A New Business Class Beckons Our fleet upgrade enters its latest phase with the delivery of our first wide-body Airbus A330-300 HGW featuring a new cabin with three classes of service: Economy, Premium Economy, and, an entirely new product, Philippine Airlines’ modern Business Class. This follows the high-density, bi-class (economy and premium economy) variant of the A330 HGW that we acquired in September and, before that, the single-aisle Airbus A321 that launched our comprehensive fleet expansion program in August 2013. The tri-class A330 HGW completes our menu of new product offerings. This sophisticated aircraft is aimed at the discriminating business segment of the market, an important part of PAL’s customer base. It is designed to accommodate 368 passengers in lofty comfort—323 in economy; 27 in the more spacious premium economy; and 18 in business class, equipped with full-flat beds. In the first two classes, the focus is on ease and simplicity, epitomized by the Zodiac 5751 articulating seat—a unique mechanism where the seat pan lifts up and slides forward as the seat back reclines. This novel design optimizes passenger space and adds appreciably to the comfort level at the back of the cabin. However, it’s up front where PAL really ups the ante. Designed like a cozy “home in the sky,” business class showcases the Equinox 3D seat by French design firm Sogerma—a plush, high-technology seat with an innovative design. At the push of a button, the seat stretches out into a full-flat bed over six feet long, enabling you to doze off in utmost comfort and privacy, like in your own bed at home. Laid out six abreast, the V-shaped, double-seat structure of the Equinox 3D lends itself to a unique configuration. When moving to the bed position, the window seat moves up to armrest level while the aisle seat moves down to just above the floor. This design allows for easy egress for the window-side passenger. Of course, the seat comes with the full range of amenities: Electrical leg rest with ottoman, retractable privacy divider, in-seat power supply, USB port, bottle holder, reading light, coat hook, electrical seat controls, and ample stowage space to keep all belongings at your fingertips. Not Your Usual Paddle Boarding

ur cover feature is about paddle boarding in Bohol. It’s actually a very simple sport. You stand up on a board that is shaped like a surfboard, find your balance, and use a paddle, similar to what is used for kayaking, to propel you on the water. Without any motor, you skim quietly on the water and its thin shape even allows you to explore shallow waters. To make sure you will enjoy yourself and be confident on the water, the paddle tours in Bohol begin with basic lessons like paddling techniques, and then off you go. Unlike most paddle board options in seaside resorts, the ones in Bohol are more interesting where your trip on the river can end up in a waterfall or a beach and along the way, you can even watch local dances and listen to folk songs, paddling at your own pace and time. Come night time, you can spot fireflies and the experience is quite surreal. From a distance, you’ll see moving pinpricks of light in the darkness and as you come closer, there you are by the riverbank mesmerized by all these tiny, bright little creatures dancing around a tree. The simplicity of the experience is enhanced by a symphony of of crickets, frogs, and other nocturnal animals announcing their presence.

Well, we decided to go with the flow and we are beginning in this issue, a regular series of photography. To meet popular demand, we are starting with tips on food photography using a smart phone by Mylene Chung, a young, talented Filipino food photographer and prop stylist.

A Feast for Mom
On Mothers’ Day, why don’t you treat your mom to a well prepared meal with recipes from Chef Tina Legarda? These ingredients may be simple, but the results will surely impress her! Chicken Roulade of Mushrooms, Fig and Magnolia Cream Cheese Yield: 5-6 people Ingredients: 500 g Magnolia Chicken Station Chicken Breast Fillet Salt and pepper, to taste 1 tbsp Magnolia Gold Salted Butter, melted 2 tbsp garlic, chopped
2 tbsp fig jam Button mushrooms, sliced and sautéed 1 185gm bar Magnolia Cream Cheese, softened 2 tbsp olive oil
Directions: • Preheat oven to 350 C. • Prepare chicken breast. Place in between cling wrap, and using a kitchen mallet, pound until thickness is approximately quarter of an inch. Make sure chicken is pounded evenly. • Transfer pounded chicken to a chopping board, double check to make sure that it does not have any holes. Fix holes by overlapping, and pounding it again.
• Choose wider side of the fillet and place nearest to you. Sprinkle salt and pepper. Brush with butter and garlic. Add a teaspoon each of fig jam and mushrooms. Then add 1 ½ tbsp of cream cheese. Fold sides of chicken towards the center. Then roll from bottom (side nearest to you) to top. Check for any holes. Tightly wrap in clingwrap and seal. Store in freezer for about 30-45 minutes to make sure roulade is in place and set.
• In a large sauté pan, add olive oil. Sear each roulade until all sides have browned. Be careful not to burn. • Prepare large baking sheet, brush with butter. Place seared chicken roulades inside oven. Cook for about 5 - 8 minutes depending on size. • When done, let roulade rest for about 5 minutes. Then slice into rounds approximately ½ inch in thickness. Serve with rice or potatoes.
Crostini of Luncheon Meat Mousse, Caramelized Onions, & Fried Rosemary Serves 8-10 people Ingredients: 2 tbsp Magnolia Gold Unsalted Butter 1 can Purefoods Luncheon Meat, cubed 1 tbsp garlic, minced 1 tsp onion, minced 4 piece laurel leaf 1 tbsp Gran Matador Brandy
1/4 cup Magnolia Cream Cheese ½ cup chicken stock Salt, to taste 1/4 cup Magnolia Nutri Oil Fresh rosemary 2 tbsp Olive oil 2-3 pieces White onion rings 1 bag melba toast
Directions: • In a sauté pan, place butter, luncheon meat, garlic, onion, and laurel leaf. Cook for 2 minutes or until meat slightly browns. Pour in brandy. Cook for another minute. Then remove from heat and discard laurel leaf. • In a blender, on medium speed, place luncheon meat mixture, cream cheese and chicken stock. Puree into a paste-like texture. Add salt to taste. You may add more chicken stock if necessary. • Heat oil for frying. When oil is hot enough, fry rosemary leaves. Once

you see leaves rise to top remove from oil immediately. Drain oil on paper towel and pat dry. Set aside. • In a hot pan, place olive oil and onions rounds. Lower heat to medium, and continue stirring onions until light brown in color. Keep stirring to keep it from burning. Set aside. • To assemble crostini, place a tablespoon of the mousse on toast, top with a teaspoon of caramelized onions, and a pinch of the fried rosemary. • Place crostinis in a large platter and serve warm.

Be savvy with food shots with these five smartphone photography tips from MYLENE CHUNG.
1. SEt tHE Mood witH a Good SUrfaCE. Surfaces make up the overall mood of a food shot. A light wooden surface sets an airy outdoor vibe, while a dark surface creates a more dramatic mood. Many wellknown food photographers on Instagram play with just one type of surface to set the theme of their photo stream. Perhaps this is their way of branding themselves and their photography style. Personally, I love working with wooden surfaces because of their flexibility. Wood textures always come with warm tones that complement mostly any food item.
2. SHoot ovErHEad. When shooting with a smartphone, one rarely ever gets the natural depth of field (background blur) that is key to good food photography. Sure, we have apps that artificially blur out the background and some smartphone photographers use this quite efficiently, but with subjects as small as food, where one has to pay attention to every detail, artificial background blur will only look like what it really is, artificial. This is why it is advisable to shoot overhead in order to capture only what's on top of the table. Then, you can skip having to blur out the background elements.
3. SHoot widE tHEN Crop. It usually takes time to compose a food shot and even more so when you're pressured to take photos as fast as you can so everyone else can finally dig into their food. In order to make sure you get at least one shot sharp, take a lot of safety shots, at least four to five frames per subject. I would sometimes even go as far as taking 10 to 15.

Manila’s roster of comedians is no novice to the comedy scene. Some have been performing since 2001, others have been featured on Jack TV’s Laughapalooza stand-up comedy show, a few have performed with Comedy Cartel, while still others have performed on stages here and abroad. While most of their material is delivered in English, you can’t deny the Filipino flavor that they bring to the art. Case in point. Though today’s lineup of comedians sketch scenes with universal themes— inappropriate Instagram posts, growing up in the ’90s and the age-old battle of man versus girlfriend’s time of month—many use local references like the Martilyo (hammer) Gang, Anne Curtis’s episode at Prive, and local teleserye shows to set up their jokes. For those who grew up watching Seinfeld, Saturday Night Live, and Comedy Central, watching Comedy Manila at Keg is the closest you’ll get to warming a seat at the Apollo Theater. The bar is dark and full of low murmurs as people talk among

In a country where the words “Comedy Bar” are associated with the terrifying notion of drag queens coercing you onstage in front of friends and family who are all ready to hashtag your public humiliation, Comedy Manila provides a refreshing alternative. Formed just last year, Comedy
themselves. A lone spotlight pierces through to reveal the stage where a comedian could make a name for himself, or get crucified. Okay, maybe not crucified. Filipinos, by nature, aren’t much for heckling. We’re too polite to make snide comments during a person’s set. It seems that we
are sympathetic to crazed people who have the guts to get up on stage and tell a few—more often than not—self-deprecating jokes. Tonight, four comedians gamble pride and dignity as they brave the kind of spotlight and scrutiny that only a person under Interpol interrogation should ever encounter. In typical Comedy Manila fashion, each comedian is given around 15 minutes to perform, while the last performer, or headliner, closes the show. It’s not an easy thing, getting that laugh. Sure, people like Conan O’Brien and Louis C.K. make it look easy. But even veteran comedians will encounter that horrific, but inevitable, event of dead air. Tonight, some of the performers acknowledge the elephant in the room while one even toasts to it . This is something that every comic hopeful must learn from Open Mic nights. To be a comedian, you strive to make people laugh—it’s the
true payoff—but the real skill you learn under that sweltering limelight is to laugh at your insecurities and mistakes. And once you can do that, you’re already on your way to making it as a comedian. n

acau is a city of contrasts. Having gained a reputation as Asia’s gaming playground, its colossal hotels are attractions in themselves. But a tour of its three main islands— Macau peninsula, Taipa, and Coloane—will slowly reveal its other side, a European-Oriental character. And with adventure, you might just discover that Macau is so much more than the sum of its colossal parts. MUNCHING IN MACAU A good place to start is a visit to the Old Taipa Village. The old houses and narrow streets offer a picturesque backdrop and are
reminders of Macau’s history. Most of the restaurants here are cozy, with a friendly neighborhood vibe. You’ll find Italian, Spanish, Japanese, Thai, and Indian bistros aside from Macanese eateries here. The latter is located on the 21st floor of the AIA Tower, and its deck provides a spectacular view of the city at night. MACAU MERCHANDISE The hotel malls in the Cotai Strip (Sands Cotai, Conrad, Sheraton, Venetian Macao) are shoppers’ havens. The Venetian is not only the largest casino in the world but its expansive area also serves as the city’s largest mall. It’s easy to get overwhelmed here as you search for gadgets, designer bags, shoes, signature apparel, and ready-towear outfits. Alternatively, the Senado Square is Macau’s shopping promenade where some outlet stores are located. Its biggest draw is that it’s close to the Ruins of St. Paul and has one of the biggest branches of the Pasteleria Koi Kei (famous for their take-home goodies like almond cookies, jerky, and peanut candy). Jewelry shops selling gold, diamonds, and jade line the streets leading up to Senado square. While in the city, you might want to catch The House of Dancing Water, the resident show of City of Dreams (www. thehouseofdancingwater.com). This exhilarating show, which combines acrobatic performances, water stunts, and incredible production design, can only be seen in Macau (Tickets range from HKD 580 980). Looking for cheap and cheerful accommodation? Then old Dubai is where it’s at. Not only is it more atmospheric, but it also gives you an idea of what Dubai was like in the old days. The Dubai Youth Hostel (www. uaeyha.com), which starts at US$52 a night, is one of the cheaper options, and is better than most two-star hotels. The day is young and the sun is bright, so head straight to the beach to soak up the sun before it gets too hot. You can head to the Burj Beach to enjoy a view of the world’s only seven-star hotel, Burj Al Arab, which has the cosmopolitan feel of Miami, or Kite Surfers Beach, which has a much more laid-back scene.
All these are free but can get crowded especially during the weekends. Head down Jumeirah Beach Road and have lunch at The Chalet, a local restaurant that’s great for people watching. The menu is extensive, offering anything from European to Indian to Arabic food, most of which are below Dh25 (US$6). Try the filling biryani, a big bed of rice with chicken and spices. The sun is getting too hot so why not take shelter in the region’s largest mall, Dubai Mall. The best bit is you don’t have to spend any money to be entertained. You can ogle at the fish in the world’s largest indoor
aquarium, watch the skaters at the world’s largest indoor skating rink, or wander through an indoor gold souk fashioned after the traditional style. Step outside Dubai Mall to get a view of the world’s tallest tower, the Burj Khalifa. Go up to the viewing deck on the 123rd floor to see the city in all its glory, but make sure you’ve booked ahead online as that will save you two-thirds of the price. Walk-in tickets cost Dh400 ($108) while those booked in advance are only Dh125 ($34). As the sun sets, head outside of Dubai Mall to watch a performance by the world’s largest dancing fountain. It

TIP: Check Dubai Mall’s schedule as there are often free concerts and events. For dinner, head back toward Beach road and eat at Iraqi restaurant, Bu Qtair (Road 4d, near Burj Al Arab), a humble beachside shack that serves up fresh curried fish and prawns on plastic dining tables on the sand. The seafood is caught daily and is laid out in front of you. You choose what you want and tell them how many people are
eating and then wait outside. All fish is coated in a spicy paste and shallow fried in traditional Iraqi style. The bill usually comes in at around Dh100 ($27) for two. After you’ve had your fill of fish, head to Madinat Jumeirah, a shopping and dining complex styled as a traditional Arab souk. You can ride an abra (a traditional wooden boat) for Dh75 ($20) for an adult and Dh40 ($10.8) for a child through the Madinat’s extensive canal system. Once inside, there is a faux souk selling tourist trinkets as well as a large number of restaurants and bars. If it’s a Tuesday or Thursday night, head to Barzar Bar in the Madinat for a nightcap and take advantage of its many drink deals.
DAY 2 Wake up early and have breakfast at the Sheikh Mohammed Centre for Cultural Understanding for a local breakfast for about Dh60 ($16) and introduction to Emirati culture. Afterwards, walk off your breakfast at the Al Bastakiya Quarter, one of the oldest residential areas in Dubai. The area houses a number of shops selling arts and crafts and galleries such as the XVA’s Art Hotel, which are free to enter. After you’ve walked up an appetite again, head to one of Dubai’s extensive beach parks and have a barbecue. You can buy your supplies at local supermarkets like Choitrams or Carrefour for under $20. You
LOCAL BITE Visitors to Dubai can’t leave without trying a camel burger. In the historic district of Bastakiya is Local House Coffee Shop and Restaurant (www. localhousedubai.com), which serves traditional food including camel meat. Camel burger with cheese costs $10.

As well as answering all the basic questions a new arrival might have, it also lists important Dubai numbers, such as taxis, airports, and police. In the “deals” section you’ll find places where you can get discounts anywhere from 5 to 50 percent off on hotels, restaurants, travel, etc.

GETTING AROUND In the last couple of years, Dubai has invested a lot of money into improving its public transport system, which means there are now plenty of cheap options of getting around. The cheapest option is the Metro. A day pass costs only $3.8 for all zones. Buses are another cheap option: a ride costs as little as 20 cents and you can pick up a timetable from the main coach station in Al Rumoul or online (vgn. dm.gov.ae/DMEGOV/dmtrans-timetables). Taxis are also plentiful and not too expensive. A 25-km trip will set you back $27.

have a choice between Jumeirah Beach Park and Al Mamzar Beach Park. Both cost Dh5 ($1.3) to get in to and have facilities, such as toilets, barbecue areas, and shops. Al Mamzar Beach Park even has a huge swimming pool, entrance fee to which only costs Dh10 ($2.7). Afterwards, head toward Palm Jumeirah, a man-made island in the shape of a Palm. The best way to see the island is by taking the monorail (Dh15 or $4 one way) that goes straight up and down the trunk of the island. Head back toward Deira and see the sunset from the creek. This area used to be old Dubai’s trading hub with dhows (big boats) coming in from Iran and Gulf countries. It’s still as bustling and is a great place to stroll and see how Dubai was before the skyscrapers. You can take a ride in an abra for only Dh1 (0.27 cents) to get to the souks on the other side. Head to the gold souk to witness first hand the region’s love for everything gold. Nearby is the spice souk where whiffs of different spices assault you as you enter. Its diversity and complexity make the British capital a top tourist destination. With so much to explore, it’s difficult to narrow down the long list of reasons to visit. JUST A QUICK ONE If you want half of your day well spent basking in nature, this tour definitely would give you a sense of achievement and awesome views of the Loboc River. You may choose to go upstream to Busay Falls or downstream to Palo Beach during high tide or to the Port of Loay during low tide. For the upstream tour, you will paddle through the ruins of the old Loboc Church, have a refreshing swim at a natural hidden spring, watch local dances and listen to folk songs, and finally go under the waterfalls of Busay. The downstream tour is paddling through a much pristine forest with giant nipa trees, a stop at the Ati community for a refreshing coconut juice break, and a cultural show upon your request. The tour then proceeds to the mouth of Loboc River connecting to the Bohol Sea, and if the tide is high, you can pass along the mangroves and finish at Palo Beach. Otherwise, the tour ends at the Port of Loay. GOT A FULL DAY TO SPARE? Intermediate paddlers would love to try this one and it is a great way to see the west coast of Bohol. This tour normally starts at 9 a.m. at the Abatan River Village Center in the town of Cortes, begins upstream of Abatan River, and you paddle through uninhabited areas with mangroves and giant palm trees until you reach the village center for a lunch break. You may request for a cultural show to enliven your experience. After lunch, you may paddle inside the mangrove park or toward a sandbar when it’s mid-tide. The tour then proceeds to Mag-aso waterfalls in Antequera to end your day with a refreshing swim. How about snacks at the waterfalls? Yes, they’ll serve that to you, too. WHEN THE MOON IS FULL Now, this is a different kind of nightlife. The best way to see the fireflies is to visit them in their mother tree. rom Bohol comes a story that tries to explain why rice is white. However, there is a variety of red rice that the same myth also attempts to explain. A long, long time ago, a famine gripped Bohol. The people begged Sappia, the goddess of mercy, to give them food. Sappia took pity on them and came down to earth. All land was brown and scorched: A long drought left the land parched. Only the most hardy weeds survived the long, rainless months, and already, people were dying of hunger. Her heart welling with compassion, Sappia bared her bosom and squeezed a drop of milk into each barren ear of the weeds. She emptied one breast, and then the other. But alas, there were still a few more weeds with empty ears! She implored heaven to give her more milk, but when she pressed her breast again, blood and not milk dropped into the remaining sterile ears. Having given her all to
the plants, she bent low and whispered: “Oh, plants! Bear thou in abundance, and feed my hungry people.� So saying, Sappia vanished from the earth. She returned to heaven where every day she watched the useless weeds grow heavy with grain. She watched as the hungry gathered the ripened stalks. When the people pounded the harvest, most of the grains were milky white. These came from the ears which Sappia filled with her milk. Some grains were red, and these came from those which were filled with her blood. But red or white, the people cooked the grains, found them good to eat, and best of all, these nourished them back to strength. They saved some of the seeds, which they planted when the rains came soon after. The seeds gave a bountiful harvest. From her heavenly home Sappia rejoiced with the people. This life-giving grain, which was her gift into the famine-stricken people of Bohol, is what we now know as rice. n

ith over 7,100 islands, the Philippines can be quite an overwhelming destination to select the perfect dive spot, but the month of May guarantees lots of sun and the calmest conditions for scuba diving. From the north all the way down south, there is obviously a myriad of excellent choices for diving. To start ticking off your dive bucket list, here are five dive spots, where convenience, diversity, and unique chance encounters await. TUBBATAHA REEFS, PALAWAN At the geographic center of the Sulu Sea lies the best diving spot in the country. Access is only via “live on board” or private charters, which do scheduled pickups in Puerto Princesa City in Palawan. Tubbataha has it all—from hectares of pristine vibrant reefs to a banquet of sharks, rays,
and schooling fish. It’s best to get a dive master to lead your dive to get the best experience. Diving Tubbataha is open only from March to early June and it is suggested to plan a year in advance for a trip here. ANILAO, BATANGAS Just a short two-hour journey from Manila, Anilao is home to a resident school of jackfish and reefs blessed with fields of colorful soft coral. Closer inspection of its coral blocks and sandy areas yield an abundance of amazing tiny marine life. New and seasoned divers will be in for a visual feast by exploring a choice of more than 40 dive sites. APO ISLAND AND DAUIN, NEGROS ORIENTAL (via Dumaguete) Dubbed as the most successful marine

protected area in Southeast Asia, expect vibrant soft coral and a turtle buffet at Apo Island. Nearby is Dauin, which is world famous for its wide array of rare and tiny marine fauna. Also, it takes just a 45-minute boat ride to Oslob, Cebu, which is the quickest way to snorkel or dive with whale sharks. MOALBOAL, CEBU Expect millions of sardines to greet you as you descend Moalboal’s waters. Prepare to be engulfed by shimmers, shadows, and amazing shapes, an experience, which is most unique within Southeast Asia. Make a stop at Copton Point and have fun with the light plane wreck just 20 meters below. It takes only three hours to get there going down southwest from Mactan.
MALAPASCUA, CEBU This is the only place in Asia where one can reliably see thresher sharks. The experience is very distinctive as seeing them requires you to wake up at 5 a.m. and dive down to 20 meters to an underwater shoal where they frequent for the sole purpose of getting cleaned by reef fishes. A sunset dive at the lighthouse site is also the best place to encounter Mandarin fishes. It takes just a short three-hour trip to the northernmost tip of Cebu from Mactan Airport. n

ave you ever been seriously impressed by a tourism frontliner in the Philippines—say, an honest taxi driver or a dynamic mayor in the last town you visited? This time, the best compliment that you can give that person may not be in the form of a monetary tip, but a nomination to this new awards program. The Department of Tourism (DOT) has launched a new set of awards for individuals who have demonstrated strong and deep commitment to the country’s
tourism industry through excellent customer service and investment in tourism development efforts. Dubbed “Tourism Star Philippines,” the awards are divided into two categories: tourism frontliners (individuals) who embody the true Filipino brand of warm hospitality, and local chief executives (LCE) such as a mayor or a governor whose projects contribute positively to the tourism industry. The individuals’ category is open to all Filipinos who have direct or indirect contact with tourists and who may belong to one of the following: travel
by a list of tourism-related accomplishments and will be judged according to institutional, promotions, planning, and product development, regulatory, investments, centerpiece projects, support to DOT advocacies, and best practices in tourism. More than just bragging rights for the winning LCE, his or her local community shall receive a maximum of Php1 million worth of funding for a communitybased tourism project of their recommendation. Though his designs’ influences may range from Japanese to Scandinavian, they maintain a distinctly Filipino aesthetic. This holds true for his latest Kawayan (bamboo) collection, featuring the award-winning Kawayan Floor Lamp. During the Philippine International Furniture Show held last March at the SMX Convention Center, the Kawayan Floor Lamp took the design award for Best Home Accessory, while the collection was nominated for a total of four categories.
