isn’t some thing that I’ve done from an early age, I mean a lot of the artists that I’m working with have done it since they’ve been five or six years old, but for me I see it as kind of a blessing that I’ve started late – as strange as it sounds. “I’m past my teenage years, I’m past all the going out and partying and I’m ready to knuckle down so for me it feels like perfect timing,” said Calum. As we both work our way through our coffees and the faces come in and out of Costa Coffee, I realise that time is passing quick – in fact we’ve been chatting for almost half an hour already and conversation doesn’t seem to be dying. Calum’s enthusiasm smacks you in the face and his passion for his music is equally as obvious. This alone is endearing and inspiring all at the same time, but more than anything his humble tone is something to admire. Admittedly, the “lad from Hull” (in his words) is living the dream, writing music with industry professionals who have worked with Michael flipping Jackson for goodness sake. Does it get any better? Well, as a matter of fact, for Calum it does. His connection to the music is something that he is keen to impress on me, which is something that I am likewise keen to understand. “You only have to look at Sam Smith’s song ‘Stay With Me’ it’s about a onenight stand, but you can write a song about literally anything if you can connect to it emotionally. That’s what puts the nail in the coffin for me. “I did a song, that I believe is my strongest – my manager feels the same way too – it’s a very heart felt song and it’s pretty emotional really. Because my dad lives in Canada and I don’t get to see him very often at all, maybe once a year”. “I wrote it with him in mind, I mean I love him to death and because I wrote the song about something that I was very passionate about, it just came naturally and that really is key. “I don’t have any weird rituals or creative routines when I’m writing, like I don’t sit on the toilet and write or anything like that. I tend to bounce well off other people, so whether that’s sitting down and writing with others or just spending time with artists. I’m a very social person and that gives me a lot of inspiration, not to sound too cheesy.”

To return to the above point, things are again still moving forward for Calum, after a kind of punt email slowly snowballed into a career changing opportunity. To elaborate a little before we go any further; Calum will be joining Boyce Avenue on their UK tour in March, playing a number of venues including Roundhouse in London. The American group have a staggering following on social media and YouTube, amounting to well over 10million followers or subscribers across a range of social platforms. Calum explains that he got in touch just for the hell of it really and the rest as they say is history: “I actually emailed Boyce on a whim – I’ve followed them for years on YouTube and it was just crazy that they even replied but they said something along the line of ‘two of the boys know you, we’d love to collaborate’ so obviously I was super stoked about it, straight away I was on the phone to my manager.” “Then, there was a little bit of a lull but then looking at it they had their album and getting all that ready so there was a period of time were I was gutted because I didn’t think it was coming off, but then my manager emailed back and asked if they were still interested. So they replied and said that they were announcing their world tour and they wanted me to be part of it. I was like ‘what, absolutely sick yes’ so they’ve got me on their UK tour. I’m so excited for every date but the Roundhouse in London is the one I’m really looking forward to. It’s a huge venue, they’ve had the iTunes Festival there, Amy Winehouse, you know Ed Sheeran, all the greats, just to see my name amongst this list of artists is ridiculous.” This is bound to set Calum on his way to worldwide stardom, not that the talented singer needed much of a push – however opportunities like this are not to be sniffed at as Calum revealed. As we make our way through a range of topics, we touch on Calum’s relationship with his fans and his thoughts on people from all parts of the world knowing whom he really is. It’s interesting to find out what it must feel like to experience fame in its truest form, and to be honest Calum summed it up perfectly. “My fans mean the world to me. I can sing on my own in my studio and love what I do, like I’ll always sing – but to sing to my fans and for them to sing it back is just priceless. “People don’t have to get in touch, but like I’ve

never gone on Ed Sheeran’s Facebook and posted saying ‘oh I love your music Ed’ even though I really do. It means the world that people take the time to do stuff like that because then you know that they actually do want to hear your music. “I don’t ever want my fans to feel like there’s a barrier between us. I love my fans so much, I try and look at everybody’s tweets, and posts and everything and I try to reply as much as I can, I am not just saying that. “We’re (Calum and Boyce Avenue) going to do like a tour diary and stuff, you know to engage everyone and maybe do stuff like a beer pong tournament; so whoever gets a shot in one of the cups we have to take a forfeit from one of the fans.” It’s little touches like the ‘fan forfeits’ that will give Calum’s thousands of fans a true insight into who the real Calum – a modest and extremely talented guy from Hull. We both finally slurp back the dregs of our now cold coffee (thanks to our hour long chat) and this is when I hit Calum with an unexpected question. I ask him to tell me something that his fans do not know about him, absolutely anything and his response is not perhaps what I was expecting: “I mean I’ve done a lot of stupid stuff, as we all have but I don’t know. I think you’d have to ask my mum to be honest, I’m sure she’ll have something for you. “Actually, when I was younger – my mum always tells this story – I was in a paddling pool with all my action figures that I used to keep in a little lunch box kind of thing. “Anyway, I packed them all away and closed the lunch box but because I was naked, I mean I was only a little lad, I slapped it shut and closed it on my, erm, my bits.“I screamed so loud, damaged my voice apparently and the lunch box was just hanging there. My mum actually asked me the other day when she brought it up ‘have you had any problems with it since’ I couldn’t believe we were even having that conversation – I obviously said no too.” It’s this kind of answer that just solidifies the humble, down to earth aura that oozes from Calum. I have no doubts that his career will be long, successful and an inspiration to the many who look to Calum as a role model, a popstar or simply as the lad from Hull who made it.

PAUL WOODFORD It doesn’t matter what age you are, or how good the TV was when you were growing up. If you’re into cars, nothing beats a re-run of The Sweeney.

W

hich is why, when I was told I was being sent a 1965 Mk2 Jaguar to make a film with, I immediately went in search of a secluded wooded area in which to abandon the getaway car. No, really! When I set out to produce car films, I promised myself I’d do things a little differently. I wouldn’t jump in a Mini and hum the ‘Self Preservation Society’, or fill an estate car full of kids and suitcases in an attempt to prove – or disprove – the manufacturer’s claims about boot capacity. There are plenty of places you can read up on the differences between the 3.4 and 3.8 litre engines fitted to the Mk2 Jags, and pages of videos telling you what they’re like to own and drive. And equally well documented is the car’s prowess as a worthwhile investment. So I went into the woods and made a film about bank robbers. The movie bank robber of the 1960s, that is. You see, much like the Jaguar has become the getaway car of choice for period brit cop TV shows, the bank robber is the flawed hero of the heist genre. Now owned by TATA, the Jaguar brand continues to be the badge of choice for film directors looking to develop a character an audience can relate to, despite inherent issues of questionable morality. Just look at the (very sideways) Jaguar XF which starred in the 2012 remake of The Sweeney. You might question Ray Winstone’s swaggertastic take on Jack Regan, but you couldn’t possibly question the Britishness or snarly aggressiveness of that supercharged V8 engine. A world away 40

from the six cylinders lined up under the bonnet of its 1965 predecessor, yet similarly evocative. Motoring for me is all about the experience, though. And the best ones come when you least expect them. Setting up the lighting in a dimly lit area of wasteland, peering out from behind a sinister-looking balaclava, my eight year old said: “Don’t worry Daddy, if anyone comes, I’ll tell them you’re not really a baddie.” Actually, nor is the Mk2 Jaguar a baddie of the classic motoring world – it’s powerful, well equipped, unquestionably beautiful and quite possibly the best preserved 51 year old I’ve ever seen. What is a Plus Size Model? With the topic of what clairifies as a ‘plus size model’ very much a talking point we further the conversations raised in last month’s edition of LOCO with local model and TV star Simone Clark

hose immersed in the world of fashion will tell you that the average dress size for a female model is roughly a size 6, rising to an 8 – so, naturally it would seem logical to assume that anyone above this would qualify as a plus size model, right? Well, for the most part, you would unfortunately find that this is indeed the case. Now, the words ‘plus size’ would generally suggest that anyone who falls into this bracket of fashion would be larger than your average female in the UK. However, I’m pretty sure that most men and women would sing in harmony when it comes to realistic expectations for women and their body types – I myself find it hard to imagine a world where everyone fits a certain shape. Sadly, the fashion industry is most definitely not the flag barer that it should be for females above that all-important size 8. The benchmark set by these fashionistas is one that has excluded thousands of aspiring models from a kind of elite social group; not unlike our previous cover star Elizabeth Holland. However, another young lady that has managed to stick the proverbial middle finger up at the industry, along with her doubters, is Beverley born model Simone Clark. The 27-year old previously appeared on Britain’s Next Top Model and initially impressed, despite being branded a plus size model right from the off by the judges. This then snowballed and resulted in an exit for Simone, as well as comments made by judge Julien McDonald who stated that it ‘would be a joke’ if a plus size model walked away with the competition crown – nicely put Julien, not. We then find ourselves in familiar territory, as Simone was forced to take a break from the modelling industry, despite having a real passion for fashion (excuse the rhyme, I couldn’t resist). Simone did however decide to voice her story to the media, agreeing to interview for radio stations across the country in the hope that her message may change the industry’s misconception of ‘plus size’ models.

“The modelling industry in my eyes will always have different views on what is considered to be ‘acceptable’ as a model” Her story may not have made waves across the wider industry – it seems pretty apparent that it’s going to take more than just Simone’s story to change this – but it has had a positive effect on her personal career. After pursuing a career in acting and appearing on Emmerdale as Sandra, Simone has since re-entered the world of fashion modelling, however this time without the pressures that she had previously battled. Simone is now signed to Nemesis Models, based in Manchester and appears on fashion campaigns regularly and had this to say since re-joining the world of fashion modelling: “There is so much work for girls all shapes and sizes. The modelling industry in my eyes will always have different views on what is considered to be ‘acceptable’ as a model. In my opinion beautiful can be any shape or size, embrace what you have and love your body. A model should be someone that others can relate to and realise beauty can be more than one size or one look. As long as you are healthy, look after yourself and enjoy the work you do as a model then I say CRACK ON.” 45
