COUNTY DOWN BUSINESSES URGED TO ENTER 2017 RESPONSIBLE BUSINESS AWARDS Business in the Community is calling on responsible organisations in County Down to enter the 2017 Responsible Business Awards in Northern Ireland.

he annual awards, which are run by Business in the Community and sponsored by Electric Ireland, seek to recognise and celebrate firms throughout Northern Ireland that are making a difference by taking practical action to address pressing social and environmental issues. he judges said; “Here’s a woman on the road to international recognition after identifying a gap in the market to produce toys which are fun and smart. Her products are unique in that they bring a more artistic and intuitive approach to technology – toys that aren’t just computers but have some old world charm.” Commenting on her win, Alicia said; “To be recognised by Women in Business, such a fantastic organisation and amongst so many great businesses, has been truly humbling. We are delighted and honoured and so grateful.” Thirteen other trophies were handed out on a night of glitz, glamour and high entertainment as more than 400 from the local business community

gathered for what has become the defining event for female entrepreneurs and women-led businesses across Northern Ireland. Commenting on the winners, Women in Business chief executive Roseann Kelly said; “They are all women with vision and determination, qualities that have contributed to their success. ABBEYFIELD & WESLEY ART & SOUL EXHIBITION IN CURVE, BANGOR Abbeyfield & Wesley Housing association recently hosted an “art & soul” exhibition at the Curve gallery, Bangor Carnegie library. The exhibition showcased artwork created by older people who are living in Abbeyfield Homes across NI and Great Britain.

T

he aim of the exhibition was to highlight the important therapeutic benefits art brings to older people, particularly those living with dementia or other medical conditions. Abbeyfield provides a range of high quality accommodation and services to older people throughout Northern Ireland, from purpose built apartments, right through to sheltered bungalows and flats, supported sheltered houses and residential care. The charity’s central ethos is that older people should be enabled to retain links within the local community and that overcoming loneliness and isolation can make a huge difference to an older person’s well being. Speaking at the launch of the art exhibition, North Down MP, Lady Sylvia Hermon, congratulated all of those involved: “Art can unlock memories and emotions; it can both excite and capture imagination. It can inspire communication even amongst those deserted by conversation

through the impact of dementia or similar conditions. Art can inspire new memories, friendships and meaning. This fascinating collection of works created by Abbeyfield residents, some of whom are living with dementia, challenges our perceptions. It is a real achievement and something for all of those involved to be rightly proud of.” Discussing the importance of the exhibition, Geraldine Gilpin, Chief Executive of Abbeyfield & Wesley Housing Association, said: “The art exhibition celebrates our residents who are as unique and individual as the artwork they have created. Ethel (73) has lived at Abbeyfield House in Ballymena (132 Ballymoney Road) for the past three years. She is registered blind and never had an interest in art or craft until she was encouraged to participate in art sessions organised by the House volunteer, Gemma Lowry). Ethel has now experimented with a variety of material and has a particular interest in drawing landscapes and animals. A large scale felt artwork is also displayed in the exhibition. This was the result of a collaborative arts project called “Home is…” which involved Arts Care and Abbeyfield & Wesley. Abbeyfield residents engaged with Arts Care creative writer, Michelle Garvey, and an Arts Care visual artist, Gráinne Kielty. Working creatively and reflectively they created the felt artwork. Workshops took place in Ballymena, Lurgan, Donaghadee and Greenisland, with the artist bringing all of the pieces together.

LOCAL STUDENTS BECOME ENTREPRENEURS OVERNIGHT The DICE Project, supported by the Big Lottery Fund, provides community-led youth projects to 10-16 year olds across North Down.

T

he project kicked off with a weekend residential in Lorne House that brought together students from five schools across the Holywood and Bangor area. Students from Bangor Academy & Sixth Form, Glenlola Collegiate, Movilla High School, Priory Integrated College and St Columbanus put their business skills to the test in order to come up with a profitable Halloweenthemed product. The ‘overnight entrepreneurs’ started four companies with Young Enterprise, developing skills for life and work through this handon enterprise experience. The project culminated with a trade event at Bloomfield Shopping Centre over Halloween weekend. Students were delighted to sell out in the first hour, proving

that the market research they carried out and their product design were both an important part of the success. One of the students taking part in the enterprise project said: “Through setting up and running our business, I learned that you have to work as a team to get anywhere”. Another student explained: “I learned that to run a successful business you need to have good organisational skills and my favourite part was speaking to customers”. Carol Fitzsimons, Chief Executive at Young Enterprise NI commented: “It is fantastic to team up with the DICE Project. Their values align closely with those of Young Enterprise, as our work ensures that young people develop the right skills to be prepared for life and

work in the post-education world. Collaborative projects such as this help to develop the essential employability skills that give these young people a higher chance of securing employment in the future. Roast Crown Of Turkey With Sage & Onion Stuffing SERVES 6-8 75g (3oz) butter, softened 1 garlic clove, crushed finely grated rind of 1 orange 1 tbsp chopped fresh flat-leaf parsley 1 tsp chopped fresh thyme 1 x 5kg (11lb) turkey crown 6 rindless smoked bacon rashers FOR THE STUFFING: 75g (3oz) butter 1 onion, diced 1 tsp chopped fresh sage 50g (2oz) pine nuts, toasted 175g (6oz) fresh white breadcrumbs sea salt and freshly ground black pepper FOR THE GRAVY: 1 tbsp plain flour 300ml (1/2 pint) chicken stock

1 Preheat the oven to 190°C (375°F/ gas mark 5). 2 To make the stuffing, heat a frying pan and melt the butter. Add the onion and sage and cook for a few minutes, until softened but not coloured. Add the toasted pine nuts, then stir in the breadcrumbs, mixing well to combine. Season to taste. Wrap the stuffing in buttered tin foil and mould into a large sausage shape, then chill until needed. 3 Next, prepare the turkey crown. Cream the butter until very soft, then add the crushed garlic, orange rind, parsley and thyme. Beat well until thoroughly blended. Gently loosen the neck flap away from the turkey breast and pack the flavoured butter right under the skin – this is best done using

gloves on your hands. Rub well into the flesh of the turkey, then re-coverthe skin and secure with a small skewer or sew with fine twine. Finally, cover the top of the crown with the rashers. 4 Place the turkey crown in the oven and calculate your time – it needs 20 minutes per 450g (1lb) plus 20 minutes, so a 5kg (11lb) crown will take 4 hours and you’ll need to put the stuffing in for the last half an hour. The turkey crown will cook much quicker than a whole turkey, so make sure to keep basting it. You can cover it with foil if it’s browning too quickly. When cooked, cover with foil to rest for 20 minutes and keep warm. 5 To make the gravy, skim all the fat from the cooking juices, then pour off

all but 3 tablespoons of the juices from the roasting tin. Stir the flour into the pan residue and cook on the hob, stirring over a low heat until golden. Gradually pour in the stock, stirring all the time. Bring to the boil and let it bubble for 2–3 minutes, until thickened. Season to taste and keep warm. 6 To serve, carve the turkey crown into slices and arrange on warmed plates with the slices of cooked stuffing.

MacNean Frangipane Mince Pies MAKES 18 FOR THE SWEET SHORTCRUST PASTRY: 175g (6oz) plain flour 100g (4oz) butter, diced and chilled 50g (2oz) caster sugar pinch of salt 1 egg yolk, plus beaten egg to glaze 1/2 tbsp cream 1/2 tsp lemon juice FOR THE FRANGIPANE: 100g (4oz) butter, softened 100g (4oz) caster sugar 2 large eggs

100g (4oz) ground almonds 1 tbsp plain flour 1/2 tsp almond extract, or to taste FOR THE FILLING AND TOPPING: 100g (4oz) mincemeat 25g (1oz) flaked almonds apricot jam, to glaze a little lemon juice or water icing sugar, to dust 1 To make the pastry, place the flour, butter, sugar and salt into a food processor and blend for 20 seconds. Add the egg yolk, cream and lemon juice and blend again just until the pastry comes together – do not overwork the dough or the pastry will be tough. Wrap in cling film and chill for 1 hour. 2 To make the frangipane, put the butter and sugar into the unwashed food processor and blend until soft and creamy. Scrape down the sides, then add the eggs and continue to process. Don’t worry if the mixture looks curdled at this stage. Add the ground almonds, flour and almond extract and mix briefly. 3 Preheat the oven to 200°C (400°F/ gas mark 6).

4 Roll the pastry out thinly on a lightly floured work surface and cut into 18 x 6.5cm (2½in) circles and use these to line the bun tins. Spoon a teaspoon of mincemeat into each tartlet and top with the frangipane. There is no need to spread the mixture flat, as it will level out in the oven (but don’t overfill the tins). Special festive events, grottos and residentials at our Narnia log cabin, are tailored to families’ needs and aim to bring everyone together to lessen feelings of isolation. With celebrations for Christmas just round the corner it is a busy time of year. However at Oscar & Joy we are already thinking about what 2017 will hold, and the design trends that shape the world we live in.

F

irst it’s clear that the growth of a design orientated world will continue. The look and feel of products, as well as how they are used, will become increasingly mainstream. Price will continue to be a factor, but increasingly consumers will focus on value rather than cost. Products that are beautiful, easy to use, and last the test of time will be cherished. At the same time there is a distinct trend toward minimalism. We may indeed have reached “peak stuff”, but this doesn’t mean a monk like abstinence from future purchases. Rather it involves greater discernment in what we buy. The polished silver kettle that lasts 30 years suddenly becomes a much better deal.

The pursuit of lifestyle experiences will continue to grow, but consumers will increasingly want to take charge of making those experiences happen. For example the barista experience will be extended from the coffee house to the home, as consumers experiment with different ways to brew and enjoy the bean from their own kitchen. More authentic experiences will also pervade our travel aspirations. Countries that have retained their distinct character, and are now reengaging with the world, such as Colombia and Myanmar, will be high on the list. But we still love a good party, and Canada, which celebrates its 150th birthday next year, is Lonely Planet’s must visit destination of 2017. But how we travel

will start to become just as important as where we go. Our lives will continue to become more and more tech enabled. But there will be something of a pushback from the pervasive and intrusive nature of technology, as consumers re-appreciate the personality of products from an earlier time. The pleasure of a real book, personally selected in a local store, is already making a comeback; even Amazon is moving into high street retail. And despite the greater accuracy of smart phones, expect mechanical watches to be around for some time to come. And as for Christmas; well we predict a strong focus on family, food and films, along with the occasional mulled wine (or two). Some traditions are just too good to change.

Eighteen year old Shannon Massey who has lived with foster carers for almost two years credits her foster carers with giving her the practical

support and encouragement to pursue her ambitions: “My dream is to keep studying Hospitality and maybe someday to have a management role in a hotel. My advice to someone considering becoming a foster carer would be that you’re going to be helping a kid who probably really needs it.
