PRESIDENT’S NOTE

A New Business Class Beckons Our fleet upgrade enters its latest phase with the delivery of our first wide-body Airbus A330-300 HGW featuring a new cabin with three classes of service: Economy, Premium Economy, and, an entirely new product, Philippine Airlines’ modern Business Class. This follows the high-density, bi-class (economy and premium economy) variant of the A330 HGW that we acquired in September and, before that, the single-aisle Airbus A321 that launched our comprehensive fleet expansion program in August 2013. The tri-class A330 HGW completes our menu of new product offerings. This sophisticated aircraft is aimed at the discriminating business segment of the market, an important part of PAL’s customer base. It is designed to accommodate 368 passengers in lofty comfort—323 in economy; 27 in the more spacious premium economy; and 18 in business class, equipped with full-flat beds. In the first two classes, the focus is on ease and simplicity, epitomized by the Zodiac 5751 articulating seat—a unique mechanism where the seat pan lifts up and slides forward as the seat back reclines. This novel design optimizes passenger space and adds appreciably to the comfort level at the back of the cabin. However, it’s up front where PAL really ups the ante. Designed like a cozy “home in the sky,” business class showcases the Equinox 3D seat by French design firm Sogerma—a plush, high-technology seat with an innovative design. At the push of a button, the seat stretches out into a full-flat bed over six feet long, enabling you to doze off in utmost comfort and privacy, like in your own bed at home. Laid out six abreast, the V-shaped, double-seat structure of the Equinox 3D lends itself to a unique configuration. When moving to the bed position, the window seat moves up to armrest level while the aisle seat moves down to just above the floor. This design allows for easy egress for the window-side passenger. Of course, the seat comes with the full range of amenities: Electrical leg rest with ottoman, retractable privacy divider, in-seat power supply, USB port, bottle holder, reading light, coat hook, electrical seat controls, and ample stowage space to keep all belongings at your fingertips. PAL’s new business class in our tri-class A330-300 HGW aircraft is your luxurious, state-of-the-art home in the sky. We hope to usher you onboard soon. Mabuhay!

Not Your Usual Paddle Boarding

O

ur cover feature is about paddle boarding in Bohol. It’s actually a very simple sport. You stand up on a board that is shaped like a surfboard, find your balance, and use a paddle, similar to what is used for kayaking, to propel you on the water. Without any motor, you skim quietly on the water and its thin shape even allows you to explore shallow waters. To make sure you will enjoy yourself and be confident on the water, the paddle tours in Bohol begin with basic lessons like paddling techniques, and then off you go. Unlike most paddle board options in seaside resorts, the ones in Bohol are more interesting where your trip on the river can end up in a waterfall or a beach and along the way, you can even watch local dances and listen to folk songs, paddling at your own pace and time. Come night time, you can spot fireflies and the experience is quite surreal. From a distance, you’ll see moving pinpricks of light in the darkness and as you come closer, there you are by the riverbank mesmerized by all these tiny, bright little creatures dancing around a tree. The simplicity of the experience is enhanced by a symphony of of crickets, frogs, and other nocturnal animals announcing their presence.

TAKING IT SLOW. Loboc River (ABOVE) is a picturesque location for a relaxing stand-up paddle tour. At night, you can check out the fireflies in Bohol aboard an SUP. Photos by Frederic Soupart

Photography has become so popular thanks to digital technology that most even take photos of their food before they eat it and post their images in social media. Well, we decided to go with the flow and we are beginning in this issue, a regular series of photography. To meet popular demand, we are starting with tips on food photography using a smart phone by Mylene Chung, a young, talented Filipino food photographer and prop stylist.

Expect more exciting new destinations from PAL now that the Philippines has been granted a Category One (the highest) aviation safety rating that will allow it to launch more flights to the United States and Europe. Keep yourself posted on PAL news, new flights usually begin with travel promos.

It is both a blessing and a lusty cheer. “Mabuhay” (ma-boo-high) is such a large word that it lends itself to a wide number of secondary uses: Welcome, Congratulations, Thanks, Godspeed, Hello, Good Luck, Cheers, Posit, Sante, Viva, Kambei, Aloha, and many other expressions of goodwill. All these are a part of life, but it is the gift of life that makes them possible. “Mabuhay,” in other words, is an invocation and a celebration of life itself.

TIPS TECHNOLOGY FOR MOMS

A MOM’S BESTFRIEND

Despite their super powers, moms can use a little help, too!

Helping Your Kids in School Let’s admit it, moms. Most of the time, you end up doing your kid’s homework or project. But soon enough, you’ll ask yourself: how come they never taught me this in grade school? With Google Cultural Institute, you have at your fingertips a staggering database of exhibits and collections from museums and archives from all over the world. Within this page, you can virtually take a tour inside the museums and even World Wonders, look at prized artworks up close, or explore online exhibitions detailing the stories behind historic milestones.

Look, Ma! No Hands! See that microphone icon on the search bar on Google or YouTube? Just click it to activate the voice search. No need to type your query; just say whatever you’re looking for so you can maximize your hands especially if you’re in the kitchen.

In the Kitchen Are your kids allergic to some food? You can narrow down your recipe search with this handy tip: when you search for a food or recipe, just type the minus sign “-” before your query (no space) to eliminate that word from the results. For instance, “california rollssalmon.” Healthy Choices With an ever-growing list of lifestyle-related illnesses, you can never be too careful of what you feed your family. Compare the nutritional values of food by typing on Google “butter versus olive oil” or any food, for that matter. You’ll then be able to make the right choice at the grocery or at a restaurant.

Managing Your Day What’s on a Plate? Don’t we just love carbo loading when we’re stressed? But have you ever wondered how fattening fried rice is? Just ask: “how much calories are there in fried rice?” Aside from calories, you can also find out a variety of different nutritional information for many food types, such as “how much fiber is in a banana?” or “how much sugar is there in ketchup?”

When you have an appointment, the Google Now app checks traffic so you can know how long it’ll take to get there. You’ll even get a notification for when you should leave your home! No more excuses for being late!

VIRTUAL FIELD TRIP: Explore the world’s most historic halls such as the White House through Google’s Cultural Institute.

LIFESTYLE HEALTH

Your Wellness Starts Here LORELA U. SANDOVAL checks out this premier preventive medicine center in Manila.

O Cris Romero-Salas Castro, one of Lifescience’s founders

ur culture illustrates that many of us are rather reactive than proactive individuals, meaning we only tend to look after our health and well-being when worrying conditions have already come to our attention. But Lifescience, a one-stop center for wellness and preventive medicine, believes otherwise. “We put in the best practices from different parts of the world to be able to let Filipinos experience world-class service in anti-aging and real preventive wellness that’s being practiced in the US and Europe for 25 years already,” says Cris Romero-Salas Castro, one of the founders of LifeScience. LifeScience still goes by the principle that proper nutrition is the cornerstone of good health. “Even though you exercise, if you lack proper nutrition, you’re not going to be a well-balanced person. Proper nutrition is the starting point of getting you in that optimum health. This means correcting your diet and making sure that your body has the right

amount of vitamins and minerals that it needs. This is done through a Food Intolerance Test and a Micronutrient Profile Test, which tells us the food that your body reacts to and the level of vitamins in your body. We take a lot of time to understand your body so there is no guess work in prescribing the health regimen,” she says. The Food Intolerance Test (FIT) helps you discover the foods your body is intolerant to. Food Intolerance is the body’s negative reaction to food that, for example, can make you feel bloated, give you rashes, lead to migraines, and other disconcerting conditions which you never thought were all caused by the food that you eat. “We use the FIT from Cambridge Nutritional Sciences, the global leader in food diagnostics, with our Nutrition Program, which allows us to customize your diet. You might think you’re eating right just because you’re getting rid of meat, but that’s not it—you don’t know what kinds of food are actually harming your body. Your Preventive Wellness Physician and Nutritionist designs for you a nutrition plan that covers your ideal meal plan, calorie intake, and suggested food that can replace those you’re intolerant to. It is then followed by your prescribed customized supplements to make sure that you get the vitamins and minerals that you need” she explains.

“You might think you’re eating right just because you’re getting rid of meat, but that’s not it—you don’t know what kinds of food are actually harming your body.” Other health and wellness centers have mushroomed in the country for years. LifeScience, however, offers a proactive approach to wellness— one that lets you stay in the best of health and prevents health issues from striking. Health programs are tailor fitted to one’s personal health goal, medically supported and evidence based. “We boast of everything that we prescribe to clients. We bring world-class health care and wellness more accessible to Filipinos through our partnership with centers of different health expertise from different parts of the world. These enable us to deliver the best possible personalized wellness program for our clients and work with them throughout their journey to better health,” she says. n

HOME TIPS COOKING

A Feast for Mom

On Mothers’ Day, why don’t you treat your mom to a well prepared meal with recipes from Chef Tina Legarda? These ingredients may be simple, but the results will surely impress her! Chicken Roulade of Mushrooms, Fig and Magnolia Cream Cheese Yield: 5-6 people Ingredients: 500 g Magnolia Chicken Station Chicken Breast Fillet Salt and pepper, to taste 1 tbsp Magnolia Gold Salted Butter, melted 2 tbsp garlic, chopped

2 tbsp fig jam Button mushrooms, sliced and sautéed 1 185gm bar Magnolia Cream Cheese, softened 2 tbsp olive oil

Directions: • Preheat oven to 350 C. • Prepare chicken breast. Place in between cling wrap, and using a kitchen mallet, pound until thickness is approximately quarter of an inch. • Choose wider side of the fillet and place nearest to you. Sprinkle salt and pepper. Brush with butter and garlic. Add a teaspoon each of fig jam and mushrooms. Then add 1 ½ tbsp of cream cheese. Fold sides of chicken towards the center. Then roll from bottom (side nearest to you) to top. Check for any holes. Tightly wrap in clingwrap and seal. Store in freezer for about 30-45 minutes to make sure roulade is in place and set.

• In a large sauté pan, add olive oil. Sear each roulade until all sides have browned. Be careful not to burn. • Prepare large baking sheet, brush with butter. Place seared chicken roulades inside oven. Cook for about 5 - 8 minutes depending on size. • When done, let roulade rest for about 5 minutes. Then slice into rounds approximately ½ inch in thickness. Say Cheese!

Be savvy with food shots with these five smartphone photography tips from MYLENE CHUNG.

1. SEt tHE Mood witH a Good SUrfaCE. Surfaces make up the overall mood of a food shot. A light wooden surface sets an airy outdoor vibe, while a dark surface creates a more dramatic mood. Many wellknown food photographers on Instagram play with just one type of surface to set the theme of their photo stream. Perhaps this is their way of branding themselves and their photography style. Personally, I love working with wooden surfaces because of their flexibility. Wood textures always come with warm tones that complement mostly any food item.

2. SHoot ovErHEad. When shooting with a smartphone, one rarely ever gets the natural depth of field (background blur) that is key to good food photography. Sure, we have apps that artificially blur out the background and some smartphone photographers use this quite efficiently, but with subjects as small as food, where one has to pay attention to every detail, artificial background blur will only look like what it really is, artificial. This is why it is advisable to shoot overhead in order to capture only what's on top of the table. Then, you can skip having to blur out the background elements.

3. SHoot widE tHEN Crop. It usually takes time to compose a food shot and even more so when you're pressured to take photos as fast as you can so everyone else can finally dig into their food. A great way to work around this is to take really wide shots and compose it in post editing. This is also a 32 I Mabuhay Magazine I May 2014

One of the downsides of shooting with a smartphone as opposed to a more professional camera is that your phone is lightweight and reacts to every slight hand movement when shooting, which can then lead to a lot of blurry photos. In order to make sure you get at least one shot sharp, take a lot of safety shots, at least four to five frames per subject. I would sometimes even go as far as taking 10 to 15.

ON LIFESTYLE STAGE

Comedy Night Live at the Fort

MO FRANCISCO finds a new way to beat the Monday Blues.

I

t’s the end of another Monday. Yuppies flock to The Fort Strip to drown their Monday stress at the bottom of beer bottles and the rims of martini glasses. But in one bar on the strip, people gather for another reason: Saturday Night Live happens on Monday night.

NO GUTS, NO GLORY: These comedians must really have the guts to stand on stage and elicit a laughter from the audience. Victor Anastacio (BELOW), one of the group members, is also a TV show host.

36 I Mabuhay Magazine I May 2014

Manila’s roster of comedians is no novice to the comedy scene. Some have been performing since 2001, others have been featured on Jack TV’s Laughapalooza stand-up comedy show, a few have performed with Comedy Cartel, while still others have performed on stages here and abroad. While most of their material is delivered in English, you can’t deny the Filipino flavor that they bring to the art. Case in point. Though today’s lineup of comedians sketch scenes with universal themes— inappropriate Instagram posts, growing up in the ’90s and the age-old battle of man versus girlfriend’s time of month—many use local references like the Martilyo (hammer) Gang, Anne Curtis’s episode at Prive, and local teleserye shows to set up their jokes. For those who grew up watching Seinfeld, Saturday Night Live, and Comedy Central, watching Comedy Manila at Keg is the closest you’ll get to warming a seat at the Apollo Theater. The bar is dark and full of low murmurs as people talk among

How about some sPIt? If you’re more into Improv Comedy, the kind that you see on shows like Who’s Line Is It Anyway?, catch the Manila’s Silly People’s Improv Theater (SPIT) group. Performing since 2002, they are the pioneers of Improv Theater in the Philippines. As of the writing of this article, they are on their U.S. tour, so visit spitmanila.com for the schedules of their Manila shows.

In a country where the words “Comedy Bar” are associated with the terrifying notion of drag queens coercing you onstage in front of friends and family who are all ready to hashtag your public humiliation, Comedy Manila provides a refreshing alternative. Formed just last year, Comedy

themselves. A lone spotlight pierces through to reveal the stage where a comedian could make a name for himself, or get crucified. Okay, maybe not crucified. Filipinos, by nature, aren’t much for heckling. We’re too polite to make snide comments during a person’s set. It seems that we

are sympathetic to crazed people who have the guts to get up on stage and tell a few—more often than not—self-deprecating jokes. Tonight, four comedians gamble pride and dignity as they brave the kind of spotlight and scrutiny that only a person under Interpol interrogation should ever encounter. In typical Comedy Manila fashion, each comedian is given around 15 minutes to perform, while the last performer, or headliner, closes the show. It’s not an easy thing, getting that laugh. Sure, people like Conan O’Brien and Louis C.K. make it look easy. But even veteran comedians will encounter that horrific, but inevitable, event of dead air. Tonight, some of the performers acknowledge the elephant in the room while one even toasts to it . This is something that every comic hopeful must learn from Open Mic nights. To be a comedian, you strive to make people laugh—it’s the

true payoff—but the real skill you learn under that sweltering limelight is to laugh at your insecurities and mistakes. And once you can do that, you’re already on your way to making it as a comedian. n

Comedy Manila performs every Monday at Keg, The Fort Strip, Bonifacio Global City. Open Mic Nights are held every Tuesday at Bistro Alfonso, L.P. Leviste, Makati City. Visit facebook.com/ ComedyManila for updated schedules.

LAUGHING OUT LOUD: Comedy Manila also holds shows at Borough, Podium in Ortigas Center.

acau is a city of contrasts. Having gained a reputation as Asia’s gaming playground, its colossal hotels are attractions in themselves. But a tour of its three main islands— Macau peninsula, Taipa, and Coloane—will slowly reveal its other side, a European-Oriental character. And with adventure, you might just discover that Macau is so much more than the sum of its colossal parts. MUNCHING IN MACAU A good place to start is a visit to the Old Taipa Village. The old houses and narrow streets offer a picturesque backdrop and are

reminders of Macau’s history. Most of the restaurants here are cozy, with a friendly neighborhood vibe. You’ll find Italian, Spanish, Japanese, Thai, and Indian bistros aside from Macanese eateries here. For dessert, locals enjoy the serradura cake, a sawdust pudding with layers of cream and crushed biscuits. You can also cool off with a cone of gelato sold at nearby Limoncello. For a taste of Portuguese fare with a distinct Macanese twist, there’s Café Litoral (www. cafelitoral.com). Try their roasted African chicken basted in coconut oil and bathed in spicy rich red sauce with bits of onion and paprika. Their assortments of bacalhau (codfish) dishes should

not be missed either for their distinct salty flavor. Add some Portuguese fried rice and your meal is complete. Another local favorite is Antonio’s, a high-end Portuguese restaurant whose unassuming facade belies its exquisite dishes. The restaurant serves a unique porto wine fermented specially for the establishment. For a meat fix, there’s Frangi’s Grill. You won’t go wrong with any of their fillings—from their grilled pork chop to kebabs. Portions are good for sharing, which makes this restaurant worth your precious Macau patacas. At the heart of suburban Taipa, surrounded by banks and supermarkets, is the unassuming www.philippineairlines.com I 39

Duckling restaurant. Duckling serves traditional dishes from Southern China that are unabashedly imbued with local flavors. Their crispy salted pork belly is addictive and the spicy Szechuan chicken puts “spicy” on a different level. Ask for an English menu to guide your search. To maximize your time, a trip to The Singing Bean (www. macautower.com.mo) will allow you to grab some coffee, try their red velvet cake, and see the Macau Tower (you might even hear some screams from the bungee jumpers too). For congee joints, you can pick from mid range restaurants to the high-end, Michelin-starred. Safe bets are Wynn’s noodle lounge, Grand Lisboa’s Noodle & Congee Corner and its fine-dining attraction, The Eight. Afternoon tea sets (usually from 2 to 6 p.m.) are also big in Macau. You can try the pastries, sandwiches, and tea offerings in Café Bela Vista in the Grand Lapa Hotel in the Macau peninsula (www.grandlapa.com). COME NIGHTFALL The city offers a wide array of clubs and bars. For an atmosphere conducive to conversations, the goto pubs are the Old Taipa Tavern, the sports bar McSorley’s Ale House in the Venetian, and the scenic Sky 21 (www.sky21macau. com) in the Macau peninsula. The latter is located on the 21st floor of the AIA Tower, and its deck provides a spectacular view of the city at night. The AIA Tower also houses the party heavy scene of D2 Club (www.d2club-macau.com). Hotels also have their own late night hangouts. The perennial favourites are the Lion’s Bar at MGM Macau (www.mgmmacau. com/lion-bar) and Club Cubic at the City of Dreams (www.cubiccod.com). The former offers one of the best live bands in the scene while the latter is arguably the hippest and most happening club in the Cotai strip.

40 I Mabuhay Magazine I May 2014

For bar hopping, these trio of modest bars in the Taipa area are probably the best bets: Hive, Mini Bar, and Innside Bar. (price range: MOP 40 - 300/drink). MACAU MERCHANDISE The hotel malls in the Cotai Strip (Sands Cotai, Conrad, Sheraton, Venetian Macao) are shoppers’ havens. The Venetian is not only the largest casino in the world but its expansive area also serves as the city’s largest mall. It’s easy to get overwhelmed here as you search for gadgets, designer bags, shoes, signature apparel, and ready-towear outfits. Alternatively, the Senado Square is Macau’s shopping promenade where some outlet stores are located. Its biggest draw is that it’s close to the Ruins of St. Paul and has one of the biggest branches of the Pasteleria Koi Kei (famous for their take-home goodies like almond cookies, jerky, and peanut candy). Jewelry shops selling gold, diamonds, and jade line the streets leading up to Senado square. While in the city, you might want to catch The House of Dancing Water, the resident show of City of Dreams (www. thehouseofdancingwater.com). This exhilarating show, which combines acrobatic performances, water stunts, and incredible production design, can only be seen in Macau (Tickets range from HKD 580 980). May is also the start of the 25th Macau Arts Festival which showcases theatre, dance, and music exhibitions. Visit www.icm. gov.mo/fam for more information. At the end of the day, Macau’s main attraction will always be its contrasts: from the colossal hotels to the quaint old houses. The European influences blending seamlessly with Oriental roots may not easily be apparent, but as you create your own experience of the city, be prepared to be charmed. n

Looking for cheap and cheerful accommodation? Then old Dubai is where it’s at. Not only is it more atmospheric, but it also gives you an idea of what Dubai was like in the old days. The Dubai Youth Hostel (www. uaeyha.com), which starts at US$52 a night, is one of the cheaper options, and is better than most two-star hotels. The day is young and the sun is bright, so head straight to the beach to soak up the sun before it gets too hot. You can head to the Burj Beach to enjoy a view of the world’s only seven-star hotel, Burj Al Arab, which has the cosmopolitan feel of Miami, or Kite Surfers Beach, which has a much more laid-back scene.

All these are free but can get crowded especially during the weekends. Head down Jumeirah Beach Road and have lunch at The Chalet, a local restaurant that’s great for people watching. The menu is extensive, offering anything from European to Indian to Arabic food, most of which are below Dh25 (US$6). Try the filling biryani, a big bed of rice with chicken and spices. The sun is getting too hot so why not take shelter in the region’s largest mall, Dubai Mall. The best bit is you don’t have to spend any money to be entertained. You can ogle at the fish in the world’s largest indoor

aquarium, watch the skaters at the world’s largest indoor skating rink, or wander through an indoor gold souk fashioned after the traditional style. Step outside Dubai Mall to get a view of the world’s tallest tower, the Burj Khalifa. Go up to the viewing deck on the 123rd floor to see the city in all its glory, but make sure you’ve booked ahead online as that will save you two-thirds of the price. Walk-in tickets cost Dh400 ($108) while those booked in advance are only Dh125 ($34). As the sun sets, head outside of Dubai Mall to watch a performance by the world’s largest dancing fountain. It

TIP: Check Dubai Mall’s schedule as there are often free concerts and events. For dinner, head back toward Beach road and eat at Iraqi restaurant, Bu Qtair (Road 4d, near Burj Al Arab), a humble beachside shack that serves up fresh curried fish and prawns on plastic dining tables on the sand. The seafood is caught daily and is laid out in front of you. You choose what you want and tell them how many people are

eating and then wait outside. All fish is coated in a spicy paste and shallow fried in traditional Iraqi style. The bill usually comes in at around Dh100 ($27) for two. After you’ve had your fill of fish, head to Madinat Jumeirah, a shopping and dining complex styled as a traditional Arab souk. You can ride an abra (a traditional wooden boat) for Dh75 ($20) for an adult and Dh40 ($10.8) for a child through the Madinat’s extensive canal system. Once inside, there is a faux souk selling tourist trinkets as well as a large number of restaurants and bars. If it’s a Tuesday or Thursday night, head to Barzar Bar in the Madinat for a nightcap and take advantage of its many drink deals.

DAY 2 Wake up early and have breakfast at the Sheikh Mohammed Centre for Cultural Understanding for a local breakfast for about Dh60 ($16) and introduction to Emirati culture. Afterwards, walk off your breakfast at the Al Bastakiya Quarter, one of the oldest residential areas in Dubai. The area houses a number of shops selling arts and crafts and galleries such as the XVA’s Art Hotel, which are free to enter. After you’ve walked up an appetite again, head to one of Dubai’s extensive beach parks and have a barbecue. You can buy your supplies at local supermarkets like Choitrams or Carrefour for under $20. GETTING AROUND In the last couple of years, Dubai has invested a lot of money into improving its public transport system, which means there are now plenty of cheap options of getting around. The cheapest option is the Metro. A day pass costs only $3.8 for all zones. Buses are another cheap option: a ride costs as little as 20 cents and you can pick up a timetable from the main coach station in Al Rumoul or online (vgn. dm.gov.ae/DMEGOV/dmtrans-timetables). The best way to see the island is by taking the monorail (Dh15 or $4 one way) that goes straight up and down the trunk of the island. Head back toward Deira and see the sunset from the creek. This area used to be old Dubai’s trading hub with dhows (big boats) coming in from Iran and Gulf countries. It’s still as bustling and is a great place to stroll and see how Dubai was before the skyscrapers. You can take a ride in an abra for only Dh1 (0.27 cents) to get to the souks on the other side. With a variety of sights and sounds, from its pomp and pageantry to its museums, restaurants, galleries, theaters, and incredible shopping, London is a city at the center of the world. Its diversity and complexity make the British capital a top tourist destination. With so much to explore, it’s difficult to narrow down the long list of reasons to visit. Nevertheless here are some exciting sights and amazing flavors to check out. The city boasts four World Heritage Sites: the Palace of Westminster and Westminster Abbey, the Tower of London, Maritime Greenwich, and the

Royal Botanic Gardens. These are the places that exude world history and have helped shape the modern world we live in. If arts and culture are your fancy, London’s famous attractions include the Tate Modern, the National Gallery, and the Victoria and Albert Museum. Incredibly, entry to these museums is free. The Tate Modern is right on the banks of the Thames. It is Britain’s national museum of modern and contemporary art, including works by famous British artists like Damien Hirst. The National Gallery is a vast space crowning Trafalgar Square. Its exhibits include Western European paintings from the 13th to 19th centuries, by such iconic names as da Vinci and Botticelli to Van Gogh and Renoir. The world-famous British

CITY TOP GUIDE DESTINATIONS Museum exhibits the works of man from prehistoric to modern times. A walk through gives one a feel for the extent that the British Empire once had around the globe. Highlights include the Rosetta Stone, sculptures from the Parthenon, and mummies from Ancient Egypt. The river Thames snakes through the heart of London. There are various ways to experience its ebbs and flows, from taking short walks along its banks to more leisurely river cruises and, my own personal fave, a ride on the EDF Energy London Eye. This 32-capsule Ferris wheel takes one on a 30-minute round trip to see more than 55 of the city’s famous landmarks. Theater, of course, is a highlight of London. The West End is the nerve center of the latest plays and musicals, and it is here where many of our Filipina compatriots first made their worldwide marks in such hits as Miss Saigon and Les Misérables. There are more than 6,000 restaurants serving various cuisines throughout the city and 65 of them are Michelin-starred. Many celebrity chefs are based here, too. My recommendations include Dinner by Heston Blumenthal, The Wolseley at Piccadilly, Galvin at Windows, and Nobu. It is said that the sun never sets on the British Empire, and it certainly seems that way when checking out London’s bar scene. Among the latest trendy places are at The Shard or Paramount. Other trendy bars are Sanderson—Long Bar, W Hotel—Piccadilly, and Soho House. At midnight onwards, the top clubs start to get filled up. Make sure you ALL THINGS FOR ALL PEOPLE: (FROM TOP) Camden offers an enormous variety of crafts, clothes, and other bric-a-brac; Michelin-starred restaurant Dinner by Heston Blumenthal serves exquisite dishes like powdered duck breast to poached Rhubarb; Harrods, the biggest department store in Europe

get your dancing shoes on and head to Ministry of Sound, Pasha, Cargo, Fabric or Corsica Studios. These are the hottest spots to be seen clubbing until wee hours in the morning. Known throughout the world as one of the best shopping cities in Europe, London is a fantastic destination for a shopping holiday. From thrift shops to luxurious department stores such as Harrods, the city really has it all when it comes to shopping. Quirky retail outlets like Dover Street Market and bargain fashions at London’s markets like Camden Market are every fashionista’s shopping heaven. The most famous shopping street in the UK is Oxford Street in London’s West End. It’s the busiest shopping street in Europe and features more than 300 stores. Other interesting markets include Portobello Road Market in Notting Hill for antiques and collectibles, Borough Market for fresh produce, and Covent Garden Market for food products. he cliché about London’s weather being wet, gray, and cold may be true for most of the year, but experiencing summer there might just very well surprise you. With a good chance that 2014 will be the hottest summer on record in the UK, now is one of those rare times when you can soak up lots of sun while fully enjoying London’s outdoor attractions. With a multitude of parks and squares of varying sizes scattered all over the city, the warm and sunny weather is a good excuse for you to sit on the grass and watch people, or just follow trails that would reward you with sublime encounters with nature.

crowning glory of the Regent’s Park with its 12,000 roses. From the adjoining Primrose Hill you can behold London’s skyline with such recognizable landmarks as the Shard, BT Tower, and London Eye stretching before you. Primrose Hill is best visited during sunset. Hyde Park (W2 2UH) is a great place for a break while shopping in nearby Knightsbridge or Oxford Street. The centerpiece of the park is Serpentine Lake, perfect for boating as you feed its resident swans, ducks, and geese. Hyde Park also hosts the Diana Memorial Fountain. The Regent’s Park (postcode: NW1 4NR) hosts some of the best gardens in London. MAKE THE MOST OF YOUR BUDGET BY EATING Good value restaurants are found mainly in Chinatown. Better yet, grab a sandwich or salad from Tesco or Sainsbury and have a picnic in the park. TRANSPORTATION To save on traveling costs, get a daily or weekly pass for the train and tube rather than buying a ticket per trip. THEATER Affordable lastminute tickets to some West End shows can be had at the TKTS booth on Leicester Square. North Sea Fish Restaurant (WC1H 9EW) in Bloomsbury offers some of the best fish and chips in town. It’s family run, so it’s unpretentious and straightforward. The vast green space covers several hills, the highest being Parliament Hill with its breathtaking views of Saint Paul’s Cathedral, London Eye, and the Gherkin. Richmond Park (TW10 5HS) is perhaps the queen of all parks in London for its sheer size of 1,000 hectares. If not for the occasional drone of planes overhead, Richmond Park’s bucolic environs would make you believe you’re not in the city anymore. It hosts 650 deer, which you would almost certainly encounter while strolling around the park’s expansive woodlands and meadows. While in the area, don’t miss nearby Richmond

Bridge, a great spot for sipping a pint of beer while watching boats undulate to the rhythm of the River Thames. Greenwich Park (SE10 8QY) is home to the prime meridian line, which divides the earth between the eastern and western hemispheres. For science aficionados, you can find the prime meridian at the old Royal Observatory that sits on a hill with panoramic views of Canary Wharf, the City of London, and the Millennium Dome. While in the park also visit the Maritime Museum for a glimpse of Britain’s grand naval history. With summer’s long days, make the most of your time by enjoying London’s great outdoor spaces. n

THE FINE LIFE TRAVEL

A Whiff Of The World Be transported to a different place together with KARA R. SANTIAGO

O

ne of the most interesting facets of life is the ability of people to keep memories. Whether it be a favorite place or the scent of a familiar moment, sensory links always tug at the core of our heartstrings and transport us to a time we can never forget. For Francis Kurdjian, perfumer, connoisseur, and thriving artist, scent is the most powerful of them all. He recognizes this and lives on to create collections of fragrances, known as Maison Francis Kurkdjian Paris, a myriad of mélanges that are as intricate as art. The diversity of his fragrances is quite the combination. They all have distinct essences that transport you through ends of the world without having to go any further than taking a whiff off one of Maison Francis Kurkdjian’s elegant glass bottles. Take for example the Aqua Vitae collection, a citrusy, woody blend of tonka bean, vanilla, Calabrese lemon, and Sicilian mandarin plays that emits a both masculine and feminine aura. It takes you to strolls along Waikiki’s shore line, a contrast between city life and nature, the heat and cool air, all while enjoying the waves of the

sea—a seemingly perfect portrayal of Yin and Yang. A close counterpart, the Aqua Universalis line, takes you to the relaxing yet very dynamic and vigorous lifestyle of Australia’s beaches with its musky, floral and citrus undertones. It is an addictive fragrance which creates a connection between the skin and clean linen, sheets and fresh air, the big and small. On the other hand, his OUD Mood collection is a gentle reminder of everyone’s need to escape and get in touch with feelings and sensations, like a call to meditate in the temples of Bali while watching the sunset. Velvet, silk and cashmere moods all give off scents that are both woody and oriental, an intense and concentrated mix of exquisite raw materials. There are light options from his selection as well, like the Pour le Matin cologne that is a powdery, herbal and citrus fusion, think lavender from Provence and white thyme from Morocco. It reminds one of afternoons in London, complete with delicate pâtisseries and a warm cup of Earl Grey. Indeed, it is a complement to any woman’s delicate décolletage. Pour le Soir, made for the man of any woman’s dreams, comes in a contrast of a musky, amber and oriental blend, much like a constellation as seen from Abu Dhabi’s desserts. This infusion comes from benzoin and rose honey from Siam and Bulgaria. Whenever you long for a sweet escape from the monotony of your daily routine, reach for that Maison Francis Kurkdjian bottle and travel the world whilst keeping your feet on the ground. n Maison Francis Kurkdjian Paris is available in Adora, Greenbelt 5, Ayala Center, Makati City

JUST A QUICK ONE If you want half of your day well spent basking in nature, this tour definitely would give you a sense of achievement and awesome views of the Loboc River. You may choose to go upstream to Busay Falls or downstream to Palo Beach during high tide or to the Port of Loay during low tide. For the upstream tour, you will paddle through the ruins of the old Loboc Church, have a refreshing swim at a natural hidden spring, watch local dances and listen to folk songs, and finally go under the waterfalls of Busay. The downstream tour is paddling through a much pristine forest with giant nipa trees, a stop at the Ati community for a refreshing coconut juice break, and a cultural show upon your request. The tour then proceeds to the mouth of Loboc River connecting to the Bohol Sea, and if the tide is high, you can pass along the mangroves and finish at Palo Beach. Otherwise, the tour ends at the Port of Loay. GOT A FULL DAY TO SPARE? Intermediate paddlers would love to try this one and it is a great way to see the west coast of Bohol. This tour normally starts at 9 a.m. at the Abatan River Village Center in the town of Cortes, begins upstream of Abatan River, and you paddle through uninhabited areas with mangroves and giant palm trees until you reach the village center for a lunch break. You may request for a cultural show to enliven your experience. After lunch, you may paddle inside the mangrove park or toward a sandbar when it’s mid-tide. The tour then proceeds to Mag-aso waterfalls in Antequera to end your day with a refreshing swim. How about snacks at the waterfalls? Yes, they’ll serve that to you, too. And if you want to venture farther to Panglao Island, feel free to tell Freddie and Joan of SUP Tours Philippines in advance so they can customize a tour for you. WHEN THE MOON IS FULL Now, this is a different kind of nightlife. The best way to see the fireflies is to visit them in their mother tree. There are a number of huge trees along the river that glow with countless fireflies dancing in synchronicity. During the tour, you will learn a lot of fun facts about fireflies and their behavior from the guide. It is advisable to have a preliminary tour during the day to get used to the SUP and be familiar with the river. You may arrange dinner at the paddle center to be ready after your tour. This tour runs from 6:30 to 7:30 p.m. n

FOLKTALE

F

rom Bohol comes a story that tries to explain why rice is white. However, there is a variety of red rice that the same myth also attempts to explain. A long, long time ago, a famine gripped Bohol. The people begged Sappia, the goddess of mercy, to give them food. Sappia took pity on them and came down to earth. All land was brown and scorched: A long drought left the land parched. Only the most hardy weeds survived the long, rainless months, and already, people were dying of hunger. Her heart welling with compassion, Sappia bared her bosom and squeezed a drop of milk into each barren ear of the weeds. She emptied one breast, and then the other. But alas, there were still a few more weeds with empty ears! She implored heaven to give her more milk, but when she pressed her breast again, blood and not milk dropped into the remaining sterile ears. Having given her all to

the plants, she bent low and whispered: “Oh, plants! Bear thou in abundance, and feed my hungry people. So saying, Sappia vanished from the earth. She returned to heaven where every day she watched the useless weeds grow heavy with grain. She watched as the hungry gathered the ripened stalks. When the people pounded the harvest, most of the grains were milky white. These came from the ears which Sappia filled with her milk. Some grains were red, and these came from those which were filled with her blood. But red or white, the people cooked the grains, found them good to eat, and best of all, these nourished them back to strength. They saved some of the seeds, which they planted when the rains came soon after. The seeds gave a bountiful harvest. From her heavenly home Sappia rejoiced with the people. This life-giving grain, which was her gift into the famine-stricken people of Bohol, is what we now know as rice. n

ith over 7,100 islands, the Philippines can be quite an overwhelming destination to select the perfect dive spot, but the month of May guarantees lots of sun and the calmest conditions for scuba diving. From the north all the way down south, there is obviously a myriad of excellent choices for diving. To start ticking off your dive bucket list, here are five dive spots, where convenience, diversity, and unique chance encounters await. TUBBATAHA REEFS, PALAWAN At the geographic center of the Sulu Sea lies the best diving spot in the country. Access is only via “live on board” or private charters, which do scheduled pickups in Puerto Princesa City in Palawan. Tubbataha has it all—from hectares of pristine vibrant reefs to a banquet of sharks, rays,

and schooling fish. It’s best to get a dive master to lead your dive to get the best experience. Diving Tubbataha is open only from March to early June and it is suggested to plan a year in advance for a trip here. ANILAO, BATANGAS Just a short two-hour journey from Manila, Anilao is home to a resident school of jackfish and reefs blessed with fields of colorful soft coral. Closer inspection of its coral blocks and sandy areas yield an abundance of amazing tiny marine life. New and seasoned divers will be in for a visual feast by exploring a choice of more than 40 dive sites. APO ISLAND AND DAUIN, NEGROS ORIENTAL (via Dumaguete) Dubbed as the most successful marine

protected area in Southeast Asia, expect vibrant soft coral and a turtle buffet at Apo Island. Nearby is Dauin, which is world famous for its wide array of rare and tiny marine fauna. Also, it takes just a 45-minute boat ride to Oslob, Cebu, which is the quickest way to snorkel or dive with whale sharks. MOALBOAL, CEBU Expect millions of sardines to greet you as you descend Moalboal’s waters. Prepare to be engulfed by shimmers, shadows, and amazing shapes, an experience, which is most unique within Southeast Asia. Make a stop at Copton Point and have fun with the light plane wreck just 20 meters below. It takes only three hours to get there going down southwest from Mactan.

MALAPASCUA, CEBU This is the only place in Asia where one can reliably see thresher sharks. The experience is very distinctive as seeing them requires you to wake up at 5 a.m. and dive down to 20 meters to an underwater shoal where they frequent for the sole purpose of getting cleaned by reef fishes. A sunset dive at the lighthouse site is also the best place to encounter Mandarin fishes. It takes just a short three-hour trip to the northernmost tip of Cebu from Mactan Airport. n

This time, the best compliment that you can give that person may not be in the form of a monetary tip, but a nomination to this new awards program. The Department of Tourism (DOT) has launched a new set of awards for individuals who have demonstrated strong and deep commitment to the country’s

tourism industry through excellent customer service and investment in tourism development efforts. Dubbed “Tourism Star Philippines,” the awards are divided into two categories: tourism frontliners (individuals) who embody the true Filipino brand of warm hospitality, and local chief executives (LCE) such as a mayor or a governor whose projects contribute positively to the tourism industry. The individuals’ category is open to all Filipinos who have direct or indirect contact with tourists and who may belong to one of the following: travel

Towering edible creations will take up a whopping 8,000 sqm of a “sweeter-than-life fantasy world.” Upon entrance, you will walk under candy-floss clouds, be greeted by life-size safari animal sculptures, and will be taken to eight themed galleries of artisanal delights. Creation storY: a new taKe Furniture designer Vito Selma has always focused on the natural. Though his designs’ influences may range from Japanese to Scandinavian, they maintain a distinctly Filipino aesthetic. This holds true for his latest Kawayan (bamboo) collection, featuring the award-winning Kawayan Floor Lamp. During the Philippine International Furniture Show held last March at the SMX Convention Center, the Kawayan Floor Lamp took the design award for Best Home Accessory, while the collection was nominated for a total of four categories. Interior designer and freelance stylist Martina Bautista describes the piece as rustic because the Kawayan lamp seems to “strip [sic] the natural elements for a modern white.” The lamp was inspired by the traditional Filipino myth of Malakas (strong) and Maganda (beautiful), the mythical first man and woman who were born out of a split bamboo. www.vitoselma.com

Liham at Lihim, Gloc-9’s seventh full-length release, continues the winning streak that the rapper has set for himself since 2007’s acclaimed Talumpati. As with his previous work, the album features Gloc-9’s ingenious and highly relatable rhymes, as well as an all-star cast of collaborators, including Regine Velasquez (“Takip Silim”), Rico Blanco (“Magda”), Quest (“Siga”), and more. He’s not simply repeating himself, as Liham at Lihim showcases a more electronic sound, although he brings raprock back on “Kwento Mo” and “Kunwari.” – Jason Caballa Available at all major record bars nationwide.
