Local teenagers exchanged warm beds and home comforts for the chilly challenge of a wintry weekend at Ballykinler Cadet Training Centre recently when they took part in the annual Bateson’s Challenge Military Skills Competition. t the end of an adventure A judged by the kids to be ‘tough but terrific’ Dundonald and Holywood shared the honours, with a tie for the Bateson’s Challenge Award. Company Commander, Major Colin Forrester, says, “It was a fair result, reflecting sterling effort from two great teams. The weather was typical for the time of year and all of the cadets (and the adult volunteers) felt the cold! We were all glad we had packed thermals, gloves, woolly hats and thick socks, but it took more than wet winter weather to dampen the spirits of the Cadets. Tackling everything from Command Tasks to Military Knowledge, Field Craft

and First Aid plus a March followed by a controlled shoot on Ballykinler’s superb 100 metre range, the kids took everything in their stride and faced each new challenge with high spirits and a great sense of fun. It was a fantastic opportunity for the young people to enjoy adventurous outdoor activities in a safe yet always challenging environment, making new friends, having fun and building both their self-confidence and personal discipline. For me, the best part of the weekend was seeing everyone pull together to make it all work. In particular a massive vote of thanks to the Adult Instructors who give up their free time

and put in such hard work. I know the Cadets and, indeed, their families are extremely grateful for they are well aware of the benefits which Cadet membership brings to young people. I’m truly proud to be Officer Commanding of such a great company, working with such fantastic people.” Fourteen-year-old Hollie Large, 15 from Dundonald Detachment said, “It was all immensely competitive, but such great fun that we were more than happy to share the win with our friends from Sullivan Upper School Detachment! The stands were amazing but my personal favourites were the stalk and the command task. I love a challenge!”

Helen’s Bay Players – Spring Production, 6-8 April

8pm in St John’s Church Hall elen’s Bay Players’ spring production will be in an exciting new format. They will put on a programme of three plays consisting of two short sketches called ‘Deckchairs’ and a slightly longer one act play called ‘Rude Awakenings’. The longer play is set in a village hall during the local art exhibition and competition - so naturally the Players recruited the Painting Group at St John’s to help by exhibiting their own work. The competition will be judged by a recently arrived weekend inhabitant of the village who happens to run a London Gallery. However, she is surprised by one of the exhibits and the audience will be surprised by one of the exhibitors. The evening will be conducted in a slightly different manner than usual in that the audience will be seated at tables and served wine at the start and again at the interval. There will also be nibbles and all is included in the price of £10 per head. Moreover some of the Painting Group’s own art work will be for sale on the night. Tickets can be purchased in advance from Square Cut in Station Square, Helen’s Bay, through the Ards and North Down Council Visitor Information Centre (or website), or at the door on the night. So do come along at 8pm on 6 to 8 April and be part of the exhibition!

ROCKPORT SCHOOL HELPS LAUNCH EASON SPELLING BEE This all comes following the announcement of Eason’s media partnership with Cool FM and Downtown Radio for this year’s seventh annual Spelling Bee.

T

he nationwide competition is part of an overall Eason literacy and reading initiative to encourage and inspire children to develop their spelling and pronunciation skills. Over the years the competition has helped school children gain a greater appreciation of words in a fun and educational way. Speaking at the launch of the partnership, Rebecca McKinney Cool FM copresenter said; “We are so delighted to be working with the Eason Spelling Bee again this year and are really looking forward to meeting all of the contestants and their supporters around Northern Ireland in the lead up to the big final in June.” Kirstie McMurray, co-presenter Downtown Radio continued,

“So if you are a super speller and you would like to be in with a chance to win library of books for your primary school then it is time to get involved in this brilliant Eason initiative!” The Eason Spelling Bee holds the record of over 100 schools participating in Northern Ireland and this year looks set to smash that record, all the while helping students to develop their reading and literacy skills in a fun and creative way. LITTLE WING PIZZERIA DISHES OUT THE DOUGH TO LOCAL CLUBS Some 12 clubs have benefitted from the bursary since its launch in 2014, and this year’s winners included east Belfast clubs Fighting Words Belfast and Ojika NI Kids Kendo Club.

D

ierdre Morrison of Ojika NI Kids Kendo Club, said: “Ojika NI Kendo Dojo is a not-for profit volunteer-run organisation, so this bursary is a great bonus for us. We will be using the bursary to help the children avail of training with senior sensei from the UK and Japan.” Returning for its third year, the scheme is run by local pizzeria company Little Wing and is open to all kid’s clubs located near its six branches. Other clubs to benefit this year include: Malone Rugby Club, Bangor Swimming Club, Carryduff Colts FC and

the Jets Cheerleading Team from Enniskillen. Luke Wolsey, managing director of Little Wing Pizzeria, says the scheme is a way for the pizzeria to give something back to the local community: “The Little Wing Little Stars bursary scheme has been running for three years now and it’s been a pleasure to financially assist kids clubs in the local area. “It is important that children stay active and have hobbies and the bursaries are always very welcome by the clubs. This year, Fighting Words Belfast will be purchasing tables

for the club’s after-schools sessions and Bangor Swimming Club plans to buy specialised equipment and treat the kids to team days out with the money. “We’ll be running the scheme again in 2017 and I would encourage all local clubs to keep an eye out for the launch of this year’s scheme in September if they want to become involved,” Little Wing is part of the Beannchor Group, Ireland’s largest hospitality group, which boasts a portfolio of over 50 pubs, hotels and restaurants across Northern Ireland.

Based at the heart of the Cancer Centre at Belfast City Hospital, the charity funds life-saving and life-changing projects that make a real and lasting difference to the lives of thousands of local people affected by cancer

HAVE A COFFEE & NATTER WITH PEOPLE THAT MATTER Leading local cancer charity Cancer Focus Northern Ireland knows there’s nothing quite as good for perking you up as a chat with the people that matter over a hot cup coffee or tea.

his March, the charity is calling on Holywood people to organise a Coffee & Natter morning to raise vital funds for their counselling and Nurseline services. Cancer Focus NI counsellor Karen Doherty, who helps people in the Holywood area, said: “My role as a counsellor is to create a place which allows each person the space to talk about their experience from their viewpoint and in their own words. It allows people to look at their issues and how to address or live with them. “I hear conversations that are about diagnoses, dealing with illness, progression, bereavement, loss, change, hope, moving on, the future and many other topics. Sometimes people ask ‘how

do you do this work?’ and I tell them it’s a privilege. I meet people from all walks of life who are coping with cancer. Those who use our Cancer Focus NI service tell me it is an invaluable lifeline. By holding a Coffee & Natter fundraiser you are helping us support more people when they need it most at one of the most difficult times of their lives.” The Nurseline is a free cancer information and support line, manned by specialist cancer information nurses. The service is for patients, their family members or friends, as well as members of the public who may have concerns, questions or issues about any aspect of cancer. The Northern Ireland Best Kept Awards is celebrating its 60th anniversary this year as it launches the search for entries under a new title sponsor. George Best Belfast City Airport has been announced as the new partner for the annual event, which is organised by the Northern Ireland Amenity Council. The initiative seeks to identify and celebrate Northern Ireland’s best looked-after towns, villages, schools, healthcare facilities and housing areas.

First established in 1957, the competition has grown over the years and now includes 89 awards across six categories.

n the six decades since its inception, around 150,000 volunteers have taken part in the event, with 10,000 entries having been submitted in the past 20 years alone. Eglinton came out on top in the inaugural year, while amongst last year’s winners were Derry/ Londonderry (Best City), Castlecaulfield (Small Village), Ahoghill (Large Village), Randalstown (Small Town), Enniskillen (Medium Town) and Antrim (Large Town). Michelle Hatfield, Director of Human Resources and Corporate Responsibility at Belfast City Airport, said: “Belfast City Airport is delighted to this year partner

with the Best Kept Awards, especially in what is a very significant anniversary for the competition. “Over six decades, the initiative has played a huge role in engendering a sense of civic pride among communities in towns and villages across Northern Ireland. Broughshane in Co Antrim, meanwhile, with 15 titles to its name, holds the distinction of having more category wins than anywhere else.

Seafood Ceviche With Crispy Rankin Selection Irish Brown Soda Bread Croutons

Serves 4

INGREDIENTS 200g (7oz) v fresh cod, skinned & boned 150g (5oz) very fresh queenie scallops 200g (7oz) cooked peeled prawns 150ml (1/4 pint) lime juice 1 tsp salt 100g (4oz) red and yellow baby plum tomatoes, halved ¼ small red onion, very thinly sliced 1 mild green chilli, thinly sliced into rings 4 tbsp chopped fresh coriander FOR THE CROUTONS: 2 Rankin Selection Irish Brown Soda Bread slices 2 tbsp olive oil Sea salt and freshly ground black pepper METHOD: Check the cod for any remaining bones with a pair of tweezers, then cut into fine slices and thinly slice the scallops. Place in a bowl with the prawns and add the lime juice with the salt. Cover with Clingfilm and chill for at least 15 minutes or up to 2 hours, stirring occasionally. Remove the seafood mixture from the fridge and add the tomatoes, red onion, chillies, coriander and olive oil. Allow to marinate for another 15 minutes or up to 30 is fine. Preheat the oven to 180C (350F), Gas

mark 4. Cut the Rankin Selection Irish Brown Soda Bread slices into croutons and place in a bowl. Drizzle over the olive oil and toss until evenly coated. Spread out on to a baking sheet and cook for 5-6 minutes until lightly golden and crisp. Remove from the oven and leave to cool. Arrange the marinated seafood ceviche on plates and scatter over the crispy soda croutons to serve.

INGREDIENTS: 6 eating apples (preferably Cox Pippins) Juice of 1/2 lemon 100g unsalted butter, at room temperature 140g caster sugar ‘PASTRY’ 1 egg white 3 tbsp melted unsalted butter 3 tbsp caster sugar ¾ packet of Rankin Selection Irish Barmbrack, crusts skimmed off and cut into 1/2cm slices Crème fraiche or vanilla ice cream, to serve (optional) Fresh mint sprigs, to decorate(optional) METHOD: Preheat the oven to 190C (375F), Gas

Tart Tatin With Rankin Selection Irish Barmbrack ‘Pastry’

mark 5. Peel the apples, then cut in half lengthways, carefully core and toss in the lemon juice. Take a medium-sized ovenproof frying pan and spread it with the butter and sprinkle over the sugar. Place the apples flat in the frying pan, round side down, core side up. Place over a high heat and cook until the butter and sugar start to caramelise nicely. Remove from the heat and allow to cool for 10 minutes. Meanwhile, beat together the egg white and butter and then use to brush liberally over both sides of the Rankin Selection Irish Barmbrack. Arrange them on top of the apples, overlapping slightly so that the egg white mix helps to stick everything together, trimming them down as necessary. Sprinkle with the sugar and bake in the oven for 15-20 minutes. Remove from the oven and allow to rest for 10 minutes before inverting on to a serving plate. Buttermilk Sodas (4 halves, as sodas come pre-sliced) 8 tbsp sun-dried tomato pesto 200g (7oz) grated mozzarella or cheddar (from a packet is fine) 1/2 small red, yellow and green pepper, seeded and cut into dice 150g (5oz) thinly sliced chorizo 2 mild green chillies, thinly sliced into rings 100g (4oz) stoned black olives About 4 tbsp olive oil METHOD: Preheat the oven to 200C (400F), gas mark 6 and preheat the grill if you prefer a crispier base. If using the grill, arrange the Rankin Selection Irish Sliced Buttermilk Sodas cut side up on a grill rack and lightly toast. Spread the sun-dried tomato pesto over the cut side of the Rankin Selection Irish Sliced Buttermilk Sodas and scatter the mozzarella or cheddar on top. Add the mixed pepper dice, chorizo slices, green chilli rings and black olives and drizzle a little olive oil over each one. Arrange the prepared pizzas on a large baking sheet and bake in the oven for about 8 minutes until the cheese is bubbling and the edges are lightly toasted. Put the pizzas on warmed plates to serve.

Over 300 guests attended the charity gala ball at the Culloden Hotel back in November 2016, which was organised by local businessmen Leslie Hughes OBE and Alan Bailie, owner of MIS Claims.

Guests were treated to an evening of fine dining and musical entertainment, whilst also raising much needed funds to support local children with cancer. Donations from ticket sales and an amazing live auction resulted in the charity receiving a generous donation of £105,000 towards services for local families affected by cancer. Cancer Fund for Children Chief Executive, Gillian Creevy said: “We are absolutely thrilled and so grateful to receive this amazing donation from what was a very memorable evening. “Leslie and Alan have been

longstanding supporters of the charity, and this donation proves their continuing commitment to supporting local families whose lives have been devastated by cancer. “These funds will help us to provide vital services to the 350 local families we support on average every year.
