EDITOR’S TALK The Art of Sharing

Looking back at my happy childhood memory, a familiar sight of my parents and many adults carrying their meal Pinto would appear; my eyes would be dazzled by a Thai style metal multi-story food container with many kinds of painting designs such as plain reddish-yellow color, chickens and flowers. Normally, there would be about three or four stories in one Pinto set. Inside the Pinto, there was always more than enough food for everybody, so my brothers, sisters and I were called in to join our parents for every meal. All food in the Pinto were cooked and prepared in a very simple way such as fried vegetable, omelet and clear soup while steamy fragrance rice was put in the lowest story or the bottom of the set. The thrill of the moment was when we were guessing which menu was put in each story as we slowly opened each container. Times have changed and too many times I found myself eating alone; still, I always imagine the happiness when family members get together, sitting together and sharing meal. I cannot remember the last time I had used Pinto during a meal. Today, Pinto is still a symbol of Thai eating culture; people gather around to sit together to share their food and happiness. Smiles come from several tasty dishes with the perfect combination and dynamic taste: the sweet, spicy and sour make me realize that not only can the tongue savor the delicious taste, the mind holds in people’s precious memory just like a Pinto holding its delicious food. For us, Pinto is more than just a food container. So, do you already know whom you will have a next meal with? :)

suitable for an aesthetic picnic, the cool breeze in the winter might change all that. The crisp temperature wind and warm sunshine might just exactly be perfect for a fun picnic. But putting all your food in an ordinary Tupperware container might be all too dull. Why not try something retro like a Pinto? Choosing a reddish yellow or pastel color with flowers decoration on this Thai style food container could turn out to be a chic and cool theme for your exciting picnic.

What is Pinto? Why was this rounded food container called a “Pinto” in Thai? It might originate from a Japanese word “Bento” which comes from a Chinese word “Pian Tang”. In the past, linguistic believed that the word “Pinto” came from Portuguese language; but the word “Pinto” means chick in Portuguese so later this idea was dropped. We don’t know exactly when the Japanese’s Bento or the Chinese’s Pian Tang made its way across the ocean to Thailand but we sure are fond of the word “Pinto” right now. So we now know the many names for this special food container; Bento in Japan, Pian Tang in China, Lunch box in the West and Pinto in Thailand. The different styles of food containers distinctively reflect that country’s cultural identity. In Thailand, the happiest moment of the day is when people gather around to share their food enjoying their time together during each meal. In India during noon, at every train station of Mumbai,

they will have a special lunch box or Pinto delivery phenomenon which may be the most punctual delivery service in the world. These delivery men are called Dabbawala. Everyday more than 5,000 Dabbawala deliver more than 200,000 Pintos across the city by trians, which means each Dabbawala may carry up to 40 Pintos per time with the weight of about 65 kilograms. They have to pick up hot Pinto from customers’ houses and send them to the customers’ offices traveling about 60 miles per day on the trian. And because of the long distance between one’s house and office, each customer’s Pinto might have to change hands between 3 - 4 Dabbawalas on the way before actually reaching the customer’s final destination. Pinto has a deeper meaning than just keeping food fresh. Not only just a food container, Pinto is also an excellent taste preserver; a feast for the eyes, a delicacy for the tongue and a keeper for the heart from the giver to the receiver.

Pinto Picnic People are diverse when it comes to having different picnic styles; some like freedom while others value their privacy. For private moments, they might go solo on a picnic with their favorite books while they let their imaginations run wild with the wind under the big tree. Some make bite size sandwiches that can be shared with good friends during a meaningful long chat. Some love to go on a picnic with the whole family; father prepares a happy tune and pack his favorite violin so he can play for the entire family while mother prepares delicious food for the Pinto; snacks and beverages like wine and juice will also be offered to all members as the musical notes take flight in the air. The enticing aroma from homemade cooking in the Pinto invites everyone to eat. During a picnic, people can enjoy leisure activities like lounging around, taking photos and carrying on small talk happily with each other. How precious time is? It’s amazing how an ordinary picnic with such simple activities can possess such charms that can draw people together and make them feel closer to each other just by sitting on the same mat and sharing a simple meal together. A simple meal becomes extraordinary when it connects people, friends, family members or loved ones together in such a joyful occasion.

あれば、朝や夕方しか開かれない市場、24時間休みなしの市場、水上市場、植木市、ペットの市場まで、他にも色々な市場ある。今日は、無農薬農産物の定期市を紹介しよう。さて、どんな定期市なのか？ The organic market fair is a place where health lovers can meet farmers who are also concerned about producing safe produce for good health. They farm without using chemical fertilizer or insecticide. They sell their products in a very simple down to earth way like putting them in baskets. Some vegetables were fastened together into a small bundle and sold for 5 baht each. Others were sold by weigh with the cost starting from 5 baht per 100 grams. Besides that, they also sells unpolished brown rice, herb juice, mineral water and even boiled eggs. There, every product has a clear price tag and the scales are guaranteed to be standard. Most of the sellers are local villagers who show genuine hospitality through their friendly manners. Every product is organic and best of all, not expensive. Not only will you find fresh organic food, but many cooked food are also available. Don’t forget to try a simple Thai style dessert, Khao Tom Mud; sweet steamed sticky rice with black bean or banana wrapped in banana leaf giving you great aroma and taste. When you decide to come shop at this market, don’t forget to bring your own bag or basket to put everything you bought in instead of asking for a plastic bag from the sellers. It is not difficult to get to this market; just take red taxi and tell the driver you want to go to the agro-market fair near Chiang Mai University on Nimmanhamin road. The market opens every Wednesday from 6 o’ clock in the morning to 2 o’clock in the afternoon. Just today, I bought 2 bundles of ivy gourd for 20 baht; and now, I really can’t wait to fry them with mince pork. I can almost taste it now…oh so yummy.

無農薬農業の定期市は、健康に気を使う買い手と化学肥料や農薬を使用せず、野菜作りに励む売り手が出会う市場だ。売り方もとてもシンプル。かごにいれられた野菜たちは、一束または量り売りで、一束または100グラムで5バーツから買うことができる。野菜の他にも玄米やハーブのジュース、ミネラルウォーターのゆで卵などが売られているが、全てに値札がついているので分かりやすい。基準を満たした量りで、騙し合いは一切なし。この市場での売り手は殆どが地元の人々、感じのいい人が殆どで、製品は全て無農薬、そして何より良心的な価格がうれしい。無農薬の野菜や果物の他、加工食品も沢山売られていてるが、お勧めは、黒豆とバナナのカオトムマット(餡をもち米で包み蒸したお菓子)、バナナの葉で包まれいい香りが食欲をそそる。また、市場で買い物の際は、レジ袋の変わりに買い物カゴや買い物袋を持参できれば、市場のコンセプトとにもあってとてもいい。市場へのアクセスも簡単、赤い乗り合いバス、ロッデーンが便利。チェンマイ大学の傍、ニマンヘミン通りからすぐ近くにあり、運転手に“ パイ･タラートナッ･ガセート”(農業定期市までお願いします)と伝えるだけ。市場は朝6;00-14;00まで開かれている。

If we talk about the word “first”, what comes to your mind? Some may think about their first love, others may think about their first school or even their first kiss. But for these two brothers, it’s the thought of building something together, The First Residence and Café. The elder is only 1 year older than his younger brother; they went to the same school and university, studied abroad together, have the same career working for the same company. They are Pom and Por. あなたの初めてって何だろう。初恋、初めての学校、初めてのキス。でもこの2人の兄弟の初めては、彼ら2人が力を合わせて創り上げ

“When we think to do something and it come from love and experience, it must be done greatly. Like these two brothers, they do this first thing together with love.” How did The First Residence and Café begin? The area used to be an old commercial building of our family and we had an idea to run business in our hometown; Mae Rim district in Chiang Mai province. We were raised there and want to make a community well-known. So we asked our family for the place and change it into a hostel, restaurant and coffee shop, named The First Residence and Café, which implies to the first thing that we are doing together.

ザファーストレジデンス&カフェの経緯を教えてください。ここは、以前は自宅の敷地内にあった長屋でした。何か兄弟でビジネスを始めたかったのですが、それは幼い頃から住みなれ、思い入れの強いチェンマイ、メーリムでと決めていました。僕たちは、皆が集まり、多くの人々に知って貰えるコミュニティを創りたかったんです。そして、家族にお願いをしてここにホステル、レストラン、カフェを建てました。ザファーストレジデンス&カフェ、2人の兄弟が最初に手掛けたプロジェクトです。

How do you manage each part of the business? Pom graduated in the field of Hotel and Tourism field so he takes charge of room reservation. Our rooms were built and managed with high standards and based on our own personal taste. Por handles the restaurant based on what he had learned at the Le Cordon Blur in Australia. It was a perfect well balanced set up.

What is the highlight of your hostel and restaurant? Mea Rim district is an important tourist spot for natural resource attractions and cultural activities in Chiang Mai. It is not far from the city and is the main route to many other tourist spots such as water falls, mountains and outdoor activities. Moreover, the community’s simple way of life which surrounded the place is so impressive like the local morning market, morning line of monks accepting alms offerings, the friendly people and comfortable means of transportation conveniently available with public transportation to the city all day long. For the restaurant part, we applied both knowledge from classrooms and work experience in the restaurant abroad to manage our own restaurant. Moreover, as a flight cabin crews, all visitors can trust in our sincere service standards.

Twelve U.S. College coaches are coming to Burapha for the second year in the roll on their mission to teach skills and techniques to young talented Thai golf lovers. This is a great chance for Thai children to receive authentic American training right on Thai soils. Thai kids can learn all the essentials they need to know in the camp set up at Burapha Pattaya, Thailand which took place on November 15-16, 2014. Best wishes to all children who wish to win scholarship that could lead them to their final career goal.

Behavior: Total length is 24-27cm. with big black helmet-like head, green body and blue long tail feathers. It’s a beautiful bird that belongs to the species of broadbill that is found in the Himalayas, extending east through Northeastern India to Southeast Asia. In Thailand it is fairly common resident birds that inhabit in the evergreen forests of 500-1,000m. above sea level. The Long-tailed Broadbill is a forest bird that lives on insects, small reptiles, aquatic animals, and also fruit from time to time. It is very sociable and normally travels in large, noisy parties except during the breeding season from February to September. It builds a pear-shaped nest in a tree above the ground 30m. decorated and reinforced with moss and cobwebs. The female usually lays between 5 and 6 eggs that are incubated by both sexes; both sexes also help to feed the young.

全長２４－２７ｃｍ。黒い大きな頭に幅広い嘴、緑色の体と青色の長い尾羽をもつ、スズメ目ヒロハシ科に属する美しい鳥です。ヒマラヤ地方からインドシナ、スマトラ島、ボルネオ島に分布しています。タイでは海抜500－1,000ｍの常緑樹林に生息するかなり一般的な留鳥です。繁殖期以外は非常に社交的な鳥で、通常はペアか騒がしい大きな群れで生活します。大声で甲高い“tseeay”や“pseew”の鳴き声を連続して繰り返しながら森林を横断するように移動し、時折小さな群れや他の食虫性の鳥でつくるhunting groupに混群します。性質はむしろ臆病です。葉の茂った樹冠で主に昆虫を捕食しますが、果実や小さな爬虫類、水場では水生動物も食べます。その大きく開く嘴は見つけた果実を丸ごと食べるのを可能にしています。Broadbill類は多くの鳥たちと同様に一夫一婦制です。繁殖期は２月－９月。地上30ｍまでの樹木の枝やつる植物に、側面に入り口のある大きな洋ナシ形の巣を吊り下げます。見た目にも素晴らしく見える巣は、実に精巧に作られ、苔やクモの巣で被って補強とカモフラージュが施されています。

Temple Guru: Mr.OTA Kimitake Text & Picture: Mr.OTA Kimitake E-mail: otaktm@hotmail.com All right reserved. 【場所】ターペー門からターペー道路を東（ピン川方向）に約50m行った左手の寺。向かいが、前回報告したマハワン寺である。【概要】100 報ほどの資料を読んだが、資料間の齟齬が大きく確信がもてないので、以下の記述に注釈を加えることがある。オリジナルの建立はランナー第9代ティロカラート王の治世（15 世紀中~後期、寺の案内板）というのが妥当と思われる。第6代クーナー王の治世あたりからランナー王国は隆盛期を迎え、城外にも寺の建立が始まった。ターペー門からピン川へのびるターペー通りには、今回のチェタワン寺を始め数軒の寺が並んでいた。門のすぐ外側に、この寺とマハワン寺（第24回）の二軒。また、ターペー道路がメーカー運河と交わるところを押さえていたのが、セーンファーン寺（第18 回）とブッパラーム寺（第20 回）である。この寺には紹介すべきことが溢れている。まことに申し訳ないが、項目を立てての記述では、到底限られた紙幅に収めることができないので、乱暴であるが項目の見出しだけを羅列することでご容赦いただく。

【紹介】(1) 寺にはウボソットがなく本堂がその機能を兼ねている。境界石はなく埋められているニミットだけである。(2) ウィスンカマシマ（正式認定）は1923年とされるが到底承服できない。16世紀半ばから200年続いたビルマ支配の混乱下に資料が失われたものと思われる。(3) 仏塔、本尊、守護の獅子などにビルマ様式が濃く漂う。この付近にビルマから来た人々が住んでいたこと、チーク材関係の仕事で財を成したビルマ人豪商のピチット氏が現在のウパクット寺のあたりに住んでおり、この地区の寺の建立や修復に多額の寄付をしたことから、ビルマ様式が入ったという歴史がある。(4) 寺名は釈迦に縁の深いインドの祇園精舎のサンスクリット読みに由来する。(5) 広い境内なのに本堂は南向きである。境内は駐車場しても利用されている。
